As
I write this column, I’m counting the days for a little rest and relaxation. This Saturday, I’ll be boarding a tour bus with 80+ of you, and we’re setting sail--a whole week, of nothing but fun, food, fellowship, food, and more food! I am so excited; I can hardly wait! I hope the clothes I pack will fit when I get back. January is such a busy month, and it’s really hard to get away, but I’m doing it anyway! Luckily, I have a great team that will pick up the slack while I’m away. I haven’t been on a ‘grown up’ vacation in I can’t tell you how long. All of my vacations over the last 18 years have been centered around kid-friendly activities, so I look forward to what lies ahead. The last time I was on a cruise ship was 16 years ago; my, how cruising has changed! Water slides, rock climbing walls, and ice skating rinks are just a few of the things on our ship. (Not that I necessarily plan on climbing any rock walls or putting skates on to hit the ice--I would hate to break my ankle on the first day-but just getting away from all the chaos for a while will surely recharge my batteries.) I can’t wait to tell you all about it when we return! But for now...Bon Voyage! • We’re just connecting the dots,

He has worked as a raptor tour leader in 12 countries since 1983 and teaches Raptor ID Weekends throughout the United States. Clark has published over 140 journal articles and has cowritten two bibliographies. He is the chairman of Raptors Board of Advisors and a board member of the Belize Raptor Research Institute. Clark is also a member of the Asian Raptor Research and Conservation Network, Neotropical Raptor Network, and Raptor Research Foundation. Boys Basketball Booster Club held a charity rummage sale. Players’ family members, coaches, and the athletes gathered items to sell in hopes of raising enough money to buy Christmas gifts for the McAllen Boys & Girls Club Teen Program members. The Booster Club coordinated efforts with Dalinda Alcantar, Boys & Girls Club of McAllen CEO, and discovered that although the BGC receives hundreds of Christmas gifts for their elementary-aged members, the teens and middle school members are usually left out.
Lark Community Center Knitting and Crocheting Class
Through the efforts of the rummage sale, the Booster Club was able to raise enough money to purchase 40 items for the BGC teen members, such as headphones and mobiledevice speakers. The teen Christmas party was held December 19 at the Boys & Girls Club of McAllen - Roney Center, where members of the varsity, JV and freshman team were all present to distribute the gifts. We at McHi pride ourselves on reaching out to young people in our area, not only teaching them basic basketball skills but also educating them about the importance of being a team player and having a positive connection with people and businesses in our community. •
Lark Community Center (McAllen) knitting and crocheting class is comprised of members of the senior community, ages 50 and over, who meet every Friday from 12:002:00 p.m. to learn the basics of crochet and knitting. On Wednesday, December 14, the group had the opportunity to donate knitted scarves, hats, and socks to the Vannie Cook Children’s Clinic. Vannie Cook Children’s Clinic
offers up-to-date care and treatment for local Rio Grande Valley children suffering from cancer and blood diseases. Hesmeralda Villalon and Rene Villalon represented Lark by visiting the clinic and, in return, received a tour of the facility given by Victoria Martinez. Thank you to all of the volunteers and to the Vannie Cook Children’s Clinic for making this possible. •

Café Grande in Mercedes - Come Hungry and Leave Happy by Sandy Olson

Club in Mercedes is known all over the Valley for its great golf course. Now, however, it has another claim to fame: Café Grande. This new (opened in February 2015) restaurant is open to the public and offers tasty food and prices you won’t believe. Café Grande is located inside the resort’s entertainment venue, The Hynes Event Center. When all areas are utilized, there is seating for about 700 people to enjoy a meal, snack, and coffee or other beverage. In addition, there is a bar open during evening hours that serves wine and beer. Café Grande serves a variety of food choices depending upon the day of the week. On Wednesdays from 4:00 – 6:00 p.m., there is a full, hot buffet priced at only $8.75, which includes coffee or tea, tip, and tax. Thursday evenings, it’s a fish fry buffet for $9.25 with the same items included. Both of these are “all you can eat.” If you’re not in the mood for a large meal, there is a fresh salad bar available for $7.50 for one trip through. Lunch and breakfast buffets are also served, but the days vary, so it’s best to call ahead to see what’s available before you drive over. (The
phone number is 956-622-5399.) You can call by 7:30 am to see what the menu is for the day. The buffet choices for all the meals vary, so you’ll never get tired of eating here! The café is open from November through March. Four of us enjoyed lunch at Café Grande on a recent Friday. I feasted at the buffet, which on this day featured several soups including chicken noodle, turkey rice, and chili. In addition, the buffet included hot pans of Chicken Alfredo, chicken parmesan, mixed vegetables, linguine noodles, rolls, and butter. The rest of our party ordered off the menu: a Reuben sandwich ($7.25), a Philly cheese steak sandwich ($7.00) and a beef quesadilla ($6.75). The two sandwiches came with a choice of regular fries, sweet potato fries, or homemade chips. The quesadilla was served with three different sauces to spice it up. The breakfast and lunch menus have something for everyone, including desserts--pie, pie á la mode, and vanilla ice cream. We tried both coconut cream and lemon meringue pie and pronounced them GOOD! Abraham, the chef, rules the kitchen, while the rest of the staff makes sure customer service is top
notch. We were fortunate to be able to speak to Café Manager Linda Mejia, who has been with The Hynes Group, who owns Llano Grande, for 22 years. She spoke enthusiastically about the café, how well it has been received by customers and the fact that they want everyone to know the public is welcome to enjoy everything from a full meal to just a cup of coffee in their lovely new restaurant. Prices are kept reasonable to accommodate everyone. Some evenings there is entertainment or karaoke to add to the fun. I was very impressed when Linda told me the café is very supportive of the members of the community who risk their lives to keep the rest of us safe. Any law enforcement officer, firefighter, or member of the military who comes into the restaurant--in uniform--will be able to eat at a 50 percent discount. That’s amazing! I have never heard of this in ANY restaurant I have visited, and Café Grande needs to be recognized for its generosity and patriotism! A visit to Llano Grande will not disappoint; it’s a beautiful resort and the new restaurant is definitely a feather in their cap. •

A Healthier Brain for 2017

As we approached the end of the
year, we started having tendencies to discuss ways to be healthier. Many people establish New Year’s resolutions and start back with their daily struggle of keeping those resolutions. Most people worry about their appearance and resolve to lose fat percentage or gain muscle, maybe get that elusive six pack or put together enough money for that desired plastic surgery. Other people may tell themselves that this year they will eat better to try to decrease their glucose and maybe finally get off the diabetes medication or even their blood pressure medication. I find it interesting that no one tells themselves, “This year, I will make my brain better.” For most people, this may even sound like an unattainable goal or they may not even be able to think of ways to do this. When one evaluates brain function and puts it into the context of its impact in our lives, we can quickly realize that brain is EVERYTHING. The brain is who you are and what you do. This spongy organ protected and sitting on the base of the skull is probably the most important organ in our bodies. Not only does it control and synchronize most functions throughout the body, but it also produces our emotions. A healthier brain can provide you many positives in your life, including better relationships, more love in your life, and the ability to do more good for those around you, to have more fun, to be better in sports, and to make and to keep more money. So why don’t we pay more attention to the brain and find ways to protect it and make it healthier? Here are some quick ideas for 2017 to make your brain better and to find ways to make it healthier. First, the brain is 80 percent water, so feed it. Men should drink 3.7 liter of water per day, and woman should drink 2.7 liters of water per day. Make it a point to drink enough water every day and all year long and increase your intake when you increase your physical activity. I just wrote that your brain is mostly water. This makes it soft, housed in a hard skull full of ridges, which makes it prone to injuries. To make your brain better, you must avoid making it worse. Avoid contact sports, if you can. Most sports-related injuries can have various levels of impact on your brain. Injuries, like concussions, are not fully understood and may make subtle changes in brain skills, like planning, and may

cause subtle behavioral changes. Avoid motorcycles, if you can. If you are such a risk taker, at least make it a point to wear a helmet and do what you can to minimize brain injury, in case of an accident. Wear a seatbelt in a car and a helmet when riding a bicycle; yes, even if you are an adult. Most brain injuries occur at home as a result of falls. Use precautions and always use a ladder when having to reach something high, not a chair or your countertop. One of the most damaging factors to all functions of the brain is anxiety and stress. Working in toxic environments or being in toxic relationships causes an increase in stress, which leads to the release of a series of immune factors that program brain cells to die. Once you lose brain cells, it is hard to get them back. This year, be a good keeper of your brain. Evaluate your life and what may be toxic and
find ways to improve it or to remove it. Sometimes toxic environments need to be changed and toxic relationships need to end and be replaced with healthy counterparts. Keeping your brain healthy is a hard choice, at times. Eat better to think better. This goes without saying, but we must make it a point not only to be at an ideal weight but to choose foods that improve our brain health. A study showed that if you eat fish once a week, you substantially decrease your risk of Alzheimer’s, so do more fishing than hunting, if you know what I mean. Eat blueberries; they apparently increase your thinking power. Call them “brain berries.” Also this year, add veggies to your diet and eat from all of the colors, as a general rule, to improve your brain health. Never stop learning! This year, enroll in an online course or a cooking class. Maybe even learn how to work on cars. Make 2017 the year you learn something completely new. Give your brain the challenge of variety, since learning a new skill forces your brain to adapt and maintain connections that otherwise would’ve been cut. Serenade your brain with music. Actually. studies have shown that classical music increases attention span, improves thinking, and helps with memory retention. With the Valley Symphony Orchestra moving into the new and beautiful McAllen Performing Arts Center, serenade your brain and improve your thinking by getting tickets to their performances! Many more things can be said about improving your brain health, but I will leave you with this as a good start to a better, new you in 2017. •

Art on Display at Port Isabel Library Special to Welcome Home RGV
Throughout
January, the public will be treated to a display of some of Laguna Madre Art League member Thomas Leeman’s oil paintings at the Port Isabel Library. Leeman has lived in the Laguna Madre community since he and his wife moved to the Valley in the early 90s. He has lived in different states and has traveled extensively throughout the world, but he loves the Rio Grande Valley and has had “no regrets” that he moved here. He has painted most of his life but wasn’t able to devote a lot of time to it until he retired. Tom works primarily in oil and considers his style to be mainly impressionistic. His paintings are colorful reflections of the world around us. He enjoys painting the local scenery, birds and sea creatures, and beach lovers engaged in water sports. One of his favorite paintings is of his grandson fishing from a pier with his dog. Patriotic themes are also popular motifs for Leeman. Among the paintings he will display at the library is one of an eagle and a battered United States flag titled Bruised, Not Broken. Leeman has won a number of awards and recognitions over the years. You can find his work for sale at the Laguna Madre Art Gallery and in some of the island stores. The dolphin he painted sits outside Marcello’s Restaurant in Port Isabel. Architectural Photographer Presents Regional Imaging Project Sunday Speaker Series explores effort to visually preserve local landmarks Special to Welcome Home RGV
The Rio Grande Valley is home to
unique and historic structures that tell the story of the people and heritage of this region. One photographer aims to create a comprehensive search engine that documents these wonders in a visual database. The Museum of South Texas History (MOSTHistory) welcomes Deval “Pino” Shah to present “Architecture of the Lower Rio Grande Valley Photography Project” during the Sunday Speaker Series January 22 at 2 p.m. Shah specializes in architecture and performing arts photography and is based out of McAllen, Texas, and Ahmedabad, India. The presentation will focus on his effort to create a comprehensive photographic database of the architecture of the Lower Rio Grande Valley. Shah will share his approach to photographing 570 buildings for the project, display images, outline progress to date, and discuss the planned application of his project’s efforts. Sunday Speakers Series is included in the fee for
regular museum admission. FRIENDS of the Museum are admitted free as a benefit of FRIENDship. This program is made possible because of the generous support of the Carmen C. Guerra Endowment. Travel Insurance – Is your Event Covered? by Barry Guttormson
A
man paid almost $20,000 in premiums over a five-year period for a policy. Every year, the issuing insurance agency ignored an eligibility question despite having his complete medical file. He was not eligible for coverage all five years, and any claim would have been declined. $20,000 was paid for no coverage. Travel insurance is designed to protect the insured until they return home. Sadly, it is not a guarantee to be able to enjoy an entire winter away from the snow. Once a medical event happens, the insurance company will consider it an unstable, pre-existing condition that won’t be covered from that point on. Most policies don’t pay for a follow-up visit to a doctor. If they do pay, there are usually significant restrictions. Two choices are usually available – return home or stay, at your own risk, and pay for any subsequent costs. For example, with a broken finger, the risk of additional costs may be small enough to stay on the trip. Further care for that finger won’t be covered, but enjoying your time away may be worth the risk. Breaking a second finger should be covered (unless it was somehow related to the first fracture). However, an injury with a leg cast could result in a blood clot, leading to a potentially life-threatening condition. In this situation, the cost of possible future care might make it more prudent to return home. Before choosing to stay on the trip, a physician should be consulted to determine the risk. We would all love to have a policy that could guarantee full healthcare for an entire trip, but the premiums for that guarantee would be more than anyone would pay. Read the policy. Pay careful attention to the “eligibility” and “limitations and exclusion” clauses. This is best done when feeling wellrested, as excessive drowsiness is as common side-effect of reading insurance policies. Consider each of the limitations and exclusions to see how they apply to you. Here are some examples: If you work when you travel, or if the purpose of your trip is to seek medical treatment or consultation, you may not be covered by your insurance. Contact and extreme sports are a common exclusion. This may include hockey or other contact sports. If a signed waiver is required

to participate, it’s probably excluded. Golf and pickle ball should be OK, unless the game gets too serious. Alcohol consumption. The degree of exclusion can vary. Some exclude claims after any alcohol use, while others may refer to legal intoxication. Another may only consider alcohol use if it’s a factor in the claim. For example, someone staggering down a sidewalk who gets hit by a sign falling from a building may be covered, but if the same person were to wander into the street and get hit by a car, it will likely be excluded. Even medical issues resulting from long-term alcohol use may be declined. Anxiety, depression, or moodrelated issues are usually not covered. Seeking medical attention for chest pain is prudent. Almost certainly, extensive tests will be conducted to rule out the heart as a cause. If the diagnosis is chest pain from an anxiety attack, any claim may be declined. Government of Canada travel warnings--a common exclusion, frequently overlooked by travelers in the Southern United States. Travelers in Texas, Arizona, or California may choose to visit Nuevo Progreso or Los Algodones in Northern Mexico. These border towns (and much of Mexico outside of resort cities) are under a Government of Canada travel warning to avoid non-essential travel. Most policies exclude, or conditionally exclude, coverage while in these areas. Conditional exclusions often apply only to events related to the travel warning. For example, if the cause for medical care was violence, any claim will probably be declined, but sickness would be covered. Some policies are even instantly void if an area with a travel warning is visited. The only way to know for sure that coverage is effective is to thoroughly review the policy. Although it can be confusing, the insurance company will explain the policy, if asked. Reading the policy isn’t entertaining, but it is critical to avoid surprises. Don’t skip this step! •

Tequila Fish Tacos with Grapefruit Salsa
4 Servings
For the Fish: • • • • •
¼ cup olive oil • ¼ cup tequila • 2 tablespoons fresh lime juice • 2 teaspoons chili powder Nonstick cooking spray •
1 teaspoon kosher salt ¼ teaspoon cayenne pepper 1-1/4 pounds flaky white fish, such as cod, halibut or tilapia 1 teaspoon ground cumin
For the Grapefruit Salsa: • 2 green onions, chopped • 1 mango, peeled, pitted and chopped • 1 Roma tomato, chopped • 1 Winter Sweetz grapefruit, peeled, segmented and chopped • 1/2 jalapeño pepper, seeded and minced • 1/3 cup chopped cilantro leaves
For Serving: • 12 corn tortillas, warmed
• ½ cup sour cream
In large baking dish, whisk together oil, tequila, lime juice, chili powder, cumin, salt, and cayenne. Add fish to tequila mixture, turning to coat. Cover and transfer to refrigerator for at least 30 minutes or up to 4 hours. Preheat oven to 400 degrees F. Spray rimmed baking pan with cooking spray. Remove fish from marinade and place on prepared pan; discard marinade. Transfer fish to oven and bake 10 to 12 minutes or until internal temperature of fish reaches 145 degrees F. Meanwhile, make the Grapefruit Salsa. In medium bowl, stir together onions, mango, tomato, grapefruit, jalapeño and cilantro. To serve, remove skin from fish, if desired; use forks to flake fish into bite-sized pieces. Divide fish between tortillas and serve with sour cream and Grapefruit Salsa. Bread Pudding
Serves 8-10 • ¼ pound butter, softened • 1 cup plus 2 tablespoons sugar • 2 (12 oz.) cans evaporated milk • 3 eggs • 3 teaspoons vanilla • 1 teaspoon cinnamon
• ¾ teaspoon nutmeg • ½ teaspoon salt • ¼ teaspoon cream of tartar • ¼ teaspoon ginger • 4 cups thick bread torn into small
pieces and toasted OR 4 cups stale cake
Preheat oven to 450 degrees. Prepare a 13 x 9 baking dish. Beat butter and sugar for 5 minutes. Add milk, eggs, vanilla, cinnamon, nutmeg, salt, cream of tartar, and ginger. Beat until blended. Line bottom of pan with toasted bread or cake. Pour milk mixture over bread and let sit for 2 hours, patting down and mixing occasionally. Bake for 20-25 minutes until browned. While pudding is baking, prepare Praline Sauce (see below). Spoon warm praline sauce over warm bread pudding.
Praline Sauce
Serves 8 • 4 tablespoons butter • 1/8 cup bourbon, 101 proof • 1 cup light brown sugar, firmly packed • 1/3 cup chopped nuts • 1 cup heavy cream In a small saucepan, over low heat, cream butter and brown sugar; gradually add cream. Stir over heat until mixture comes to a boil. Remove from heat. Add chopped nuts. Serve warm over bread pudding, ice cream, pound cake, or almost anything. Can be made 2-3 days in advance.

I think we can all agree that the
sight of a butterfly is something of beauty. The variety of colors and sizes is something to behold as they perch on a delicate flower. With this warm weather, the butterfly garden has been teeming with them. Over the course of the next couple of weeks, I hope to produce more pictures and thereby peak your interest to come out to the garden and see the butterflies for yourself. Hopefully, you will bring a camera and take some great shots to share, encouraging others to see the beautiful things the Lord has made. Not having paid a lot of attention to butterflies I have been surprised by the types. I took these pictures of a few of them. A very nice couple, seeing I am no expert in butterflies, tried to tell me one is a Malachite. Now, my mama did not raise a dummy, and as anyone
can plainly see, it is a green butterfly with brown trim. A very special thank you to Kay, shown in one of my pictures, who volunteers to keep the garden looking very fresh and beautiful. Seeing her work is when you will believe it, and I ask you to say a special thanks to her for her great work. •

Pat Ozuna, co-owner of Circle Three
Farm and Ranch, began to increase her herb production four years ago when she had the opportunity to care for her grandmother. “Every time she and I would go out into the garden, she would tell me something about the herbs,” said Ozuna. “She would suggest that I should grow something else with a particular herb so I could use them together in teas or infusions. Soon, I was researching sources and ordering more seeds, really enlarging the space dedicated to herbs. My grandmother was just a wealth of information. I wish that I had written down every word she told me. She had something to say about most of the herbs and introduced me to some herbs and plants that I knew nothing about.” Ozuna, like many in the Rio Grande Valley, grew up with herbal teas as a way to treat minor illness. “We always drank teas hot, and my grandmother had a tea for most any occasion or problem that came up. I like using culinary herbs and enjoy teas cold, rather than hot,” she said.
As she began researching herbs, Ozuna found that most all of them were just as good cold, and they did not need to be served hot. “I have also learned that you have to be careful when putting together blends, as some plant materials have a strong flavor, and they will overpower the flavors of the tea. So you need to be patient and take the time to test the taste of blends for yourself,” Ozuna said. She gets a lot of ideas from customers concerning her herbs. She said some customers like making smoothies, and they want her to dry plants, like the moringa flowers, for adding to their smoothies. Today, her dried herbs and herbal
blends are a big part of her farm production and her business at the Growing Growers Farmers Market. “I like to dry herbs by hanging them rather than putting them in an oven or dehydrator,” Ozuna said. “So this takes a bit longer, but I really like the texture of the herbs and the way they hold their color. I store all of them in canning jars to preserve the freshness and flavor. I feel like I am passing down a little of my grandmother’s love with each jar I make.”
Ozuna is a member of the Growing Growers Farmers Market located in Firemen’s Park at Town Lake in McAllen on the corner of 1st Street and Business 83. This market is open every Saturday, except holidays, from 9:00 a.m. until noon. Grilled quesadillas are delicious, but you can’t take your eyes off the grill for even a second! For this recipe, it’s a good idea to have a “cool” section of the grill so if you see the tortilla getting too brown, you can rescue it by moving it off the direct heat. (And set your grill on low; the quesadillas need to cook only for a couple of minutes.) •
Taking Care of Winter Texans Since 1961 Formerly Polzin Insurance
Grilled Quesadillas • 8 flour tortillas, the 10-inch size • 4 green onions, trimmed and sliced • 6 oz. Jack or Cheddar cheese, thinly sliced • 3-4 ripe Roma tomatoes, thinly sliced • 3-4 fresh or pickled jalapeño peppers, thinly sliced • 3 tablespoons real butter, melted • 1/2 cup fresh cilantro leaves
Place the tortillas on your work surface. Arrange a few slices of cheese and the tomato and jalapeño on half of each tortilla. Top with some green onion and cilantro. Fold the tortilla in half. (NOTE: You can make the quesadillas up to this point several hours ahead and refrigerate until ready to grill.) If you are using charcoal to grill, put the coals on one side of the grill, leaving the other side cooler. If you are using gas, only light one burner so you will have a cooler area. It will still be warm enough for the cheese to melt, even if the tortilla is not over direct heat. When you are ready to cook, place the quesadillas on the hot grate and grill until they are golden brown and the cheese is slightly melted, 1-2 minutes. Brush the outside of the tortilla with the melted butter as it grills and be prepared to move them to the cooler parts of your grill if they start to burn. Cut into wedges and serve at once. Pico de Gallo is great served as a condiment with grilled quesadillas. D From the Inside, Out D There are Only Two Kinds of People

I could get the ear of the millennial generation, I would fill it with this bit of awareness: People can be placed into two categories-only two. Not big or small, rich or poor, black or white, fat or thin, smart or stupid, liberal or conservative, educated or uneducated. I recognize but two categories: the teachable and the unteachable. Any of the groupings above do not transcend teachable and unteachable. The teachable and the unteachable decide the successful from the unsuccessful, the happy from the miserable, and the serene from the disconcerted. Teach-ability has to do with a willingness to take good advice and/or emulate success. The key is recognizing good from bad advice, then accepting and acting on it. Teach-ability not only affects success and achievement; it affects the relationships in your life. Life is made up of relationships--first with parents, then with friends, spouse, and business associates (as
employee or employer). Refusing to take good advice or be teachable results in the following: 1. You will plow furrows that have already been plowed. 2. You will spend time correcting mistakes that could have been avoided by taking good advice. 3. You will not blend easily in a marital relationship. 4. You will lose time and money doing things “your way” after someone has found a way to do it easier and cheaper. Most successful people are obsessed with picking other people’s brains. Even after achieving great success, the successful pick the creative brains of those around them. Pooling brainpower to one’s advantage is available to everyone. Keep eyes and ears open and receptive. When things seem to break right for some people, lend an eye and ear and determine if those actions should be emulated. Feel free to ask for advice. Generally

AARP Texas Legislative Priorities for 2017 Special to Welcome Home RGV
When state lawmakers convene this
month for the 2017 legislative session, AARP Texas will pursue an agenda that includes strengthening nursing home quality, easing stress for family caregivers, helping millions of Texans save for retirement, and protecting seniors from financial exploitation. AARP’s nonpartisan Texas legislative priorities also include a focus on eliminating surprise medical bills and advocating for the age 50+ community to ensure that insurance costs are reasonable, coverage is reliable, and utility services are affordable and dependable. The 85th Texas Legislature starts January 10 and will address a host of major budget and policy considerations that are sure to have significant impact on older Texans. AARP is a nonprofit, nonpartisan organization with a membership of nearly 38 million, including 2.3 million Texans age 50 and older. AARP Texas Director Bob Jackson and Advocacy Manager Rob Schneider will lead a team of policy experts who know their way around the Capitol. Among them are Amanda Fredriksen, Tim Morstad, Joe Sánchez, and Blake Hutson. In addition, any number of AARP volunteers, like Charlene James,
the AARP Texas president, will often be present during the 140-day session. “Texas lawmakers will have enormous opportunities in 2017 to make meaningful and enduring improvements to the lives of older Texans,” said Jackson. “AARP will be a strong voice for consumers and older Texans as we work with legislators and Governor Greg Abbott on a host of issues that matter most to Texans.” Here’s an overview of some of the issues we’re discussing with legislators: Nursing Home Quality and Safety: Texans deserve high-quality care for their loved ones. Unfortunately, the quality of care in Texas nursing homes — where roughly 93,000 people currently reside — is below par, and the potential for harm to nursing home residents is too great. AARP supports a number of reforms that would hold the state’s 1,200+ nursing homes accountable for harming residents, enforce and escalate penalties for repeat offenses, and help Texas regain control of nursing home regulation. Family Caregivers: • CARE Act. More than 3 million Texans are caring for a parent, spouse, or other loved one as an unpaid caregiver. AARP Texas urges lawmakers to enact the Caregiver Advise, Record, Enable
(CARE) Act. The proposal would ensure that caregivers know what to do to safely look after a loved one as they transition home after a hospital stay. • Respite Programs. AARP Texas supports funding for programs that give caregivers a break to visit the doctor themselves, go to the store, or attend a child’s school program. It’s an important and cost-effective way to help caregivers look after their own physical and emotional health. • Home and Community-Based Care Services. These services enable seniors and those with disabilities to get the care they need without being forced into a costly nursing home. Funding home and community care services and paying a fair wage to the attendants who provide this care helps older Texans age in place, staying in their own homes longer. Retirement Security: To encourage individual responsibility in saving, AARP Texas supports a legislative “work and save” proposal that would create a website to connect employers and workers with low-cost
savings plans that allow voluntary payroll deduction and let workers take their savings to their next job. Action is needed because, today, more than five million Texans don’t have access to a workplace savings plan. Elder Financial Exploitation: Texas lawmakers can reduce this growing type of elder abuse in the state by creating more community coordination centers to help exploitation victims, strengthening adult protective services laws, and training and empowering financial professionals to identify and stop potential exploitation before it happens. Surprise Medical Bills: AARP Texas seeks to protect people from surprise medical bills because the unexpected costs can drive even insured families into financial hardship. The Legislature can work to keep consumers out of medical billing disputes between insurers and doctors, and it can allow patients of neighborhood emergency clinics the right to challenge surprise medical bills. •

(God) giveth to all life and breath... And hath made of one blood all nations of men... That they should seek the Lord... and find him. ~Acts 17:25-27 Wherever Paul preached, there were revivals and riots. Those who believed the message of Jesus’ death and resurrection got revival. Those who didn’t started riots. Paul escaped to Athens for his safety. Athens was full of idols to diverse gods. Paul even found an altar inscribed TO THE UNKNOWN GOD. His heart was stirred with compassion for the people who were deceived by false gods and ignorant of the One True and Living God. In the midst of all this were Jewish synagogues. Paul always took the gospel to the Jews first. That’s one reason he saw so many riots. They couldn’t believe that Jesus was the
promised Messiah, because he didn’t save them from Rome’s domination. They disagreed with Paul in debates and heated discussions. The Epicureans followed materialism, believing pleasure was the greatest good. Stoics taught self-control and fortitude as a means of overcoming destructive emotions. These factions loved to debate and were intrigued when Paul preached Jesus and the resurrection. They were curious enough to give him a platform to speak--true philosophers seeking understanding. He introduced them to the Unknown God they worshipped in ignorance. The Creator gives us life and breath and made mankind of one blood. The outer appearance of skin tones, size, and facial features are just variations of creation, like the colors, shapes, and sizes of flowers
and trees. He is Lord, the bearer of authority and power over all things. His purpose in this is that we might see His work in the earth and seek a relationship with Him. He is present among us because He wants us to find Him. God is calling all to repent, to change their minds, hearts, and actions, and to enter into relationship with Him. It is important to do this because there is a day appointed when God will judge the world in righteousness. The standard we must meet is revealed in His Son, Jesus, who was raised from the dead. Thank you, Father, for revealing your power and love to us. We seek a relationship with you and peace with mankind through the unity of faith in your Son, Jesus. •

As
one of the many tens of thousands of Canadians who winter in the U.S., I thought I’d share with you a column about some foodstuffs and recipes that are peculiarly Canadian. We Canadians love hotdogs and hamburgers just as much as the rest of North America, but we also have a few of our own favorites you might enjoy. Probably the most uniquely Canadian food items just happen to be desserts like butter tarts and Nanaimo bars. Let’s start with my favorite, the butter tart. This is a tart that consists of butter, sugar, syrup, and egg, poured into a pastry shell and baked until the filling is semi-solid with a crunchy top. Recipes for the butter tart vary according to the families baking them. The butter tart has been compared to a pecan pie, but it has a “runnier” filling, due to the omission of corn starch. I like mine with raisins; however, purists contend that such additions should not be allowed. The earliest published Canadian recipe for my favorite dessert is from Barrie, Ontario, dating back to 1900. The butter tarts is such an integral part of
Eastern Canadian cuisine that it has spawned butter-tart-themed tourism, such as the Butter Tart Festival at Muskoka Lakes, Ontario, and the trademarked Butter Tart Trail at Wellington North, Ontario. Ontario’s Best Butter Tart Festival and Contest is an annual event held in Midland, Ontario. The contest portion of the festival attracts bakers from across Ontario and is Canada’s largest butter-tart-themed celebration, with over 50,000 tarts sold in the festival market in 2014. They are really easy to make, especially if you use frozen tart shells, as I did, when making them recently with my granddaughter. The Nanaimo bar is another dessert item of Canadian origin popular across North America. It is a bar dessert, which requires no baking and is named after the west coast city of Nanaimo, British Columbia. (Pronounced naneye-moe.) It consists of a wafercrumb-based layer, which usually has coconut added, topped by a layer of custard-flavored butter icing covered with melted chocolate made from chocolate squares. Many varieties
exist, consisting of different types of crumbs and different flavours of icing and chocolate. As you can see, the Nanaimo bar is a little more complicated to make than the butter tart. The earliest confirmed printed copy of the recipe using the name Nanaimo Bars appears in a cookbook from 1953. The popularity of the bar in Nanaimo led local residents to mobilize to have it voted Canada’s Favourite Confection in a National Post reader survey. Suffice it to say, each of these desserts is a treat in its own right, and neither is difficult to make. Here are links to a couple of recipes. This is a fun and sort of decadent dish! Kosher salt 1 pound Cavatappi pasta 1 quart whole milk 8 tablespoons (1 stick) unsalted butter, divided 1/2 cup all-purpose flour 1/4 cup Cognac (optional) 12 ounces Gruyere cheese, grated (4 cups) 8 ounces extra-sharp white cheddar, grated (2 cups) 1/2 teaspoon freshly ground black pepper 1/2 teaspoon freshly grated nutmeg 1 1/2 pounds cooked lobster meat 1 1/2 cups fresh white bread crumbs (a day old baguette in a food processor works well) Bettina Tolin is a graduate of Le Cordon Bleu College of Culinary Arts in Austin, Texas. She has cooked in the kitchens of the Ritz-Carlton Amelia Island, Florida. She is currently the Executive Chef and General Manager at Marcello’s Italian Restaurant & Bar on the Piazza in Port Isabel, Texas.
Sometimes that means “complicated” but this dish is not complicated to make at all. You will enjoy preparing it and everyone will love it’s rich and luscious texture. If you can’t find Cavatappi pasta, you could also use elbow macaroni. • Preheat the oven to 375 degrees F. Bring a large pot of well salted water to a boil. Add the pasta and cook according to the directions on the package, 6 to 8 minutes. Drain well. Gently heat the milk in a small saucepan. In a separate large pot, melt 6 tablespoons of butter and add the flour. Cook, stirring with a whisk, over low heat for ~ 2 minutes. While whisking, add the hot milk and cook, stirring, for a minute or two, until thickened and smooth. Add the cognac (if using)
and simmer for 1 minute. Turn off the heat, add the Gruyere, White Cheddar, 1 tablespoon salt, the pepper, and nutmeg. Add the cooked pasta and lobster and stir well. Place the mixture in 6 to 8 individual gratin dishes. Melt the remaining 2 tablespoons of butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.
