The aroma of homemade bread baking in the oven is enough to compel many people to get in the kitchen and bake. That aroma is even more welcoming when hosting friends and family overnight, as there’s nothing quite like waking up to the smell of freshly baked bread coming from the kitchen. Hosts who want to treat their guests to such aromatic mornings can try the following recipe for “Banana and Coconut Loaf” from Linda Collister’s “Quick Breads” (Ryland, Peters & Small).
Banana and Coconut Loaf
Makes 1 medium loaf
3⁄4 cup unsweetened shredded coconut
7 tablespoons unsalted butter, softened
1⁄2 cup packed light brown sugar
Grated peel of 1 unwaxed lime
2 extra-large eggs, beaten
3 medium bananas, very ripe (about 1 cup peeled)
3 tablespoons plain yogurt (not fat-free)
2 cups unbleached allpurpose flour
1 teaspoon baking powder
1⁄2 teaspoon baking soda
A good pinch of sea salt
1 8 x 4 x 21⁄2-inch loaf pan, greased and base-lined with parchment paper
Preheat the oven to 350 F.
Put the coconut in an ovenproof dish and toast in the
heated oven for about 3 minutes until a light gold color. Let cool until needed. Put the butter into a large bowl, add the sugar and the grated lime peel. Beat well with a wooden spoon or electric mixer. Gradually beat in the eggs.
Using a fork, mash the bananas fairly roughly so they keep a bit of texture. Add to the bowl together with the coconut. Halve the lime and squeeze out the juice, then add 1 tablespoon of the juice to the bowl with the yogurt.
Mix in gently.
Set a strainer over the bowl and sift the flour, baking powder, baking soda, and salt onto the mixture. Mix in well, then scrape the mixture into the prepared pan and smooth the surface.
Bake for about 1 hour until golden and a skewer inserted into the center of the loaf comes out clean. Carefully remove from the pan and let cool on a wire rack. Serve thickly sliced. Best eaten within 3 days. Can be frozen for up to 1 month.

1 box (1 pound) pasta noodles, such as cellentani, elbow or penne
2 cups chopped broccoli
2 cups chicken broth
1 cup heavy whipping cream or half-and-half
2 cups mozzarella
1/2 block pasteurized cheese product, cubed
1 tablespoon garlic powder
1 tablespoon onion powder
Salt, to taste
Pepper, to taste
Topping:
2 cups breadcrumbs
1/2 stick butter
1/2 cup grated Parmesan cheese
• Heat oven to 350 F.
• In large pot, cook pasta according to package instructions. Drain well then add broccoli, chicken broth, cream, mozzarella, pasteurized cheese product, garlic powder and onion powder. Season with salt and pepper, to taste. Mix well.
• To make topping: In bowl, mix breadcrumbs, butter and Parmesan cheese.
• Pour macaroni mixture into large baking dish then sprinkle with breadcrumb mixture. Bake 30 minutes.

• Lay two tortillas on baking sheet lined with parchment paper.
• Spread chicken mixture over both tortillas. Place second set of tortillas over chicken mixture. Spread guacamole over top tortillas. Place third set of tortillas on top and spread refried bean mixture over tortillas. Place fourth set of tortillas on top and sprinkle shredded cheese over tortillas.
• Bake 10 minutes until cheese is melted.

Coyotes are not a friend of any farmer, rancher, or hunter. They are equal opportunity predators. They will pursue your cat or your cattle. They are satisfied with fish or fowl. And they love a young tasty fawn. Needless to say, every opportunity to get rid of one should be taken. The rest of creation will thank you. There are however some places that make it a sport to hunt these scavengers. Texas is one. I have had a few opportunities to go with those who know how to call in these critters to within rifle or shotgun distance. One of my recent trips was with Chase and Sam, and Ranger. Chase and Sam are the guides. Ranger is a special bred coyote hating dog. He stands watch while Chase and Sam are calling, and when a coyote appears, Ranger begins the chase to act as a live decoy until I can get a shot off. You can tell how much Ranger loves his job. On this recent trip, I was able to get a shot off at our game, and before the yote died, Ranger decides he’s going to get a taste of a little coyote meat. So, the fight ensued. Ranger was left with a few bite marks, but all the less for wear and tear. But what I noticed was how this fight didn’t leave Ranger wanting less but wanting more. Ranger is not a big dog, and the coyote gave him a little butt-whoopin’. But Ranger came back, got on his guard again, and watched for his next opportunity. And I thought about the price he paid for the thrill of getting in the game.
There’s no doubt the safest place is where you can remain intact, and with no bite marks. The safest place is one where surety trumps uncertainty. The safest place is living in the center of the safe confines of comfort. It’s where porch dogs live. One person put it this way. “If you’re not living on the edge, you’re taking up too much room.” And while we may not be called to live a haphazard life, we are called to live by faith. And that means recognizing that sometimes we might come back home with a few wounds, but once you get a taste of the fight, you’ll never be satisfied staying on the porch.

(4th and Final Part of “The God of Miracles Series)
For many of us, financial struggles can be a significant source of stress and anxiety. We work hard to make ends meet, but sometimes it seems like no matter how much we earn, we’re just barely scraping by. However, throughout the bible and even personally, there are stories of God’s supernatural provision. For example, an older couple at my church presented 2 bills. One bill showed that they were $7000 dollars behind on their mortgage. The other showed that they had a zero balance after fasting and praying for 2 days. They don’t have any idea how it got paid, except God performed a miracle. Psalm 37:25 (NLT) says, “Once I was young, and now I am old. Yet I have never seen the godly abandoned or their children begging for bread.”
The Lord Will Provide Jehovah Jireh, meaning “The Lord Will Provide,” is a beautiful name that reveals God’s incredible faithfulness and provision in our lives.
In Genesis 22:14, after Abraham’s encounter with God on Mount Moriah, he declared, “Jehovah Jireh,” acknowledging how God provided a ram to sacrifice instead of his son Isaac. This story highlights God’s provision in times of need. Just as He provided for Abraham, we can trust that He will meet our needs too. Psalm 23:1 (AMP) says, “The LORD is my Shepherd [to feed, to guide and to shield me], I shall not want.” Isn’t it comforting to know that no matter our circumstances, we can rely on Jehovah Jireh to provide exactly what we need?

Why does God perform financial miracles? First and foremost, God desires that we know that He cares deeply about our well-being. In fact, God is very meticulous about every detail of our lives. Luke 12:7 (CEV) says, “Even the hairs on your head are counted. So don’t be afraid! You are worth much more than many sparrows.” Secondly, God wants us to trust him. When we keep our eyes on Him, we’re able to release our fears and worries about money, knowing that He will take care of us. Lastly, God wants to give
us more than enough so we can be a blessing to others.

Third rabies case reported in
On August 29, 2024, the Cleveland County Health Department was notified of a skunk that tested positive for rabies. This is the third rabid animal identified in the county this year. The animal was found at Kee Lane, Shelby. Any person bitten or exposed to potentially infectious saliva from this animal should contact their healthcare provider or the local health department for a rabies risk assessment. You may contact the Cleveland County Health Department at 980-484-5169 or 980-484-5100. Rabies is a fatal yet preventable disease if post-exposure prophylaxis (PEP) is administered. Rabies is transmitted by the bite of an infected animal or via contamination of open wounds or mucus membranes with potentially infectious material such as saliva.
Prevention of rabies is based on the protection of susceptible animals and people and the appropriate management of persons and animals exposed to rabies:
• Vaccinate pets. Following NC State Law, all dogs, cats, and ferrets must be vaccinated against rabies and wear a rabies tag. Cats are the most commonly identified domestic animal with rabies.
• Control measures for pets exposed to rabies: If pets are exposed to rabies, they should receive a booster dose of rabies vaccine if they are currently vaccinated at the time of expo-
sure. If pets are not currently vaccinated against rabies when exposed, the animals will be euthanized or quarantined for six months in accordance with state law.
• Control measures for persons exposed to rabies: Seek medical guidance from your healthcare provider or the local health department if you believe you have been exposed.
• Limit stray and feral animals. In Shelby, Kings Mountain, Boiling Springs, and Grover all dogs must be kept on a leash. People should not approach stray or feral dogs or cats. Feral cat colonies should be intensively monitored, and their location should be reported to Cleveland County Animal Services.
• Leave wildlife alone. Raccoons and other wildlife serve as the reservoir for rabies in North Carolina.
Rabies occurs throughout North Carolina. Anyone who sees an animal demonstrating unusual behavior should call the Cleveland County Animal Services at 704-481-9884.

He is survived by his wife, Aileen Dixon Beam; his children: Scott Beam (Janice), Paula Adams, Tracy Goins (the late Rodney Goins), Bettyann Gibson (Darren), and Haley Stutzman (Dan); Aileen’s children: Kay Yarboro (Robert), Denise Arrowood (Chuck) and the late Don Dixon (Terry); and grandchildren and greatgrandchildren.
She is also predeceased by her husband, Roland W. Frank; husband, Jim Eaker; sons, Roland W. Frank, Jr and Christopher Frank; two grandchildren; and nine siblings.

She is survived by her husband, Doug Houser, of the home; children: Donna Cody and husband Bobby of Shelby, NC, Teresa LeRette and husband Scott of Papillion, NE, Lori Moss of Gastonia, NC, and Wanda Price and husband Gordon of Shelby, NC; brother, Norman Camp and wife April; seven grandchildren and three great grandchildren.
Funeral service was held September 1, 2024, at Anthony Grove Baptist Church with Dr. Dennis Bean officiating. Interment was held at Grover City Cemetery, Grover, NC.

Prepare your garden for winter’s onslaught
Individuals who don’t live near the equator or in another warm climate know that winter will rear its chilly head this year. Cold temperatures and snowy conditions may be excellent for skiing and sledding, but gardeners recognize these conditions are not ideal for their plants.
The inevitable slowing of activity in the garden during fall marks a time to shift attention from constant plant care to preparing the landscape for next season. It may be tempting to simply let Mother Nature take over, but a little pre-winter TLC can ensure gardens make it through winter unscathed.
Remove spent plants
Decomposing organic material is the basis for compost and other fertilizers. However, vegetable plants that are left to sit can lead to decay in the garden. Decaying plants can serve as hosts for pest populations and diseases. Rotting vegetables also can drop unwanted seeds into the soil, which eventually can strip nutrients that normally would go to next year’s crops.
Ornamental plants and perennials can be cut back in fall. Cut down stalks and remove leaves.

Seven students from Pinnacle Classical Academy competed in the 12th annual S3DA (Scholastic 3-D Archery) Eastern 3D National Championship in Rend Lake, Illinois, on June 13-16.
Duncan Pittillo finished in second place in the Eagle Open Class competition.
"We're so proud of Duncan and the other members of the Thunderbirds archery team," said Dr. Shelly Shope, the school's headmaster. "Their persistence and hard work, combined with the support of their families and coaches, have really paid off."
