t’s hard to believe this is our last newspaper of the season--weekly, anyway! We are pleased to announce that we are going to continue our paper, monthly, throughout the summer to keep our Converted Texans and local retirees informed of what’s going on across the Rio Grande Valley. It has been a fantastic season on so many levels. Many thanks to all of you who took the time to submit your events, activities, articles, and suggestions. We wouldn’t have been able to accomplish this weekly feat without your help. We look forward to being your one-stop source for information for many years to come! For those of you who are getting ready for your next adventure, we wish you the safest of travels. We’ll be waiting for your quick return, as the summer seems to go by as quickly as the season. For those of you who are permanent residents, summer brings with it a slower pace but still a plethora of activities, entertainment, and other ways to keep busy. Coming to Weslaco April 2
The 27th Annual Texas Onion Fest
is scheduled for Saturday, April 2, at Weslaco City Park. Texas Onion Fest celebrates the development of the world famous Sweet Texas Onion, which was developed in Weslaco at the Texas A&M University Extension Service. The festival brings the community together for a fun-filled day of onion-eating contests, cooking demonstrations, recipe contests, entertainment, and much more. One big change for this year’s event is that tickets are now available online, an effort to create convenience for festival goers. “We’re always looking at ways to improve our event, and online ticketing was one thing we’ve never offered before,” remarked Daryl Smith, Texas Onion Fest committee chair. “Now, festival attendees can get their tickets with a click of a button and avoid the ticket line.” Live entertainment is scheduled at the Hermes Music Stage and the Frost Bank Cool Spot Stage all day Saturday. Attendees will enjoy the sounds of country, pop, and Tejano music on the Main Stage, including flamenco guitarist Mario Aleman, local pop star Gabriela Ariana, and country singer Madelyn Victoria. The evening’s headlining entertainment kicks off with Texas country singer and RGV native Bo Garza, legendary Nashville star Johnny Rodriguez, and Tejano super group Grupo Control, brought to you by Jeff Everitt and Associates
and Progreso International Bridge. Always a crowd favorite, Rancho Caballo de Puro Raza Azteca will be performing at 1:30 and 3:30 p.m. at the H-E-B Charro Arena, featuring dancing horses. Live cooking demonstrations and the onion and salsa recipe contests will be held at the AEP Texas Culinary Center. This year, Weslaco’s own Lamar Jones, creator of Jank BBQ Sauce, will be one of the featured cooks. Kids can enjoy FREE rides courtesy of WoodmenLife, and the Knapp Medical Center Healthy Family Area will present health information, screenings, and health-related games.

City of McAllen Ranked Among Top 100 Places to Live Special to Welcome Home RGV

U.S. News & World Report has named the City of McAllen as one of the top 100 Best Places to Live in the USA. Preheat oven to 350 degrees. Lightly butter 3-quart casserole dish. Boil unpeeled potatoes in salted water until tender but not falling apart. When cool enough to handle, peel and slice. Layer in dish with slivered bell pepper and pimiento. Salt and pepper each layer. Melt butter or margarine in saucepan; add flour and stir until well blended. Gradually add milk, stirring constantly. Add cheeses and melt. Pour over the potatoes and bake 45 minutes to 1 hour.

La Plaza Mall Unveils Highly Anticipated Expansion Details and Renderings Special to Welcome Home RGV

Grande Valley residents will soon witness the demolition of the former Sears store, a sign that Simon, a global leader in retail real estate, is well underway with its transformative expansion plan for La Plaza Mall. Demolition of the interior of the store has been underway for several months as teams of construction workers have been busy readying the building for demolition. Demolition of the building is scheduled to be complete by late spring and will pave the way for a 245,000-square-foot expansion wing that will accommodate up to 50 new specialty stores, four junior anchors, and an exciting dining plaza with six first-to-market restaurants that will be prominently featured facing Interstate 2 with a grand outdoor terrace for our patrons to enjoy dinner al fresco. This new expansion is scheduled to open in the fall of 2017. Simon will also upgrade the interior and exterior of the existing mall with new mall entrances, flooring, LED lighting, skylights, upgraded restrooms, and luxury seating and landscaping to completely enhance the look and feel of the property. Two new parking decks, able to accommodate approximately 2,000 vehicles, will be built. A two-level parking deck will be built adjacent to Macy’s to serve the mall and Macy’s.

keeping with the United Nations’ Global Initiative to raise awareness about the preservation and sustainable management of freshwater resources, the International Museum of Art and Science (IMAS) and McAllen Public Utility (MPU) is pleased to invite the public and media to attend activities celebrating 2016 World Water Day Saturday, March 26, from 10:00 a.m. to 4:00 p.m. World Water Day is an annual event celebrated across the globe. Since 1993, World Water Day, a global event held annually March 22, has been celebrated as a rallying cry for people to understand, value, and protect Earth’s vital water resources. The U.N. System has designated this year’s focus on the power that water and jobs have to transform people’s lives. IMAS’s celebration will consist of a number of waterrelated activities for all ages and will feature a series of Science on a Sphere presentations, aquatic animal talks, and water conservation activities in the MPU BioZone Science Lab and in the Anne Moore

South Texas College and ATC Invite the Community to Share Stories for We’re Here Now Project Special to Welcome Home RGV
South
Texas College Theatre and Brooklyn-based Applied Theatre Collective (ATC) are continuing their partnership for community members to become involved in the creative process. The goal of the communitybased devising project, We’re Here Now: Bridging Gaps, Creating Dialogue, and Strengthening Community through Performance in the Rio Grande Valley, is to explore border life in the Rio Grande Valley through storytelling and theatre. Community volunteers are invited to attend devising workshops scheduled for Monday, March 28, through Thursday, March 31, from 7:00 - 10:00 p.m. and Friday, April 1, from 5 - 10 p.m. All workshops will be held at the STC Cooper Center for Communication Arts Black Box Studio, located at 3201 W. Pecan Blvd. in McAllen. The final community sharing will be held Saturday, April 2, at 7:30 p.m. at the STC Cooper Center for Communication Arts Main Stage. In Phase One of the project (2015), Applied Theatre Collective members
met and formed relationships with the South Texas College Theatre Department faculty and students, as well as with other stakeholders in the area including The Monitor and La Union del Pueblo Entero. The two priorities of this phase were to get to know people from the region interested in issues concerning the border and building theatre skills with local theatre artists around issues concerning the border to broaden an understanding of theatre’s capacity to address social issues. Now entering Phase Two, the project gathers key stakeholders in the region and engages them in conversation through interviews and story circles about their understanding of the most pressing issues facing the Rio Grande Valley in regards to the border. These stakeholders include educators, humanitarians, organizers, news

reporters, border patrol agents, local policymakers and migrants. Theatre artists from the community and South Texas College will bear witness to these stories and information, collect data, and come back together to weave these stories together and brainstorm what a theatre piece might look like that shines light on these perspectives. ATC is a group of peacebuilders and artists who

use applied theatre techniques to establish creative space for dialogue, understanding, and relationship building at the grassroots level. ATC believes in participant-centered pedagogy that is heavily influenced by Brazilian writer, activist, and educator Paulo Freire. This approach places participant interests first and puts them at the center of their own quest for change. ATC will use storytelling, devising, improvisation, and Augusto Boal’s Theatre of the Oppressed techniques to create We’re Here Now. Jackson Street Classic Car Show Set for April 9 in Harlingen Special to Welcome Home RGV

9th Annual Jackson Street Classic Car Show will be held Saturday, April 9, in historic Downtown Harlingen. The car show is being organized by the Rio Grande Valley Chapter of the Antique Automobile Club of America. Cars will be displayed along Jackson between 4th and Commerce. The show is free and open to the public from 10:00 a.m. to 2:00 p.m. Registration for the car show will open at 8:00 a.m. on April 9. The first 100 entrants will receive an event T-shirt. In lieu of a monetary entry fee, participants are asked to
bring nonperishable food products for the Harlingen Neighborhood Food Pantry. Hot rods, classic cars, and any other vehicles of interest are welcome. More than 150 cars participated in the show last April. There will be an awards presentation at 2:00 p.m. that day. This year, there will be 13 different award categories, including Best Muscle Car, Antique, Classic, Import, Street Rod, and more. Entrants must be present at 2:00 p.m. to win awards. Children have certain primal fears, such as falling or pain. Other fears come through experience. Children fear what might happen if their parents divorce. Fears change and increase as our worldview expands— challenges in education, a first job, or a family move. Young adults confront military service, marriage, starting a family, and struggling to pay bills and care for children. Older adults face decreased vigor and health concerns, perhaps the loss of a spouse, and the inevitable loneliness. Some fears are legitimate, but others, called phobias, are illogical. The fears are genuine, but the cause seems unreasonable. The curse of such paranoia brings misery to thousands as they struggle to hold on
to reality. Because fear is so common, it is not surprising that the Bible has much to say on the subject. In angelic visitations recorded in scripture, the angel usually begins by announcing, “Fear not” or “Do not be afraid.” Many of the Bible’s finest characters confess to times of being afraid, and some, like Joshua, needed repeated assurances of God’s care, guidance, and protection. The Bible, in 1 John 4:18 (MSG), actually describes fear as “crippling,” but that verse goes on to declare, “Well-formed love banishes fear.” This speaks of the love God demonstrated in Jesus Christ and His sacrificial death on the cross. Jesus often had to encourage His disciples to not be fearful. At the Last Supper, prior to His crucifixion, some of His last words to His followers are those in John 14:1 (NIV 1984:, “Do not let your hearts be troubled. Trust in God; trust also in Me.” He knew all of us would encounter things that could produce fear, but He never wanted us to be controlled by fear. Therefore, He provided a means to cope with or even banish the fear— by surrendering to His perfect love. •

Bringing him and his dilemma of being completely lost and confused to her friends, George, a retired doctor, Jack, a retired history teacher, Phyllis, a local tour-director for Winter Texans, and Frank, owner of a monster truck, they set off to help Soljo find his way home, wherever that may be. Through help from the Mission Chamber, the troop found a 900-year-old tree with magic of its own, sending Soljo home and promising more adventures, yet wary of the previous day’s stalker. Piling out of Frank’s truck, ready for
their next adventure in the powerful, towering tree, the five gazed at the rising sun brilliantly painting the morning sky in a vast array of rainbow hues. Framed in the rich, Kelly green of the sugar cane fields, the vision was breathtaking. As the bald cypress’s massive limbs pointed first one way, then another, up to the sky then stretched across to its neighboring trees down the way, the friends felt beckoned by one of the Valley’s oldest creations. “Come on up! Let’s see what you can discover today. It’s a grand day for adventure in the Rio Grande Valley!” The giant’s husky, laughing voice seemed to ring in their ears. Shaking their heads in amazement after realizing they’d all heard that mysterious sound, they began helping each other into the aged landmark. “Watch out where you go!” called Jack. “We have no idea where each limb might go, and we sure want to make it home to our own beds tonight!” “Ok, then, which way do we go?”
Sadie asked. “Well, we know where those two branches go.” Phyllis pointed to the limbs Jack took yesterday. “The big question is . . . do we go together or split up and cover more branches?” A rough, raspy voice came from behind the tree. “I can tell you where you’re going first.” Motionless, the five watched apprehensively toward the commanding voice. Around the tree base walked the imposing man, from the blue truck, they thought had been scared off the day before. Doing a double-take when they saw him dressed in leather sandals, a loincloth, and a jacket- sized animal skin draped around his shoulders, George asked protectively, “What do you want?” “You are going to take me to see the young man who was here yesterday,” the man stated firmly, yet undeniably, taking control. “It is imperative I talk to him.” “Exactly why do you think we know where he is? And why are you dressed in those ridiculous clothes?” Jack put on his best neutral face. He sensed a shiver run down Sadie’s body next to him and felt fear course through his circle of friends, as well. Was this man going to harm them? What had he seen? “My name is Bejold, and I am from the tribe of the young man at the restaurant with you yesterday. I must find him. He can help me return home.” Five faces stared in utter disbelief at the rugged, lanky man looking up at them with no malice. “I came through the tree over five years ago and thought I would not be able to find my way back until I saw you together yesterday. I long to return home to my wife and family.” “How do we know you are telling us the truth?”
“Who else would know to dress like this and be willing to show themselves to you in this manner?” He held no weapon, no bundle. Standing quietly, arms to his side, he merely peered intently at the others, silently begging them for help. “I cannot understand your wish to return when you have been here so long and know what is available in our world. It’s obvious you are doing well here,” Phyllis was incredulous. “There is much here you will never be able to have there.” “I simply wish to be with my wife, my family, again.” No further arguing was necessary. “I don’t remember the limb to reach home.” Feeling accepted, he began his climb into the tree. “How do I get there?” “When you arrive home, you must protect the tree so others do not discover its gift of time travel.” Jack was forming a plan to protect any other adventurers, a plan he did not wish to carry out. “I wonder if it’s time to put an end to all this. Who knows how many others have made their way to us through this magnificent tree?” “First things first. Let’s get Bejold home.” Sadie pointed to Soljo’s timeline branch. “Bejold, somehow put fear around this tree to assure others won’t climb in it. Will you be able to do that?” His right hand already twinkling brightly as he climbed out on the branch, Bejold nodded, waved, and was gone in a blaze of light. “Do we or don’t we…” Frank quietly put his thoughts into words. “…try out any new limbs . . . before we burn RGV ADVENTURE CONTINUED ON NEXT PAGE >>

My Daddy’s Hand
M y daddy’s right hand resembled
the pincher end of slip-joint pliers. On the end of his right arm, he had only a thumb and a pinkie, but both were of equal size and very strong. One had the barest nub of a remaining fingernail that he kept trimmed down very close to skin surface level. He wasn’t born that way; his twofingered hand was the result of a farm accident when he grabbed a wire holding up the progress of unshelled corn in a mechanical auger while moving it from bin to corn sheller. The obstructing wire wrapped around his hand and literally removed the three fingers between his thumb and pinkie. Resulting surgery removed the damaged knuckles and the two remaining fingertips to the first joint. The surgeon told Daddy the tendons from his missing fingers had been connected to the pinkie, which would make it very strong. And it certainly was. The healed, reconstructed “hand” closely resembled enormous pliers. It is the only right hand I remember my daddy having. He did the usual right-hand things with it. With a pencil nestled in the V of his hand, he could write without difficulty. His writing resembled my grandmother’s: easyto-read, narrow, tall, spikey letters. When he shook hands, his two widely spaced fingers fit nicely into another person’s hand for a normal handshake. He shaved with a straight-edge razor after stropping it on a long, smooth piece of leather that hung by the sink. He could milk a cow, play his violin, or use farm tools. One day while doing chores, he threw his hammer at a

scampering rabbit and killed it “dead as a hammer.” Those two fingers grew very strong and powerful, and as a child, I thought they had special powers. My mother, never one to idealize reality, referred to it as his crippled hand, and I always wished she wouldn’t call it that because I loved my daddy’s odd-looking hand. It was the hand he used to stroke my hair, to tickle me in the ribs, or to affectionately touch a cheek or an arm. That hand drove horses, tractors, and automobiles, wrote checks, and held our hands when we needed assistance. It was also the hand that clamped across our leg just above the knee to give a great squeeze if we got too rambunctious in church. My memories of my daddy always include a mind picture of his hand. It’s too risky to leave this magnificent magic tree out in the open like this.” Violently shaking from the roots, upward, in seconds the tree sent the five flying through the air toward an enormous, round pile of drying needles. “I get it! I get it!” Sadie chuckled at the brilliance of nature as she landed with a spongy thud. “We don’t have to worry about the tree. It knows how to protect itself!” “I vote for a BC adventure, then,” Phyllis’s tour-director spirit filled the group with enthusiasm as they threw needles high in the air. “That’s a Bald Cypress adventure for you.” Standing in a line before the colossal tree, which dwarfed them, they held hands and bowed deeply before the Old One, as if to pay homage to an elderly, wise king. “We humbly request your permission to investigate your branches, your history,” came the appeal, in unison.
Then, a promise: “We will hold your secrets to our death.” Thousands of needles slowly and deliberately rained down upon them, like snow in a blizzard. Clambering back up the Mighty One’s branches, a current of electricity raced through them. At last it was decided which limb would lend itself toward their next adventure. After the morning of discovery, their new plan was firmly set. Carefully, purposefully, they climbed to the highest branch they could reach. year has been a quiet one for the First Responders at Llano Grande, though we did have the Hynes Event Center Grand Opening, The First Responders volunteered to attend the festivities and all of the entertainment in case an emergency might occur during the shows. In the photo, you can see our new vests that we wear when answering emergency calls here in the park. We also wear these vests when attending park functions.

Mexican Noodle Soup – Who knew? Okay, I should not be surprised since
noodles have been around a long time and in all cultures, worldwide. Mexican noodle soup is easy to make, good, and economical. When I ran this soup by my tasters, the ratings were from 8.5 to 9 on a scale of one to ten. That being said, all samples were consumed within seconds! The only complaint was that one taster did not like the shape of the noodles. That is easily fixed by using a noodle shape of your own choice! One recipe I reviewed before creating my own used alphabet noodles – your choice. I really think you will like this tasty soup. Enjoy! Buen apetito! •

Slow-Cooker Peanut Butter Cup Swirl Cake
Mexican Noodle Soup Recipe makes about 8 cups of soup. 6-8 servings.
Ingredients: • ½ cup yellow onion – peeled and finely diced • 2 cloves fresh garlic – minced • 1 – 15 oz. can of fire-roasted tomatoes • 2 Tbsp. olive oil • One 7.05-ounce package vermicelli or Mexican fideo noodles • ½ tsp. cumin • 6 cups (48 ounces) chicken broth • 1 jalapeño pepper – whole • ½ tsp. Mexican oregano • 1 tsp. kosher salt • Juice of one fresh lime • ¼ cup chopped cilantro – more as a garnish Instructions: Peel and chop the onion and mince the garlic ahead of time. Place the can of tomatoes in a blender and puree until smooth. Add a little of the broth to thin out. Put the olive oil in a kettle and add the noodles (broken into 1- to 2-inch pieces). Cook the dry noodles over medium low heat until they start to brown slightly. Add the onion, garlic, and spices and continue to cook until the onions are softened. Add some of the pureed tomatoes to the noodles to stop the browning. Continue to cook a few minutes more. Then add the rest of the tomatoes and the chicken broth. Add the whole jalapeño pepper and bring mixture to a boil. Reduce heat and simmer for about 15 minutes until the noodles are soft. Add lime juice and cilantro when cooking is complete. Serve hot with taco chips, crackers, or tortillas.
Optional: Add a sprinkle of Mexican melting cheese or Monterrey Jack cheese. Randy Hoelscher is a transplanted Texan and half-time RGV resident. Ingredients: • 1 box yellow cake mix with pudding in it (super-moist type) • 1 cup water • 3 eggs • ½ cup creamy peanut butter • 1/3 cup real butter, softened • ½ cup chocolate syrup Topping: • 3 tablespoons creamy peanut butter • 1 cup powdered sugar • 2-3 tablespoons milk • 2 tablespoons chocolate syrup • 20 mini-peanut butter cup candies, unwrapped and cut in half Spray the inside of the slow-cooker with cooking spray. In a large bowl, beat the cake mix, water, eggs, ½ cup peanut butter, and softened butter with an electric mixer. Beat on low for 30 seconds then on medium speed for 2 minutes, scraping the bowl, as needed. Remove 2/3 cup of this batter to a medium bowl and stir in ½ cup chocolate syrup to make chocolate fudge batter. Spoon ½ of the peanut butter batter into the slow cooker followed by all of the chocolate fudge batter. Top with the remaining ½ of peanut butter batter. Swirl with a knife in a circular motion to mix just a bit. Cover and cook on HIGH for around 2 hours or until a toothpick inserted into the center comes out clean. Turn off the cooker and remove the ceramic insert to a cooling rack. Cool 15 minutes. In a medium bowl, whisk the 3 tablespoons of peanut butter with the milk until smooth. Add powdered sugar and milk until smooth. If necessary, gradually add 1 tablespoon additional milk until the glaze is the desired consistency. Spread this glaze over the cake. Then drizzle with the 2 tablespoons of chocolate syrup. Sprinkle the cut candies over the top of the cake. Serve from the pot. NOTE: When baking in a slow cooker, watch to see that no condensation forms inside the lid and drips onto your cake. How and when did your organization begin and who does it serve? Background Big Brothers Big Sisters began in 1904 when Ernest Coulter, a court clerk from New York City, began New York Big Brothers to bring guidance into the lives of children caught up in the juvenile court system. This small organization would later become Big Brothers Big Sisters of America. Today, Big Brothers Big Sisters serves primarily as a preventative program working to keep at-risk children from becoming a statistic. Locally, Big Brothers Big Sisters of South Texas has served the San Antonio community and the Corpus Christi community and is now serving the Rio Grande Valley community.
Mission Statement Big Brothers Big Sisters of South Texas’ mission is to provide children facing adversity with strong and enduring, professionally supported, one-to-one mentoring relationships that change their lives for the better, forever.

• • • RECIPECONNECTION with Executive Chef Bettina Tolin • • • • • • • • Creamy Garlic and Artichoke Soup Serves 4 1 tablespoon pure olive oil 1 tablespoon unsalted butter 2 medium leeks, trimmed, white and tender green parts thinly sliced, rinsed well water and drained 1 celery stalk with leaves, cut into thin slices 3 garlic cloves, minced 1 small russet potato, peeled and small diced 1/4 teaspoon cayenne pepper 1/4 teaspoon ground nutmeg (freshly ground is best, using a zester) 2 (12 1/2-ounce) cans artichoke hearts, drained well and coarsely chopped 4 cups low-sodium chicken or vegetable stock 2 teaspoons fresh lemon juice Salt and freshly ground pepper to taste 1/2 cup heavy cream 1 tablespoon chopped chives or parsley for garnish
In a large pot, add the tablespoon of olive oil and the butter to the soup pot and place over medium heat. Add the leeks and celery. Cook, stirring, about 4 minutes. Add the minced garlic and potato. Cook for 4 additional minutes, stirring often. Lower the heat so the vegetables soften but don’t brown. Add the cayenne and nutmeg; stir. Add the artichokes to the pot along with the stock. Bring to a boil, then lower the heat to maintain a simmer and cook 15 to 20 minutes or until
the vegetables are tender. Puree with an immersion (stick) blender or in batches in a standard blender. Add the lemon juice. Taste for seasoning and add salt and pepper as needed and stir the cream into the soup. Serve the soup hot and garnish with a sprinkle of chives or parsley if you don’t have chives.
