A Network Builds COMMUNITY THROUGH CONNECTION

SPOT THE DOT? IT’S A NEW LISTING!

Toward Abundance.

4

How do we foster meaningful connection and enrichment in our own lives and, by extension, our community? Maybe we act a little more like mushrooms. In talking with the local mushroom enthusiasts behind Shroomhouse, we were reminded of a simple lesson from the natural world: abundance does not grow in isolation. Beneath the surface, mushrooms thrive through vast networks of connection — reaching outward, exchanging resources and creating the conditions for something larger to flourish. Communities work much the same way. The more we reach out, explore, share what we know and participate in the places around us, the stronger our local network becomes. And from that network grows a richer local culture and a life that feels a little more connected, interesting and abundant. As we turn toward fall and the weather cools, there’s a natural tendency to turn inward. But what if, instead, we reach out? Explore a local event. Take a class or workshop. Meet someone new. Support a neighborhood business. Share a skill. Invite someone along. Each small connection strengthens our local networks and community. Like mushrooms, we’re already surrounded by fertile ground. We just have to reach into it and toward one another.

A Strong Mycelium Network How Shroomhouse is Weaving Community and Abundance in Fair Oaks and Beyond By Dottie Bates

“Fair Oaks just feels cooler, both its temperature and people...”

region’s legendary farm-to-fork movement, perhaps sun-drenched orchards, sprawling tomato fields, and verdant vegetable rows usually come to mind. But right beneath the surface, often hidden in plain sight, a quiet fungal network is taking root. Meet Shroomhouse, an urban mushroom cultivation company bridging the gap between wild-foraged inspiration and urban agriculture. Shroomhouse has grown from a backyard pandemic pivot to a commercial producer supplying top-tier local markets and restaurants, all while keeping its deep roots planted firmly in our community. Owner Brandon Burkhouse and his partner Bethany Crouch call Fair Oaks home.

natural beauty and slower pace provide an essential counterbalance to the fast-paced demands of running an urban farm.

5

“The things that drew me to Fair Oaks were Effie Yeaw, the village, and the beautiful drive through Winding Way,” Brandon shares. “It’s just far enough away from everything else that its hidden gems can stay relatively hidden.”

Roots in the Oaks

After a long day navigating the hustle of Sacramento, returning to the natural, oak-lined environment of Fair Oaks offers a welcome atmospheric shift. “Fair Oaks just feels cooler, both its temperature and people,” Brandon notes. “Sacramento is too busy for me, and it’s a lot easier to connect with people when everything feels a little quieter.”

For Brandon and Bethany, the connection to Fair Oaks runs deep. The neighborhood’s

“We live near a small grove and

enjoy walks with our dogs. The fresh forest air so close to home is a gift!” adds Bethany. That intimate relationship with the local landscape is what first sparked Brandon’s passion for mycology. It all started with a wild mushroom he foraged by the river, an experience that inspired a deep dive into sustainable food production without requiring vast acreage. For Bethany, the path to mycology was born right out of life’s most challenging moments. 6

“Brandon and I met because the mushrooms from his farm were a significant part of my diet while I was healing from cancer,” Bethany reveals. “His passion for mycology definitely sparked my own interest. I’ve learned a lot and enjoy getting to share through our workshops and social media platforms.” Their connection to the neighborhood is so interwoven that the operation even highlights a strain of oyster mushroom named after Temescal Street, where it was discovered near the village. While Brandon admits he can’t share all of Fair Oaks’ best-kept secrets, he offers a simple piece of advice for locals: get out and explore. And if you are looking for a casual local pairing of caffeine and company? “If I need a coffee and chickens, I’ll be at the village deli.”

The journey to Shroomhouse didn’t start in a high-tech laboratory; it began in a Fair Oaks backyard. When the COVID-19 pandemic hit, Brandon stepped away from his previous job to focus on sharing an accessible growing technique known as cold pasteurization. “It makes growing mushrooms at home a much more accessible hobby that doesn’t use any specialized equipment,” the founder explains. As the operation outgrew the backyard, it moved into a production facility in the Arden-Arcade area near El Camino and Howe Avenues, strategically positioned between Fair Oaks and the rest of Sacramento’s culinary scene. However, the connection to home remains strong, with plans on the horizon to bring a portion of production back to Fair Oaks to serve local neighbors better.

Busting Urban Mycology Myths Operating an indoor urban farm comes with its share of educational outreach. One of the most common hurdles is dispelling misconceptions about the fungi themselves. “People think growing mushrooms is hard,” Brandon says. While commercial-scale operations present distinct operational hurdles involving daily straw chopping, inoculation, harvesting, and equipment maintenance, starting at home is surprisingly approachable. Another persistent myth he loves to bust is the idea that mushrooms have to be mushy. “That

For fall cooking, oyster mushrooms serve as a versatile, comforting centerpiece. “Oyster mushrooms are hands down the best vegetable for roasting. Toss them on a sheet pan with broccoli, sweet potatoes, and whatever other fall veggies you have on hand.”

Closing the Sustainability Loop Urban mushroom farming does more than just supply local kitchens; it plays a vital, often-overlooked role in regional sustainability. As natural decomposers, fungi break down organic matter into rich nutrients for plants. Once Shroomhouse finishes cultivating mushrooms on straw, organizations like ReSoil Sacramento and other local farms step in to collect the spent substrate to use as highgrade mulch and compost boosters. This seasonal rhythm peaks in autumn. “Fall is some of the best weather for mushrooms,” Brandon notes. “As the weather cools, trees drop their leaves and feed fungi in the soil, and mushrooms begin popping up in shady areas after a rain.” Shroomhouse is looking forward to expanding operations home to experiment with breeding new varieties sourced locally from foraged mushrooms.

What is a Mycelium Nework? To truly understand how Shroomhouse operates, it helps to look at how fungi live and grow out in nature. Beneath the soil and leaf litter of places like our local oak groves lies mycelium — the vegetative, root-like structure of a fungus made up of a vast, interconnected web of tiny, thread-like cells called hyphae. While the mushrooms we see popping up above ground are just the temporary “fruit” of the organism, the mycelium is the living, subterranean engine doing the heavy lifting. It quietly absorbs nutrients, breaks down organic matter, and forms cooperative relationships with the roots of surrounding trees and plants. In a very literal sense, a mycelium network acts as the forest’s internet and support system, sharing resources and chemical signals to keep the entire ecosystem healthy and resilient. That natural blueprint of mutual support mirrors how Shroomhouse operates above ground. Just as fungal threads link disparate parts of a forest into a thriving community, the human network of workshops, local friendships, and shared spaces is what sustains Shroomhouse as it grows across Fair Oaks and Sacramento.

7

one really gets me because you only have the cook to blame, not the mushrooms!” His go-to recommendation for home cooks? “Try roasting them in the oven at 400 degrees for 20 to 40 minutes until they get nice and brown for a crunchy snack.”

Where to Find Them

What’s Next?

Local mushroom lovers can find Shroomhouse’s fresh gourmet oyster mushrooms stocked on shelves at Corti Brothers and featured on the menus of several standout Sacramento restaurants, like Farm Plates in Rancho Cordova.

Looking ahead, the vision for Shroomhouse includes rolling out a fresh slate of educational video guides this fall to help aspiring growers get their hands dirty at home. Whether you’re looking to pick up a new hobby or taste some of the region’s best hyper-local produce, you can explore their current offerings, purchase workshop tickets, and view all updates online at spawnshroomhouse.com.

Join a Shroomhouse Workshop For readers looking to dive into the world of mycology firsthand, Shroomhouse is hitting the community calendar this fall with local cultivation workshops: • September 12: Workshop at SacYard, 2-4pm.

8

• September 23: Workshop with Permaculture Fair Oaks, 6:30-8:30pm, at The Shabby Showroom in Gold River.

THE ISSUE: This intersection is one of the area’s busiest and most frustrating traffic choke points, especially during rush hour. Congestion, awkward right-of-ways, and stop-and-go traffic create unnecessary stress, wasted fuel, and safety concerns for drivers, cyclists, and pedestrians alike.

15

THE SOLUTION: Not another traffic light! A thoughtfully designed roundabout could provide a safer, smoother, and more attractive long-term solution for our community. Let’s create an intersection that works better for everyone.

What to Do Handling With Abundance the Harvest By Eric Seider, Permaculture Fair Oaks President

In permaculture, we talk about abundance — the surplus a healthy garden produces. But bounty only stays bounty if we plan for it. A zucchini left to rot on the vine or extra kale wilting in the fridge isn’t abundance anymore. It’s waste. A resource not put to use becomes a loss, not a gift. The good news: there are plenty of ways to capture surplus before it slips away. PRESERVE IT. Canning, pickling, dehydrating, and freeze-drying turn a short-lived glut into shelf-stable food to enjoy months later. Even pickled beans or dried

tomatoes can stretch a harvest through the off-season. 16

FEED IT FORWARD. Overripe produce, trimmings, and bruised fruit can feed chickens, ducks, rabbits, and other backyard animals, turning scraps into eggs, meat, and manure — closing the loop. SHARE AND TRADE. Swap surplus with neighbors or bring

it to a local exchange. That’s an idea I’d love to see take root in Fair Oaks: a community processing center. Picture a shared space where growers drop off surplus to be canned, pickled, dehydrated, or freeze-dried — then trade it for credits or finished goods. Products could carry a community label and generate revenue for local food programs, with classes teaching preservation skills along the way. It’s a big idea, but it starts small. If you’d like to help build it, I’d love to hear from you.
