I don’t know about you, but I have
St. Patrick’s Day on my mind! It’s a bittersweet holiday for me in that I know immediately thereafter, many of you start packing your bags and getting ready to head back home. I would imagine many of you are ready to get home to see your families and to get back to ‘reality.' Over the next six months, we will be working around the clock with preparations for your return in the fall. It’s definitely a much slower pace--it has to be in the heat the summer promises. I wish, at times, I could stow away in one of your motorhomes and escape the summer, just like you do when you head south for the winter.

We are thankful you all call South Texas your home away from home. •
All in due time, I keep telling myself. Ever since I was a teenager and saw how much fun you all have in retirement, my goal in life has been to be just like you when I grow up. Being a Winter Texan sounds fantastic. I have to admit to daydreams of summering in Michigan. Some day! I still have quite a few working years ahead of me, but you are all teaching me how to prepare for the best years of my life--retirement! The Story of Pine to Palm Resort Park Special to Welcome Home RGV
If you Google “Shareholder Parks
in the RGV,” you will find that Pine to Palm Retirement Park comes at or near the top of the list. It is a rarity in the Valley for a park to be shareholder owned. Let me tell you about Pine to Palm and what makes us different. Pine to Palm was started by a group of businessmen from Swan River, Manitoba, Canada, who were vacationing here with their RVs in search of an escape from the rigors of nasty northern November-April. Our founders stopped in Weslaco Trailer Park and amused themselves exploring the countryside, their minds pregnant with the proposition of building a new, different, and more permanent housing park. In early 1970, one of these adventurers spotted an excellent location and managed to persuade its colorful owner to sign a purchase option with a price tag of $60,000. This optimistic agent, going as far as he could dare on his own, moved the action back to his hometown of Swan River. A meeting of firedup investors was convened in his

recreation room, where ultimately $85,000 was pledged to close the deal. This was enough to secure the option by paying the land owner $10,000 down with the undertaking to reduce the balance (together with six percent interest) by 10 equal yearly payments of $5000. Once the general layout of the park had been conceived, construction began. It was really quite routine. Plans included amenities such as a pool, recreation/meeting hall, 12 shuffleboard courts, and a laundry facility. Yards of concrete were poured, and residents could lease lot pads either, 40’ x 45’ or 45’ x 95’, bordered by gravel roads. Much of this original framework and landscape still exists today. By September of 1970, the park was ready to function, and many people came knocking. After a few years, a major decision had to be faced: Will the park continue as a shareholder park or will it be sold to the highest bidder? The final vote came out very narrowly in favor of those dedicated to keeping
the park regulated by resident shareholder owners, and it remains that way until today. Today, each new resident is required to purchase seven shares at $300 each, giving them one vote on any resolution before the park. The management of the park falls on the shoulders of a group of seven
directors charged with being fiscally responsible and yet providing the latest in amenities. They hire a park manager to oversee the day-to-day issues associated with running a park, and one office staff looks after all the

March-On through the Weslaco Museum Special to Welcome Home RGV
March promises to bring some new
exhibits and programs to the Weslaco Museum that you may want to check out. This month, our gallery will host local artist Christine Kulikamp. Christine does some amazing pictures of pets, wildlife, and children (Can children be classified as wildlife?), using watercolors to bring her artwork to life. Originally from Michigan, Christine has been coming to the Valley for several years and loves her Mid-Valley community. Our Saturday Afternoon Lecture Series continues this month. March 18, we will present Mis Recuerdos:
Our Memories of Weslaco. This will be a wonderful first-person history of Weslaco and the memories of people who have lived here. Several local residents will discuss their memories about the town involving several topics. This will be a great opportunity to hear some wonderful accounts and remember a few of your own. Weslaco Museum is also hosting the Weslaco Centennial Committee meetings. You’re Never Too Old to Play with Toys by Alden Moore, Winter Texan from Ontario
A
new activity was introduced at Palm Resaca Park in Brownsville recently when a group of model boat enthusiasts from Winter Haven Park brought their boats over to run them on the Resaca behind the Rec Center. It didn’t take long before some residents got the bug and decided they, too, would like to sail their own boats. Bob Bloedorn, a Marine veteran who fought on Iwo Jima, was the first resident to get his own boat. “I only wanted a small tug boat that wouldn’t be too fast and would be easy to maneuver,” said Bob, who only has limited use of his hands. “I had flown model airplanes before, so I thought this might be something fun to try.” It didn’t take long before his good friend, Lloyd Oneslager, a former Boeing engineer from Kansas, also got a boat. “I wanted a fast boat,” said Lloyd who purchased a 26” Recoil Speedboat from HobbyTown in Brownsville. Lloyd loves the speed, making his boat zig and zag, throwing up a rooster tail in its wake. Eventually, Lloyd bought a six-foot-long destroyer. HobbyTown assured Lloyd that it would be an awesome boat, and he would have the best thing going. The model boat
excitement spread quickly throughout the park. Bob’s neighbor got a 26” speed boat, and he and Lloyd spent many playful moments harassing Bob’s tugboat while it sailed on the Resaca. Eventually, the inevitable happened, and Bob’s boat was struck by the other boats causing some damage to his tug boat. This event provided much fodder for the 6 a.m. coffee club members who kidded Lloyd about his reckless driving on the Resaca and whether he should even be allowed to continue using the waterway for his model boats. They spent several mornings suggesting to Bob the many ways he might retaliate for the unwarranted attack on his boat. Dennis Rausch, a Winter Texan from South Dakota, actually got interested in model boats while troll fishing on the Missouri River. “I decided to buy a model boat and run it up and down the river to keep from getting too bored when the fishing was slow,” he explained. “I would put the boat in the water and then move my boat a little piece away from it. It wasn’t long before other curious fishermen would come over to see what was floating in the water. They would get quite a start when the boat would suddenly take off, leaving

them chuckling in its wake.” Even the ladies aren’t immune to the model boat bug. Betty Dombrowsky from Wisconsin got a model boat as a Christmas present from her husband. Betty explained that she hasn’t run the boat much because she’s nervous about operating it and is afraid the men will laugh at her when they see her efforts. Her husband, Gene, on the other hand, is having a whale of a
time operating the boat. He likes the speed and the challenge of chasing the other boats on the Resaca. Betty says she suspects that she got the boat because Gene wanted to bring it down to the park and join the others on the Resaca.

Lime Soup Serves 4 • 4 cups chicken broth • ¼ cup fresh lime juice (1-2 limes) • 2 chicken breast halves, skinned • 1/3 cup chopped parsley • 1/3 cup alphabet pasta • 1 small ripe avocado, peeled, pitted, • ¼ cup chopped red onion and sliced In a saucepan, bring broth to a boil. Add chicken; reduce heat to simmer. Cover and cook 20 minutes. Remove chicken from broth; cool slightly. Bone chicken and shred. Set aside. Reheat broth to boiling; add pasta. Reduce heat; cook for 10 minutes. Add onion, lime juice, chicken, and parsley. Add avocado. Cover and simmer for 5 minutes. Benefit Music Show for St. Jude’s Children’s Research Hospital March 23 at Pharr South Special to Welcome Home RGV

Rio Grande Valley Gid-RDone Country and Bluegrass Band and Pharr South Park are jointly sponsoring a special music show March 23 to benefit St. Jude's Children’s Research Hospital. Everyone is welcome, and there is no actual admission fee. Rather, attendees will have the opportunity to make a donation to St. Jude's. All of the money collected at the door will be donated. The park will be offering a variety of lunch items, including sloppy joe sandwiches and brats at a very reasonable price to cover the cost. Gid-R-Done offers to perform their St. Jude’s benefit shows anywhere in the RGV. The band has raised nearly $3000 for St. Jude's during this Winter Texan season.

D From the Inside, Out D Be Careful What You Wish For

Throughout our lives, it is quite natural for us to wish for things we want and don’t have: to be taller, shorter, prettier, richer, smarter, or married to somebody who is dropdead gorgeous. Well stop it. You may get what you wish for and may not like it. I know of people who wanted more than anything in this world to win the lottery. The large sum of money brought them misery, and in five years, the money was gone and so were most of their illusions. There are many versions of “The Three Wishes” joke that involve a genie in a bottle or some other weird entity. A classic example is the story of three men marooned on a desert island; they are desperate, hungry, and in bad shape and a bottle floats ashore. The proverbial genie pops out and offers to grant three wishes, one wish for each man. The first man wishes he were back in Paris where there was fun, food, and glamorous women. Zap! The genie made it happen. The second man just wished to be home with his new bride in the good old U.S.A. Zap! He found himself there with his bride in his arms. The third man took a moment or two, and he fondly remembered his fellow hungry, bearded companions now far away and safe. He said, “I will miss those two wonderful people. I wish I could see them again.” Zap! You know the end to THAT story! However, I admit to wishing I would win the lottery or the Publisher’s Clearing House prize just to see if I could handle $5000.00 a week for life. I think I could. I would, indeed, get new kitchen countertops. Yes I would. I did not grow up in affluent circumstances, and that tends to make one frugal, “from the inside, out,” the kind of frugality that makes one develop a tummy ache when making an unnecessary purchase, even knowing full well she can afford it! I admit to wishing for total obedience from my children (for their own well-being, of course.) I wished it, worked at it, and thought I had it until even that proved to be a wish I could have done without. We were at a picnic at a beautiful lake in East Texas; several families were enjoying a wonderful picnic. The lake was relatively small but

deep. There were boats tied up at the small dock, and the kids old enough to be water safe were taking the boats out and rowing around having a great time. I had told my four-year-old son that he must not get into the boats, but he could play in the water where it was shallow. We were eating and enjoying this lovely environment when I looked out to see my four year old in a boat on the lake with his 10-year-old brother and a teenager. I ran to the water’s edge and yelled, “John! Get out of that boat!” Without a moment’s hesitation, he stood up and jumped into the lake. His brother peeled over into the water after him and dragged him to the boat, where he was hauled aboard--wet, scared, and sputtering. After a hurried short row to shore, big brother grabbed his sibling by an arm and unceremoniously dragged him, protesting loudly, to where I was waiting, gave him a little push into my waiting arms, and said, “Here is your dumb son... Did you see what he did?” John looked at me and tearfully said, “Mommy, you TOLD me to get out of the boat!” And indeed I had. An example of total obedience if I ever saw it. That little fellow had, and still has, a great brain, and his mother was getting what she wished for: obedience at all times! Needless to say, when the family tells that story today, everyone laughs but the “jumper.” So be careful what you wish for; you may get it. • M. were paired up to compete in this annual competition. The winners on the “A” side were Susan Oram and Bob Fuller, and the winners on the “B” side were Irene Gill and Dave Paulson. •

La Feria will hold its annual Spring Luncheon Friday, March 17. At the luncheon, guests will enjoy a full spaghetti meal and automatically be registered to win numerous door prizes. In the spirit of St. Patrick's Day, anyone who wears green will be entered in the door prize drawing twice. After the meal, everyone is encouraged to stay and watch Hannah's Song, a 40-minute musical solo by Myra Green. The doors will open at 11:45 a.m., and the Myra Green performance will begin at 1 p.m. Advance tickets are $8, and tickets at the door are $10. The luncheon will benefit the mission projects of the United Methodist Women.

Seabrook, a member of the Laguna Madre Art League, is a Canadian artist who is primarily a ‘plein air’ painter. ‘Plein air’ painting means the artist works outside rather than in a studio. Although a painting may be finished in the studio, ‘plein air’ artists prefer to attempt to capture the light, shadows, and interesting subjects found in nature or on any street corner. Seabrook is now a resident of South Dakota, but she and her husband enjoy their winters in Texas where they have a home near Bayview. After retiring from a long career in teaching, she travelled across Canada, the United States, and Mexico painting the landscape, architecture, and many friendly people she encountered. She works in acrylics on fiberboard and has particularly enjoyed painting the Port Isabel and South Padre Island area. Her work has been displayed in Ottawa and Southampton, Ontario. The paintings she is exhibiting at the Port Isabel Public Library are ‘plein air’ works painted during Seabrook’s travels. Two of them, Galveston Harbor and Lake Huron by Night, are ‘nocturnes’ painted at night from the back of her vehicle. Beech Trees in January illustrates the difficulty that ‘plein air’ painters experience during the Canadian winter--the temperature that afternoon was -29F, and frequent
stops had to be made to thaw out paints and fingers. Snowed in for Christmas was painted in Branson, Missouri, when the artist and her husband left South Dakota too late to enjoy a turkey dinner in sunny South Texas. Patzcuero, Michoacán captures a view of this lovely inland city in Mexico. Tuna Fleet: Puerto Angel, Oaxaca was painted on the beach and resulted in an invitation to join the fleet the following day and enjoy a delicious dinner featuring the day’s catch. Catedral de la Asuncion de Maria Santisima: Guadalajara, Jalisco was painted over three days in the beautiful public square beside the cathedral where the artist enjoyed the company of the many university students, tourists, and street vendors in this vibrant area of Guadalajara. The painting celebrates the best of the ‘plein air’ experience – perfect weather, lovely views, and interesting companions. This display will be featured throughout March at the PI Public Library, 213 Yturria Street. It is free and open to the public. For library hours, call 956-943-2265. HOT Off the Grill:
Recipes for All Outdoor Chefs
with Sandy Olson sometimes hesitate to grill seafood because it’s easy to overcook it, drying out a beautiful piece of fish or some scallops or shrimp. This recipe guards against that by wrapping each big, juicy shrimp with bacon to keep it moist. You cook the bacon partially first to make sure it’s cooked through when the shrimp is done. •

Grilled Bacon-Wrapped Shrimp • 1/2 pounds jumbo shrimp, cleaned (think fresh Texas gulf shrimp!) • 1/4 cup olive oil • 1 clove garlic, finely minced (about 1 teaspoon) • 1 teaspoon chopped fresh parsley • 1 teaspoon salt • 10 slices good quality bacon • 2 tablespoons fresh lemon juice • 1 tablespoon lemon zest • 1/2 teaspoon pepper Rinse the shrimp under cold, running water and dry well with paper towels. Put into a large zipper-top plastic bag. Combine the remaining ingredients, except the bacon, to make a marinade. Whisk it vigorously and add it to the shrimp in the bag. Seal the bag and refrigerate for an hour. When ready to cook, preheat the grill to medium-high and oil the grate. Lay the bacon strips diagonally on the grate and grill for 10-12 minutes or until partially done but still pliable. Remove bacon from the grill and cut each strip in half widthwise. Drain the shrimp and discard the marinade. Wrap a piece of bacon around each shrimp and secure with a toothpick. Grill for 4 minutes per side, turning once. Serve at once and enjoy. Booster Club is excited to continue the tradition of Viva Los Mustangs Casino Night! We invite you to join us for the 2017 edition Saturday, March 25, at The Forum Event Center, 1100 E. Laurel Ave. in McAllen at 7:00 p.m. The cost is $25 per entry ticket. Each ticket admits two guests and includes an evening of Black Jack, Craps, Poker, Roulette, Texas Hold’em, and a silent auction. We’re planning a great time for all to enjoy! As a cheer booster club, we work to enhance our team’s participation in sports and activities. Our cheer program continues to grow and thrive. Our student athletes balance a weekly academic schedule and support the Mustangs at various events. Additionally, the team competes in approved cheerleading competitions. In November, the team ranked first place of six teams at the National High School Cheerleading Championship Southwest Regional and automatically earned a bid to the national competition this month. The National High School Cheerleading Championship is the most prestigious
competition in the country. For over 35 years, it’s been recognized as the one true national championship. This national event is held at the Walt Disney World Resort in Orlando, Florida, and nationally televised on ESPN to over 100 million homes and 32 countries. In 2014, our Mustangs won the inaugural Game Day National Championship Division. The team was awarded the gold medal and the coveted white jacket! It was, and continues to be, a memorable experience for our team and coaching staff. Our team also earned the state runner-up trophy and silver medal last year in the Class 6-A Division of the University Interscholastic League (UIL) Spirit State Championship. Annual Mardi Gras Ball Brings out the Elaborate and the Zany Special to Welcome Home RGV
Bit-O-Heaven
RV/MH Park in Donna held their Third Annual Mardi Gras Ball Fat Tuesday, February 28. The Southern Ashes band, with Rick Villa, played for the enjoyment of all 244 people in attendance. There were at least 200 dressed in a myriad of costumes, some very elaborate and many just zany! Contestants danced around the room to the tune of When the Saints Come Marching In so the judge, Fran Adams of Welcome Home RGV, could get a good look at the costumes. First and second place winners were Pat Gay and Bob Price. All those in attendance got to vote for the People's Choice Award, and that honor went to Bonnie Cadwalader. The winners received certificates and coupons to various South Padre Island activities, such as the Osprey Port of Brownsville cruise, the Thriller boat ride, and lunch at Pirate's Landing. Congratulations to all.
The Mardi Gras ball has been held for at least eight years, but for the last three years, it has been held on Fat Tuesday. Bit-O-Heaven has also had our golf cart/motorcycle/bicycle parade for the past eight years. Everyone dresses up their vehicles in Mardi-Gras flavor and, with music blaring, parade around the park throwing out candy and beads to the enjoyment of the residents sitting in their lawn chairs lined up along the way. Our pet parade has been held the last three years, with dogs dressed in their finery and judged for best of show. (Our cats think this show is beneath them and deigned to be a part of the frivolity.) All of these activities are under the auspices of Benola and Jerry Robinson, who hail from Louisiana, and their Mardi Gras ‘krewe.’ They certainly know how to throw a party!! See you all again next Fat Tuesday! •

Hoyt, professional photographer and Texas Master Naturalist will deliver a presentation titled Nature of the Valley to the Photography Group at Casa del Valle in Alamo. The program is scheduled for 1:00 p.m. March 17 in the Main Hall at Casa Del Valle, 1048 N. Alamo Road in Alamo. There is no fee for the program, and everyone is invited. The program will be an overview of what naturalists might see if they visited some of the places where Ruth spends her workdays leading workshops and tours. She guides photographers on private ranches, teaches nature photography classes, and provides private instruction. Ruth is also a highly engaging speaker, willing to share her knowledge and experience with anyone who is genuinely interested. She has been a Valley resident for more than 15 years and has been an active student of RGV nature and animal habitat since she arrived. Her photography has been published in National Geographic books, The Nature Conservancy, Birder’s World, Texas Wildlife Association, Coastal Bend Focus on Wildlife, Missouri Wildlife, AAA’s Home & Away, Michigan Living, Texas
Monthly, Rio Grande Valley Nature, North American Birding Association’s Birding, and many more. Casa del Valle’s Photography Group began activities at the beginning November, 2015, under the leadership of Jess Merrill. Jess worked as a commercial photographer and writer more than 40 years before retiring and becoming a Winter Texan. His clients included General Motors, the State of Michigan, Dow Chemical, and Michigan State University, as well as many advertising agencies and design studios. The Photography Group meets every Friday at 1:00 p.m. during the fall, winter, and spring. All photographers, regardless of experience, are welcome to participate. Several of the current members use cell phones as their only camera, while others use high-end single-reflex cameras. The group’s photo projects are selected by members and reflect their diverse interests, including architecture, churches, street photography, flowers, and still-life. Jess, a certified Photoshop expert, also demonstrates image enhancement using Adobe Photoshop Elements during group meetings. •

Tony later attended Texas A&M UniversityKingsville where he earned a master’s degree in rangeland and wildlife management. Primroses paint the roadsides pink this month while poppies flutter in the breeze like tiny white flags. These two striking native plants introduce spring to our Deep South Texas countryside. Those clusters of pink blooming close to the ground are colonies of pink evening primrose, Oenothera speciosa. This far south, they open in the morning and close at night, opposite of those in cooler climes. Close inspection shows delicatetextured blossoms lined with dark pink veins. Most Texans grew up calling these gentle roadside l o v e l i e s buttercups. They also are known as pink ladies and amapola del campo, which translates as wild poppy, though they are
not like our native poppies that are popping up along the roads, too. The eye-catching white-flowering form of red poppy, Argemone sanguinea, has several local names. Sometimes called rose or spiny prickly poppy, they can have white, lavender, purple, and shades of pink flowers. The blooms open at sunrise, and although delicate looking, the three-inch-broad flower is sturdier than it looks, laughing at the wind battering it about. Native poppies love disturbed soils, so your travels around the Valley or off to the Island should not disappoint if you’d like a closer look. Wind, more wind… we were nuts
to be driving in this wind! Stopping for fuel—propane--we found a place between two semi-trucks. Didn’t help with the wind but made us feel ‘safe.’ Sometimes God places His roadblocks in front of us to keep us from harm. Sometimes the reason for our delay or unpunctuality is revealed to us; most of the time it is left to wonderment as to the reason. The Bible says sometimes we must wait. Easy to read, hard to do. Psalm 33:20: “We wait in hope for the Lord; he is our help and our shield.” Waiting can be frustrating; we live in a prompt society where there is no waiting and instant reward. We don’t do wait well. Matter of fact, we don’t know what wait means. But God asks us to wait; just wait. “Be still and know that I am God.” (Psalm 46:10) How can we know God when we are always running to all points of the compass? Yet for our own good and sometimes safety, God ‘roadblocks us’ with a delay we don’t, and can’t, understand and
oftentimes find hard to accept. The times of waiting can be a quiet time for us, a time to see what God requests in our lives and a time to wait for the green light to proceed on His chosen road of life for us. There are no detours in God’s plan for us; we create a route change with no good results. We awaken rested; the winds were history. Traveling, we saw the charred landscape resulting from a prairie fire! God’s windy roadblock kept us safe…secure. The grass will grow back over the charred fields, God pronounces, with new life from scorched remains. Serves us to know we can rise from destruction to new construction and an exciting life as he sets His route for us.
two feet in height. The thick leaves are streaked with distinctive white coloration, giving the plant a calm, blue-green appearance. Up close, you’ll see the wickedness of the edges of those beautiful blades. They have very sharp-pointed lobes. The fruit is a spiny capsule that produces many seeds, which, when ripe, spill onto the ground, providing food for bobwhite quail and mourning doves. The unfriendly plant itself is known to be avoided by grazing animals,
even in severe drought when other vegetation is nearly depleted. A profuse reproducer also proliferating the spring landscape are the yellow blooms of spiny sow thistle, Sonchus asper. It’s distinguished from its cousin, common sow thistle, Sonchus oleraceus, by the fiendishly jagged leaves. Spiny sow thistle is as unpleasant to grasp hold of as the native poppy. Sow thistles are not native to the Rio Grande Valley but dot the land with color nonetheless. •
NEVER TOO OLD FOR TOYS CONTINUED FROM PAGE 4 Dallas Hofman had the best boat story, though. He has had an 18” Racing Speed Boat for 25 years and still manages to run it on the water. However, a few days ago, the boat died in the middle of the Resaca. Dallas eventually found a flat bottom boat and an old oar and was able to paddle out to rescue it. When Dallas got back to shore, he attempted to disembark from the boat. When he put one foot on shore, the boat naturally moved away from the land, and Dallas suddenly found himself three feet deep in the Resaca. “It took quite a struggle to finally get myself out of the water. I was
totally soaked and covered with mud,” Dallas admitted rather sheepishly. Now there is a Palm Resaca Yacht Club. This fledgling group of model boat enthusiasts displays their boating skills on the Resaca after the Wednesday morning breakfasts at the Rec Club. New members are always welcome. You would think this new boating bug would be enough to keep residents occupied for some time. However, Palm Resaca Park resident Bob Wilson has told others that he has bought a drone, prompting one resident to comment that the sky is the limit at Palm Resaca Park. •

London Grill & Tavern: The Sound of Happy Customers Rounds Out the Ambiance by Sandy Olsen
If
bangers and mash or mushy peas are the type of British food you are looking for, you will not find it at London Grill & Tavern. Although things started that way in 2009, with the idea of bringing an English pub to the RGV, General Manager Oscar Guajardo told us South Texas wasn't enamored by that cuisine. So they adapted to their customers' wishes, and the menu is now filled with the dishes we all know and love. They DID keep the fish and chips, which is one of their signature entrees and is very popular with customers. Yes, the “chips” are actually big wedges of potatoes as in the English tradition. London Grill & Tavern is one-of-akind, a privately owned restaurant that has thrived even in the highly competitive area dining scene. We had dinner on a Friday night, and the place was hoppin'. There are 22 televisions in the bar and dining areas (I could see five of them from our table), all broadcasting different programs with the sound muted. Oscar mentioned that if customers want to see a particular program
while they eat, it will happen. Music keeps the silent televisions company, and the sound of happy customers round out the ambiance. Four of us had dinner together at London. As an appetizer, we tried their fried calamari ($7.99). Calamari is a tricky seafood to prepare. Only a few seconds too long in the deep fryer, and you end up with batter-covered rubber bands. London does it right; the
smallish pieces of squid were tender, served hot and crispy. For dipping, we enjoyed a sweet and sour oriental sauce, different and with a bit of heat. Gregg and I ordered the fish and chips, and it was excellent. Two large fillets of white fish were served with homemade cole slaw and the chips ($7.99). Santa Golf Course is a public course and is among the most beautiful in the country, thanks to the unique tropical setting of the Rio Grande Valley. It has wide spaces, natural growth, and a fantastic layout for both the champion and the rookie player. It is a course you will play again and again and enjoy every time. The course was built and designed by Jeff Brauer, with the help of Steve Elkington. It opened in 1997 for play. In addition to being an excellent locale for golf, it is also a perfect setting for an outdoor wedding, complete with a waterfall in the background. The facility has a large dining room suitable for corporate meetings. The restaurant is full-service and can satisfy the golfer with a sandwich and drink following a round of golf or prepare a banquetstyle meal. The fairways are 419 Bermuda grass while the greens are Champion Bermuda. The course has sand traps strategically placed on every hole. Water plays an important part of your golf experience on this course as there are a number of lakes. The front nine is set among a planned residential development community, with some beautiful large homes of varied architectural designs. The back nine is more open, with larger and straighter fairways. But you need to be alert or the traps,
swales, howling winds, and mounds will bite you! The course has four sets of tees with 72 par. Three are rated for men: 7139 yards rated at 73.6/124, 6601 yards rated at 70.8/119, and 6045 yards rated at 68.2/110. Yardage of 5313 is rated for women at 71.2/121. This course is located in South Weslaco at 1901Club De Amistad. David Martin is the general manager, and Joey Rios is the director of golf. You can call 956-973-1811for tee times. This is a favorite cookie recipe of mine.

2 sticks unsalted butter, softened 2/3 cup granulated sugar 2/3 cup packed light brown sugar 2 large eggs 2 teaspoons vanilla extract 2 cups all-purpose flour 2 cups rolled oats 1 teaspoon baking soda 1 teaspoon cinnamon 1 teaspoon salt 2 cups semi-sweet chocolate chips 1 cup cran-raisins
I published it previously but I have had some requests recently to share it once again. These cookies are not only delicious but they are also a bit more unconventional than your average chocolate chip or oatmeal cookie. Best of all they are just as satisfying as a delightful dessert treat as they are a perfect complement for your morning cup of Joe (no need to feel guilty - they are practically a granola bar)! If you like, feel free substitute the semi-sweet chocolate chips for white chocolate chips and/or the cran-raisins for traditional raisins. Happy baking! •
Bon Appetit! Beat the butter, granulated sugar and brown sugar in a bowl with a mixer on medium speed until fluffy. Add the egg and vanilla; beat. Whisk the flour, rolled oats, baking soda, cinnamon and salt in a bowl. Add to the butter mixture and beat until just combined. Stir in the white chocolate chips and raisins. Refrigerate the bowl of cookie dough for 30 minutes. Preheat the oven to 350 degrees F. Using a small-medium scoop, place rounded tablespoons of dough onto parchment-lined baking sheets about 2 inches apart. Bake until the cookies are golden on the bottom, 12 to 15 minutes. Do not over-bake. Cool on the baking sheets, 10 minutes, then transfer to racks to finish cooling.
