Donna Myers is a line dance instructor in Harlingen. She teaches at Sunshine Country Club Estates and Tropic Winds RV Resort. Donna has been teaching line dancing for 10 years. Donna and her husband, Don, have a home in Sunshine CC Estates where they spend the majority of the year. They have spent the last four summers in Ruidoso, New Mexico. Donna learns new dances in New Mexico and brings them back to Texas. She has attended many workshops and jamborees

Darryl began square dancing in 1959,

at the age of 12, and began calling at the age of 14. Darryl made calling his full time profession in1978. Darryl conducts a winter program, In Mission, Texas, for all the “Winter Texans” who choose to spend their winters in the “Texas Tropics” of the Texas Rio Grande Valley. Darryl calls a full range of programs, beginners thru C-3.

Sweet Water Band in the Rio Grande Valley is a local dance band from McAllen that was formed in the early 1990s. The band consisted of four players; guitar, keyboard, bass, and drums. We usually played at night clubs, honky tonk bars, and outdoor venues. Having a keyboard player allows us to play at Tejano venues. For formal Tejano events, such as weddings and quinceaneras, we would hire an accordion player and play local Tejano favorites.

in both states. Donna is from St. Louis, Missouri. She majored in vocational home economics at Southeast Missouri State University. Donna and Don were full time RVers for eight years and were work-campers most of that time. She leads a group of line dancers called the Rio Grande Valley Kickers. The group’s members are from various cities in the Valley, from South Padre Island to Weslaco. The group enjoys dancing throughout the Valley at various venues and also south of the border in Progreso. Line dancing is a great form of exercise,

both physically and mentally. Some of the group members have recently gotten Fit Bits and find they easily surpass the 10,000 steps a day recommended for seniors. The group will be “demoing” some of their dances at the Expo and encouraging those attending to get up and join them for some easy-to-learn dances. So put on your dancing shoes and join the fun. •

During the summer months, Darryl, and his wife Decah, travel extensively throughout the United States and foreign countries, calling many festivals, weekends, and institute weeks. Among Darryl’s favorites is Kirkwood Lodge, where no dancing or calling career is complete, until you’ve attended a week at this historical square dance destination! Darryl spends several weeks during the summer, at Dance Country, in McCloud California, another of his favorites! In 1998, the band found a new venue. We played at the Riverside Club, Pepe’s on the River, and El Charco, which helped get more recognition. We were then able to play at many Winter Texan Halls for their weekly dances. In 2007, we replaced the keyboard with the steel guitar, which gave the band a real country music flavor. The current band members are Kenny Kolberg on the steel guitar, Frank Zamora on the bass guitar, Bruce Kolberg on the drums, and Javier Moroles, guitar and lead vocals. Playing music has always been a big part of our band members’ lives. Most of us have been playing in

EAT WELL, PLAY WELL Opening January 30 at IMAS Special to Welcome Home RGV

The International Museum of Art

& Science is hosting the Eat Well, Play Well traveling exhibition from January 30 until May 8. Eat Well, Play Well is a nutrition and fitness exhibit that helps visitors explore healthy lifestyle choices. What is in the food we eat? Are fruits and vegetables important? Can everyday activities burn calories? Visitors will find the answers to these questions by exploring hands-on interactive centers in Eat Well, Play Well, an engaging and educational science exhibit. The hands-on exhibit appeals to children and their families and features text in English and in Spanish. Eat Well, Play Well is both entertaining and educational. In the eye-opening “Sizing Up Servings” area, visitors are challenged to match recommended serving sizes to everyday objects. “Eat a Rainbow” teaches us that it’s important to eat fruits and vegetables from each color group. At “Be Flexible,” visitors can take the classic sit-and-reach test

Information and examples will be given about how to develop better flexibility and why it is important. “Balancing Act” lets visitors step onto a circular balance board and a timer shows how long they can stay balanced. In “Calories In, Calories Out,” visitors pedal a hand cycle and then choose from five different foods. The visitor learns that it takes a lot of exercise to burn off the calories from junk food compared with healthier choices and that in order to maintain a healthy weight, calories-in have to be balanced with calories-out. By the end of Eat Well, Play Well, visitors realize that healthy choices are within their reach. Eat Well, Play Well was produced and toured by the Oregon Museum of Science and Industry. This exhibit was made possible by a Science Education Partnership Award (SEPA) and an American

Recovery and Reinvestment Act (ARRA) Administrative Supplement from the National Center for Research Resources (NCRR), a component of the National Institutes of Health (NIH). All activities are included with general admission for non-members and

The Lamb’s Loom officially began a year and half ago, after 10 years of many friends working together and meeting in coffee shops around town. Last year, the opportunity arose for us to obtain our own location, with the help of Jacque at Jac-Lin’s Florist. We are now able to serve many more people!

Our friend, Janice Zezulka, spent part of her summer back home making all of these lovely pillow cases for the kids in Reynosa who are part of a community living on the city dump.

Shelley Parker, upon her arrival for this season, brought bags and bags of lovely hats and shawls to donate from her knitting friends up north, including this beautiful shawl.

While this recipe is more for a candy than a true dessert, I don’t think anyone will turn it down when you serve it, and it’s so easy to make that you can take the chance! •

• 1 cup brown sugar • 2 sticks real butter (not margarine) • 1 sleeve of “club” crackers, such as Towne House or similar • 12 ounces real chocolate chips (not chocolate flavored) • ¾ cup chopped pecans Preheat your oven to 350 degrees F. In a heavy saucepan, combine the brown sugar and the butter. Bring to a boil over medium-high heat, watching and stirring so the mixture doesn’t scorch. Boil for about three minutes. Cover a jelly roll pan with aluminum foil and cover the foil with a layer of the crackers. Pour the buttery-sugary mix over the crackers evenly, making sure they are all saturated. Put the pan into the oven for 10 minutes. Take the pan out of the oven and sprinkle the chocolate chips over the crackers. Let them sit until the chips soften. Spread the chocolate with a spatula and sprinkle the pecans on top. Put the pan into the freezer for two hours. Remove from the freezer and invert the pan onto a flat surface. Peel off the foil and crack the candy into whatever size pieces you like. Store in an air-tight container in the fridge until ready to serve and eat. McAllen Heritage Center to Open New Exhibit

in Honor of Johnny’s Drive-In: 38 Years of Service in McAllen Join Us for a Reception and Presentation by Johnny Hatcher Saturday, January 23 Special to Welcome Home RGV

The

McAllen Heritage Center, a museum of history and culture, is pleased to announce a new exhibit featuring the history of Johnny’s Drive-In (Johnny’s Mexican Food), which served McAllen for 38 years. A reception and presentation by Johnny Hatcher will be held at the museum Saturday, January 23, starting at 5:30 p.m. MHC is located at 301 S. Main Street in McAllen (across the street from JC Penney) and offers limited free parking in the rear of the museum. The restaurant opened in McAllen in 1963 and closed in 2001 after 38 years of service. What started as the idea of Johnny Hatcher Sr. to offer a small hamburger stand for students from nearby Travis Junior High developed into a full-service Mexican restaurant that was later owned and operated by his son, Johnny Hatcher Jr. and family. After Johnny Sr. retired, Johnny Jr. took over the business. His son, Robert, worked alongside his dad as assistant manager for many years. Along with remodeling the restaurant, Johnny Jr. expanded the menu

because he knew what tasted good and what his customers appreciated. Johnny Jr. made sure the tacos served were healthier, not dripping with oil, and he also added shrimp, botanas, fish, and fried chicken entrees and many other dishes to the menu. He prided himself on his attention to detail. Elva Hatcher remembers that kids always wanted to celebrate their birthdays at Johnny’s because of the restaurant’s personal touch. Every day at the restaurant, which was decorated in warm, Mexican decor, you would be

greeted and tended to by Mr. and Mrs. Hatcher. Their motto was “We are the Tac-O the town,” and Johnny Jr.’s attitude and joyous approach was the restaurant’s greatest advertisement. The popularity and notoriety of the restaurant created a loyal following throughout the years. Along with their many repeat customers, Johnny’s also served numerous celebrities, such as Mexican movie idols Piporro, David Reynoso, Pedro Fernandez, and Gaston Santos. Other celebrities included members of the Dallas Cowboys and country stars Clint Walker, Merle Haggard, and Lee Greenwood and movie star Tommy Lee Jones. Many federal judges, along with Texas Governor Ann Richards and U.S. Congressman Kika de la Garza, also enjoyed Johnny’s authentic dishes. Congressman Kika would call ahead from the airport to let Johnny know he was in town for his favorite tacos. These tacos made it to the menu as “Kika Tacos” in the 90s and included the Congressman’s signature avocado and cheese. Although now retired, Johnny and Elva, his wife of 65 years, remain

active and enjoy traveling. Their daughter, Patti, visits frequently, and the Hatchers enjoy reminiscing about the wonderful times spent at Johnny’s. Today, there are many Mexican restaurants and taquerias in McAllen and in the Rio Grande Valley, each with its own unique style and menu items. However, family-owned and managed restaurants such as Johnny’s will always be remembered for their personal touch and attention to detail. Johnny’s and the Hatchers will also be remembered for their true love for the business and for their customers. •

eyond Arts Gallery welcomes its latest exhibition, Works of Figuration by Robert Andes and David Ransom, with Guest of Honor, author, writer and B. A. G. board member Brenda Nettles Riojas of Harlingen and catering by J & G Catering in Harlingen. The public is invited to join Beyond Arts Gallery Thursday, January 14, from 6:30 - 9:30 p.m. for an opening reception. The exhibition runs January 14 - March 5. Robert Andes is originally from the small town of Milton, New Hampshire. He has also lived in Oklahoma, Arkansas, Texas, and Saudi Arabia. He earned his BFA in art with a minor in art history from Oklahoma State University and his MFA in art with a minor in printmaking from the University of Arkansas. Robert’s art has varied from hyperrealism to impressionism using an extensive and colorful variety of hues in his

palette. He has painted and drawn mostly people and continues to find the human condition fascinating; he has also dabbled in landscape work. Robert’s work has been exhibited in numerous juried shows, including the Oil Painters of America national and regional exhibitions, the Columbia College paper, in particular, Exhibition, and the Southern Graphics Council exhibition titled Genetic Imprint. Robert has taught at several different universities and community colleges and is currently on the faculty at Texas Southmost College in Brownsville. “I am foremost a figurative artist. The traditions of figurative work remain important in art to the present. I have enjoyed learning and using processes and techniques used by painters in the past. My intent

is to create a modern painting that is visually pleasing and captures people and their emotions, as well as mine, through color, line work, and composition.” - Robert Andes David Ransom- “My exposure to art was immediate. I am the youngest of nine born under Saturn and raised in an isolationist world view of the Pater familias. I gained from them all. The Moon was a poet and painter who cradled me as an infant in her arms while she painted placing the brush in my hand; albeit the wrong hand, but I would correct her and switch the brush to my left. At nine months, I was painting before I could walk. The Sun introduced me to the works of Dali and Chagall before the age of reason. The Muses were all talented and exposed me to a variety of subjects from Mythology to Music. However, growing up with eight siblings one must, with the help of Zephyr, navigate through the mercurial seas of personalities, locate terra firma, and cultivate their own landmark to ignite the way. I pursued drawing, reproducing the drawings from the National Audubon Society book. Unfortunately, as soon as I descended into the Cave of my formal education I was developing symptoms of social anxiety. It dualistically impacted my pursuit of art. It is a dichotomy that is omnipresent. It has been a constant struggle of avoidance and pursuit. ‘Just when I thought I was in… they pull me back out.’ Eventually one must surrender to the Fates. Once I acquiesced, I found my way from the Rio Grande Valley with a Bachelor of Fine Arts from the University of Texas at Pan American to New York City, where I was accepted into the Graduate School of Figurative Art at the prestigious New York Academy of Art and graduated cum laude with

a Master of Fine Arts in 2005. The New York Academy of Art follows the long tradition of classical academic training inspired by the Renaissance and Baroque ateliers and the 19th century L’Ecole des Beaux Arts. Under the instruction of such notables as Ted Schmidt and Steven Assael, I was instructed in human anatomy and classical painting techniques. In the summer of 2004, I met the world renowned Kitsch painter Odd Nerdrum and accepted a personal invitation to travel to Norway for a summer residence in 2005. An illuminating and life-changing experience out of the Cave, I arrived on the Summer Solstice to a strangely familiar home of my pagan childhood. One result of this period is the inclusion of my work in the publication The Nerdrum School: The Master and his Students. Eventually, like the prodigal son, I returned to Texas later that year and lived and exhibited in Austin, where I was represented by El Taller Gallery before joining the University of Texas Brownsville as an adjunct faculty member in the Visual Arts Department in 2008 and lecturer in 2011. I am currently teaching drawing and painting at Texas Southmost College in Brownsville, Texas where I am building a new art program with my colleague Rob Andes. This winter, the Edinburg Scenic Wetlands and World Birding Center (EWBC) will escort a field trip to this native oasis north of Rio Grande City Friday, January 22 from 7:30 a.m. to 3:30 p.m. Ranch owner and ethnobotanist Benito Treviño will lead participants through a tour of the ranch and discuss how knowledge of local plants and their practical uses have helped people survive in the Rio Grande Valley for hundreds of years. Minimally Invasive Heart Valve Surgery Being Performed in Harlingen and Brownsville Special to Welcome Home RGV

A

minimally-invasive surgery to replace heart valves is now being performed at Valley Baptist Medical Center in Harlingen and Brownsville. Dr. Mark Morales, a new cardiovascular surgeon in Harlingen and Brownsville, said the minimallyinvasive surgery uses smaller incisions and doesn’t require cutting the patient’s breast bone (sternum). “If a patient is looking for a faster recovery and less pain, minimallyinvasive cardiac valve replacement surgery is the way to go in many cases,” Dr. Morales said. With the new minimally-invasive method, the surgery is done through one or more small cuts, typically about three inches in length, Dr. Morales said. This compares to a much larger cut in the chest, about eight inches in length, for the traditional “open surgery” technique for cardiac surgery. But Dr. Morales said the biggest benefit his patients have experienced from the minimally-invasive approach is a faster recovery because the breast bone doesn’t have to be split. “If you have the traditional heart surgery, the bone will need six weeks to heal,” Dr. Morales said. “You won’t be able to drive, you can’t go back to work, and you can’t lift anything more than 20 pounds. You may be out for six weeks to two months. But with minimally-invasive surgery, you can become active a lot faster -- thus avoiding the complications of inactivity after the traditional surgery.” Dr. Morales added that he, along with Dr. Mark Bielefeld, use the minimally-invasive approach on a routine basis – even for older patients up to 90 years old or more. “We believe the sicker you are, the better you will do with the minimallyinvasive procedure,” Dr. Morales said. As people age, getting into their 70s and 80s, the heart valve leaflets can fuse, hardened calcium deposits can cover the valve, and the orifice through which the heart propels the blood can become extremely narrow – sometimes as small as 0.8 centimeters, according to Dr. Morales. “This condition creates resistance, and the heart compensates for the stress by getting bigger to push the blood through the smaller hole,” Dr. Morales said. With less oxygen being delivered to the heart muscle, the patient may

start to feel more tired and may not be able to exercise as much as he/ she could before. Patients may even feel shortness of breath and can suddenly lose consciousness, Dr. Morales added. “Patients will often tell their family practice doctor that they just can’t do as much as they did before,” Dr. Morales said. Other symptoms may include the person’s legs becoming swollen as the result of fluid accumulating in the legs. In addition to problems with their aortic heart valve, some patients may also have blockages in their coronary arteries. In that case, Dr. Morales or Dr. Bielefeld can work with a local cardiologist in a teamapproach “hybrid procedure” to treat the two problems. For example, instead of performing a traditional coronary artery bypass graft surgery, the cardiovascular surgeon may opt to do the minimally-invasive valve replacement while the cardiologist places a stent to open blood flow in the arteries. “Both the cardiologist and the cardiovascular surgeon work together to minimize the harm to the patient from the procedure,” Dr. Morales said. In cases where the patient does require bypass surgery, Dr. Morales and Dr. Bielefeld can perform a “beating heart surgery” in which the patient is spared from having his/ her heart stopped, meaning that it is not necessary to place the patient on a heart-lung machine during the surgery. In addition to performing heart surgeries at Valley Baptist in Harlingen and Brownsville, Dr. Morales serves as director of thoracic and cardiovascular surgery at Driscoll Children’s Hospital in Corpus Christi and as an assistant professor for the Texas A&M University System. Dr. Morales completed a residency in cardio-thoracic surgery at the University of West Virginia, as well as a surgery residency at the University of Massachusetts. He completed medical school at the University Autonoma de Guadalajara in Mexico and has co-authored numerous articles that have been published in national medical journals, as well as chapters on surgery in medical textbooks. Pickleball is a racquet sport that combines elements of tennis, table tennis and badminton. It is played on a court that measures the same as a doubles badminton court and uses a ball similar to, but smaller and harder than, a wiffle ball. The game can be played indoors or outdoors. The ball is served with an underhand stroke so that contact with the ball is made below waist level (waist is defined as the navel level)in an upward arc from behind the baseline, diagonally to the opponents’s service zone. Scoring: Services are made underhand from behind the base line, diagonally to the opponent’s service court, alternating from right and left. The serve return must bounce once before striking the ball. After that, returns can include volleys. The server scores when the opponents fails to return the ball over the net. A game is when a player or team has 11 points and leads by at least 2. Matches are the best 2 of 3 games.

Museum of South Texas History (MOSTHistory), a museum chronicling the heritage of South Texas and Northeastern Mexico, presents MOSTHistory Happy Hour, a program that welcomes individuals seeking a new place to enjoy the tastes and heritage of South Texas and Northeastern Mexico. We came here pulling a 29’ travel trailer, and within three weeks bought a mobile home! “We love it here in the RGV” is an understatement. We also enjoy motorcycling. This spring, we rode 4,000 miles and toured the southeastern states from Texas. This fall, we rode 5,300 miles and toured the northeastern states and Canada from our home in Minnesota. (Makes about 10 servings when served as part of a meal) Mix together the following: • 1 bag of shredded cabbage (slaw mix) or large bowl of chopped cabbage • 3-4 green onions, chopped Brown the following in the oven (takes about 10-15 minutes at 325 degrees - need to watch closely) or on the stove (You may mix with 2-3 Tbsp. melted butter first): • 1 cup slivered almonds • 2 packages Ramen noodles (Oriental flavor), broken up into small pieces, (Sunflower seeds and sesame seeds can also be added) Dressing - bring the following to a boil in a saucepan and cook for 1 minute. • 1 Oriental seasoning packet from the Ramen (You may only wish to use half the packet for taste) • 1/4 cup vegetable oil (Other recipes call for much more, but this is enough) • 1/4 cup sugar • 2 Tbsp. vinegar • 4 tsp. soy sauce I wait to stir the salad together until right before serving. The dressing will tend to separate, so give it a shake before adding it. I usually double the amount of dressing since we usually have a fairly large bowl of cabbage. This salad is wonderful to take to potlucks. I simply take a large Tupperware bowl of the cabbage mixture and include a small container of the dressing and a sealed bag of the nuts/noodles. There are rarely any leftovers. Sometimes we add crumbled bacon to this salad. Since I don’t often measure the ingredients, my version may taste a bit different each time. I often add more soy sauce and a little less sugar, but it is very good to do the opposite, which results in a bit sweeter salad.

Brownsville Golf Center has an 18-

In 2009, the course underwent a three-year renovation plan and received drainage improvements and landscaping upgrades. This 18-hole course is a Par 70 with three sets of tees. They are 6144 yards with a rate/slope for men of 69.9/123, 5652 yards with

The Rio Grande Valley is blessed with great weather, as well as great golf courses. There is a course for every player, from beginners to accomplished golfers. There are more than twenty 18hole courses throughout the Valley and almost as many nine-hole courses. Some of the nine-hole courses are Par 3s, which are perfect for the beginner and for our older citizens who still enjoy the game but are unable to play a larger course. Orange Cranberry Muffins 1 cup dried cranberries 1/4 cup fresh orange juice 2 cups unbleached all-purpose flour 2 teaspoons baking powder 1/4 teaspoon fine salt 1/2 cup unsalted butter, softened, plus more for preparing the muffin tin 1 teaspoon grated orange zest 2/3 cup granulated sugar, plus up to 1 tablespoon for topping the muffins, if desired 2 large eggs, at room temperature 1/2 cup milk Bettina Tolin is a graduate of Le Cordon Bleu College of Culinary Arts in Austin, Texas. She has cooked in the kitchens of the Ritz-Carlton Amelia Island, Florida. She is currently the Executive Chef and General Manager at Marcello’s Italian Restaurant and Bar in Port Isabel, Texas.

Preheat the oven to 375 degrees F. Put the cranberries and orange juice in a small saucepan, and bring just to a simmer over medium heat. Remove berries from the heat, and set aside to cool and plump. Drain off any excess liquid and set aside. Lightly brush a 12-muffin tin with butter. Sift the flour, baking powder, and salt into a medium bowl and set aside. In a standing mixer fitted with the paddle attachment, or with an electric hand-held mixer in a large bowl, cream the butter, orange zest, and 2/3 cup sugar until

light and fluffy, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula. Add the eggs, one at a time, beating well after each addition. Remove the bowl from the mixer. Fold the flour in 3 parts into the butter mixture, alternating with the milk in 2 parts, until just combined. Fold in the cranberries. Do not over mix. Divide the batter evenly into the muffin tin and sprinkle the tops with sugar. Bake until golden brown, about 25 minutes. Cool muffins in the pan on a rack. Serve warm.
