oing Faster. Moving Slower. This past week, we ‘officially’ celebrated our volunteers who help Welcome Home RGV at events and activities throughout the season. I say ‘officially’ because we are thankful for our volunteers every day. I am blessed with not only a great team in the office but also a phenomenal group of volunteers who help in so many ways. It’s not as easy as you might think to be everywhere. Throughout the season, there are opportunities we might have missed because we just can’t be more than two places at the same time. But because our volunteers fill that void for us--stepping in to work at in-park expos, in our booth at the Don-Wes flea market (every Wednesday, Saturday, and Sunday), and at all the community events we participate in and sponsor---we don’t have to miss them! I had the opportunity to have some one-on-one time with Al Brooks, one of my volunteers who has been with me as long as I can remember. We got to talking about our crew of volunteers and all the ways they assist us. I told him that because of our volunteers, we are able to go faster than we’ve ever gone before yet move a little slower and not have to run around in circles all the time. I know I can speak on behalf of so many organizations when I say, “Thank you!” – not just to our Winter Texans, but to those Converted Texans and local volunteers who donate your time and talents to causes near and dear to you. Your time and talents are appreciated, and our Valley is a special place because you care about giving back and lending a hand. What would we do without you? • We’re just connecting the dots,

the History of Lone Star Citrus Growers. Lone Star Citrus Growers is a company passionate about their products, people, and service. Born of a shared vision to provide the citrus-buying customer an alternative source of Texas citrus, three industry veterans combined their experience, strengths, and resources to launch a dream. The foundation of this dream was built by gathering a core team of employees who have been with Lone Star Citrus Growers since the day they opened their doors in 2007. Without the dedication and tireless efforts of these professionals, this dream could have never been realized. One of those three industry veterans is Trent Bishop. Now, the Kristi-Connection I’ve been friends with Trent Bishop since 6th grade when we went to Lamar Junior High together. That means we’ve been friends for almost 35 years. Trent and I both share a love for the Rio Grande Valley, both choosing to raise our
families and establish our business roots in our hometown. While we were friends in grade school, it wasn’t until we were out of college and starting our own families that we were able to reconnect. Our daughters (his oldest, my only) were born six months apart and it has been so much fun watching both of our ‘babies’ grow up. While I had only one daughter, Trent proceeded to have three more, making him the proud father of four girls! In addition to watching our girls grow up, it has also been a real ride to watch his business grow, and
we are proud to promote Lone Star Citrus Growers and Valley Citrus. If you had told me 35 years ago at Lamar Junior High that I’d be publishing Trent’s recipes in my own weekly newspaper, I would have told you that you were crazy! But you’re not crazy. The Junior League of McAllen, Inc. envisions significantly improving the quality of life of the children and youth of our community by preserving the innocence of childhood, encouraging responsibility, and promoting a safe environment. For years, their two cookbooks, La Piñata and Some Like It Hot, have been two of the most sought-after cookbooks in the Rio Grande Valley and beyond. While La Piñata is now only available through second-hand sellers, Some Like It Hot can be purchased through the Junior League web site at www.juniorleaguemcallen. org, as well as at retailers Barn White and Quips & Quotes in McAllen. In the Valley, we like it HOT, and we’re excited to share recipes from Some Like It Hot with you in this and all future issues of Welcome Home Winter Texan. •
Grilled Brisket
Marinade: • 1 (32 oz.) bottle ketchup • Juice of ½ lemon • 5 tablespoons Worcestershire sauce • ½ cup butter • 1 tablespoon Tabasco sauce • 1 small onion, finely chopped • Salt and lemon pepper to taste Prepare grill. Mix all ingredients for marinade. Baste brisket with marinade, grilling over low flames. Use marinade to keep meat moist throughout grilling process, approximately 30-45 minutes, until brisket is browned. Wrap brisket in foil and continue basting and cooking slowly over low heat (1 hour per pound). Sauce: • 1 cup vinegar • 2 tablespoons Worcestershire sauce • ½ cup butter • Juice of 1 lemon • Salt and lemon pepper to taste • 1½ teaspoons Tabasco sauce • 1 clove garlic, minced When brisket is done, slice meat and pour sauce mixture over meat. Place in pan; cover well. Heat in low temperature oven (275 to 300 degrees) for one hour. • The key to the best flavor in grilling is a powerful, even source of heat. Cooking should not begin until the coals have been burning long enough to be covered with gray ash. Allow at least 35-45 minutes after lighting the coals for the ash coating to develop. • The grill must be absolutely clean and free of residue from previous barbecues!

I’d like to ask for your help.
If you haven’t noticed, our Winter Texan numbers aren’t quite what they used to be. Now, don’t get me wrong, they are still good – but there is no doubt that there is room for improvement. Our market is changing. New retirees are different than the ones we’ve known. What used to work isn’t working anymore. It’s time for some action – and I need some help. The Valley, as a region needs to do something to market the Winter Texan lifestyle that is unique to south Texas, up north. Once upon a time, representatives from the Valley traveled up north participating in trade shows, advertising and spreading the word about all the RGV has to offer retirees. Over the years, we’ve grown complacent when it comes to marketing to prospective retirees – assuming they will come. It’s time for that to change. The problem is, creating and implementing marketing campaigns comes at a cost. As I mentioned
before, the demographic has changed, but so have the ways to market to retirees. From social media to blogs, to events and traditional advertising methods, the question is: Where can we get the most from our marketing dollars? I’m willing to donate my time and resources to reinvent this wheel – but I can’t do this alone. I have a few ideas, and am looking for some volunteers to help me pull off the most exciting marketing effort around. We know that word of mouth is the number one source that brings Winter Texans to our Valley – and we need to empower our 100,000 person marketing team before they go home to help spread the word. Let’s work together to save our season, one Winter Texan at a time. Grapefruit and Quinoa Salad Compliments of Lone Star Citrus Growers
Recipe

Grapefruit and Quinoa Salad • 1 Texas Rio Star grapefruit, sectioned • 1 Texas orange, sectioned • 8 thin slices fresh ginger • ¼ cup extra-virgin olive oil • ¾ cup quinoa • ½ teaspoon kosher salt, plus additional for seasoning • 1 tablespoon white wine vinegar • 2 teaspoons honey • 1 small serrano or jalapeno chile, minced (with seeds, for maximum heat) • 2 scallions (both white and green parts), minced • 2 carrots, peeled and diced • 2 tablespoons chopped fresh cilantro leaves • Freshly ground black pepper Strip the peel from the grapefruit with a vegetable peeler, taking care not to include the bitter white pith. Warm the grapefruit peel, ginger, and olive oil in a small saucepan over medium heat. As soon as the oil starts to bubble, after about two minutes, remove from heat. Set the oil aside to steep for 30 minutes. Strain and reserve the oil. Meanwhile, rinse the quinoa in a bowl and drain. Add the quinoa to a small saucepan with 1 ½ cups water and ½ teaspoon salt. Boil over high heat, and then reduce heat to maintain a gentle simmer. Cook, uncovered, for 15 minutes. Set aside, off the heat and undisturbed, for five minutes. Transfer the quinoa to a bowl and fluff with a fork. Cool. Segment the grapefruit over a bowl, reserving the segments and juice separately. Whisk 3 tablespoons of the grapefruit juice with the vinegar, honey, and salt (to taste) in a medium bowl. Gradually whisk in 3 tablespoons of the reserved grapefruit oil, starting with a few drops and then adding the rest in a stream to make a slightly thick dressing. Season with pepper, to taste. Toss quinoa with the dressing, chiles, scallions, carrots, and cilantro. Season with salt and pepper, to taste.

Virginia Haynie Gause calls herself
an emerging writer, although she has already co-written two books--a cookbook and a guidebook to Oaxaca, Mexico. Also a published writer of travel articles about Texas cities and Mexico, Virginia will be using the Incubator as her home base. All four Valley counties will be included in her next book, The Trailblazer’s Guide to the Rio Grande Valley. “I will pick the most select things, which aren’t documented elsewhere, to tell the public,” Gause explains. “For instance, new restaurants will be one category, like Birdie Cakes & Bakery on Main Street across from Salt. Word of mouth will help keep that restaurant there for us tomorrow.” Using her 42 years as a librarian at UTPA’s (now UTRGV) library, Virginia will use her local contacts to help fill the chapters of her book with the goal of helping tourists enjoy their Valley visit to the fullest. A few chapter categories will be Craft Beer, Craft Cocktails, Churches and their music, and Spring Break Adventures. Working with her many connections, Virginia will offer

Twelve ladies and one gentleman from within the park were the models for the exciting designs. They were also treated to a make-up artist and a hair stylist. The models were certainly “stylin’.” •
they competed in the pickleball tournament, viewed the birds and wildlife at Santa Ana, or were entertained by the various musical and dance acts at the park, Winter Texans in Alamo had a grand time February 20. The City of Alamo, the Alamo Fire Department, our Chamber of Commerce, and Santa Ana Wildlife Refuge partnered to present the 20th Annual Winter Texan Appreciation Event. The city’s Winter Texan Committee also helped by spreading the word at all the RV resorts and parks. This is the first year that a pickleball tournament was held, but it won’t be the last as the popularity of the sport grows among the Winter Texan community. Champions were awarded in men’s, women’s, and mixed doubles categories. The mayor and commissioners were on hand to present the trophies. The fire department cooked up their famous Firehouse Beans for all in attendance. Santa Ana Wildlife Refuge provided free admission and tram rides from noon through 4:00 p.m., along with snacks and refreshments. Many local musical acts and dance teams performed, along with comedians. The highlight of the day was the presentation of the Alamo Chamber of Commerce’s Winter Texan of the Year award to Betty Emmons, a retired college math instructor from Minnesota. This is the thirty-first year Betty has spent her winter in Alamo! She typically arrives at Casa del Valle in October and drives back to Minnesota in the spring. She is

Synopsis: Soljo has mysteriously appeared in the driveway of Sadie’s RV park. Joining forces with her compadres, George, a retired doctor, Jack, a retired history teacher, Phyllis, a local tour-director for Winter Texans, and Frank, owner of a monster truck, they have found the magic tree, which allowed Soljo to travel through time. Sending him back in time is what they are unsure of, so Jack goes back with him, and they disappear just as a truck skids to a halt beside the other four. Pick up our previous Welcome Home Winter Texan: Issue 7 to read Chapter 1 starting on page 4 and Welcome Home Winter Texan: Issue 13 to read Chapter 2 starting on page 28.) Jack nearly fell out of the tree after emerging from the twinkling lights that had enveloped him and Soljo for their trip to the past. Clinging desperately to the limb, Jack looked around and found himself near the river’s edge. No fields of produce surrounded him. Off in the distance, he saw smoke rising from
Chapter 3: Tripping Out! structures he couldn’t make out. “Are you all right?” Soljo’s face was full of concern. “Yes, yes, I’m good. How about you?” “Yes. I arrived in good form.” “Did we do it? Is this your time?” Jack’s nervousness showed in his voice. “I am home,” stated Soljo. “My friends are coming this way. You must go.” “Soljo, I cannot tell you how delighted I am to have met you. You have brightened my dull life and made life fun again in the few short hours we’ve known you. Thank you. Should you ever land in our time again, come look me up. My name is Jack Verunski. Folks around Mission will know me. I was a teacher there for years.” Jack grabbed Soljo’s hand and gave it a firm shake. “That’s how we say goodbye in our time--that or a hug. I don’t guess you hug here?” Soljo laughed easily. “I do what I feel is right at the time, and I feel a hug is right at this time.”
He grabbed Jack carefully, as they were still up in the tree and it was much smaller than in Jack’s time. “Peace be with you, my friend,” Jack said, as he turned to enter what he hoped would be his ticket home, and he promptly fell off the tree. “Hurry, Jack. Climb quickly. You must go. My friends are coming fast, and they must not see you.” Jack grabbed ahold of the tree and climbed as quickly as he could. Soljo could see his friends nearing the bend in the river a short distance away. “Hurry, Jack!” Jack reached the limb and began crawling toward Soljo and disappeared into a circle of twinkling stars. “Whew! That was a close one,” Sadie said as she watched the dark blue truck drive slowly away. “I didn’t think he was going to believe us for a while there. I guess when George pulled out his fancy camera, the guy decided we were telling the truth about a photo shoot. But what happened to Jack and Soljo?” Pretending to be setting up a scene
for the camera, they were careful to not stare directly into the towering old bald cypress, with its cocoa brown, rough bark showing scars the years had taken on the powerfully regal tree. “I sure wish that tree could talk and tell us tales of what happened around it,” Phyllis sighed. “Now that I know it’s magic, I can’t put it on my Winter Texan city tour. What if one of the spry old seniors decided to climb it? That would be a disaster!” Just the thought of that set them off into gales of laughter. “Hello there!” Jack’s voice carried over their mirth. “Wait a few minutes, Jack,” George called. “The truck’s almost gone, and we don’t want him to see you climb out of the tree.” “OK. Nearly 500 Attend Mabel’s Free Clinic Breakfast Fundraiser Special to Welcome Home RGV

Free Clinic breakfast fundraiser was held at Southern Comfort Resort in Weslaco February l8. Nearly 500 guests enjoyed the biscuits and gravy breakfast, and many more came to “shop” at a large Silent Auction. Greeted at the front door by a friendly volunteer, visitors were guided to the donation table. Generous donors helped boost the totals, so funds raised at the front desk exceeded $7000. Also at the front entrance was the opportunity to sign up for a tour of the clinic in Nuevo Progreso. In addition to learning about the clinic and its history and goals, the tour participants saw several local schools and colonias. Tour participants’ donations will help support the work of the clinic. Raffled at the breakfast was a popular NFL-themed quilt made by the Southern Comfort Stitchers. It was won by a Midwest visitor to South Texas, Lori Sampel of Omaha, who, while visiting her mother in La Feria, bought the ticket at a craft sale at Victoria Palms. Coincidently, Lori and her husband helped sell tickets. They were seated at the sale, resting for a while right by the quilt, so they encouraged passersby to stop and buy a raffle ticket. Numbering l85 items, the Silent Auction brought lots of onlookers and bidders. One item which captured a good number of bids was a print of an original painting by Linda Cesario of Southern Comfort, picturing a donkey in a field of blue bonnets. The Texas-themed painting was framed in a wide, wooden frame, which fit the mood of the print. The Silent Auction proceeds will contribute nearly $4000 toward the work of the clinic. During the festivities, Judy Pinner entertained with her lovely keyboard music, supporting the upbeat feeling of the 80 volunteer workers and their guests. Clinic work and clinic needs go on throughout the year. In addition

Should You Insure Your Hearing Aid? Here’s What You Need to Know by Katherine Bouton, AARP
You
undoubtedly have insurance for your important valuables. So should you get insurance for your precious hearing aid? The answer is yes, but not right away. New hearing aids come with a warranty from the manufacturer. The length of the warranty, usually up to three years, is based on the device’s level of technology, according to Terrence Williams, assistant director of the Berelson Hearing Technology Center at the nonprofit Center for Hearing and Communication (CHC) in New York. When you purchase your hearing aid, be sure to find out the length of the warranty. It should cover both replacement and repair. Replacement includes loss, but this is a one-time offer. Once the manufacturer replaces a lost hearing aid, the warranty is no longer in effect. When the warranty runs out, you’ll probably want to buy insurance. Coverage cost is based on the level of technology of your hearing aid, as well as its age, says Williams. For a higher-end device, the price averages about $300 a year. That may seem expensive, but with the average cost of a hearing aid at about $2,300, according to the President’s Commission on Science and Technology, it’s probably a wise investment. You can usually insure for replacement, repair, or both. CHC works with three providers of hearing aid insurance: Ear Service Corporation, Midwest Hearing Industries, and Starkey Hearing Technologies. Starkey works with the hearing-aid provider, not directly with the consumer. Ear Service and Midwest offer comprehensive coverage for all types of hearing aids and will replace a lost or damaged hearing aid with the same model. If

On behalf of our board and staff, the model has been discontinued, they’ll offer a comparable model. Starkey, which also manufactures hearing aids, will cover all manufacturers’ products, but it will replace a lost or damaged hearing aid with a Starkey device. Before you buy this extra coverage, check with your homeowner’s or renter’s policy to see if your hearing aids are covered and what your deductible is. If you’ve chosen a high deductible to save on premiums, the deductible may be far more than the cost of the hearing aid. The best thing, of course, is not to lose your hearing aid in the first place. Here are a few hints for holding onto that valuable object: • Before bed, put it in a Dri-Aid or other dehumidifier to get rid of excess moisture and keep it secure during the night. • Never put it on the table or your plate at a restaurant, as some people do when the room gets too loud. One of the titles I considered for my book, Shouting Won’t Help, was The Man Who Ate His Hearing Aid, based on a friend’s experience. Enough said. • Carry a small case for your hearing aid in your purse or in a secure pocket where it won’t get lost or damaged. • Never leave the hearing aid on the dresser or a bedside table at night. It can get accidentally knocked off or worse, swallowed by a pet. In that case, you’d not only be replacing the hearing aid; you’d also be stuck with a veterinarian’s bill. • If you have upgraded to a new hearing aid, be sure to keep the old one to use in case the new one gets lost. •

Patience
you heard the American’s prayer about patience? “God, give me patience; and I want it right now!” A sentiment like this is understandable in a culture that brought us instant coffee, immediate communication, the fast food industry, and huge “parking lots” we call rush hour. We want everything to be easier, faster, quicker, and more efficient. People are endlessly looking for ways to save time and avoid travel difficulties, so we build subways, light rail, and expressways that ring our major cities. Thus, it seems such a contrast when we look at Bible verses that deal with the subject of patience or perseverance. James 1:2-4 (NKJV), “My brethren, count it all joy when you fall into various trials, knowing that the testing of your faith produces patience. But let patience have its perfect work, that you may be perfect and complete, lacking nothing.” Like many in this current age, I want things to be easy, without difficulties, problems, or trials. Frequently, however, I encounter frustrating issues with one or more of the electronic gadgets that populate our lives. Sometimes, it appears that more effort and time is required to
make these marvelous devices work, than they’re worth. However, rather than seeing these things as ways that test my faith, I often get angry and wish for simpler times. However, have “simpler times” ever existed? The Industrial Age of the nineteenth century produced dramatic changes that still resonate in modern times, and the Electronic Information Age has done no less—making many seniors feel like dinosaurs. What do we do with this contradictory thought from James? Is this just an ancient writing from an obscure culture we can ignore because it does not seem to fit into our modern world of the easy and fast? Might this thought in Scripture be God’s answer to the hectic pace of life, to help us keep our heads when everyone around us seems to be losing theirs? I have discovered that applying God’s Word, even if I do not completely understand it, is the best way to live life—because it actually works. Therefore, I choose to be joyful in the midst of my difficulties, even when I feel like screaming. Such decisions are not easy, but they please God, which allows patience to accomplish His work in my life. •

Audubon Marine Biologist to Speak at Master Naturalist Meeting March 8 Special to Welcome Home RGV

Biologist Kari Howard is the guest speaker for the March 8 Rio Grande Valley Chapter Texas Master Naturalist meeting. Howard will be in the Rio Grande Valley promoting the Texas Estuarine Resource Network (TERN) program for the Audubon Texas, Coastal Conservation Program. As part of the Audubon team, Howard has been instrumental in developing this new citizen science program monitoring nesting water birds. A graduate of Texas A&M University at Galveston with a bachelor’s degree in marine biology, Howard has worked in various lab settings, wetland consulting and delineation, and outreach and education in environmental fields. Since 2010, she has enjoyed her time as a Texas Master Naturalist for the Galveston Bay Chapter. She is an avid gardener and encourages landscaping with Texas native plants that specifically attract birds and butterflies. The TERN program was established in the fall of 2014 and since has been implemented in 17 counties along the Texas coast. There are currently bird monitors as far east as Lake Charles, Louisiana, and down to the Texas-Mexico border.
These citizen scientists have been instrumental in identifying valuable foraging habitats that colonial water birds rely on year-round for survival, particularly when feeding their young during nesting season. The TERN program continues to seek out individuals willing to participate for the research, partnership expansions, and conservation of wildlife and wild spaces and for the pure enjoyment of giving back to nature. The Texas Master Naturalist meeting is at 7 p.m. at the Cameron County Annex Building located at Williams Road and Hwy. 83/77 in San Benito 1390 W. Expressway 83. Knowledgeable docents are conducting walking tours around the Zoo, upon request. Docents not only provide a tour of the facility but they also tell a range of stories from the history of the zoo to animal anecdotes. 17th Annual Can/Am Golf Tournament was held Wednesday, February 17, at the Winter Gardens Golf Course. This is a yearly matchplay event between the Canadian golfers and the American golfers from both Winter Ranch RV Resort and Trophy Gardens RV Resort. Forty-five Canadians and 45 Americans pay an entry fee of $2 each to represent their country. The entry fee monies are then donated to the 1st Responder units at both parks. Dick De Garamo of Winter Ranch (from Illinois) was the captain for the Americans and Jim Coleman of Trophy Gardens (from Manitoba) was the captain for the Canadians. A crew from Trophy Gardens furnished a hot dog lunch following play. The parks take turns providing lunch, so next year Winter Ranch will do the honors. Pete Morales, commissioner from the City of Alamo, enjoyed watching the tournament and visiting with the Winter Texans from both countries. Alma Colleli, head of the Winter Texan Committee for the City of Alamo, was able to come to the

The Americans won this year with a score of 23 to 15, but the playof-the-day was provided by Gary Norwood, resident of Winter Ranch, from Barrie, Ontario. He had a holein-one on the 9th hole with a 7-iron. Everyone had an enjoyable morning, and both teams are looking forward to a rematch in 2017. •

An Introduction to Valley Golf Courses Ebony Hills Golf Course : Popular with Winter Texans! Special to Welcome Home RGV
This week, we want to introduce
you to a golf course in the Rio Grande Valley that opened in 1927 as the Ebony Hills Public Golf Course. The course, now known as Ebony Hills Golf Course, was named for the ebony trees that are found in abundance on the course. Many residents in the area built and originally owned the course. In later years, it was leased to the City of Edinburg and was eventually purchased by the city. During the winter months, this is a popular course for senior citizens who enjoy walking when they play. It is basically a flat course, therefore easy to walk using a pull cart for golf clubs. Ebony Hills does have rental carts for those who want to ride. It is a very affordable course, which makes it even more popular among the Winter Texans. Highlighting the course is a canal that runs through the layout, along with all the ebony and palm trees that line the fairways. The fairways are common Bermuda grass, while the greens are 419 Bermuda grass.

It is a 9-hole course with multiple tees, so it can be played as an 18hole. It has three sets of tees that have been rated for men. They are 5975 yards rated 68.7/109, 5604 yards rated 66.8/105, and 5249 yards rated 64.9/102. There is a shorter set of tees for women at 4564 yards that are not rated. The course is located at 300 West Palm Drive in Edinburg and tee times can be reserved by calling 956-292-1244. If you enjoy golfing and you want an easier course, give this one a try. •
The Rio Grande Valley is blessed with great weather, as well as great golf courses. There is a course for every player, from beginners to accomplished golfers. There are more than twenty 18hole courses throughout the Valley and almost as many nine-hole courses. Some of the nine-hole courses are Par 3s, which are perfect for the beginner and for our older citizens who still enjoy the game but are unable to play a larger course. Some of the courses are public and some are private. In each publication, Welcome Home RGV will highlight one of the Valley’s great golf courses.

CHI was founded by Shirley Mendoza over four decades ago and has been providing loving Christian care to needy children in Reynosa ,Mexico, ever since. The heart of our ministry will always be caring for our “Full-time Family,” the 50 - 60 boys and girls who God has rescued from situations of extreme poverty, abandonment, neglect and, sadly, all too often, physical, emotional, and sexual abuse. Our children range in age from a one year old to several in college who have called the Haven their home for 10-15 years. These precious children live with us 24/7, and we are blessed to have seven “Casas” on our 14-acre campus and wonderful Mexican house parents so the children can be divided up into smaller groups and learn what life is like in a Christian family setting rather than a dormitory-style orphanage. The second arm of our ministry is our Christian day school that not only provides a wonderful quality education to 30+ of our pre-school and elementary students but also now serves well over 100 other children from the neighborhood.
Where is your organization located and what are the hours of operation? Our U.S. headquarters are located in Pharr. In addition to handling all of the administrative and public relation aspects of running CHI, we also have a wonderful Thrift Store that serves the needy community on this side of the border, as well. Both the Thrift Store and our office are open Monday - Friday from 9:00 a.m. to 5:00 p.m., and the store is also open on Saturdays from 9:00 a.m. - 3:00 p.m. What kind of donations does your nonprofit organization need? The short and best answer is anything and everything. With clothing donations and household items/ furniture, our volunteers always give priority to what can be taken across the river to be used for the direct care of the children. Excess items are then sorted and sold in our Thrift Store at extremely reasonable prices but still end up being turned into cash for our kiddos, especially since our store is in our own building and run 100 percent by volunteers. Other items that can always be used to care for our family are school supplies, personal hygiene items, and things like toilet paper, laundry detergent, dish soap, linens, etc. With an average of 12- 15 people living in a house, you can imagine how much we go through of all of these items weekly. What kind of volunteer opportunities do you have for Winter Texans, Valley retirees, and others in our community? Many! Our volunteers are CHI’s most treasured resource. The Winter Texans, in particular, are the instruments the Lord chose to get us to where we are today. At present, the only paid employees on the U.S. side are the
Chacons, who serve as co-directors and share a minimum-wage salary. EVERYTHING ELSE, YEAR-ROUND is done by VOLUNTEERS! This means that so much more of every dollar given or raised can be used for the direct care of the children, and that’s something we are very pleased about. Our volunteers run the Thrift Store, help with pick-ups, sort donated items, and help in the office. They bake cookies, clean, and squeeze oranges. Others build furniture, help with maintenance and construction projects, work on our vehicle, and repair broken appliances. Some drive our vans for tours of the home in Mexico and help solicit prizes for fundraising events. Basically, if you have a skill and want to put it to good use for our children, we probably have a place for you. And that goes double for those who call the Valley home year-round , especially to help in our Thrift Store. Do you have any upcoming events you would like Welcome Home Winter Texan readers to know about? Lunch tours to our home in Reynosa are offered on Thursdays from our office in Pharr, or pick-up can be arranged from an RV park for groups of eight or more. March 12, we will be having our renowned MEXICAN FIESTA. Like on the lunch tours, guests
will get to visit our Mexico campus, tour the facility, and have a delicious and authentic Mexican meal, but in addition, they will also get to see the amazing Mexican folkdance program prepared by our talented children and hear testimonies of how God is using the home to change their lives. Cost for the lunch tour is $15 per person or $25 per couple, and the Fiestas are $25 per person or $40 per couple. All travel is by way of the new bridge in Mission off Bryan Rd. (Anzalduas). Once on the other side, we are then less than a 10-minute drive from our Reynosa campus. We thank the Lord that not once have we ever encountered any difficulties on our travels across, nor have our children and staff ever been negatively affected by any of the unrest that has been going on for the last few years. Still, we realize that not everyone feels at peace traveling across to meet the children, so we also have a Fundraising Dinner each year at Rio Grande Bible Institute for those who wish to support our cause in a different way. We’ll have both a SILENT and LIVE AUCTION, fashion show, bake sale, food plates, raffle prizes, etc. It’s a wonderful event, and this year, it will be held March 5 between 4:00 and 8:00 p.m. Please call our office in Pharr for more information on any of these events (956-787-7378). •

I had been a stay-at-home mom
until the kids grew up and flew the coop one by one. It was then that I became what is known as a nontraditional college student. I studied nursing, and upon graduating, certainly fell into the category of a non-traditional brand new nurse starting her career at the age of 49. The year was 1975. I was sent to a 50-bed post-op floor known for having an excellent nursing staff. My director of nurses advised me to let that skilled staff teach me how to nurse. Nurses’ training and theory are very necessary, but I discovered early-on that dealing with patients close-up and being responsible for their care is when the real learning takes place. Our unit cared for post-operative patients, some of whom were very sick and required a great deal of nursing care. Needless to say, as a brand new nurse, I was overwhelmed. Within a month, I was a charge nurse overseeing the care of 25 patients. Luckily I was surrounded by vocational nurses and nurses’ aides who were well trained and efficient. I was new at my profession and felt I had too much to learn too fast, and many times I cried into my hanky after I arrived home from work. My staff felt my insecurity, which made it worse. I decided I might not be cut out for nursing. I asked for a meeting with my head nurse, who was Cajun, profane, promiscuous, and capable of bizarre behavior but a capable leader and an intuitive, caring, skilled nurse. We set a time: I go to the nurses’ lounge to await her arrival. I am unstrung. I was already teary-eyed and had rubbed my nose red by the time she sauntered through the door. She sits down, lights up a cigarette, crosses one ankle over a knee, and blowing a cloud of smoke through her nose, looks at me with those snapping black eyes and says, “So what the hell is your story?” By this time the tears are pouring down my cheeks. I take a deep breath and blurt out, “I don’t feel good about my work here. I may be over my head. The staff knows how inadequate I am, and I feel bad about myself. I worry about my patients. They deserve better.” More tears. She takes a deep drag on her cigarette and says, “Flados, if I didn’t think you were worth a ---(four letter word), I wouldn’t have put up with you this long. Now get

up off your butt and get with it. I will give you six weeks to get your act together.” Without another word, she stubbed out her cigarette and sauntered out of the lounge. (She had a great saunter.) I sat, stunned. What kind of a counselling session was that?!!! It didn’t resemble any of the counselling techniques we studied in nursing school. This is too weird!!! A touch of anger welled up in me, along with a feeling of defiance. I rinsed my face and walked back to my duty station, red of nose but dry of eye. That evening, I internalized my “counselling.” Let’s see now: she indicated she believed I could do my job, she wanted me to try to make it work, and she gave me a time frame in which to do so. Wow! I think I will give it my best shot. And I did. Gradually, what I had found so overwhelming became something I could do. The more satisfied I became with my own progress, the more readily the staff accepted me in my role as charge nurse. Two years later when my head nurse moved to the big city, I was appointed to replace her as head nurse/supervisor of my 50-bed nursing unit. I was ready and eager to accept the position, which I held for 13 years until I retired. (With an interim, three-year stint as assistant director of nurses) It was a great unit when I inherited it, and it became even better under my leadership. I had found my niche: leading a very gifted staff of nurses in an acute care hospital setting. I must give credit to a three-minute counselling session by someone wise enough to know exactly what I needed to hear at a turning point in my professional life. I treasure the memory. • M. while I wait to be safe,” he said as he clambered over to the branch opposite Soljo’s branch. “This is hidden from site...” and the twinkling lights took Jack away. Only, this time, no one was expecting it. “What the ???” Jack was stunned. There was a different look about the tree, besides the storm, which threatened to blow him right off the limb. Slowly, he crawled backwards to sit in an elbow of the magnificent tree. He could feel the strength of the tree as he huddled closer against it, as if it were protecting him from the wind and rain. “What time is this? Am I behind or ahead? Dare I leave this tree to see?” Not able to resist, he gave himself one hour to see if he could tell what period he was in. Crawling down, he strode out, carefully noting his direction and making a mental trail so he could get back to the tree. Creeping up to the river’s edge, he peered into the dark, churning waters from the heavy winds and looked both ways. Coming from the west was a white flatboat, piled high with goods for the settlers living in the Valley. He saw a soldier sitting on the bales under the cover of the deck; his long rifle lay across his lap. “Hmm, the early 1800s, I would think,” Jack thought. Right at that moment, the soldier saw him, jumped to attention, and, raising the gun to his shoulder, shot it directly at Jack. “Oh, no!” cried Jack as he made a dash toward the tree. Whissssss went the bullet as it raced past Jack’s ear. Running with everything he had (which at 70 wasn’t what it used to be), he made it to the tree, ignored the rain, and climbed to the branch which had brought him
here. Frantically crawling out on the limb, he only hoped the magic would work again. Hearing one more bullet headed his way, he crept along, waiting for the sparkling lights to encompass him. Making one last desperate dive, he gave it all he had and threw himself along the limb. “Hello, there!” Jack called once again. The four on the ground jumped, not expecting Jack. “What happened? Where did you go?” George yelled. “The darndest thing! That other limb sent me to another time, probably 100 years ahead of Soljo’s, who did get back to his time.” Jack sat on the limb, still damp from the storm of his last stop. “I wonder if I went out on another limb if I could go into another time period?” “Come on down, Jack. Let’s not try anything more today. It’s getting late.” Sadie was nervous about the tree and afraid the man in the blue truck would return. “What are we going to do about the tree?” Frank asked. “Should we warn people about it or say nothing?” “Before we do anything, let’s come back tomorrow and do some climbing as a group and see what happens. I, for one, don’t want Jack to be the only one who has fun in this venture.” As a tour guide, Phyllis was a brave soul. Having heard Jack’s tale of his short trips in time, the four made up their minds. Tomorrow would be their day to take a trip in time. Potluck Possibilities: Great Food To Share

Last week we made queso dip. This week we’ll explore tostadas. Translated,
tostada means “toast.” Tostadas are usually six-inch corn tortillas that have been baked or fried. They are available ready-made, or you can fry them on your own. They can be used as a snack, an appetizer, or a meal. The toppings used can be the same as those used on a taco or can be something special. So let’s dive in and make some great tostadas. First, you need the corn tostadas. Purchase them or make your own by frying a whole, six-inch corn tortilla in a deep frying pan with about a quarter-inch of corn oil heated to about 375 degrees--medium-high heat. You want them to sizzle when you place them in the oil but not so hot that the oil begins to smoke. Fry them one at a time, using tongs to keep them submerged in the oil and to turn them. They will brown quickly; it takes only about a minute. When they turn light brown, remove and place on a plate lined with a paper towel, and sprinkle immediately with fine-grained salt. The second step is to prepare the main ingredient of your tostada. This is one I like to make.

1 small head of red cabbage 1 small white onion, chopped 2½ teaspoons kosher salt ½ cup vegetable oil ¾ cup white sugar ¾ cup white vinegar
Shred the cabbage with a sharp knife. Place in a glass or metal bowl with the onion and salt. Mix well. In a small saucepan, bring the oil, sugar, and vinegar to a boil for the dressing. Pour over the cabbage/ onion mixture but don’t stir. Cool. Cover and refrigerate overnight.
Chorizo and Refried Bean Tostada Topping • 1 10-ounce package of beef or pork chorizo sausage. • 1 15-ounce can of refried beans – or you can make your own – a topic for some other time. Slit open the chorizo package and fry over medium heat until the sausage is cooked – about 5 minutes – breaking it up as it cooks. Remove from the heat and use a slotted spoon to remove the sausage from the pan; drain out as much of the fat as possible. Discard excess fat. Place the refried beans, including the juice, in the frying pan. Stir and heat until the beans soften. Add the chorizo and mix together. You will spread this mixture on your tostada. I do not add seasonings to this particular mixture but rather rely on the additional toppings for flavor. The third step is to prepare your additional toppings. I like to prepare a selection of toppings and set them out as a “tostada bar” so guests can build a tostada according to their own personal taste. Toppings can include: crema or sour cream, thinly sliced lettuce, chopped spinach, chopped and seeded tomato, chopped onion or sliced table onions, ripe olives, sliced or diced avocado, chopped and seeded bell peppers, shredded cheese (cheddar, Mexican blend, Mexican melting cheese, or crumbled queso fresco). Use anything you like! To serve, spread or spoon a layer of your main ingredient on the tostada, add additional topping, and serve.
Here are some other ideas for creating your own tostada main ingredients. These are not actual recipes but suggestions for other main ingredients for your tortillas. Be creative – it is hard to go wrong here! Chicken tostadas – Poach some chicken breasts and shred on tostadas. Try poaching the chicken in broth with cumin, garlic, and poultry seasoning for added flavor. Another easy approach is to use shredded grocery-roasted chicken. Shrimp tostadas – clean, devein, and fry Texas Gulf shrimp in oil or bacon grease with a little cayenne pepper, garlic, salt, and diced shallots. Tilapia tostadas – fry tilapia fillets in oil after drenching in flour. Season with paprika or chili powder and salt and pepper. Breakfast tostadas – fry breakfast sausage, mix with scrambled eggs, and cover with cheese. You can also vary the basic recipe by covering your tostada with cheese and microwaving them for a few seconds until the cheese is melted. Cheese and Green Chile Beer Bread • 3 cups self-rising flour (or make your own S.R. Flour using 1 cup all-purpose flour, 1 ½ teaspoons baking powder and ¼ teaspoon salt) • 1 egg, beaten • ½ cup shredded sharp Cheddar cheese • 1 can (4 oz.) chopped green chiles, your choice of mild or hot • 12 oz. any brand of beer (you can use non-alcoholic, if you wish) • 1 Tbsp. grated parmesan cheese Preheat the oven to 350 degrees F. Spray a loaf pan. Drain the green chiles well. Mix the flour and the two cheeses, stirring to fully combine. Add the beer and egg and stir until there is no dry flour visible, but don’t beat it. Stir in the green chiles evenly. Put the batter (it will be thick and lumpy) into the prepared loaf pan and bake for 1 hour. Test for doneness with a toothpick. Remove from the pan and place on a wire rack to cool. Immediately run a stick of butter over the top, letting some of it melt into the nooks and crannies of the bread. Comforting Classic
Beef Stew
Preheat a large heavy-bottomed saucepan or Dutch oven over medium-high heat with the oil and butter.
1/4 cup pure olive oil 3 tablespoons butter 2 cups all-purpose flour 2 to 3 pounds beef chuck shoulder roast, cut into 2-inch pieces (this cut may also be called chuck roast boneless) Sea salt and freshly ground black pepper 1 bottle good quality dry red wine (recommended: Burgundy or Merlot) 8 fresh thyme sprigs 6 garlic cloves, peeled and smashed 1/4 teaspoon ground cloves 2 bay leaves 2 1/2 cups beef stock 9 small new potatoes, scrubbed clean and cut in 1/2 1/2 pound carrots, peeled and sliced thick 2 cups frozen pearl onions 1 pound white mushrooms, cut in ½ Sugar Extra Virgin Olive oil Fresh flat-leaf parsley, chopped, for garnish
While the pan is heating, arrange the flour on a large dish. Season the cubed beef with some salt and freshly ground black pepper and then toss in the flour to coat. Shake off the excess flour and add the beef pieces in a single layer to the hot pan. Do this in batches so as not over crowd the pan. Be sure to brown all of the pieces on all sides and then remove them to a plate and set aside. Add the wine to the pan and bring up to a simmer while you scrape the bottom of the pan with a wooden spoon being sure to loosen up all those delicious bits. Once the wine is hot, add the browned meat, thyme, smashed garlic, ground cloves, freshly ground black pepper and salt, to taste, bay leaves and beef stock. Bring
the mixture to a boil and then reduce the heat to a simmer and cook uncovered until the liquids start to thicken, about 15 to 20 minutes. Cover and cook on low heat for 2 1/2 hours. After 2 hours add potatoes, carrots, pearl onions and mushrooms, as well as a pinch of sugar, which will balance the acid from the red wine. Turn the heat up slightly and simmer, uncovered, for 30 minutes more, until the vegetables and meat are tender. Taste and season with salt and pepper and remove the thyme sprigs and bay leaves. To serve, place the stew in a soup bowl, garnish with parsley, and drizzle with olive oil. Serve with a piece of crusty bread.
