For those of you who aren’t familiar with the Smokin’ on the Rio barbecue cook-off, come to the Mercedes Livestock Showgrounds Saturday, February 27. and see what all the fuss is about. This year, over 200 cooking teams will come to compete for the Texas Grand Championship award – and that includes the Smashed Potatoes cooking team that yours truly is a member of. As a spectator, you can wander the aisles and sample brisket, chicken, ribs, fajitas, and beans. If you would like to judge a category, there are opportunities for you, as well! There will be live music throughout the day, and I can promise you won’t go away hungry. What I love about Smokin’ on the Rio is that 100 percent of the proceeds are used to purchase student projects at the Rio Grande Valley Livestock Show’s Sale of Champions. Smokin’ on the Rio is passionate about promoting the involvement of students in the agricultural lifestyle, and the primary goal is to insure that all students in the auction get a fair return on their livestock investment. I’ve participated in the cook-off for over 10 years and have proudly served as a volunteer for the last six. Come on out and see me. It’s just five bucks to get in, it’s crazy-good food, and the proceeds go to a good cause. • We’re just connecting the dots,

Discussion followed pertaining to AFib and how, when the atrium of the heart is out of sync, it can cause blood clots, which is why many people are on blood thinners to prevent heart attacks and strokes. Mabel’s Building Mission—Building Homes and HOPE Special to Welcome Home RGV

An off-shoot of Mabel’s Free Clinic

in Nuevo Progreso, Mexico, is Mabel’s Building Mission. Their primary mission is to build a shelter for indigent Mexican people. Just like the medical clinic, Mabel’s Building Mission was begun by Mabel Proudley and carried on by Winter Texans Herb and Bev Feierabend. They began by building three houses in 1991. Canyon Lake RV Resort volunteer builders started building houses in 1993. To date, Mabel’s Building Mission has built 467 houses. Usually 20 houses are built by volunteer Winter Texans between mid-November and mid-February. The first houses were built with dirt floors. Now each house is built of plywood on a cement pad. Each house measures 12’ x 16’ with one door and two windows. The walls are unfinished; the roof is plywood with rolled roofing nailed on. Windows are all used and are donated by Winter Texan residents. Currently, some supplies are hauled to Mexico in a donated pick-up, which also hauls a gas-powered generator to run saws and a variety of tools. Some of the lumber is purchased in Mexico, and

some is purchased in the U.S. All building is coordinated by Gloria Juarez Martinez, a Mexican national who insures that the land for the house is owned by the family and that the father has a job. Gloria gives information about the family to builder leaders Bill and Phyllis Kunzman. Phyllis sorts donated clothes to find appropriately sized clothes for each family member. Each family also receives a box of food staples, pots and pans, a cross, a Spanish Bible, and a wooden table and bench. Each family member also receives a quilt made by the Canyon Lake Quilters. At present, the cost for supplies to build each house is about $1400. Funds for this come from various fundraisers at Canyon Lake plus many donations from churches and individuals up north. Mabel’s Building Mission is a nonprofit charitable 501 (C)(3) organization. Tax-deductible donations may be sent to Mabel’s Building Mission, 4770 N. Mayberry # 58, Mission, Texas 78573. Canyon Lake residents also sponsor about 50 school children in Nuevo Progresso. Education is not free in Mexico, so children must pay

approximately $80 for elementary school and $250 for high school, which includes the cost of their school uniform. Sponsors receive a yearly picture of their student and a copy of the report card. These services are coordinated by Kay Olsen of Canyon Lake and Gloria Juarez Marintez. Families are extremely grateful to have a home of their own! In addition, families have received a new sense of independence, security, and courage to work to improve their economic condition. The McAllen Creative Incubator Welcomes New Tenant! Special to Welcome Home RGV

Her

name is Victoria Lopez, and she is a poetry writer and the newest tenant at the McAllen Creative Incubator, Studio #8. Victoria currently attends UTRGV and is majoring in English. Between her time spent at school and job obligations, Victoria began writing a novel, merely as a hobby. Victoria is a go-getter who, at the age of 25, became a published author by completing that first novel, Fire in May. “Writing was how I had come to identify myself; it was the method in which I would isolate my feelings so that I could better understand them, and myself. It was then that I had to ask myself this question: Am I just someone who likes to write or am I a writer? From then on, I began to introduce myself as an aspiring writer,” said Victoria. Victoria’s desire is to become involved in the community and to lend her voice to those who might not yet know their own. As part of the McAllen Creative Incubator, Victoria will be able to further contribute to the community, the Arts, and the creativity in youth by spreading this message: You are worthy. Additionally, during the First Friday Art Walks, Victoria will be practicing an open-door policy and will invite anyone who would wish to speak about writing, the Arts, local involvement, or any topic, in general. More than anything, she aspires to break the barriers people keep around in their hearts and, in turn, inspire the community to embrace their most perfect potential. All Valley Boat Show February 26-28 in McAllen Celebrating 30 Years with a Chance to Win $50,000 Special to Welcome Home RGV

The Lower Rio Grande Valley Boating Trades Association (LRGVBTA) is proud to announce that 2016 will mark its 30th All Valley Boat Show. It’s such a monumental year, and the LRGVBTA has signed another three-year commitment with the McAllen Convention Center to host the All Valley Boat Show! With almost 60,000 sq. ft. of Exhibit Hall display space at the McAllen Convention Center, the show will feature an impressive selection of boats, fishing gear, apparel, and much more. Local advisor is Texas AgriLife’s Extension Agent Tony Reisinger. Javier de León is the Texas Parks and Wildlife Department advisor. How and when did your organization begin and who does it serve? The Rio Grande Valley Chapter, Texas Master Naturalist began in the Valley in 2002. Texas Master Naturalist is a volunteer educational program of the Texas A&M University AgriLife Extension Service and Texas Sea Grant and Texas Parks and Wildlife. It is designed for people who want to learn about, and help sustain, the Lower Valley’s native resources. There are 44 chapters throughout Texas.

What are the hours of operation? Since most of our work is done at various nature parks and refuges, the center is open only for our monthly meetings and occasional workshops. The chapter meetings, held the second Tuesday of each month, feature a guest speaker. The meetings start at 7:00 p.m. and take place at the Cameron County Annex building, located at Williams Road and Hwy. 83/77 in San Benito (1390 W. Expressway 83). The public is invited and welcome to attend the presentation free of charge. What kind of donations does your nonprofit organization need? Monetary donations are always welcome and enable the chapter to promote programs that enhance and protect the native ecosystem of the Lower Rio Grande Valley while furthering public education and awareness to the organization’s goals. Although monetary donations are important, volunteers are the meat and potatoes of the organization. Members’ volunteer hours equal dollars for the state when requesting federal grants

in support of current and future nature conservation projects, including many in our Lower Valley counties. What kind of volunteer opportunities do you have for Winter Texans, Valley retirees, and others in our community? Rio Grande Valley Chapter, Texas Master Naturalists learn how the Lower Valley was formed, how it progressed, and how to help preserve the native nature of our amazing lands and wildlife. They learn the gamut of our unique ecosystem through a series of lectures and field trips led by local university professors, field experts from Texas Parks and Wildlife Department and the U.S. Department of Agriculture, and noted authors, photographers, and other local professionals. Once volunteers are trained, there is a plethora of opportunities, including working as nature guides at Valley preserves and refuges, maintaining trails, coordinating projects in city-owned parks, and working with specialty groups to help endangered species on land, in the air, and in the Gulf. Alamo, the billiards group has a margarita fundraiser, raising money to maintain our tables and other necessary equipment in our Pool Hall. This year, we sold 300 tickets, and everyone had a great time. Elvis even showed up to perform. We also had panchos (nacho supreme, as they are called up north). The theme this year was Mardi Gras. The party was actually held on Fat Tuesday. We also had a Mardi Gras parade before

Bowl, it was the “50th Weekend” at Seven Oaks Resort Four couples who celebrated their 50th wedding anniversary between April 1, 2015, and April 1, 2016, were honored on the afternoon of Super Bowl Sunday. The Corral was then transformed from a reception hall to a sports bar lounge for the celebration of the 50th Super Bowl between the Carolina Panthers and the Denver Broncos. Of course it is old news by now that the Denver Broncos won. The honorees of the 2016 50th Wedding Anniversary party were Mr. and Mrs. Aschenbrener, Mr. and Mrs. Hansen, Mr. and Mrs. Archer, and Mr. and Mrs. Hemminger. The honored couples, along with the audience, were entertained by presentations of their love stories assembled by Seven Oaks Resort “investigators,” Karen Beck and Sharon Blenken, and presented with the assistance of Carol Pugh. Doug Overman’s solo rendition of Love Me Tender completed the formal program. After the symbolic “cutting of the cake,” all were treated to cake and punch. It was indeed a Super Sunday! •

Frank has waited for Sunshine RV Parks’ annual Dog Show, held in March, for exactly one year. He is working with Harley, his pup of seven years, practicing his “high five” handshake trick. Last year, Larry entered Harley in every class he could and totally expected little Harley to come out a winner. In each class, when they walked by with the trophy, Harley pulled at his leash wanting that trophy to be his. It was not to be, as the judges passed on by to award the golden dogtopped trophy to another participant in the class. Larry felt Harley’s disappointment and told me, “Harley is the son I never had.” This year, Harley is once again entered in the Sunshine Dog Show March 8, and no matter what, Harley will go home with a three-foot trophy topped with a golden German shepherd. Winner or loser, Harley will come out on top in the trick class. You may ask how I know this. Well,

that impressive trophy was ordered and paid for by Larry himself for the little dog who is like a son to him. On another note, every day from 9:00 – 10:00 a.m., Sunshine RV Parks’ residents can attend their popular exercise class. Heney Frank has put both ladies and gentlemen through their paces and has kept muscles toned and bodies conditioned for nearly 20 years. & Science is honored to present Les Diners de Gala by Salvador Dalí from March 10 to June 30. The exhibition features lithographs by the leader of surrealism, who illustrated a cookbook in 1973 in collaboration with a secret chef. In conjunction with the release of the book, Dalí produced the 12-lithograph suite. which will be on display. In the cookbook, dedicated to his wife, Gala, Dalí illustrated each of the 12 chapters. With 136 recipes, this collection of eccentric formulas includes an entire chapter on aphrodisiacs, the correct use of atteletes (meat jewelry), and sketches of limbless dwarves eating eggs. Les Diners de Gala is uniquely devoted to the pleasures of taste. Food was a favorite theme in much of Dalí’s work. His paintings, prints, and other works are filled with images of bread, fish, lobsters, sea urchins,

grapes, meats, and more, a colorful world in which Dalí’s creative genius was cooked to perfection. Let’s eat! moved to Pharr South after my husband died 18 months ago. Although I knew a few people here and had a few friends, they were all married and I missed my husband greatly. I had unpacking and DIY projects to keep me busy, but evenings were hard. A lady came to visit from the park named Kathy. She mentioned she had been thinking about starting a widows’ support group in the park for five years. There were 10 of us who lost our husbands in 2014, and this seemed like a good time to start. The first meeting was a simple coffee/tea and snacks at Kathy’s. We all introduced ourselves and gave a brief story of when and how we lost our loved one. Some died quickly and others lingered and suffered. No matter how they left, we all had the same emptiness. The love and support we could offer each other was apparent. Although we didn’t feel merry at the time, after a few months we settled on the name “The Merry Widows,” which is something we all wanted to be. We did not want to grieve forever. The group started going to lunch or breakfast once a month. Some play cards together. They attend concerts, plays, and movies together. Some even took a trip to Branson together during the summer and took in some shows there. One year later, we still grieve. Not as often or as deep. The memories we made with our husbands get us through. The help and support of others is wonderful. It’s nice to know we don’t have to give in to depression or sit quietly alone (although there are moments when that’s what we need), that there is someone who understands and is willing to listen or just sit quietly with you. It’s nice to know you can call someone or just show up at her door and feel welcome

to come in for a tea or coffee without feeling rejected. The ladies have told me that when they are out sometimes they are approached about the group. There seems to be a need/interest from churches and other parks. If you’re alone, talk to some of the other ladies in your park or church and see if this is something they would be interested in starting. It doesn’t cost anything but time, and the rewards are endless. Whether you have been a widow for five years like Kathy, or newly widowed, grief at one time or another touches us all. Reach out to a neighbor. Plan one activity a month to start, like we did. Get together and laugh. Learn to enjoy life again. I found being active is the best medicine, and having someone to share life with makes it more fun and interesting. We come from different lifestyles and backgrounds and different parts of the country. But we all share a common bond. We all want to feel like we still have something to offer. Support, laughter, outings, or an ear can (and does) make all the difference in the world. This seems to be Kathy’s calling, and I for one am grateful for that knock on my door. I’ve met some kind and gracious ladies since attending the group. I learned I’m not alone in this thing called grieving. Although I don’t attend the monthly luncheons or outings now, it’s nice to know I am always welcome. I hope this inspires more ladies to get together and work through the changes it seems we face daily. It is a life-changing event, but with the help and support of others, it is a little easier. Thank you, Kathy and The Merry Widows, for your love and support. Keep smiling. You’re all beautiful! •

you having trouble in your life? There is an answer to all your problems. It does not make any difference if it’s a large problem or just a simple one. The answer is found in God’s word. Jesus knew that troubled times were coming, and the last time He ate with His disciples, He said, “Let not your heart be troubled. You believe in God. Believe in me also.” Jesus knew He was going away. His time on this earth was just about over, and He was going back to Heaven. He told the disciples that “in my Father’s house, there are many mansions, and I go to prepare a place for you.” The promise was that Jesus knew they would be worried and troubled, but He said I will come back for you, that where I am you may also be. Now, most of us we would be like doubting Thomas---how will we know where you go and how will we know the way? Jesus explained, “I am the way, the truth, and the life. No man cometh unto the Father but by me.” In life, trouble will come, but Jesus

overcomes the problems of man. He conquered sin and death, and best of all, He promised to come back for us. But you have to trust in Him and ask Him to forgive you and come into your life and save you and be your Lord and Savior. What is your answer to God? Are you facing something that is too big for you to handle? Nothing is too big for God, He can handle all your problems, but you have to allow it to happen. If we try to do things on your own, most of the time we make too many mistakes. God does not make mistakes. God is willing to help you, regardless of what is going on in your life. His power does not weaken over the years. God has the power to help you in time of need. Will you allow Jesus to be your Lord and your Savior? He desires to be, but you have to ask Him to come into your life. Will you do this, before it is too late? Heaven is a place prepared for prepared people. Are you prepared? Jesus is coming back. Are you prepared to enter eternity? •

“The Circus in South Texas” or “The Valley of the Pacyderms” Part II

have also been major magic shows touring Texas under tents. “The Willard Show” was a large magical “tenter” that toured Texas beginning about 1915. In the 1940s, the Texas-based Plunkett family toured a repertory show. A “rep show” would set up their tent for a week and offer a different show every night. The shows might be comedies, melodrama, vaudeville, circus acts and magicians, etc. The huge Dailey Brothers Circus was quartered in Gonzales, Texas, until 1950. The “Dailey Show” was a major railroad show, that is, a show that traveled by train. If you read the book Water for Elephants, it was in part based on the Dailey Brothers Circus.

There have been many pachyderm-type “Winter Texans” based here. One of these was Bobby Gibbs’ herd of elephants: Marie, Shirley, and Ione. (They are all called “bulls” in circus jargon, in spite of the fact that they are mostly females). Elephant trainer Bobby Gibbs brought me to Mission in 1972. Gibbs suggested that I spend the winter in “The Valley.” I drove from Minneapolis and parked my 17-foot Pathfinder travel trailer on his acreage at 3 Mile Line and Inspiration Road north of Mission. Sometimes other elephant trainers would stop by to visit. They would “stake out their herd” alongside Gibbs’ trio, and it made quite a sight--tons of elephantine flesh swaying, trumpeting, and eating. All of that eating produced mountains

of results at the rear of the row of gigantic herbivores. When word spread of the value of elephant byproducts as garden fertilizer, people began to show up with buckets to get “fertilizer to go” free of charge! Elephants have relatively inefficient digestive systems, resulting in manure that is high in nutrients. Often neighbors brought oranges to feed the elephants. After consuming hundreds of oranges, the elephants’ digestive systems would pass the fruit whole. Eventually the animals would just turn up their trunks in disgust when offered a citrus treat! Today, besides the Vazquez show, there is one remnant left of the circus families that called the Rio Grande Valley home: your humble correspondent, Pat Davison, and his family. Despite

living fewer than two hours from South Padre Island, it seems I rarely find opportunities to head out there. So when I do find an opportunity, I jump at the chance to try something new. Work happened to take me out to Port Isabel recently, and I decided to head on to the Island to eat at a place I’d wanted to try for quite a while, BurgerFi. It is located on the north side of the Island on Padre Boulevard, just about two-and-a-half miles north of where the bridge brings you on to the Island. Walking in, you could already tell how dedicated they are to presentation. While many restaurants may have a bit of clutter here and there, BurgerFi is spotless. Presentation isn’t just about looking nice, though. I’m not exaggerating when I say that this was legitimately some of the best customer service I have ever experienced. We were helped by the general manager, Donny, who truly has a passion for his product that is rarely seen any more. You’ll see what I’m talking about as we go on. BurgerFi has a wide selection of craft beers. Whether you’re looking for stouts, IPAs, lagers, or something else, they have something to accommodate you. If I wasn’t familiar with a type, or hadn’t tried a specific brand, Donny was quick to explain the back story of the brew and to let me try a sample. I wound up drinking an IPA, but if you’d prefer one of the old standards like a Bud/Coors/Miller Light or a glass of wine, they can accommodate you there, too! To eat, I ordered their Twenty-Eight Burger, a ground brisket burger with Swiss and blue cheese, lettuce, tomato, pickles, and their special BurgerFi sauce. It was fantastic. The buns were fluffy, the toppings were fresh, and the beef was two 28-day, dry-aged ground brisket patties that

are still making my mouth water as I’m writing this. You’ve almost certainly never had a burger like this before. Something interesting about their burgers is that they have their logo emblazoned on the top of the bun, so they make darn sure you’ll remember where you had one of the best burgers of your life. For my side, I ordered the Cry & Fry (an onion ring and French fry combo). When I was picking it up from the counter, Donny insisted the onion rings he gave me were overcooked and that he would make me some more. I wholeheartedly disagree that those onion rings were anything but perfect, but, as I said, he has a passion for his product and refuses to be content with anything he doesn’t consider to be absolutely perfect. He brought me out another batch, and they were just as good as the first. Now, normally, I don’t have much of a sweet tooth. Considering how good the rest of the meal was, though, I figured I’d grab some dessert to go. On the recommendation of some other customers, I tried the Key-Lime Concrete. This is essentially a keylime pie in a cup, with alternating layers of key-lime-flavored frozen custard, whipped cream, and a graham cracker crust. It was rich and delicious, second only to my Aunt Mel’s homemade key-lime pie. Overall, the food was the highest quality, something you’d find in a gourmet restaurant rather than a burger joint on the Island. If the food was exceptional, the customer service was extraordinary. Many businesses claim they treat their customers like family, but eating at BurgerFi, I actually felt like I could’ve been at my cousin Donny’s. When I left, he actually gave me a hug and told me to come back soon. If he keeps the experience consistent, I have no doubt that I will. •

RV Kitchen Tips – Instant Pot by Dana @ourtravelingtribe.com

One of the hardest things about full-

time traveling has been the challenges that I face with trying to cook for a (larger than average) family in our small RV kitchen! There are certain kitchen tools that made my job much easier in the house that I just don’t have room for in the RV! Our kitchen in the house had room for every kitchen toy I could want, as well as a pantry. I also had a second 25 Cu. Ft. fridge, and three large chest freezers. I used commercial-grade (and sized) cookware, made double batches of everything, and the kids could make whatever they wanted whenever they wanted. We weren’t restricted by propane levels, outdoor temperatures, or food storage issues. In the RV, things are different. Worth it, but very different. I had to say goodbye to many of my “fav” kitchen items. A few did make it into the RV, but storage is still a touchy issue (nonexistent!). That’s why I was so tickled to find this new multi-use ‘toy’! The Instant Pot is a 7-in-1 cooker – it is a slow cooker, pressure cooker, rice cooker, steamer, and yogurt maker, that also sautés and steams, and works as a warmer.

With the Instant Pot, I was able to replace my rice cooker and crock pot both with this one item, saving a ton of room (relative) in my small kitchen, and I was also able to add in the benefit of a pressure cooker. I am fabulous at forgetting to take dinner out to thaw, so the pressure cooker saves me time (and again) on my last-minute efforts to feed the tribe something decent! I use it to cook meat from frozen, cook thawed meat last minute (roasts in 20 minutes!), make stir fry, simmer broth (including bone broth in 90 minutes), and make perfect rice. I can cook everything I used to cook in the slow cooker in it, and it even has a delay start so we can throw something in, leave for the day, then come home to

a perfectly cooked dinner (beans and rice is a fav for that). When I first received my Instant Pot, there were several things I loved about it straight out of the box! 1. It comes with a stainless steel pot! Many of the all-in-one cookers have Teflon pans; we did not want Teflon, for health reasons, so not having to spend $30 to replace a Teflon pot with a stainless one made me a happy camper! 2. It comes with a small recipe book made just for the Instant Pot! While I didn’t make a recipe out of the book for my first meal using the IP, I did read through several recipes out of the book, and that was enough to get a handle on how to use it. The IP also includes a quick reference guide that is helpful if you are impatient to use it (that’d be me). 3. The IP came with all sorts of fun add-ons, from a measuring cup for rice to the yogurt/canning insert, and a compact 20-page user’s guide (yes, it’s that easy). With a quick wash of the removable cooking pot and the lid, the Instant Pot was ready to use! The first thing I made in it was beans and rice. And I LOVED the ease of using one pot! I cut up raw bacon (use scissors on multiple raw slices – SO much easier than cooking slices and then crumbling!!!), then added green onions, onions, and celery on top, and hit the sauté button! The fat from the bacon was enough to fry the veggies, and when they were done, I simply added the dried beans, chicken stock, ham bone, and seasonings in on top of the bacon – no frying pan to wash! I don’t cook the rice and beans on the pressure cooker settings, but rather with the slow cooker button. Occasionally I will open the pot to stir the beans and break up the ham, but I’m pretty sure that is optional as I’ve yet to have any issues with foods sticking to the bottom of the pot. I did start beans and rice late one of the times that I made it and was worried that the beans would not be soft enough. I put it on pressure cook for 10 minutes, and they were

fabulous. You can even hard boil eggs in the Instant Pot. That is actually one of my favorite uses for it!!! I can hardboil over three dozen at a time--in a shorter time than on the stovetop-- it doesn’t use propane, and they peel like a dream! I cook them with one cup water on low pressure for four minutes, then either release the steam after five minutes or just let it pressurize on its own (which is what usually happens around here because I forget about them!). I’m pretty taken with this cooker! I use it at least four times a week; last night I pressure cooked pork loins for King Ranch (pork instead of chicken); tonight was perfect jasmine beef rice for stir fry. We also use it to heat and boil water (sauté setting) and use it as a sauce pan, especially when it is hot out as it doesn’t throw off as much heat as the stovetop. The Instant Pot is energy efficient, easy to clean, and so handy as I can turn it on and go about whatever our plans were for that day. While I know I would have liked it in the house, in the RV, it’s indispensable! Because it is energy efficient and uses electricity, I’m saving on propane. And because it is taller than wider, it takes up less space in the cupboard than my crock pot did. Since the interior cooking pot is removable, it is easy to clean (and I haven’t had anything burn/stick!). I love the versatility of the Instant Pot, and am finding more and more ways to use it! You can even purchase a second stainless steel interior pot to make multiple items for one meal; cook whichever dish takes the longest, then remove the first pot of food, put in the second, and cook. The IP cooks so quickly that your first dish will still be hot. There are actually several different models of Instant Pot available. I have the Instant Pot IP-DUO60 7-in1 Cooker , which is the six-quart, 3rd-generation model. There is also a five-quart model, as well as a new Bluetooth-enabled one! I’m not techy enough to want to even attempt it, but apparently you can program the cooker to do different modes in succession for more complicated dishes. I love the six-quart, 3rd-generation pot I have, and it has made cooking in the RV so much easier and less stressful! my husband of 60 years died in 2006, my future seemed a bit hum-drum. I associated with other widowed women, and they were nice but seemed pre-occupied with their health issues and what they ate. I began to wonder, “Is this it from now on, ad infinitum?” No one in my circle of friends gave a fig about viewing the new exhibit at the museum in Edinburg. I wanted to go but not by myself. Feeling a bit disconcerted, I asked an unmarried friend of my husband’s if he would accompany me to the museum. When I said I was not safe at any speed, he readily offered to do the driving. Upon arrival at my door, he was courteous, rather formal. After settling comfortably in his car, we headed for Edinburg on Highway 107, which I had assured him was the scenic route. Even though it was typically hot for August, we had had ample rain, and things were green and lovely. My first thought was, Hey! Nice car. I was feeling a bit awkward, and our conversation reflected that feeling on both our parts. As we were tooling down the road, he said, “Please don’t touch my dashboard; it is set like I like it, and if you touch some of those buttons, I will have to reprogram it.” My reply may have indicated my feeling about his statement. I said, “I will try with all my might to keep my hands off your dashboard.” As we drove along, I felt like I was sitting in a frying pan and wondered if this was some kind of an emotional reaction. But NO, my rear end was hot, so I said, “Bill, this seat is burning my derriere.” He looked down at his “dashboard” and said, “Oh my gosh! The seat warmer is on high!” I knew that already. He apologized profusely. By the time we arrived at the museum, my bottom had assumed normal temperature, and we had been lost only once and had taken two wrong turns, but we did enjoy the museum visit. Later we enjoyed a pleasant lunch, and after returning to the car, Bill couldn’t find his driving glasses. He proceeded to look in all of the little receptacles (and a Lexus has lots of them) to no avail. He decided he would go ask in the restaurant, and as he stepped out of the car, he looked down at the seat, and there they were; he had been sitting on them. He straightened them a bit, and with his glasses once again resting comfortably on his face, we left the

parking lot and eased back on to the Expressway toward Harlingen. Traffic was heavy. We were about eight miles down the road, traveling in the center lane, cars to the right, cars to the left, cars in front, and cars in back when there ahead of us in the road lay a large cardboard box. We were stuck. He hit the box head on. Then began a noise that created a shiver looking for a spine to run up. The box had lodged under the front right fender on my side and was getting smoking hot. I could smell it! We had to stop and do something about it, so Bill began to inch his way into the right-hand lane, then to a place where he could pull off onto the grassy shoulder of the roadside. Meanwhile, the traffic was zipping by at a rapid rate. He then began to drive forward and backward, trying to dislodge the box. It was jammed tight. “Wait” I said. “Why don’t I get out and check the box, and you do the driving forward and backward?” He agreed that was a good idea. There we were on the shoulder of the road, Bill driving backward and forward, me standing in the sticker burrs, among the red ant beds, in my white slacks, yanking at the box after each maneuver. It took many repetitions, but I was inching the box out, little by little, until with one final tug it came free, but it no longer resembled a box. It would have fit into my purse. I was hot, perspiring, and I flung the box away into the ditch. I littered. I got into the car, and we proceeded on our way. Then he turned to me and said, “You know I HAD to hit that box, don’t you?” “Yes, I know you had to hit the box.” Gad! Men amaze me! We drove on and he said, “Since we have to drive past Weslaco where I live, why don’t we stop at my house for a cold drink, and I will show you some paintings that I inherited from FIRST DATE CONTINUED ON NEXT PAGE >>

met for a networking opportunity at Tropic Winds Tuesday, February 8, in Harlingen from 3:00-5:00 p.m. We were welcomed with refreshments, then met their 1st Responder executive officers: Larry Welder, president, Marlys Landmark, vice president, Leo Cassidy, treasurer, and Mary Moore secretary. Master of Ceremonies for this meeting was Bob Sonia, an EMT from New York who is now one of Tropic Winds’ 1st Responders. Karen Hargrove, one of Tropic Winds’ retired nurses spoke on how Tropic Winds began their Responder program about three years ago. Darlene Snell, a retired nurse, explained the procedure used when they respond to a call and arrive at a site. Liette Forrett, another retired nurse, introduced the “blue light special,” the golf cart Tropic Winds uses to transport their equipment and supplies to an emergency call. The unit was customized with a toolbox-type chest to hold supplies, easily identified by labels on each of the drawers for organized access. The cart also had a high beam spotlight for visibility after dark and a plug-in adapter for their electrical supply. Mary Moore spoke about the creation of a monthly calendar scheduling where the cart is, ready for use each day, and

the list of current members with contact information and their certifications and accreditations. Marlys Landmark, also a retired nurse, answered questions from the floor, with considerable discussion by several resorts on how their program works. Numerous questions were asked by one resort that is interested in starting a program. Medical topics, presented by Rita Huether, WHRGV 1st Responder coordinator, were Eye Injuries and NonTraumatic Conditions, Acute Abdominal Pain,with a case study, and Femur/Hip Fractures. Considerable information was shared by many of the 1st Responders, based on their experiences. We enjoyed having so many participants joining us to share as we network, sharing ideas and information concerning the RGV 1st Responder Program. my mother.” I couldn’t believe my ears. I laughed. “Are you inviting me to your bachelor pad to see your etchings? This is so 19th Century, I can’t believe it.” And I laughed some more. He meant it. We stopped by his home. He served me a cold drink and did indeed show me his mother’s “etchings,” which were beautiful. Then he took me home. Upon arrival at my house, he walked me to the door. We shook hands, and he said he had had a wonderful time….then added that if I ever wanted to do this again to give him a call.

I said, “No-o-o. If we ever do this again, it will be your call.” About a week later, he asked me to dinner. And that was the beginning of a five-and-one-half year friendship that brought much pleasure and joy to both of us. We traveled extensively. We had more to say to each other than time to say it. On April 18, 2012, after a short illness, he died of lung cancer, peacefully and with minimal pain. His family was there for him, as was I. Dear sweet, loving Bill. • M. Snacks for Happy Hour

Suddenly, it’s happy hour, and you’re hosting. What snacks do you make

that are quick, easy, and good? Start out with cheese sauce or queso dip. It can be used for several tasty dishes. Enjoy! Buen Apetito! •

Queso Cheese Dip or Cheese Sauce

Ingredients – makes about 2 cups: • 2 Tbsp. butter • 1 ½ Tbsp. corn starch • ¼ tsp. kosher salt – to taste • 1 cup milk – whole milk preferred, but low fat will work. • 4 slices (3 oz.) of American processed cheese food spread – Hill Country, Kraft, Velveeta, etc. • ½ cup (3 oz.) Mexican melting cheese like Chihuahua or substitute a shredded Mexican blend. The Process: Melt the butter in a sauce pan. Add the corn starch and mix over low heat until well mixed. Warm the milk in the microwave and add the milk, stirring constantly to avoid lumps, until the mixture boils and begins to thicken. Add the cheese and salt and continue mixing until the cheese melts and becomes smooth. You now have a basic cheese sauce, which you can serve with tortilla chips, just as it is. If it gets too thick, add a tablespoon or two of milk. Leftover cheese dip can be reheated. Use low heat and stir vigorously to remove lumps and dissolve the ‘skin’ formed over the dip. Add milk, if needed, to thin. Now let’s make it special. Spice it up! Add some hot sauce, cayenne pepper, paprika, chili powder, or your own favorite spices. I added 1/8 tsp. cayenne and 1/8 tsp. paprika. It added just a touch of flavor. Add to it! Try adding tomato, peppers, etc. I added one seeded and diced Roma tomato for some color and ¼ diced green pepper for a little flavor. You can be creative here. Now make your own tortilla chips! If you do not like fragile grocery store tortilla chips but would rather have thick, hearty homemade restaurant-style chips, make your own. It is easy.

Homemade Tortilla Chips • Corn tortillas – 6-inch diameters. Each tortilla yields 6 wedge-shaped chips • Corn oil – other oils will work, including lard, but I find corn oil works quite well • Fine-grained salt

Instructions: Slice corn tortillas into wedges or strips – I prefer wedges. Cut them like a pie – into six sections. It is best if the tortillas are a little ‘stale’ or dried out. You can spread them on oven racks at 200 degrees for a few minutes to dry them out a bit if they are real fresh. They should not be real dry – but not limp. Heat about ¼ inch of oil in a deep frying pan to medium – medium-high heat. It takes a little bit of practice to get the heat just right. You do not want it to smoke (too hot), but the chips should ‘sizzle’ when added to the oil. As soon as the edges just start to turn tan, flip them over with a spatula and cook a bit more. Be careful. They brown very quickly. The whole batch cooks in about a minute. When they just turn brown, remove them quickly, place them on a plate lined with paper towels, and sprinkle them with salt immediately. Repeat the process until you have the desired number of chips. These are really good!

Want Super Nachos? Fry up some ground beef with taco seasoning (packaged – no need to get fancy here) and sprinkle taco meat onto a bed of tortilla chips. Ladle on the cheese sauce, top with fresh diced tomato, seeded and diced jalapeno peppers, sliced avocado, lettuce, cilantro, onion, etc. - whatever your favorite ingredients may be. Cheese and Green Chile Beer Bread • 3 cups self-rising flour (or make your own S.R. Flour using 1 cup all-purpose flour, 1 ½ teaspoons baking powder and ¼ teaspoon salt) • 1 egg, beaten • ½ cup shredded sharp Cheddar cheese • 1 can (4 oz.) chopped green chiles, your choice of mild or hot • 12 oz. any brand of beer (you can use non-alcoholic, if you wish) • 1 Tbsp. grated parmesan cheese Preheat the oven to 350 degrees F. Spray a loaf pan. Drain the green chiles well. Mix the flour and the two cheeses, stirring to fully combine. Add the beer and egg and stir until there is no dry flour visible, but don’t beat it. Stir in the green chiles evenly. Put the batter (it will be thick and lumpy) into the prepared loaf pan and bake for 1 hour. Test for doneness with a toothpick. Remove from the pan and place on a wire rack to cool. Immediately run a stick of butter over the top, letting some of it melt into the nooks and crannies of the bread. Chocolate Chip Squares

Non-stick cooking spray

Heat oven to 350°F.

2 1/2 cups all purpose flour

Coat a 13 x 9-inch baking pan with nostick cooking spray. In a large bowl, mix together flour and brown sugar. Cut in cold butter with a pastry blender or 2 knives until mixture resembles coarse crumbs. Add egg, mixing well. Stir in 1 1/2 cups chocolate chips and nuts. Reserve 1 1/2 cups mixture. Press remaining crumb mixture onto bottom of prepared pan.

2/3 cup firmly packed light brown sugar 3/4 cup (1 ½ sticks) salted butter (very cold) 1 large egg, slightly beaten 2 cups (12 oz. pkg.) semi-sweet chocolate chips, divided 1 cup coarsely chopped walnuts or pecans 1 can (14 oz.) sweetened condensed milk 1 package (8 oz.) toffee baking bits, divided

Bake for 10 minutes. Remove from oven and pour sweetened condensed milk

evenly over partially baked crust. Reserve 1/4 cup toffee bits. Sprinkle remaining toffee bits over layer in pan. Sprinkle reserved crumb mixture and remaining 1/2 cup chocolate chips over top. Bake for another 25 to 30 minutes or until golden brown. Remove from oven and sprinkle with reserved ¼ cup remaining toffee bits. Cool completely and cut into squares. Enjoy!
