Yield: about 5-6 dozen crackers

INGREDIENTS:

1 cup all-purpose flour

1 container Yumtee cranberry pistachio mix

¼ cup whole flax seeds

¼ cup packed brown sugar

¾ teaspoon salt

¼ teaspoon baking soda

1 cup almond milk

DIRECTIONS:

1. Heat oven to 350° and generously grease a 9x5 inch loaf pan with cooking spray.

2. In a large bowl, combine all ingredients and mix with a fork until smooth. Pour batter into the prepared loaf pan.

3. Bake for 50 minutes until golden brown. Let cool completely and freeze for about 1 hour (not more than 3 hours).

4. Heat oven to 400° and remove loaf from pan. Use a sharp serrated knife to cut into 1/8” thick slices. Arrange slices in a single layer on 2 lined baking sheets. Bake for 20 minutes until golden brown, flipping halfway through baking.

NOTE: Freeze in a ziploc bag, or store at room temperature in airtight container, for up to 1 week.
