It’s

hard to believe it's already mid-February...and in the 90s! This winter certainly has not disappointed those of you who came to escape the cold, harsh winters up north, that’s for sure! I hope you’ve taken the opportunity to brag to those you left behind about how you need sunscreen instead of snowshoes! It’s no surprise that Winter Texans have flocked to South Texas for years to do just that--escape the cold. But what you’ve found is that, in addition to the sunshine, you’ve discovered new friends--all sorts of fun and friendly people who welcome you back to your home away from home. The Valley is a special place; there is no doubt about that. We’re glad you’re here and hope you will encourage your friends who stayed up north and froze to follow you next season when you return to us here in the Valley. This is where I need your help. It’s no secret that the number one reason Winter Texans come to the Valley is because you knew someone who was already a Winter Texan--not because of newspaper ads, radio spots, or television commercials. Word of mouth is what brought you here. Am I right? There are so many opportunities to spread the message about South Texas up north. I’d like to ask you to help us spread the word about how great the winters are down here and invite your friends to join us! There

Trophy Gardens Hosts Successful AirMedCare Fundraising Dinner Special to Welcome Home RGV

Trophy Gardens RV Resort held its annual Fundraising Dinner January 31 to support their Park Membership Program in AirMedCare. It was well attended by the residents of Trophy Gardens. The Park Membership Program provides coverage for any emergency transfer from our park or from an area hospital to another medical facility where the patient can get the best treatment for his or her condition. Diana Rodriguez, membership sales manager, and Leo Salinas, an independent representative, were present to explain the program to our residents and to answer their individual questions concerning other memberships the company offers. The committee served a ham dinner that was enjoyed by everyone in attendance. The evening ended with drawings for several door prizes provided by the representatives from AirMedCare. •

del Valle RV Resort in Alamo will hold our annual quilt show Tuesday, February 21, from 12:00-3:00 p.m. Casa del Valle is located at 1048 N. Alamo Rd. in Alamo. Beautiful quilts will be on display, as well as wall hangings, purses, table covers, and much more. Admission is $1.00, and proceeds will be used to make military quilts and other items for those less fortunate. A vendor will be at the show selling fabric and quilting supplies, and raffle tickets will be sold for our opportunity quilt. This year’s opportunity quilt is completely hand-quilted. We will have beverages and sweet treats for everyone’s enjoyment. Also, this year there will be a handmade item for each attendee just to thank you for enjoying the show with us. The chair of the show is Sandra Johnson, a very talented and gifted quilter. Our group has several ladies who are also very talented, and they will be showing their beautiful projects. Festival of Tables – Premier Red Hat Event of the Year Special to Welcome Home RGV

you are a Red Hatter and you missed the annual Festival of Tables, sponsored by the Rio Grande Valley Red Hat Queen’s Council held Tuesday, January 31, at the Nomad Shrine Club in Pharr, you missed the premier Red Hat event of the year. There were 32 tables decorated in themes with names like Chocolate Table, Scottish Table, Jungle Table, Iowa Table, Las Vegas Table, Sioux Indian Table, Scandinavian Wedding Cake Table, and Snowman Table, just to name a few. The Arbor Day Celebration is a fun-filled day where anyone can participate in a timed 5K or 10K run, a Family Fun Walk along our Hike & Bike Trail, or a 25-mile bike tour. New this year is a combo event for those looking for a bigger challenge--run the 5K and then hop on a bike for the 25-mile bike tour. All events will be taking place at Municipal Park in McAllen. Everyone is invited to come out and participate. Arbor Day is a day to celebrate nature’s gift of trees, the tall providers of shade, fruit, fun, and habitat for many different kinds of wildlife. MMA is the only organization in the nation to hold a winter Iwo Jima Parade Special to Welcome Home RGV

Marine Military Academy will hold

its annual Iwo Jima Parade Saturday, February 18, at 10 a.m. on the MMA Parade Grounds. This year marks the 72nd anniversary of the Battle of Iwo Jima during World War II. Open to the public, this event is a tribute to the courage and sacrifice made by The Greatest Generation to preserve freedom around the world. Because of the subtropical climate of South Texas, MMA is the only organization in the country that holds a battalion-size parade on the actual anniversary of the Battle of Iwo Jima (February 19, 1945). Last year, more than 350 people attended this event. There will be special, reserved seating for Iwo Jima survivors in front of the parade stand, which directly faces the historic Iwo Jima Monument. During the parade, the Iwo Jima survivors will join the MMA

superintendent for the ceremonial pass in review. Event-goers are encouraged to stop by the Iwo Jima Museum & Gift Shop after the parade to watch a video depicting the Battle of Iwo Jima. They are also encouraged to view the Iwo Jima Monument and the gravesite of Cpl. Harlon Block before or after the parade. Since April of 1982, MMA has been home to the Iwo Jima Monument. The magnificent statue depicts five Marines and one Navy Corpsman raising the American flag February 23, 1945, during the Battle of Iwo Jima. The 2017 Encore Games started January 30 and will run through February 21.

The events are held at the 10 Encore parks in the Valley. Events include horseshoes, egg toss, slow bike, swimming, bocce ball, table tennis, shuffleboard, billiards, Texas Hold’em, pickleball, bean bag, cribbage, darts, euchre, pinochle, and bridge. The mission of the Encore Games is to connect people through the spirit of competition while promoting a healthy and active lifestyle. Celebrating 35 Years of Mariachi and Folklorico Los Coyotes and Folklorico Tabasco

will celebrate their 35 years of existence at the Alejandro “Alex” H. Saenz Performing Arts Center in La Joya Saturday, February 18, at 2:00 p.m. and 7:00 p.m. and Sunday, February 19, at 2:00 p.m. The Mariachi and Folklorico programs, first of their kind in public education in our nation, were established in 1982 with hopes of decreasing dropout rates and providing our students with the opportunity to express, portray, and advocate their culture through music and dance. These programs have been very successful since their establishment. Both of these groups have been invited to perform for various political figures--President Bill Clinton and President George H. W. Bush, among

others. Additionally, the students have participated in numerous competitions, festivals, and concerts across the United States, Mexico, and Europe. Come and help us celebrate this accomplishment with a big fiesta before and after our shows. Starting at 10:00 a.m., we will have artisans from across Mexico, as well as food, live Conjunto music, and middle school Folklorico performances. It has a large driving range and practice sand bunkers. The course has four sets of tees. Three sets are rated for men. They are the gold tees that measure 6821 yards and rate 73.5/139, the blue tees that measure 6464 yards and

LaFloresta Park Hosts Folk-A-Rama Special to Welcome Home RGV

21, LaFloresta RV Park put on a Folk-A-Rama, with samples of foods from 10 different countries/ cultures around the world. Those represented were Germany, French Canadian, Budapest, North American Indian, Ireland, Sweden, Canada, Russian Mennonites, Greece, and Ukraine/Poland. Most countries/ cultures had three different foods

to sample, and the participants at each table dressed in costumes representing that particular country or culture. The variety of food was a pleasant surprise. After the food sampling, we were entertained by Jim Staton and friends. It was well attended, and everyone had a very enjoyable evening. •

Starting the New Year with 1,100 Wishes! Special to Welcome Home RGV

All

the excitement of Disney World seemed to be the ultimate wish for 13-year-old Ryan Rodriguez, but little did he know he was the 1,100th wish for Make-A-Wish® Rio Grande Valley. He and his family enjoyed a seven-day/six-night, allexpenses paid magical adventure to the happiest place on earth. Ryan’s heart condition has taken him away from home, school, and many activities most children take for granted. He has become acutely aware of taking nothing for granted, and his circumstances have given him wisdom beyond his years. He is always the first to think and pray for others, encouraging all to “stay strong.” Ryan’s love for videos and gaming made it an easy excuse for mom and dad to take him to the Respawn Cyber Café, a new gaming place in Edinburg. More than video games awaited him when he opened the door, however. He was surprised with a celebratory party honoring him as the recipient of the 1,100th wish since the inception of the Make-A-Wish Foundation® of the Rio Grande Valley. Make-A-Wish grants the wishes of children with life-threatening medical conditions to enrich the human experience with hope, strength, and joy. In 1997, a small group of volunteers realized the need to start its own chapter

and serve the children of the Rio Grande Valley. Only 12 wishes were granted the first year. It quickly became apparent, however, there were many children in the RGV desperately in need of the magical and memorable experience a wish can provide during the most difficult and challenging time of their lives. The challenges and discouragement of treatments and hospital stays can be transformed by a wish with a positive attitude, strengthening a child’s resolve to survive. A wide variety of wishes have been granted over the years, ranging from having a shopping spree, an outdoor play system, an electronic wish, a room makeover and working in a pet store, being a police officer, being an army nurse, going on a travel wish to a dreamland far away, attending a special sporting event, meeting a favorite celebrity, and even meeting the Pope. Last year, the Rio Grande Valley Chapter granted 95 children their most heartfelt wishes, allowing them a respite from the doctors and hospitals. As Ryan phrased it, it gives a kid a chance to be a kid again. ‘Kansas Day’ Celebrated in the RGV Special to Welcome Home RGV

Grande Valley to celebrate Kansas Day Wednesday, January 25 (four days early). Two-hundred-twentyfive attendees from the Sunflower State gathered at the Nomad Shrine Club in Pharr at 11:00 a.m. After Bill Niemann, Nortonville, gave the prayer, Balli’s Catering from Mission served a delicious, sit-down chickencordon-bleu meal. Ken Naysmith, Belleville, enjoyed photographing the crowd as they were served and as they renewed friendships and made new acquaintances. This annual event is chaired by Paul and Jan Bergman, formerly of Seneca, who arrange for the facility, food service, decorations, and prizes. Larry Schmitt, Shawnee, is responsible for the communications and takes all reservations.

Circle your calendar for next year’s big event, which will be held Wednesday, January 24, 2018 (five days before Kansas Day). Kansans who winter in the Rio Grande Valley, and those who live here permanently, will once again gather at the Nomad Shrine Club in Pharr. Registration and welcome will be at 9:00 a.m. followed by a breakfast buffet and prizes. If you are a Kansan and missed this year’s event, don’t miss it next year. one of the 75 brave souls who will get a once-in-a-lifetime opportunity to rappel down the side of the tallest building in the Rio Grande Valley, the Chase Tower. Boys & Girls Clubs of Edinburg, McAllen, and Pharr are organizing the March 25 Over the Edge Experience to raise funds to provide summer camp to 7,500 youth and teens. Summer camps at Boys & Girls Clubs focus on academic success, health and lifestyles, and character and civic engagement. This unique event will allow people to rappel down the 17-story Chase Tower with the assistance of a professional ropes team. This certified ropes professional team will be in charge of keeping participants safe and have overseen more than 100 similar events over the past eight years with no injuries. The Over the Edge Experience will also include music, food trucks, and entertainment from 11 a.m. to 3 p.m. There will be something for the whole family. We invite all to come and cheer on the participants and enjoy the fun.

Shrimp Mexican Style

Mexico has about 6,000 miles of coastal waters. It is, therefore, no surprise that there are many great Mexican seafood dishes. If the dish is labeled a la Mexicana, you can be assured it contains tomatoes, onions, and chiles, combined here with plentiful shrimp from the coastal waters of Mexico. The recipe serves six but can easily be divided. Serve with Mexican rice, charro or re-fried beans, and warm tortillas. Enjoy! Buen apetito! •

Shrimp Mexican Style Ingredients: • 2 Tbsp. oil • 4 cloves garlic – minced • 2 lb. Roma tomatoes – peeled and coarsely chopped • ½ tsp. fresh ground black pepper • 2 large bay leaves • 1½ Tbsp. dried thyme • 1 Tbsp. kosher salt • 1 Tbsp. butter • 2 lbs. shrimp – peeled and deveined • 3 Tbsp. chopped fresh parsley • 1 Anaheim pepper – peeled and sliced Peel the tomatoes. Place them in boiling water until the skins split to peel easily. Peel the Anaheim pepper. They can have a tough skin, so toast the pepper briefly over an open flame, if available, or broil until the skin begins to brown. Then microwave the pepper in a paper bag on high for about 20 seconds. Place the oil in a large saucepan and sauté the onion and garlic about two minutes or until transparent. Be careful! The garlic can burn easily. Add the tomatoes, and cook over medium heat for five minutes, stirring constantly. Add the salt, black pepper, bay leaves, thyme, and sliced Anaheim pepper. Cook, covered, over low heat for five minutes. Taste the sauce and adjust seasoning, if desired. Melt the butter in a separate pan and lightly sauté the shrimp. Add the shrimp to the sauce and simmer for 3-4 minutes until the shrimp are done. Garnish with chopped parsley. Randy Hoelscher is a transplanted Texan and half-time RGV resident. worse, sometimes for the better, and sometimes for no reason at all. It is one of the things that make our lives interesting. When I was growing up, little girls wore very short dresses with petticoats to give the skirt a swirl. Girls in grade school wore their dresses to the knee or just below. Women wore their hemlines midcalf. Now little pre-school girls wear their dresses at mid-calf, school-age children and teens wear their skirts just below their buttocks, and grown women wear their hems anywhere from dragging on the floor to buttcheek level. It was customary to refrain from wearing white before Memorial Day or after Labor Day. Ever. We wore hats and gloves to church and to afternoon functions and never wore slacks to church. I began wearing slacks to church in 1975. At church these days, I see shorts, cutoffs, dungarees, slacks, culottes, and occasionally a dress. Certainly no hats. Men and boys wore felt fedoratype hats in the fall and winter and white boaters in the summer. They wore handkerchiefs in their breast pocket until recently and always a big white hankie in their hip pocket. Workmen carried big red or navy blue handkerchiefs; now they carry neither. I have no idea what they use to blow their noses. Are we back to holding one nostril and blowing in the opposite direction from which the wind is coming? I’ll not go there! In the larger cities of the eastern part of the country, people traditionally wore dark and subdued colors. It was in the month of April, many years ago, that I flew to New York City from Florida and wore a pastel dress and muted purple shoes. My future husband was in uniform. Nobody was wearing clothing like mine. Nobody. People on the streets of New York City wore somber blacks, browns, and navy blues. I was “the tourist” among them. In April, 1988, we were invited to a private party in Austin, Texas, and I wore a beautiful beige/pink dress and bone-colored high-heeled shoes and felt quite elegant. Most of the guests were from Washington D.C and New York City, and there they were on that hot night in Texas all wearing their black and navy blue dresses. Even the styles seemed odd to me. Harlingen, Texas, had been hot for six weeks already!

Liz Carpenter, Lady Bird Johnson’s secretary during the Johnson presidency, was one of the guests. She had lived in the East for many years but had retired to Seguin, Texas. She wore an outlandish caftan with a big lion’s head across the front. It was bad even for Texas. I was proud of her because, in spite of knowing about clothing styles in the East, she opted for comfort and a big garish lion on her front side. In 2012, I visited New York City in late September and, remembering my experiences of the past, I rustled up some fallish somber-colored clothing feeling that at least I would blend in with the locals on Broadway and Times Square. I consulted the Internet and asked, “What to Wear on a Visit to New York in September?” The answer was dark, somber tones are always in style in New York City, and it was recommended that comfortable shoes be worn. Whoever answered my query had never been to New York City! Of that I was sure. Our hotel overlooked Times Square, and it was the gaudiest, craziest scene in the world. As I sauntered about in my somber gray and navy “New York clothes,” I was surrounded by a sea (thousands) of people wearing freakish costumes, including the famous naked cowboy who strolls the street in boots, bikini, and cowboy hat, the naked Indian wearing moccasins, a feather headdress and little else, countless “green Statues of Liberty,” some wearing glasses and, of course, Minnie and Mickey Mouse. There was one fellow who held my attention. He was about 60 years old, wore a Statue of Liberty crown, a bra, a bikini bathing suit, and fashion boots. Grapefruit Olive Oil Cake Serves 12 • 2 cups all-purpose flour • 1 3/4 cups granulated sugar • 1 1/2 tsp. kosher salt • 1/2 tsp. baking soda • 2/3 cup canola oil Toppings • 1 grapefruit, segmented • 1 tsp. granulated sugar

1/2 tsp. baking powder 2/3 cup olive oil 1 1/4 cup 1% milk 3 large eggs 1/2 cup fresh grapefruit juice

• 1 Tbsp. powdered sugar • 1/4 cup sliced almonds

Preheat the oven to 350ºF. Grease a round cake pan* with butter; then dust with flour. Cut a piece of parchment paper, the same size as the cake pan, and line the bottom. * I used an 8”x 4” cake pan for this recipe, which resulted in a nice, tall cake. You want to use a cake pan at least 2” deep. In a bowl, mix the dry ingredients. In a separate bowl, mix the wet ingredients. Add the dry ingredients to the wet and whisk until just combined. Pour the batter into the cake pan. Place in the oven on the middle shelf. Bake for 60 minutes, until the top of the cake is nice and golden and a toothpick inserted comes out clean. Let the cake cool. Once cool, run a knife around the edge of the cake to separate it from the pan. Flip the cake upside down and gently remove the cake from the pan. While the cake is cooling, segment the grapefruit into slices. Sprinkle the grapefruit with 1 tsp. granulated sugar. Let it sit for at least 20 minutes. Garnish the cake with powdered sugar, sliced almonds, and grapefruit. The cake can be stored in the fridge for 3 - 4 days. This recipe was adapted from Maialino via Food52. Frequently Undisclosed Medical Conditions for Travel Insurance by Barry Guttormson

Someone came to my office asking

for a travel insurance quote but wanted to avoid using one company. Thinking he had a bad claim experience, I asked for more details. They had declined his claim for good reason. He purposely answered one of the application questions wrong to get a lower premium. The money he spent on this policy was wasted. It’s extremely rare for someone to intentionally lie on a medical application. Doing so will only result in savings if there is no claim. Insurance companies are experts at researching medical histories. Applications must be truthful. It is very common for an applicant to answer a question incorrectly, thinking a medical condition is not important or by simply forgetting it. These are some situations we see frequently. Most heart problems are readily disclosed, except a heart murmur. One doctor may hear a murmur while his or her colleague may not. It depends on hearing acuity. The doctor may have said the murmur is insignificant. While it may not affect the person’s daily life, most insurance companies will still consider this a heart condition. In most cases, it will result in the same premium change as for the person who had a serious heart attack or a bypass operation. Two frequently missed breathing conditions include asthma and sleep apnea. Asthma can be only mildly annoying, often seasonal, or lifethreatening. Many companies will ask further questions to determine an asthmatic’s severity level, but never assume that any asthma within the requested timeframe can be ignored. When asked about a respiratory condition, most people won’t think of sleep apnea. If the application lists lung condition examples, read them carefully. Watch out for the phrase “including but not limited to.” This means they want to know everything, not just what they’ve given as examples.

After the Winter Texans leave, Sharon often struggles to maintain a proper backlog of food for those in need. She serves several hundred people on a weekly basis. We can seat 350 and are hoping to fill the house with jammers and audience members. So join us and jam for the Penitas Food Pantry at Hidden Valley Ranch, 7600 Long Drive in Mission. •

So many things can happen with the digestive system that it’s easy to miss a condition. Even esophageal reflux may be counted. Most people who winter in the south have had a colonoscopy. Did they find a polyp, even a benign one? Were there diverticula? Many people have diverticulosis but don’t know it. Even if it has never developed to diverticulitis, it is usually considered a risk factor for an insurance claim. Declare any irritable bowel syndrome or even celiac disease. After a certain age, some degree of prostate enlargement is likely in men. Though this is usually declared, erectile dysfunction seldom is. Among men over 40, more than half have some ED. This can be considered a genitourinary condition. More likely, any medications taken need to be declared, since some companies count the total number of prescriptions. Count everything prescribed – medications for ED, eye drops, even a cream for an itch. Varicose veins may be considered an arteriovenous disorder, along with more serious conditions such as blood clots, aneurysms, or carotid stenosis. Most seniors will have some osteoarthritis. Some applications may inquire about this, along with rheumatoid arthritis, osteoporosis or osteopenia, and gout. No one wants a claim to be declined. The best way to reduce claim rejection is to know your medical history, report it, and not assume any condition is irrelevant to your application. Winter hot and remember to protect your assets! •

>> CHANGING TIMES CONTINUED FROM PAGE 14 tourist public was in an array of raggedy jeans, spaghetti straps, bare midriffs, and shorts that gave new meaning to the word “short.” In my somber dress, I wondered if I wasn’t the weirdo among them; however, my comfortable shoes were right on! That did it for me. My credo is ‘I will wear what I wish when I wish, and I will not confine myself to the rules of dress, for there obviously are none.’ CHANGING TIMES REGARDING FOOD It is not only styles of dress that change with time, styles of eating can change as well. In the not too distant past, Mexican food, Chinese food and certainly Mongolian food were not widely available in most parts of our country. When we lived in Iowa in 1965 no grocery carried tortillas, salsa or even the spices for making Mexican food. People on vacation would bring tortillas back from California and Texas to share with those of us who yearned for some good Mexican flavors. Now it is quite different. I read recently that salsa was the most preferred condiment in the nation and Mexican food is available in every state in the land as well as Thai, Vietnamese, Mongolian and Chinese food. The result of our

generous immigration policies, I would presume. I originate from an area of the country where servings are far too generous. My mother’s greatest fear was to run out of food on any occasion when she was responsible for the meal. I think portions vary greatly from one part of the country to the next. Having grown up in the Midwest, I remember portions were always quite generous. My mother’s particularly. A pie was cut into 6 pieces or it was considered “chinchy”. Let’s face it, 1/6 of a pecan pie is an invitation to Type II diabetes. I attended a party in one of Texas’ larger cities a few years ago, the caterer was a New Yorker and the hors d’eurves were works of art but almost inedible. No worry about eating too many of those! When the buffet supper was served the caterer placed a bowl of spaghetti on the table that I figured would feed a family of 6 (max), a medium sized bowl of salad and a small plate of Italian bread, all of which was to feed 45 people. It boggled my mind. People walked by and put about a teaspoon full of spaghetti and salad on their plate and an inch square of bread and called it dinner. I was amazed to note the guests acted as if they had eaten a meal. They hadn’t. That

meal could be duplicated by a visit to three food stations in HEB where mere samples are handed out in the hope one finds them tasty enough to buy the product. We were in the company of some high rollers that night and I had to assume they put their emphasis on money not food. That meal came close to the loaves and fishes story in the Bible, where a very little fed a multitude. Many years later a little French caterer in Denison, Iowa taught me something I have remembered always. Angie would say, “Do not worry about running out of food, whatever is there is enough. If you get worried, serve it yourself. You will have enough.” She was so right. So unless they are immoral or illegal, I guess it is best to accept changes as they transpire and make the best of them. Some are improvements on what has gone before, some are not. I can accept changes in dress and eating habits up to a point. I will not ever find beauty in rings hanging from eyebrows and lower lips or butt cleavage peeking out over the backside of blue jeans. The Promise of God (John 14: 2-3)

The Bible teaches that God cannot

lie but that His word will stand the test of time. In the New Testament, Jesus says, “In my Father’s house, there are many mansions and if it were not so, I would have told you so. I am going away, but if I go away, I will prepare you a place, and then, when it is ready, then will I come back for you that where I am you can be also.” Just in these words, Jesus makes several promises. First, Jesus promised that in the Father’s house were many mansions, but that He was going to prepare us a place. What a blessing that Jesus would prepare us a place to live forever with Him in a place called Heaven. Second, Jesus promised He would come back for us. He did not say He was sending an angel or someone else for us, but He Himself would come for us. How special can

we be? Jesus cared enough about us to do this for us. Third, He promised us that where He was, we could be also. That promise is that all who believe and trust and have a personal relationship with Him will spend eternity with Him. What a blessing this is to us, that even though we go through a lot of turmoil on this earth, Jesus is preparing a place for us. Sickness cannot hurt us, there will be no more tears, death will be swallowed up, and we will live with the one who saved us forever and ever. So when we feel the world is crushing in on us, remember the promise of God. You can place your trust in the living Savior, invite Him into your heart, and ask Him to forgive your sins. Heaven is a prepared place, and it is for prepared people. Are you ready to meet the Lord? He is coming back for His people, and we must prepare. •

friends from Austin (they’re REAL Texans!) introduced us to Black’s Barbecue in Lockhart. This restaurant serves some of the best smoked meats I’ve ever tasted, and on our way home, we sometimes stop there to load up the ice chest with their little sausages. Of course you have to have a side dish with barbeque to offset the smoke and sauce. •

Black’s Simple Slaw • ½ cup extra virgin olive oil • ¼ cup white vinegar • 1 teaspoon sea salt • 1 teaspoon ground black pepper • 1 teaspoon celery seed • 1/2 teaspoon celery salt • 1 medium head green cabbage, shredded • 1 teaspoon mustard Combine all of the ingredients, except the cabbage, to make the dressing. Toss this with the shredded cabbage until well-mixed. Allow to mellow in the refrigerator overnight. Makes about 8 cups. Note: The recipe above was adapted from Legends of Texas Barbeque Cook Book written by Robb Walsh (2002, Chronical Books LLC, San Francisco, CA). at Rudy's Country Store and Bar-B-Q is like being at a big ol’ family picnic except you don't know most of the other people! With red and white checkered tablecloths, long tables that hold lots of unrelated folk plus picnic tables for those who want to be a bit more exclusive, this is one friendly restaurant. You eat with plastic tableware, on butcher paper with paper boats to hold your food or condiments. It truly is a kick-back, eat hearty then lick your fingers type of place. We had lunch at the Pharr location of the Rudy's chain. General Manager Ryan Scheele has been with the company for 10 years, two-and-a-half of them at this store. He described their claim to fame: real Central Texas wood-smoked barbeque using nothing but oak to create the special flavor. Nothing is EVER cooked with charcoal or gas. Rudy's restaurants began in 1989 in Leon Springs, Texas, and has now spread to four more states, for a total of 24 locations. The method has remained the same since day one.

The menu at Rudy's is unique. You can order a sandwich; several meats are available, including their smoked turkey, which Ryan said is especially delicious. Small containers of sides are available a la carte. If you're there with a crowd, however, you can order any of 12 meats by the ½-pound served family style. Add side dishes by the pint or quart, soft white or wheat bread (a must with Texas barbeque), desserts, and beverages. You make the order as large or as small as is necessary to feed your party of one or 100! Meat choices include brisket (either “moist” or lean), turkey breast, pork loin, chopped beef, pork ribs, baby-back ribs, a half chicken, sausage (regular or jalapeno), or pulled pork. Friday through Sunday only, they also serve prime rib. If you've never tasted this succulent cut of beef smoked over a wood fire, you are in for an amazing treat. The restaurant seats 200, so bring the family. The salads and sides are made in-

eating pleasure. My side was pinto beans, which are cooked with bits of brisket in the sauce making them slightly smoky. YUM! Gregg gnawed on baby-back ribs paired with potato salad and three-bean salad. Rudy's uses only a dry rub when making the ribs; you add any sause you want at the table. Brisket is Rudy's most popular menu item; it's smoked 1416 hours over that oak fire. Ryan told us they cook about two tons of brisket each week! That should keep some ranchers in business for a while. If you develop a hankering for Rudy's food after you head back north, they ship all over the country. Any of their food is available for order on their website at rudys.com For anyone who loves barbeque, Rudy's is not to be missed. The food is good, the restaurant is clean and the staff is super friendly. On the back of their shirts is this motto: “I didn't claw my way to the top of the food chain....to eat vegetables” That says it all! •

Not only has Roel Flores of Weslaco

played bass guitar for more than 60 years in his spare time with some of the Valley’s greatest conjuntos, but he’s also an acknowledged painter. “I was six or seven years old when my father took me to Brownsville to hear my first live conjunto music performance where the famous Valerio Longoria was playing the accordion accompanied by Santiago Almeda on bajo sexto,” said Flores. “I was transfixed. After begging for several years, my father finally bought me my first guitar when I was 10 for the grand price of $18, and I paid it off by shining shoes and learning to play.” For the past 60 years, Flores, now 74, has accompanied some of the best conjunto musicians of the era, with his bajo sexto, groups such as Los Originales, Los Supremos, and Prestigio, to name a few. Today, he still plays gospel music some Saturdays at The Church of the Living God on Westgate Street in Weslaco. It wasn’t until 1995 that Flores began painting after his daughter Monica gave him some paints and brushes. To this day, he has done over 300 paintings and is self-taught. His exhibits have been sponsored by Smithsonian and have travelled all over Texas, including Houston, Austin, San Antonio, Brownsville, Edinburg, and Weslaco. He also exhibited in Chicago and in Mexico--in Monterrey, Nuevo Laredo, and Chihuahua. His story and pictures were published in a complete issue of Texas Folklife in 2008 titled, “La Labor: The Paintings of Roel Flores.” “I’m drawn to sunsets and sunrises because I’ve stood in awe before many beautiful ones here in the RGV and in other places where I’ve worked from sun-up to sun-down, sometimes while out in the fields picking crops or hoeing weeds in my youth,” said Flores. Most of his paintings tell stories about Rio Grande Valley culture through landscapes, folklore, and fieldwork and through his favorite kind of music, conjunto and Tejano. “I’ve heard many people mention that he is the only one in the nation who paints Tejano music and culture 100 percent, nothing else,” said his daughter, Monica RodriguezFlores. “He’s known by numerous musicians and has painted portraits of many of them, such as Esteban Jordan, Valerio Longoria, Tony de la Rosa, Santiago Jimenez, Gilbert Perez, Oscar Hernandez, and Herbie Lopez. administration recognizing his art and contribution to American culture. Like with most, hard times have been there. When he was 15, Flores dropped out of school due to discrimination and went to work in the fields instead. “I remember in the 50s when I was about 12 years old, I saw a degrading sign outside a restaurant in Lubbock, Texas, that read, ‘No Mexicans Allowed,’” said Flores. “At the time, our family was working in that region hoeing weeds. Recuerdo que mi abuela me decia, mijo. (I remember my grandmother would tell me, ‘Son, you are going to have a hard time with discrimination in this country because you’re Mexican. But remember, you are also American. Be strong.’” As much as Flores tried to stay in school, he only reached the sixth grade. “The humiliation and harsh treatment from senseless teachers was too much to withstand,” said Flores. “Some of them had a rock for a heart. I left.” It wasn’t until he and his young wife started a family that Flores got his GED. He went to work for Valero Coastal Southern Union (the gas company), a job he would keep for 30 years until he retired in 2001. “I was at first a meter mechanic, fixing and repairing meters, then testing and adjusting them. The pay always seemed low, but I adapted my attitude to keep going and doing the best I could. This is how I built my family, through hard work and love and my responsibility to them. Luckily, for me, I also had love for music, and that helped me become more lighthearted, I guess, enabling me to enjoy the good times in life and not thinking too much about the negatives,” he chuckled. Flores is also a proud great grandfather. “I have four daughters and one son, 15 grandkids, and 20 great grandkids. I have a wonderful family,” said Flores. He and his wife of 50 years, Epifania, have known each other since childhood, “She’s my best

friend and has stood by me all these years as my true partner in life. We have lots of beautiful memories and blessings.” The entire month of February will be dedicated to the artwork of Roel Flores at the Pharr Memorial Library, 121 E Cherokee, where a collection of nearly 30 painting will be exhibited in the main lobby downstairs for everyone to view and appreciate, free of charge. About ten of the paintings to be exhibited are from invited artists, including Roel’s grandson, Daniel Flores Rodriguez, and from his brother, Juan Flores. Although the artwork will be on display every day, a special reception to meet the artist will be held Thursday, February 16, from 6:00 to 8:00 p.m. at the library. Refreshments and pastries will be provided. Flores will speak briefly at about 7:00 p.m. about his life and about his artwork, and he will sign autographs. A drawing will be held to win a small framed portrait from his collection. Pedro Garcia, artistic director with the Pharr Community Theater, will co-host the reception, together with library staff. Crust: • 1 cup tortilla chips, finely crusted • 3 tablespoons butter, melted Preheat oven to 325 degrees. Stir chips and butter in small bowl; press onto bottom of a 9-inch springform pan. Bake 15 minutes. Filling: • 2 (8 oz.) packages cream cheese, softened • 1 (4 oz.) can chopped green chilies, drained • 2 eggs • 1 (8 oz.) package Colby/Monterey Jack cheese, shredded Beat cream cheese and eggs in large mixing bowl at medium speed with electric mixer until well blended. Mix in cheese and chilies; pour over crust. Bake 30 minutes. Toppings: • 1 cup sour cream • 1/3 cup chopped tomatoes • 1 cup chopped yellow, orange, or red bell pepper • ¼ cup sliced pitted ripe olives or red pimientos • ½ cup sliced green onion Spread sour cream over cheesecake. Loosen cake from rim of pan; cool before removing rim. Refrigerate several hours or overnight. Top with remaining ingredients. Serve with tortilla chips or crackers. • 1 small onion, grated • 1/3 cup chopped fresh Italian parsley • 1 large egg • 1 teaspoon minced garlic • 1 teaspoon Kosher salt • 1 slice white bread, pulsed in a food processor • 1/2 cup grated Parmesan • 8 oz ground beef • 8 oz ground pork • 12 cups chicken stock • 1 lb fresh baby spinach • 6-8 oz Orzo pasta • Kosher salt • Freshly ground pepper • 2 tbsp parmesan (optional)

of ours at Marcello’s Italian restaurant has been asking me for quite some time for our Italian Wedding soup recipe. So this is for you, ma’am. It is a favorite soup of our guests’ and we make it regularly. I’ve adapted our restaurant recipe, which is quite large, to a smaller home version that I think will do well for her and for you. When making the meatballs, you can certainly use a food processor for the first 6 ingredients, in order to speed things along. Also you will want to make the meatballs fairly small, but really whatever size you prefer, keeping in mind the larger they are the longer they will need to cook. •

For the meatballs: Place the first 6 ingredients in a large bowl to blend. Then add the cheese, beef, and pork. Shape the meat mixture into small meatballs, and place on a sheet pan. Typically, the meatballs for this soup are fairly small, but you can make them any size you want. To make the soup: Bring the stock and spinach to a boil in a large pot. Add the meatballs (uncooked) and simmer for a few minutes, stirring occasionally to make sure they don't stick. Add the pasta and continue cooking at a low boil until both the pasta and meatballs are cooked, ~ 15 minutes. Taste and then season with salt and pepper as needed. Sprinkle with parmesan cheese before serving.
