It’s FOOTBALL time! Every fall, I’m excited for the season to begin. Those who know me well know that I’m a hardcore Lions fan, and as summer moves into fall I’m so ready to start cheering for the boys in Honolulu blue, white, and black.

This is our “give back” issue, and we have some great articles highlighting that value. June’s Place in Reading is a thrift store that donates the proceeds to help people in the community. The Kindness Campaign in Adrian gathers like-minded people to donate funds for those in need. And we have profiles of three former Hillsdale College students who have made Hillsdale their home and are heading up local nonprofits.

If you aren’t familiar with Belleza Salon & Spa in Jonesville, our cover article will acquaint you with this innovative business. Laura Loveberry, whose “Life is the Berries” column has shared her insights on life and faith for many years, goes into depth in her article about how she approaches her writing and what she hopes it will accomplish. We also have our regular columnists, party tips for October and November, and much more for you to enjoy.

Belleza Salon & Spa:

Rebekah Salazar has always known that she wanted her own salon. Now, her dreams have come true in Belleza Salon and Spa, which she opened in Jonesville in May 2022.

“Ever since I can remember, I have wanted to play with hair, I wanted to do makeup, and all that girly, fun stuff,” Rebekah says. “I always wanted to have my own salon. I just knew that it was a passion of mine and something that I really wanted to do.”

Belleza Salon and Spa is a full-service salon which provides hair services including coloring, cutting, extensions, and styling. The salon also has waxing, lash and brow, and nail services. Spa services include massages, wraps, and facials.

“We specialize in all areas,” Rebekah says. “We do everything hair, all things nails. We even have a little boutique up front where we sell gifts, clothing, and other miscellaneous items.”

Rebekah explains that she got the idea for the boutique from other salons.

“It’s something that I’ve seen in other larger areas, and so it was something I wanted to incorporate,” she says. “It gives people the chance to do some shopping while they are in the salon, while also drawing people in from the street.”

Rebekah says she was excited to have the opportunity to open her business in her own community.

“I was born and raised here in Michigan. I have been in a few different areas, but pretty much local. I grew up mostly in North Adams, then I met my husband, John, who is from Adrian,” she explains. “My dream of opening a salon wouldn’t have been possible without the help of my husband. We have been married five years, and we now have a son, Judah, who just turned one.”

For Belleza Salon and Spa, serving the local community is a mission.

“Our main focus is to introduce a new standard of beauty and self-care in a relaxing and upscale atmosphere. That is our mission,” Rebekah says.

Through her business, she works both to educate about the importance of self-care, while also trying to bring an upscale atmosphere to a more rural area. “I wanted to take our guests out of their normal day to day and provide them with a luxurious experience,” she says.

Rebekah adds that not only was it important to her to provide a good environment for her clients, but also for her team of stylists. “It was certainly on my heart to create a good culture and environment for the stylists,” she explains. “We are not a competitive salon. We are a team, and we work together. We try to keep that the focus, because it is easier to serve guests and for them to have a great experience when we love where we work.”

Cultivating good relationships with clients is a critical part of Belleza Salon and Spa’s mission.

“We take time to get to know our guests,” says Rebekah. “We mark off extra time with guests that come in here. We don’t double book ourselves, so that way the guest sitting in our chair has our full focus. It is really important to us to take that time and be present for that person.”

The business also works to give back to the community at large, providing free haircuts and giving to local service organizations.

“We have donated to a few different places to help give back to the community,” Rebekah says. “We are just trying to be a blessing in the same way that the community has blessed us by coming and supporting us.”

While Belleza Salon and Spa does take walk-ins, Rebekah recommends that clients book an appointment so they can be sure to get in.

“We are a pretty busy salon, so it just depends on the day if we are available for walk-ins,” she explains. “Most of our guests find it convenient to book online, because it is super quick and easy.”

Rebekah says she hopes to continue to grow the services

her salon provides, giving clients even more options. “We would like to expand our spa. While we provide facials, we would like to transition into more medical spa services.” This would include skin rejuvenation treatments, dermal fillers and injectables, and more.

“We would also like to offer tanning services,” says Rebekah. “We are looking to expand within the next four or five years and we have a game plan, so we’ll just have to see how that works out.”

a heartfelt message for people to take home after our impactful events. Ladies can start book clubs. I consider my books handheld, paperback missionaries. My novel and two nonfiction books share life-changing truths, using wit and my attempt at wisdom, weaving in the Word of God.

Readers describe my women’s books as unique and uplifting. They flip the pages giggling, sometimes tears brimming, and often gasping, “I can’t believe Laura wrote that?!” They request more copies to comfort friends in hardships. Yesterday, a friend ordered 12 books to give away.

My joy as an author overflowed.

Readers tell me they laughed out loud, loved the sisterhood, and couldn’t put down my first novel, Bowl of Berries Book Club. It’s set in southern Michigan. Here’s the novel description. As an inspirational speaker, I saw the need for additional support after our women’s conferences ended. Anxiety, loneliness, depression, chronic illness splat into our lives. We may lose loved ones, be crushed under betrayal, or spiral downward financially. Ugh.

Life is messy.

The purpose driving me to write flows from a passion to lift up one another. The word “courage” stands inside “encourage.” You and I need grit. I write to encourage, equip, and energize women.

“A new command I give you: Love one another. As I have loved you, so you must love one another. By this everyone will know that you are my disciples, if you love one another,” John 13:34-35 NIV.

At speaking events, we hug, pray, and giggle, enjoying the sister bond. I wrote my novel to offer this hope, healing, and

crazy adventures prune them? Will they cultivate fruitful lives after digging deep into their pasts? What would you find unlocking the vault of your soul? Five complete strangers are about to find out.

My nonfiction books glean from a collection of my articles found in Simply Hers, Everything Men, and Simply Seniors magazines. When Marlanea McGraw asked me to write my Life is the Berries spiritual articles in her secular magazines, she aroused the author inside me. Without Marlanea believing in my writing, these books would not be. With watery eyes, I thank Marlanea for starting my author adventure. It’s a humbling honor writing heartfelt articles over the years.

I give God all the glory for this outreach opportunity.

My nonfiction books, Goodbye Chaos Hello Calm and Invite Delight, are packed with “aha” standalone chapters, challenging us to better ourselves. One friend reads a chapter a day like a daily devotional, along with her Bible. She grabbed up more books to give to her friends going through trials These books open the door to hope and humor even in the hard. Readers laugh, love the uplift, and learn to lean into the LIGHT. I pray they enjoy the read like a bowl of berries, double-dipped in chocolate, delivered on a hectic day! Ahh.

My best-selling author friend, Ann Spangler, said, “I love it! Laura’s exuberance, energy, and personality come through on every page.” She added, “Readers will connect with Laura’s tenacious faith, earthiness, and humor. Her great content will grab readers.”

My newest children’s drawing books include a story to never give up, don’t quit, and youcan-do-it mindset. Cartoon It and Caricature It teach a step-by-step caricature course. Schools love the affordable books for kids. My author visits include my cartooning faces of students. What a blast with Arty the Puppet!

During the Covid shutdown of my speaking events, I adjusted my outreach. I pulled out my hair, screaming at my keyboard often, but persevered writing books in three different genres. Whew! It’s worth every heavy sigh when readers hug me, smiling, grabbing up more books to give away.

With tears brimming, readers shared how their lives relate to my stories, creating an author/reader bond. With hand on my heart, eyes welling up, I’m overwhelmed with the goodness of God. We don’t waste our hardships, zigzags, and pilgrimage when we grasp empathy and walk alongside others facing mountains. We love God and love people. It matters.

It seems like yesterday I was typing up my article for spring fashions, boy, how time just flies! Here we are reading about fall fashions, getting ready to put our summer lawn decor and furniture away. Personally, I love fall weather and fashions second only to the newness and fresh smells of spring. I love the crispness in the air, the beautiful colors and the layering of our fall fashions.

Glamour and elegance aren’t always mutually exclusive and, this season, one of the biggest shifts we’re seeing is a continued return to refined dressing. I saw this at the beginning of spring and it’s definitely continuing for the fall season with a few new additions to our fall wardrobes that we haven’t seen for a while.

We will start seeing a reemergence of what some call “debutante dressing”— some of the most-used styles of the 1950s and 1960s. Think shift dresses, faux fur shawls and wool swing coats which make a stark change from the sporty and streetwear aesthetics in recent years. Cashmere cardigans, pearls and below the knee skirts will be popular for fall get-togethers.

I love the look of a wrap for fall. It’s the perfect “accessory” for the warmer days and cooler nights without having to pile on a heavy jacket. There is something dramatic and elegant about the swoop of a gigantic scarf or a luxurious cape across one’s body and with the runways referencing multiple eras (‘50s, ‘60s, ‘70s, ‘80s and ‘90s),

Satin dresses and tweed twin sets seem to be a hit for fall of 2024. Something we haven’t seen in quite some time were faux furs adorned with brooches for a look of quiet luxury. Well-cut suits, tailored coats, smart handbags, liquid leather jackets, sharp shoes and chic shift dresses come together to create a wardrobe that’s made for women not little girls.

Even though neutrals are still trending, we are seeing some semblance of color seep back into our wardrobes. One of the most prevalent ways it will be showing up is in a burgundy

Cardigans are another great fashion trend for fall. Pair it with your skirts and boots or flare jeans, whether it’s a classic boucle or a more structured silhouette. I love the practicality of this trend: the warmth of a sweater coupled with the functionality of a jacket!

Trousers have dominated the chicest looks, and the wider leg trend will still be on point this fall. Something new that you’re going to start seeing whether you love it or hate it is the barrel-leg silhouette. With its unusual shape that curves out at the hip & tapers in at the ankle, the barrel-leg may seem a bit intimidating but styling them with a simple top and accessories is the key.

Monotone or monochromatic dressing will also still be on trend this season. Wearing one color or similar colors top-to-toe has long been a trick used by celebrity stylists to make their clients’ outfits feel more pulled together and cohesive. You will be seeing hues of rust, rich plums, olive and browns this season, but the most prevalent shade seems to be khaki. Modern but still timeless and sophisticated, the rich green shade can add a classy and expensive looking tone to an otherwise simple look.

Another trend we will be seeing are checks, but I’m not talking about your typical plaid flannel. Heritage weaves in bold color mixes and enlarged motifs and also black and white grid checks are popular. As much as spring is the season for florals, then autumn is the season for checks. There’s a distinct air of elegance to this timeless trend; be on the lookout for maxi wool outerwear, long wrap skirts and classic crew neck sweaters in these bolder prints.

To give that finishing “point” to our fall looks, you’re going to see a sharp contrast from the soft rounded toe styles from spring and summer to the pointed toe and also heavy lugged soled shoes for fall. Think sleek slingbacks and pointed toe boots in leather and thicker soled loafers in patent leather

7 Fall Makeup Trends to Try

1. Colored Eyeliner

No longer do you have to play it safe when it comes to eyeliner. Blacks, browns and taupes can get a little tiresome, so this fall, get playful with colored liner, on both your bottom and top lid. Go for a neon blue or green, or even purple or orange for an eclectic, gorgeous look.

2. Go Mauve

Mauve is the perfect color to transition from summer to fall makeup looks. It’s a touch more dramatic than light, summery shades, but isn’t as dramatic as some of the darker fall tones. It looks great on a wide range of skin tones, and you can wear it on your eyes, lips, and cheeks all at once without going overboard!

3. Gold & Shimmery

Looking to change things up with your eye makeup look? Sultry, shimmery gold lids will be all the rage this fall. A lighter shade of gold for your base will brighten up your eyes, then layer on a dash of shimmery shadow around the corner to give your look some dimension.

4. Brows Au Naturel

Natural looking brows are in for fall. To get the au natural look, brush your brows up with a spoolie brush and fill in sparse spots with a brow pencil in small, feathery strokes. This will give the illusion of full, luscious brows.

5. Matte Red Lipstick

A matte red lip is always classy, and this fall it’s definitely back in style. Red lips are bold and dramatic and can take a simple outfit up a notch in a flash! Wear it to elevate jeans and a white tee or to complement a gorgeous floral dress for a night out.

6. Winged Eyeshadow

We all know how stunning winged eyeliner can be, but how about trying winged eyeshadow? This dramatic shadow twist will amp up your makeup look, taking you from subtle to sultry. Use tape to get a perfect straight line, just like you would with winged eyeliner.

7. Full Lashes

Great lashes are always in style, but this fall lashes are going to be extra lush. Apply your favorite mascara from the roots of your lashes to the tips, fanning them out toward your temple. Eyelash extensions are no doubt the reason for this voluminous trend, so you can also consider those to enhance the length and volume of your lashes!

Healthful Snacking

Healthful snacks are a great way to get more whole grains, fruits, vegetables, and low-fat milk products. Use these ideas to get started: Make it easy.

• Have snacks ready for when you get hungry. Keep some healthful snacks at work or school and at home. If you have a healthful snack easily available, it’s less likely that you’ll pick a candy bar or bag of chips.

• Find healthful substitutes for high-fat snacks. If your favorite high-fat snack is potato chips and dip, try baked tortilla chips with bean dip or hummus instead.

• Stock up on quick, healthful snack foods. Fresh fruits and vegetables are always good choices. Other ideas include:

» Yogurt

» String cheese

» Canned fruit or applesauce in single-serving containers

» Raisins and other dried fruit

» Air-popped popcorn

» Whole wheat crackers

» Pretzels

» Flavored rice cakes

» Unsalted nuts

Make it interesting.

• Use yogurt to add some appeal. If plain fruit doesn’t appeal to you, try dipping fruit slices in low-fat yogurt sprinkled with cinnamon or nutmeg. Or mix fresh or frozen berries with low-fat yogurt and top with sliced almonds or granola to make a fruit parfait.

• Top whole-grain crackers with low-fat cottage cheese or ricotta cheese. Add sliced tomatoes or red pepper strips for color.

• Make your own trail mix. Combine high-fiber cereal, dried fruit (such as cranberries, blueberries, and dates), and nuts such as almonds. This mix also makes a great topping for yogurt.

• Spread low-fat cream cheese on a whole-grain bagel. Sprinkle sunflower seeds and raisins on top of the cream cheese for extra flavor.

• Dip colorful sliced vegetables in low-fat salad dressing or hummus. Try broccoli; cauliflower; cherry tomatoes; and red, yellow, and orange bell peppers.

• Make a protein-rich dip for fruits and vegetables. Combine honey and peanut butter or almond butter. Dip raw apples, carrots, and celery. This spread also tastes great on bagels, rice cakes, and whole-grain crackers.

What Are the Benefits of Taking

Collagen?

Collagen supplements are a great way to boost your body’s levels of certain amino acids and nutrients needed to make collagen. It’s easy to get wrapped up in the idea that supplements are the answer to your hair, skin, nail, or joint problems. Remember — collagen and other supplements are only intended to support your body’s overall health. Supplements aren’t regulated by the United States Food & Drug Administration (FDA), meaning companies can’t claim their products treat or cure any problems.

Current research on collagen supplements usually isn’t in the form of randomized clinical trials. These studies are the gold standard of clinical research used to test how effective new treatments are. Supplement studies may be sponsored by the supplement company, or they may not use a placebo (“fake drug”) as a comparison. Be sure to do your research and ask your doctor or healthcare provider about which supplements they recommend for your health.

With this information in mind, here are four benefits of collagen supplements as noted by current studies.

1. Improves Your Skin’s Appearance

As you age, your body produces less collagen. According to dermatologists, women can lose up to 30% of their collagen within a few years of starting menopause. This is why many older adults have wrinkles or sagging skin. You may have also heard your dermatologist talk about your skin’s hydration (how well it holds onto moisture) and elasticity (how well it stretches and bounces back).

Collagen supplements have long been studied for supporting skin hydration and elasticity. By taking supplements, you may be able to support healthy skin with better hydration, elasticity, and collagen density.

2. Supports Bone Health

Collagen also plays an important role in keeping your bones healthy. In fact, collagen accounts for the majority of the organic structure in bones. As with your skin, low collagen levels from aging can also negatively affect bone health. Less collagen can lead to low bone mineral density (BMD), making your bones weak and brittle. Low BMD ultimately raises the risk of osteoporosis and bone fractures.  It’s a well-known fact that women going through menopause and those who are post-menopause are more likely to develop osteoporosis.

This is because low estrogen levels can lead to low BMD. Small studies have looked into collagen supplements for treating low BMD in postmenopausal women. A report published in the Journal of Medicinal Food followed 39 women who took either a combination of collagen, calcium, and vitamin D or only calcium and vitamin D. The study authors reported that women in the collagen supplement group had less BMD loss compared to those taking only calcium and vitamin D.

3. Aids in Joint Health and Repair

If you’re experiencing joint pain and stiffness with aging or wear and tear, collagen supplements may help. Collagen proteins are necessary for cartilage and joint function. It would make sense that taking extra collagen could help treat joint problems and osteoarthritis. Some studies have found that peptides from collagen supplements find their way into the cartilage that supports joints.

Current research also supports the idea that collagen can aid in joint health and repair. A clinical study published in Nutrition Research followed 120 patients taking a placebo or liquid nutraceutical every day for 3 months. The nutraceutical was formulated with fish collagen, antioxidants, and vitamins designed to support skin and joint health. In addition to the numerous skin benefits, the study authors reported that patients who took the nutraceutical experienced:

• A 43% decrease in joint pain

• A 39% increase in joint mobility

4. Builds Muscle Mass

We know that collagen is important for maintaining muscle health and strength. However, aging leads to collagen loss and may eventually cause sarcopenia (loss of muscle mass). Every decade after turning 30, you lose 3-5% of your muscle mass. When you lose too much muscle mass, you’re at risk of developing a condition known as sarcopenia. Older adults are more likely to have sarcopenia because they’re less physically active.

Note: It is very important to recognize and remember that other factors such as proper nutrition and engaging in regular weight-bearing exercise are shown to have a positive effect on joint health, bone density, and muscle mass. We second this article’s recommendation to discuss supplements with your health care provider. You need to understand their place in relation to your current health situation and any medications you might take.

I could not crack even a corner of a grin in return. My messy hair and outward disheveled attire hinted at the storm raging inside my three pounds of brain. I furrowed my brow.

Our hardship weighed down every part of my every day. “Breathe. Just breathe,” I told myself. Forcing myself to lift my heavy head, I spotted an old neighbor in the grocery aisle. “How are you doing, Laura?” Her inquisitive eyes met my tear-brimming eyeballs. My teetering wall of protection toppled. Floodgates burst, splattering down my cheeks. Guttural, uncontrollable sobs heaved, shaking my shoulders.

Her eyes widened, and moving closer, she wrapped her arms around me. Unlocking my private prison, I spewed out our terrifying predicament. Parenting a special-needs child— not for the weak-hearted. My friend huddled with me as my chest lifted and dropped, gasping for breath. My brokenness echoed down the store aisle. Nobody walked by us. My hubster stood by as a protective bodyguard in our holy moment of sisterhood.

After consoling my trembling self, she reached in her purse, handing me a crumbled piece of paper with a phone number of a ministry for families in struggle. It “happened” to be buried

in her handbag. That wrinkled up note changed everything.

It began our recovery journey. God lifted our predicament, blessed us beyond measure, and did immeasurably more than we could ask or imagine. “God can do anything, you know—far more than you could ever imagine or guess or request in your wildest dreams! He does it not by pushing us around, but by working within us, his Spirit deeply and gently within us. Glory to God in the church! Glory to God in the Messiah, in Jesus! Glory down all the generations! Glory through all millennial! Oh, yes!” (Eph. 3:2021 MSG)

We experienced a divine appointment only the God of all circumstances could orchestrate, not walking a church aisle, but in a store aisle. Who knew?! It’s not happenstance. God uses HIS people, in HIS timing, and in HIS places.

This happened more than a decade ago. The impact lifted our family out of the pit. Our unique child grew to an adult. She faces challenges still today, but remembering how God redeemed us in past trials inspires us to keep trusting Jesus on our current journey.

Hold on to Hope. It’s around the corner.

Snakes and Cakes and Creative Makes

Don’t you just love birthdays? The Happy Birthday texts that start coming in around seven in the morning. The cards that start arriving in the mail three days before the celebratory date. The calls with the infamous “Happy Birthday to You” being sung (thanks Crystal) in the afternoon. Nope. Me, either. But then, it is nice to be remembered. To be the center of attention. To eat cake. And besides, I am in good company, as you will all experience it every year yourselves!

Some of my best birthday memories are not actually the best, just mostly memorable. When I turned eight, we celebrated my final birthday in Litchfield at the park by what used to be a river. My parents were moving us to the big (then) Village of Jonesville, so this was the last celebration to enjoy with my Litchfield elementary school buddies. My Grandma was there to help with the party and manage all the other eight-year-olds. My Grandma was the best, but she hated snakes. So of course, what uninvited guests showed up down by the (then) river? Memorable.

During my grown-up years, (you know, when you get a job and have to go to work every day), my husband had to get up even earlier than I did for his job. On my birthday morning, I would find a thoughtful card, flowers, and a lovely little box on the counter. Girls, we know what comes in lovely little boxes, don’t we? And it would be the “real stuff” from our local jeweler. I think he left before I opened these lovely little boxes, as he feared my reaction to his choice. But come on! What’s to fear? It was jewelry!

For a number of years, my youngest son would

make me an outrageously technically difficult cake for my birthday. It was great! Just the effort he put in made it so thoughtful. My other two kids will be quick to remind me that THEY both gave me grandchildren, so it all evens out.

It is fun to plan for others’ birthdays too. Each summer my granddaughter Presley comes to visit. During her July visit, we typically make a crafty gift from her for her parents who both have August birthdays. We’ve made a variety of crafts over the years, including putting together 1000-piece puzzles showcasing each parent’s individual interests, then gluing and framing them for presentation. This year, we painted each parent’s individual history of their cat ownership. The cats are painted from the backside, with their tails trailing behind them and their names noted under their fluffy butts. Presley did a wonderful job recreating each cat’s coloring, markings, and personality, some from photos of cats long gone.

As I have grown older, as it somehow happens each birthday, I find happiness in celebrating in simple ways. Spending the day hitting yard sales, responding to birthday texts, and getting a discounted dinner at Olivia’s makes the perfect birthday. (Of course, jewelry is always welcome too.)

Now before you all pick up your phone to text or call or carefully select and send a card, know that I already had my birthday this year – in July!

Book and Author Reviews

This has been a good couple of months discovering authors new to me. Eileen Goudge is one, introduced by my sister, Joanne. The Diary is a beautiful tale of sisters Sarah and Emily as they find their dying mom’s diary. They discover that their happily married mother Elizabeth had a life they did not imagine. It is a poignant tale of their mom’s old flame AJ and how feelings can remain with you throughout life. I really enjoyed it, especially the ending!

Goudge (a/k/a Marian Woodruff) has also written several books spanning romance, historical fiction, and children’s literature. Her first novel Garden of Lies was a New York Times best seller.

Some of my friends were talking about author Barbara Kingsolver’s newest book, Demon Copperhead. Looking at the comments on Facebook regarding this one, you discover a vast gamut of opinions. Some rave about it, and others DNF (that means Did Not Finish, in Facebook jargon). I decided to check it out and see which side I came down on. My first impression, reading the first chapter of author Kingsolver, is wow! She has a way with words and descriptions, and I was impressed. The subject matter is sad, however, dealing with foster care, child labor, derelict schools, addictions, love, and loss. The epic novel David Copperfield by Charles Dickens is transposed into her own modern-day journey of a boy without a home. I was taken with Demon and championing him throughout his journey. I must look up other books written by Kingsolver including bestsellers Unsheltered, Flight Behavior, The Lacuna, Prodigal Summer, and The Poisonwood Bible

Adding to this period of authors new to me is Pat Conroy. Of course I’ve heard of his works, but have never opened up one of his stories. What

have I been missing?! Another eloquent writer, like the above Kingsolver! He is a very wordy writer, but his descriptive paragraphs should not be skimmed. You will miss such eloquent thoughts and descriptions. I picked up The Lords of Discipline, not knowing what to expect. It is the story of Will McLean’s coming of age at the fictional military “Institute” in Charleston, South Carolina. It is a story of love/hate among the cadets, discipline, honor, and integrity. It follows Will and his three roommates throughout their four years in attendance. They uncover a secret society, “The Ten,” and unfolding events through this discovery determine their lives’ new directions. It is the story of Will’s self-discovery of the kind of man he will become after graduation. I highly recommend it. As fellow readers, you have probably already read his classics Prince of Tides and The Great Santini. If not, please join me in discovering this master storyteller!

Number one best-selling author, Ruth Ware, has come up with another good thriller, One Perfect Couple. It is a real page turner, and I read it in one sitting on a rainy day. Research scientist Lyla has been talked into joining a reality show with her boyfriend, Nico, who is an aspiring actor. The premise is five couples are shipped to a deserted island for two weeks and are given tests to see who is the “perfect couple.” Well, the island is 20 hours from civilization by boat, and, due to a strong summer storm, they are left isolated when the departing boat is capsized in the storm with no survivors to report their whereabouts. It is a bit reminiscent of Lord of the Flies, where the hierarchy begins to form for survival.

Have you ever stored something on your computer and then couldn’t find it? Or wrote a list? Or told someone else so they could remind you? Then when you needed that information, it was nowhere to be found? It’s enough to put me right over the edge!

I recently made a list of things I wanted to buy when I could find them on sale. I think you all know me well enough by now that you know I don’t buy anything that’s not on sale, thus the need for a list because you also know I can’t remember squat! By the time something goes on sale I may or may not have already purchased said item and either a) can’t remember what it was I wanted to buy, or b) I bought it, but have no idea what I did with it.

Please tell me I’m not the only person who has these issues. I’d feel really dumb if I was. What am I saying? I feel dumb even if I’m not the only person with these issues. You have no idea how much time I spend trying to find things on the computer, on a written list, or even in my husband’s brain. If there’s a better way to remember things I don’t know what it is.

I know there’s always the trusty pencil and paper. (I love pencils, by the way. So many mistakes can be easily erased with a pencil’s eraser … if you can find the eraser. Most of my erasers are down to the nub. That’s another obvious fact, I make a lot of mistakes!) The problem with writing things down is I still have to remember what I did with the written list. That, in and of itself, is a problem.

Then there’s always the least likely way to keep a list of things: I tell my husband to remember it for me and remind me later when I ask him what it was I wanted to remember. The last time I asked him what it was he was to remember for me, he said he couldn’t even remember who I was, much less what I’d told him to remember. Well … that’s what he said, but I believe he just couldn’t remember anything on the list and didn’t want to admit it. I’m not tellin’ that man nothin’ ever again.

So, anyhow, just before Prime Days a couple of months ago, I wanted to check my list of things I might want to buy in case they were on sale through Amazon. Do you think for one moment I could remember where I put the list? Nope, nothing was coming to me. I checked the computer, I checked a dozen places I may have put a written list, and when I asked my husband, I got the usual blank stare. I’m gonna have to start wearing a name tag just so he remembers who I am.

So, what happened? Prime Days came and went and I got nothin’. Just to feel better I told myself anything I really just had to have wouldn’t have been on sale anyhow. Yep, I felt better until … you guessed it. I found my list!! Where you might wonder? The sticky note somehow got stuck to the bottom of my computer. How in the world it got there I’ll never know, but when I checked the list against the just passed Prime sales, I found 9 of the 10 items had been on sale after all. Dangit! It’s enough to put me right over the edge.

Private Island dreams… in Michigan

For many years, my brother and sister-in-law have asked us to visit them on the private island where they rent every year but we have always declined. When my brother brought up the vacation this year and after telling me the dates, he also brought up the fact that my husband had

couple of large imitation palm trees to complement the tiki theme. Keeping history alive, the owners have also kept up the maintenance on the original, small, rustic log cabin that’s off to the side.

We spent the days fishing, swimming, relaxing on the boat and took a short trip to Tawas Bay for some shopping, authentic beach-side Mexican food, and ice cream. Our twoyear-old daughter’s favorites were splashing around in the water and showing off her dance moves with the music on the pontoon boat.

Arriving less than prepared, the search for condiments led

I never realized private island dreams could be a reality in Michigan and now we can look back on the amazing memory for ourselves. I can see all the reasons my brother and sister-in-law have fallen in love with Zerons Island.

This month we’re offering ideas for a Halloween-related party and one that features a classic cold weather comfort food for November!

Pumpkin Carving Party

Before you send invitations, take stock of your counter space and/or how many sturdy folding tables you have. Each carving station needs a fair amount of room! If the weather cooperates, you can host it outdoors.

What you’ll need:

• PUMPKINS! Get a variety of shapes and sizes, remembering that larger pumpkins are generally easier to carve and have more usable surface. Be sure the sides are smooth.

• Sturdy carving tools. You can find reasonablypriced sets on Amazon or in many stores. Each should have at least a scoop, a pointed tool for marking the design from a paper pattern, and some kind of saw for carving.

• Large bowls or small wastebaskets to hold the pumpkin innards.

• Table covers. Cheap plastic ones from the dollar store, newspaper taped down, heavy craft paper, etc.

• Hand towels—black, orange, purple, and green are good choices. Check dollar stores and online for inexpensive ones. Carving is messy and hands need wiping.

Party Tips

• Black Sharpies for drawing the simpler designs.

• Pattern books offer basic to incredibly intricate designs. Visit pumpkinlady.com for 1,000 downloadable freebies!

• Aprons. Either provide them or ask your guests to bring them if they want protection from the pumpkin goop.

• LED tealight candles for a safe way to illuminate all the masterpieces.

• Halloween music. This is optional but fun and helps set a party mood. There are many CDs out there.

Refreshments can be anything from snacks to a meal depending upon your preference. Keep it to things people can eat with their hands standing up, as your guests will probably want to take short breaks rather than do all their eating at once. Popcorn balls and mini candy bars are a good dessert choice. Have plenty of cold water on hand, and you can do punch for kids and batch cocktails if your adult guests are drinkers. Decorations can include mini pumpkins, fall corn, strings of Halloween lights, etc. Whatever you have or can borrow for Halloween decorations will look great placed throughout the carving area.

When the carving is over, clear a table or counter, arrange all the pumpkins, and add the tea lights. Turn off the lights and enjoy the display. Be sure to take photos of the creations!

Chili Party

Chili is a favorite cold weather comfort food and it can be the basis for a fun, casual gathering of friends and/or family. The great thing about this party is that you can do the chili ahead of time. Make it the day before, two days before, or a week before and freeze it. (If you freeze it, make sure to allow enough time for it to thaw!) It’s nice to have two versions and there are many to choose from: red, white, beef, chicken, beans, no beans, mild, spicy, vegetarian and you can probably find more.

The night before the party, grate the cheeses and chop/slice the veggies. Refrigerate in covered containers or sealable plastic bags. Several hours before the party, transfer the chilis to slow cookers and heat on low, stirring occasionally. Once the food tables are decorated and ready, lay out the spread with the chili first and the toppings to follow. If you’re doing hot dogs or the potatoes, have them near the chili. A small slow cooker works well to keep queso dip hot. Having a lot of guests? Heavy weight disposable bowls are likely your best bet.

You can really wow your guests with the toppings and sides! This list is from howsweeteats.com and, we admit, it’s a little insane but also fun. Choose whatever sounds good, but do include plenty of items.

• freshly grated cheese Monterey jack, cheddar, Havarti

• crumbled feta cheese or queso fresco

• pepperoncini

• chopped chives

• chopped avocado

• fresh cilantro

• lime wedges for spritzing

You’re not limited just to chili in bowls. Bake some potatoes for loaded potatoes. Have hot dogs and buns on hand for guests to create awesome chili dogs. The tortilla chips can be used to build plates of chili nachos. Add some fun signs to the food tables highlighting these additional choices. Beverages will depend on who’s attending, whether you include beer and hard cider or stick to water, soft drinks, regular cider, etc.

Enjoy a cozy gathering of food, conversation, laughter, and sharing time with those you love!

June’s Place June’s

A thrift store in Reading is on a mission to give back to the Hillsdale County community.

June’s Place Thrift Shop is a volunteer-run and missionminded thrift shop which has been a staple in the community for the last 10 years.

“It was originally organized by the women from the Reading United Methodist Church,” says Jen Steele, current vice president of the thrift shop’s board. “We’ve since reached out into the community and take all willing volunteers.”

The thrift shop uses both its store and the proceeds from the store to give back to the community.

“We saw a need and a way to help with that need. When we opened the store, a lot of things had just happened and the community was struggling, so we were trying to find a bright and sunny way to be more positive in the community and be better neighbors to our neighbors,” she explains. “We just try to be as much of a shining light in the community as we possibly can be.”

June’s Place provides gently-used and quality clothing, goods, and other items to the community.

“You know that if you buy something at June’s, it is going to be clean, all the parts are going to be there, and it is going to work. We also keep our prices very minimal,” Jen says. “By keeping our prices low, we do a lot of volume turnover, which is how we earn the money that we earn.”

In 2023 alone, June’s Place gave $93,000 back to the local community.

“We are completely nonprofit. We keep enough money to pay our bills and keep the tax man happy, but everything else goes back out to anybody in the community that comes to us with a need,” she explains.

Jen has played an integral role in June’s Place since it was first started, over one decade ago. She says she is excited to see

all the expansions the organization is currently undergoing. “We have some big projects going on within the store,” Jen says. “We are on our second expansion, so we are in the process of building on another portion of the building.”

She says it is extremely important to keep the money flowing into the community though, even as internal projects are underway. “We have worked very hard not to touch the money that we can still give out,” Jen says.

June’s Place assists everyone from local families who lost homes to house fires to teachers in need of school supplies.

“We will get you whatever we can get ourselves, but we will also help you find other resources,” she adds. “We try to help everybody in any way that we can.”

Jen says that it is important for community members to know that they can reach out when they have needs. “It’s just important that people know that we are always there for whatever they need us,” she says. “We might only be open two days a week, but you can always give us a call, and we will answer the call whenever we can.”

More volunteers are always needed at June’s Place, as Jen explains that it is run entirely by volunteers. “The biggest help that the community can be to us is being willing to volunteer,” she says.

June’s Place is located in Reading at 49 Enterprise Dr. and is open from 9 a.m. - 5 p.m. Friday and Saturday.

What do you like most about your job or career? Marketing was one of my favorite classes in my business minor at college. I never imagined I’d love it so much, but I really do! Through the years, I’ve thoroughly enjoyed helping local business clients showcase what they offer to this community and watching them find success.

What are your long-term career goals? Continuing to polish my people skills and relatability with clients and fostering those relationships of trust in hopes that they see me more as a trusted friend than a sales executive.

What are your passions or interests outside of work? The Lord my God, my husband, and my children all come first. Outside of that, I enjoy early morning walks with my dog, time with friends and family, date nights with my husband, and an occasional game of Rummikub on a Sunday afternoon.

What’s a memorable experience you’ve had in your career so far? The very first ad I ever sold was to a construction company based two hours north. I ran into them while visiting another potential client who I was actually in to see. As he made conversation by asking me what I was there for, which I told him, he told me I could sell HIM an ad! So I did! It was the wildest thing and came completely out of nowhere! They turned out to be my very first clients with the publication! I learned to be ready for anything!

What are your proudest achievements? The family I was born into, and the family I have made with my husband – our three children – are my greatest achievements! As far as career: the bachelor’s degree I achieved 18 years ago and now the continuing pursuit of another career path in elementary education. Along with that, I am very proud to have been able to take my state licensing exam (MTTC—Michigan Test for Teacher Certification) and pass it on the first try!!

What motivates you in your personal and professional life? My greatest motivation is in helping my clients achieve the recognition they deserve and seeing them succeed as a result of it.

What are you looking to gain from this job or company? Some things I’ve gained from my years of working with this publication are more self confidence in my own abilities, better people skills – which is always a good thing – and greater desire to further myself in opportunities to network throughout this community.

Why does working with Simply Hers work for you? I love the fact that this position is supplemental and I can make my own hours. I’ve worked for McGraw Publishing for 5 years now and have truly enjoyed being able to set my own hours and pursue as much as I want to. I’ve learned the balance between maintaining and gaining new clientele. Kindness Campaign

The Kindness Campaign has been a key part of Lenawee County for the last five years, when it was first started to bring together groups of women who all aspire to encourage kindness in the community.

The goal of the nonprofit is to keep Biblical kindness at the forefront of the community’s mind — encouraging this through an annual gathering of local women.

Kayla Joy Crist is the founder of the Kindness Campaign, and continues to help organize events.

“I am a Lenawee County girl. I’ve been here my entire life,” she explains.

Kayla says she saw a need for kindness to be championed amongst a culture of “Us vs. Them” as well as the impact made in her own life through the kindness of others as she experienced grief. In 2020, she decided to share this impact with the community.

“My husband is in full-time ministry, and so I gathered a couple other wives that are in ministry and reached out to some other people that were in leadership in our area,” she says. “I just asked if they’d ever noticed a need for kindness to be prioritized, and then if they had a desire to be a part of the change.”

A couple coffee meetings later, the Kindness Campaign was born.

“This group of women came together, and even though we were not in the same circles, there was cohesion amongst us.”

Within seven weeks, the women put together their first event.

“We set up for 230 women, and we ended up with standing room only, even though it was mostly word of mouth” she says. “We took that as a green light, that there was a need and a desire, and we decided to host a similar event once a year.”

The events were meant to inspire Biblical kindness throughout the community and also collectively demonstrate radical generosity through anonymous giving.

“If you come to our event, the hope is that you are going to take some of these basic principles and then take that kindness back to your own circle of influence - your home, workplace,

faith family.” Kayla says.

This year the Kindness Campaign officially became a nonprofit through a partnership with the Lenawee Community Foundation.

“Each year at our gathering women come knowing that they are going to have the opportunity to give to our unsuspecting recipient,” she explains. “It is zero pressure, but the women are enthusiastically and overwhelmingly generous! Then, every dollar is given away anonymously to an unsuspecting recipient in Lenawee County..”

While the event is currently only once a year, attendees hope it can happen semi-annually.

“We have regular attendees who are forever asking, ‘When’s the next one?’”

Kayla says to host more events, they need more large venues that are willing to host the events at no cost and also have parking for 400 or more.

“We give 100% away, and we are very proud of that. We are all volunteers with no overhead,” she says. “We raise the funds for our events, because whatever women give, we want to be able to look them in the eye and say that we are going to give 100% to a practical need.”

Since it first started, the Kindness Campaign has given away over $40,000 to women in need.

“We have a wonderful relationship with the tea, at Lenawee Community Foundation (LCF)! I am super grateful for what they do, especially because I’m not a business person. I am a homeschool mom and a pastor’s wife, with compassion for the poor in spirit,” Kayla explains. “The LCF made us a legitimate entity that can do things now that we couldn’t do before and so we are very grateful to them. They are a hardworking and fiercely-kind, female staff.”

Kayla says she is glad to have the opportunity to be involved in the Kindness Campaign and be there for people in need. The Kindness Campaign represents 100’s of women across Lenawee County, a dozen non-profits and more than 75 churches. “One of the mottos that we say is that we can’t prevent your storm, but we can hold an umbrella. And that is what we are committed to do!”

Nonprofits play a critical role in Hillsdale County and the surrounding areas. Love INC of Hillsdale County, Helping Hands Pregnancy Resource Center, and Domestic Harmony all serve crucial needs within the community and their dedicated staff make that happen.

Here is a glimpse into each of these important organizations and their dedicated executive directors.

Jessica Hurley Fawley, Love INC. of Hillsdale County

“I’ve worn just about every hat within the organization–board member, volunteer, Clearinghouse Coordinator, and finally, Executive Director since 2020,” says Jessica Hurley Fawley, the executive director of Love INC. of Hillsdale County.

Love INC partners Hillsdale County churches together to meet needs both big and small in the community.

“What makes us different from many other social services organizations is that we strive to speak to the whole individual rather than pare them down to their immediate needs,” Jessica explains. “We look at the spiritual, emotional, relational, and physical wellbeing of each person we talk to after Christ’s example. Our goal is to connect people with people because relationships are where transformation happens.”

Jessica first moved to Hillsdale in 2013 to attend Hillsdale College, where she soon also became involved in the community through volunteering.

“I learned a lot about the level of need in Hillsdale County and grew passionate about finding a way to develop the

community,” she says.

After graduating, she moved away briefly before moving back in 2018 when her husband got his dream job at the college. Soon, she was involved with Love INC.

“Growing up as a pastor’s daughter, I’ve seen firsthand the dilemma that pastors and church staff face when people show up at the door with needs,” Jessica says. “Love INC offers a unified, Christ-centered, holistic approach to benevolence that churches can trust.”

Bryce Asberg, Helping Hands Pregnancy Resource Center

Bryce Asberg, the executive director at Helping Hands Pregnancy Resource Center, said that after growing up in the Pacific Northwest, Hillsdale has become home.

“While I came here for Hillsdale College, it was not long before we decided to stay and make Hillsdale County our home,” he says. Following graduation, he took the job as executive director.

“The work that pregnancy centers do to support women and families is so important and a beautiful display of the love of Christ,” Bryce explains. “My role is to provide support and leadership to our fantastic team of volunteers and staff as they meet with, listen to, and mentor the women and men who visit Helping Hands.”

Helping Hands provides a wide-range of free and confidential services, from pregnancy tests and counseling to material assistance and fatherhood classes.

“Our work ensures that no one has to face difficult pregnancy and parenting decisions alone. Whether it’s an unexpected, stressful pregnancy or difficulty raising a teenager, our team of highly-trained mentors, client advocates, and sonographers love to serve and do it with excellence,” Bryce says.

He adds that this could not be done without the continued support of the community.

“I am so grateful for the support of this community—literally hundreds of Hillsdale County residents donate to our work so that we can offer our services for free to our clients. And on top of that, many give of their talents directly by serving as volunteers and even more remember us in prayer.”

When Hannah Jordan first began her role as the Executive Director of Domestic Harmony, she says she was grateful for the opportunity to serve the community she grew up in.

Domestic Harmony provides free and confidential resources for those experiencing domestic violence throughout the community. They do this through emergency shelter for women, counseling classes, rental assistance, and more.

“We are there for the victim,” Hannah says. “Nobody deserves domestic violence, so they deserve nothing but free and accessible help and support.”

After growing up with her father being a prosecutor and judge, Hannah says she was very aware of how necessary a proactive approach is.

“We have individual and group supportive counseling in our emergency shelter, but we also have a prevention education program,” she explains. “We want to create awareness and we want to promote healthy relationships and how there should be a quality of respect in each relationship.”

She adds that Domestic Harmony is trying to change the narrative around domestic violence.

“There’s a lot of victim blaming within our culture,” Hannah says. “We are changing that.”

Jonesville District Library Celebrates Its Sesquicentennial

The Jonesville District Library will celebrate its 150th anniversary this fall with several events that are open to the community.

“Our official birthday is November 20, but that is way too close to Thanksgiving, so we are sliding our events back into October,” says Laura Orlowski, director of the library.

The library will have three different events, each teaching about different aspects of life in the 1800s. Orlowski adds that she is excited to share about the library with the community, as it celebrates its sesquicentennial.

“It is exciting to know that the library has been a key part of the Jonesville neighborhood community for 150 years now,” she says.

Over the years since 1874, the library has played an important role in the lives of many generations.

“We have been in the same place for several generations and we have been serving this community to the best of our abilities,” Orlowski says. “It is fun to see how many people have fond memories of coming here as a child, or coming with grandparents, or just all the many different memories they have been sharing with us.”

The first event will be on Saturday, October 5, and will be a historical presentation open to adults in the community.

“It will be about what life was like in Jonesville in the 1870s,” Orlowski explains.

There are also plans to have live music.

The second event will be on October 12, also a Saturday.

“This event would be open also to all ages. It would be tea and snacks, not necessarily a high tea, but similar to a high tea,” says Orlowski. “Sarah Morgan is going to be with us, and she is going

to do a presentation on the Victorian dresses that they used to wear. She has a really nice collection of dresses, and so she’s going to explain all the different parts that women had to go through to get dressed up fancy.”

The third event will be on Saturday, October 19.

“That will be our actual 150th birthday party. We plan on having cake, ice cream, and music of some sort, and just make it a celebration day for us,” she says.

While the events are meant to be fun for the community, they are also educational.

“A lot of people don’t realize that we are so old,” Orlowski says.

The Jonesville Friends of the Library group is helping to organize all the events and have been a critical part of the planning. While those three events are open to all the community, there will also be a few other events that will be held throughout the month of October.

“We are going to do a scavenger hunt in the library,” Orlowski explains. “This would be more for the kids, but it would be open to all ages.”

There will also be a jar guessing game and a tee shirt design contest.

“We are going to have a variety of jars filled with different things, and you have to guess which ones have 150 items. Then, the people who get that right would be eligible to win some prizes,” says Orlowski. “Another fun thing we are doing is the tee shirt design contest, where the winning design will get printed onto tee shirts that we can then sell.” There will be a limited number of the commemorative tee shirts for sale.

History will take center stage at the celebrations.

“We will have copies of the Jonesville Independent newspaper, actual physical copies of that newspaper from the 1870s, along with a few other historic photos and documents that will be available for viewing here inside the library,” Orlowski says.

She adds that she is excited to see what the next 150 years bring.

“We will also be unveiling a new memorial honor plaque that we are going to be putting up on the wall. Then, people can purchase nameplates in memory of somebody who has passed, or in honor of somebody who hasn’t passed, or if they just want to see their own name up there,” Orlowski explains. “This is to celebrate our first 150 years and moving on into our next 150.”

The Silent, Cancer-Causing Gas Lurking in Many Homes

As Stanley Watras worked his shift constructing the Limerick Nuclear Power Plant in the mid1980s, he heard a radiation alarm which he later learned he set off. His new home had elevated radon levels, a gas produced naturally from the breakdown of uranium in soil and rocks. Since World War II, studies have shown longterm exposure to high levels of radon resulted in unusually high incidence of lung cancer. The Environmental Protection Agency (EPA) began monitoring radon levels nationally after other homes in Watras’ Pennsylvania community tested positive.

Today, radon is found in every state in the United States, as well as every county in Michigan. Southern Michigan has the highest risk for radon exposure, with more than 50% of homes tested in Hillsdale, Lenawee, and Branch County testing higher than the acceptable risk level by the Michigan EGLE.

Breathing radon gas exposes residents to small amounts of radiation which may damage the cells lining the lungs and increase the risk of lung cancer. Radon is the number one cause of lung cancer among non-smokers and the second leading cause of lung cancer overall according to the EPA, with the U.S. Surgeon General issuing a national health advisory on radon in 2005. The risk increases with the amount of time living in a radon-contaminated house.

“When we bought our home about five years ago, someone recommended getting our home tested for radon because it is so prevalent in southern Michigan,” said Hannah Sayles, a Hillsdale County resident. “We got the free test from the health department and our results were higher than the acceptable risk levels but we delayed hiring a mitigation company. Then my husband had a client whose wife lost her life from lung cancer but she never smoked, which was the reminder we needed to get this taken care of for the safety of our family.”

“It’s not uncommon to be called because someone has passed away from lung cancer who never smoked,” said Scott Manifold, owner of Southern Michigan Radon. “When the family is looking for answers, a doctor often recommends getting the house tested for radon.”

Radon gas can’t be seen or smelled, so the only way to know

whether you’re being exposed is to test for it. Radon enters the home through cracks in floors or walls and gaps in foundations around pipes, wires, or pumps undetected. “Any age of home can be affected, but newer homes often test higher for radon because they are more weather resistant,” said Manifold. “Many passive systems are improperly installed and may lead to more radon, but even the properly installed ones don’t guarantee the absence of radon. A passive system prepares the house for a radon mitigation system, making it easier to install a system guaranteed to reduce the radon levels.”

Radon test kits are available for free through the health department and MSU Extension office or you can buy a do-ityourself kit from a hardware store or online. If results are higher than 4 picocuries per liter (pCi/L), take steps to lower the radon levels as soon as possible. The solution for reducing radon levels is a vent pipe system that pulls radon from beneath the house and vents it outside above the roof line. The installation cost varies depending on the age of the house but averages $1,000.

“If you sell your house in the future, someone may test your house, discover it has radon, and you’ll have to install a mitigation system anyway,” said Manifold. “The seller always pays to fix it. If you’ll have to pay to fix it anyway, shouldn’t you be enjoying the benefits of better air quality?

Radon levels can vary greatly from home to home, so even if a neighbor’s test reveals lower radon levels, your home should still be tested. The best time to test for radon is during the winter months. “It’s a health risk factor you can absolutely control,” said Manifold. “If you are doing everything else in your life but not fixing your home for radon, you are still exposed to a potentially dangerous gas.”

“Many people in the area don’t know anything about radon. They’ve never even heard of it,” said Sayles. “For your health and your family’s health, this is a very serious health issue. Don’t delay testing.”

Avocado Feta Salsa

INGREDIENTS

2 Roma tomatoes, chopped

2 ripe avocados, peeled, pitted and chopped

¼ c. finely chopped red onion

1 clove garlic, minced

1 lime, juiced

⅓ chopped cilantro

1 T. red wine vinegar

1 T. olive oil

4 oz. crumbled feta (about 1 cup)

alt & pepper to taste

DIRECTIONS

In a bowl, gently stir together tomatoes, avocados, onion, and garlic. Drizzle lime juice over it to keep the avocados from browning as quickly. Mix in cilantro. Gently stir in olive oil and vinegar. Then stir in feta. Salt and pepper to taste. Cover and chill until serving. It’s best to make this close to when you’ll be serving it.

INGREDIENTS

2 cans organic garbanzo beans, one drained, one not ¼ c. tahini (you can substitute olive or sesame oil)

¼ c. lemon juice (freshlysqueezed or the bottled organic —NOT the reconstituted kind in the plastic yellow lemon)

3 cloves garlic, minced

1 t. ground cumin

½ t. cayenne pepper

1 T. minced jalapeño peppers salt & freshly-ground pepper to taste

1-4 T. water

INGREDIENTS

2 eggplants, sliced about ½” thick

2 large red bell peppers, seeded and chopped 2-6 cloves of garlic, minced (depending on how spicy you like it)

DIRECTIONS

Arrange eggplant slices in one layer on oiled or parchment-lined baking sheets. Sprinkle with chopped peppers and garlic. Season with salt and pepper and spray with oil. Bake at 350° for 30 minutes. Scrape into a bowl and mash into a spreadable consistency. Great on pita chips, flatbread, naan, etc.

Hummus

DIRECTIONS In food processor or blender, process the garbanzo beans, tahini, and lemon juice until smooth, adding water a little at a time to yield a creamy texture. Transfer to a bowl and stir in the garlic, cumin, cayenne, jalapeño peppers, salt, and pepper. Mix well. Cover and refrigerate at least 2 hours for flavors to blend.

Note: If you have a really good blender, the process is quicker. Put the beans along with the undrained can into the container first, then add everything else (start with just one tablespoon of water), and let ‘er rip! The garlic cloves can be added whole or just cut in half if your blender will process them thoroughly.

Check consistency and, if needed, add more water a little at a time until it’s how you like it. If the blending process gets completely hung up, drizzling in some additional water should get everything moving again.

One Pan Balsamic Chicken

SAUCE INGREDIENTS

⅓ balsamic vinegar

2 T. honey

2 T. oil such as olive or avocado

2 cloves garlic, minced

1 t. Italian seasoning

1 T. Dijon mustard

TOMATO MOZZARELLA MIXTURE

8 oz. grape tomatoes, halved

8 oz. fresh mozzarella balls (ciliegine or pearls)

2 T. finely chopped fresh basil

CHICKEN INGREDIENTS

2 lb. skinless, boneless chicken breasts, pounded to even thickness

2 T. avocado or other highheat oil

DIRECTIONS In a bowl, whisk together the sauce ingredients. Season with salt and pepper to taste. Set aside. In a separate bowl, toss together the tomatoes, mozzarella, and basil. Season with salt and pepper to taste. Set aside.

Preheat oven to 400°.

Heat oil over medium-high heat in a large, oven-safe skillet. Season the chicken all over with salt and pepper to taste. When pan is hot and oil is shimmering, add the chicken to the skillet in a single layer. Cook for 1-2 minutes on each side or until lightly golden brown. Add the balsamic sauce mixture. It should quickly come to a simmer. Use a wooden spoon to scrape up any brown bits from the bottom of the pan.

Immediately remove the pan from the heat and add the tomato mozzarella mixture over the chicken. Bake uncovered for 18-23 minutes or until chicken is fully cooked through. (Internal temperature should be 165°.) Remove from oven and let rest for 5 minutes before serving.

Salt and fresh black pepper (Kosher salt is recommended)

Notes: The recipe author recommends cutting the ciliegine in half. Our staff member who has made this dish says that she doesn’t add the tomato and mozzarella mixture until 5-6 minutes before the oven time is up—otherwise, it kind of melts away and the flavors lose impact. She also likes to serve it over rice.

2 c. all-purpose flour

2 t. baking powder

½ t. baking soda

½ t. salt (kosher preferred)

½ c. unsalted butter at room temperature, plus more for greasing the pan

¼ c. extra virgin olive oil

1½ c. sugar

2 lemons, zested and juiced to yield ¼ c. juice

3 large eggs, room temperature

1½ ricotta cheese, room 1temperature

t. vanilla extract

powdered sugar for serving

Note: You will need a 9” springform cake pan for this recipe

Lemon Ricotta Cake

DIRECTIONS

Preheat oven to 350°. Liberally grease the bottom and sides of the pan with butter. Line the bottom of the pan with parchment paper and grease the paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

Using a stand mixer with paddle attachment or a large bowl and a hand electric mixer, beat the butter, olive oil, sugar, and lemon zest on medium speed until light and creamy, about 3 minutes. Add the eggs to the mixture one at a time, beating well and scarping the bowl with a spatula between each addition. Add the ricotta cheese and mix on low until full incorporated. Use a spatula to fold in half of the dry ingredients to the ricotta mixture. Pour in the lemon juice and vanilla extract and gently stir to incorporate, making sure to scrape the bottom and sides of the bowl. Add in the remaining dry ingredients, mixing with the spatula until just combined. Pour the batter into the pan and smooth the top. Bake for 50-55 minutes or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool on a wire rack for 20 minutes. Run a knife around the edges of the cake. Release the spring and remove the outer ring, then transfer the cake onto the wire rack, peel off the parchment paper, and allow it to cool completely, about 1 hour. Dust with powdered sugar before slicing and serving. The cake must be completely cool or the powdered sugar will melt into it a disappear.
