publisher’s note H ELLO FROM KRIS T I
We know that as your parks fill up, so do your calendars, with events, trips, and volunteer activities!! We would love to hear about them! If you have an interesting story to share about one of your park residents….If you want everyone to know about something you’re doing for the community….If you hosted a shindig Winter Texans will love to hear about….If there’s news from your park that must be told….We can help you share it all! We will use these stories on our web site, on social media, in e-blasts, and even in press releases to local media outlets. This is all you have to do: 1. Write your story and send it to Chris Ardis at news@welcomehomergv.com . Chris is our editor and is charged with editing each piece before we post. Just like at the newspaper—Write—Edit—Post. 2. Send along any pictures you have to go with your story. Remember: “Pictures say a thousand words.” They also tell a thousand stories. 3. That’s it!!! We may not be able to use every story sent to us, but we will definitely work hard to use as many as possible. We love to brag about our “Wonderful Winter Texans” and we appreciate your help. Let’s BRAG together! Thank you for all you do. We’re just connecting the dots,
Kristi 6

Tavern Beef
Submitted by: Sandy Olson, Palm Shadows One boneless beef roast such as eye round, rump, about 3 pounds 1 individual package Hidden Valley Ranch dry dressing mix 1 large yellow onion (sweet onion is too mild) 3/4 cup hot tap water
Happy Cooking!!! Pumpkin Chiffon
Trim off any visible exterior fat from the meat and place it into a 5-6 quart slow cooker. Peel and slice the onion as thin as possible and put it on top of the meat. Mix the dry dressing mix with the hot water until completely dissolved; pour over the meat and onions.
Submitted by: Kristi Collier
Put cooker on LOW, cover and cook for about 8 hours or until the meat easily shreds with a fork. There will be lots of good juice in the cooker. Take meat out and shred. Serve as a sandwich on hard crusty rolls (think Breadsmith here) with some of the onions on top and the au jus to dip into. SPICY VARIATION: Instead of the Hidden Valley dressing and water, use an entire bottle of peperoncini (spicy Greek or Italian pickled peppers). Pour them into the cooker along with their juice, on top of the meat and onion, and cook as above. Serve with some of the onions and peppers on each sandwich.
1 3/4 cup graham cracker crumbs 1/4 cup sugar 1/2 cup melted butter or margarine Combine ingredients and put in a 13” x 9 “ pan. Press down the crumbs to make a bottom crust. Set aside. 2 - 8 oz cream cheese 3 eggs, beaten 1 1/2 cup sugar Mix and beat until fluffy. Pour over the graham cracker crust. Bake at 350 for 35 minutes, or until it has the consistency of cheese cake. Set aside and let cool. 2 small instant vanilla pudding mix 3/4 cup milk 2 cups cooked pumpkin 1 tsp pumpkin pie spice 1-8 oz cool whip
Turkey Vegetable Soup for the whole park! Submitted by: Vera and Jim Boylan, Seven Oaks Resort, Mission Tested by Kristi Collier - it is a winner! 2 gal turkey broth 1 gal water 5 lbs potatoes (diced) 2-3 lb carrots (diced) 1 bunch celery (chopped) 6 to 8 onions ( chopped and sautéed) 5-6 lbs turkey (chopped) Salt and pepper to taste Knorr chicken bouillon (several tsps) 4-6 tsps minced garlic ¼ to ½ lb pasta (egg noodles) Parsley to taste In a large soup pot, bring the broth and water to a boil. Add potatoes, carrots, celery and sautéed onions. Continue boiling while adding salt, pepper, garlic and bouillon. Turn down the heat and simmer the contents for approximately 2 hours. Taste and add more seasoning if necessary. Finally, add the pasta and chopped turkey and simmer for an additional 1-15 minutes. Serve hot with toasted garlic bread.
(A dessert served at church dinner for Mom Wagner’s family October 22, 1997)
Combine pudding mix and milk. Beat for two minutes. Add pumpkin and pumpkin pie spice. Add one-half of the cool whip, mix well and spread over cream cheese. Spread remaining cool whip over the pumpkin mixture. Sprinkle crushed pecans on top of the cool whip & refrigerate. Enjoy! Notes: This recipe was handed down to my husband’s family from Lois Culver. When my husband’s grandmother passed away, the ladies of the First United Methodist Church in Pharr, Tx provided desserts following the funeral. After much pleading by Phil Webb, Lois provided the recipe. We think about my husband’s Grandma Wagner every time we have it. I hope you will enjoy the memories you make while serving it. ~Kristi
