The Oak Ridge Boys Play Three Benefit Concerts at Hynes Event Center at Llano Grande Resort Special to Welcome Home RGV

I grew up listening to the music of the

Oak Ridge Boys, so when I was asked to assist with the logistics of the private concerts at Llano Grande, I jumped at the opportunity---not one, not two, but three private concerts for residents and their guests to celebrate the grand opening of the Hynes Event Center. I have to admit, I’m starstruck. It’s not just only because the Oak Ridge Boys are the latest members of the Country Music Hall of Fame, either. I’m in awe of the 40-plus years the Mighty Oaks band members have not only been together but have also called each other family. You can tell immediately that they love every minute of all that they do, which is surely the secret ingredient to their success. Congratulations to Llano Grande Resort on their beautiful 25,000-square-foot event center and on all that the future holds! Thank you for giving me the opportunity to be a part of the grand opening! • We’re just connecting the dots,

new, 25,000 square foot Hynes Event Center at Llano Grande Resort in Mercedes was the site for three benefit concerts last week. The Oak Ridge Boys, who were inducted into the Country Music Hall of Fame in October of 2015, played at the private concerts for Llano Grande residents and their guests. These concerts were part of the Oak Ridge Boys’ “Celebration Tour,” celebrating the band’s 42 years together. One hundred percent of the proceeds from the Oak Ridge Boys’ concerts was donated to three nonprofit organizations in the Rio Grande Valley: Food Bank RGV, Teach the Children, and the Wounded Warrior Project. The Oak Ridge Boys delighted the crowd with many of their hit songs, including “Mama’s Table,” “You’re the One,” “American Made,” and each night’s crowd favorite, “Elvira.” Couples danced on the Hynes Event Center’s dance floor directly in front of the stage, and the sold-out crowd couldn’t get enough of the The Boys. •

30th Annual All Valley Boat Show is set to sail into the McAllen Convention Center Friday, February 26, through Sunday, February 28. The Lower Rio Grande Valley Boating Trades Association (LRGVBTA) is proud to announce that 2016 will mark its 30th All Valley Boat Show. In such a monumental year, the LRGVBTA has signed another threeyear commitment with the McAllen Convention Center to host the All Valley Boat Show! With almost 60,000 sq. ft. of Exhibit Hall display space at the McAllen Convention Center, the show will feature an impressive selection of boats, fishing gear, apparel, and much more. Show-goers will find a variety of boats and personal water craft from eight local dealers: Andy’s Marine, Bass Pro’s Tracker Marine, Bayside Marine, Dargel Boats, F&T Valley Motorsports, Ron Hoover RV & Marine, Southern Marine, and The Sportsman. Celebrating the 30th Annual All Valley Boat Show, the LRGVBTA welcomes Boggus Ford as the Official Truck of the All Valley Boat Show and is thankful for their commitment to support

the show for the next three years. To commemorate the 30th Annual Show, all general admission adults will get a CHANCE TO WIN $50,000 toward the purchase of a NEW BOAT and NEW FORD TRUCK TO PULL IT! Armando Experiences His Own Version of Turtle Land

• 8 ounces turkey sausage • 8 ounces shredded potatoes • 1½ cups egg substitute • ¼ cup picante sauce • 6 corn tortillas • 6 ounces Mexican cheese Remove sausage from the package and break it up with a fork. Spray a 9 inch skillet with olive oil. Over medium heat, cook sausage until it begins to turn gray. Dry shredded potatoes to remove some moisure and add to skillet. Toss well. Toss frequently till potatoes turn translucent. Add egg substitute and stir into mixure.

Armando lives in a world consisting of doctors’ visits, hospital stays, and exhaustion; however, that does not stop his curiosity and eagerness to learn--especially about all kinds of turtles, including Ninja Turtles®. His dreams were not of faraway places or meeting a famous celebrity. His wish was modest. Ninja Turtles toys and a Wii with games was the one wish he wanted more than anything in the world. Dreams of his wish filled him with joy and took him away from his illness for a while. He would close his eyes to make a wish and saw turtles amid magic fairy dust! Mr. and Mrs. Jack Ewing offered their home as the perfect setting in which to grant Armando’s wish. His proud sponsors from Texas National Bank and the Make-A-Wish® Rio Grande Valley staff took his wish a little further to make his day extra special. The backyard scene was set with a Ninja Turtles’ grand entrance. As Armando entered, he immediately encountered a Ninja Turtle mascot, generously provided by Karacters and Kompany, stacks of Ninja Turtle toys brightly wrapped, and, yes, huge, live turtles slowly but surely migrating in his direction to greet him. Dozens of people, including Univision 48 and Telemundo 40, were there to share his joy. Armando was totally overwhelmed. He did not know where to begin. He took time to feed, touch, and pose for

pictures with the turtles and eventually got the courage to ride one. Afterwards, the focus was moved to him opening his gifts. He would mention occasionally where he had seen certain toys, obviously yearning to call them his own. He loved all of his toys, but his favorite was the life-sized Ninja Turtle, donated by Tracy Gerdes. Amazingly enough, after all the excitement, Armando had lots of energy and enjoyed doing an interview for the local news stations. He was very talkative with the reporters and brought them up to date with everything from his vast knowledge of turtles to his grandma’s family history! He loved the attention and invited guests to take selfies with him. Make-A-Wish® Rio Grande Valley became a chapter in 1997 and granted only 12 wishes the first year. This year’s goal is 90 wishes. Throughout the years, the people of the Valley have remained supportive in making a difference in the lives of children between the ages of 2 ½ and 18 with life-threatening medical conditions. Armando’s dream-turnedreality marks the 1000th wish of the RGV chapter! The Make-a-Wish staff, board of directors, and volunteers and generous donors like Texas National Bank, realize the power of a wish and are dedicated to making every eligible child’s wish come true. Using a flat wooden spatula, turn the mixture until eggs are cooked. Add the picante souce and mix well. Remove from heat. Cut 6 pieces of foil large enough to hold a tortilla. Divide sausage/egg mixture into 6 portions. Spread in each tortilla and roll it, ending with fold underneath. To eat, remove foil, place burritos on plate. Add picante sauce and 1 ounce of cheese for each. Microwave till cheese melts.

Calling All Winter Texans to Complete the Winter Texan Survey Special to Welcome Home RGV

Texans make a huge difference to the Valley! You spend money, volunteer to help others, and share your love of life with the community. Now is the time for Winter Texans to let your power be known by completing the new Winter Texan Study at www.utrgv.edu/wintertexan. The study asks questions that will be used to inform business and community leaders about how much money the Winter Texans spend in the Valley—or put differently—how much money would be lost if Winter Texans weren’t here! “Politicians, businesses and tourism officials often ask me about Winter Texans and their economic impact. With this survey’s results, I can answer those questions and make a real difference in how the community values Winter Texans,” said Dr. Penny Simpson, director of the Business and Tourism Research Center at The University of Texas Rio Grande Valley. This year’s study not only looks at

the economic impact of the Winter Texans on the Valley and on Mexico border towns, but also looks at Winter Texans’ attitudes toward purchases of wills and prepaid funerals. “Very little academic research has examined why people do or do not purchase these products, and we are grateful for the insights our RGV Winter Texans provide to this area of academic research,” said Simpson. All Winter Texans are invited to participate in the study, which will be online until February 26. All survey participants will be entered into a drawing to win a new Kindle Fire. The center, located in the College of Business and Entrepreneurship, is part of the University’s outreach program designed to provide research and professional service to the region and the state. It also provides educational opportunities to UTRGV students by actively involving them in the research activities of the center. The biennial Winter Texan Report has been conducted since 1986. •

Santa Golf Course is a public course and is among the most beautiful in the country, thanks to the unique tropical setting of the Rio Grande Valley. It has wide spaces, natural growth, and a fantastic layout for both the champion and the rookie player. It is a course you will play again and again and enjoy every time. The course was built and designed by Jeff Brauer, with the help of Steve Elkington. It opened in 1997 for play. In addition to being an excellent locale for golf, it is also a perfect setting for an outdoor wedding, complete with a waterfall in the background. The facility has a large dining room suitable for corporate meetings. The restaurant is full-service. They can satisfy the golfer for a sandwich and drink following a round of golf or prepare a banquet-style meal. The fairways are 419 Bermuda grass while the greens are Champion Bermuda. The course has sand traps strategically placed on every hole. Water plays an important part of your golf experience on this course, as there are a number of lakes. The front nine is set among a planned residential development community with some beautiful large

homes of varied architectural designs. The back nine is more open, with larger and straighter fairways. But you need to be alert or the traps, swales, howling winds, and mounds will bite you! The course has four sets of tees with 72 par. Three are rated for men: 7139 yards rated at 73.6/124, 6601 yards rated at 70.8/119, and 6045 yards rated at 68.2/110. Yardage of 5313 is rated for women at 71.2/121. This course is located in South Weslaco at 1901 Club De Amistad. David Martin is the general manager, and Joey Rios is the director of golf. The Rio Grande Valley is blessed with great weather, as well as great golf courses. There is a course for every player, from beginners to accomplished golfers. There are more than twenty 18hole courses throughout the Valley and almost as many nine-hole courses. Some of the nine-hole courses are Par 3s, which are perfect for the beginner and for our older citizens who still enjoy the game but are unable to play a larger course. January 17, the women at Eastgate Mobile/RV Park had our second Senior Ladies’ Baby Shower. Our event in 2015 was such a huge success that the Eastgate Ladies decided we’d do it again this year. It was another HUGE success. This is a charitable event for mothers and mothers-to-be in Harlingen. Packages were presented for the Gabriel Project at St. Anthony’s Catholic Church and items were also delivered to the Women’s and Children’s Protective Service (Rainbow Room) and The Church of Christ all right here in Harlingen. Women from the board of Harlingen’s Children’s Protective Service attended and explained to our ladies what the CPS does and expressed their thanks for our donations.

The event was well represented by the Ladies at Eastgate, and a fun time was had by all. Games, cake and punch were all a part of the fun-filled afternoon. A BIG thanks to all who participated.•

January will mark the 15th annual National Mentoring Month, and Boys & Girls Clubs of Edinburg RGV is participating in this campaign aimed at expanding quality mentoring opportunities to connect more of our community’s young people with caring adults by hosting a mentor mingle Friday January 29, from 5:30 to 6:30 p.m. This mingle held at the Boys & Girls Clubs of Edinburg RGV, located at 702 Cullen Street (Rogers & Expressway 281), will highlight the benefits of mentoring and share the process for becoming a mentor. “There is a powerful mentoring effect demonstrated by research and the experiences of young people who are connected to a mentor,” said Sabrina Walker Hernandez, Chief Professional Officer for Boys & Girls Clubs of Edinburg RGV. “Mentoring is linked to improved academic, social and economic prospects for your people, and that ultimately strengthens our community.” Research has shown that when matched through a quality mentoring program, mentors can play a powerful role in providing young people with the tools to make responsible decisions, stay focused and engaged in school, and reduce or avoid risky behavior like skipping school, drug use, and other negative activities. For example, in a recent national report called The Mentoring Effect, young people who were at-risk for not completing high school but who had a mentor were 55 percent more likely to be enrolled in college than those who did not have a mentor. They were also: • 81% more likely to report participating regularly in sports or extracurricular activities. • 78% more likely to volunteer regularly in their communities. • More than twice as likely to say they held a leadership position in a club or sports team. This same report found that one in three young people in our country will grow up without a mentor. Today, in our community there are many kids who could benefit from having a mentor. As we focus on engaging more community members in volunteering as mentors, we will share a simple

message: Be Someone Who Matters to Someone Who Matters. Mentoring relationships are basic human connections that let a young person know he/she matters, and mentors frequently report that their relationships make them feel like someone who matters in another person’s life. National Mentoring Month is led by MENTOR: the National Mentoring Partnership and the Harvard School of Public Health, with support from the Highland Street Foundation. Each year since its launch in 2002, National Mentoring Month has enjoyed the strong support of the president and the United States Congress. Other prominent individuals who have participated in the campaign include Maya Angelou, former president Bill Clinton, Clint Eastwood, Quincy Jones, Cal Ripken Jr., Bill Russell, and Usher. Since 1969, the Boys & Girls Club has played an integral role in Edinburg and the surrounding community, providing daily programs and services to over 16,000 young people. Taxpayers Be Vigilant the Next Four Weeks

A

month-long window of opportunity has opened up for scammers, and its timing is crucial for honest taxpayers. Here’s why: Identity theft. Documents you need in order to file your 2015 tax returns should start arriving soon in your mailbox. Employers are required to mail W-2 and 1099 forms by January 31; banks and brokerage firms may have later deadlines. With your Social Security number and other sensitive information on these forms, this paperwork provides identity thieves with enough details to open fraudulent accounts in your name. It’s especially easy pickings for crooks to simply follow postal carriers and steal these just-delivered tax documents from mailboxes. Having a locked mailbox or post office box or being home to retrieve mail provides some security. But if none of these options applies to you, consider asking a trusted athome neighbor to promptly collect your mail or have it held at the post office for personal pickup. Also, pay close attention to what expected tax documents have arrived and when; if you haven’t received them by midFebruary, call the sender to ask why. If you learn that a document was sent to you, but you didn’t receive it, consider an immediate credit freeze. Tax-refund fraud. By mid-February, your tax refund may have already been claimed by another type of ID thief — namely, one who e-files a fraudulent IRS return under your identity. This kind of swindler doesn’t need your tax documents because to file returns electronically, all that’s needed (besides a computer) is a name, birth date, and SSN — info that’s available elsewhere for as little as $25.

Why timing matters: The IRS began accepting individual electronic returns January 19, but employers don’t have to provide the agency with correct employment information until March. And though the agency may not match employer-provided data with consumers’ tax returns for months, it issues 90 percent of refunds within 21 days of receiving e-filed returns. This allows well-timed scammers committing stolen identity refund fraud (SIRF), as it’s called, the chance to make up fake W-2/1099 and other information “so that the IRS receives the false SIRF return before legitimate taxpayers have time to file their returns,” the Justice Department explains. “The SIRF perpetrators arrange to have the refunds electronically transferred to debit cards or delivered to addresses where they can steal the refund out of the mail.” Although the IRS says it stops most fraudulent claims, each year billions in refunds reach SIRF scammers, and refund-seeking bogus state tax returns are also filed. The good news: This year the agency has new initiatives and technology to combat tax-refund fraud. And victims of refund rip-offs eventually get their entitled money. I don’t make many “scratch” cakes; the mixes available are so good and the results predictable. But I really loved this cake I tasted at a friend’s home, so I knew I had to pass on the recipe and make it for a potluck soon. •

Susan’s Mother’s Oatmeal Cake • 1 cup oatmeal • 1 stick margarine, room temperature • 1 ½ cups hot water Place the above ingredients into a bowl and let sit for 20 minutes. Add the following and mix well together: • 1 1/3 cups flour • 1 teaspoon baking soda • 1 cup sugar • 1 teaspoon cinnamon • 1 cup brown sugar • 2 eggs • 1 teaspoon vanilla • ½ teaspoon nutmeg Pour into a sprayed 9 x 13” pan and bake in a 350-degree oven until done, about 30 minutes. Meanwhile, mix together the topping: • 6 tablespoons margarine • ½ cup brown sugar • ½ cup chopped nuts • ¼ cup evaporated milk • ½ cup coconut • ½ teaspoon vanilla As soon as the cake comes out of the oven, carefully spread the topping over the cake. Set the oven to “broil” and place the cake under the broiler until bubbly. Watch carefully! This is delicious served with ice cream or whipped cream. Real Texas Chili!

I

hope to spark your interest in regional foods you might not have tried before. Today we’ll dive into Texas chili, sometimes called chili con carne – literally, chili with meat. It is a very simple recipe made of beef and chilis and often includes garlic, onion, tomato, and several spices. This is important – real Texas chili includes no beans. Repeat – NO beans! Chili purists are very adamant about this. Think of it as a Tex-Mex style beef stew. I am providing two recipes: Lyndon B. Johnson’s family chili recipe and my recipe. The president’s recipe comes courtesy of the LBJ Library. It gets its name from the river that flows past the LBJ Ranch - the Texas White House. If you have not visited the LBJ ranch, you should do so. Tours now include the inside of the home – extremely interesting. The presidential library and Lady Bird Johnson Wildflower Center in Austin are also great spots to visit.

The following quotoation is attributed to Lyndon B. Johnson, 36th president of the United States: “Chili concocted outside of Texas is usually a weak, apologetic imitation of the real thing. One of the first things I do when I get home to Texas is to have a ‘bowl of red.’ There is simply nothing better.” LBJ would certainly not lead us astray. Here is Mrs. Lyndon B. Johnson’s “Pedernales River Chili” recipe. (pronounced Per-Den-Al-Es ) Truth be told, I did not make a batch of the president’s Pedernales Chili – if it is good enough for a president, it simply has to be good, don’t you think? Pedernales River Chili Ingredients: • 4 pounds round steak or chuck roast – trimmed and coarsely ground (a chili grind). ½-inch cubes work. • 1 large onion, chopped • 2 cloves garlic, minced • 1 teaspoon dried oregano • 1 teaspoon ground cumin • 6 teaspoons chili powder • 2 (16-ounce) cans whole tomatoes, cut up • 2 to 6 dashes hot sauce (or to taste) • Salt to taste • 2 cups hot water Cooking instructions: In a large frying pan, brown meat with onion and garlic until meat is lightly browned; transfer ingredients to a large heavy kettle or a cast iron Dutch oven. Add oregano, cumin, chili powder, tomatoes, hot sauce, salt, and hot water. Bring just to a boil; lower heat and simmer, covered, for approximately 1 hour or until the meat is tender. Remove from heat. Skim off grease and serve, topped with your favorite condiments. Randy Hoelscher is a transplanted Texan and half-time RGV resident. “Bowl of Red” Chili Makes about eight one-cup servings. I was tempted to give instructions for making the sauce with dried peppers, but chili powder is easier, quicker, and tastes just fine.

Ingredients: • About 4 lbs. boneless beef chuck, trimmed and cut into ½-inch cubes. • Trim off the membranes and connective tissue. If it is tough to cut, remove it – keep the tender meat. • 2 Tbsp. cooking oil for browning the meat – add more if the meat sticks to the pan • 1 large yellow onion, coarsely chopped • 3 Tbsp. chili powder • 3 Tbsp. masa harina (corn tortilla flour) – for thickening – cornmeal will work but the flavor will be a little different • 1 Tbsp. minced garlic (6 cloves minced fresh garlic) • 1 Tbsp. comino (cumin) seed (you can substitute 2 tsp. ground cumin) • 2 tsp. Mexican oregano • ¼ tsp cayenne pepper • 1 – 14-ounce can beef broth • 1¼ cups water – may need to add more to keep meat nearly covered • 2 Tbsp. brown sugar Cooking instructions: Add oil to a Dutch oven or heavy kettle and brown (not gray or tan) the beef in several batches, sprinkling with salt and fresh ground black pepper. Add oil, if needed. Remove beef when browned. Put the chopped onion and garlic in the Dutch oven with a few ounces of the beef broth and cook over medium heat until onions are tender. Stir in chili powder, cornmeal, garlic, cumin, oregano, and cayenne pepper, and cook a minute or two. Stir in the browned beef, the remaining beef broth, the water, brown sugar, and ½ teaspoon salt. Bring to a boil and reduce heat to a slow simmer. Simmer covered for 1 ½ to 2 hours or until meat is tender. To serve, try topping your ‘Bowl of Red’ with sour cream, shredded cheese, corn chips, or you own favorite topping. How did my official tasters rate this recipe? They rated it from 6 to 10 with an average of almost 9. Their comments were; too spicy, needs more heat, too sweet, needs salt, and needs ‘something.’ I believe none of them have ever experienced chili without beans. Their comments clearly show the flavor is a matter of personal taste, so when you make it, be sure to taste the chili while it cooks and adjust spices to your personal taste.

D From the Inside, Out D Sewing Will Make It So

I

took two semesters of home economics in high school, a required course for all female students. It was designed to teach girls how to be homemakers since that was deemed our calling at that point in time. We called it “home ec.” It included cooking, sewing, and a little nutrition and color sense. Elk Point High School was in the center of South Dakota’s most fertile farmland, and many of the students were farm- born and raised. A course of one-size-fits-all is usually the rule in our public schools, and this was no different. When we embarked on the cooking unit in home ec., it was an eye-opener. The first thing we learned to make was eggs Benedict. In the rural Midwest in the 1940s, no one in that class (or, I would venture to guess, any of their parents), had ever heard of eggs Benedict. But we learned how to prepare them! My mom’s response was, “Eggs what?” Another must-know-how-to-do was stuffed pork chops and potatoes au gratin, neither of which was standard fare among the farm families of Union County, South Dakota. We may not have learned how to fry an egg or make a meat loaf, but we did learn how to properly set a table as well as many other useful things. The sewing unit was traumatic since it took us three weeks to sew an apron, and I knew my mom could whip one out in 20 minutes on a sewing machine she pedaled with her feet. We basted, measured, stitched, and ripped and came out with an apron of sorts, but I felt I had sewed mine four times before it was considered finished. I do not know if home ec. is a part of the public school curriculum in this day and time. After I married, I expressed a desire to sew. We had very little money to spare, if any at all, but my dear husband scraped enough together to buy me a portable Sears Kenmore sewing machine. Husbands will do whatever it takes to buy their wives a sewing machine. It must be a throwback to a primeval time when the women chewed on leather hides to make loin clothes for their husbands and family. I just know it is time-honored and a really goofy emotional conviction that is rooted in the primitive areas of men’s brains. Patterns cost 10 or 15 cents, thread was a dime, and fabric was cheap. Women sewed. I decided I, too, would sew. We had been married for a year and a half, we were living

in New London, Connecticut and there was a nice Officers’ Club on the Submarine Base. I needed some dressy clothes, so I decided to sew something special. My brain was out to lunch. The very first garment I chose to sew on my new sewing machine was a federal blue, peau de soie cocktail dress with a modified bustle. I bought the pattern, the thread, and the fabric and went to work. I had decided anyone who can read can sew. Instructions were very specific. It turned out to be true. The gown was finished, it fit, and it was very attractive, although a little dressier than I had visualized in my mind’s eye. I wore it and it looked good. My sewing career was launched. I wanted to sew the world. I sewed everything I wore. I even sewed shirts for my husband. When our children were born, I sewed coats and trousers and knitted caps and mittens to match. Fara’s little dresses were beautiful, with lace trims and smocking; I sewed Mark’s little tailored trousers out of Norman’s worn-out ones by using the parts of his trousers where the fabric was not worn. I tailored pockets, a little fly, everything just like an adult pair of trousers. I was a sewing maniac. When my daughter grew older, I would copy beautiful evening gowns she liked from a store or magazine. I lined them with all raw seams turned inside so the insides of her gowns were lovely, as well. I finally got over it. Now I use my sewing machine to repair and patch and little else. But it was a grand pastime, sewing for my family. I attribute my “sewing” life to my experience in home economics, where I spent four weeks making a dumb-looking apron, but even then, I planned on sewing much grander things. • M. New Alpha Male Introduced to

Mandrill Troop at Gladys Porter Zoo Special to Welcome Home RGV

For the first time in nearly two years,

the Gladys Porter Zoo’s mandrill troop has a leader. At 10:30 a.m. Thursday morning, January 21, “Sugriva,” a large, mature, six-year-old male, joined the zoo’s family of three other mandrills. Although the introduction was extremely peaceful, it was obvious to zoo staff that the troop recognized his solemn dominance. While two relatively small females and a young male climbed, played, and sought out hidden treats, there was not a squabble amongst them. They kept a cautious eye on Sugriva, as well as a respectful distance. All the while he looked calmly on, as if to credit his namesake, the monkey king from the Hindu epic Ramayana. Sugriva’s role is very important to the long-term health and wellbeing of the entire troop. In groups of some primates with no alpha male present, it is common for the largest females to become physically aggressive toward other members. Sugriva will not only bring social balance to the troop, but he will hopefully sire new offspring. Mandrills are the largest monkeys in the world and are also known as

the most brightly colored mammals in existence. Males average 70 pounds but can weigh up to 100, while females average fewer than 30 pounds. This threatened species is native to the rainforests of Western Central Africa. They often travel in large groups, numbering in the hundreds. This makes them easy targets for hunters with high-powered rifles. Their biggest threat, besides being hunted for food, is loss of habitat due to competition from agricultural development and human settlement. My philosophy on food and cooking is one of classic simplicity. In my opinion food should be simple, beautiful, fresh and delicious. So often dishes are made too fussy and complicated and that is not always necessary. My true culinary passion is sauces – creating them from unique ingredients, pairing them with new entrees and I also love teaching others how to prepare them. Sauces may seem mystical, and in some ways they are, but they should never be feared. Here I have shared three classic sauces that you can easily prepare at home and surely impress your guests. As you will see, with basically three ingredients and 5 minutes you can have a flawless Alfredo sauce, it’s that simple. After all cooking should be simple, fun and filled with love. Chef’s note: Please note that when using white pepper, it is very fine and far stronger than black pepper, so take care when applying and be conservative.

Simple Marinara Sauce 1 tablespoon pure olive oil 1 yellow onion, small dice 1 1/2 teaspoons minced garlic 1/2 cup good red wine, such as Chianti or a Merlot 1 (28-ounce) can crushed tomatoes, San Marzano are best 1 tablespoon chopped fresh basil, or 1 tablespoon pesto 1 1/2 teaspoons kosher salt 1/2 teaspoon freshly ground black pepper Heat the olive oil in a large sauté pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 additional minute. Increase heat to high and add the wine, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, basil (or pesto), salt, and pepper. Cover, and simmer on low heat for 15 minutes. Taste for seasoning and adjust with salt or pepper as necessary.

Bon Appetit! Beurre Blanc Sauce / Champagne Cream Sauce

Classic Alfredo Sauce

1 shallot, minced 1 cup white wine (or Champagne) 1 cup heavy cream 1 stick unsalted cold butter, cut in pieces Kosher salt

1 cup heavy cream 1 stick unsalted cold butter, cut in pieces 2 cups freshly grated Parmesan cheese Salt and white pepper Pasta cooking water, as needed

In a sauté pan, place the shallots and heat for one minute on high heat. Add the wine and allow the liquid to reduce to 1/3 of the original. Add the cream and allow to simmer. Add the cold butter in pieces, shaking the pan to incorporate. Continue to shake until all butter is melted and incorporated, this will ensure that your sauce will not break. Season with salt to taste.

Toss with pasta to combine, thinning with pasta water if necessary.
