The 13th annual Smokin’ on the
Rio was held Saturday, February 27, at the Mercedes Livestock Showgrounds. Smokin’ on the Rio was established in 2004, and 100 percent of the proceeds go to support youth in agriculture. I’ve been involved in one way or another since 2005 – my husband’s barbecue team, the Smashed Potatoes, have competed since the 2nd Annual event in 2005. I’ve been on the planning committee for the last six years, too, and it is an event that is near and dear to my heart. Smokin’ on the Rio is planned solely by volunteers, and every year the event grows. Last year, we boasted approximately 180 teams, while this year we had over 250 teams vying for the Texas State Championship title. While our team didn’t win in the primary categories, we are thrilled that the one trophy we took away was 3rd place in the Kid’s Q – for competitors 12 years and younger. Congratulations to Lowrie Martin of McAllen, daughter of Smashed Potatoes members Teddy and Kelsey Martin. As with many hobbies, barbecuing allows us to make close friends with fellow cookers. For as long as we can
remember, the Nombre Callate team has cooked right next to us. Allen Gray (many of you may know his wife, Amie, who works in our office) and Lance Seal are more like family than fellow cookers. Even though our team didn’t place, we couldn’t be prouder that they came home with 7th place in the category of chicken. I’d like to thank everyone who
stopped by our campsite to say hello. Hopefully you were able to sample some of our cooking, and if not, there’s always next year! Senior Texan Softball League: Life is a Game. Softball is Serious. by Cynthia Baldwin
The Senior Texan Softball League plays at the Westside Park at 1000 S. Ware Road, McAllen (across from the McAllen Convention Center)
It isn’t uncommon when watching
the Senior Texan Softball League to hear teammates cry out to each other, “You okay? Okay. Need a runner?” For these athletes, Jimmy Dugan’s assertion that there’s no crying in baseball takes on a different connotation. In this league, meant for players 55 years and older, there are two first bases and two home bases. These players aren’t fools; they know what it takes to have fun, play ball, and not get permanently injured. For players who aren’t as able-bodied as they once were, there’s an option to have a pinch runner round the bases for them. Players and fans seem to have a jovial, yet grateful, attitude about the sport. One of the mottos for the league is “Life is a game, softball is serious.” Another oft-repeated motto is “You don’t quit playing when you get old; you get old by not playing.” Ron Atkins, 72, originally from Wisconsin, has been with the league for five years and is currently playing in the C division. Atkins takes on a dual role as a player and an umpire, although he admits a preference for

The Senior Texan Softball League is celebrating its 22nd year of games. The league hosts its competitions at West Side Park, located at 1000 S.
Ware Road in McAllen. According to director Ed Martens, the average age is 72, while the oldest is 89 years young. Joe Baum, 88, who hails from Maine and lives at Chimney RV Park in Mission during the season, said he “would rather play ball than eat.” He jokes that as part of the C division,

his favorite part of playing softball is trying to hit the ball. Baum has enjoyed playing in the league for 12 years. Players such as Baum, and fans like Cindy Boggs, who comes out to watch her husband play each week, look forward to the play-off games for each division, ending the season with the annual United States vs. Canada games. This year, the U.S. vs. Canada games were held Tuesday, March 8, at West Side Park. These games usually draw a crowd of 250-plus fans, who all have flags, banners and noisemakers to support their teams. Martens said players come from at least 27 different states and various Canadian provinces. Martens, the director of the league since its founding, mentioned that

To solve these puzzles, visitors must use creative thinking and problemsolving strategies, such as looking for patterns, thinking ahead, setting aside preconceived ideas, and looking at problems from different perspectives. Music, Murder, Nostalgia and Hipster Funk by Anita Westervelt
As a connoisseur of the cozy murder
mystery genre, I usually fall in love with the characters first and then the author. In the case of The Big Rewind, by Libby Cudmore, I fell in love with the author first. From page one, I loved the feel and cadence of her sentences, the fast pace -- the way she constructs each minimalist but descriptive sentence power-packed with meaning. The book is fast-paced. The plot is clever, interesting, the mystery not easily solved by the reader. Each subplot moves the mystery forward without the main plot wandering. My admiration for the author’s imagination grew with each page. Not your usual murder mystery, The Big Rewind has a somewhat 1930’s noir fast-forwarded to the age of pop lingo and four decades of music greats. It’s a nostalgic view of a musically romantic era neatly mixed into hip social media. Remember mix tapes? Young people would put songs on a cassette that had meaning to them and give it to their BFs and GFs - a romantic thing. So, when a mix tape erroneously ends up in our protagonist’s mailbox, Jett Bennett delivers it to her downstairs neighbor, Kit-Kat, the rightful owner, and discovers her dead on the kitchen floor, her head bashed in with a rolling pin. Of course the wrong person is going to be charged with murder because he’s scarpered, and thus begins the mystery and detection through the streets, cafes, record stores, vegan bakeries, rent-controlled apartments, and basement nightclubs of New York City. It’s no wonder The Big Rewind is stocked at the Rock and Roll Hall of Fame in Cleveland, Ohio. Cudmore’s psychological meanings and descriptions of oldies add a new dimension to those you may have received on a mix tape or two. Cudmore writes with a fantastical sense of upbeat and funky style--or should that properly be called snarky, now? Gone are tried and true similes; Ms. Cudmore brings her own wit and

fun with her use of refreshing ones. I frequently found myself laughing out loud at the sheer ingenuity. “I showered with tiny shampoos that smelled like fairy puke!” Where does she come up with them? I briefly thought the author should have supplied a glossary, then realized I’m more in tune with original 1930s and 1940s British cozies. I quickly took the opportunity to progress to a new age through Cudmore’s musings enriching my knowledge of music, contemporary subculture, and hipsterology. Hipster is not an old hippy, as I imagined -- plug the word into an Internet search engine for an urban dictionary. Check it out; you might be one, too. That alone would make a fun game at the RV park’s community hall. Happily, Kindle’s dictionary provided definitions to other languages for those of us not up to speed. I continued to be impressed throughout the book with Cudmore’s street, culture, music, and iconic knowledge, as well as with her extensive vocabulary. One wonders how one so young has gleaned so much retro and current trends to be able to intertwine them seamlessly into one novel. I haven’t been to NYC in years but felt Cudmore’s descriptions offered a great sense of place, giving me a vicarious break from the Valley. I felt I was on the subway with her, in the apartments, the streets, and coffee houses. Her characterizations are a hoot and perfectly believable in a city that claims to be a melting pot. Libby Cudmore is an author to watch! •

Texas Citrus Guacamole Makes 3 cups
• 1 Texas Rio Star Grapefruit • 2 large ripe avocados • 2-3 Tablespoons minced purple onion • 2 Tablespoons sour cream • ½ teaspoon garlic powder • ½ teaspoon salt Peel and section grapefruit, reserving 2 tablespoons of its juice. Measure 1 cup sections; cut into bite-sized pieces and set aside. Peel avocado; mash with a fork until somewhat smooth, leaving some small chunks. Add the remaining ingredients and stir well. Gently fold in grapefruit juice and sections. Serve immediately or cover and chill until serving time.

Why we are “Winter Texans” by Wilma Jacobs
For the past ten years, my husband
Jack and I have been wintering in the Rio Grande Valley (RGV) of south Texas. We are called “Winter Texans” as opposed to the “Snowbirds” in Florida, Arizona and California. As new retirees, we first visited many southern states, wandering the roads with our motor home, from Florida to California. When we found Texas, it immediately felt like home. We are now two of the thousands of retired Canadians who make the trip to the RGV each winter – some RV parks / Mobile home resorts here are 60 or more percent Canadian residents. The prices of food, accommodation and entertainment are generally much lower in Texas than other southern states, it is less crowded, the weather is usually wonderful (mid-seventies warm and windy but with little to no humidity in the winter) – and the people are very friendly and relaxed. They LOVE Winter Texans and advertise it everywhere with “welcome back” on billboards and store signs. There is even a “Welcome Back Winter Texans” regular newsmagazine. Another real positive for us is the proximity to Mexico, where we thoroughly enjoy the Latino culture.
The Mexican people – contrary to what we read in the mass media about the drug cartels – are warm, fun loving, and God-fearing. They offer tasty food in their many restaurants, lively entertainment and colourful handmade crafts – all at very low prices. Many Winter Texans volunteer across the border, building homes and staffing the free medical clinic in the small town just south of us – a town that we feel quite safe visiting on a regular basis. We also are happy to have access to the Gulf beaches of South Padre Island and enjoy the fresh-caught seafood from that area. Of course, Texas is world-renowned for chilli cook-offs and BBQ contests (smoked, not grilled) - so there is always a lot to eat. Our Resort has many citrus trees so you can pick fresh grapefruit, limes, lemons and oranges right out of your own backyard. And the Valley grows many other vegetables and fruits (onions, cabbages, cauliflower, lettuce, melons, watermelon, strawberries) – often three crops a year – which are fresh and inexpensive to buy. If you like rodeos and stock shows, and bloodless bull fighting, south Texas can entertain you. But, by far,
Texas is a place for music – from country-western to Mariachi – you’ll find live music almost everywhere in the numerous cafes and bars where you can dance, and enjoy inexpensive beer, margaritas, tequila and wine. If you play a guitar, bring it along, as there are jam sessions all over the Valley every week. Karaoke is also a popular musical activity. Gated-communities like ours (Victoria Palms Resort) offer an almost unlimited number of activities (pickle ball, bocce ball, aqua-fit, bike clubs, car racing, stained glass, wood carving, ceramics, Spanish classes, book club, golf leagues, art classes, line dancing, country-western dancing, ballroom dancing, sewing, quilting, computer classes, tennis, poker, too many card games to mention, jam sessions, live entertainment in our ballroom, darts, bingo, wood working, karaoke, billiards, shuffle board, horse shoes – and so on). Add the ever-present happy hours, ice-cream socials, pool parties and potluck suppers, and you can fill up your calendar very quickly. Those are some of the many reasons why we have invested in a mobile home, western boots and hats – and why we keep coming back to Texas. •

How and when did your organization begin and who does it serve? The Junior League of McAllen, Inc. was founded in 1938 and became affiliated with The Association of Junior Leagues International Inc. (AJLI) in 1985. The Junior League of McAllen, Inc. envisions significantly improving the quality of life of the children and youth of our community by preserving the innocence of childhood, encouraging responsibility, and promoting a safe environment. What kind of donations does your nonprofit organization need? The Junior League of McAllen, Inc. seeks monetary donations. In the past, this great team of women has worked together to raise funds and bring positive change to our community. From the earliest inaugural charity ball, which raised money to purchase the first oxygen tank for the hospital, to the La Piñata and Some Like it Hot cookbook sales, which helped to establish both the McAllen Public Library and the International Museum of Arts & Sciences (IMAS), to the legacy of Dias Festivos, which helped to provide 27 years of funding to many projects, such as the Comfort House for children’s hospice care, RioScape at IMAS, and the No Boundaries Playground--JLM has worked tirelessly to fulfill its mission. As times have changed, so have our fundraising efforts, but our goal to improve the community for the children who live here has not. Most recently, each year we host the Children’s Arts & Literacy Festival (CALF) and Kids in the Kitchen. CALF is a free cultural, artistic and literary event aimed at the children of the community and their families. Attendees have the opportunity to tour the exhibits at the museum, attend storytelling events, participate in arts and crafts, watch cultural music and dance performances, and enjoy many
other experiences. CALF impacts over 2,000 children each year. Kids in the Kitchen empowers youth to make healthy lifestyle choices and to help reverse the growth of childhood obesity and its associated health issues. Valley Ranch hosted their first Ladies Tea February 11. There were 129 in attendance, including three very well-dressed, somewhat masculine “ladies.” These three particular “ladies” met the other attending ladies at the door and escorted them to their tables. They also helped serve the delicious finger sandwiches, wonderful sweet desserts, and tea. They were quite entertaining, and everyone enjoyed lots of laughs and even had pictures taken with these special “ladies.” Doris Englin and Dorothea Coffron both wore their wedding dresses. Doris was married 59 years ago, and her dress still fits her beautifully.
Dorothea’s dress had lace that came from her grandmother’s dress from 1912, restyled in 1915. Dorothea wore the dress in 2013 when she got married. Most of the ladies attending were dressed in spring attire and wore lovely hats. There was a table displaying a large assortment of tea pots owned by many of the park residents. Door prize drawings were held, and each winner received a basket with many wonderful gifts, which were delivered to the winners by one of our three “special” ladies. Enchanted Valley Ranch hopes to make this Ladies Tea an annual event. •

someone you corresponded with using a pen and paper. Today the term is taking on a different meaning, as defined by people associated with the Tip O’ Texas RV Resort. Marge Johnson, a Winter Texan from Minnesota, has discovered the Wood Shop at The Tip this year and has started using a lathe to make individually crafted pens from various woods. She has found the people in the Wood Shop to be very helpful and supportive. Bonnie Lynch and Larry Dallas, both residents of Tip O’ Texas, started making pens in the Tip O’ Texas Wood Shop at various times and have graduated to selling their pens at craft shows and in retail establishments. They enjoy making the pens as a hobby and now also produce pens when at their respective homes during the summer.
R o g e r Ruggles, a permanent resident in the Valley, has turned his passion for wood into a small business, A.R. Creations. He displays his work at various craft shows and locations throughout the Valley, including Tip O’ Texas (every third Saturday of the month). He sells most of his work to people needing a unique gift for things such as graduations or a special occasion. One of Roger’s favorite works for a customer was to make several pens from a sideboard of their grandfather’s boat so family members would have a reminder of times spent with their grandfather. The Tip O’ Texas invites all Winter Texans out to their next craft show Saturday, March 19, to become pen pals with our featured displayers. •

Sunshine Country Club Estates Women’s Club collected more than 200 large cans of food for Loaves & Fishes in Harlingen in February. Loaves & Fishes serves as the mission arm of Harlingen’s churches, offering help and hope for the hungry, the homeless, and the hurting.
The Sunshine Country Club Estates Women’s Club likes to give back to the community and people who are in need. Linda Davis, organization chairwoman, and her committee did a great job gathering the 1300 pounds of food for the organization. •

Answering the Call to Volunteer: The Story of Donald and Angie Hamm

founder Dr. Ethel Percy Andrus once said, “The human contribution is the essential ingredient. It is only in the giving of oneself to others that we truly live.” Every day people decide to give of their time to help members of our 50-plus community, people like Donald and Angie Hamm. They met RGV ASD Veronica De Lafuente during a Life Reimagined event in Brownsville last year. “When Veronica (De Lafuente) was telling me all the aspects of what AARP does for people over the age of 45, I just thought ‘Oh my God. There are so many people who lack that information, the knowledge of what AARP is about.’ We thought, we need to tell people in our age bracket what it is,” said Angie. This powerhouse volunteer couple decided to give of their time after they heard about the resources available to people. After hearing all AARP has to offer, Angie and Donald decided to get involved. “I’m a licensed nurse and work in the healthcare field. We’re dealing with patients and family members who lack resources, and I think AARP offers a lot of the resources that are beneficial to not only the elderly, but those who are caring for the elderly,” said Donald. Together, Donald and Angie are changing the way AARP is viewed. They have not only volunteered at several Brownsville events, but they have also participated in volunteer led meetings and are helping shape the way people see our non-profit organization. “I love that we’re tapping into a
different area of need that we are going to come into one day soon,” said Angie. “For me, educating myself and then being able to educate others about what AARP represents and what they have is what drives me to do this.” Realizing the work that needs to be done in our community is what motivates these two pastors. If you think they only work with AARP, think again. Donald and Angie divide their time between their church, the City of Brownsville’s food pantry, and their friends’ “Church on the Street.” “…the resources AARP has, like TEK support and caregivers information. There are a lot of people out there caring for the elderly and they don’t know what resources they have. Also, to network some of the entities in our community with what AARP does. I think Angie and I can be an asset to what AARP does in our community,” said Donald. You can say volunteering was a calling for them, and a calling they are more than willing, ready, and able to answer. “One misconception that was cleared up for me is that AARP is not just about insurance. I want to be part of that movement that changes that perception in our community,” said Angie. “It’s very important that people get educated in certain areas and not feel that they are alone. Sanderling flock – One way Sanderlings avoid predators is to fly in a close flock over the water. The flock will fly in an unpredictable pattern, and some birds may even dive straight into the water to avoid capture.
Least Sandpiper with Sanderling – Least Sandpipers are about the size of a sparrow and are often called ‘peeps.” This tiny bird migrates in the spring from Chile and Brazil all the way to the Arctic each year to breed and then returns south in the fall.
Piping Plover – Piping Plover nests are very sensitive to disturbances on the beach, and their numbers are rapidly declining. This bird has been color-banded by a scientist for research purposes.
Pectoral Sandpiper – Pectoral Sandpipers seem to prefer freshwater over salt water, and they can often be found along mudflats and in grassy marshes.
Sanderling – Sanderlings are easily identified by their habit of ‘chasing the waves’ as they look for small prey in the sand.
The Story of Shorebird Migration by John Brush, Quinta Mazatlan World Birding Center Naturalist
There
are moments, patterns in nature,that are enrapturing. As a naturalist, I would say there are many aspects of nature like this, but one such phenomenon has captivated biologists for thousands of years: migration. From the thundering herds of bison that used to roam the Great Plains down to the Rubythroated Hummingbird stopping briefly in your yard, migration continues to enchant our lore and everyday lives. Some of the more well-known migratory animals are birds (and as a bird watcher my focus tends to be avian). We are familiar with the bright warblers, tanagers, and orioles that stop at our birdbaths in the fall and spring or the aforementioned hummingbirds that dine at our hummingbird feeders. Shorebirds, however, have some of the most impressive annual migrations of any group of birds. There are many examples of longdistance migration in the roughly 35 species of shorebird that pass through and inhabit the Lower Rio Grande Valley. This diverse mix of sandpipers and plovers represents about a third of the shorebirds found in North America and will travel thousands of miles each year. The Pectoral Sandpiper, a species that starts to pass through the Valley in March, can travel upwards of 14,000 miles round trip as it travels between the Arctic Circle and South America twice a year. Compare that to the estimated 900 miles the average American walks a year (from a study published in 2010 in the journal Medicine & Science in Sports & Exercise). Even the Least Sandpiper, a bird smaller than a House Sparrow, travels a similar route to the Pectoral Sandpiper’s. The small bird that probes the mud along canals and ponds here in South Texas (all the way to South America) will raise its young in the tundra of the arctic. Simply thinking about it is
exhausting. Just as road-tripping across the United States takes a lot of gas, migration takes a lot of energy from shorebirds. But instead of being able to fuel up at convenient gas stations, shorebirds must fuel up by consuming amazing amounts of food at what ornithologists call “critical stopover sites.” Whether coastal mudflats or inland wetlands, these stopover sites provide the abundant foods shorebirds need to continue their journeys. A famous example is the Delaware Bay, where thousands of Red Knots eat millions of horseshoe crab eggs on the beach. An important area in the Rio Grande Valley is the Laguna Madre. The mudflat and coastal wetland habitats of places like Laguna Atascosa National Wildlife Refuge and South Padre Island provide stopover locations for migrating and wintering shorebirds, such as the endangered Piping Plover. Conserving these habitats is of great importance to preserve shorebird populations. The next time you visit South Padre Island or explore the ponds of your local nature center, think about the small gray-brown shorebirds. Their plumage may not always be colorful, but their journeys are amazing. The Sanderlings we see, their feet a blur as they run across our winter sand, cover more of the world in a year than many of us. Calabazita Con Pollo (Chicken with Squash) Serves 8 • 1 chicken • Salt and pepper to taste • 2 tablespoons butter • 4-6 medium-sized squash • 4 tomatoes, peeled • 2 ears of corn • 3 cloves garlic, minced
• 1-2 large onions, sliced • 4 jalapeños, seeded • 2 green bell peppers, chopped • 1 pimiento, diced • 1 can beer (optional) • 2 tablespoons butter, melted • 2 tablespoons flour
Preheat oven to 325 degrees. In baking pan, place 1 cup water and chicken, liberally seasoned with salt, pepper, and butter. Bake, covered, until tender. Skin and bone chicken, reserving broth. Wash and cut vegetables into bite-sized pieces. Remove corn from cob; add garlic and onion. Cut jalapeños into half-inch squares. Place cooked chicken, broth, and vegetables in large saucepan. Add beer or 1½ cups water. Cover and simmer 15 to 20 minutes over low to medium heat. Do not let ingredients stick to bottom of pan. Mix butter with flour and add just enough to thicken mixture. Serve in bowls with flour tortillas. Potluck Possibilities: Great Food To Share
There are loads of recipes for “King Let’s Make Steak Quesadillas Ranch Chicken Casserole.” I’m not sure

A
quesadilla is a simple food to prepare, and if you have ordered a ‘Mexican Plate’ in a restaurant, you have probably eaten them. A quesadilla, in its simplest form, is a fried and folded flour or corn tortilla stuffed with melted cheese. Additional fillings are often added, such as chicken, meat, or vegetables. Additional toppings are also used, such as avocado or guacamole, tomato, onion, cilantro, salsa, Crema or sour cream, peppers, etc. I am providing two recipes for steak quesadillas. The first is a Tex-Mex version that uses a spice rub. The second is akin to a Philly cheese steak. Enjoy! Buen apetito! •
Steak Quesadillas
For the meat, use about ¾ pound of skirt steak. That will make three folded quesadillas using 10-inch flour tortillas. It will be plenty for a dinner for two. For the “Tex-Mex” version, prepare a rub out of the following ingredients: • 1 Tbsp. paprika • ½ tsp. cumin • 1 tsp. kosher salt • ¼ tsp. ground cayenne pepper Blend these ingredients together, sprinkle the rub on the skirt steak, and rub in. Drizzle the juice of one lime over the meat. Then place the meat in a food storage bag and refrigerate for at least an hour. Cutting the steak in half will allow it to fit in the bag and will make frying the meat easier. For the “Philly Cheese Steak” version, just salt and pepper the steak just before frying. From here on, the preparation is the same for both quesadilla versions. The additional ingredients: • Flour or corn tortillas. I used three 10-inch flour tortillas and folded them when cooking. • One large yellow onion – peel and slice into 1/8- to 1/4-inch rounds and cut them in half • One green bell pepper. Remove seeds and webbing. Slice into 1/8 inch strips. • 1 ½ cups of melting cheese. Traditionally, Mexican Oaxaca cheese is used, but you can substitute Monterrey Jack cheese if Oaxaca cheese is not available. Cooking Instructions: Add a little oil to a frying pan, and fry the steak on medium-high for about three minutes per side or until it is cooked, medium rare. Set the steak aside to let it rest. While the steak is resting, wipe out the frying pan, add a Tablespoon or two of oil, and fry the onion and pepper over medium heat until the onions are softened but not browned. Remove onion and pepper from the pan. Slice the cooked steak into thin strips, cutting across the grain of the meat. The quesadilla can either be folded in half as the cheese melts or it can be made with two smaller tortillas with the layer of cheese between them. Stacked tortillas can be a little tricky to flip, especially if the cheese has not melted enough to stick the tortillas together. Heat the frying pan to medium high and place a tortilla in the pan. Spread about ½ cup of cheese over ½ of the tortilla. Spread 1/3 of the meat and 1/3 of the onions and peppers on top of the cheese, and use a spatula to fold the empty half of the tortilla onto the ‘loaded’ side. Press gently on the folded tortilla so it stays folded. Flip the quesadilla over and cook on the other side. Your quesadilla is done when the cheese is completely melted and the tortilla is getting crispy. Cut each quesadilla into three wedges and serve with Mexican Crema or sour cream, fresh cilantro, sliced avocado or guacamole, a salsa of your choice, and lime wedges. King Ranch Chicken Casserole
• About 4 pounds of boneless chicken, cooked and shredded • 1 large yellow onion, diced • 1 can (10.5 oz.) cream of mushroom soup • 1 green bell pepper, chopped • 1 red bell pepper, chopped • 1 cup chicken broth • 1 can (10 oz.) jalapeno slices (more if you like it hotter) • 3 chipotle peppers in adobo sauce, chopped • 1 can (10 oz.) diced tomatoes with green chiles • 2 medium tomatoes, sliced • 16 oz. shredded Mexican-blend cheese • 1 large bag tortilla chips OR 12 corn tortillas, cut into pieces • Garlic powder and salt and pepper to taste Preheat oven to 375 degrees F. In a large skillet, sauté the bell peppers, ¾ of the jalapenos, the chipotles, and the canned tomatoes. Cook until the onions become slightly translucent. Add the soup, broth, and chicken. Bring to a slow simmer and add salt, pepper, and garlic powder, as desired. Bring to a slow bubble; it needs to be hot. In a large, sprayed baking dish, place a layer of broken chips or tortilla pieces and top with a layer of the cooked mixture. Cover with cheese. If you have a smaller deep dish, repeat the layers, making sure cheese is on the top. Layer the sliced tomatoes and the rest of the jalapenos on the cheese. Bake for 30 minutes or until the cheese melts. This makes a large casserole perfect to take to a potluck. Makes 8-10 servings. Sandy Olson, lifelong foodie, restaurant reviewer, cooking teacher. Remarrying
after the death of a spouse is considered by some as disrespectful to the deceased. In the not too distant past, there was a culture in India that expected a widow to throw herself on her husband’s burning funeral pyre and perish with him. This was called Suttee. I would give a big thumbs down on that bit of weirdness. In my case, after a good marriage to a fine man for 60 years, I learned to love another. So how weird is that? Well it isn’t! If someone has endured a marriage from hell, he/she may wish to avoid a relationship with anyone ever again. However, if marriage was good, a subsequent relationship may be welcome. Children and parents can present major problems for these companionships because they feel it is a betrayal of someone whose place they do not want filled by another. Understandable--but really rather dumb. Think of it this way. When Mom or Grandma has a boyfriend, no one has to spend excessive time concerned with: “Who will pick her up?” “She must be so lonely; I guess we should have her over more often.” “I guess we should take her with us on vacation.” “Shall we ask Grandma to go with us to the Olive Garden? I was hoping we could catch a late show. What do you think?” “We should ask Grams to come along, I guess.” “I worry about her over there by herself.” “We really need to get her one of those safety call systems to wear around her neck.” Truth be known, when Mom/Grandma has a boyfriend, there is no need for a rope around her neck with a push button on it. She probably eats out in better restaurants and more often than anyone else in the family, and chances are good she is neither bored nor lonely. So be grateful. Look on the plus side. She has a “social sitter” and a great “safety call system,” and in my case, his name was Bill. (The dating game was great fun for 5 ½ years before his death from lung cancer in 2013. His illness was short; he was at peace and I was there.) However, if Grams has latched on

to a shifty-eyed sleaze, he should be shooed away. How? Easy. If he doesn’t go quietly, threaten to shoot him in the knee caps. I jest. (But it was fun to say it!) Nevertheless, scare him away. Kids and grandkids instinctively know how to do that. It is making him/her feel appreciated that may require more “training.” Can’t say as I recommend marriage for octogenarians. Everyone else, yes-octogenarians, no. The complications of estates, two homes filled with a lifetime of stuff, and the 24/7 compatibility challenges precludes marriage as a sensible option. My opinion, of course. Luckily for Bill and me, our kids on both sides did not express disapproval. And when I let my mind ponder how my husband would feel about my boyfriend, I could see him in my mind’s eye, a slight smile on his lips saying, “Go for it, Girl.” He never had a jealous bone in his body nor did I. It was an emotion neither of us considered justified. Let me share how it was with me. My caring for Bill never diminished what I felt for my husband. They had known each other, and the respect they felt was mutual. The brain has the capacity to compartmentalize. There was a husband compartment and a Bill compartment. They didn’t compete, interfere with, or diminish each other. They were just there, individual and separate. And dear. And special. • M. GPS Thinking…
did we do before Global Positioning Systems or GPS? Barb and I first purchased our GPS in 2000, and today we have several of those electronic road map marvels to work with. We can figure our trip down to the exact route and how much fuel we may use and the cost of the journey. We can find a specific restaurant, campground, or movie theater by setting up search parameters. We type in an address, and within a few seconds – presto – the route is laid out for us down to the time we will arrive. This “cute” piece of electronic gadgetry will even talk to you, if you let it. My favorite word is “recalculating,” and my not so favorite phrase is, “Make a U-turn at your earliest convenience.” However, they are not without some issues; sometimes that little gadget will lead you down a road you really don’t want to go on. One time we thought we would check out the route with the car, it seemed too good to be true. Yup, a dirt road would have been in our future; not a good thing in an RV. Last week our GPS quit working because of a fuse being blown. We had traveled the route home several times; should not be an issue or problem… wrong. Barb and I have come to rely on the bossy electronic marvel. We were lost without it. Once
I turned early, got confused, and started down a road (not dirt) that was not where we wanted to go. We were able to see the error of our route, did a U-turn, and got back on track. But that episode of being lost got me to thinking. We rely on our GPS for directions to places to stop, eat, and shop. It’s company in our RV or car and is almost part of the family. We rely on its guidance every trip we take. Do we rely on reading the Bible (God’s GPS) every day? Do we take to heart the directions He has laid out for us on our travels through life? When we stop our daily devotions, our study of His word, we get “lost” in our daily grind, and I am not talking about a coffee shop. So for us, we will rely on the human GPS to get us to our earthly destination and God’s GPS, the Bible, to get us to our eternal destination. After all, doesn’t GPS mean God’s Plan of Salvation? The Holy Bible will never direct you down a wrong road.
Prayer Our Father, you are the master of direction. Please help us to consult you in all of our decisions and travels on life’s path--Your will, not ours, as we venture forth in this life path. Thank you for being absolutely accurate in your direction. Amen. •

He also suggests that those who want to participate contact him first so he can guide them toward the most suitable team. In addition, this allows Martens to inform new members of practice and game times. During pre-game warm-ups, much like the softballs with which they’re playing, players often toss around selfdeprecating phrases. Among these

Place garlic in a piece of aluminum foil, drizzle with 1 tablespoon olive oil, and wrap up in foil. Bake until soft, about 45 minutes. Allow to cool slightly and squeeze garlic flesh from head into a small bowl.
Heat oil in a medium sauté pan over medium-high heat. Sear the tenderloins until golden brown on all sides. Transfer tenderloins to a medium roasting pan or heavy sheet pan; place in the oven and cook to medium doneness about 10 minutes. Transfer tenderloins to clean cutting board and let stand 10 minutes. Remove twine before slicing.
Place tenderloins on cutting board. Rub the top each tenderloin with 1/2 of the roasted garlic and season generously with kosher salt and freshly ground pepper. Mix herbs together and sprinkle half of the mix over the garlic on each tenderloin. Wrap 6 strips of bacon around each tenderloin and tie in place with kitchen twine.
