But this year was special in that Welcome Home RGV purchased Expo in 2015, so this year’s event was under our direction and management. Thank you for your feedback! From the wide variety of vendors to the topnotch entertainment, our sponsors, and our amazing crew of staff and volunteers, we feel certain we brought you the best event yet! Despite the beautiful weather, we had roughly 7,500 attendees inside the McAllen Convention Center during this two-day event! Friday, January 29, the 7th Annual Llano Grande Quilt Show will be held from 10:00 a.m. to 3:00 p.m. “Heirloom Rose of Texas” is this year’s theme. The Llano Grande Quilting Bee consists of over 100 members from across the United States and Canada. Admission to the event is $1.00. On display will be over 200 beautiful quilts, wall hangings, table décor, totes/purses and wearables. You will get to vote for your favorite! Family heirloom quilts will also be shown. Cooking Up Some Nostalgia Special to Welcome Home RGV

with The Bee Gees

Curry Chicken Vindaloo

Serves 6 Preparation Time: 1½ hours Cooking Time: 45 minutes

• 2 lb chicken, cut in pieces • ½ cup mustard oil • 4 bay leaves • 1 large onion, thinly sliced • 1 teaspoon salt

• 10 cloves garlic, crushed • 1 tablespoon thinly sliced root ginger or powder • 2 medium tomatoes, peeled & quartered • 1¼ cups water

Spices • 1 teaspoon green cardamom seeds • 2 teaspoons turmeric powder • 1 teaspoon paprika pepper

Paste • 3 tablespoons vindaloo powder • 2 teaspoons vinegar • 2 teaspoons salt

First combine the paste ingredients to make a smooth mixture. Make a few deep gashes on the chicken pieces and rub the paste over them. Leave to marinate for 1 hour. Heat the mustard oil in a saucepan over moderate heat. Add the bay leaves and cardamom seeds, stir, then add the onion and fry until light brown. Then add the remaining spices, stir well and add the chicken pieces. Continue to cook, stirring, for about 5 minutes. Add the salt, garlic, ginger and tomatoes and cook for a further 10 minutes, still stirring. When the fat starts separating, add water. Stir once or twice. Cover with a tightly fitting lid, lower the heat and leave to simmer for about 25 minutes until the chicken is tender. Serve hot.

Rev Up Those Engines for the 5th Annual McAllen Car Fest Special to Welcome Home RGV

The

McAllen Convention Center will host the 5th Annual McAllen International Car Fest January 2931. Over 300 vehicles will be on display inside the convention center and in the adjacent parking lot. The show will feature over 60 different categories of vehicles, ranging from classic and antique cars to muscle cars, hot rods, and race cars and to modern and concept vehicles. The event will also include a Swap Meet,

live entertainment, a Kids’ Model Car Build-off, and more. The show will be held Friday from 4:00 p.m. to 9:00 p.m., Saturday from 10:00 a.m. to 9:00 p.m., and Sunday from 10:00 a.m. to 6:00 p.m. The McAllen Convention Center is located at 700 Convention Center Boulevard. Start your engine and get over to the McAllen International Car Fest. •

Tip of Texas Family Outreach is a nonprofit organization established to strengthen families and prevent child abuse and neglect by providing supportive services, information, and referrals. It began with an idea developed by Mrs. Gloria Hughes, a former nurse and member of the Cameron County Child Welfare Board, who was a special advocate for children. Her vision for this agency was the “prevention of child abuse.” In January of 1987, Tip of Texas Family Outreach was formed by a group of volunteers

who wanted to make a difference in the community. The organization opened its doors in March of 1989 and began offering confidential and compassionate support groups to parents and children whose families were at risk for abuse or neglect. Our mission is accomplished by providing home-based casework services, parenting skills classes, financial literacy, summer youth programs, safe-sitter classes, divorce parenting, My Baby & Me home visiting program for first-time teen parents, emergency food, clothing and school supplies, information, and referrals. Program services are designed to help parents understand the benefits of non-violent discipline techniques, to develop nurturing parenting skills, to improve communication, to strengthen family relationships, to help them understand and meet their child’s emotional, physical, and developmental needs, and to help build strong, healthy families while minimizing their risk of child

maltreatment. Our vision is to “build a stronger community one family at a time” and to ensure children are raised in a safe, healthy, and nurturing environment. What are the hours of operation? Regular business hours are Monday through Friday from 8:00 a.m. to 5:00 p.m. We are open some evenings. What kind of donations does your nonprofit organization need? Our agency is always in need of diapers for children (all sizes). These are given to participants of our My Baby & Me program, who are first-time teen parents lacking the financial resources to provide these basic needs for their children. We are also in need of school supplies and children’s clothes and shoes (may be slightly used). As always, funding is crucial to the continued success of a nonprofit organization, and with this being said, monetary contributions are always welcome.

What kind of volunteer opportunities do you have for Winter Texans, Valley retirees, and others in our community? Volunteer opportunities include the following: clerical, child care for families attending classes, assistance during special events, fundraisers, and helping organize projects. is open to the public and is one of the premier golf courses in Texas. The course was rebuilt in 1999 by SAJO Construction under the guidance of world-renowned architect Charles Howard. Since reopening in 2000, it serves as the home course for approximately 22 annual tournaments. It is also the home course for 17 Winter Texan leagues. The par 72 championship layout has wide, generous, and rolling fairways of 419 Bermuda grass and is lined by Common Bermuda roughs and mounds that create a links-style atmosphere. There are 14 manmade lakes, a few sand traps, and a number of trees that enhance the character of the layout. The greens are Tiff Dwarf Bermuda, which makes for excellent putting conditions. There are three sets of tees rated for men with the longest of 6783 yards rated at 72.2/125, the middle tees of 6384 yards rated at 71.2/119, and the shorter tees of 5814 yards rated at 67.6/111 The shortest tees of 4816 yards are rated for women at 67.7/106.

1st Responders Leadership Meeting Held at Valley Care Clinics Special to Welcome Home RGV

14, the 1st Responders’ leadership group met at the Valley Care Clinic adjacent to McAllen Medical Center at 4:00 p.m. The South Texas Health System (STHS) education team from McAllen Medical Center presented information on the signs and symptoms of a stroke, treatment, and statistics of the RGV in comparison to other regions. Handouts were provided to post and share with our respective resort communities. Dr Jaime Gasco, STHS neurosurgeon, shared the newest technology in the Brain Lab at McAllen Medical Center. This Brain Lab’s technical equipment provides doctors with the highest level of precision for minimally invasive surgical procedures, improving the patient’s outcome and ability to return to normal activities. The leaps and bounds of advanced neurosurgical procedures available in the RGV for the brain and spine are extremely impressive. Several questions followed, with a discussion of new advancements for back surgery, as well. Dr. Gasco shared recent educational opportunities he attended for the STHS doctors from across the country, learning the latest surgical techniques from many of the nation’s leading doctors and medical facilities to improve patients’ lives here in the RGV. Dr. Juan Chavez-Paz from the Valley Pulmonary Group spoke to the 1st Responders about emergent respiratory issues, covering COPD and the common medical pulmonary concerns most prevalent in ICU patients. Bronchial Thermoplasty and the remarkable improvements to patients receiving this newer procedure were shared. Immediate results have been noted in numerous asthma patients after having this outpatient procedure,

which is easily completed in a short time, followed by minimal recovery monitoring before patients can return home. The long-term results show patients undergoing this treatment experience benefits lasting five years. McAllen Medical Center has added a new ACE (Acute Care for the Elderly) Unit on the sixth floor of the hospital for specialty care of aging adults. This specialized unit provides nurses with a different standard of care for this population, based on clinical protocols established with evidencebased practices outlined through the national geriatric program NICHE (Nurses Improving Care for Health System Elders). Each of the nurses receives specialized training and follows geriatric-safety protocols for fall precautions and early mobility. New wood-grained flooring throughout the hallways looked nice and provides better traction for walking. The nursing staff also demonstrated a new piece of equipment used to assist mobility-challenged patients into the restrooms. Patients step on it and either sit or stand to be moved to the restroom. Recipe for a Recycling Program By Wilma Jacobs, MBA, Winter Texan and proud VPR Green Team member

“I felt like a criminal”, said Betty

Nelson, Winter Texan at Victoria Palms Resort (VPR). Back home, she was used to recycling everything from plastics to paper to metal and glass – and even wet compost - leaving next-to-nothing for landfill garbage. But here in the Valley, she dumped everything into the same garbage can – headed to the landfill. She was very uncomfortable with what we were doing to the environment. So she wrote a suggestion to the Victoria Palms Advisory Council, an active, resident-run liaison between resort management and resort residents – to set up a Recycling Program at VPR. The council’s efforts had already been successful in convincing the City of Donna to repave North Victoria Road, a considerable achievement. The council established a 15-member “VPR Green Team,” consisting of members of the council and volunteer resort residents, ably led by Kathie Butcher a full-time VPR resident and with the full support and participation of the resort manager, Terry Goss. The team’s goal was to come up with a way to reduce the landfill garbage at VPR by over one-third this season. It was a big, hairy, audacious goal! The Green Team researched what recycling providers were available in the Valley and located a company in Brownsville – Redfish. Redfish had not expanded its services this far west from Brownsville at that time but agreed to work with Victoria Palms once they entered the Weslaco market. The unique thing about Redfish is that recyclables don’t require pre-sorting – making compliance easy for resort residents – both mobile home permanent residents and transient RVers. Costs for this service were an important consideration, as well, but the Green Team and the resort manager soon realized they would be offset by even more savings – garbage to the landfill would be reduced! Currently, Redfish has installed four bright red dumpsters at locations in the resort. Residents bring their recyclables to these and also use the 35-gallon containers in high-traffic areas throughout the resort. Meeting weekly, The Green Team divided up tasks among team members. Part of the Recycling Program involved promotion and education for the workers in the resort (restaurant, hotel, maintenance, RV office, housekeeping, activity center, etc.) and for the residents, many of whom had not done recycling before.

A media release was sent out to local newspapers and TV stations in the Valley. Coverage from this effort brought responses from other parks asking how we did this. Beside tutorials for staff groups, the team created awareness of the new program through the use of a brochure (mailed to every resident and put into each welcome package for newcomers), announcements on the in-resort TV and on the resort’s Facebook page, PowerPoint presentations at town hall meetings (including FAQs), table displays in the lobby and at resort events, such as craft fairs, and a “Recycling Tree” showing items that could and could not be recycled. At this point, the Recycling Program includes plastics (numbers 1 and 2), paper and cardboard, and metals (aluminum and tin). The program is currently being expanded to include household batteries (chargeable and non-chargeable) and used light bulbs. Recycling saves in so many ways: According to the EPA, recycling in the U.S. keeps 60 million tons of waste a year from going into landfills and saves natural resources that are saved from being extracted from the earth and sent to manufacturing plants. Every ton of paper recycled saves approximately 17 trees. When we recycle, used materials are converted into new products. Recycling saves energy because the manufacturing process uses less energy than that required for producing a new product from raw materials. Recycling one aluminum can saves the equivalent of enough energy to run a TV set for three hours. Shockingly, Texans spend over $1 billion annually on solid waste disposal services for over 22 million tons of garbage. Landfill sites are filling up - only approximately 27 landfill years are remaining in the Lower Rio Grande Valley. VPR’s future plans include possible curbside service for recyclables (since actual garbage volume is being reduced) and finding a way to recycle glass and used pharmaceuticals. Only one month into the program, The Green Team is celebrating its initial success! By the end of December, the Resort is proud to say it had saved 2,250 pounds of waste from going to the landfill. In doing so, Victoria Palms has also saved 13 trees, 3,727 kilowatt hours of energy, 4,162 gallons of water, and 9 cubic yards of landfill space! As Betty says, “Once you start re-cycling, it’s hard to stop,” and we think this will be the case for everyone here at Victoria Palms. •

Buddy Holly Anniversary February 3 By Bernie Crawley

February 3 will commemorate the

57th anniversary of the death of one of the true pioneers and innovators of rock-n-roll and one of the genre’s most influential artists, Buddy Holly. He would be 79 years old if he were here today, and who knows how different the music of the last 50 years would have been had he lived. Although stardom came at a young age, Buddy Holly was no overnight success. Born and raised in Lubbock, Texas, country music was his first love, but after opening for Elvis when “The King” played in Lubbock, Buddy was won over by his rockabilly style. Although some country remained, Buddy was a rocker from then on. His first commercial recordings were done in Nashville where he cut more than a dozen sides, including the original version of That’ll Be the Day with producer Owen Bradley. But the chemistry was not right, and most of these sides were not released until Buddy was already a star. Returning to Lubbock, no doubt a little disillusioned, Buddy and his bandmates travelled to Clovis, New

Mexico, to the studio of Norman Petty where the atmosphere was much more laid back than in Nashville. No one was watching the clock, and Buddy was able to experiment and spend time getting just the right sound on the songs he recorded there, classics such as That’ll Be The Day, Maybe Baby, Words of Love, Not Fade Away, Everyday, Peggy Sue, and Oh Boy. The Buddy Holly influence on the young musicians of the British Invasion cannot be overstated. Buddy played (really played) his own guitar and wrote his own songs. This in an era when pop singers recorded whatever Tin Pan Alley threw at them, and nowhere was his influence more obvious and profound than in the music of Lennon and McCartney and The Beatles. In their early live shows, The Beatles covered no fewer than 13 Holly songs and half a dozen of those found their way onto Beatles records. Buddy’s influence can be seen most obviously in their song writing, as Paul McCartney said in the Anthology sleeve notes, “One of the main things with The Beatles, we

started writing our own material. People these days take it for granted, but nobody back then wrote their own stuff. John and I started writing because of Buddy Holly. It was like WOW, he writes and he’s a musician.” On January 23, 1959, Buddy headed out on a 245 date tour of the Midwest, travelling by bus. After a show at the Surf Ballroom in Clear Lake, Iowa, Feb 2, Buddy chartered a plane along with fellow performers Ritchie Valens and The Big Bopper. In the early hours of Feb 3, the plane went down shortly after take-off, killing all of the occupants. Shortly after his death, the recording of It Doesn’t Matter Anymore hit the charts, the first of many posthumous releases, reaching #13 on the Billboard charts and #1 in the UK. So on Feb 3, get out those Buddy Holly CDs (or go to Spotify or YouTube and set up a Buddy Holly playlist), and as you listen, ask yourself, what if ……..

Delicious Shrimp Tacos

I used to believe that tacos had to

be made with beef, pork, or chicken. Then in 2012, we volunteered at the Islands and Oceans Visitor Center in Homer, Alaska, and we were introduced to Halibut Tacos. They were fantastic. We may not have Halibut, but in the Rio Grande Valley, we have delicious and affordable Texas Gulf Shrimp. These shrimp tacos could easily become your favorite taco - easy to make and very good. Here is a quick overview of the recipe. The cilantro is diced and mixed with sour cream for a condiment. The shrimp are sautéed in bacon grease with a mixture of spices, green pepper, minced garlic, and tomato.

Yes, I said bacon grease. Our local HEB supermarket has a very friendly guy in the seafood department who suggested the bacon grease over cooking oil. I thought it was a little strange, but he assured me that “all the local restaurants” used bacon grease. I have no idea if that is correct, but I was curious, so I headed to the internet looking for information on shrimp sautéed in bacon grease. Sure enough, various food blogs address cooking shrimp in bacon grease, and there are different opinions about it. Some contributors said it enhanced the shrimp flavor and others say it was too strong. I tried it, and it worked great. Try it and decide for yourself! •

Sweet Onion Casserole • 5 large sweet onions • 1 stick real butter, melted • 1 cup shredded cheddar cheese • 1 tube round, buttery crackers, such as Ritz, crushed • ¼ cup milk (don’t use fat free) Peel, quarter, and slice the onions. Put into a covered, microwavesafe dish and cook on 75% power until tender, about 10 minutes. In a 9 x 13-inch baking dish, layer the onions and cheese. Mix the crushed crackers and melted butter. Sprinkle over the layers of onions and cheese. Pour the milk over it all, and bake at 350 degrees F. for 20-30 minutes. Sandy Olson, lifelong foodie, restaurant reviewer, cooking teacher. Delicious Shrimp Tacos

Ingredients: • 1 lb. Texas Gulf Shrimp - peeled and deveined. I cut the shrimp in half so they fit in a taco shell easier • 2 slices smoked bacon - fry to provide 2 Tablespoons of bacon grease (use cooking oil if you prefer) • 1/4 cup green (bell) pepper - finely diced • 1 Roma tomato - stem and seeds removed - finely diced • 1/2 tsp ground cumin • 1/2 tsp minced garlic • 1/2 tsp kosher salt • 1/4 tsp ground cayenne pepper • 1/8 cup white wine (Optional) • Flour tortillas – warmed • Add your favorite taco toppings - lettuce, onion, salsa, shredded cheese, etc. This recipe makes about six 6-inch tacos. Prep time is about 20 minutes. Directions: Wash and pat the cilantro dry. Dice the cilantro leaves and mix into the sour cream for a condiment. Peel and devein the shrimp, cut in half and set aside. Seed and dice the tomato and green (bell) pepper. In a large frying pan, fry the two strips of bacon at medium heat until about two tablespoons of bacon fat have been rendered. Remove the bacon, reserving the grease. Mix the spices and garlic into the bacon grease. With the skillet at medium-high heat, add the shrimp, peppers, and tomato to the seasoned bacon grease. Sauté for about three minutes, tossing frequently until shrimp are opaque. Add wine, if used, and stir until the liquid is reduced by about half. To serve, spread cilantro-infused sour cream on a tortilla and add the shrimp mixture and optional toppings. Randy Hoelscher is a transplanted Texan and half-time RGV resident. Over 60 nonprofit agencies, schools, and governmental institutions have already signed up on Volunteer South Texas and are now able to easily advertise their volunteer opportunities, in-kind needs, and special events to our communities. Potential community volunteers can now browse what needs exist and then register to volunteer to fill a specific need and/ or to be automatically notified when volunteer opportunities arise around their passions. Registration can even be done right on your smartphone! To celebrate Volunteer South Texas Week 2016, over the next couple of months, nonprofit agencies, schools, and governmental institutions

throughout South Texas will post needs for volunteers specifically for the week of April 10-16. United Way of South Texas will publicize the week’s opportunities for service. Volunteers will then click on the “Respond” button (on Volunteer South Texas) on the opportunity they want to accept, and the individual agencies will contact each volunteer to schedule the specific tasks needed that week. T-shirts will be given to all participants involved in the week’s service projects who have signed up through Volunteer South Texas. McAllen Mayor Jim Darling (our Honorary Volunteer South Texas Week 2016 chairman) and the mayors of many of the communities in Hidalgo and Starr counties will lead us as we serve at food pantries, in afterschool programs, or at a beach cleanup (examples only). Once the week’s activities are completed, we’ll tabulate the number of volunteers who served in our communities, the number of hours served, and the value to our communities from this week of volunteer service. Brain Teasers 2 Opening January 30 at IMAS! Special to Welcome Home RGV

new appreciation for your brain and what it can do with Brain Teasers 2, a traveling exhibit, coming to the Rio Grande Valley and opening at the International Museum of Art & Science (IMAS) January 30. This exhibit, produced and toured by the Oregon Museum of Science and Industry, offers 20 challenges for puzzle enthusiasts of all ages. The exhibit is designed to sharpen problem-solving skills and to provide plenty of fun. Brain Teasers 2 includes unraveling mathematical conundrums, separating linked objects and then reassembling them, arranging geometric shapes to form new ones, and much more. To solve these puzzles, visitors must use creative thinking and problem-solving strategies, such as looking for patterns, thinking ahead, setting aside preconceived ideas,

and looking at problems from different perspectives. This brightly colored exhibit appeals to visitors of all ages and encourages parent-child interaction as families team up to solve the brain teasers. Visitors have been known to come back and try again if they don’t solve all the puzzles on their first visit! Brain Teasers 2 will be appearing at IMAS January 30 through May 8. A broken bone is a real bummer.

For over 50 years, no one in my immediate family had sustained a broken bone until the day I plunged to earth in the process of hurrying to my parked car. A marvelous record, and I broke it! No pun intended. Based on experience and observation, I have devised a system to avoid fractured bones in the healthy mature adult. Stay with me now! 1. Don’t walk about in the dark … even in your own house. Chairs and footstools have a way of jumping into your path. 2. Unless someone is close by, never, but never, crawl up onto a stool or stepladder to reach something you probably could do without. 3. Never hurry. Mature adults were meant to saunter or glide … not run or hurry. 4. Every throw (area) rug, even the ones Grandma crocheted with her own dear hands, must be removed from the floor. If displaying them is a must, hang them on the wall or over the back of a rocking chair. 5. Stay out of the attic unless accompanied by a strong, attentive male with muscles. 6. Keep an eye out for wet spots on any surfaces on which you may place your feet. Indoors and out. 7. When getting out of bed, take a few seconds to become oriented to doorways or your destination. To your sleepy eyes, bereft of glasses and in dim light, that tall bureau may look like a door, but it will give you a good crack if you plow into it. This is especially true when traveling or sleeping in unfamiliar bedrooms. 8. Sit down to slip into your socks, put on your shoes, or pull up your pants, under or outer. Hopping around on one foot when you miss the leg hole isn’t as easy as it once was. 9. Those darling slippers with no heel straps called mules, slip-ons, or scuffs that have the ribbons, bows, fur, or designs on the toe or the arch? An accident waiting to happen. Lose them. 10. Wear shoe soles appropriate for the surface of the floor of your

home. Rubberized soles are a good idea. Leather heels can be hazardous on some surfaces. Ice? Stay off of it. Wear cleats; hold on to someone. Tight. 11. Most importantly of all, you absolutely MUST teach your pets (dogs, or cats) to never get near your feet. Impossible, you say? It is indeed possible. During the time my newly acquired cat and I were adjusting to sharing the same dwelling, if or when she came near my feet, she received a free-flying lesson. Mean? Not as mean as a fractured hip and all it entails. We all know people who have injured themselves tripping over a pet. Cats have a brain about the size of a lima bean, but it took only two flying lessons for my cat to learn being near my feet hurts her! She is with me most of the time but never close to my feet. 12. If you begin to feel unsteady or your balance is not as good as it once was, don’t hesitate to use a cane. It becomes a third leg and takes about 25 pounds of pressure off whatever leg or hip bones give you discomfort. A cane does not make you look feeble; quite the contrary. It allows you to walk straighter, hold your head up, and look forward instead of down. I think canes are elegant. Walkers are magnificent contraptions that keep you safe when walking. Don’t hesitate to use one for your comfort and wellbeing. Stay safe. May your bones remain intact and free from injury. • M. Museum of South Texas History (“MOSTHistory”), a museum chronicling the heritage of South Texas and Northeastern Mexico, welcomes Joe Vidales, from the Weslaco Bicultural Museum, for a Sunday Speaker Series presentation, “Rio Rico: One Town, Two Countries, and the ‘Lost Americans,’” starting at 2:00 p.m. in the Courtyard Gallery Janurary 31. The presentation will explore the history of Rio Rico, a city that shares a tumultuous, perplexed identity between the border of South Texas and northeastern Mexico. During the 20th Century, several Rio Rico residents were born in the United States but were soon stripped of their U.S. citizenship and became citizens to the country of Mexico. The Rio Grande Land and Irrigation Company had diverted the Rio Grande (Río Bravo del Norte) in 1906, moving an area of land that included the town of Rio Rico south of the river. The land remained U.S. territory but was eventually ceded to the Mexican state of Tamaulipas through the Boundary Treaty of 1970. Soon after its separation, this small town entertained people from the

U.S. during the Prohibition Era of the 1920s. When alcohol was outlawed in the United States, the B&P Bridge Company built a two-lane suspension bridge from Thayer to the town of Rio Rico, south of Mercedes and east of Nuevo Progreso. A 10-cent bridge toll allowed people to visit a recreational center of gambling and drinking with rumors of connections to organized crime leaders like Al Capone. Joe Vidales conducted research on Rio Rico at his hometown’s Weslaco Bicultural Museum, where he has served as a volunteer and interim director for the past four years. The Museum of South Texas History is accredited by the American Alliance of Museums. It is located in Downtown Edinburg at 200 N. Closner Blvd. on the Hidalgo County Courthouse square. Mardi Gras Festivities Start This Saturday at Bit-O-Heaven Special to Welcome Home RGV Our annual Mardi Gras Pet Parade

and Golf Cart/Bike/Motorcycle Parades is coming right up! This Bit-O-Heaven Pet Parade starts Saturday, January 31 at 1:00 p.m. The best-dressed pets will win prizes supplied by local businesses. Our vehicle parade will be held the following Saturday, February 6, at 1:00 p.m. The best-decorated golf carts/bikes/cycles will also receive

prizes. Parade participants will drive throughout the park and throw out Mardi Gras beads as we go. Our annual dance will be held Fat Tuesday, February 9 from 7:0010:00 p.m. with the Tony Perez Band. entertainment and dance music. Our photo prop for our Over the Hill Pajama Party was a king-sized bed. We danced and enjoyed the afternoon watching all of the crazy antics that occurred. •

Chimney Park--Didn’t it Flood Out?

Chimney Park RV Resort is a vibrant and beautiful RV Resort located along the banks of the Rio Grande. The 55+ community is better than ever and more vibrant each year with new residents from all over the U.S. and Canada, beautiful landscaping, and our friendly residents and staff. This historic park is proud of its heritage, and the chimney is our national historical landmark. The park’s history goes back over 110 years! The land along the Rio Grande was purchased in 1904, and the chimney was constructed to allow an all-wood-fired lift station water pump for river water to irrigate the fertile farm lands. Laborers, paid 40 cents a day. built the chimney made of brick imported from Mexico to a height of 104 feet tall and six feet in diameter. The top two rows of bricks were never completed; why remains a mystery. The lift station crew of 26 men, along with mule teams, burned 2-3 cords of wood on every shift. John Shary purchased the lift station in 1914, operating it until 1953 when a drought hit the area, drying up the Rio Grande. Sea water from the gulf and entered the river bed, making the river unusable. Progress came to the Valley, and the Anzalduas Dam was built in 1960. The water pump was no longer needed. The year of 1965 brought a new owner and the official beginning of Chimney Park. The park’s amenities at that time included a fish camp with primitive conditions, a boat launch, a small store selling bait, groceries, and gas and a one-seater outhouse. All of this for 25 cents a night! Chimney Park grew in 1970 to seven cement pads and electrical and water connections hosting 20 trailers—

each paying $20 per night. Growth continued--67 sites in 1972. Then, in 1973, changes included city water and sewer and new amenities including shuffleboard, a pool room, a library, a kitchen, potlucks, ice cream socials, and Monday and Friday night Bingo. In 1983, the entire park of 18 acres was leveled, establishing more sites-up to 271! The Spanish-style Rec Hall, along with the hot tub and pool, were also built. Various owners, managers, and residents have seen a lot of improvements and changes over the years. The current configuration was completed in 2009 when the water district constructed the levy, which protects the fertile farm land from the many irrigation canals. Early in the summer of 2010, massive amounts of water were released from Mexico, filling Falcon Lake to overflowing. Chimney Park was given a 48-hour notice of a coming flood. Fortunately, less than one-third of Chimney Park was underwater. Several RV and park models were destroyed, but no buildings were flooded. Since then, Chimney Park has blossomed into one of the premiere RV resorts in the Rio Grande Valley. The unique setting along the river, the stunning sunsets, and the cool breezes offer our residents a relaxing, quiet, and safe place to take advantage of the many amenities: boat ramp, fishing, kayaking, and many in-park activities. alla Carbonara

I often am asked for classic Italian recipes. Few things are more classic Italian than a carbonara style pasta and in fact, it is believed this dish originated in Rome. Typically, pasta carbonara features spaghetti but I like the shape and texture of linguine with the creamy, rich sauce. I hope you enjoy this very Italian dish. 1 pound pancetta, diced into 1/2-inch cubes 3 cloves garlic, minced Kosher salt and freshly ground black pepper 6 eggs, at room temperature 1/2 cup heavy cream, at room temperature 1 1/4 cup freshly grated Parmesan 1 pound dried linguine or spaghetti 4 tablespoons chopped fresh parsley leaves Bettina Tolin is a graduate of Le Cordon Bleu College of Culinary Arts in Austin, Texas. She has cooked in the kitchens of the Ritz-Carlton Amelia Island, Florida. She is currently the Executive Chef and General Manager at Marcello’s Italian Restaurant and Bar in Port Isabel, Texas.

Heat a large sauté pan, until hot. Add pancetta and sauté until golden brown and crispy, about 5 minutes. Season with black pepper and remove pan from heat. Lower the heat and sauté garlic in the same pan, until golden, taking care not to burn, add to pancetta.

pancetta & garlic and toss well. Add the cream mixture and coat the pasta completely. It’s important to work quickly while the pasta is still warm so that the egg mixture will cook, but not scramble. Add remaining Parmesan and chopped parsley. Enjoy!

In a medium bowl, beat the eggs and cream. Season with salt and pepper. Stir in Parmesan, reserving 2 tablespoons of Parmesan for garnish.

Chef’s Tip: The reason you don’t want to rinse the pasta is that you want the pasta to retain its natural starches, which will allow the sauce to adhere to it.

In a large pot, boil 6 quarts of salted water. Add pasta and cook until al dente, about 8 to 10 minutes. Drain pasta in a colander but do not rinse the pasta with water. While the pasta is still hot, return it back to the pot. Add the browned
