I share some of the life styles of the Appalachian peo­ ple. When I was growing up we didn’t have much but we had a lot of love and food on the table from hard work on the farm. We had lovely parents - 11 children in all so I can understand these Appalachian families and the CAP families all doing a great job. May God Bless all of you for sharing your stories. It brings back many great but hard memories.

“Super Tuesday”, February 5,2008, was a big day for news. All the television stations and radio broad­ r,

the South and Midwest it was difficult to keep up with the tornado warnings that were popping up every­ where. For those o f us living in rural communities without warning systems, it was a long night. Without a weather radio, weather news was hard to come by. On Tuesday, February 5, many communities in the South were struck by tornadoes. Many commu­ nities in Tennessee were devastated by this band of storms. The Christian Appalachian Project awoke on Wednesday ready to enact our disaster relief efforts.

We arrived in Macon County, Tennessee on Monday, and by the first Friday night CAP staff and volunteers had contributed 1,480 hours o f work, not including the travel time. On average, we had 35 responders each day, including many individuals and groups from around the country.

Miracles never cease when responding to disasters. This disaster was no different. While assisting a farmer whose bams and buildings were demolished, but luckily the houses were spared, it was determined that a more experienced roofer was needed. The three houses on the farm belonging to his mother, his son and his own home had considerable damage. Part o f the housing crew was still working on another home and needed to be there in order to complete those repairs before they were

scheduled to leave. They were just get­ ting the ladders and other materials ready when a truck stopped. It was a Mennonite family (father, mother and son) from west­ ern Kentucky and the family had no idea where they were going to end up when they saw us. Emanuel, the father, asked if they could work with CAP’S group. Emanuel is a carpenter and an experienced roofer! The mother and son were thrilled to wear CAP’s hard hats and vests (embossed with the Christian Appalachian Project logo). When this job had been completed, the family left wearing CAP’s hats and vests and Emanuel now plans to help out at WorkFest.

A CAP community volunteer from Washington State found a John Deere supplier that agreed to donate a backhoe needed for cleaning property. The volunteer owns his own crane company and is a heavy equipment operator. However, he was scheduled to leave on Thursday. The backhoe had been such a tre­ mendous help that the other CAP volunteers hated to see it just sitting idle. As the CAP gathered to discuss and pray for a solution a group from Virginia called to ask if they could bring an additional person. He had just called them to see if there would be room. This community volunteer from Virginia Beach was also a heavy equipment operator! Prayer can certainly bring about miracles.

The Jubilee Worship Center in Westmoreland, Tennessee, an inter-denominational faith commu­ nity, graciously hosted the CAP group during their stay. They insisted on feeding them, even though the group offered to purchase their own food and cook for themselves. In addition, the community turned up

At Sunday morning services the pastor spoke about service and mission and used the Christian Appalachian Project as an example, encouraging his congregation to join us when pos­ sible and praising their efforts with helping to prepare meals. He also mentioned that he had received several calls from other churches in the area telling him what he should or should not do. One church denomina­ tion wanted to use his church to house their groups and give him a donation to cover expenses, but had stipulations attached. He declined their offer. Some in the congregation had questioned his decision because funds were tight. Those o f us from CAP in attendance that morning were stunned when the pastor told the congregation that the Christian Appalachian Project had just given him a donation that morning that was the exact amount offered by the church that he had turned down earlier in the week.

CAP’s Disaster Relief often experiences the calm­ ing of the storm as experienced by the disciples of Jesus when they were traveling by boat to the other side of the lake. Experience o f miracles on an almost daily basis certainly deepens one faith and builds trust that God will provide.

Wanting to pass on her faith and the value of sharing what we have with those in need, Melinda encouraged her three daughters to start saving pen­ nies last January. Melinda said the girls were participating in a “Pennies from Heaven” project and filled their donation jar throughout the year. Even when they had guests at their home the girls would explain their project and ask the guests to contribute to the jar. Melinda wanted the girls to participate in the Christmas Basket distribution so that they would see how their donation will make a difference. The girls saved 1,950 pennies during the year. CAP truly appreciates the efforts of these special young women.

Margarete was bom Febmary 23, 1951 in Cincinnati, Ohio. She is 57 years old.

Margarete never knew her father; her mother died of cancer at age 27 when Margarete was only six years old. After her mother’s death, Margarete lived with her maternal grandparents in Manchester, Clay County, Kentucky until she was 16 years old.

When she was 16, her grandparents asked her to leave home so she went to Cincinnati look­ ing for a babysitting job.

During her stay in Cincinnati, Margarete spent most of her time homeless even during six years of employment at a nursing home. She married Claude Allen in 1974, and shortly thereafter, the couple moved from Cincinnati to Salyersville, Magoffin County, Kentucky. Margarete began caring for her in-laws and for four of Claude’s eight children from previ­ ous marriages. Margarete’s daughter Lisa made five children in the household.

During the years that followed, Margarete and Claude had four additional children, three daughters and a son.

Claude passed away in 2000 and her in-laws are also deceased, but she isn’t alone on the family farm. She has a broth­ er-in-law, Wayne Allen, that lives next door and two of Margarete’s daughters,

Lisa and Markquettia, also live next door. Margarete has 13 grandchil­ dren, 10 o f these are Lisa’s six and Marquettia’s four. She also has 12 step-grandchildren (from the four stepchildren she reared).

With a heart to help others, Margarete volunteers two days a week at the local Catholic Church’s outreach store. Her hobbies include sewing quilts by hand but her eye­ sight is worsening making quilting harder to do. She also has osteoporosis resulting in some physical limitations.

Margarete is a CAP Elderly Program participant as is her brother-in-law Wayne. CAP plans to make the following repairs to Margarete’s home: replace shingles on part of the roof; replace vinyl siding and possibly hang OSB on exterior walls before install­ ing the vinyl siding; repair ceilings in three rooms; replace floors in three rooms; replace up to six interior doors; replace kitchen base cabinets, countertop, sink, and faucet; remove bay window and replace it with a smaller window; remove glass sliding door and replace it with a 36” metal door; paint the three repaired ceil­ ings and touch-up walls where needed; and build a closet and move the water heater from the porch to the newly built closet.

Orange Cream Cake 1 package yellow cake mix 1 package (4-serving size) lemon instant pudding filling 1 1/3 cups sour cream, divided 3 eggs 1/4 cup oil 3/4 cup water 2 tablespoons grated orange peel 1/4 cup powdered sugar 1 tub whipped topping, thawed 1 can (11 oz.) mandarin orange segments, drained Preheat oven to 350 degrees and lightly grease/flour 2 round cake pans. Pour cake mix, dry pudding mix, 1 cup of the sour cream, eggs, oil, water and orange peel in a large bowl and beat with mixer on low. Scrape sides of bowl and mix until thoroughly combined. Pour into round cake pans and bake for 25 to 30 minutes. Let cakes cool completely.

Mom’s Chicken Broccoli Dish 1/3 cup salad dressing 1 1/2 lb. boneless skinless chicken breast, cubed 2 cups water 1 package chopped broccoli 1/2 lb. cheese, cut up 2 cups instant white rice, uncooked Heat salad dressing in large skillet on medium heat. Add chicken breast and cook. Stir until throughly cooked.

Add water, broccoli and cheese and boil. Stir in rice and simmer for a few minutes; remove from heat.

Beat remaining 1/3 cup sour cream and powdered sugar in bowl with wire whisk. Gently stir in whipped topping.

Place 1 cake on cake plate and spread with half of the whipped topping mixture. Top with orange slices. Place second layer on top and cover with remaining topping and slices. Refrigerate until ready to eat.

Combine cream cheese and milk in bowl and whisk until smooth. Stir in remaining ingredients and blend well. Pour mixure into a 13 x 9 baking dish sprayed with cooking spray. Bake for 35 min­ utes or until golden brown.

Strawberries and Cream Swirl Cake 1 package white cake mix 1 package strawberry gelatin 2/3 cup sour cream 2/3 cup powdered sugar 1 tub whipped topping 1 1/2 cups sliced strawberries Preheat oven to 350 degrees. Grease/flour two round cake pans. Prepare cake as directed on box. Pour half the cake batter into separate bowl and add dry gelatin mix. Stir mix­ ture until well blended. Spoon half of the white cake mix­ ture and half the pink mixture side-by-side in each cake

pan. Swirl mixtures together using a fork. Bake cake for 30 minutes. Let cakes cool completely before frosting.

Mix sour cream and powdered sugar in bowl until well blended. Gently stir in whipped topping. Place one cake layer on cake plate and cover with 1 cup frosting mix­ ture. Top with 1 cup of sliced strawberries and cover with remaining cake layer. Spread top and sides of cake with remaining frosting mixture. Top with remaining 1/2 cup strawberries just before serving.

Soar Cream later Bake 1 container (16 oz.) sour cream 1 package shredded cheddar cheese 1 can cream of chicken soup 1 cup chopped green onion 1 package hashbrowns, thawed 1 package com flakes cereal, cmshed 2 tablespoons butter Preheat oven to 375 degrees. Mix sour cream, cheese, soup and onions. Add potatoes and mix well. Spoon into greased 13x9 baking dish. Bake for 45 minutes. Toss cmshed corn flakes with butter and sprinkle over the potato dish. Bake for an additional 15 minutes.

The welcome and care of each staff member reflects the words o f Christ that have taken root in the philoso­ phy o f this home. The name on the mailbox reads Rainbow Respite Care Home. Since 1988 people with special needs have been brought here by their families for a week or a weekend.

They have found rest and a great deal more.

Program manager Gloria Jordan remembered John with a smile. “John has been coming here since we first opened. He is a paraplegic and was having a great deal o f difficulty ac­ cepting and dealing with his circum­ stance. His arrival here marked the first time he had been out o f his home for four years. It was very hard for him

in the beginning and he spent virtually all his time in his room. He did come out to eat and smoke,” she laughed, “because we wouldn’t allow him to do that in his room. We never stopped inviting him to participate in every activity we had, though. Years went by with little or no sign o f interest from John.” Gloria’s eyes brightened, she smiled, and tapped her finger on the table. “But this year John went to the mall with us.”
