GAMBAS AL AJILLO

Big juicy shrimps, swimming in tasty olive oil and garlic sauce. It is bright, garlicy, spicy and rich in the best way possible. Perfect with some crusty bread! You can make this easy gambas al ajillo in just 10 minutes,

INGREDIENTS (serves 5/6) • • • •

1.2kg large shrimps peeled and deveined Sea Salt ½ cup extra virgin olive oil 10 garlic cloves, chopped

1 teaspoon paprika 2 tablespoons dry sherry or dry white wine Juice of ½ lemon ½ cup chopped fresh parsley

METHOD 1. Pat the shrimp dry and season with sea salt. Set aside for now.

2. Heat the extra virgin olive oil over medium heat until shimmering but not smoking. Add the garlic and red pepper flakes. Cook over medium heat up to 60 seconds or until the garlic gains some colour (be careful not to burn it).

3. Add the shrimp and paprika. Cook briefly, tossing regularly, and watching that the flesh turns opaque with a pearly pink colour (about 3 minutes or so; this will depend on the size of the shrimp). Remove the pan from the heat.

4. Stir in sherry, lemon juice and parsley.

5. Transfer the shrimp and sauce to a serving bowl. Serve with your favourite crusty bread.

LAS RIMAS, POR MÍ TAN AMADAS, DE GUSTAVO ADOLFO BÉCQUER Juan Emilio Ríos Vera Las rimas del libro de los gorriones de Bécquer constituyen, sin lugar a dudas, uno de los poemarios más cargados de emoción y de delicadeza de toda la Historia de la Literatura española. Bécquer fue un romántico tardío y su poesía está ya muy lejos de contener los elementos, los tonos y las características de ese primer Romanticismo furibundo. El romanticismo de Bécquer es mucho más intimista, mucho más melancólico y elegante, menos radical y mucho más mesurado. Ya no es el romanticismo de los espectros y los cementerios, de la Naturaleza violenta ni de los precipicios, sino el romanticismo de la hiperestesia, de los sentimientos a flor de piel, de las tardes de otoño y los paisajes melancólicos, de los suspiros y de los besos, de los amores en secreto y los rayos de luna que se esconden por las esquinas. Podemos distinguir distintos bloques temáticos en el corpus de las rimas: uno sería el dedicado al amor y al desamor, que es el conjunto de poemas más importante en el conjunto del libro, en el que el poeta siente la necesidad imperiosa de plasmar en forma de poema sus propias experiencias eróticas. Hay rimas llenas de luz y optimismo, donde el poeta muestra su decepción por los desplantes de la enamorada. Es un corolario de emociones contrapuestas que nos conmueve.

Otro gran tema en las Rimas es el de la poesía y la cultura en general. Bécquer nos da su propia poética, es decir, su manera personal de entender la poesía y sus definiciones.
