Hottest Eight Seconds of the Year is back…and it’s bigger and better than ever!! The National Professional Bull Riders bring some of the nation’s top bull riders to town for a two-day event January 28 and 29 at the Payne Auto Group Arena at the RGV Livestock Show Complex in Mercedes. Top cowboys will compete for an average of $14,000 in money and prizes. This includes a chance to win one of three $600 Monsoon Silver Champion trophy buckles and a sack full of money. The NPBR is one of the premier bull riding tours in the country and has been entertaining crowds since established in 2000. The four-footed beasts cowboys will be trying to score points on will be top bucking bulls that are the upand-coming stars of professional bull riding. Many of the bulls that have performed in the Mercedes NPBR in the past have been featured bucking bulls on television. This is your chance to be up close and personal with the bulls and the bull riders. You will experience the thrills and spills of each one and be able to cheer on your favorite contestant. Afterward, join the NPBR Bull Riders for the “After Party”
Saturday night at Mustang Lounge! Returning this year is the South Texas Bull Fight Challenge. This will be the first stop on the South Texas Bull Fight Challenge Tour. Five top bull fighters will be competing against each other, not only for money in their pockets but also for a chance to perform in the finals held in September. In a freestyle bull fight, the bull fighter goes one-on-one against a Mexican fighting bull for 70 seconds. The bull fighter is judged on his willingness to expose himself to risk and on his aggressiveness. Chase

United Way Hopes to Exceed Last Year’s Total Refund of $6.1 Million through VITA Special to Welcome Home RGV

Texas will launch its Volunteer Income Tax Assistance (VITA) program for the sixth consecutive year. In 2016, 280 volunteers from 20 entities offered free income tax preparation for 3,102 eligible households, bringing in a total refund of $6.1 million. This tax season, volunteers will strive to help more families and increase the total refund. Eligible applicants to benefit from the VITA program include families and individuals with household incomes of $54,000 or less (a predetermined income level set by the IRS annually). When these working families and individuals receive free income tax preparation services from volunteers, both families and our local economy benefit. Families and individuals save money and use their returns toward other important expenses and goals, including paying home taxes, medical bills, and children’s college tuition and opening savings accounts. Between January 23 and April 17, volunteers at 14 different sites will serve families in Hidalgo and Starr counties. Sites include: Affordable

SPI Kite Fest is Back! Special to Welcome Home RGV
Days have changed, but the fun
will not! A kite festival that started out as a mere ‘fun fly’ and grew to being recognized as Kite Festival of the Year in 2010 by Kite Trade Association International is back. The dates have changed, but we guarantee the fun will not ! Thursday, Friday, and Saturday-February 2, 3, and 4--SPI Kite Fest will once again descend onto the beaches of South Padre Island. The festival will kick off Thursday evening with indoor kite performances at the South Padre Island Convention Centre from 6:30 to 8:30 p.m. Performances by internationally known kitefliers, such as John Barresi, Lisa Willoughby, Scott Weider, Paul LaMasters, and the 2014 AKA National Indoor Champion James Fletcher will keep you in awe as they slide and glide their choreographed routines to a variety of musical interludes. Tickets for the Indoor Kite Exhibition are $6 per person and must be purchased in advance at B&S Kites. The festival continues on Friday and Saturday, when the festival moves outdoors from 10 a.m. to 4 p.m. on the flats just north of the Convention Centre. Several kitefliers from all over the United States are scheduled to bring their magnificent ‘show kites,’ which will be on display throughout the day. If you can imagine it, you just might see it
floating in the air, many measuring more than 150-feet in length. No kite fest is complete without the mesmerizing performances of individual, as well as team, performances. We are once again thrilled to have three kite teams attending this year’s event. John Barresi is returning with Team Kitelife, consisting of John (Portland, OR), Scott Benz (Jacksonville, FL), Eli Russell (Portland, OR), and Brett Marchel (Harbor Springs, MI). The New-England-based team, RevRiders consisting of Scott Weider (Warwick, RI), Paul LaMasters (Germantown, MD), James Fletcher (Baltimore, MD), and Jim Cosca (Fort Washington, MD) will also perform, as will Team End of the Line from Austin. Completing the performance roster will be Lisa and Ian Willoughby from Surfcity, New Jersey, as well as several Winter Texans who have found they have not only a passion for kite-flying but a talent for performing, as well. Hopefully you made time to visit
our ever-popular quilt exhibit. If not, you have until January 28 to see some of the amazing quilts we have in our collection. But enough about January. Let’s look at what we have coming up in February at the Weslaco Museum. This month, the museum will feature a woodcarving exhibit in our gallery. These pieces were made by local woodcarving clubs--the Tip O’ Texas and Rio Grande Valley Carvers. There are many unique pieces, and the craftsmanship is extraordinary. Please make time to stop by and see these amazing pieces. This exhibit will run from February 1-25. The first February program in our popular lecture series will be February 4 at 2 p.m. Joe Vidales will present information about, and many historic photos of the Weslaco Fruit and Vegetable Style Show. This show ran from the 1930s through the 50s and featured amazing costumes constructed entirely of fruit and vegetable products. This is a unique and interesting piece of local history, and we hope you can make it to the lecture. Then on February 7 and 9, Dorothy Lund will present her very popular “Orphan Train Riders” here at the museum. The program will be held twice a day, first at 10:30 a.m.followed by a 1:30 p.m. presentation. This program combines history, singing, humor, and some very interesting information on a subject Lund has researched extensively and has a very personal connection to. Tickets are currently on sale at the museum, but hurry because this program sells out every year. Tickets are $6 and include the program and refreshments and
also allow you to tour the museum. On February 18, the Weslaco Museum, along with the Weslaco Public Library, will sponsor long-time local resident Dr. Ben Villalon, who will give an informative presentation about health and wellness at the Weslaco Public Library’s auditorium at 2 p.m. Dr. Villalon has researched the use of natural foods in helping cure many of the health issues people face today. He also insists that “food is the most important medicine in the world.” Please come to get some wonderful information on how to alleviate some of the most common medical problems we face today. The Museum is located at 500 S. Texas Blvd. in Weslaco. Bring a friend and have a wonderful experience. We also offer special admission rates for groups over 10 people. you know what bugs me? BUGS! Especially bugs on my windshield! In my 49-year career as a professional driver covering some seven-and-a-half-million miles, I have scraped, scrubbed, brushed, and squeegeed more than my fair share of these pesky critters off my windshield. But the bug that bugs me most is the big, fat, juicy bug whose final primordial urge is to plant itself dead center in my line of sight on my windshield. Since I don’t seem to have any control over bugs, where they land, or whether or not they can invite their friends to come along with them, I guess I should just be thankful for that wonderful invention called a windshield. Without it, I would be bombarded with bugs, rain, snow, dust, and dirt as I travel the highways and byways of our great country. And that one big, fat, juicy bug that was especially troublesome would be hitting me square in the face. I’m so thankful for the invention of the windshield. It reminds me of what the Apostle Paul wrote in his letter to the Ephesian church. In Chapter 6, starting in verse 10, he writes, “Finally, be strong in the Lord and in His mighty power. Put on the full armor of God so that you can
take your stand against the devils schemes. For our struggle is not against flesh and blood, but against the spiritual forces of evil in the heavenly realms.” Those “spiritual forces of evil” are just like the bugs--only worse-and they are in our face every day of our lives. The apostle Paul writes in this passage that we should put on the full armor of God to be fully equipped to fight this battle, but it is the shield that is the part of the armor that protects us from the incoming attacks. Paul writes in verse 16, “In addition to this, take up the shield of faith, with which you can extinguish all the flaming arrows of the evil one.” Just like you and I have no control over where that big, juicy bug will land on our windshield, so, too, we have no control over where or when the evil one will shoot his fiery darts. We just know that, in both cases, it will happen. We can be thankful for windshields that protect us from bugs, and we can be eternally thankful that we have a loving God who gives us a means to protect ourselves. But, in order for it to work, we must do our part. We must pick up that shield of faith, in faith, and hold it in front of us against attack. Then God will do the rest. •

Wisdom: You are not broken and in need of fixing. You are wounded and in need of healing. ~Danu Morrigan I have a very vivid Christmas Eve memory. December 24, 1974, at about 5 p.m., I was wrestling on the floor of a hospital with a drunk fellow. I was one of two rookie police officers who drew the Christmas Eve duty, and we managed to pick up a drunk driver. He had consented to a blood test but at the hospital suddenly changed his mind and decided to leave. We had to convince him otherwise. While that was my first professional wrestling match, it was far from my last. Over the years. I encountered quite a few people who needed some bit of persuasion. By the way, we always won. One thing I noticed in all of those encounters was that the people we wrestled with were always very unhappy people. While certainly unhappy about a trip to jail, their state seemed much deeper. They were generally lost, fearful, frustrated, and hurt individuals.
Over the years, I also worked special security at many events and gatherings. They needed us there because the population seemed to be full of lost and fearful individuals, our presence keeping them a bit more socially appropriate. Today those days are long behind, but I still spend a lot of time at events and gatherings. However, today those are primarily with older adults, like me. I find it interesting that we can gather hundreds of us together for a good time, even with alcohol present, and there is no security in sight. Where are the bar fights? Where are the boys taking it out back? Where are the scorned ladies busting out car windows? (Yes, it really happens. Pool cues work well.) Perhaps age has a mellowing effect. Perhaps we have all learned that the stupid things that used to lead to fights were actually…stupid. Perhaps it now takes too much energy to work up a sweat over something silly. Or perhaps over a long life, we finally figure stuff out and heal some and we aren’t lost anymore. I’m just sayin’. •

of the slickest tricks in all of grilling is learning to brine. A simple solution of water, salt, and sugar, plus some spices, can help lean meats, such as chicken breasts, pork loin, and the like remain juicy and succulent. If you have ever choked down dry grilled meat you know there has to be a better way. This is it! •

Place all ingredients, except the cold water, into a large glass or stainless steel bowl and whisk until the salt and sugar are dissolved. Stir in the cold water and let the brine cool to room temperature. • 4 large (6-8 oz. each) boneless, skinless chicken breast halves. • 1 lemon, thinly sliced • 1 small onion, thinly sliced • 2 cloves garlic, peeled and crushed with the side of a knife
Place the chicken breasts into the cooled brine. Add the lemon slices, onion, and garlic. Cover and refrigerate for 2 hours, turning the chicken once or twice. Set up the grill for direct grilling, and preheat to high. Brush and oil the cooking grate and arrange the chicken breasts, all facing the same way. Grill until cooked, about 4-6 minutes on each side. Test for doneness with a meat thermometer in the thickest part of the chicken breast. Transfer to a platter and serve immediately. commentary of the times has made many grown offspring move back into the family home with their parents; however, I had never given it a minute’s thought or consideration since it seemed so far removed from any part of the reality of my existence. Then I became a statistic: a parent sharing my home with an adult, who just happens to be my kid. Well, not really a kid; he’s 58 years old, he is living in my house, and his knees are under my table. Let’s see how this came to be. I live alone and rattle around in this big ‘ol house. My son decided to sell his home in Houston, where he had lived for 30 years. He is between jobs. He is feeling puny. He is considering moving back to the Valley. He wants to be closer to family. Duh! Mother-like, I say, “Why don’t you come and stay with me until you decide what you want to do?” Soon there arrives a truckload of household effects that is tucked, squeezed, and jammed into a storage shed and every empty corner of my garage. I feel blessed he didn’t come with a couple of cats, a dog, and assorted kids of his own. He took occupancy in my guest room, which is fine with me, except he found some of the décor a little “girlie.” So I shifted the girlie stuff elsewhere. Okey-dokey. Since he makes his living on a computer, he came surrounded with lots of lines, cords, cables, lights that stay on all the time, and electronic equipment. That is understandable; I have some of that, too. So we look like a movie set around here now. Early on, he became quite busy, doing some commercial writing and staying closed away in his room, busy all hours of the day and night. He came out to eat, but I found myself knocking on his door too often in order to communicate, so we began texting each other for things like meal

time and departure notifications. Works like a charm. Truth be known, I rather like his being here. No more standing in front of the open door of the refrigerator to graze through a lunch or supper. I now cook two, sometimes three, healthy meals a day, which I have come to enjoy preparing, not to say, eating, as well. He arrived showing the result of 30 years of a fast-food diet, and after six months of a proper one is showing a healthier glow to his cheeks and needs to either apply a belt to his pants or go to the next smaller size. They have been riding precariously low lately. There are other benefits; I no longer hear things go thump in the night or something scratching on a window screen. (I may hear it, but I don’t give a flip about it.) He takes me out to eat once a week, and we hold stimulating conversations at table. When I forget and try to “advise” him on what I think he should be doing and how to do it, he says, “Mother, I am 58 years old. I can manage.” And, of course, he can. I became a Winter Texan, I assumed the Lone Star State subsisted on brisket and ribs. Now I realize there is a huge appetite for chicken! Raising Cane’s Chicken Fingers is a relative newcomer to the Valley dining table; however, the chain of 300 restaurants has been operating for about 20 years. Founded in Baton Rouge, Louisiana, by the man who still oversees the business, the restaurants serve only ONE thing--large, delicious, crispy, deep-fried chicken tenders. The chicken is never frozen, arriving fresh at each restaurant, where it is hand-battered and cooked in small batches to keep quality high. Manager of the Wild, Wild Weslaco location, Carlos Cantu III, told me the main focus of ALL the Cane’s restaurants is to serve only the best quality food. Their corporate slogan is “One Love,” meaning they do only one thing, love doing it, and won’t deviate from that mission. You will never find a burger, hot dog, or steak in these restaurants. They know what they do well, and that’s the whole point. There is a fairly large menu of chicken finger delights, from a two-finger Kids
Combo that can also be enjoyed by adults to the Caniac Combo that really needs to be shared by 2-3 people. We ordered their most popular combo, The Box. For $7.29, you get a load of food, including four chicken fingers that weigh about two ounces each (that’s half a pound of white meat), a heap of crinkle-cut fries, coleslaw that is made fresh in their kitchen daily, a slice of Texas toast, a container of their secret sauce (good on both the chicken and the fries), and a regularsize drink. It arrived hot and crisp, as fried food should. Carlos said they pay extra for center-cut fries so they are long with lots of crispy ridges. Other choices include a three-finger combo, a sandwich combo (three fingers on a bun with fries and a drink), and the above-mentioned Caniac that includes six fingers plus all the trimmings for $10.99. If you’re not in the mood for cold tea or a soda, Cane’s serves homemade lemonade with nothing in it but fresh-squeezed juice, sugar, and water. YUM! Raising Cane’s Chicken Fingers also has a Tailgates menu for large or hungry (or both) groups! You can order
25, 50, 75, or 100 fingers with secret sauce included. Prices range from $29.99 - $94.99. They appreciate calls ahead for these large orders so you don’t have to wait. The Weslaco restaurant is located at 1100 N. Westgate Drive. Their phone number is 956-447-0022 I was impressed with the cleanliness of the restaurant. An employee was moving around the dining room sweeping up crumbs and wiping tables as soon as they were vacated. Carlos said all employees must know all jobs and can interchange duties, as needed. You might find him, as manager, sweeping up or working the counter; it’s a real group effort. Another important point of this company is involvement in the community. Carlos’ employees volunteer in various ways around Weslaco--at the fresco market or at school activities. They feel it is important to be a positive presence and to give back to the community. I very much enjoyed my lunch at Cane’s, as do many people. I stopped at two tables, as well as talking to some folks in the parking lot. They were all repeat customers and had
great comments about the food and one group said they loved Cane’s and ate there whenever they found one. What nice and well-deserved compliments. •

hole golf course for your enjoyment. The course was opened in 1971 and was renovated in 1999, making it one of the best municipal courses in Texas. In 2009, the course underwent a three-year renovation plan and received drainage improvements and landscaping upgrades. The course is well-maintained, boasting a beautiful, tropical landscape with challenging holes that feature Bermuda grass with wide open fairways. The greens are Dwarf tiff, and water comes into play on
almost every hole. There is a putting and chipping practice facility on site, as well as beverages and a fullystocked snack bar. This 18-hole course is a Par 70 with three sets of tees. They are 6144 yards with a rate/slope for men of 69.9/123, 5652 yards with a rate/slope for men of 67.3/116, and 5091 yards with a rate/slope for women of 70.3/122. is only as accurate as the medical history you can recall. When we first met one lady, she told her story from the previous year of travel. A small claim was declined because she had forgotten about a medication prescribed many years prior. She never uses the drug, and her claim wasn’t even related to the condition it treated. Most insurance companies would have paid the bill, but she had used a company notorious for declining claims. Because she forgot a medication, she had to pay the expense. When creating your medical history record, every prescribed medication should be listed--even a cream for an itch or eye drops. Some companies determine the premium partly based on how many prescriptions are taken. At our office, we ask for the name of each drug, the dosage, the frequency, the date first started, and the date of the most recent change. This helps us spot changes that might affect your coverage. Research your significant life medical events. If in doubt, include it. Anything heart, lung, or brain related should always be noted. For example, even congenital heart issues dealt with in childhood. Write down the diagnosis, dates of any hospital discharge, and the first follow-up appointment following discharge. If recent, these dates can affect stability. Be careful to include incidental findings. For example, a physician screening for an aneurysm could order an ultrasound that shows the presence of kidney or gall stones. The stones may not be clinically significant and would have gone unnoticed without the test. Once noted in the medical records, they must be disclosed on an insurance application. The most commonly missed heart issue we see is a murmur. Often, it’s been there since birth, and the patient was told by a doctor that

it’s no problem. Still, it must be disclosed. With some applications, even a murmur has the same effect on rates as having had a heart attack or bypass. Any fainting episode reported to a doctor should be noted, along with how often and when it happened. This could be an indication of a heart problem or other significant issue. Two commonly missed breathing conditions include sleep apnea and asthma. Asthma must always be disclosed, even if it’s seasonal or just mildly annoying. People often overlook bowel conditions, such as polyps or diverticula found during a colonoscopy, a positive fecal occult blood test, GERD, IBS, and celiac disease. Probably more than half of adults over 60 will have diverticular disease. Incidence increases with age. If it develops into diverticulitis, it can require treatment. Disclose it to avoid a claim being declined. Other common conditions people forget include varicose veins, prostate issues, arthritis, osteoporosis, and gout. Although they may not affect daily life, the insurance company may factor them into the premium. Now that the facts are documented, keep them handy. Getting this information is one of the first steps a paramedic will take if they’re called to help. Recording your medical history for the first time can be daunting, but it’s worth the effort. Keeping it current is important and can be easy if changes are noted as they happen. •

This colorful plant may look like it has three colors of flowers; however, the corollas, the collective name for all of the petals of a flower, open yellow and then turn orange or red. In all but the very southern part of Texas, branches die back in winter and emerge from the roots in spring. In the Valley, leaves may turn black after a frost. Branches should then be cut back as it flowers on new wood. Trimming during the growing season will make the shrub more compact and allow additional blooming. With West Indian lantana, Lantana camara, the corollas open yellow and then turn pink. Native to tropical South America, Africa, and the West Indies, it has been known in South Texas for more than 100 years. Velvet Lantana, Lantana velutina, is native to Texas. Blooming more readily in this cooler weather, its white blooms have smaller flower heads than Texas and West Indian lantana. Lantanas are excellent nectar sources for butterflies. It’s important to know whether a species is native or non-native. Botanically, native plants are those naturally occurring in an area without human introduction, a plant that is part of the balance of nature that has developed over hundreds or thousands of years in a particular region or ecosystem. Non-native refers to plants introduced with human help, intentionally or accidentally, to a new place or new type of habitat where it was not previously found. As a Texas Master Naturalist, I understand the tremendous benefits of keeping the Valley native, and I advocate landscaping with native plants to keep our habitat heritage healthy. As a butterfly enthusiast, I do pepper my landscape with some West Indian lantana
non-native plants. Butterflies will stay as long as they have a food source. Knowing what to expect in a non-native plant is critical. Some plants may take over or even inhibit native plants. With Internet research, it’s easy to learn whether plants are compatible or will cause consequences. For instance, a good nectar plant blooming now is non-native Mexican honeysuckle, Justicia spicigera. It is native to Mexico and to Central and South America and was introduced much to the delight of our hummingbirds and butterflies. It is moderately drought tolerant, doesn’t mind partial shade, and is wellbehaved. Another popular non-native sporting brilliant orange blooms is Mexican flame vine, Senecio confusus. Native to Mexico, its most profuse blooming time is November through spring. It can be trained on a trellis or fence or left as ground cover where it will root between the leaf nodes. Mowing the edge will keep it at bay. A frost may kill it to the ground, but it will recover from roots in the spring. Another non-native plant attractive to butterflies and hummingbirds is cape honeysuckle, Tecoma capensis. A large shrub native to southern Africa, when left on its own, it produces runners that can overtake small buildings. The guest cellist, Abran Garcia, who studied under Dr. Tido Janssen at UTPA, has performed with chamber music, such as Viol Consort String Ensemble, UTRGV, and Valley Symphony Orchestra. Abran has demonstrated his virtuosity by winning the 2016 UTRGV Concerto Competition. He is also a recipient of a Texas Star Oaks Grant from P.E.O. and aspires to be a great musician and music educator. McAllen Music Club, a member of the National Federation of Music Clubs, is a nonprofit philanthropic and educational organization. Its members are dedicated to music education, as well as to the promotion of the creative and performing arts. Music is their source of energy and motivation. Coconut Amaretto Cake
• 5 eggs • 1 cup buttermilk • 2 cups granulated sugar • 6 ounces angel flakes coconut • 1 cup butter or margarine, softened • ½ cup amaretto • 2 cups flour • 4 heaping tablespoons mayonnaise • 1 teaspoon baking soda Preheat oven to 350 degrees. Grease and flour three 8-inch cake pans. Separate eggs; beat egg whites until stiff peaks form. Set aside. Cream together sugar, softened butter, and egg yolks. Add flour, baking soda, buttermilk, coconut, amaretto, and mayonnaise. Gently fold egg whites into mixture. Divide batter evenly among pans. Bake for 25-30 minutes or until cake tests done. Cool before removing from pans. Frosting: • 1 8-oz. package cream cheese • 2 teaspoons amaretto • ½ cup butter • 8 ounces angel flake coconut • 1 1-lb. box of powdered sugar • 1 cup pecans, chopped Cream first four ingredients together. Frost between cake layers; sprinkle with coconut and pecans. (Nuts and coconut may be mixed into frosting.)

north after our stay in the Rio Grande Valley last year, we decided to visit an old friend, artist Ran Horn, who is currently living in Midland-Odessa. After checking out the MidlandOdessa official website, I was amazed to find that there is a replica of Stonehenge located on the campus of the University of the Permian Basin in Odessa, and this became one of the “must sees” during our visit. The almost-fullsize replica of the famous English landmark is built from stone donated by a local company with a quarry nearby. We spoke with the head of the Fine Arts Department at the university, who was responsible for the construction, and he said, “Several years ago I had a call from a local quarry owner asking me what

If the replica of Stonehenge isn’t enough, while you are at the University in Midland-Odessa, you can also see a replica of Shakespeare’s Globe Theater, the original of which is in London--and if you time it right,

even see a live performance of one of Shakespeare’s classics. This visit to Stonehenge in Texas got me wondering if there might be other reproductions of similar World Heritage sites throughout the U.S., and, of course, the answer is yes. You can see the Parthenon in Nashville, Tennessee, the Leaning Tower of Pisa in Niles, Illinois, and several Eiffel towers. (The most well-known and closest in size to the original, is, of course, in Las Vegas. It stands at 540 feet tall, only half the height of the original, which is 984 feet tall, but nearly 10 times taller than any of the other replicas.) So how does the Texas Stonehenge

stack up against the original? Well, it is not quite life-size. If you want to see the largest Stonehenge in the U.S. and one that IS life-sized, then you have to journey to the state of Washington. The Maryhill Stonehenge is a full-size, concrete replica of Stonehenge as it was originally built. And, as with the Texan version, the altar stone is placed to be aligned with sunrise on the summer solstice. Missouri University of Science and Technology has a half-scale replica built from solid granite, which is located on the main campus in Rolla. So there you go! Visit the sights of Europe without leaving the U.S. of A! •
Bernie & Red’s Final Performance of the Season at St. Baldrick’s Event January 30 by Bernie Crawley

the ninth year in a row, we (Bernie & Red) are donating our services to the St. Baldrick’s Society here in the Valley. As you probably know, this charity raises awareness and support for children with cancer. One hundred percent of the money raised January 30 will go to St. Baldrick’s and stays in the Rio Grande Valley. Over the past nine years, over $20,000 has been raised during this annual event.

• • • • • • • • Fresh Vegetable Frittata (Serves 6) 6 large eggs 2 tablespoons half & half 1/2 teaspoon salt, plus a pinch 1/4 teaspoon freshly ground black pepper 1 tablespoon olive oil 1 tablespoon butter 1 small yellow onion, diced ~ 6 Tri-colored mini bell peppers, sliced into rings 1 tomato, seeded, diced Kosher salt/fresh ground pepper 6 ounces shredded mozzarella (or cheese of your choice) Whisk the eggs, cream, 1/2 teaspoon salt, and pepper in a medium bowl to blend. Set aside. Heat the oil and butter in a 9 1/2-inch-diameter nonstick ovenproof skillet over medium heat. Add the onions, peppers and sauté until crisp-tender, about 2 minutes. Raise the heat to medium-high. Add Bettina Tolin is a graduate of Le Cordon Bleu College of Culinary Arts in Austin, Texas. She has cooked in the kitchens of the Ritz-Carlton Amelia Island, Florida. She is currently the Executive Chef and General Manager at Marcello’s Italian Restaurant & Bar on the Piazza in Port Isabel, Texas.

much everyone I know is, like me, trying to live a little healthier than we did last month, during the holidays, which let’s face it is “strap on the feed bag” season. I loved it all but now it is a new year with hope of renewed wellness and well-being. Here is a light and healthy dish we can all get excited about. It features fresh vegetables and the incredible egg, which is so good for us, as it turns out. If you don’t like the vegetables I’ve chosen here, that’s ok, just select some you like and follow the same steps. Happy wellness! • the tomato and a pinch of salt and sauté 2 minutes longer. Pour the egg mixture over the vegetable mixture and cook for a few minutes until the eggs start to set. Sprinkle with cheese. Reduce heat to medium-low and cook until the frittata is almost set but the top is still runny, about 2 minutes. Place the skillet under the broiler set to low. Broil until the
top is set and golden brown on top, about 3 minutes. Let the frittata stand 2 minutes. Using a rubber spatula, loosen the frittata from skillet and slide the frittata onto a plate.
