TO EMBRACE THE SACRIFICE REQUIRED
Fair Oaks is many unique things, but one common thread seems to be that it attracts independent thinkers and doers. One might attribute this partly to geography — it’s harder to build cookiecutter buildings and businesses on varied topography shaped by hills, embankments, bluffs, and creek beds — and partly to our position just beyond an active gateway, welcoming people northward after crossing one of our two bridges.
Over 50,000 people a day pass through the intersection of Fair Oaks Boulevard and Sunrise Boulevard — one of Sacramento County’s busiest intersections — yet much of Fair Oaks, feels secluded, tucked away, almost hidden. That seclusion is both an asset that allows us to express our independence and a challenge for businesses that choose to make their stand here.
That challenge is felt especially by the locally owned restaurants that call Fair Oaks home. Yet despite it, Fair Oaks — when you stop and really look around — has an abundance of them. It’s remarkable. Something locals may take for granted, and visitors may not immediately realize. Our independence creates fertile ground for variety, character, and originality. But the truth is these local businesses are also deeply dependent on our support to survive and thrive.
So when you find yourself choosing where to grab a memorable bite — somewhere that delights both the palate and the place we call home — know that you have an abundance of independent local options. This summer, taste the freedom rooted in Fair Oaks.

By Dottie Bates

On a warm Thursday evening in Fair Oaks, the patio at Brahma Bar & Grill hums with laughter, clinking glasses, and the low rumble of trivia answers debated over burgers, tacos, and smoked brisket. It feels effortless now — a packed patio, a loyal crowd, a restaurant buzzing with personality and momentum.
“The goal is always going to be big, bold flavors.”
– SCOTT MEIER

Brahma may be the focus of this story, but it’s also part of something larger happening in Fair Oaks.
Independent and locally owned restaurants are increasingly rare. They survive through persistence, creativity, adaptation, and a willingness to keep trying new things in hopes of creating new pathways forward. They become gathering places, date-night spots, celebration venues, trivia-night traditions, coffee stops, and little landmarks woven into the memories of a town.
And Fair Oaks is fortunate to still have many of them.
Established favorites each bring their own personality, flavor, and energy to the Village and surrounding community. New and coming additions like The Roost, Palm Tree Brewing and Ritual Cookie continue to build on that momentum, while longtime locals look forward to the return of Slocum House.
Each eatery has its own story. Its own risks. Its own struggles. Its own loyal following.
And while every independent restaurant is different, they often share something in common: people working incredibly hard behind the scenes to create experiences worth remembering.
If you enjoy grabbing a burger on a patio, meeting friends for trivia night, lingering over coffee, discovering a hidden gem, or simply having unique local places that make Fair Oaks feel like Fair Oaks, those experiences only continue if the community continues showing up for them.
In many ways, that independent spirit may be one of the most important ingredients in Fair Oaks itself.

But like many of Fair Oaks’ independent restaurants, Brahma’s story is one of adaptation, grit, and a resolve to keep evolving.
Behind every local favorite in town — whether it’s a longtime staple, a family-run cafe, a neighborhood pub, or a small independent kitchen trying to carve out its place — there’s usually a story of long hours, risk, reinvention, and people continuing to push forward because they believe creating meaningful places matters.
Brahma Bar and Grill has become one of the most recognizable examples of that spirit.
“Conceptually, it started off as a neighborhood bar. The patio wasn’t part of the original concept… And then during COVID, there was a need to pivot to more of an outdoor dining al fresco type of deal,” says General Manager Scott
Meier. “When the patio was built, the decision was made to pivot into more of a full-blown bar and grill.”
What began as a necessary adjustment slowly evolved into something much bigger — a scratchmade kitchen, a loyal following, packed trivia nights, award-winning burgers, and a restaurant that now feels woven into the fabric of the Fair Oaks Village experience.
“One of the things that we’re most proud of is the journey that we’ve gone on since then,” Scott says. “Going from kind of a basic starting point to developing a menu, a service model, and an absolutely fantastic team that, more than anything else, makes us awesome.”
That journey has paid off in both loyal regulars and local acclaim. In just the past two years, Brahma has taken home Best Taco, Best Burger — two years running — and Best Restaurant in Fair Oaks. But the awards are only part of the story.
For Head Chef Beau Chandler, Brahma represents something increasingly rare in today’s
dining landscape: a truly local restaurant built by people deeply connected to the community around it.
“Scott, Rob (Birch, Front of House Manager), and I have known each other for almost 30 years now,” Beau explains. “It was really neat to get back together and do something fantastic. I was born and raised in Fair Oaks, so being able to do something in our community was a neat thing.”
“You’ve got to listen to people. They’ll tell you what they want.”
– BEAU CHANDLER
After years in the corporate restaurant world opening highvolume locations, Beau says returning to Fair Oaks to help build Brahma felt more personal — and more meaningful.
That independence also shapes how the restaurant approaches food.
“We do focus on the best and the freshest ingredients that we possibly can… everything is made
from scratch,” Scott says. “We can provide not only the consistency, but the freshness and the highquality flavors without having to resort to things in bags and boxes.”
Ask Scott what really makes Brahma work, though, and he won’t start with recipes. He starts with people.
“You can create any dish you want, but if you don’t have the right people to execute it, to present it, the right people to create the right experience, and the service, and the atmosphere, none of it really matters,” he says. “We’re a very small restaurant… about 14 employees all together. And having a group that’s as tight-knit as what we have, where everybody really cares about what they’re doing, has been vital to our success more than anything else.”
Beau points to consistency and a willingness to listen to guests.
“Part of the reason our menu is successful is consistency, and that’s something that we work really hard on,” he says. “We love to listen to our guests… It doesn’t matter what you think people should be eating. You’ve got to listen to people. They’ll tell you what they want.”

“Initially, we weren’t burgers and tacos forward,” Scott adds. “But seeing what they wanted, what they purchased, we built the menu that supported what our guests had communicated they enjoyed the most.”
If the burgers and tacos helped put Brahma on the map, the smoker out back might be what keeps people coming back.
“We have a beautiful smoker that we highlight,” Scott says. “Brisket is a very big part of our menu… To put that in perspective, I smoke about 300 pounds of brisket every week.”
That brisket now appears across multiple dishes and rotating specials. In fact, many of Brahma’s signature dishes started out as weekly specials so popular they had to be added to the menu!
In addition to their scratch kitchen, Brahma also features a hand-curated craft beer program. Front of House Manager Robert Birch carefully selects a rotating lineup of local craft beers, bringing together some of the best flavors and variety in town. From IPAs and ciders to stouts, lagers, seltzers, and sours, there’s truly something for everyone to enjoy.
“The goal is always going to be big, bold flavors. We don’t like bland. We don’t like boring,” Scott says. “If you come out to eat, you’re gonna spend your hard-earned money — I want it to be worth it for you.”
And while the food draws people in, the atmosphere is what often turns first-time guests into regulars.
Every Thursday, the covered patio fills with trivia teams and answer sheets as Brahma hosts its now wildly popular in-house trivia night.
“Primarily, Rob does the questions and the research. Beau is the MC,” Scott explains. “We don’t hire anybody, and we don’t buy pre-made programs. We literally sift the internet trying to figure out different categories.”
What started as a spontaneous idea has quietly become a community ritual.
“We literally decided to do it almost on a whim — and we’ve been doing it for three years, and we’re generally packed out every Thursday for it,” says Scott.
That same community-first mentality extends upstairs to Brahma’s private event space, where the team hosts everything from graduation parties and birthdays to business meetings and football draft parties.
Behind it all, Scott says, is an ownership group willing to support creativity instead of micromanaging it.
“I just wanted to make a quick shout-out to the owner of Brahma, who’s part of our local community. His name is David Jeffries, and David has been fantastic, not only in providing support to my team and me, but also allowing us the creative freedom to really build out and develop this brand,” Scott says. “He has been a tremendous source of support… allowing Rob, Beau, and myself to do what we do best and to really develop something special.”

Independent Businesses Are the Lifeblood of Fair Oaks
By Eric Seider, Permaculture Fair Oaks President

Every dollar spent at a local business is a vote for the kind of community you want to live in. When Fair Oaks residents choose the independent shop over the corporate chain, that money circulates — paying a neighbor’s rent, funding a kid’s soccer league, keeping a storefront lit.
But there’s a deeper truth here: our community has real problems that need real solutions. Aging infrastructure, food security, mental health, sustainable land use — these aren’t going away. The question is who profits from solving them. Outside corporations extract wealth. Local entrepreneurs reinvest it.
The most resilient communities are the ones that build livelihoods around local needs. When someone turns a neighborhood problem into a neighborhood business, everyone wins — and something remarkable grows: a community that can actually take care of itself.
If you’ve ever thought someone should do something about that, maybe that someone is you. As president of Permaculture Fair Oaks, I offer permaculture design consultation to help you identify unmet local needs and explore livelihood pathways rooted in ecological and community health. The problem you keep noticing might just be your calling. Connect with Eric at ericseider.com

THE ISSUE: This intersection is one of the area’s busiest and most frustrating traffic choke points, especially during rush hour. Congestion, awkward right-of-ways, and stop-and-go traffic create unnecessary stress, wasted fuel, and safety concerns for drivers, cyclists, and pedestrians alike.
THE SOLUTION: Not another traffic light! A thoughtfully designed roundabout could provide a safer, smoother, and more attractive long-term solution for our community.
