to yours! At Welcome Home RGV, our office is more like family than co-workers. We have been through a lot together over the last nine years, that’s for sure! We have seen ups, downs, and all arounds, and this has probably been our most challenging year. In the early part of 2016, we tested ourselves by not only going from a monthly magazine to a weekly newspaper, but we also took over the Winter Texan Expo. We were all happy to say we survived because there were moments when we wondered if we were, indeed, alive!! The summer brought on more changes as we transitioned to new software (Again!), added additional office space to give us more room to work, and streamlined job duties so we can all be more efficient. As a result of all of this, we were more prepared for the fall of 2016 than we were this time last year and look forward to what lies ahead in 2017. Thirteen o’Clock Theatre Presents Tax Preparation throughout the Three Ghosts: A Christmas Carol Rio Grande Valley

o’Clock Theatre’s latest production, Three Ghosts: A Christmas Carol, brings the classic holiday tale to life in an all-new, innovative way. The local nonprofit has created the opportunity for Chicago-based actor and director Alejandro Tey to return to his hometown of McAllen and create the new play. A co-founder of Thirteen O’Clock, Tey is incorporating exciting physical staging through fight choreography and tumbling-like movement. The entire show is based around the short, simple text from the original Christmas Carol. With this interesting and inventive take, Thirteen o’Clock is bringing a lot more action into the holiday story. Aissa Guerra, a fellow Valley native and one of the actors in the show, has returned home to the RGV to perform for Thirteen o’Clock once again. Both Tey and Guerra graduated with theatre degrees from Northwestern University and work in the Chicago Theatre community. The production holds up the lessons and themes of The Christmas Carol and presents them in a creative, fresh way. Thirteen o’Clock’s guarantee of

Catch Popular Duo Freddie and Sheila in the RGV this January Special to Welcome Home RGV

Freddie

and Sheila return to the RGV with their new show until January 29. Freddie, on lead acoustic and electric guitar and vocals, demonstrates his heritage by clogging while playing guitar. He plays country, bluegrass, and 60s rock instrumentals and has spent his life learning the Chet Atkins style of guitar picking. Sheila, on vocals and rhythm guitar, sings classic country, folk, and 50s/60s and yodels. Their new show showcases their exceptional musicianship and singing and provides lots of laughs! Freddie started his guitar-picking career in 1969, performing with a band across the Dakota’s and Minnesota before ending up in Nashville for some time. Appearing on a Canadian TV show and at other music events, he backed up numerous country music stars, like Ferlin Husky and Red Sovine. Freddie toured with singer-songwriter Ian Tyson (writer of the Carter Family’s Four Strong Winds) and fiddler Al Cherney, who was a regular on the Tommy Hunter

Show, a Canadian music show that aired for years. In April of 2016, Freddie was presented the Legends and Legacy Award by the Saskatchewan Country Music Association. This was in recognition of his musical achievements over the last 50 years, the many guitar students he’s mentored, and his contribution to the music scene in his home province. The married duo have performed at resorts each winter in Texas, Arizona, and California for 16 years and across Western Canada for just about any event you can imagine for 25 years. Freddie and Sheila were asked by Branson Bluegrass group Goldwing Express to join them to perform on the Carnival Liberty Cruise ship February 6 – 11. This musical cruise quickly “booked up” with Winter Texans who are friends and fans. Mission Bell and Tradewinds Resorts in Mission are again sponsoring the Freddie and Sheila Show. Freddie and Sheila are offering guitar lessons at Friendship Hall at Mission Bell

Renovation and Upgrades Completed at Edinburg Regional Rehab Center Special to Welcome Home RGV

Construction is now complete on

a $5.2 million renovation project at the Edinburg Regional Medical Center/Edinburg Children’s Hospital campus. The existing Edinburg Regional Rehab Center, which used to be on the second floor of Edinburg Regional Medical Center, has now been moved to the fourth floor of Edinburg Children’s Hospital. The Edinburg Regional Rehab Center supports patients’ recovery after major surgical procedures, falls, traumatic brain injury, stroke, and other events that may put someone’s body into a weakened state. Speech and occupational and physical therapy are offered on an inpatient basis. South Texas Health System built out 16,300 square feet of fourth floor shell space to house the newly upgraded rehab center, which now features expansive views of Edinburg through oversized windows, as well as soothing colors, natural light, and the Arjo Huntleigh ceiling-mounted track, a specialty mobility device that helps patients learn to walk again. This track is the only device of its kind south of San Antonio. The project also includes a therapy gym, daily living training facilities, and a dedicated dining area to encourage patient interaction and facilitate visitation. A high acoustical ceiling mitigates noise, and floor patterns feature straight lines patients can follow down the hall and contrasting colored bars as distance markers to assist therapists and patients with progress and establishing milestones. Green building materials such as zero VOC paints, CRI Green Label Plus Carpets and FloorScore Certified Resilient Flooring round out the features of the 22-bed inpatient rehabilitation unit. The former rehab space on the second floor is nearly finished. It

is being converted to 26 additional medical/surgical beds, which will increase the bed capacity of the campus to 235 beds. “This is perfect timing for us,” said Jennifer C. Garza, chief executive officer for Edinburg Regional Medical Center and Edinburg Children’s Hospital. There is a lot of seasonality in the winter, and to have the extra space, we can take care of more patients now and down the line. Edinburg Regional Medical Center has a strong reputation for an ongoing commitment to high quality care. Patient demand for services has surpassed the hospital’s current bed capacity, but we are rising to the occasion.” “We are so proud of this rehab team,” Garza added. “We just provide the space for the magic to happen. We see our physical therapists, speech therapists, and occupational therapists encouraging patients and asking them to push a little harder each day they’re here. Our goal is to get the patient home, and having the most upgraded equipment and a usable, comfortable space helps us do that. With the completion of this project, South Texas Health System’s Edinburg campus has invested a total of $14.9 million in capital improvement projects over the past five years and has created 130 new jobs.” Over the last five years, Edinburg Regional Medical Center/Edinburg Children’s Hospital campus has added the daVinci Xi for robotic surgery, a 3T MRI, and new digital mammography equipment and has opened The Women’s Corner, the South Texas Diabetic and Metabolic Institute, the Pediatric Endocrinology and Diabetes Institute, and The Wound Healing Center. •

couple at Llano Grande Resort found the answer to this question by creating wonderful Christmas decorations. Jean Lacroix and Micheline Mainville, who are permanent residents of Gatineau, Quebec, Canada, came to Llano Grande Resort in 2012 and purchased a winter home. Jean’s woodworking skills and love for the holidays got him interested in creating these beautiful decorations. Out of a simple 4x8 sheet of plywood, he cuts out the designs. Once the design is done, it is covered by a basic coat of primer. Micheline then takes her brushes and her paints and completes these treasures. Together, they have created multiple beauties that have quickly become the envy of the neighborhood. What a wonderful example of managing your time, taking advantage of complementary skills, and creating beauty! •

of comedy from Pop. The three sons are Native American, as well; their mom was full-blooded Creek Indian from Okmulgee, Oklahoma. They are proud of their heritage, and you can see proof of that in their shows. A Goldwing Express show is definitely something worth seeing! •

began square dancing in 1989, shortly after moving to Kansas City, Kansas. In 1996, she decided she would like to try calling, and she has now been calling enthusiastically for a little over 20 years. She has a home program in Kansas City and also calls in Missouri, Illinois, Iowa, Nebraska, Kansas, and the Rio Grande Valley. In 2014, Lynn was awarded the Caller of the Year and was entered into the Heart of America Federation Caller Hall of Fame. •

Chimney Park Carries On Christmas Tradition Special to Welcome Home RGV

Many RV parks in the RGV take

on Christmas projects to help those less fortunate. Chimney RV Park in Mission has adopted families for Christmas for several years. With donations from park residents, cochairmen Patty Woodruff (Kansas) and Joann Manley (Illinois) and several volunteers purchased and packaged items for seven families recommended to the group by the Mission Food Bank. Twenty-eight children received shoes, an outfit, and a toy. Parents also received a gift, as well. They received a family game, a soccer ball, a blanket, and a can of popcorn. They also received a complete Christmas meal and a month’s supply of staple foods. Donations over and above expenses for this project are given to the food bank. Christmas 2016 is especially meaningful to Chimney RV Park residents who survived the damaging wind storm in May. They are grateful that no one was seriously injured and for all of the help in restoring the park.•

Oleander Acres Jam Sessions: Bring your Good Ears and a Sweet Tooth Collaborative article by Vern Kirsch and Karen Kovars

short time ago, I attended my first Jam Session at Oleander Acres RV Resort. It was a fun time. I enjoyed the variety of music performed; however, no one was a rapper! The songs were a variety of styles, as were the voices. It was a thoroughly enjoyable time. If you have not attended one, give it a try. Schedules are in the paper. Here at Oleander Acres, the Jams are every Tuesday. At Oleander Acres, Ray and Ginger host the jams. Ray told me he has been playing since he was 15 and has even built guitars. I have been informed by Karen (activity director at Oleander) that for each of these Jams, Ray and Ginger have a lot of work to do setting up and taking down, so be sure to thank ALL of the people involved for their efforts. One thing I thought as I listened--at first I was jealous of the talent there. Then I realized I have worked my entire life to avoid talent, and I think I did a good job. To sum it up, I am successful. As I write this, I am listening to gospel jam and it is truly amazing and enjoyable. If you have not taken

the time to attend one, do it. Check with your park activities directors to find out where the next one is and go. Don’t be like me (although you should bring your good ears). The gentleman playing the harmonica is a spry, World War II vet. He told me when he started a short time ago, he would ask how many here are WW2 vets and there were four. Today, the only other one he knows is in the hospital and has been for some time. Find out when your park is going to have a jam and get out and say hi to these musicians. As you can plainly see, I am not a professional writer. I just enjoy doing it. See you at the next Jam. And by the way--bring a sweet tooth as cake and beverages are provided. Have fun. Better to say I was there than to say I wish I would have been there.•

Don’t miss out on learning about

the Rio Grande Valley’s unique ecosystem with an elite group of volunteers. Seats are still available for classes beginning January 11, 2017. Deadline to apply for this specialized training is December 31. The cost is $150 and includes textbook, fees, and a one-year membership. Full scholarships are available. All Valley residents over the age of 18, including Winter Texans, are welcome. Students attend weekly Wednesday evening classes from 6 to 9 p.m., through April 11, in the Cameron County Annex Building conference room at Williams Road and Hwy. 83/77 in San Benito Classes are taught by local university professors and field experts from the Texas Parks and Wildlife Department and U.S. Department of Agriculture. Texas Master Naturalist has

chapters throughout the state. It is an educational volunteer program of the Texas A&M AgriLife Extension Service, Texas Sea Grant, and Texas Parks and Wildlife. Training is regionspecific. Agent Tony Reisinger and Ranger Javier de Leon are the Rio Grande Valley sponsors. There are hundreds of opportunities throughout the Valley for trained volunteers. Donate Dolls Special to Welcome Home RGV

Sassy Stitchers, a group of women

who are either year-round residents or Winter Texans from VIP RV Park in La Feria, donated almost 30 dolls to the La Feria police and fire departments in December. The dolls will be used both for Christmas gifts and for children who have been victims of tragedy. Sassy Stitchers have been working on the doll project since September of 2016 in an effort to give back to the community. •

The Story Behind the Song by Bernie Crawley

a musician/performer/ songwriter, I am always fascinated with the background of those classic songs we all know and love, so I thought for this week’s column I’d bring you some little-known facts about some well-known songs. Petula Clarke first came to our attention as part of the British Invasion, but did you know she almost lost out on her biggest hit, Downtown? The writer of the song, Englishman Tony Hatch, was visiting New York and heard the expression “downtown” being used to describe what the Brit’s call the “city center,” and he thought it might make a good title for a song. The U.S. vocal group The Drifters was riding high at the time, with titles like On Broadway and Up on the Roof. Because his new song had the same kind of vibe, he decided he would pitch Downtown to their record company. However, before he did that, Petula Clarke heard a demo of the song and begged to be given the first shot at it, and her lavishly orchestrated version became a huge, worldwide hit. Nowadays, orchestral pop hits are largely a thing of the past. It is no longer a common occurrence for contemporary singers

to be tracked live in the studio alongside string, horn, and woodwind sections, as well as electric guitars, keyboards, and drums. But it was the standard way of working back in October, 1964, when Petula Clark recorded Downtown at the Pye Studios in London. And just for the record, the guitar player on Downtown was none other than Jimmy Page of Led Zeppelin! Did The Drifters ever record Downtown? No, not as far as I’ve been able to make out. Remember Teenager in Love by Dion and The Belmonts’ Little Sister, Suspicion, and Elvis’ Marie’s The Name? These were all composed by Doc Pomus, a career songwriter who was afflicted with polio at an early age and, as a consequence, walked with canes. In later life, he was confined to a wheelchair. He married, had several children, and eventually divorced; however, as the story goes, at his wedding reception, a band was playing, and being unable to dance himself, he invited various guests to dance with his new bride. The events of that evening were the inspiration for his biggest hit, Save the Last Dance for Me. And, finally, another song that

didn’t get recorded by the artist for whom it was written. In the early 70s, Glen Campbell was all over the radio with hit records and also had his own TV show. Songwriter Jim Weatherly wrote a song he knew was perfect for Glen, Leaving on that Midnight Train to Georgia. The idea for the song had come about while speaking on the phone with his friends, Lee Majors and Farah Fawcett. She had mentioned she couldn’t talk because she was leaving on the midnight plane to Houston, and he jotted that line down, (as all good songwriters do) as a good idea for a song. When the song was completed, Jim Weatherly recorded it himself, very much in the style of Glen Campbell,

but it went nowhere, and Glen wasn’t interested in it. Fast forward several years and Cissy Houston, Whitney’s mother, was in the studio recording an album. Midnight Plane to Houston was suggested by the producer, but she was not happy with the title. “Black folk don’t take planes; we take trains,” she said, “and if I was on a train, or even a plane, I’d be heading home to Georgia.” So, a call was put in to Jim Weatherly, and he OK’d the change of title. The song went on to be a huge hit? Well, not exactly, but someone heard Cissy’s version and suggested that Gladys Knight record the song. Then it WAS a hit--a hit Gladys has been cashing in on for almost 30 years. •

or New Year’s dinner is often roast beef. Where turkey dominates the Thanksgiving table, beef can be the star of the December holidays. In Texas, regular roast beef pales in comparison with brisket, that most tender and juicy cut of beef that is a favorite of Lone Star palates, both Winter Texan and locals. This is one instance where my grill partners with my indoor oven to produce the best of both worlds. This recipe takes an overnight marinating and 8 ½ hours cooking time but very little effort on the cook’s part. •

Texas Brisket You will need a 7-8 pound “short” brisket with a fat cap of about1/2-inch. Try to get the flat cut. Premade brisket rub is a seasoning blend especially for this cut of meat. It’s much more convenient than buying all those spices and making your own. Look for one that has salt as the third ingredient or lower so the meat isn’t too salty. The night before you want to serve the brisket, rub it liberally with the seasoning on all sides. Place in a plastic bag to marinate overnight in the fridge. The next day, take the meat out of the fridge about an hour before cooking to let it come to room temperature. Set your grill to medium indirect heat. Put some soaked wood chips into a smoker box or tube (or make packets with foil and poke holes in them for the smoke to escape), and place them over the heat source. Place the brisket over the cool side of the grill and close the cover. Allow the meat to slowly cook with a bit of smoke for about 4 hours. You can replenish the wood chips if you like a more smoky taste. Twenty minutes before the end of the cooking period, turn your oven on to 250 degrees F. Remove the brisket from the grill and quickly wrap it in foil. Place in a deep roasting pan to catch any drippings, and put in the preheated oven for another 4 hours. When the cooking time is done, remove the brisket from the oven, but let it rest in its wrapping for 30 minutes. Serve either sliced on sandwiches with barbeque sauce alongside or use it as your centerpiece roast with whatever side dishes suit your fancy. Potatoes, corn pudding, veggies, salad…the variety is limited only by what tastes good to you and your family. Don’t Give Up Do you feel like giving up, quitting,

or is your situation so hopeless that the only thing you can possibly do is leave, walk away, head out the door, and never come back? I want to remind you that you have allowed the situation you are going through to become so large that you cannot see anything else. It has blinded your eyes to the truth of what is going on. Jeremiah 32:17 reads, “Ah, Sovereign LORD, you have made the heavens and the earth by your great power and outstretched arm. Nothing is too hard for you.” I have seen many people recently who feel their life situation is hopeless. They choose to make decisions based only on what they see. So because of this, they choose divorce, suicide, etc. Those choices only brought more trouble for their families. So where do we find the strength to keep holding on when we want to give up? Put your circumstances in perspective. Your circumstances are part of God’s plan for your life. It’s exactly where He wants you. This is not an accident, bad luck, or someone’s poor decision-

making that has you where you are. It may be so very hard to understand that God actually wants to use this for good in your life. Remind yourself of what you know is true. God is in control and God does not make junk. God is in the transformation business. He can transform relationships, life, people, and anything else. If it seems that nothing short of a miracle can save you, then you are in luck. God is still in the business of miracles Place your hope in Jesus Christ. Remember that God’s way of working is different than what we would choose. God may choose to change us and not our circumstances. Ultimately, our hope is not in what He is going to do for us, but our hope is only in Jesus Christ. So, what is the result of placing our trust in God? Hope, joy, and peace.

McAllen Public Library to Offer Free Downloadable and Streaming Music Special to Welcome Home RGV

McAllen Public Library is excited to announce the addition of Freegal, a new music service that offers access to millions of songs from Sony’s extensive music catalog. The service will allow the McAllen Public Library System to increase the size and diversity of its collection by offering access to millions of songs. Registered library card holders will be able to download and keep three songs per week in MP3 format for free. The songs do not expire after downloading. In addition, patrons will be able to stream songs for three hours per day on a device of their choice. Freegal is an easy-to-use website, and patrons will not have to install any software to use it. Patrons will download the Freegal Music App on their devices from the Apple Store or Google Play Store.

“We are very excited to offer a service like this for our patrons,” said Kate Horan, library director. “Freegal offers great music, is simple to use, and provides access to millions of songs instantly. roads lead home.- Marjorie Holmes Here we are again, in another Christmas season. I know--the stores started it two months ago, but I, personally, hold out until December. There have been a lot of those seasons now. I don’t remember details of most of them. They all blend together. But some I remember very well, and those old ones are what my vision of Christmas is today. Of course I still enjoy the season and the holidays themselves, but it isn’t like the good old days. Christmas used to be magical. I suppose that magic was because the good Christmases in my memory were those in the 1950s. When I think of Christmas, I think of my welldecorated main street in my little rural community, with music blasting from speakers downtown. I remember preparation and performances of the Christmas pageants at church and at school. I remember baking with my mom. I remember packing in a Christmas-Eve gathering at my grandma’s house with lots of relatives from one side of the family, and doing it all over again on Christmas Day at

When my kids were little, I taught

my other grandma’s. It was exciting, and warm, and wonderful, and exhausting. and by the next October, we would again be looking forward, with anticipation, to another Christmas season. But like all of you, I grew up. It isn’t the same. It is all still good, but it just isn’t a 1940s or1950s Christmas. In all of our lives, too many of the people who made those Christmases magical are gone. Too much is now commercialized, with too much pressure on spending, too much contention over political correctness, and too much chaotic travel as people are scattered (or unable to come at all). This Christmas season, for whatever is missing in your holiday, my hope is that it is tempered by great memories of those old, hometown, rural days of excitement. Get out the old photo albums. If you have some old home movies or tapes, put them in the projector. Call an old cousin you haven’t seen in years and reminisce about the good old days. Those feelings are in there. It is okay to enjoy them again. I’m just sayin.’ •

them how to find lost items, and my system really worked. The scenario went like this: A treasured flashlight has been lost. and there are tears and frustration aplenty. Then mother-craft kicks in. “Where were you when you first knew it was missing?” I ask. “I was in the kitchen.” “Where/when did you last play with it?” say I. “I was playing inside the doghouse in the back yard,” I am told. “Where have you been between #1 and #2?” Then off we would go, backtracking along the memory trail. Barring unforeseen circumstances, the lost item was readily located. Once lost, an item can usually be located by following the above three steps. Well guess what? My kids are all middle-aged or beyond. and I am using this system more and more often these days. If I forget why, what, where. or when I am to do something, with minor modifications this “finding system” works like a charm. The scenario goes like this: Something is misplaced, or I have forgotten why I am standing in the garage with a wet dish rag in my hand. Now the system kicks in like magic. Where was I when I first decided I needed to do this task? (Or discovered something was lost?) Where/ when did I decide what I was going to do? (Or where did you last use what was lost?) What in the heck have I been doing in the meantime between # 1 and #

2? (Where were you between #1 and #2?) VOILA!!! The lost is found, or the reason you are standing in the garage holding a wet dishrag is suddenly revealed to you. Many years ago when my youngest child was three, we were headed out to the garage, and I blurted out, “I can’t find my car keys.” A little voice chirps, “Mama, where were you when you first knew they were lost? Where were you when you last used them?” I found myself staring at my young son in admiration. I found them, of course. This is my Christmas offering to you, my readers. May it help you to find what you lose, what you intended to do, and where you were headed, if and when you should forget. It works for me!!! • M. week’s feature golf course is one of the premier courses in the Valley, located in Palm Valley, a strong community of friends and neighbors. The course was opened in 1968 and designed by Leon Howard and Dave Bennett. Fairways are common Bermuda while the greens are Champion Bermuda. The layout of the course has a number of water hazards and sand traps to keep play interesting. The practice facilities on the course consist of a driving range, as well as chipping and putting greens. They have a fully stocked Pro Shop and also offer golf lessons and clinics for players of all levels. From the championship tees, the course measures 6541 yards and is rated for men at 71.6/128. It has three other sets of tees that are rated for both men and women. They are 6261 yards rated for men at 70.2/123 and 78.2/135 for

women, 5625 yards rated for men at 67.1/113 and 74.1/128 for women, and 5035 yards rated for men at 64.2/105 and 70.3/120 for women. Par for this course is 72. After golf, you will want to enjoy a cold, refreshing beverage and a delicious meal on the gorgeous patio overlooking the golf course. You will find a very embracing staff who will greet you with a warm smile and gracious hospitality. They say hospitality is their way of life, and you will definitely see what they mean. The Pharr Community Theater presents

The Complete Works of William Shakespeare Abridged on tour in the Winter Texan Retirement Communities Special to Welcome Home RGV

Some say Shakespeare, the world’s most renowned English playwright, wrote 37 plays, while others say it was 38. Imagine seeing all of his plays in the same performance, all in just two hours, one right after the other, including Hamlet, Macbeth, Romeo and Juliet, Julius Caesar, Othello, and King Lear with The Tempest, and more. That’s exactly what happens in the Pharr Community Theater’s staging of the bard’s The Complete Works of William Shakespeare Abridged. The plays will be acted out by only three actors--playing all the parts--and presented through a series of short vignettes of each and every play Shakespeare wrote. This Shakespearean comedy has been performed worldwide and was performed to sellout audiences at the Pharr Community Theater in June 2016. In January 2017, the play will be on tour in the Winter Texan retirement communities. Every play is unique to the extent and interaction of the audience. Isidro Lerma, assistant director of

Theatre Arts at McAllen High School and one of the artistic directors and chairman of the board for the Pharr Community Theater, directs the play alongside his colleague. Rise D. Morris. “The stories to be told play homage to the 400 years since Shakespeare’s death April 23, 1616. Known the world over and translated into nearly every language spoken, his plays have been performed practically more than any other playwright in the world,” said Lerma. Ricardo Godinez, 18 years old and from McAllen, is one of the three actors. He performed theater in high school, mostly in UIL one-act competitions, and was recently seen in the 13 o’Clock Theatre’s play, Pablo and Pedro. “I play a lot of the fun parts, and most of the women in the play; I’m the butt of most of the jokes. If you want to see some Shakespeare and have fun, you have to come to the play,” said Godinez. The other two actors in the play are 17-year-old Michael Morris, who started performing at four months

old, when he played Baby Jesus for Weslaco’s historic Tower Theater, and he has not stopped since. Twentyyear-old Juan Cantu is the third actor. “This play is lots of fun. It’s not your average play. You come, you interact, you have fun, and then you go home happy.” The play on tour in the Winter Texan retirement community will be performed New Year’s Eve, December 31, at CountrySide RV and MH Park, 100 North Valley View Road in Donna (Activity Office 956-464-3834)

Grilled Shrimp with

Rio Star Grapefruit Glaze 6 servings • 2 cloves garlic, minced • 1 tsp. grapefruit zest • ½ cup fresh Rio Star Grapefruit juice • 1 Tbs. olive oil • 2 Tbs. honey • ½ tsp. salt • ¼ tsp. black pepper • 1 lb. jumbo shrimp peeled and deveined • 12 wooden skewers, soaked for 30 minutes in water

Light the grill. In a small bowl, combine the garlic, grapefruit zest, grapefruit juice, olive oil, honey, salt, and pepper. Add shrimp to the marinade, stirring well to coat. Let marinate for 20 minutes, stirring after 10 minutes. Thread shrimp onto wooden skewers. Cook the shrimp until just done, 2 to 3 minutes per side. Brush each side with glaze while grilling. In a small saucepan, bring the remaining glaze to a boil. Boil for 1 minute, remove from heat, and pour over shrimp skewers. . Winter Sweetz™ Grapefruit is “surprizingly sweet with a hint of zing.”

• 1 ½ medium onions, chopped • 1 green bell pepper, chopped • 2 carrots, sliced in thin rounds • ¼ bunch celery, chopped • 2 potatoes, chopped • 3 ½ quarts chicken stock, heated • 2 tablespoons chili powder • 1 tablespoon comino (ground cumin)

• 1 teaspoon white pepper • ¾ cup garbanzo beans, cooked • 1 pound chicken, cooked and chopped • 2 tablespoons chopped fresh cilantro • Fresh lime, sliced • 1 avocado, sliced • Fried tortilla strips

Sauté onion and bell pepper in small amount of oil for 60 seconds. Add carrots, celery, and potatoes, and sauté for 2 minutes. Add hot chicken stock and seasonings; simmer for 5 to 10 minutes or until vegetables are tender. Add garbanzo beans, chicken, and fresh cilantro. Garnish with fried tortilla strips, lime, and avocado. Meatballs

For the Meatballs (~25 cocktail size meatballs): 5 pounds ground beef 1 1/2 cups plain breadcrumbs 3/4 cup half & half 1/4 cup chopped fresh flat-leaf parsley 2 tablespoons Dijon mustard 1 teaspoon salt 1 teaspoon freshly ground black pepper 4 large eggs 2 tablespoons canola oil For the Sauce: 1 cup ketchup ½ cup brown sugar, firmly packed ½ cup whiskey (such as Jack Daniels or your favorite) To make the meatballs, combine the ground beef, breadcrumbs, half & half, parsley, mustard, salt, black pepper, and eggs in a large mixing bowl. Mix together well with your hands. Scoop out 1-tablespoon portions and roll Bettina Tolin is a graduate of Le Cordon Bleu College of Culinary Arts in Austin, Texas. She has cooked in the kitchens of the Ritz-Carlton Amelia Island, Florida. She is currently the Executive Chef and General Manager at Marcello’s Italian Restaurant & Bar on the Piazza in Port Isabel, Texas.

With the holidays fast approaching I am thinking of fabulous party snacks

that everyone will love. I am partial to these cocktail meatballs that I call “drunken meatballs” because they are made with whiskey. Once finished, the actual alcohol is cooked out but the wonderful whiskey flavor remains and these meatballs are to die for. I would double this recipe for a crowd. Also, if you don’t have time to make the meatballs, or just plain don’t feel like it, you can purchase already cooked cocktail meatballs in the frozen section of the grocery store. Just be sure to double the sauce recipe as the meatballs come 45-50 to a bag. Happy Holidays!) • them into balls with your hands. they brown all over, 5 to 7 minutes per batch. Drain on paper towels. For the sauce and to finish the meatballs: In a large pot over medium-high heat, add ketchup, brown sugar, and whiskey and bring to a boil. Add the meatballs and bring to a simmer. Cover and cook until the meatballs are heated through, 8 to 10 minutes.
