Nearly 600 Runners and Walkers Participate in McAllen Heart Hospital’s Healthy Hearts 5K Special to Welcome Home RGV

had the opportunity to spend a few days in Kansas City, Missouri, to represent the University of Texas in the Big 12 Big Q, a barbecue cookoff in conjunction with the Big 12 basketball tournament. What a fun city! We were blessed with beautiful weather on the day of the cook-off, and I felt right at home with thousands of basketball fans from Iowa, Kansas, and the rest of the home states of the big 12 teams. While our team didn’t win, in basketball or barbecue, it was so much fun to show basketball fans true Texas hospitality. What I found is this--it’s hard to find a bad meal in Kansas City, and the people are so friendly. It’s no wonder so many of you find yourselves right at home in South Texas. While our cuisine packs a little more heat, our locals are just as friendly as your locals are back home. For those of you who are about to head north, we wish you the safest of travels. Please tell your friends and family back home to come see us next season. If you’d like to take marketing materials home with you, please let me know, and we can hook you up! McAllen Heart Hospital’s Healthy Hearts 5K attracted nearly 600 runners and walkers Saturday, February 13, to learn about how to prevent and fight heart disease, the number one killer of men and women in the United States. One hundred percent of the event’s registration fees benefitted the American Heart Association. The Healthy Hearts 5K raised a grand total of $8,638, and three quarters of that will stay within the American Heart Association’s southwest region to support regional research projects and fund local mission-related programs and operations, such as smoke-free campaigns, childhood obesity, physical education initiatives, and community health initiatives. The other 25 percent funds nationwide research and programs such as Go Red for Women and Life’s Simple 7. On average, heart disease claims the lives of 2,250 South Texas residents each year, and stroke claims the lives of 380 residents. But in many cases, heart disease and stroke are preventable. The mission of the American Heart Association in South Texas coincides with the community outreach goals of the McAllen Heart Hospital, this year celebrating 20 years of service to this community. The McAllen Heart Hospital is the first stand-alone cardiovascular hospital in the United States and became part of South Texas Health System in January 2001. Through

advanced technology, innovative programs, and specialized staff and dedicated physicians, the McAllen Heart Hospital saves lives daily and adds quality years to many South Texans’ lives. The McAllen Heart Hospital supports the American Heart Association’s mission to reduce deaths attributable to cardiovascular disease and stroke and to improve the health of all Americans, starting with our children. “We are happy to support Healthy Kids programs, such as Jump Rope for Heart and Hoops for Heart and to lend our venue to raise awareness about the effects of smoking,” said Lance Ames, interim CEO of the McAllen Heart Hospital. “At the McAllen Heart Hospital’s Healthy Hearts 5K, more than 162 smoke-

free petition cards were signed, which will help convince city leaders to pass a smoke-free ordinance at workplaces.” The McAllen Heart Hospital would like to thank all of the physicians, volunteers, and community members who supported this event. New Mission Food Pantry Grateful for Winter Texan Donations Special to Welcome Home RGV

Ortega, director of the Mission Food Pantry, says she can tell when the Winter Texans have gone home because donations from the area RV parks taper off. Parks such as Chimney Park RV Resort in Mission send a regularly scheduled collection of staples, such as rice, beans, flour, peanut butter, and canned meat, as well as the usual canned and packaged goods. The February Chimney collection totaled over 500 pounds. RV parks also hold fundraisers, not only during the Christmas holidays but throughout the year. Chimney Park recently raised over $900 with card bingo and pancake breakfast events. Ortega says she is very pleased with the new, much larger facility in the City of Mission, Social Support Center at 115 South Mayberry Street, which just opened February 23. The over 2,000-square-foot room, with the use of a freezer, is a big improvement over a space the size of a garage in the former Shary Golf Course office. There are plans to begin accepting clean, usable clothing. The room

could also use more shelving and tables, and flatbed carts to receive the donations. With extended hours of 8 a.m. to 5 p.m. Monday through Friday, they expect to help many more people. Ortega volunteered her time at the old location and was the fulltime social services director at Spear Memorial Library. Now she is the full-time Food Pantry director with one part-time helper and some rotating volunteers. Volunteers must

pass a background check. Unlike municipal food banks with repeat clients, Mission Food Pantry is set up to serve people with immediate emergency food needs due to job loss, illness, being placed on the food stamp waiting list, a fire, or other tragedies. In 1987, a group of women saw the need and organized the independent food bank through several churches. It was originally located in the county warehouse. Today, a group of

Santa Maria ISD will be holding a ribbon cutting for their new community garden. The Food Bank RGV has been giving the parental involvement group gardening classes. The Food Bank RGV will also be helping with installation, seed donations, and continuing technical support. United Healthcare is funding the school garden, consisting of six raised beds and row cropping. Vegetables that will be grown include beets, onions, cucumbers, cilantro, peppers, and many more.

Businesses and charitable organizations are also involved throughout the year. Monetary donations are used to pay for discounted food from local grocery stores. Ortega noted that Foy’s Supermarket has been very helpful. Even though things are looking brighter for the Mission Food Pantry with its new location and extended hours, there is still work to be done and a neverending need for support. RGV 1st Responder Meet at ERMC for Final Meeting of the Season Special to Welcome Home RGV

10, RGV 1st Responders met at Edinburg Regional Medical Center in the Texas Room from 4:00 6:00 p.m., with a light meal provided by Sweet Temptations, compliments of our hosts, South Texas Health System. We were welcomed by Mr. Geraldo Ramos, director of the new Wound Care Program, who discussed the exciting new plans for South Texas Health System with regards to the new Healogic Wound Care Facility. This facility includes hyperbaric chambers to promote the ultimate healing in a pressurized, oxygenated atmosphere for advanced wound treatment. 1st Responders also learned about the new South Texas Metabolic and Diabetic Institute, located at 5416 S. Jackson, with Dr Yazji providing specialized treatment for diabetes, metabolic disorders, and obesity. They will provide comprehensive education and wellness programs, in addition to sleep studies, as sleep is a common problem associated with these disorders. The Women’s Center was mentioned, as well, as one of the new additions to ERMC and the attached children’s hospital. Cards were provided for discounted bone density screening and digital mammograms at ERMC. (For more information on these discounts or to pre-register, please call 956-3882190.) A tour of the new ERMC VIP Room was very interesting and is a new concept many medical facilities are including in their services. The room was nicely decorated and comfortably decorated with a largescreen television and an upgraded bathroom, plus a sleeper lounger for spouses to join the patient overnight. They also offer special services like flowers and specialized menus. These would be private pay, over the amount covered by insurance, with a one-time charge, no matter the length of stay, of approximately $200. Unfortunately, a patient needed the MRI just before our ERMC tour began of that area. Mr. Sixto Garza, director of radiology, presented information on MRI technology, explaining the difference between open MRIs, shaped like a letter “C” with a lesser magnetic strength of .25 to.5, and closed MRIs with a tesla of 1.5. ERMC has the highest level MRI at 3 tesla, which provides a six-timesstronger magnetic field for a much better quality picture and resolution. This is the only one of this strength South of San Antonio and Corpus Christi, with a larger opening than many and scanning further across the

body for those with claustrophobia issues. He continued to discuss the differences between CT scans and other diagnostic radiology available at ERMC and other STHS facilities, answering questions from those present. Additional information on radiology and the screenings provided at ERMC can be answered by calling ERMC Radiology at 956-388-6730. Mario del Pino, MD, presented a multi-media program about da Vinci Xi robotic surgery technology, at ERMC. Robotics is the next generation of surgery in the fields of general surgery, urology, and gynecology. Surgery can now be done with a much smaller incision, making a BIG difference in recovery following surgery due to the minimally invasive techniques used. ERMC’s da Vince Xi offers crystal-clear, 3D, high-definition visualization, small, thin robotic arms, and a greater range of motion over previous laproscopic procedures. The new technology is safer and boasts a more convenient experience with less scarring and blood loss and a much faster recovery. Conventional surgery required physicians to use large incisions, while these new procedures, taught by Dr. Pino as a proctor, utilize advanced precision that enables surgeons to complete more complex urology procedures, including prostatectomy, partial nephrectomy, and cystectomy. In the area of gynecology the new robotic surgery can be used for hysterectomy, oophorectomy, endometriosis resection, sacrocolpopexy, and ovarian cystectomy. Dan Torres, director of rehab at Edinburg Regional Rehabilitation, shared the new state-of-the-art rehabilitation unit, which will be completed soon. hroughout the month of March, Laguna Art League member Pat McGrath Avery will be displaying her photography at the Port Isabel Library. An author and photographer, Pat focuses on nature photography, especially the beautiful birds that live in or visit the Rio Grande Valley. In the 1970s, she brought her parents down for the winter and fell in love with the Texas coast. Now she is living her dream and spending her days with her fingers on her keyboard or with her camera in hand. “The Rio Grande Valley is a photographer’s dream,” Pat said. “Diversity, natural beauty, and culture blend into a unique setting. It’s easy to fall in love with the subjects I find. I am equally entranced by pelicans, roseate spoonbills, prickly pear cacti, and yucca in bloom, and shrimp boats.” Pat lived in Laguna Vista for 10 years before her recent move to Brownsville. She frequents the Island, Boca Chica Beach, the shrimp boatyards, and the area wildlife refuges, forever in search of

the perfect shot. Some of her favorite pelican and spoonbill shots will be among the photographs featured in the Port Isabel Library during the month of March. Rio Grande Valley is rich in history, a fact that lends to stories being passed down through generations. Many of these stories involve the South Texas Wildlife, making the critters that call this area home even more fascinating. Join the Edinburg Scenic Wetlands and World Birding Center Friday, March 18, from 6:00-7:00 p.m. for a special presentation by Becky Reyes. Reyes has worked with the Birding Center as an environmental educator for more than three-years. She received her master’s degree in interdisciplinary studies with a concentration in anthropology and sub-fields in biology and history at the University of Texas PanAmerican. During graduate school, she traveled to Peru to do fieldwork research for her thesis on medicinal plants. Reyes recently taught an Environmental Anthropology course at the University of Texas-Rio Grande Valley and currently serves as the education chair for the South Texas Border Chapter Texas Master Naturalists. “Folklore of South Texas Wildlife” is part of EWBC’s monthly “Friday

Seniors Living with Zika Virus The world has learned in recent

months of a frightening epidemic virus named Zika. For many of us past childbearing age, the warnings that pregnant women are at risk for deformed children seem like a distant concern. But actually, Zika is a potentially nightmarish problem for older people here in Texas. For most adults, Zika (named for the forest where it was discovered in Uganda) causes little more than a mild flu-like condition that resolves itself in a few days. But for people with serious underlying disease, Zika can put them at serious risk for severe complications. It’s not altogether unlike the same risks seniors face in contracting the flu. What’s more, a significant number of Zika patients have demonstrated a generally transient neurological condition called Guillain-Barré syndrome, which can cause varying degrees of paralysis lasting for varied durations. Several deaths have been reported, but at the time of this report, the full extent of the mortality is not understood. So what should older people do? First, it’s important to realize that the virus is spread by various species of the Aedes mosquito. Although the mosquito can be found in the United States, it is not typically found in large numbers and is generally limited to southern states. The mosquito generally bites in the daytime, and, as with most mosquitoes, it is the female that bites and causes the transmission of the virus to the host. Presently, there is no vaccine or approved treatment. The best prevention is control of the mosquito population. That means home and business owners should remove standing water from their properties, recognizing that even small amounts

of standing water can rapidly become a mosquito breeding ground. Prudent use of mosquito repellant is advisable, and careful spraying around a home for mosquitoes should be done. Do-it-yourself advocates can spray effectively, but it makes sense to consult with experts, such as an agriculture extension agent or other professional, before spraying. And above all, follow the application instructions with care. Others may prefer to hire a pest control company to conduct scheduled sprayings. Since there is no vaccine or approved treatment, seniors should keep in touch with their health team and stay abreast of developments about the Zika virus. The news media is doing a good job of informing the public about this important health issue. But for the absolute latest information, the Centers for Disease Control (CDC) has a link to information on their web site. It can be found at http://www.cdc.gov/zika/ index.html. •

Llano Grande Resort and Country Club’s Art League had their annual Art Show and Sale Sunday, March 6, from 1:00-4:00 p.m. at their art studio. A total of 109 paintings were submitted by approximately 50 League members and consisted of watercolor, oil, acrylic, pencil, charcoal, and pastel works. Three hundred people from the area attended the event. Park residents have the opportunity to join the league for $25, giving them access to beginning to advanced art classes. Non-residents of the park can attend classes for a nominal fee. Our league has our own studio building, and we have several fundraisers to help with upkeep and supplies. •

The Fun N Sun RV resort and its

Residents Advisory Committee (RAC) are saving lives one front door at a time. Working in conjunction with the online Vial of Life Project, over the last several weeks, RAC has assembled and distributed over 600 Vial of Life packets to park residents. Each packet consists of a vital medical information form to be filled out, a sticker to be placed on your front door telling the emergency personnel (EMTs) or First Responders where to find your medical information, and a plastic bag with a matching sticker on it. The medical form is placed in the bag and attached to the refrigerator. While this program is not new, it has been several years since anything of this nature has been done at Fun N Sun, and hundreds of people knew nothing about it. The first few minutes after the EMTs arrive are crucial. The patient may be disoriented or unconscious, and friends or family are often too upset to easily remember vital information.

The theme for the parade this year was “All Stars and Good Sports.” Trophy Gardens RV Resort stole the show, winning 1st Place in the Senior Division. Encouragement to enter the parade was provided by the Trophy referees, Bruce and Gail Field. The Trophy banner was carried by Cowboy Pastor Darrel Hardy and his wife, Winonna. Our Senior Olympic winners marched while proudly displaying their medals. Participants from pickle ball, shuffle board, bike riders, fishing, baseball, Nascar, and the Vikings, as well as our line dancers, joined in the parade. The line dancers, ranging in age from 51 to 92, led the Trophy

Sports, dancing along to Good Ride Cowboy by Garth Brooks. When they came to the judges, the line dancers performed to Cowboy Boogie by Randy Travis. They rightfully took credit for the Trophy Gardens win because of their fantastic performance. A great time was had by all participants. •

Dream Valley Ranch Holds 1st Annual Trivia Contest Special to Welcome Home RGV

March 8, we held our 1st Annual

Trivia Contest. Seven teams, each with four members, competed against each other in a double-elimination tournament. It was required that all teams come up with an interesting team name. They were asked questions from the original Trivial Pursuit game that came out in 1981. Questions were asked, and the first team that hit their buzzer got to answer first. If they gave an incorrect answer, the other team then had a chance to answer. Teams were given two points for a correct answer. The first team to reach 14 points moved to the upper bracket, while the other team moved to the lower bracket. Once a team lost

two rounds, they were eliminated. The seven teams were 1. The Amazing Four 2. IDK 3. Super Sexy Classy Broads 4. Three Hens and a Rooster 5. CRS 6. 49 + or - , and 7. The Ringers. We had a large number of spectators, and everyone had a great night. This will be an event we will do again and again in the years to come. team of volunteers, successfully hosted the 8th Annual Bocce Tournament at Southern Comfort Resort in Weslaco March 5. There were 32 teams of four entered in the tournament. In addition to the 128 participants, an additional 100 people enjoyed the day cheering on their favorite teams and enjoying the feast provided all day by Ugo and his cooking team. The event winners were Team De’Bocce’ry, who won a close battle against Team Bocce Buddies. The second place event winners were The B Stingers, defeating Team B2G2. The Nice Try award went to Team Field of Dreams.

The Greatest Gift of All

In our lives, we receive a lot of gifts, we give them and we receive them all of our lives. We give them at Christmas time, for birthdays, and on Mother’s Day and Father’s Day. Some of us have the gift of playing sports and building houses, so you see the gifts are always there. But have you ever thought about the best gift you can ever receive? This gift is a free gift to all who will receive it. It has been offered to the entire world, and that gift is available today. That gift is eternal life through Jesus Christ our Lord. Have you had someone offer you a gift--they were willing to give it to you, but when does it become your gift? It becomes your gift when you accept it. The gift of salvation has been offered for over 2,000 years. But people are still dying in their sins. You see, they hear about the gift, they can see others receive the gift and they rejoice, but they never received it for themselves. We all know what wages are.

They are a payment for the work we did. So sin has its payment, and that payment is death. All who will not confess their sins will one day receive payment, and that payment will separate them from a Holy God forever. But God, who loves us, gave us the gift that is better than any gift we can give or receive, and that gift is eternal life through Jesus our Lord. All of us like to receive gifts, but there is one gift that when you receive it will last not only today but tomorrow and forever. That gift is eternal life. Do you have that gift today? You can. Jesus offered it when He died for us on the cross, He offered, but you must take it and let it be your gift. All can have a free gift by asking Jesus to forgive us of our sins and invite Him into our hearts and save us. Will you accept what Jesus offered to all before it is too late? God’s plan is salvation to all who will accept Jesus, His Son, and receive the gift of eternal life. •

Serves 10 • 1 (20 oz.) can pineapple chunks, reserve juice • Wooden skewers • 1 apple, unpeeled, cored, and cut into chunks • 1 lemon, sliced and quartered • 1 orange, sliced and quartered

• 1 (750 ml.) bottle Burgundy wine • 1 (46 oz.) can pineapple juice • ¼ cup brandy • ¼ cup sugar

Skewer drained pineapple chunks, apple chunks, lemon, and orange slices onto wooden picks in an assorted fashion. Combine reserved pineapple juice, Burgundy, canned pineapple juice, brandy, and sugar in a container. Stir well. Add skewered fruit kabobs. Refrigerate at least 1 hour. Serve the drinks over ice with a fruit kabob in each glass. you ever seen a Guayacán bloom? Do you even want to? The answer to the second question should be a resounding yes! The tree is beautiful, and it’s putting on its full purple and yellow colors for one month only - now. There are half a dozen Guayacán (Guaiacum angustifolium) blooming around Ebony Loop in Harlingen’s Hugh Ramsey Nature Park. March 25 and April 1 are the last two guided Friday nature walks until you return to the Valley next winter. Then, though, you’ll only get to see the tree’s seed capsules. Guayacán, also called soapbush, is a Valley native. The root bark was used as soap, and according to stories, colors didn’t fade when using the “soap.” Root extracts were used to treat various diseases. The flowers are attractive to bees and are a very good honey source. The tree is slow growing but interesting in all seasons. It is evergreen in winter and fragrant when blooming, and heart-shaped fruit capsules open in autumn to

reveal two vivid, red-coated, beanlike seeds. Something to think about planting next winter outside your RV dining table window. The wood is very hard and dense. If you find a knife with a handle made from Guayacán, you should consider it a great find. The tree is a host plant for the Lyside Sulphur butterfly, the pretty little yellow butterflies whose northern range is the Rio Grande Valley. Come see what other native beauties are blooming in the park during these free, two-hour guided tours by experts from the Rio Grande Valley Chapter Texas Master Naturalist organization. Tours begin in the parking lot at 9:00 a.m. The walk is around Ebony Loop, an easy quarter mile on a level caliche trail. Hugh Ramsey Nature Park is at 1000 South 499, just two miles south of Harlingen’s Valley International Airport. Reservations are encouraged in order to have enough guides for an optimum experience. When I go to a Mexican restaurant and have a choice between refried beans

or Charro beans, I frequently choose to get a bowl of Charro beans. Charro beans are named for the traditional Mexican horsemen or Charros. The key ingredient in Charro beans are dried pinto beans, which, translated, means “spotted beans” or “speckled beans.” According to Wikipedia, Pinto beans are the most popular bean in the United States and Northwestern Mexico and were once a food staple, especially during the winter months. Charro beans most often include beans that are stewed with bacon, onions, garlic, and other ingredients, such as peppers, tomatoes, cilantro, ham, sausage, chorizo, potatoes, etc. Charro beans are served warm, in a bowl, and have a somewhat thick, soupy consistency. Charro beans (Frijoles Charros – this variation is known as drunken beans or Frijoles Borrachos) because it contains some beer. Enjoy! Buen apetito! •

Charro Beans

Makes 4-6 servings, depending on appetite • ½ lb. dried pinto beans • 3 strips of bacon, chopped into ½-inch pieces • 1 clove of fresh garlic – minced • 2 Roma tomatoes – seeded and diced • ½ white onion – peeled and chopped • ½ green (bell) pepper – seeded and diced • 6 ounces of beer – cook’s choice • 2 Tbsp. fresh, chopped cilantro • 1 fresh jalapeno pepper – seeds and web – diced • 1 quart water – or enough to cover beans by 1 inch • Kosher salt and fresh black pepper – to taste Directions: Add pinto beans to a pot of cold water and soak overnight. Pick them over and remove foreign material or damaged beans. Add beans to a pot of water so the beans are covered by an inch of water. Boil gently for 1 to 1 ½ hours until the beans are tender but not mushy. Drain the beans and reserve the liquid. While the beans are boiling, fry the bacon until almost crisp and remove from the pan. Save the fat. Add onions to the bacon fat and fry until tender and slightly browned. Add garlic, tomato, and bell and jalapeno peppers to bacon fat and cook until tender. Return bacon to pan, add beer, and cook until the liquid is almost gone. Place the cooked beans in a large pot. Add the fried bacon, onion, pepper mixture, and cilantro, as well as enough of the reserved liquid to just cover the beans. Heat mixture until hot. Salt and pepper to taste. Optional – puree a cup or more of the bean mixture in a blender and return to the pot to make the beans thicker. Serve as a side dish with tortillas or to complement any meal. Hot Fudge Sundae Cake • 1 cup all-purpose flour • ½ cup white sugar • ¼ cup PLUS 2 tablespoons unsweetened baking cocoa • 2 teaspoons baking powder • ½ teaspoon salt • ½ cup milk (whole milk is best) • 2 tablespoons vegetable oil • 1 teaspoon real Mexican vanilla • ½ cup chopped walnuts • ¾ cup packed brown sugar • 1 ½ cup very hot water Spray the insides of a 3-quart slow cooker with cooking spray. Mix the flour, white sugar, 2 tablespoons of the cocoa, baking powder, and salt in a medium bowl. Stir in the milk, oil, and vanilla until smooth. Stir in the walnuts. Spread this batter evenly in the slow cooker. Mix the brown sugar and ¼ cup cocoa in a small bowl. Stir in the hot water until smooth. Then pour this evenly over the batter in the slow cooker. Cover and cook on HIGH for 2- 2 ½ hours or until a toothpick inserted into the center comes out clean. Turn cooker off and let the cake stand, uncovered, for 30-40 minutes before serving. Spoon the warm cake into serving dishes with some of the sauce on top. NOTE: If you have a new slow cooker, they cook hotter than the older ones, so watch the cake so it doesn’t dry out or burn. At this writing, my car is 16 years

old, has 84,000 miles on it, and is in pristine condition, except for a little rip in the driver’s seat, which I have patched with strapping tape. By the Blue Book it is probably worth $250.00, but in the years 2000 and 2001, General Motors did something right when they built the Buick Park Avenue DLX. Garage mechanics have been known to say to me on more than one occasion, “Lady, if you ever want to sell your car, would you notify me?” My car is in excellent running order, loaded with facilitating features too numerous to mention, plus some I have failed to activate. It has energy with its fuel injection feature and rides like a dream. So how nice is that? After a family member drove this dream on wheels, it was suggested that I have my brakes checked and some routine preventive maintenance. My response was, “But I do all that!” “Your brakes are spongy,” I was told. “Spongy?” I immediately began thinking of my mom’s yellow cake. Spongy? How sweet! (No pun intended.) I am teachable, and I take advice, so I promptly drove to a brake place on Business 83 and came to a stop alongside a building with three open bay doors. Inside were cars that looked worse off than mine. A man in coveralls extracted his upper half from under the hood of a car and approached on the driver’s side. I lowered the window; he bent down and politely asked, “May I help you, Ma’am?” “I have been told my brakes are spongy.” “That happens. Well, are they workin’ at all?” he asked. “Well, my car stops when I stomp on them.” “How hard do you have to stomp?” he asked. “It’s just a garden variety stomp, and the car and I come to a stop at the same time. That giggle had now reached the level of my throat. I was having trouble keeping from laughing out loud at all the foolish thoughts entering my head. But I told the nice man to go ahead and fix those things that needed fixing. I had to turn my head away because I was fighting a horse laugh. Then I said, “By the way, would you check my oil? I just noticed I may be due for a change. (Another wave of giggles was welling up.) “Be glad to. I will check the dipstick in a minute.” Because I was in giddy mode, my laughing ears heard “lipstick,” not dipstick. SHOES, PADS, LINERS, AND LIPSTICK!! My brain was out of control and so was my laugh reflex. So I let it go and burst out laughing. As I handed him my car keys, I received a quizzical look, but he said nothing. I handed him a card with my phone number on it and told him to call me when my car was ready. He nodded and turned away. About that time, my ride drove up to take me home. My car works perfectly now. I am never going to sell my car; I will keep it forever. My car and I are sisters under the hood. I could never sell it; it would be like selling one of my children. designed by internationally renowned golf course designer Dave Bennett in 1983. It showcases a combination of water hazards, sand traps, and creeks intertwined in its layout amongst the homes in Plantation Resort. The course was purchased by the City of Pharr in March of 1999. They immediately started to update the course and have continued each year by adding cart trails and irrigation and totally renewing their greens. Tierra Del Sol has a large driving range that has been updated with new and accurate distance markers, as well as a putting green for your use. The course has 25 sand traps and has water that comes into play on six holes. The fairways are 419 Bermuda grass, while the greens are 328 Bermuda grass. The course has four sets of tees. The blue tees are 6827 yards rated for men at 72.0/118, the white tees are 6266 yards rated for men at 69.9/113, the gold tees are 5820 yards rated for men at 69.0/110, and the red tees are 5252 rated for women at 70.1/114.

The course has a complete Pro Shop with golf attire and golf equipment. The grill at the course offers breakfast, including tacos, oatmeal, and other breakfast plates for the early golfers and then the classic hamburgers, Monterey chicken plates, and other dishes later in the day. The facility also has a banquet hall that can be reserved for weddings, business meetings, and other functions. The course is located at 700 E. Hall Acres Road in Pharr and is open to the public. The Rio Grande Valley is blessed with great weather, as well as great golf courses. There is a course for every player, from beginners to accomplished golfers. There are more than twenty 18hole courses throughout the Valley and almost as many nine-hole courses. Orange Couscous Salad 1/3 cup shelled pistachios, toasted and coarsely chopped 1 cup boiling water 1 cup couscous 1 cup shredded cooked rotisserie chicken 1 navel orange, peeled and coarsely chopped 2 tablespoons chopped fresh mint leaves 2 teaspoons extra-virgin olive oil 2 teaspoons red-wine vinegar

In a small sauté pan, place pistachios over medium low heat. Toast pistachios for 2 – 3 minutes, shaking pan frequently to avoid burning them. Set aside.

In a medium bowl, combine shredded chicken, pistachios, orange, mint, oil and vinegar. Season to taste with salt and pepper.

In a small pot, pour 1 cup boiling water over couscous. Cover tightly and let sit until tender, 5 minutes. Fluff with a fork.

Toss couscous with mixture and enjoy!
