What a trip we had on the first

annual ‘Cruise with Kristi’! I was beyond thrilled, and honored, to have over 80 Winter, Converted, and Native Texans join us! It was a fantastic adventure--TWO busloads of folks, all eager to have a good time. But we didn’t have a good time. We had a GREAT time! I have to say, I am a big fan of group travel, especially when you’re with people who understand that it’s everyone’s vacation. There were no rules, and no one had to do anything he or she didn’t want to do. Want to sit by the pool all day? No problem. Want to read a book on the balcony all day? No problem. There’s also comfort in knowing you are not alone while traveling. While we did our own thing most of the time, it was fun to see familiar faces while on the ship and in Honduras, Belize, and Cozumel. I look forward to seeing those faces again very soon! I’m not sure when or where our next adventure will take us, but I do know there will be another one. I invite you to join us, so stay tuned for more details! Something tells me we’ll have three or more buses for the next one! •

Valley Symphony Orchestra invites the public to our 65th Anniversary Symphony Gala as we honor and celebrate the 2017 Cultural Leaders of the Year, Dr. and Mrs. William Gillum. Wings Around Us at Port Isabel Library Special to Welcome Home RGV

Vista resident and artist Patti Koreski will exhibit her mixedmedia paintings at her show titled Wings Around Us at the Port Isabel Library in February as part of the continuing series featuring artists from the Laguna Madre Art League. A long-time artist and elementary art teacher in Northern Virginia, Patti became interested in birding when she took up residence in Laguna Vista in 2004 and found herself surrounded by the abundance, variety, and beauty of South Texas birds. Soon the birds found their way into her art, which employs acrylic paint, handmade and commercial paper, fabric, drawing, and printmaking. Also, photographers in Bay Area Birders have let Patti use their work to jumpstart her paintings.

She said, “Every day, the environment of the Laguna Madre and the Rio Grande Valley provide me with images I can represent, in a playful way, in my art.” The show is part of the Laguna Madre Art League monthly art display program at the Port Isabel Library, located at 213 Yturria St. It runs throughout February. The Future of Families Topic of Wolsky Presentations February 15 and 16 Special to Welcome Home RGV

An

expert in the field of family social services will talk about The Future of Families during presentations in Weslaco February 15 and 16. Gary Wolsky has worked in human services for the entirety of his career and for the last 34 years served as president and CEO of The Village Family Service Center, the ‘grandchild’ of the North Dakota Children’s Home and Children’s Village. He recently transitioned to The Children’s Village Family Service Foundation. The Village is a 125-year-old nonprofit that started as an orphanage in Fargo, North Dakota and now provides social services to over 80,000 people a year. Programs include mental health counseling, adoption, special needs child care, mentoring, truancy intervention, financial counseling, and alcohol and drug addiction recovery. Village counselors are highly trained in trauma-focused therapies and modalities for childen ages 0 to 5. Its programs, such as family-group decision making, help maintain family structures, lessening dependence on foster care. Thirty percent of The Village’s revenues come through contributions,

including grants, United Way funding, and individual and corporate support. Clients are not turned away due to an inability to pay. Wolsky is proud to state The Village does not rely on government funding. Wolsky earned a bachelor’s degree in philosophy and a master’s degree in counseling and guidance, both from the University of North Dakota. He has been active on many local, state, and national committees and boards, including the Child Welfare League of America board of directors, the North Dakota Youth Justice Association, the Governor’s Subcommittee on Children at Risk, and the Family Therapy Coalition of Fargo-Moorhead. He is also a peer reviewer for the Council on Accreditation of Services to Children and Families. Long Island Village Golf Course is in

a gated community located on Garcia Street, just across the intra-costal waterway via a swing bridge from Port Isabel. Flying J Wranglers: World-Class Entertainment at Canyon Lake RV Resort Benefit Dinner and Show Special to Welcome Home RGV

Driving a thousand miles for this

special program, the chuck-wagon group, Flying J Wranglers, packed a full house Thursday night, January 26, and kept the folks who attended entertained, dazzled, and amused all through the evening. Everyone left with smiles on their faces, claiming it was one of the best shows they had ever seen. The program was a mix of steel, bass and acoustic guitar, banjo, violin, and much more. The vocals were spot-on and the comedy skits amusing. There was first-rate yodeling, a polka, and

even a Michael Jackson song, and all were great hits. Canyon Lake would like to thank the Wranglers for an outstanding performance and also thank all of the volunteers for your help in making this huge program very successful. and residents of Long Island Village (LIV) will participate in the 4th Annual Cancer Rally Golf Tournament and Luncheon. Last year, a total of 128 golfers and friends raised over $15,000, which was donated to the American Cancer Society and St. Jude’s for cancer research. The success of the rally was made possible by the generosity of Port Isabel, South Padre Island, and local businesses, golfers, personal hole sponsors, and private donations. This year, the coordinators, Traci Walzer and Jennie McBride, have planned a fun-filled day consisting of the golf tournament, buffet-style lunch, raffle baskets, live auctions,

and door prizes. It is family fun for everyone! The fee for golf and lunch is $35.00 plus $14.00 green fee. Lunch only is $10.00. Registration and raffle ticket sales start at 9 a.m. in the Recreation Hall at LIV. Shotgun starts at 10 a.m. Lunch, auctions, and drawings will start when all of the golfers are in (around 1 p.m.). Wisdom: There are only two lasting bequests we can give our children. One is roots. The other is wings. ~Hodding Carter I had quite a hoot when I read yet another news story of free-range children being picked up by police when found two blocks away from home without a parent. Evidently, the world is too scary a place for kids to be allowed the freedom of exploration and adventure. I grew up in the 1950s in a rural Minnesota community that had nothing but free-range kids. From about the age of six on, if there was no school, I was out the door and on down the road. I couldn’t tell my mother where I was going because I didn’t know. I might end up in a ball game in the park, playing ping pong at another friend’s house, or exploring the open country down by the creek north of town. Wherever my feet or my bike could take me, that’s where I went. I was not neglected or in danger. The fact is, every other kid in town was free range, too. I found them everywhere. One might have thought this would certainly be a recipe for

trouble, but it rarely happened. When it did, it was pretty benign--blood loss being minimal--the kind of stuff moms would bawl us out for and then have a good laugh over. It turns out that modern research from the University of British Columbia now says letting kids roam free, without a parent hovering about, is the best way to ensure healthy and well-adjusted development. Free ranging builds life skills. It might be true. I suspect most of our older generations were free-range kids. That’s where we learned to stand up for ourselves, gained self-reliance and self-confidence, discovered creativity, and even learned how to care for others. Well, I guess roaming was where we also learned to swear and smoke cigarettes, and there might have been a few Lord of the Flies moments, but we got it sorted out eventually. Of all the kids I hung around with, I can’t think of one who turned out to be a bad citizen. And in spite of all our roaming, thanks to our city government, we never missed a meal. I still kind of miss that noon and 6 p.m. whistle from the water tower. I’m just sayin’. •

Crème Fraiche Panna Cotta with Ginger-Rosemary Poached Grapefruit Serves 8 – Gluten Free Panna Cottas • 1 ½ teaspoons unflavored gelatin • 2 tablespoons cold water • 3 cups heavy whipping cream • Pinch of salt • 1 vanilla bean, de-seeded

In a small dish, mix together gelatin and cold water. Set aside to “bloom” for about 5 minutes. Add heavy cream, pinch of salt, vanilla, zests, and maple syrup in a medium saucepan. Heat the mixture until just warmed, but not boiling. Stir in gelatin until completely dissolved. Remove from heat and let cool for 5 minutes. Add crème fraiche to a large mixing bowl. Gently whisk in cream, a little at a time, until smooth. Divide mixture evenly between eight ramekins or jars. Chill for 4, or up to 24 hours. Poached Grapefruit • 2 Winter Sweetz grapefruits, supremed • ½ cup grapefruit juice • 2-inch piece of ginger, grated or minced

• 2 sprigs rosemary • 3-4 tablespoons maple syrup • Pinch of salt

Add supremed grapefruit slices to a small, shallow dish. Add grapefruit juice, ginger, rosemary, maple and salt to a small saucepan. Warm mixture until hot to touch, but not boiling. Then gently pour liquid over grapefruit segments, making sure they are completely submerged. Set aside for 5 minutes. Top chilled panna cottas with poached grapefruit segments and a drizzle of liquid. Serve immediately or chill again until serving. Yield: 2 loaves • 1 Texas red grapefruit • ½ teaspoon baking powder • 2/3 cup shortening • 2 teaspoons baking soda • 1 cup brown sugar, firmly packed • 2 teaspoons salt • 1 ½ cups sugar • 2 teaspoons cinnamon • 1 teaspoon vanilla extract • ½ teaspoon cloves • 4 eggs • ½ teaspoon nutmeg • 1 (16 oz.) can pumpkin • 1 cup chopped pecans • 3 ½ cups flour Preheat oven to 350 degrees. Grease 2 (9x5) loaf pans. Coarsely grate all outer peel from the grapefruit; set aside. Remove remaining white peel and seeds; puree whole grapefruit in blender or food processor. Do not drain; set grapefruit aside with peel. In a large bowl, cream shortening, sugars, and vanilla well. Mix in eggs and pumpkin. Combine flour, baking powder, soda, salt, and spices; gradually stir into pumpkin mixture. Fold in grapefruit puree, the peel, and pecans. Pour into pans. Bake for about 70 minutes, or until done. Turn out on wire rack to cool thoroughly. This recipe can easily be cut in half to make one loaf or 18 muffins.

Winter Texans are always looking for money. And when they get it, they can’t seem to hold on to it. I’m talking about that gang of Winter Texans from Mabel’s Free Clinic Association. In l998, with nothing more than a great idea and plenty of luck, they managed to raise over $25,000. Then they went ahead and spent the whole works constructing a free dental and medical clinic to treat the children of the colonias in Nuevo Progreso. Later, in a bold attempt to raise enough money to maintain the “Free” in Mabel’s Free Clinic for at least another year (short of robbing a bank), they gambled on hosting a stupendous fundraising breakfast… and did so, in grand style! Hundreds of Winter Texans and Valley residents attended and left that breakfast with full tummies and warm hearts. Again, the association spent every penny raised on things like dental and medical supplies, new equipment, building maintenance, and patient

transportation. Now, 29 years later, an energetic gang of Winter Texans across the Valley is still scrambling to keep up. And, as Maxwell Smart used to say, “loving every minute of it.” It wasn’t always that way. In l987, Dr. Keith Routley, a dentist from Manitoba, came to the Valley believing he was retired, until he ran into Mabel Clare Proudly and her sister, Elizabeth. Those ladies, who worked daily with the poor in the colonias of Mexico, had been in dire need of a dentist for a long time. And along came Dr. Routley with a golf club in his hand and a target on his forehead. In a flash, Mabel had roped him in, and the duo became lifelong partners and friends. In the early years, Dr. Routley begged, borrowed, or bought the equipment and supplies he needed, often digging down into his own pockets. Some of the more expensive equipment he borrowed and brought from Canada in the fall, hauling it back in his car every spring. Working out of various cramped, dingy rooms

in Mexico, he and Mabel still managed to treat a few hundred children each winter season. Today, with the new, well-equipped clinic in full swing, there are considerably more children treated every day. The clinic is open daily, staffed by a Mexican doctor and a Mexican dentist. Here’s how it works: Following Dr. Routley’s original procedures, the dentist visits all the schools, where he evaluates the teeth of the children so they can be transported to the clinic for help. Meanwhile, a team of Winter Texans checks the vision of children at all the schools. Those who need further care are transported in the clinic van and evaluated by a volunteer ophthalmologist. Whenever possible, used eyeglasses are repurposed, and for others, new lenses are ground. Volunteers also test for blood pressure and diabetes, conduct diabetes education, perform eyeglass fittings, and drive the van. This, of course, is at no cost to the parents. And adults in need are never turned away, either. On the clinic grounds, there is also a ropa (clothing) store and a playground for neighborhood children. Twice a month, long lines form hours in advance for the opening of the store. Here, volunteers distribute the clothing, household supplies, and food to the needy. At any given time, there are waves of warm feelings floating around the clinic. The children, bright-eyed, polite, and grateful, can just steal your heart away. If you’d like to be part of that, Winter Texans are encouraged to visit the clinic, attend board meetings, and volunteer in any capacity. The clinic manager is Dick Turner in Victoria Palms. don’t give a hoot about owls, but at one time I did. I collected them. I thought they were cute, looked wise, and were beautiful. Each time I saw an owl made of different material or of a unique size, I would buy it and add it to my collection. And friends and family provided me with more than a few, as time went by. After a time, my house was festooned with owls. I was inundated with owls: hanging, leaning, standing, lying…a friend even made a pillow with a big owl face on it. Needless to say, I began to dislike the beady-eyed little creatures. One day it was necessary to replace the toilet seat in our bathroom. My dear husband offered to handle purchase and installation, and I gladly accepted his offer. Much later in the day, I walked into the bathroom, and the lid was down. I should have suspected something was out of sync with the normal state of affairs in our lives. I lifted the lid and…you guessed it; there was an enormous owl on the underside of the lid. Strangely, I ran screaming from the room yelling, “I have had it with the owls around here! No more owls! I hate owls! I am going to de-owl my house!” My husband stared at me and said, “I have never seen you so out of control. You are obviously suffering from “owl-rage!” This made me want to punch him out, but instead, I told him I had made a life decision, and it was irrevocable. He seemed momentarily uneasy. I went to the garage where I kept two empty boxes. I then made my way through our home and untied, took down, unhooked, unpinned and detached every owl

in my house--including the darn sofa pillow--and pitched them all into the boxes. I said, “Follow me.” I picked up a box and handed it to him. I picked up the other and proceeded out the door. Our neighbors down the street were preparing for a garage sale to be held the next day. I marched up to where they were working in the garage and handed them the two boxes of owls. I said, “I want you to have these owls. Sell them and keep the money! Please don’t ask me to explain. I just want you to have these dang owls, no ifs, ands, or buts.” “Well, thanks,” they said with a questioning look. I turned on my heel and walked off, with my husband at my side. I heard my neighbor ask her husband, “Do you think she is all right?” Heck yes, I was all right. In fact, I was “owl right.” Owl free. Now if anyone asks if I collect anything, I say, “Of course I collect. I collect platinum praying mantises.” So far I have not received a single praying mantis as a gift--not even from my closest friends. Problem solved. • M. Biblical PTSD “I returned home from war.

It was rough. I was responsible for keeping my friends alive, yet many still died despite my best efforts. Some died in my arms. I relive those battles and see their faces nightly in my nightmares. My marriage ended in divorce, and I turned to self-medication.” “I returned home from Vietnam and had no problems except anger until I retired from work. Now I am having nightmares, flashbacks, and mood swings. The VA diagnosed me with post-traumatic stress disorder.” Which is often referred to as PTSD. King David exhibited the signs and symptoms of PTSD. In Psalm 6:110, King David asked for forgiveness and grace from God. He asked God to deliver him from the intense emotional, spiritual, and physical suffering. King David points out PTSD symptoms--a troubled soul that is having no moral/spiritual conviction while being overwhelmed with guilt and depression! Groaning all day and night just like today’s vets talk to themselves about what happened; trying to justify what they did or simply make sense out of it. King David made his bed swim, meaning that he had such vivid and awful nightmares that he sweated profusely during those nightmares, drenching his couch with tears and weeping. Vets with PTSD still do that as they continue to weep for their lost brothers and sisters in arms, and as

they isolate and blame themselves for what happened. King David wrote over 75 psalms filled with despair, hopelessness, anguish, and torment due to his PTSD and what he was going through. Yet he never lost hope. In these passages, King David was praying to God, not running from God. King David knew he needed God to begin spiritual healing and to deal with the moral injury. Today’s combat veterans with PTSD must do the same. In Ecclesiastes 3, we read that there is a time for everything. Now is the time for our combat vets and their families to heal. I know this all because I am a combat veteran with PTSD. I served many years with the U.S. Marines as a Fleet Marine Force Hospital Corpsman, a career cut short due to war injuries and PTSD. Finally, after prayer and turning back to God instead of running from Him and blaming Him, I made progress. I eventually was even able to go back to college and become a chaplain. This is not bragging but letting you know I have been there and am there. If you or someone you know is struggling with post-traumatic stress disorder, please get help. You meet the nicest people at a

recycling bin, people like Dick and Nadine Keatley of Victoria Palms Resort (VPR), shown here putting their recyclables into a bin for pickup, rather than into the landfill. They care about saving the environment, saving energy, and conserving resources. For more than a year now, the residents of “The Official Best AgeQualified Resort in Texas” have been successfully recycling paper and cardboard, metal (aluminum and tin cans), and plastics (numbers 1 and 2) through a resident-developed and resident-run program. The numbers speak for themselves, as you can see by our graph. Last March VPR’s “Green Team” expanded the program to include household batteries (chargeable and non-chargeable), used light bulbs, and used printer ink cartridges. This season we are expanding the program again to include white Styrofoam and glass. VPR’s future plans include composting of yard waste and citrus and curb-side pickup of recyclables. Two more VPR residents recently

met on the street in the Resort. Norman Guillmette shows what is left of his household waste AFTER he has recycled, contrasting this with Richard Doering’s large bag going to the recycling bin. Okay…being from Minnesota, I confess that I had never made this before, but I sometimes order it. When researching this recipe, I was really amazed how simple it is and how good! This recipe was adapted from one by Alton Brown of the Food Network. This recipe yields 4 – 6 servings. Enjoy! Buen apetito! •

If

you haven’t tasted beer can chicken, I’m sure you’ve heard of it. The gourmet kitchen stores sell gadgets to fill with beer that hold the chicken upright on the grill, but the original is simply to sit the bird over an open can and let it cook. The vertical position helps crisp the skin and drain away some of the fat while the beer steams the chicken from the inside, keeping it moist. You can also drink some beer while you’re cooking since you only use 1/2 a can! •

Chicken Fried Steak

Grilled Beer Can Chicken • 1 can (12 oz.) beer • 1 chicken (3 ½ –4 pounds) • 2 tablespoons of your favorite barbeque rub Open the beer and drain off half of it into a glass. Using a “church key” type opener, make a few more holes in the top of the can. Wash the chicken inside and out, removing the packet of giblets and neck, if they are inside. Remove any visible fat from inside the chicken body and neck cavities. Sprinkle 2 teaspoons of barbeque rub inside the chicken and rub the bird all over outside with 2 more teaspoons of rub. Spoon the remaining 2 teaspoons of rub through the holes in the can, into the beer. (Don’t worry if it foams up.) Insert the can into the body cavity of the chicken, and spread its legs out to form sort of a tripod so it will sit upright. Tuck the wing tips behind the chicken’s back. Preheat the grill for indirect cooking at medium, and stand the chicken upright in the center of the hot grate. The bird should be away from the heat. Cover the grill, and cook the chicken until the skin is a dark golden brown and very crisp. A meat thermometer inserted into the thigh should register about 180 degrees F. This should take 1 ¼ – 1 ½ hours. Using barbeque gloves and tongs, carefully remove the upright chicken, with the can still inside, to a platter. Let it rest for 5 minutes; then remove the chicken from the beer can, taking care not to spill the hot beer and burn yourself. Quarter or carve the chicken and enjoy! Ingredients: • 2 lbs. beef bottom round (I just used round steak.) • 2 tsp. Kosher salt • 1 tsp. freshly ground black pepper • 1 cup all-purpose flour • 3 eggs, beaten or whisked • ¼ cup vegetable or corn oil • 2 cups chicken broth • ½ cup whole milk (I used lactose-free low-fat milk.) • ½ tsp fresh thyme leaves (preferred, but can use dried) The goal is to end up with serving-sized pieces of steak that are about ¼-inch thick, so plan accordingly. Place the eggs and flour in separate pie plates. Sprinkle the meat with salt and flour. Dredge the meat in flour and then pound until about ¼-inch thick. (I just used a French rolling pin, but you could also use a meat tenderizer hammer if you have one.) Once tenderized, dredge the meat in the flour, then in the egg batter, and then again in the flour. Place on a rack and let it sit for about 15 minutes. Continue this process until all the meat is floured. Place enough oil in a skillet at medium-high heat to cover the bottom of the pan. When the oil shimmers, place the meat in the skillet and cook until golden brown, about 4 minutes per side. Place the meat pieces on a baking sheet in the oven to keep warm. Do this until all the meat is cooked. To make the gravy, add the remaining oil (at least a Tbsp.) to the pan used for frying the meat. Whisk in 3 Tbsp. of the flour used to dredge the meat. Add the chicken broth to deglaze the pan. Whisk until the gravy comes to a boil and begins to thicken. Add the milk and the thyme and continue to whisk until the gravy coats the back side of a spoon, 5 to 10 minutes. Taste the gravy and add salt and pepper to taste. Serve the steaks with the gravy. The Growing Growers Farmers Market at McAllen’s Firemen’s Park partnered with Lebby Salinas, organizer of the Home Bakers group, to bring to the market high-quality baked goods that address the needs of community members with dietary issues, as well as those who can eat traditional treats. “The results have been most rewarding for everyone,” says Salinas. “We have bakers who prepare glutenfree options, like our chocolate torte and grapefruit pies, as well as breads and treats that use all-organic ingredients, vegan, and no or reduced sugar options, and we address those with food allergies. We have been very well received and of our bakers are committed to serving this part of our community, along with those who still enjoy traditional treats.” The Growing Growers Farmers Market specializes in high-quality, locally grown produce and farm

products and provides free cooking classes and demonstrations on a regular basis. Featured in the photo in yellow is Rob Peterson, co-owner of Tio Robertos, a business specializing in jams and jellies, including those with reduced sugar. Valley Men of A Chord presented a scholarship to PharrSan Juan-Alamo North High School graduate Cynthia L. Cantu May 10 (2016). Cantu was a member of the PSJA North choir and authored an article titled “Music as a Second Language” in response to her nomination for the scholarship. While a student at PSJA North, from which she graduated after three years, Cantu received an associate of arts in interdisciplinary studies. She is a pre-med biology major and chemistry and English minor at the University of Texas Rio Grande Valley. She is a member of multiple organizations, holding leadership positons in some, including vice president of Phi Theta Kappa — Beta Epsilon Mu at South Texas College, member of Sigma Alpha Pi — The National Society of Leadership and Success at the University of Texas Rio Grande Valley, and member of Mu Alpha Theta at PSJA North High School. Cantu has been involved with 4-H and FFA and volunteered at the Rio Grande Valley Livestock Show and San Antonio Livestock Show and Rodeo. Cantu has received multiple awards, among them a Division 1 rating in Solo and Ensemble at the Texas Choir competition. She was involved in golf, basketball, drama,

Table Talk: Restaurant Reviews by Sandy Olson Tony Roma’s – The Perfect Place for a Winter Texan Gathering Special to Welcome Home RGV

When

we first became Winter Texans in 2009, I heard that Tony Roma’s was THE place to go for ribs....saucy, tender, falling-off-thebone baby backs. That’s still true, but what I’ve also discovered is that this fine-dining restaurant is much more than ribs. And fine dining does not have to be expensive! There is a full lunch menu that includes, among other things, endless soup and salad combos (with a choice of three soups and three salads) priced at only $8. Ask for seconds or thirds until you’re full. You will also find smaller portions of many dinner favorites (Think ribs!) at lunch time, Monday-Friday, 11:00 a.m. to 4:00 p.m. Since Winter Texans LOVE to go out for lunch, this is the place. CEO Rick Guerra brought Tony Roma’s to the RGV 21 years ago, and it remains one of the best we have. The food served here is all made fresh, in-house, cooked to order, and is never frozen or packaged. Assistant General Manager John Benavides told us some of the company history, including that it was started in 1972 in a small pub/restaurant in Florida. The company now has a presence in

150 different countries. The menu features the famous ribs but also pasta dishes, seafood delicacies, and steaks, to name a few of the other favorites. Sandwiches, soups, and salads round out the choices. The recipes come from their corporate office and are prepared, exactly, at each restaurant. We asked John to order for us so we might taste some of what he and the staff are most proud to serve. We enjoyed every bite! Our lunch began with a cup of tlalpeño soup. This soup is only found in some of the Texas locations of Tony Roma’s, a chicken vegetable soup with a kick of pepper and chunks of avocado. It was outstanding. Then the onion loaf arrived! These are not your ordinary onion rings; they are made with a special process that removes

any harsh or bitter oils from the vegetable, resulting in the sweetest and most succulent deep-fried onions you have ever tasted. A major cut above the rest! Our entrees included shrimp and salmon piccata, filet medallions of fork-tender beef with sides of mushrooms and bourbon-grilled onions, and, of course, ribs! The ribs are covered with Tony Roma’s original sauce. Loaded mashed potatoes (made from scratch using red potatoes), steamed broccoli, and rice pilaf completed our plates. It was a bountiful feast. Every item was perfectly prepared. The salmon was moist, served with grilled shrimp on top and ‘sauced’ with the traditional lemon and caper sauce that identifies piccata. The ribs need no introduction; they are Tony Roma’s claim to fame, and the steak...well, you just have to try it for yourself to find the right accolades. John told us they feature a “limited time offer” menu item that changes every three months. A new one will be introduced in February. These are innovative twists on a dish or ingredient or a special sauce or topping. The restaurant prides itself on staying ‘fresh’ and ‘modern’ in

their offerings while maintaining the favorite entrees people have enjoyed for years. Tony Roma’s has undergone a complete renovation in the past year. The restaurant is now lighter, with a more open floor plan and beautiful light, earth colors gracing the walls. There is a full bar that serves national beers, as well as most of the craft beers brewed in Texas, cocktails that are exclusive to these restaurants, and wine that can be paired with all of their entree offerings. A party room that seats 45-50 comfortably is available for lunch or dinner; it’s a perfect location for a Winter Texan gathering! Happy hour with drink specials is held Monday-Thursday, 4:00-7:00 p.m. There is outdoor seating, as well. Eating out in the RGV is an adventure; eating out at Tony Roma’s is an experience! •

The Evolution of the Oleander Acres Painted Butterfly by Vern Kirsch

We

have been doing a series called “The Evolution of the Oleander Acres Painted Butterfly.” Over the past couple of weeks, the residents of Oleander have been taking a piece of metal and making it into a beautiful butterfly. They have, if you will, been transforming it (via gifted craftsmen) into a colorful creation. All this is to prepare for the 50th anniversary of the park, which will be held February 12 from 2:00-4:00 p.m. The public is welcome and encouraged to come and visit the park for the ceremony. At this writing, I have had the privilege of viewing the completed sculpture, and I must admit I am very surprised. I watched it being painted over a three-week span and have seen it coming together, but I never could have envisioned the work

of art it has become. Our Oleander Acres art teacher, Ron, completed the masterpiece with the help of 19 other painters. You will have to be at our celebration February 12 for the big reveal of the masterpiece. As mentioned above, the butterfly will be presented February 12 and, per Karen Kovars, activities director of Oleander, our theme is changing Mission from the Citrus Capital to the Butterfly Capital of the World. so I realize that we don’t actually experience snowy winter storms here in south Texas but growing up on the east coast, I miss the seasons, even the occasional horrific snowstorm. Feeling nostalgic for a good old fashioned “snow day” this yummy, cheerful blueberry coffee cake is one of my snow day comfort foods of choice. It is easy to prepare and so satisfying as well. It’s perfect with afternoon tea or coffee or really anytime. So enjoy and don’t worry about shoveling the driveway, it’s only imaginary snow after all. •

Bon Appetit! For the Cake: • 6 tablespoons unsalted butter, at room temperature (3/4 stick) • 3/4 cup granulated sugar • 2 extra-large eggs, at room temperature • 1 teaspoon pure vanilla extract • 1/2 teaspoon grated lemon zest • 2/3 cup sour cream • 1 1/4 cups all-purpose flour • 1 teaspoon baking powder • 1/4 teaspoon baking soda • 1/2 teaspoon kosher salt • 1 cup fresh or frozen blueberries • Confectioners’ sugar for dusting

For the Streusel: • 1/4 cup granulated sugar • 1/3 cup light brown sugar, lightly packed • 1 teaspoon ground cinnamon • 1/8 teaspoon ground nutmeg (freshly grated is best if you have it) • 1/4 pound (1 stick) unsalted butter, melted • 1 1/3 cups all-purpose flour Preheat the oven to 350 degrees F. Butter and flour a 9-inch round baking pan. To make the streusel: In a small bowl, combine the granulated sugar, brown sugar, cinnamon, and nutmeg. Stir in the melted butter and then flour; mix well and set aside. To make the coffee cake: Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on high speed for 4 to 5 minutes, until light. Reduce the speed to low and add the eggs 1 at a time, add the vanilla, lemon zest, and sour cream. In a separate bowl, mix together the flour, baking powder, baking soda, and salt. On low speed, slowly add the flour mixture to the batter until just combined but do not over mix. Gently fold in the blueberries until the batter is completely incorporated. Spoon the batter into the prepared pan and spread it out evenly. Sprinkle the topping evenly over the batter (using your hands works best). Bake for 40 to 50 minutes, until a toothpick comes out clean. Cool completely and serve sprinkled with sifted confectioners’ sugar.
