Orphan Train Riders Program to be Presented in Early 2016 at Fiesta Village in Mission Special to Welcome Home RGV
It
seems like this time of year is also the time we take to tidy up and fix what’s broken, or often times, even what’s not. As I drive through RV resorts across the Valley, I see service repair trucks and vans, furniture delivery trucks, and painters on scaffolds just about everywhere. Whether you’re just moving in for the first time or moving back in after taking the summer off, it’s nice to start the season off right. Nice and tidy. My house is just the same. I can’t go into the crazy busy month of January with a messy house; I like order. (I wish the people who lived with me shared that philosophy!). Sometimes I wonder if moving might be the only way to get both my ‘kids’ (my 17-year-old daughter and my 47-year-old husband) to go through their belongings and decide what to keep and what to hand down to someone less fortunate. Well, I’m not interested in moving just yet, so rather than move, I decided to re-carpet my bedroom... which led to tiling my living room... which led to to sorting through all the ‘stuff’ we’ve accumulated in the 15 years we’ve been in this house. Mission accomplished! As we draw closer to a new year, I hope you find this week productive.... and fun! • We’re just connecting the dots,

Village Park will host Orphan Train Riders by Dorothy A. Lund Nelson Tuesday, January 12, 2016, at 1:30 p.m. The doors of the Recreation Hall will open at 1:00 p.m. The ticket to “ride the train” costs $5.00. Fiesta Village is located at 205 S. Stewart Road in Mission. This is open to the public and people of all ages are welcome. Because of the popularity of this event, the park will have Dorothy repeat the program Tuesday, February 16, 2016. For over 30 years, Dorothy has continued to share with children and adults the amazing story of over 200,000 children being “placed out” across the United States, by train. Though this is a great American story, it is not in history books. Only recently have novels been written about these children. Expect a lively, interactive presentation. Dorothy, a former teacher and activities director for long-term care, has a unique way for all to experience the adoption or indenture process during the period of 1854-1929. The National Headquarters for Orphan Train information is located in Concordia, Kansas. At their 2011 national meeting, Dorothy was presented with the “Volunteer Lifetime Award” for “someone who has been involved for 15 years or more and continuously supports the work of the National Orphan Train Complex and Museum.” Since then, she has continued to tell the story in many states, and the Valley is no exception. Dorothy will be featured

at least seven times in January and February of 2016 before she and her husband, Albert Nelson, return to their other home in Rochester,

Campbell and Ernest Schanilec are a creative couple who you will find at craft shows throughout the RGV. Suzanna combines her colorful nature photos and beautiful poetry into lovely greeting cards. Ernest has written three historical novels and nine mystery novels. One of Ernest’s novels, Rio Grande Identity, is set in the RGV. It’s about a Winter Texan lady who is scammed into an investment scheme. Her friend, Detective Tom Hastings, goes after the scammers with the help of two Border Patrol

Friends in Low Places – Texas Indigo Snakes by Anita Westervelt, Rio Grande Valley Chapter, Texas Master Naturalist
If you’ve never seen one of our big,
beautiful Texas Indigo snakes, keep your eyes open during the winter months. Typically the Indigo breeds in winter. If you’re lucky enough to see the serpentine dance of the mating ritual, you’ll want your camera handy. To make it easier for you, the Texas Indigo is active in the day time, although much of its time is spent hiding. You are most likely to see one of these beauties in lightly vegetative areas near a permanent water source. They also can be found in mesquite savannahs, open grassland areas, and coastal sand dunes. Southern Texas is its northern range, and they are found as far south as Veracruz, Mexico. The Texas Indigo snake, Drymarchon melanurus erebennus, a subspecies of the Eastern Indigo snake, is predominantly black in color. Their smooth scales have a high sheen, giving them an iridescent hue in the sun. The underside is often a salmon color with a creamy white color under

the lower jaw. If you’re thinking one would make a spectacular pair of boots, think again. The Texas Indigo is listed as threatened in Texas and cannot be hunted or killed. Its biggest threats are road endangerment and habitat loss from community development. Averaging six-to-eight feet long and weighing four-to-five pounds, they can live up to 40 years. The Indigo is the largest species of harmless, nonaggressive snakes in the state, but be respectful and leave it be. The state’s adage is, “If it’s an Indigo, let it go.” At six feet, with body girth around
four inches, a first glance might be startling, especially if it lifts its head and gives a couple of tongue flicks. Don’t run. Stay still and behold this creature. A snake flicks its tongue to get a sense of its environment by collecting odors present in miniscule moisture particles floating through the air. Indigo snakes require a large home range, often crossing roads as they forage for food. Diet consists of anything they can overpower and swallow, including mammals, birds, lizards, frogs, and turtles, as well as other snakes – including rattlesnakes. It relies on the sheer strength of its powerful jaws to subdue its prey. Because of their ability to consume rattlesnakes, ranchers and even homeowners will make their land hospitable for Indigo snakes. They are attracted to large brush piles and hollow dead logs camouflaged by leaf litter. •

Downtown Harlingen Installs New Mural Public Invited to Attend Free Ribbon-Cutting Event Special to Welcome Home RGV

officials will have a ribbon cutting event for a new mural, From Farm to Market through Harlingen, Tuesday, December 22, at 11:30 a.m. The festivities will take place in the public parking lot at the intersection of Harrison Avenue and the railroad tracks in Downtown Harlingen. The mural, on the west wall of the building at 201 W. Van Buren, faces this parking lot. The event is free and open to the public. The new mural features historic images of agricultural processing in the Rio Grande Valley, including crops in the field, loading and unloading of produce into trucks and wagons, and icing of produce in railroad cars in Downtown Harlingen. These were painted in sepia tones directly on the wall. In addition, 17 historic Harlingen produce label images were painted in full color on panels that are mounted above the monochromatic
images. The giant new mural (which is approximately 160’ x 15’) was painted by artist Brett Oberthaler of Weslaco from historic photos. Harlingen has a long mural tradition, with works from the 1940s and 50s still on display. Today, more than 20 larger-than-life-size works brighten the streets of Downtown Harlingen and decorate walls inside businesses. Most portray aspects of Valley history and culture. This new mural was designed to illustrate how Harlingen served as an important center of agricultural processing in the early 20th Century. • 2 teaspoon curry powder • 1 teaspoon cumin • 1/2 teaspoon ground ginger • 1/2 teaspoon turmeric • 1/2 clove garlic, crushed • 1 onion, chopped • 1 teaspoon fresh ginger, grated • 1 medium chicken, cut into serving pieces and skinned Combine dry ingredients with garlic, onion and fresh grated ginger. Coat chicken with mixture and refrigerate for 2 hours, preferably longer. Place on moderately hot barbeque grill or broil in oven approximately 30 minutes or until done, turning once.

I Never Get Tired of Visiting Santa Ana NWR By Bill Lang
My bicycle is my key to the world.
My bicycle has been, and always will be, a part of my life. My bicycle takes me anywhere I desire to go. There have been many opportunities to do many different things in life, and I could learn about the area I was cycling in when riding my bicycle. One of my favorite destinations is the Santa Ana National Wildlife Refuge located south of Alamo near the intersection of FM 907 (Alamo Rd.) and US 281 (Military Highway). Santa Ana NWR is a rare, tropical world where Spanish moss drips from the trees and the noise of many different birds can be heard as they go about their way. Watch and listen to chachalacas go about their daily tasks. They usually travel in pairs, and visitors can watch them interact with each other. Santa Ana NWR was established in 1943 for the protection of migratory birds. It sits at the intersection of the east-west and north-south migratory routes for many species of birds, but not only birds visit this refuge. There are many different types of snakes
We Want You to Express Yourself! and other wild animals, too, such as bobcats and rare ocelots. Santa Ana NWR has many walking trails, and there is a tram that operates two-to-three times a day that will take visitors through the refuge. Bicycle riding within the reserve is not allowed. The Visitor’s Center is open from 8 a.m. to 4 p.m. daily. There are restrooms at the Visitor’s Center and bird-viewing area. There is a viewing tower where visitors can climb up above the trees to view the area. There is also a canopy walk, which is
a rope bridge extending between two towers, giving visitors a chance to watch the wildlife above, below, and right next to them in the ebony trees. Visitors can walk down a trail that takes them to the Rio Grande River. Watch the ants as they go about their daily lives carrying supplies and food back to their home. I never get tired of visiting Santa Ana NWR. United Methodist Church of La Feria will host its annual Live Nativity Saturday, December 19 and Sunday, December 20 from 6 -7:30 p.m. At the event, the church’s street and parking lot transform into the town of Bethlehem. Visitors can drive or walk through the village and see the live story of Joseph and Mary and the arrival of Jesus Christ. The Live Nativity will present a full cast of townspeople, angels, wise men, kings, soldiers, shepherds, and live animals. The event will also include live and recorded music.

habit-forming. In 1998, Joe was so bored, sitting in the trailer while I was sewing, crafting, or in the pool. Then Don asked if Joe wanted to learn shuffling. Joe is not, by nature. a joiner--hence bored. However, he didn’t have a full calendar, so off he went. And learn to shuffle he did! Opponents for the game are selected by random draw, so you get to make a new friend. Joe’s first game was with Irene, and she beat him by over 100 points. The second day, he drew Ann, and she beat him by over 100 points. (She kept saying she was sorry for putting him in the kitchen – yeah, right). The third day, he drew little Rita (80 pounds and 80 years old), and she beat him by over 100 points. He went home and told me about how
he loved the game; I told him he was crazy. He quickly informed me, “It’s not a muscle game; it’s a thinking game, and women are just as smart and as good as the men.” Well, over the years, it has come to pass that Joe shuffles from three to seven days per week. He still enjoys the game and looks forward to his return to Texas each year. He enters nearly every available tournament. He is a member of the Western Valley Shuffleboard Association, the Rio Grande Valley Shuffleboard Association, the Texas State Shuffleboard Association, and the National Shuffleboard Association. If your park offers Shuffleboard, try it; you might get hooked. And if you get into a tournament, go look Joe up--he’s the crazy one! •

It was two weeks before Christmas,
and I had been feeling the holiday spirit full-bore since my trip to the Branson, Missouri, Christmas shows in early November. I had been wearing my household halo intermittently for weeks*, and as I prepared for a trip to the HEB grocery store, I dressed to suit my mood. I carefully applied my makeup and a red top over black jeans. The final touch was a very beautiful Santa hat I had purchased in Branson for more than I would normally spend for one. It sparkled. I felt quite fetching in my Christmas duds and knew I would probably look better than most of the other octogenarians I would meet in the store. Yea! And yes, people pushing their carts up and down the aisles filled with holiday food temptations would smile at me and say, “Love the hat!” Halfway through the shopping event, a gentleman approached me and out of the blue said, “Would you sell your hat?” I was taken aback, for he seemed anxious. I said, “It wasn’t cheap, and I am not sure you would want to pay what I will ask for it.” “How much?” he said. “Twenty dollars.” “Twenty dollars?” He gave it a closer look. “That’s about what I paid for it.” He said, “I will be right back; wait right here!” It wasn’t three minutes later he approached me, accompanied by another fellow who was wearing red Santa Claus pants and a white T-shirt. They looked to be in their mid-forties and were well-spoken. He pointed to my hat and said, “There it is. She wants $20.00 for it. What do you think?” The other fellow reaches back, pulls out his wallet, hands me a $20.00 bill, they thank me, turn on their heels,and hurry out of the store, my Santa hat perched firmly on the head of the fellow wearing red Santa Claus pants. I assumed they were volunteer workers obligated to show up at a function in Santa Claus regalia. But Santa either lost or didn’t have a hat. They stopped at HEB to buy a good $.99 cent hat, only to find there were none in stock. (I did observe that to

be true) In desperation, they found one on the head of a nice little whitehaired lady with the Christmas spirit and bought it right off her head. How lucky is that? Thank you, Lord! After the fact, I thought, “Aw. Why didn’t my Christmas spirit extend to a point where I would offer the hat to them as a gift?” The guilt did not linger. But I loved the fact that my hat solved someone’s problem. Besides, I had bought two and had another just like it at home.
*Many years ago, I gave a Christmas party for all the widows in our church. On arrival at our home, they were presented with a halo to wear for the evening. They loved it. My husband had spent hours designing and making haloes out of wire and tinsel, and ever since that time, I wear a halo throughout the month of December just because I like the way it makes me feel. Rather angelic. My family has worn them at Christmas dinners for years. I have shared them at gatherings with friends, and when I was supervisor of the Surgical Post Op Unit at Valley Baptist Medical Center, I allowed my nursing staff to wear them on Christmas Eve. It was late at night on December 24 when one of the nurses wearing her halo walked into a patient’s room to administer a medication. She awakened the patient, who took one look at her standing beside the bed with a halo and thought she had died and gone to heaven. She made a bit of a ruckus. Even though she was in the “right place,” she wasn’t ready to go just yet!! My haloes are a bit frayed and shabby now from wear and tear, but I have a couple that are still in service. Locally, we started in 1988 in Hidalgo County, but Palmer Drug Abuse Program has been around since the late 70s. We serve the entire county and surrounding area with drug and alcohol abuse counseling. We start our services with youth ages 12 and up. We also provide counseling for families struggling with a loved one going
through addiction. All counseling services at our facility are FREE! Where is your organization located and what are the hours of operation? Our organization is located in McAllen on 9th street and Beech. We are very close to Business 83, as well. Our individual counseling hours are Monday-Friday 9 a.m.-5 p.m. (closed 1-2 p.m. for lunch), and our group sessions are Monday-Saturday at 6:30 p.m.--Mondays, Wednesdays, and Fridays are for our Adults (ages 25 and older) and Older group (ages 18-24). Tuesdays and Thursdays we have Younger group (ages 12-17) and Family Support meetings. Fridays and Saturdays we have activity nights from 4-10 p.m. called REBOS (sober spelled backwards) for our Younger group. Every week there are different activities scheduled. What kind of donations does your nonprofit organization need? We need all types of donations--
of course monetary. It is really hard to keep our doors open sometimes when our funds start to get depleted, but we are blessed to be members of United Way, and they are a huge help. We can also use basic things, such as paper towels, toilet paper, tissue, bottled water, copy paper, coffee, creamer, Styrofoam cups, and eating utensils. All these things can be used by our clients who come to group meetings six days a week. What kind of volunteer opportunities do you have for Winter Texans, Valley retirees, and others in our community? We have a very small office staff, so office work is limited, but we do have some light, indoor cleaning available. Also, on the weekends, if anyone has a passion for youth activities, we would love to have speakers or
anyone willing to teach a special craft or trade: Survival Skills, birding, barbecuing, gardening, etc.... these kids are really good and are very attentive! Do you have any upcoming events you would like Welcome Home RGV readers to know about? Yes, we do! We have our South Texas Courage to Change Cook-Off February 12-13 at Pueblo Tires in Mission! Cooking teams enter at $150 to compete in Brisket, Pork Spare Ribs, and Chicken with a total payout of $4,000 to 1st-10th place winners. This is our second year, and last year we had 20 teams participate, so we are anticipating more to attend this year. We are working on more great details and will be sharing them as they become available.

be your best friend when you attend a potluck. No last minute rushing around to get the dish ready or plated; just bring the cooker to the meal and, if possible, plug it in on “warm” to stay at the right temperature for eating. Some cookers come with insulated carriers, so no electricity is needed to keep the food warm after you unplug it at home. The following is a wonderful recipe for either an appetizer or a side dish using fresh mushrooms:
Crockpot Mushrooms • 1 pound small button mushrooms OR large mushrooms (but in half) • 1 stick of real butter--no margarine in this dish! • 1 package of Hidden Valley Original Ranch Dressing mix (or try a store brand but not the dip mix; make sure it’s the dressing mix) Gently wash the mushrooms, trimming off the stem end. Don’t soak mushrooms in water; they are like little sponges and will end up very soggy. Put the mushrooms into a slow cooker. Melt the butter and mix in the dry dressing mix. Pour over the mushrooms and stir to coat them with butter. Cover the cooker and cook on LOW for about three hours. Serve with crackers or bread to soak up the juices, if desired. This recipe will serve only about 5 people as a side dish so needs to be increased for a large potluck. Use two sticks of butter and two dressing packets for 4x the mushrooms. Wonderful Sugar Cookies • 2 ½ cups all-purpose flour • 1 cup butter • 1 ½ tsp. vanilla • 1 tsp cream of tartar

and that is exactly how it was written; however, after receiving Faye’s email, WHRGV’s expert researcher, Amie, got to work and found the error. The original left the flour out, as Faye suspected. Here is the corrected version. Thanks, Faye and Amie!
• 1 ½ cups powdered sugar • 1 egg • 1 tsp. baking soda
Mix all ingredients together. Refrigerate for three hours. Divide in half and roll out one half at a time. Roll then – ¼ to 1/8 inch. Use seasonal cookie cutters. Sprinkle with granulated sugar, either white or colored sugar, if desired. Bake at 375 degrees for 7-8 minutes. This is a recipe that we’ve made at Christmas time with our son, every year for 30 years. A real family tradition! Of course you can make them at any holiday and use the appropriate cookie cutters for the occasion.

Avocadoes for Dessert? Why Not? One of My Favorites: Green Chile Casserole Chocolate Avocado Banana Pudding*

• 2 Tbsp.peanut butter • 2 Tbsp.unsweetened dark cocoa powder • 2 ripe avocadoes • 2 ripe bananas Cut avocadoes in half. Remove pit. Spoon flesh out of skin and add to blender. Add bananas, cocoa, and peanut butter to blender. Blend until desired smoothness. Serves six to eight. *Note – This is very nutritious and tasty, too
Mom Wagner’s Special Family Recipe Pumpkin Chiffon

• 1 3/4 cup graham cracker crumbs • 1/4 cup sugar • 1/2 cup melted butter or margarine • Combine ingredients and put in a 13” x 9” pan. Press down the crumbs to make a bottom crust. Set aside. • 2 – 8 oz cream cheese • 3 eggs, beaten • 1 1/2 cup sugar Mix and beat until fluffy. Pour over the graham cracker crust. Bake at 350 Submitted by Collier for 35 minutes, or until it has the consistency of Kristi cheese cake. Set aside and let cool. • 2 small instant vanilla pudding mix • 3/4 cup milk • 2 cups cooked pumpkin • 1 tsp pumpkin pie spice • 1-8 oz cool whip Combine pudding mix and milk. Beat for two minutes. Add pumpkin and pumpkin pie spice. Add one-half of the cool whip, mix well and spread over cream cheese. Spread remaining cool whip over the pumpkin mixture. Sprinkle crushed pecans on top of the cool whip & refrigerate. Enjoy! Notes: This recipe was handed down to my husband’s family from Lois Culver. When my husband’s grandmother passed away, the ladies of the First United Methodist Church in Pharr, TX provided desserts following the funeral. After much pleading by Phil Webb, Lois provided the recipe. We think about my husband’s Grandma Wagner every time we have it. I hope you will enjoy the memories you make while serving it.
Green Chile Casserole

• 12 corn tortillas • 2 (4 oz.) cans chopped green chiles • 1 can (16 oz.) hominy, drained • 1 lb. ground beef, browned • 2 cups grated cheddar cheese • 1 can (16 oz.) green chile salsa or • 1 onion, chopped enchilada sauce • 1 additional cup grated cheese (cheddar and/or Monterey Jack, for topping) Preheat oven to 350 degrees. Quickly fry tortillas in hot oil. Line a 9 x 13 casserole with half the tortillas. Layer all the hominy on top of them. Then place 1 cup of cheese, half of the onion, and one can of the green chiles over the tortillas. Cover with remaining tortillas, all of the ground beef, and the remaining cheese, onion, and green chiles. Pour green chile salsa over the top and add additional cup of grated cheese, as desired. Bake 30 minutes. This freezes well. Serves 8-10.

Preheat oven to 375 Chop a head of broccoli (after rinsing, let dry) Mince 2 – 3 cloves of garlic Put broccoli, garlic, 2 tbsp olive oil, and a few shakes of salt and pepper in a ziploc bag... Shake it up! Spread out on foil lined baking sheet, place on top rack, and bake for about 30 minutes. Broccoli will be crunchy and delicious. Kristi’s notes: This recipe was floating around facebook – I wish I could give credit to the person who originally posted it. You will never have steamed broccoli again! My family loved it.

In keeping with the “Heirloom” theme of the show, several of our bee members will display their family heirloom quilts. The Llano Grande Quilt bee traditionally displays up to 200 beautiful quilted projects in the show each year. From amazing hand and machine quilts to incredible wall hangings in traditional and landscape techniques to table ware, trendy purses, and totes, the show is simply a work of art. The vast array of hand crafted items sold in our boutique has our guests rushing directly that area to insure they have first choice. The next stop at the show is the display of hand made purses and totes. Purchase as many tickets as you would like to win the bag you like best in the drawing at the end of the day. And while the Opportunity Quilt is not awarded the day of the show, tickets are available for the February

Some 25 years ago, two ladies from
Texas Trails RV Park in Pharr were asked to supply some warm blankets to a small Mexican mission. They made 15 quilts from used clothing and donated them. After years of used quilt donations, the ladies – now going by the name of Texas Trails Angels – began creating knit hats, quilts from new fabric, and turbans (for those who have lost their hair due to cancer treatments) to local places of need. These places included the Ronald McDonald Room at Edinburg Children’s Hospital, Edinburg Children’s Hospital and emergency room, Driscoll Children’s Clinic and emergency room, Rainbow Room Family Services, Texas Oncology, the neonatal intensive care unit at McAllen Medical Center, Salvation Army, and others. The ladies also support Brooks Army Medical Center, the Wounded Warriors Project, M.D.
Anderson, and Fisher House at Lackland AFB in San Antonio. Today, the group of approximately 20 women (and some men!) regularly make about 20 quilts and blankets each week. Last year, they donated over 650 knitted hats to these charitable organizations. Edinburg Children’s Hospital proudly recognizes the Texas Trails Angels for their continued contributions and dedication to improving lives during difficult times through warm thoughts and blankets. We appreciate what this group does very much! The group depends on contributions of yarn and material for their charitable work. week is a 9-hole, Par 3 golf course located in the Cottonwood Country Club. The course was designed by Joseph S. Finger and Kenneth Dye, Jr. ASGCA and opened in 1984. The course is open to the public. It is a daily fee course, and they have pull carts, as well as golf carts available for rent. They do not have a driving range, but there is a putting and chipping area available. To improve your short game or just to enjoy an hour and a half golfing with friends, go to Cottonwood and check it out. The course is located at 1001 S. Ed Carey in Harlingen. ell, guys and girls, living near Chicago, I have been to Applebee’s many times! But let me say I have never been to the one in McAllen. What a surprise! If I closed my eyes, I would have thought I was in a gourmet restaurant. The cuisine was that good! My wife, granddaughter, and I all went the other evening to Applebee’s expecting a decent meal. Well, it was grand--way beyond what we expected. I elected to have the grilled salmon with an artichoke dressing, served with roasted potatoes, grilled zucchini, and a good helping of
nicely prepared spinach. My wife had a new dish called Brisket Enchiladas, served with lovely, spicy rice. She raved about how good they were. My granddaughter had a 4-oz. steak and mashed potatoes from the children’s menu, and the meat was both tender and good. There are numerous new items on the menu. Our charming waitress, Kim, pointed out several new ones, as well as a number of very creative cocktails. We selected from the half-price appetizers an excellent artichoke and cheese dip served with chips and salsa. The chips were very
light, and the dip was very tasty. The waitress recommended the Banana Foster Cake. Man! Chiquita Banana would have danced in delight for such a great use of bananas. My mouth waters just thinking about it! The atmosphere is warm and inviting, and the lighting is subdued to give you the feeling of intimate dining. It is truly a treat for the senses to dine at Applebee’s in McAllen. They are located at 4601 N. 10th Street. Their phone number is 956618-0600. Carlos, the manager, talked with me about how they are trying to make
everyone’s visit fulfilling and happy. Well, I can tell you he did a great job with us! We loved it and will definitely be going back! Hundreds of Winter Texans came to the Rio Grande Valley Livestock Showground for an afternoon of dancing horses, tamale making lessons and to judge the ‘qeen bean’ cookoff. Entertainment was provided by students who attend school in Mercedes. A good time was had by all! •

MOSTHistory Presents Fiesta de Noche Buena Celebrate a Newly Imagined Tradition Special to Welcome Home RGV
The
Museum of South Texas History (“MOSTHistory”), a museum chronicling the heritage of South Texas and Northeastern Mexico, invites you and your family to Fiesta de Noche Buena from 1 – 5 p.m. Sunday, December 13. Fiesta de Noche Buena is a Spanish phrase translated as “party of good night” and refers to a traditional Christmas Eve feast that is observed in Mexico after a religious mass. Among the holiday foods and decorations are poinsettias, also known as noche buenas, which are indigenous to Mexico. The legend associated with the poinsettia, or noche buena, is that of a poor Mexican girl who presents weeds to the infant Jesus that miraculously turn into beautiful, red rich flowers – noche buenas. Celebrate holiday traditions while creating cherished memories that reflect South Texas culture at this inaugural event, to be held inside the museum. Just beyond the mesquite double doors at the front entrance, visitors can experience traditional pan dulce, Bavarian roasted nuts, freshly brewed coffee, hot tea, atole, and champurrado. For the unfilled stomachs, enjoy fajita tacos or tamales, followed with a delicious dessert – arroz con leche, cookies, or buñelos. Families can document the holidays with multiple photograph opportunities that include Vela Photo Booth, a 12-ft tall fiesta tree, a holiday-themed wagon full of gift boxes and Cowboy Santa, with a
saddle. Participate in fun activities, such as free ornament crafts that can be added to a tree in the museum or taken home. If there is still last-minute holiday shopping, the museum’s Annex Hallway will be lined with artisan vendors selling handmade crafts ranging from flower headbands, wooden holiday houses, jewelry, and cuadros (paintings) to decorated crosses, birdhouses, corn husk dolls, and more. The Museum Store also offers a beautiful selection of gift items sure to please. Live entertainment will be provided by award-wining storyteller and folksinger Rickey Pittman, “The Bard of the South.” Visitors will also experience traditional folklórico performances by Grupo Folklórico RGV from Mission, Texas. Come and enjoy an afternoon filled with dance, music, photograph opportunities, food, drink, and holiday shopping. Committee was formed to develop a marketing plan in order to promote Alamo and its hotels and RV resorts as a destination-of-choice for Winter Texans. With Canada being the second source of visitors to Texas, the governor’s office organized the Sales Blitz to Ontario, with the City of Alamo being one of the partners that participated November 8 – 13. Alma Puente Colleli, marketing consultant, and Dale Maynard Wells from Alamo Country Club represented the City of Alamo and met with 12 travel agencies and 44 agents in Barrie, Cambridge, Hamilton, London, Kitchener, Niagara on the Lake, St. Catherine’s, and Thorold, Ontario.
“Alamo was presented as a longterm-stay sun destination that’s affordable and offers a warm, friendly environment with many nature tourism options, including our own Santa Ana Wildlife Refuge,” said City Manager Luciano Ozuna. Mayor Diana Martinez said, “Alamo’s location is central to the Rio Grande Valley, and Winter Texans and visitors in general can stay in Alamo and see it all. We want to ensure our Winter Texans have a great experience in town and return for many years to come.” Alamo produced a marketing video and is starting an advertising campaign, along with participation at trade shows. •

Spinach 4 tablespoons unsalted butter 2 large yellow onions, diced 2 cloves garlic, minced 1/4 cup flour 1/4 teaspoon grated nutmeg 1 cup heavy whipping cream 2 cups whole milk 3 pounds frozen chopped spinach, defrosted (5 (10-ounce) packages) 1 cup freshly grated Parmesan cheese, divided 1 tablespoon kosher salt 1/2 teaspoon freshly ground black pepper ¾ cup grated Gruyere cheese Bettina Tolin is a graduate of Le Cordon Bleu College of Culinary Arts in Austin, Texas. She has cooked in the kitchens of the Ritz-Carlton Amelia Island, Florida. She is currently the Executive Chef and General Manager at Marcello’s Italian Restaurant and Bar in Port Isabel, Texas.
Gratin
Preheat the oven to 425 degrees F. Melt the butter in a large saute pan over medium heat. Add the onions and saute until translucent, about 15 minutes. Add the garlic and sauté on low heat for about 2 minutes, taking care not to burn the garlic. Add the flour and nutmeg and cook, stirring, for 2 more minutes. Add the cream and milk and cook until thickened. Squeeze or press the liquid from the spinach and add the spinach to the sauce. Add 1/2 cup of the Parmesan cheese and mix well. Season with salt and pepper, to taste.
Transfer the spinach mixture to a baking dish and sprinkle the remaining 1/2 cup Parmesan and the Gruyere on top. Bake for 20 minutes until hot and bubbly. Serve hot. Chef’s Tip: This dish can be made ahead of time, the day before and refrigerated until ready to bake. Cover the spinach mixture.
