MMA to Hold Iwo Jima Parade February 19 Special to Welcome Home RGV

hat a fun week celebrating our Winter Texans! The Mega Winter Texan Fiesta was a wonderful event and brought thousands to the City of Mission for an afternoon of food, fellowship, and great entertainment. I had such fun visiting with everyone, especially the gentleman who stopped to visit about how much he loves the Rio Grande Valley and why he came here in the first place. It’s no secret that most of you are here because you had a friend or family member who told you how great our winters are in the Valley. Word of mouth is the number one reason people find out about wintering in Texas. But my question is, what’s the second reason? I’d like to ask for your help. Do YOU have an idea about how we can spread the word in an affordable, effective manner? The Valley wants to be home to Winter Texans for generations to come, so if you have any ideas about how we can market the Rio Grande Valley “back home,” please let me know. Military Academy will hold its annual Iwo Jima Parade Friday, February 19, at 4:00 p.m. on the MMA parade grounds. This year marks the 71st anniversary of the Battle of Iwo Jima during World War II. Open to the public, this event is a tribute to the courage and sacrifice made by The Greatest Generation to preserve freedom around the world. Because of the subtropical climate of South Texas, MMA is the only organization in the country that holds a battalion-sized parade on the actual anniversary of the Battle of Iwo Jima (February 19, 1945). Last year, more than 350 people attended this event. There will be special, reserved seating for Iwo Jima survivors in front of the parade stand, which directly faces the historic Iwo Jima Monument. During the parade, the Iwo Jima survivors will join the MMA superintendent for the ceremonial pass in review. Event-goers are encouraged to stop by the Iwo Jima Museum & Gift Shop before 3:00 p.m. to watch a video depicting the Battle of Iwo Jima. They are also encouraged to view the Iwo Jima Monument and the gravesite of Cpl. Harlon Block before or after the parade. Since April 1982, MMA has been home to the Iwo Jima Monument. The magnificent statue depicts five Marines and one Navy Corpsman raising the American flag February

Another Great Year of Bull Riding in South Texas Special to Welcome Home RGV

Wow! What a great 2015 Finals the

National Professional Bull Riders had January 30 and 31 in Mercedes at the Payne Auto Group Arena in the RGV Livestock Show Complex. Over 35 bull riders made their way down south to compete for money and prizes, along with the chance to win a pair of boots. Boots were courtesy of Boots & Jeans in Weslaco and Bull Rider in Harlingen. The South Texas weather was just perfect as the bull riding fans gathered to watch the top bull riders battle it out for the number one position. The bulls bucked great, and the riders were giving it their best throughout the bull riding. As the second performance came to an end and the dust all settled, it was Ouncie Mitchell of Houston who walked away with the 2015 World Champion Monsoon Trophy Buckle and

back-to-back championships. Keyshawn Whitehorse, from The Woodlands, won the 2015 Finals Monsoon Trophy Buckle, and the boot recipients were Rooster Lynch, Ralph Benson, Keyshawn Whitehorse, and Shane Semien. Rooster Lynch from Conroe not only took home a pair of boots but also was the Mercedes 2016 Event Winner and received a Monsoon Trophy Buckle. Congratulations to all of our winners for a job well done. Protecting the bull riders were Jake Stickler of Brenham and Matt Clouse of Crowley. Entertaining the crowds was barrel man Rockin Robbie Hodges of Cave Springs, Georgia. Judges were Doug Adams of Boerne and Miles Hare of Devers. Behind the microphone was professional announcer Terry Starnes of Glen Rose. Providing stock were stock contractors

Mark Swearingen of Swearingen Bucking Bulls, Tadpole Beck of Rockin I Rodeo, and M Bar M Cattle Co. Returning for a third year was the South Texas Bull Fight Challenge. These guys did an awesome job, and the fans enjoyed every minute of it. Finishing first was Ross Johnson, and second place went to World Champion Cody Emerson. Thank you to Welcome Home RGV, Kristi Collier, for the Kids’ Calf Scramble sponsorship. The kids enjoy this event every year, and we appreciate all that Welcome Home RGV does for the National Professional Bull Riders. National Bank held their 2nd Annual Driving for Wishes Golf Classic to benefit Make-A-Wish® Rio Grande Valley. Texas National Bank teamed up with the Palm Valley Golf Course to make wishes come true for children with life-threatening medical conditions in the Rio Grande Valley. The goal was to round up golfers to help Texas National Bank and MakeA-Wish make a minimum of eight “wishes” come true for children in our community. The event surpassed the initial 40-team target field and was able to contribute $66,487 to MakeA-Wish RGV!

Purple Martin Watch is a continent-wide scientific project where volunteers monitor martin nests from the beginning of nest construction until the last fledgling has left. The data collected by the Project Martin Task Force will help scientists determine the population’s reproductive success throughout its habitat range. The program will include a presentation on Purple Martins and their migrating habits,

“The Circus in South Texas” or “The Valley of the Pacyderms” by Pat Davison

Have

you ever seen “pink elephants”? Perhaps so, after a wild night at the park’s potluck supper. More likely, you have seen a full-size, mirror-covered, elephant sparkling in the sun on the eastbound Expressway 83 frontage road in Donna. Unlike pink elephants you may have seen, the sparkly one is real; not a real live elephant, but not a figment of your imagination, either. That elephant stands guard at the winter quarters of one of the major circuses in our beloved Rio Grande Valley, Circo Hermanos Vazquez. Circus Vazquez is a relative newcomer to Texas but is now a part of the Texas circus heritage. I grew up around circuses, and I have been a performer in shows around the world for almost 50 years. My family and I present comedic magic shows and circus acts even here in the Valley. You may have seen our shows at the Rio Grande Livestock Show, BorderFest, the Starr County Fair, or at your RV resort. Keep reading and I will explain my own story of how elephants led me to the Valley in 1972. Sarasota (Florida) is most often associated with the circus industry in people’s minds. It was more or

less founded by John Ringling, who developed much of it during the real estate boom of the 1920s. However, many more circuses had their origins in Wisconsin, (including the Ringling Brothers), Indiana, Oklahoma, and yes, Texas! Let me clarify the difference between circuses and carnivals, two related but very different phenomena that are often confused in the public mind. The carnival is a relatively recent addition to the American outdoor entertainment scene, having originated at the Chicago World’s Fair in 1893. Carnivals are comprised primarily of rides, games, and food stands. A visitor there can spend a fortune on rides, food, and games or walk around and enjoy the sights, sounds, and smells of the carnival and not spend one dime. Carnivals are seen throughout the Valley during the winter. They can stay open for business year-round that way, traveling north in the spring and then returning here to “God’s Country” to enjoy the mild winter weather (sound familiar to you Winter Texans?!). The circus, by contrast, is centered around a performance. The customers purchase a ticket, enter the tent, and sit down to enjoy a performance of

human and animal skills and comedy. The performances are held at an established time, typically twice a day, three times on weekends. South Texas’ circus heritage goes back at least as far as 1852. That is when the San Antonio Ledger recorded the presence of Mexican circuses there. According to the Texas State Historical Association: The carpa (tent circus), an unpretentious kind of amusement that had developed in Mexico to entertain the poor, was also part of the Mexican circus tradition introduced in Texas... In the twentieth century, such Mexican circuses as Teatro Carpa Independencia, Circo Cubano, and Carpa García (the most famous of the three) made San Antonio their home base, and the city became the hub of both the big-top circuses and the carpas. The carpas regularly offered entertainment in rural South Texas in the 1920s and 1930s. The Circo Hidalguense (Hidalgo Circus), for example, took its shows to Charlotte in 1921, the Maroma Azul (Blue Acrobat) appeared in Del Rio throughout the 1920s and 1930s, and the Texas Show performed in the Los Ebanos area in 1929. The “carpas” lasted well into the 1940’s, and direct descendants of

the “carpas” can be seen today here in the Valley. There are still a couple of small tent circuses that pop up in the Mission area in the outlying colonias, most notably the Luna Brothers Circus. • (To be continued in the February 24 issue of Welcome Home Winter Texan.)

Project Martin Watch: Citizen Science Project at Edinburg World Birding Center Special to Welcome Home RGV

This year, to help with that endeavor, the Edinburg Scenic Wetlands & World Birding Center (EWBC) has installed its first Purple Martin house in conjunction with Project Martin Watch, a citizen science program. A kick-off event is scheduled for Saturday, February 20, followed by weekly monitoring starting in April. Purple Martin Watch is a continent-wide scientific project where volunteers monitor martin nests from the beginning of nest construction until the last fledgling has left. The data collected by the Project Martin Task Force will help scientists determine the population’s reproductive success throughout its habitat range. EWBC is inviting interested individuals (ages 16 and up) to attend an “Introduction to Project Martin Watch” Saturday, February 20, from 10 – 11 a.m. The program will include a presentation on Purple Martins and their migrating habits, information on how to volunteer for the project, and training on

in Hidalgo County as part of the Healthy South Texas Initiative to challenge teams and individuals to walk 830 miles in eight weeks and to encourage participants to increase their daily physical activity. The Hidalgo County kick-off will be at the Edinburg City Hall Courtyard Saturday, February 20, from 9:00 a.m.-12:00 p.m. Over two-thirds of Texans do not meet the recommended daily physical activity levels of 30 minutes. Participating in Walk Across Texas! focuses on walking, which is considered one of the least expensive and easiest ways to exercise. Walking for 30 minutes every day will improve your overall health. If it feels like 30 minutes is too much time or seems too challenging, break your walking into 10- or 15-minute increments and gradually increase your time. Walking as exercise does not require any expensive equipment, membership fees, or special locations. You can walk down your street, at a local park, or anywhere you feel comfortable. If you do not want to walk, you can choose to bike, run, swim, or participate in many other activities. Regular physical activity reduces the risk of heart attack and stroke and helps maintain or reduce other risk factors, such as high blood pressure, high cholesterol, excess body weight, and diabetes. Additional benefits are having more energy, increasing strength, reducing stress, and feeling better overall.

Walk Across Texas! teams help individuals stay accountable for achieving the goal of reaching 830 miles. Other ways to reach your goal with Walk Across Texas! are to make plans for where you will walk, how long or how far, and what time of the day you will do your activity. If you are walking in the early morning hours or late in the evening, make sure to wear reflective clothing so cars will be able to see you from a distance. Work hard to stick to your plan, and even if one day is missed, keep going back toward your goal. You can use the Walk Across Texas! Web site (walkacrosstexas.tamu.edu) to track your mileage and monitor your goal. Some techniques to consider when walking are to make sure you are looking up and keeping your shoulders relaxed. Pumping or swinging your arms can also add to the exercise. Make sure you are walking smoothly and rolling your foot from heel to toe to help prevent injury and soreness. Include a warmup of five to 10 minutes by walking slowly, then increasing your pace once the muscles have warmed up. Add a 5-10-minute cool down, followed by stretching, to help your muscles recover from the activity. We serve in assisting our lead chaplain, Lee Bahney, with hospital calls, home visits, special programs, church services, etc. We also serve as chaplains at Children’s Haven International in Pharr, holding Monday night Bible studies. We spend about 10 months here in the Valley serving the Lord. You cannot put a worth on the importance of women in society. What does worthy mean? Some definitions are admirable, valuable, and precious. We, as women, are all of this and more in God’s eyes. Scripture praises women as being noble, worth more than rubies--she has the confidence of her husband, she ministers to the poor, she speaks with wisdom, her children call her blessed, and women who fear the Lord are to be praised. (Read Proverbs 31:10-31). We, as women, make our own mark in the spiritual realm – our compassionate nature helps us minister to those who are hurting, and our inner sense of motherly

love helps us to minister to those who need a mentor, mother, or just a friend. Our ability to multi-task helps us to become stronger in God’s word as we perform our daily tasks answering phones calls while praying for and with others. We were created as helpmates to man, to stand beside him in times of trial and loving and rejoicing with him in times of joy and gladness. We are partners, yet leaders in our own right. Texas College (STC) Theatre is bringing romance to the stage with William Shakespeare’s Romeo and Juliet. The production will run February 25 – 27 starting at 8:00 p.m., with an additional Sunday, February 28, matinee performance starting at 2:00 p.m. All performances will take place at STC’s Cooper Center for Communication Arts main stage, located at 3201 W. Pecan Blvd. in McAllen. This classic play portrays a long feud between the Montague and Capulet families, which disrupts the city of Verona and causes tragic results for Romeo and Juliet. Revenge, love, and a secret marriage force the young star-crossed lovers to grow up quickly, and fate causes them to commit suicide in despair. “Creating the world in a Shakespeare play tempts any willing

theatrical designer or director to do justice to the words he left us,” says Romeo and Juliet director Marcela Garza. “When the opportunity presents itself, why not take it?” General admission tickets cost $10. Kids Against Hunger Food-Packaging Event Held at Leisure Valley Ranch Special to Welcome Home RGV

Taking

a stand against hunger in the Valley. This is what the Thursday Morning Bible Study that meets at Leisure Valley Ranch in Palmview hoped to do by hosting a Kids Against Hunger food-packaging event. And what a success it was! Working with the KAH satellite from Corpus Christi, and with the help of donations and volunteers, nearly 5,700 meal packets were assembled in a few hours and distributed to eight area food pantries and churches. Ingredients were rice, soy protein, dried vegetables, and a chickenflavored vitamin formula, which supplies the optimum amount of daily nutrition for six children.

Seniors and adults also benefit. Packaged via human assembly line into special plastic bags, there is a product shelf life of three years. Some of the food was cooked and sampled during the event, and all agreed that it was tasty. Dr. Cecilia Rhoades, coordinator of the KAH satellite said, “Thanks to all the volunteers who, by their efforts. helped feed people in the Mission region. City of Edinburg invested over $6 million to create the Los Lagos Golf Course, which opened in 2001. Since the city was named in honor of John Young, a prominent businessman who was born in Edinburgh, Scotland, the links-style layout would have made Young feel right at home. The course is a von Hagge, Smelek, and Baril design and is ranked as one of the top courses in the Rio Grande Valley. Los Lagos has been selected as Readers’ Favorite in The Monitor, our region’s largest daily newspaper. Eleven acres of lakes highlight the course, with more than 75 strategically placed sand traps to capture the errant shots. The fairways, which are lined with dramatic mounding, and the breeze from the Gulf of Mexico require the players to have a variety of shots in their bag to play well here. Los Lagos is a well-balanced course with almost equal yardage on both nines. There are four sets of tees. Three of the sets are rated for men. The black tees at 7188 yards rate 74.7/132, followed by the blue tees at 6789 yards that rate at 72.8/127, and lastly, the white tees at 6211

The fairways are common Bermuda grass while the greens are TifEagle Bermuda grass. This facility is open to the public and has a complete Pro Shop, as well as a café to grab a quick sandwich before or during your round. They have a large open-area pavilion, which provides a great place to enjoy your post-round beverage. This is definitely a course for you to check out. The Rio Grande Valley is blessed with great weather, as well as great golf courses. There is a course for every player, from beginners to accomplished golfers. There are more than twenty 18hole courses throughout the Valley and almost as many nine-hole courses. It’s

not too late (or too early) to plant entertaining native plants and shrubs to attract colorful butterflies to your little piece of paradise here in the Valley. Planting native plants now will ensure they will be well established by the time you pack up and head north. Most native plants will do well in most of our Valley soils. Water well when planting and water a couple of times a week for the first three or four weeks. Here are three sized-right shrubs that attract butterflies looking for nectar: Mexican Trixis, Trixis inula, will bring you bright yellow blooms in all seasons with long, thin, dark green foliage. This happy shrub can get about three to four feet in height. A grouping of two or three, three feet apart, will fill out and present a small sea of color by the time you get back this winter. Planted singly, it can spread up to four feet or more. Trixis likes shade or partial sun and has low water needs and drought tolerance. When you return to the Valley, you’ll have to count the butterfly species flocking to this beauty. I’d plant it near the road so you’ll be the envy of your street as neighbors stroll to the dance hall. White brush, Aloysia gratissima, can be a tall, stand-alone shrub if you have a narrow space and want simple elegance. The blooms are long spikes of white aromatic flowers smelling like vanilla. I’d plant it near your dining table window. An absolute butterfly magnet, the shrub is quite striking in a wispy, delicate way. It likes full sun to partial shade and also has low water needs and is drought tolerant. It can reach to 10 feet and, with pruning, can be a more compact bush. Mexican caesalpinia, Caesalpinia mexicana, forms large clusters of bright yellow blooms nearly all year, continually attracting hummingbirds and butterflies. You’ll want this where you can watch the activity while sitting on your patio with your morning coffee or any other time of the day. It can become quite bushy or pruned into a shapely tree that can reach 12 to 15 feet. It also attracts hummingbirds. Not enough room for a shrub, or not enough time to garden between all

your fun activities? Consider three of our lower-to-ground plants that love to reseed themselves: Scarlet sage, Salvia coccinea, loves to repopulate. Start with three to five plants in a grouping. It is a very good nectar plant for butterflies and hummingbirds, sporting red tubular blooms on slender spikes. It does well in partial shade to full sun. It won’t mind being neglected while you’re back at your summer home and will still be blooming when you return to Texas. If you don’t like where it’s reseeded itself while you were away, simply pluck the little starts out. The more available nectar, though, the more activity you’ll see. Betony leaf mistflower, Conoclinium betonicifolium, is an important butterfly nectar plant with purple flowers. It can bloom all year if the winter isn’t too harsh. The thick, succulent leaves are attractive with a slightly serrated edge. In full sun to partial shade, the plant can get up to two feet in height but prefers to sprawl. It will propagate where the stems touch the soil. Ok, so you have a rock garden with cement objects d’art. There’s a plant for you. You’ll need just one planted next to something pretty that it can meander around and drape itself: Snapdragon vine, Maurandya antirrhiniflora. This purple, flowering vine has tiny, shiny heart-shaped leaves and purple and yellow blooms that look like a cheesy grin. It likes partial shade to full sun and grows in many soils, including rocky soils. It is a host for the common buckeye butterfly, so if you see caterpillars eating the leaves, let them be. The leaves will come back and the caterpillars will go off to become butterflies. By the second year, the vine will surprise you with additional plants. The new starts can easily be potted up and shared or planted where you would rather have them. Native plants require less maintenance and attract native, beneficial insects. Native plants are available for sale at many local nature parks and refuges. You also can find a nursery near you by typing “native plant nurseries in the Rio Grande Valley” in your search engine. •

Texas Grapefruit Sunriser Smoothie Makes: 4 (8 ounce) servings • 2 Winter Sweetz™ grapefruit • 8 large strawberries (fresh or frozen) • 2 ripe medium bananas • 8 ounces strawberry-banana yogurt • 2 Tbsp. honey • 1 cup crushed ice Juice grapefruit; measure 1 1/3 cups juice. Pam’s Poppers • 18 large jalapenos, washed and cut lengthwise (NOTE: When you cut them, leave the stem on one of the halves, like a little tail. Be sure to protect your hands with plastic gloves!) • 8 oz. good quality, regular cream cheese, softened • 1 package dry Hidden Valley Ranch dressing mix • 6 slices lean bacon, each slice cut into thirds Take the pepper halves without the tails and clean out all the seeds and veins. For the halves with the tails, hollow them out only enough to hold the stuffing; you want heat in these. Mix the cream cheese and ranch dressing mix until well blended, and fill each pepper half, level--not mounded. Lay a bacon piece lengthwise on top of each popper, pressing down a bit to stick it to the cream cheese. Place on a sprayed cookie sheet and bake at 350 degrees for about 40-45 minutes. go round, for if this were true, we would have do a lot more laughing to keep from falling off. Everyone is capable of love…No, some people are capable of like or hate but have a rather hard time with love. Love is an emotion of the heart… No, it has to do with the mind (brain), not the heart. Love is always moral and kind…No, we all know that isn’t always true. Love can be a weapon, a deadly one, in fact. Love heals all things…a no-brainer there. Love is the glue that holds marriages together…Nope, romantic love will carry you three years, and if the two marriage partners haven’t learned to really like each other by that time, the marriage is not going to thrive and can unravel like a knitted sock. Love your children above all others. No-o-o…this is often the cause of marriage problems. If you have a spouse and children, it is best to love your spouse above all others. The kids are there for 18 years or so; the spouse will be there for 50 or more. Go figure. Love is blind. No…it can be a real eye-opener. Love makes you happy…Not always. My first love certainly proved that wasn’t true. Love is the most important thing in the whole wide world: Songs have

I am pro love, but we need to understand it will overcome a lot but not all of the frailties of the human condition. I have said a lot about what love is not. It is the act of fulfilling laws: God’s laws, civil law, and it is the common thread that separates us from the beasts of the field. It is the thread that connects us to our fellow man in benevolent ways. It is doing the right thing. It is caring for and providing for our families, our communities, and our nation. whole business of barbecue can get quite serious in a hurry. Barbecue is a method of cooking at a low temperature, often with indirect heat, using spices and various woods to impart a special flavor to the meat. Grilling, on the other hand, is done quickly over higher direct heat, often with a prepared barbecue sauce. A bit of history. American barbecue dates to Colonial days, and the main area for barbecue is said to be centered in the southeastern region of the country. Over time, numerous regional specialties evolved, such as Carolina, Memphis, Kansas City, and, of course, Texas styles of barbecue. The barbecue styles evolved differently based on the meats and game in an area. The cooking methods and wood used for smoking the meat were dictated by what trees were common in an area. Seasonings and the use of spice rubs and sauces help define a style, and as we will see, cultural differences also contributed to styles of barbecue. Let’s look at barbecue styles here in Texas. There are really four styles of Texas barbecue, although there is now so much overlap that “pure” Texas styles do not really exist anymore. They are, however, interesting. East Texas barbecue is often beef - cooked slowly over hickory wood until tender, and it often has a sweet, tomato-based sauce. The area also has a lot of what is essentially ‘southern’ barbecue - usually pork, frequently prepared with a spice rub and mopped with a spice and vinegar rub during smoking. This style is also prepared in most urban areas, and the wood used for smoking is often hardwood - oak or hickory. Central-Texas-style barbecue is influenced by the cultural influx of German and other European immigrants. Towns like New Braunfels and Fredericksburg in South Central Texas are examples of German settlements in the area. These Europeans introduced butcher shops, and the practice of smoking sausage and other meat contributed to the style of barbecue there. We can also thank the Germans for chicken fried steak - a form of schnitzel.

Western Texas barbecue is referred to as cowboy style and often used direct heat over mesquite wood. Beef is the primary meat. Research indicates that this style is hard to find any more due to the popularity and spread of other styles of barbecue. Southern-Texas-style barbecue has a strong Spanish or Mexican influence handed down from the ‘vaqueros,’ Mexican horsemen who helped the ‘rancheros,’ or ranchers, tend their cattle in arid and rugged South Texas. These herdsmen often received some poorer, less popular cuts of meat for part of their pay. For example, the diaphragm (skirt steak), from which fajitas are made. Barbacoa, where barbecue got its name, is made from meat from a cow’s head. Goat (cabrito) and lamb are also popular meats, and mesquite is the primary wood used in South Texas barbecue. Of course, other styles abound in South Texas, and it is easy to find pork, chicken, and sausage being served. Now let’s talk about preparing serious barbecue. We’ll start with a BBQ rule - “Good barbecue starts with a good spice rub.” Grill Masters are secretive about their spice rubs, and barbecue cook-offs are big events here in Texas. I will tell you how to create your own ‘signature’ rub. You can simply buy a spice rub at your favorite grocery store - the choices are many - and they will work fine. But by inventing your own spice rub, you will be able to tell people that the secret of your great barbecue is your very own ‘Secret Spice Rub.’ Let’s get started. There are certain ingredients that are common to spice rubs. These are sugar, salt, chili powder, or paprika, plus a collection of a dozen or so other spices used to personalize the rub. If you are a fan of Alton Brown of the Food Network like I am, you will discover he uses a ‘magic ratio’ of ingredients to inspire his spice rubs. The ratio is 8:3:1:1. Using this ratio you would use: 8 parts sugar; brown sugar, light or dark, is preferred because they impart flavor and are less likely to char than white sugar. 3 parts salt; kosher salt is used most

frequently. 1 part chili powder or paprika recipes seem pretty split on this ingredient. The remaining 1 part can be made up of any number of ‘personalization’ spices, such as cumin, onion powder, garlic powder, cayenne pepper, curry, black pepper, ground ginger, dry mustard, white pepper, thyme, etc. Use as many of these spices as you want, but no single spice can be more than half of the remaining one portion. For the Super Bowl, I made pulled pork using a 9 lb. bone-in pork shoulder blade roast. Following is the recipe for the rub I made. It is a good starter rub for pork. Simply combine the ingredients and spread on the meat. 8 Tbsp. light brown sugar 3 Tbsp. kosher salt 1 Tbsp. paprika 1 tsp. garlic salt 1 tsp. cayenne pepper 1 tsp. cumin I discovered a trick online which helps the spice rub ‘stick’ to the meat. Rub the roast all over with yellow mustard before applying the rub. Cover the meat with plastic wrap and refrigerate for 3 - 12 hours to allow the seasoning to infuse into the meat. Use a disposable pan to collect the drippings and grill the meat using indirect heat - the “low and slow” method. While grilling, I added

apple wood chips to the coals, and after the first two hours, I drizzled a bit of apple juice on the roast when adding coals. Soak the wood chips in water for an hour before using them so they do not burn. Available wood chips include apple, pecan, hickory, and mesquite. I opted for a sweeter wood (apple) so it did not overpower the pork. If you use a gas grill, you can use wood chips placed in a small disposable pan placed over the burner. Pork shoulder is a heavily used muscle and can be tough. It needs to be cooked to an internal temperature of 195 - 205 degrees to be tender. When this temperature is reached, remove it from the grill and let it rest loosely covered with foil for 30 minutes. The pork is done when a fork can be placed in it and easily rotated 90 degrees or when the blade bone can be pulled out easily. The meat will have a delicious crust on it. When trimming the meat, save this crust, chop it up, and mix with the tender meat for great flavor. You can use your fingers, a meat fork, or ‘bear claws’ to pull the meat apart. Discard any large pieces of fat. Serve on a fresh bun with your favorite barbecue sauce on the side. Slaw, dill pickle spears, and potato chips make great sides. Remember to start with a great rub, and you, too, can make great barbecue at home. Enjoy! Buen Apetito! •

Tex-Mex Corn

and Crab Cakes

Here, classic crab cakes get a little Tex-Mex makeover with the addition of corn and a refreshing lettuce, cilantro salad and citrus sauce on the side. Chef’s tips: When purchasing panko (Japanese bread crumbs), there are name brands and generic versions. The generic is more or less the same product and it works perfectly well so please don’t bother paying the extra pennies for the fancy product packaging. 1 lb. lump crabmeat, picked through for shell pieces 1-1/3 cups panko (Japanese breadcrumbs) 3/4 cup corn kernels, preferably fresh, cut off the cob 1 Tablespoon minced fresh flat leaf parsley Kosher salt & freshly ground black pepper 3 large eggs, lightly beaten 4 cups thinly sliced/shredded iceberg lettuce 1/4 cup roughly chopped fresh cilantro Extra Virgin Olive Oil, good quality (lime infused if you have it) Juice and zest of 1 lime 1 cup sour cream 1/4 cup vegetable oil Bettina Tolin is a graduate of Le Cordon Bleu College of Culinary Arts in Austin, Texas. She has cooked in the kitchens of the Ritz-Carlton Amelia Island, Florida. She is currently the Executive Chef and General Manager at Marcello’s Italian Restaurant and Bar in Port Isabel, Texas.

Combine the crab, panko, corn, parsley, 1-1/2 teaspoon salt and ¼ teaspoon peppers in a large bowl. Gently stir in the eggs. With clean, damp hands, tightly shape the mixture into eight 3/4-inchthick cakes and place them on a small sheet pan (cookie sheet). Set aside in refrigerator for ~ 10 minutes. Meanwhile, toss the lettuce and cilantro together in a medium bowl, season with a drizzling of the EVOO and little salt and pepper to taste – toss gently. Arrange the salad on four plates. Use a fine zester, grate the zest from the lime and then squeeze the juice from the lime into a small bowl. Stir in the sour cream, and thin with a little water if necessary to

make a pourable sauce. Season to taste with salt and set aside. Heat 2 Tablespoons of the oil in a 12-inch nonstick sauté pan over medium heat. Add 4 crab cakes and cook, flipping once, until golden brown, about 8 minutes total. Repeat with the remaining oil and crab cakes. Divide the crab cakes among the plates and serve with a drizzling of the citrus sour cream sauce.
