Happy New Year! I hope you had a wonderful holiday season and are rested and ready for what is certain to be an amazing season. There are so many things to do while you are down here! Aside from the food, the fun, and the fellowship, there’s one thing I know our Winter Texans do, and that’s give back. The stories of generosity I hear from so many of our park activity directors never cease to amaze me. I have a strong sense of giving back myself, having worked for and with a number of nonprofit organizations over the years, some near and dear to my heart.

I’m a firm believer that charity begins at home, and the need in the Rio Grande Valley can at times be overwhelming. There are so many organizations that fill a void in our community, many that you’ve never heard of. I hope to change that. Foster Angels of South Texas does incredible things for our foster children, and until Lucy Ann took the position of regional director, I had no idea the need was so great. Imagine, the ability to change the trajectory of these kids’ lives when they need it most.

I hope you find it in your heart to send a little (or a lot) of love their way!

Each year, the month of November serves as National Adoption Month. Lucy Ann Wolthoff, regional director for Foster Angels of South Texas, attended her first in-person adoption hearing.

Wolthoff witnessed nine children officially being adopted in Hidalgo County. Foster Angels was there offering support and providing H-E-B grocery gift cards and family membership passes to local attractions, bonding experiences for the officially formed families.

A 10-year-old boy, Wolthoff shared, kept a brave face until the judge formally announced his adoption was official. By the end, she was in tears, too. “Happy tears,” she says.

Wolthoff was more prepared a week later when she witnessed the official adoptions of seven more children in Cameron County.

All of these children had been in the foster system, a few of them for over 1,000 days. One child spent 1,898 days in the foster care system. It’s during those days that can span into years that Foster Angels steps up.

When we first reported on the nonprofit program nearly three years

ago, Wolthoff was new to the parttime, work-from-home position.

Today she is the full-time regional director with an office outside the home, and not a moment too soon.

As of October 2022, there were 225 children in foster care in Hidalgo County and 268 in Cameron County.

Requests come in daily, everything from prescription glasses to help obtaining a driver’s license. By the end of November 2022, Foster Angels had filled roughly 2,300 requests in the region.

“We are always there to fill in the gaps, to make sure these kids can be successful,” says Wolthoff. Foster Angels tackles needs Child Protective Services simply can’t fi ll. The two entities work closely together.

The nonprofit hosts an annual shoe drive and fulfills teen wish lists at Christmas. This past year, 300 new pairs of shoes were provided to local children, and Foster Angels fulfilled 47 teen wish lists.

Support from the program doesn’t end when teens “age out” of the foster care system. Currently, 30 former foster children are enrolled at The University of Texas Rio Grande Valley. While the state covers tuition (under certain parameters), it doesn’t cover extras, like books, housing, and technology.

Wolthoff has big plans to further support students through

college and beyond. “As long as they’re showing us they’re trying, we’ll be there. That’s why we’re here.”

Foster Angels has also implemented a golf tournament, fulfilling the wish of Wolthoff’s dear friend, Tom Stocker. Before his passing in 2021, Stocker shared a desire to create a tournament to support the program’s local efforts. Since then, two successful tournaments have been held, with plans for the “3rd Annual” underway.

Wolthoff garners further support for various needs through local businesses, social media, and networking. One of her primary goals is to raise awareness within the community--including among winter visitors. “If your park, group, or organization wants to help, reach out to me.”

Curt James Takes the Stage

C urt James (Riester) was born in Springfield, Illinois. He is the proud son of an Army veteran and spent most of his young life moving all over the U.S. during his father’s 30-year military career.

Curt began his music career in 2017 when he retired from the restaurant business after 25 years. He sings a variety of music but performs mostly country music. Curt covers music from the country classics, like Merle Haggard, Hank Williams, George Jones, and Willie Nelson; to the 90s legends, like George Strait, Alan Jackson, and Garth Brooks; to the country stars of today, like Luke Bryan, Jon Pardi, Blake Shelton, and Cody Johnson. He plays happy hours, dances, and shows. He performs a Country Legends Show and a Christmas Show, as well as a Conway Twitty Show. Curt also likes to sing

favorites from all genres like rock ‘n’ roll, classic rock, 50s-60s, swing, disco, and pop. He has created a 70s and 80s Dance Show and is available to book.

Four-Day Yarn Party Happening January 11-14

L

et the new year begin! We are serving it up for Yarn Tasting 2023! Join us the week of January 11 for our 9th Annual Yarn Tasting, Stitch & Serve.

Our Yarn Tasting is a fun event for everyone. We always kick off the Yarn Tasting with the announcement of the fi nal Donation Chest count for the previous year. The final count for 2021 was 4,812, and we have already surpassed that for 2022. Our Donation Chest has been “working” pretty hard this year, thanks to y’all, and we are all very excited for the increase in people we are able to serve. Your contributions and support have blessed us over the last eight years. There are so many of you who add to this ministry and add to our Donation Chest. That giving heart continues to inspire others to lend their talents to serve in helping others, wherever they are.

Like last year, our Yarn Tasting will be hosted over four days, January 1114. It’s a four-day yarn party! The whole week of Yarn Tasting, there will be all kinds of fun around our theme of Stitch & Serve. We will have displays of a few of the hats

made this past by people who joined our Make-Along theme, Butterflies in the Rio Grande Valley. There will also be displays of some of our new and favorite yarns, pattern sharing, and our “winter” class schedule. We will have the pleasure of having a few of our Winter Texan friends as special guests, doing some demos and spinning on Peggy’s Porch. And for an extra treat this year, our friend Jerry will be providing live music out on Peggy’s Porch every afternoon. We hope you will join us for fun and

fiber during Yarn Tasting 2023. Let’s Stitch & Serve together.

You Can Always Expect Fun with Bruce Boudreau

B ruce Boudreau is a singer, songwriter, guitarist, and multi-instrumentalist from Niagara Falls, Ontario. He and his wife, Julie, became Winter Texans during the 20202021 season and love being in the beautiful RGV. They intend to one day be here full time.

Bruce’s music-career highlights include playing at Burlington’s Sound of Music Festival in 1997 and at the Toronto indie scene in 1998. In 2014, Bruce hooked up with major players in the country scene, playing with bands like Bareback Riders, Rob Kirkham and Neon Rain, the Darren Hancock Band. He also played pedal steel guitar for a Tim McGraw and Kenny Chesney tribute band.

In January 2021, Bruce released his first single, “Mended My Heart,”

on indie radio. It reached #3 in week 12. A second single, “Lovin’ You More,” released in March 2021, also made it to the Top 50 at #17.

Bruce is a member of the American Federation of Musicians (AFM), The Independent Singer Songwriter Association (ISSA), and the Country Music Association of Ontario (CMA Ontario).

Bruce truly enjoys playing and performing his originals while creating a fun night with all music styles. Bruce performs his original show and also teams up with Tom “Mezzy” Hiles in the RGV. This Winter Texan duo is known as CanAm.

Beyond Van Gogh Exhibit is a Must!

“Oh, wow! Oh, WOW!” That’s the phrase overheard over, and over during the Beyond Van Gogh exhibit at the McAllen Convention Center. The timed-entry event has three-parts. It begins with a pathway of large, illuminated panels suspended in the air, each offering deeper insight into Dutch artist Vincent Van Gogh’s origins and life’s path. Take your time to read through his personal thoughts and his close bond with his brother, sustained through their letters.

Next--this is where the “Oh! Wows” happen. The full immersion experience; 360 degrees of digital imagery--Van Gogh’s sketches, paintings and portraits.

IMAS to Host UTRGV Lecture with Dr. Jongsun Kim

T he International Museum of Art & Science (IMAS) is pleased to announce the return of its lecture series, a program featuring presentations in the science and humanities fields by a variety of researchers from the Rio Grande Valley.

The IMAS will host a lecture by Dr. Jongsun Kim from the University of Texas Rio Grande Valley School of Earth, Environmental, and Marine Science Saturday, January 15, from 3:00-4:00 p.m. The lecture is included in general admission ($5 for adults, $3 for adults ages 65+).

Kim is a chemical oceanographer and coastal system modeler interested in biogeochemical/ecological and physical interactions in the coastal water ecosystem. His work is centered around the interface of biogeochemical cycling in the coastal ocean and ecosystem ecology, raising questions relevant to understanding how natural and anthropogenic forces affect coastal biogeochemical cycling across different scales and how those influence ecosystem processes focused on environmental issues, such as hypoxia and eutrophication, in the world’s coastal oceans.

Kim’s talk will cover his recent

findings on the consequence of diverse nitrogen input caused in coastal productivity and organic carbon fluxes in the coastal Gulf of Mexico. He shares, “My research field is ecosystem modeling in the coastal ocean, and during my Ph.D. at Texas A &M University. I developed the nitrogen model in the coastal Gulf of Mexico, where it has a hypoxic condition.” Kim will share his extensive and ongoing study of the nutrients in the Gulf of Mexico and the Gulf’s importance to the overall health of our oceans. The residents of La Floresta Park near Mercedes enjoyed a delicious Thanksgiving dinner, complete with turkey and dressing and all the trimmings. But what do you do with all of that leftover turkey? We had Turkey Soup Night!

Snatched from the Grave

M ay 2, 2021, I lay dying in an intensive care unit in Royal Oak, Michigan. My doctors, my family, and I were convinced I was dying. I told God I was ready to go, and I was. Someone else, in some other place, was also about to die.

I fi rst came to the Valley in the last week of October 2020. I was the new chaplain at Park Place Estates RV Resort. Even though it was during COVID, we had gotten off to a good start and fallen in love with our park and the Valley. Sometime around our second week in the Valley, I began losing energy. I just did not feel right. As the days passed, I got weaker and weaker. I lost my appetite and was having severe swelling in my legs. Finally, I went to the emergency room. After several tests, it was determined I had severe liver failure. I was admitted to the hospital for more tests and treatment for the swelling and infection in my legs. After eight days

and surgery for esophageal varices, I was discharged.

But I continued to get worse, and just before Christmas, I was readmitted to the hospital. This time my kidneys had failed, in addition to my liver. I was in critical condition. I would spend the next 31 days in the hospital. I was in such grave condition that my wife and I decided we needed to return to Michigan so she would have the support of family and friends when I died. I was flown to Detroit, Michigan, and taken to a rehab facility.

My white blood cells dropped to a dangerous level five days after arriving in Michigan. I was taken to the hospital yet again. It was discovered that I had contracted the COVID virus. Things just kept getting worse. I was treated for the virus and the ongoing swelling in my legs, and after several days, I was discharged.

I continued getting worse, and, after a few weeks was readmitted to the hospital for the fourth time. It would be months before I would see home again.

Several days later, I developed internal bleeding, which required surgery. That was on March 1. The next day, it looked like I would die. But God is good, and by the next day, I had improved slightly and was told I had been placed on the kidney transplant list. The following day, March 4, I was told I had also been placed on the liver transplant list.

That evening, the head of the transplant came into my room to tell me they thought they had found organs for me! Within 24 hours of getting on the kidney list and 12 hours on the liver list, they found my organs. The next day, I had surgery

for a double transplant. God had given me a miracle!

Through all of this, hundreds of people from around the world have been praying for me. Through it all, I have been at peace. God had given me a peace that was too great to comprehend. Through it all, I have learned just how great God is and how deeply He loves his children.

1/8 teaspoon salt

2 tablespoons French dressing*

1

Dash of black pepper

¼ green bell pepper, slivered

1/3 cup mayonnaise

1 tablespoon minced onion (white, yellow, or green)

Toss all ingredients together; chill and serve on a bed of lettuce leaves. *May use low calorie •

C ream cheese biscuits are a variation on regular baking powder biscuits but are more fluffy than flaky. They are wonderful served warm with real butter; no margarine, please!

Cream Cheese Biscuits

4 oz. REAL cream cheese, such as Philadelphia®, cold 4 tablespoons unsalted butter, cold

1½ cups all-purpose flour

1½ cups cake flour 1 tablespoon sugar 1 tablespoon baking powder 1 teaspoon salt 3/4 teaspoon baking soda 1 cup buttermilk PLUS 1 additional tablespoon

Cut the cream cheese and the butter into ½-inch pieces. Place on a plate and freeze for 30 minutes. Place an oven rack in the center position. Preheat oven to 450 degrees. Line a baking pan with parchment paper

and set aside. Into a food processor, place all of the ingredients, including the frozen butter and cheese, except the buttermilk. Pulse the ingredients until it resembles coarse meal, about 15 pulses. Pour into a mixing bowl and add the buttermilk, stirring until combined. (It may appear slightly dry.)

Flour a countertop and turn out the dough onto it. Knead briefly until it comes together; then roll into an 8x6inch rectangle that is about 3/4-inch thick. Cut into 12 squares, 2-inches each, and transfer to the prepared baking sheet. Bake 12-15 minutes or until light brown. Place on a wire rack to cool a bit. Serve warm. •
