Gate Grove will host a wonderful quilt show Tuesday, February 7. This is our thirteenth annual quilt show, and each year, a lucky person has the chance to win our ‘Opportunity Quilt.” This year’s quilt is called Moon Glow and is an awesome queen-size quilt made by the ladies in our quilting group. The proceeds from this help us purchase supplies to continue our community service projects. We make and donate over 100 quilts each year for those in need. We also sponsor a quilt-a-thon, making quilts for veterans of the Rio Grande Valley. The Green Gate Grove show will have over 140 quilts on display, wearable art, wall hangings, and other textile

Chuy’s Cantina, A Radio Show Theater Performance at Country Side February 15 by Bob Watson
The
Rio Grande Valley Radio Theater presents a live theater performance of the radio show Chuy’s Cantina at Country Side RV & MH Park, 100 North Valley View Road in Donna, Wednesday, February 15, at 7 p.m. Admission is $6, and doors open at 6 p.m. Chuy’s Cantina, a drama comedy, centers on a cantina Chuy owns near the Rio Grande and the unique situations and interactions of his staff and customers that overshadow the operation of keeping his business running. The Rio Grande Valley Radio Theater, organized by Tom Fuschetto, college instructor at South Texas College, and Tom Peters, retired broadcaster and watch material salesman, presents live, radio-showtheater plays written and directed by Fuschetto in a radio broadcast studio setting. The two Toms read scripts and act out many radio show characters, including background sound effects. This live, radio-show play includes all of the trials and trivialities of a live radio broadcast, including audience involvement. Over the years, Fuschetto has written many play scripts, including radio show scripts like Chuy’s
Cantina, Military Highway Mysteries, Station Valle, Dimension South Texas, and Sam’s Place in Reynosa. Back in the days of the retirement park Twin Palms (next to South Texas College before the campus expansion), many of the residents would attend and enjoy Tom’s shortscript plays informally performed at the college. Tom’s play scripts have been performed in retirement facilities, senior centers, churches, and other venues. All Valley Tours + Winter Texans = Fun in the Alamo City Special to Welcome Home RGV
It was a chilly Saturday morning
when a bus from All Valley Tours filled with Winter Texans from several areas of the Rio Grande Valley headed north to San Antonio! This group of funloving folks was looking forward to a four-day excursion to some of San Antonio’s best sites. Activity Directors Susan Thomas from Bit-O-Heaven and Linda Olson from Chimney Park RV Resort had worked out an itinerary of historic and interesting places to see and things to do. After the bus arrived, the first stop was an audio tour about the Alamo and all its history. Next stop was Tower of Americas. What an amazing view from the observation deck! The movie telling the story of the Tower was very informative, and, of course, the gift shop is always a fun place to be. Drury Plaza Hotel was our next stop. After everyone settled in, we all enjoyed the refreshments and the “Kick Back” supper. The evening was free for everyone to enjoy themselves. It was a chilly 22 when everyone gathered for a great breakfast. Because of the chilly weather, the group decided to relax until noon; then off we went to Trader’s Village—a fun place with a carnival atmosphere where you can browse and buy loads of merchandise!
The variety of vendors was amazing, with food vendors close behind. We shopped ‘til we dropped into our bus! Off again to relax for a while and then to one of the highlights of the trip—a dinner cruise along the Riverwalk. The weather had improved somewhat, but Bourdo’s restaurant and the barges were ready with warm blankets to snuggle into. Off we went on the San Antonio River. Our meals of prime rib and chicken breast were wonderful! The prime rib was almost as big as the plates and was very tender. Those who chose the chicken were thrilled with the flavor and how moist the chicken was. Along with margaritas and dessert, everyone had a great meal and a great time! One of the barge drivers was laughing so hard he almost fell off the boat. It was a wonderful experience! Again, we hopped on the bus; then we were dropped off at Main Plaza in front of San Ferdinand Cathedral to enjoy the outdoor viewing of The Saga, a pictorial and musical video showing the history of the settlement of Texas. The 30-or-so-minute presentation was captivating! Everyone was glad they had bundled up and stayed for this unique event. Monday morning, we were off again…but too early! The sun was shining beautifully…and the temperature had warmed. Our step-on guide, Sissy Henges, joined us. We were off to tour the three missions of San Antonio. Mission San Jose, Mission Concepcion, and San Ferdinand Cathedral are located within San Antonio proper. Each
mission has its own fort-like setting and church. The missions are unique in their own way and are being restored and preserved to capture the life and times of the Indians and settlers who lived there. All of the missions, including the Alamo, are an important part of Texas history. All of them, except the Alamo, are still vibrant churches today. The knowledge Sissy shared brought that history to life as we toured each location.
We found ourselves at Mi Tierra restaurant for a great Mexican lunch! This restaurant has a wonderful history of family ownership, great food, and wonderful service. It is surrounded by Market Plaza and has a wine-tasting room! We ate, shopped, and wandered back to the hotel (just a couple of blocks away). We all enjoyed the happy hour and light supper included with our stay. Tuesday morning, we were rested and ready to head south to the Rio Grande Valley. We stopped for a quick lunch in Falfurrias, and soon we were being delivered to our pickup spots! Everyone agreed it was a wonderful trip. Many asked Linda and Susan to do it again. We’ll have to think about that for sure! •

HOT Off the Grill: with Sandy Olson
Recipes for All Outdoor Chefs
When
most people mention cooking ribs on the grill, they are thinking pork ribs: baby backs, spare ribs, or St.-Louis-style ribs. Beef ribs get a lot less attention, but they are so delicious that it pays to search them out at the market and cook them to perfection on the grill. •
Memphis-Style Beef Ribs • 2 racks of beef ribs (2 1/2 – 3 pounds each) • 2 teaspoons hot red pepper flakes • 3 teaspoons Kosher or coarse sea salt • 2 teaspoons brown sugar • 1 teaspoon garlic powder • 1 teaspoon dried oregano • 1 cup white vinegar
• 3 tablespoons sweet paprika • 2 teaspoons mustard seeds • 2 teaspoons black pepper • 1 teaspoon celery salt • 1 teaspoon onion powder • 1 teaspoon ground cumin
Rinse the ribs under cold running water and blot dry with paper towels. Combine the spices above with only 2 teaspoons of the salt. Mix well and set aside 2 tablespoons of this mix to make the mop sauce. Sprinkle about 1 tablespoon of the spice rub on the meat side and 1/2 tablespoon on the bone side of each rack of ribs, rubbing it in with your fingers. Set any remaining rub aside for another time. Let the ribs sit for 30 minutes while you make the mop sauce. Combine the vinegar with the remaining 1 teaspoon of salt and the reserved 2 tablespoons of rub in a small bowl. Stir until dissolved. Set up your grill for indirect grilling and preheat to medium. Place a drip pan in the center of the grill with the heat source on the sides, if using charcoal. If using gas, turn on only one burner. Place the meat on the grill away from the direct heat, close the grill, and cook for about 2 hours. When the ribs are cooked, they will have shrunk away from the ends of the bones. Adjust time according to your grill. Transfer the ribs to a clean cutting surface and mop both sides with the vinegar mop sauce. Cut into individual ribs and serve at once with remaining mop sauce. Know What to Do When Sudden Cardiac Arrest Strikes Dr. Robert Sepulveda to hold free “Senior Health Talk” in Weslaco February 7 Special to Welcome Home RGV What do you do when (CPR) for those who a loved one goes into “sudden cardiac arrest?” Dr. Robert Sepulveda, internal medicine physician, will discuss this topic during a free “Senior Health Talk” for the community Tuesday, February 7, at 12:30 p.m. at Knapp Medical Center in Weslaco. Dr. Sepulveda’s talk will include a demonstration of CPR techniques, such as chest compressions, which are designed to move blood to a patient’s heart, when he or she has no pulse, until emergency medical technicians arrive. “These are life-saving techniques, which are very important for everyone in the community to be aware of,” Dr. Sepulveda said. “You never know when a heart attack may strike a friend or family member.” Dr. Sepulveda’s talk is being hosted by Knapp Medical Center as part of National Heart Month in February. The hospital also holds complete classes on cardiopulmonary resuscitation

The Evolution of the Oleander Acres Painted Butterfly by Vern Kirsch

In the past couple of weeks, the
residents of Oleander started to prepare for the 50th anniversary of the park--to be held February 12 between 2 and 4 p.m. The public is welcome and encouraged to come and visit the park for the ceremony. At the monthly meeting in December, park residents voted on their favorite of three designs of a butterfly to be presented to Ed Welliver and family. The citizens of the park chose the most colorful of the three. Now, how do we get there? Ron, the master artist, stepped in to save the day and transform a white, colorless piece of metal into a bright, colorful butterfly. Ron is a retired art teacher and has undertaken the step-by-step process

of getting the job done. It has been, for me, a real pleasure watching this take place. Ron has personally sketched the lines for each color, from the largest to smallest and from openness to tight space. As mentioned above, the butterfly will be presented February 12. Karen Kovars, activities director at Oleander, said the theme of our 50th anniversary event is Changing Mission from the Citrus Capital to the Butterfly Capital of the World. Here are the beginnings of the butterfly sculpture. Over the next couple of weeks, we will allow you to see the transformation take place in Welcome Home Winter Texan. Now, the master transforms a gray object into color. •

Spiced Grapefruit Gin and Tonic Yield: 4 drinks Spiced Simple Syrup: • 1 cup water • 1/4 cup honey • 1 cinnamon stick • 5 whole cloves

10 cardamom pods 2 star anise pods 4 whole allspice pods 5 pink peppercorns
For Cocktails: • Ice • 8-12 oz. diet tonic water • 1 Winter Sweetz™ grapefruit, segmented • Rosemary (optional) • 8 oz. (1 cup) gin • Grapefruit peel (optional) • 4 oz. (1/2 cup) spiced simple syrup To make spiced simple syrup, place all ingredients in a small saucepan. Bring to a gentle boil, stirring. Simmer about 5 minutes and remove from heat. Let syrup cool completely in the pan before straining into a jar or measuring cup. This will make enough for plenty of drinks! Muddle grapefruit segments in the bottom of a cocktail shaker. Make sure to remove any pith to avoid bitterness. Add ice, gin, and cooled simple syrup. Shake vigorously. Fill 4 glasses with ice. Strain gin mixture into glasses and top each with tonic. Garnish with grapefruit peel and rosemary (optional). They have been coming to the Rio Grande Valley together for the past three years where they call Tip O’Texas in Pharr their winter home. This fall, William, 81, surprised Arleen, 85, with a beautiful engagement ring. She accepted, and the couple will celebrate their nuptials in Thunder Bay June 17. They love to dance to the tunes of their favorite bands--Bottomline, Sweetwater, and Texas Wheels. They dance nearly every night (or day) at various RV parks in the Mid Valley, especially Tip O’ Texas, Mission Bell, and Victoria Palms. You will find them most Saturday nights dancing at Casa del Valle in Alamo. People have come to recognize them for their elegant attire. Arlene likes to tell women they can dress up for dances, they don’t always have to wear pants or blue jeans.
Saturday, January 21, marked another milestone for William. He celebrated his eighty-first birthday with Arleen at Casa del Valle. •

Travel Insurance Application Forms by Barry Guttormson
A
man was completing a travel insurance application with the help of a general insurance broker. The broker read him a question that asked if he had ever had a stroke. The man replied, “The doctors said I had one but I don’t think I did.” The agent entered “no” on the application form. Any claim would probably be declined since the doctor’s answer is what the insurance company would use. Thankfully, a family member noticed the error, withdrew the application and let us help him apply accurately. An interesting part of being an independent broker is seeing how differently insurance companies treat the same person. This is easiest to spot by comparing their application forms. Combined with a careful review of their policies, a traveler can use these differences to their advantage. Before beginning any insurance application, take the time to carefully research your medical history. Consult your physician to ensure facts are accurate. Read the application instructions and definitions carefully. It doesn’t matter how you (or even a lawyer) would define a term. It only matters how the insurance company defines it. Read every question carefully. Every word counts. Pay attention to how they define “treated” or “treatment.” These terms are often defined to include investigations or consultations that can dramatically alter how a question should be answered. Know the difference between a “screening test” and an “investigation.” Screening is done routinely with no specific concern being investigated and with results that are within normal limits. In contrast, a physician uses an investigation to dig deeper into a specific issue. For example, a colonoscopy done due to age or family history with no negative results would be considered screening. The same procedure done to look further due to a positive fecal occult blood test would be considered an investigation.

Pay special attention to the eligibility section. If you buy a policy for which you aren’t eligible, any claim will be declined and the premium refunded. It will be as if you never even bought travel insurance. Make sure you understand what the question is asking. Some companies want to know about absolutely any treatment, diagnosis, or investigation. If there was an investigation that resulted in a related diagnosis, the answer is easy, but what if the investigation revealed something unrelated? Different companies treat this differently. History, ECG, and blood tests showing a heart attack clearly reveals a heart issue. The same tests showing esophageal reflux may be considered a heart investigation by one company but not another. Simpler questions only ask about a diagnosis or treatment and disregard investigations. Other companies may care about neither an investigation nor diagnosis but focus solely on the condition presently being treated. Take the time frames written in questions literally. If the question starts, “Have you ever…” they mean ever in the applicant’s lifetime. Be careful not to miss forgotten events. Fortunately, most questions include a time-frame with a specific number of years. Err on the side of safety and include any subsequent dates, such as hospital discharge or initial follow-ups, within that time. Most travel insurance applications are so comprehensive that it is very easy to make a mistake, particularly when you’re trying to complete it on your own. The Epley Maneuver is an at-home
treatment for benign paroxysmal positional vertigo (BPPV). In plain language, we have tiny, tiny particles that float around in our inner ear canals. When these tiny particles move around and get into the wrong place, it causes a feeling of dizziness. The Epley maneuver is a little exercise that moves them back to where they are supposed to be. It is common to have temporary spells of dizziness, and this maneuver offers a great way to treat that condition. First let me encourage you to go online, “google” ‘Epley Maneuver,’ and watch a video. Some of them are more elaborate than what I have used successfully. If, upon rising in the morning, I feel a bit dizzy and start bouncing off the walls as I walk down the hall toward the kitchen, I go back to bed and do my version of the Epley Maneuver: Lie on your back in your nice little bed. Turn your head to one side, as far as it will go. Hold that position for about a minute. Turn your head to the other side as far as it will go. Hold that position for about a minute. Flip onto your abdomen, face down. Hold that position for about a minute... (While on your abdomen, hang your head down over the edge of the bed at about a 30-to-45degree angle. This is optional.) Slowly roll over to your back. Stay quiet for a few minutes before getting out of bed. You may have to repeat the entire maneuver if it doesn’t work the first time. Then get up and go make breakfast. The chances are good you

will no longer feel dizzy. If this simplified version does not work for you, I recommend you try some of the more detailed moves described online. Of course this is certainly not recommended for diagnosed diseases of the inner ear, of which there are several; however, if those itty-bitty thingies in your inner ear have relocated, this is an easy way to get them back to where they belong. • M. Golf Courses in the RGV • • • Tony Butler Golf Course in Harlingen: Named in Honor of First Golf Coach at UT and Hall-of-Famer

Our featured golf course this week is
the Tony Butler Golf Course. When it opened in 1929, it was the Harlingen Municipal Golf Course. Tony Butler leased the course from the City of Harlingen for the better part of 40 years. He left the area for a short time but then returned and was still the golf pro at Harlingen Municipal Golf Course when he passed away in 1979. His son-in-law, Buddy Kalinsky, took over the facility after his passing. Harlingen Country Club members played golf at the municipal course but had their own clubhouse with a swimming pool (where the Golf Crest Condominiums are today). In 1968, they lost their clubhouse to a fire, and they relocated to their present location and built a new clubhouse and their own course, leaving the Harlingen Municipal Course. Tony Butler was credited with bringing some of golf’s greatest athletes to the Rio Grande Valley for professional tournaments during the great depression. He had a 49-year career in golf. He had a consistent short game and was an accurate putter, which reflects the skills required for success when playing the Tony Butler Golf Course. In high school, Tony was captain of the Austin High School golf team and at the age of 20 defeated Tinsley Penick for the Austin City Championship. His college career at the University of Texas in Austin was brief because he turned professional in 1928 and moved to Port Arthur. Following his professional career, he was the first golf coach at the University of Texas. June 20, 1973, Harlingen Municipal Golf Course was renamed in Tony Butler’s honor. He retired in 1975 to become a professional emeritus. In
1998, the Rio Grande Valley Sports Hall of Fame chose him as one of its inductees. The Harlingen Municipal Golf Course opened to the public in 1929 as a 9-hole layout designed and built by John Bredemus. Today it has an 18-hole course, as well as the original 9-hole. It has a complete Pro Shop, a short-order kitchen, a conference room for special events, a driving range, and chipping and putting greens. The South Texas terrain makes it an easy walking course, if you so choose. The 9-hole course is a par 35 with two sets of tees. They are 2881 yards with a rate/slope for men of 33.6/108 and 2467 yards with a rate/slope for women of 33.5/104. The greens are Emerald Zoysia. The course is open to the public. The 18-hole course is a par 71with three sets of tees. They are 6320 yards with a rate/slope for men of 70.5/128, 5837 yards with a rate/ slope for men of 68.2/122, and 5113 yards with a rate/slope for women of 68.9/112. The greens are Champions Ultra-Dwarf Bermuda. There is also a fourth set of tees called Senior Tees, which have not been rated but make the course easier for a number of senior citizens who play the course strictly for enjoyment. God’s Worthy Women Conference Special to Welcome Home RGV
The
next God’s Worthy Women conference is moving into the Alamo, Texas, community to be accessible to more women. We are pleased to announce Sherry Anne as its special presenter for the February 18 retreat, which will meet from 9 a.m. to 3:00 p.m. at Center Church, 4801 N. Cage Blvd. in Pharr. This event, which initially started as an RV-park ministry, is looking to attract women of all ages to the new site, with seating for 1400. Leila Preuss, God’s Worthy Women co-founder and a chaplain with Christian Resort Ministries, tells us, “We are thrilled to announce Sherry Anne as our featured singer and presenter for the 2017 program. Sherry Anne was recommended to us two years ago, and we are pleased the scheduling worked out for this particular event as we expect her testimony and her talent will encourage younger women to attend.” Born with a bilateral hearing and speech impairment that was not diagnosed until she was five years old, Sherry Anne shares her testimony and sings with an elegant voice and deeply felt passion for the gospel and gospel music. The songs she shares throughout her testimony reflect her journey of overcoming obstacles, including some that were self-imposed. “Sherry Anne is a perfect fit for our theme of how every woman can see her own worth through God’s eyes, no matter how unworthy we may feel in our own eyes,” Leila said. “I am honored to be invited to share my story and songs at the God’s Worthy Women conference in Texas to help those attending learn how to overcome any challenge or obstacle by discovering the unique gifts the Creator has placed inside them for His greater purpose,” Sherry Anne said. Sherry Anne shares her story with diverse audiences, from school children and college
students to church congregations, coffeehouse patrons, women’s conference attendees, and others to minister the unconditional love and forgiveness that only comes through a personal relationship with Jesus Christ. Her appearances in 2016 included the South Carolina Songfest, North Carolina Songfest, the National Quartet Convention, and the National Southern Gospel and Harvest Festival at Dollywood. She was voted to the Top Ten Singing News Fan Awards Favorite New Artists in 2016. The God’s Worthy Women audience will receive a bonus, as appearing with Sherry Anne will be her mother, Sharon LaBella, a pastoral counselor and registered nurse. With the Super Bowl fast approaching we are looking for fabulous
snacks to share with our family & friends on game day. If you are also trying to keep things relatively healthy, here is a way to achieve both at the same time! This white bean chicken chili is super delicious and soulfully satisfying and yet also low in fat and calories. I suggest you double or triple this recipe for a crowd. Go Team! And Go You, for making healthy choices! •
Bon Appetit! For the Chicken: • 4 split chicken breasts, bone in, skin on • Olive oil • Kosher salt • Freshly ground black pepper
Preheat the oven to 350 degrees F. Rub the chicken breasts with olive oil and place them on a baking sheet. Season generously with salt and pepper. Roast the chicken for 35 to 40 minutes, until just cooked. Let cool slightly. Separate the meat from the bones and skin; cut or shred into pieces. Set aside. Chef’s note: If you are pressed for time, or just don’t feel like it, it is perfectly fine to use a rotisserie chicken from the grocery store, rather than roasting the chicken.
For the Chili: • 2 Tbls Pure Olive oil or Canola oil • 3 medium yellow onions, small diced • 2 cloves minced garlic • 2 red bell peppers, seeded and large diced • 2 yellow or orange bell peppers, seeded and large diced • 1 tsp chili powder • 1 tsp ground cumin • 1/4 tsp dried red pepper flakes, or to taste • 1/4 tsp cayenne pepper, or to taste • 2 tsp kosher salt • 2 (28-ounce) cans diced San Marzano tomatoes, un-drained • 1/4 cup minced fresh basil leaves • 1 (15-ounce) can white cannellini beans, un-drained Sauté the onions in the oil over low heat for 10 to 15 minutes, until translucent. Add the garlic and cook for 1 additional minute (taking care not to burn the garlic). Add the bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt. Cook for 1 minute. Add the tomatoes to the pot with the basil. Bring to a boil, and reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally. Add the beans and cooked chicken to the chili and simmer, uncovered, for another 20 minutes. Serve with the toppings. Suggested toppings for serving: Avocado slices • Diced red onions • Blue corn tortilla chips • Grated cheddar cheese • Sour cream
