PUBLISHER’S LETTER Stronger Together Normally I sit down to write the publisher’s note and find myself wondering where time has gone because usually it seems to me as if I’d just written my note for the previous issue. So I often have wished time would slow down so that I could catch up, but now I find once again the truth about that warning of being careful about what you wish for….

I know that I’m not alone in being so very inspired by this community’s response and its optimism. An extension of lifestyle and livelihood is your wardrobe budget. In other words, designer pieces made from highend fabrics may be affordable for some people but beyond the economic reach of others. That said, if sweaters are a staple in your wardrobe, you may want to invest in a great cashmere pullover that can go the distance year after year.

Remember, you’re investing to build your portfolio of staples. That means any piece suitable for your lifestyle that you can potentially wear for years, such as a well-tailored pair of black slacks, a classic white cotton button-down blouse, a pair of black leather pumps with a moderate heel height and even a pair of high-quality jeans built to last.

Once you determine what garments are staples for you, invest in better-quality versions of them.

The items in which you invest are ones that you know you can wear in many ways, including with an au courant item or two so that you can be on-trend should you choose. Above all, these investment pieces are items that you’ll never tire of.

Be mindful too of the fabric and workmanship when shopping for investments. Silks, wools and even linen and cotton can cost more, and the time and skill of creating the garment can also add to the price. That’s why being able

to touch the materials and to inspect the fabric drape, the stitching and the finishing is so important. A $350 blouse should not look and feel like a $30 one.

Ideally your portfolio of staples should be fairly stable and not leave you desperately seeking new looks. Therefore, when you’re shopping for investment pieces, ask yourself these questions: • Does this item offer me a lot of versatility so that I can wear it several different ways?

• Will I have enough opportunities to wear this item to really get a true return on the investment I’d make if I buy it?

If your answers are “Yes!” then you’ve found a gem for your portfolio. If your answers to those questions reflect any uncertainty you feel, then put the item back on the rack or shelf and move along. No matter what the price point is, any piece you buy that goes unworn has no value.

If you’re looking for quality, durable clothing, avoid the lure of cheap fast fashion because you get what you pay for. You won’t find high-quality fabrics and skilled sewing here. These trendy pieces are meant to be disposable and typically don’t last beyond a season—sometimes even going out of style faster. Sometimes they may not survive the first trip through the washer.

Ultimately, the best investment for your long-term wardrobe is to buy only garments and accessories that you really love in the best quality that you can afford.

FÉLIZ-GRIMM SHARES HOW TO MAKE THE DINING ROOM RELEVANT AGAIN

The dining room has survived the TV, open floor plans, smartphones and other distractions of civilization over the past three-quarters of a century or so. The persistence of the dining room proper or dining room concept, however, does not necessarily mean the partaking of meals takes place there.

With recent events keeping many families homebound, the dining room and its table and chairs that had fallen into disuse might have been rediscovered—and found to be lackluster. Fortunately, Heidi Féliz-Grimm, a senior designer with Martha O’Hara Interiors, knows how to draw folks back into the dining room.

“Today’s dining room tends to be a more causal affair, frequently used for multiple purposes and requiring less pomp and opulence in a home.”

Drawn In by Design One way to reclaim the dining space is to create a sense of connection and flow from the kitchen to the dining room and then even to the living room.

For a home with wall-defined rooms, Féliz-Grimm believes this sense of connection can be achieved with color palettes that flow together. Often wall colors are the same for the kitchen, dining room and perhaps too the living room, she notes. Furniture placement can obviously be used to encourage traffic patterns from room to room to room. So too can lighting, window treatments and even the finishes of hardware and other items used in all three rooms.

“A consistent level of formality can go a long way to bringing your dining room into the ‘lived-in’ part of your house.”

In a home with an open floor plan, furniture placement plays an even bigger role because it defines the functional areas in the absence of walls. Naturally, that placement also needs to lead residents from one purpose-defined area to another. Lighting too can help define each space.

The designer calls area rugs essential for defining spaces in open floor plans. “Make sure your area rug is large enough for the space it’s in,” she advises.

Share and Share Alike What an open floor plan should definitely avoid is using dramatic wall color changes to define each area. “It’s jarring and creates a disjointed flow.”

The closer and more physically connected these spaces are, Féliz-Grimm recommends that their interior décor be similar but not exactly the same.

“When the two spaces share a design scheme, they are usually viewed as a connected space and as extensions of each other,” the designer explains. “The wall colors and window treatments are the same. The light fixtures are complimentary. The level of formality and polish are consistent.”

different hue or level of color saturation in one room. “Each room or space can have a different color scheme with maybe one or two colors that flow through each space.”

Another way is to focus on similar lines or shapes in the furniture selected for the kitchen, the dining room as well as the living room. A third option? Give each space a wow item or design focus.

“Ultimately,” asserts Féliz-Grimm, “you want your spaces to coordinate and flow, not to match.”

A Seat at the Table Maybe the dining table is to blame for the disuse of the dining room. Maybe it’s too big or too small. Maybe it became a catchall for household clutter or a desk for a household member. Maybe the chairs just never were really comfy.

Or maybe it’s just a relic of a bygone era that’s not aged well.

If the dining room has taken on additional uses as an office, a craft room or even a playroom, there’s no need to declare the dining table off-limits to any activity that is not eating. Instead, recommends installing built-in storage 22 WATERWAYS | June 2020

or adding other storage furniture to the space so that the accoutrements of the non-dining activity can be stowed away but remain at the ready for after the meal.

If the look and feel of the dining room table and chairs need upgrading, she recommends taking into account how formal the feel of the space is and how many different functions these furnishings must play.

Current trends in dining room furnishing include clear acrylic and metal. She sees dining chairs that are less bulky and lower with more open and simple lines. Some of the design firms’ U.S. clients are following the trend in Europe by selecting dining room furnishing with curved lines and upholstered chairs.

“Design can do almost anything, so long as you’re committed to the end result,” Féliz-Grimm says. “We can make dining rooms more functional, welcoming and comfortable,” but ultimately only the homeowners can decide if a dining room adds value to their lives.

The grand building was designed by architect Frederick Ernst Ruffini, who also designed the Millett Opera House in Austin and a few other Central Texas county courthouses. The museum inside the old courthouse is open every day.

The Buggy Barn Museum (buggybarnmuseum.com) is devoted to historic horse-drawn transportation. It has more than 140 types of buggies, carriages and wagons. Items from its collection have even been used in movies such as the True Grit remake and There Will Be Blood. Visitors are welcome Monday through Saturday.

Old Blanco County Courthouse

Shop ‘til You Drop Lovers of locally made goods would be wise to plan their trip to Blanco for one of the city’s Market Days. Taking place on the third Saturday of the month from March through November, Market Day is a chance to peruse booths selling handmade crafts such as jewelry and ceramics.

You can do some great shopping at Rain Bird Gallery (rainbirdgalleryonline.com). It offers an eclectic selection of rustic and antique items, from home décor to collectibles, as well as original artwork. You may just find your new favorite piece here.

With a little more than 18,000 acres of blue lagoon snaking up the western edge of Austin, Lake Travis offers nearly limitless opportunities for fun and relaxation. From boating and water sports to lakeside adventures and dining, you can find ample opportunities to unwind for a day, for a weekend or longer.

If even this destination is too populated, try a secluded cove such as Cow Creek Arm. Located on a peaceful bend in the lake, this cove backs up to the Balcones Canyonlands National Wildlife Refuge. Be aware that reaching this cove requires a bit of a journey.

Float Away Park It The shores of Lake Travis boasts some of the most breathtaking natural areas in Central Texas. Pace Bend Park (parks.traviscountytx.gov) offers visitors such activities as dedicated swimming coves, hiking and cycling routes as well as horseback riding. It’s also a destination for daredevils. Want to kiss the sky? Try cliff diving from one of the cliff faces. Just be sure to ask some more experienced folks about which spot is currently the best place to jump safely.

If Pace Bend is too crowded, try Windy Point Park (windypointpark.com) in Bob Wentz Park. This familyfriendly park welcomes picnickers, seekers of leisure in the shade, campers, swimmers and more. In fact, the protected swimming and diving areas are only surpassed by the scuba zones that attract divers from far and wide. The park conveniently has on-site scuba air fills.

Looking to get your party on? Head to Devil’s Cove, which is renowned for partygoers looking to tether their watercraft together and float the day away.

Rosemary and Austin Ewald are the ultimate foodie couple.

She’s always loved making pickles, jams and baked goods. He’s a chef by trade, having plied his culinary talents at Jacoby’s Restaurant & Mercantile and its sister restaurant, Grizzelda’s, before moving on to learn the art and science of baking bread at Easy Tiger. That the two of them would open a shop to offer elegant cheese and charcuterie platters made with ingredients from all over the world is a no-brainer.

Initially the Ewalds aimed to start a food truck that would serve picnic boxes. They were inspired Ana byChakravarty, the grazing LeeAnn Torrez platter scene in Australia and New Zealand. This popular dining movement features extravagant platters of cheese, meats and fruits. However, they ultimately decided not to go the food truck route.

The duo launched their brainchild, SPREAD & CO., at the end of 2016. They focused initially on creating and delivering cheese boards. Word of mouth helped the business grow.

“People were bringing them to events and parties,” says Rosemary. “Boards definitely bring people together and get them talking.”

All on Board While SPREAD & CO. offers a variety of custom boards, the cheese and charcuterie one is by far its most popular.

The cheese boards typically feature a soft-ripened brie, aged cheddar and a blue cheese—“cheeses that people are familiar with,” Rosemary notes. “But we also will throw in a wildcard cheese, something we just got in or a seasonal option.”

Cheese made from cow’s milk, goat milk and buffalo milk are all on the menu. The restaurant uses cheeses primarily from Vermont, California, Wisconsin and Texas, from Jasper Hill Farm, Cypress Grove, Uplands Cheese Company and Cowgirl Creamery.

For folks looking for an international grazing experience, SPREAD & CO. has you covered. “In the beginning, we were focused on American-made cheeses, but we also have cheese from all over.” The restaurant now offers imported cheeses from the Netherlands, Italy, France and Switzerland.

The other goodies that feature on the boards are made in-house, including the pickles and bread. The jams rotate seasonally and include such flavors as honey loquat, spiced tomato and mixed berry.

Also available are crudité offerings with house-made green goddess dressing, hummus and pimento cheese dip, a winning combo during the hot summer months.

Take It Easy Getting a board from SPREAD & CO. makes entertaining a snap. A board is easy to customize and is a solid option for summertime pool parties, graduation gatherings, office celebrations and other events. “[The wooden serving board] comes in a cake box on a little board that can be tossed or recycled,” Rosemary explains.

“There’s silverware, jams and mustards, fruit and pickles, plus colorful, edible flowers, so it’s a centerpiece all on its own.”

A large board includes four or five types of cheese, three charcuterie selections along with small pots of jam, honey, pickles. Mustard. Artfully placed are olives, nuts and fresh fruit and herbs. This feast can serve about 20 people.

The chef fell in love with the versatility of seafood somewhere between days spent fishing off a pier in Port Aransas and his training in a Japanese kitchen. He’s as likely to serve up local sheepshead bycatch grilled with a simple dusting of salt and pepper as he is a carefully balanced combination of fluorescent mango, raw scallops and punchy serranos.

Hajimaleki, who grew up in Iran, appreciates seafood for its flexibility in flavor. “You can incorporate some Japanese influences or some Vietnamese influences,” he shares, “so there are a lot of different things that happen.”

Sometimes he finds inspiration closer to home. District Kitchen + Cocktails serves “N’awlins” barbecue shrimp, which is a comforting and irresistible combination of smoke and spices. Part of the appeal of simple barbecue shrimp, Hajimaleki explains, is from the barbecue itself, which he says is ideal for a hot climate. Not only does a grill impart a dimension of flavor that cannot be coaxed out of an oven or a frying pan, but it keeps the heat outside.

Whole-ly Delicious It’s no secret that a quickly seared fish makes for a delightful dinner, but the trick to making it a masterpiece is the stuffing. The chef notes that layering ginger and lemongrass in the cavity of a white flaky fish infuses the aromatic flavors throughout the flesh, thus transforming each bite into an indulgence. To accomplish this feat, a fish fillet won’t cut it.

“I definitely always recommend cooking the fish whole.”

Hajimaleki doesn’t limit himself to fruits de mer either. He believes seaweed is underestimated as a component of dishes.

For example, adding pulverized nori or kombu, a type of kelp, to sauces and aioli not only contributes an umami layer that is difficult to otherwise replicate but also creates a fullness in flavor that amplifies all the other ingredients it touches.

“You can make a really nice aioli with seaweed,” says the chef. “I think it’s phenomenal, and it goes such a long way and gives such a great umami flavor.”

He advises slathering the aioli on a fresh snapper sandwich or dipping in some pan fried potatoes. In either case, the richness of flavor resulting from a sprinkle of seaweed is the real ingredient to a true secret sauce.

Although classic seafood dishes are great choices, Hajimaleki advises backyard cooks to not limit themselves to the tried and true. As a summertime centerpiece, seafood offers limitless options.

Hajimaleki advocates finding the freshest, most seasonal fish available. “If we’re talking June or July, you want to go get fresh snapper, trout…really any trout that you can get your hands on from the coast.”

Of course, farmed fish is also a sustainable summertime option.

Scrumptious Scallops Other than fish, one of Hajimaleki’s preferred sea creatures is the scallop, which he serves at the raw bar and as a main course. The scallop ceviche is a summertime star.

“I think the lightness and freshness really hits, especially in the summertime,” explains the chef. “You have that acid, you have those buttery scallops, and then you add in that extra virgin olive oil that adds another kind of buttery-ness to it. And then you get this nice crunch, and then you have the serrano peppers….”

All these elements lead to a balance of flavor that tap all the sensory points on the tongue.

1. Prepare the ceviche sauce. In a mixing bowl, combine the rice wine vinegar, mirin, sesame oil and lime zest, and then stir until fully incorporated.

2. Refrigerate if made up to three days in advance.

3. Prepare the buttered saltine crackers. Preheat the oven to 350 degrees F. 4. In a small pan over medium heat, melt the butter with the smoked paprika.

5. Arrange the crackers on a cookie sheet, brush the melted butter atop them using a pastry brush, and then sprinkle the red chili flakes and dried oregano on top.

6. Bake the crackers for 5 minutes, and then allow them to cool.

7. Prepare the scallop ceviche. In a mixing bowl, combine the scallops, jicama, mango, ceviche sauce, mango vinegar and olive oil.

8. Cover the bowl, place it in the refrigerator and allow the scallops to marinate for 10 to 15 minutes.

9. Fill a shallow bowl with 1 cup of ice.

10. Once the scallops have finished marinating, scoop them into a scallop shell, and then place the shell atop the ice.

11. Garnish the ceviche with thinly sliced peppers and sea salt. The buttered saltine crackers can be served crumbled on top or on the side.

In a sauce pan, combine the Worcestershire sauce, brown sugar, chili powder, granulated garlic, onion powder, cayenne pepper, thyme and lemon juice.

2. Bring the mixture to a simmer and reduce 60 percent.

3. Add the heavy cream, and then reduce the sauce by half.

4. Remove the sauce from heat, and then slowly whisk in the butter until the sauce is velvety smooth.

5. Prepare the grits. Combine in a sauce pan the water, heavy cream, garlic powder, pepper, salt and maple syrup, and then bring to a boil.

6. Lower the heat to medium-low, and then slowly add the grits, whisking constantly to prevent lumps.

7. Cover and cook for 30 minutes, stirring about every 8 minutes. At the end of the cooking time, the grits should be soft, not grainy.

8. Add the butter and white cheddar, and then whisk until smooth.

9. Prepare the shrimp. Peel them and leave the tails on, and then sprinkle with blackened seasoning.

10. In a hot sauté pan, pour in the olive oil and then cook the shrimp until plump and juicy. Avoid overcooking so they don’t become rubbery.

11. Prepare the entrée. Pour the grits in a shallow bowl, and then line the shrimp with tails up atop the grits.

12. Pour the barbeque sauce over the shrimp, and then garnish with green onions and crumbled bacon.

Separate races are held for each type of kart, so at no time are both junior karts and adult karts together on the track. Let the Sun Shine Austin Sunshine Camps Offers

Education and healthy living are at the heart of Austin Sunshine Camps (ACS), the nearly 100-year-old organization that holds free summer camping experiences for underprivileged kids.

Even Hippocrates used sun exposure to treat tuberculosis, and in 1928 the Young Men’s Business League of Austin decided sunshine was just what youngsters with tuberculosis needed. The organization hosted the first camps in Zilker Park, which had plenty of room for campers to spend time outdoors and grow stronger.

Today, ACS hosts campers ages 8 to 11 in the park at its Zilker Lodge. Campers ages 12 to 15 head to its Lake Travis location. The week away is an opportunity for these young people living at or below the poverty level to gain experiences they might not otherwise have, including traditional summer camp fun, team-building exercises and much more.

“You can’t really understand the importance of the work ASC does until you have a positive interaction with a child and see how that changes them for the better,” says Chris Miller, the current president of both the Young Men’s Business League of Austin and ASC. In addition to the camps, ASC trains camp alumni ages 15 to 18 to be camp counselors. The participants receive two years of professional development and work for the organization before they become counselors. Another supplemental program is the Camper Ambassador Program.

Its participants are current campers who take part in leadership training to help first-time campers feel welcome.

This organization that was founded to locally address a major public health problem has not been cowed by the COVID-19 pandemic. In lieu of in-person camp sessions this summer, Austin Sunshine Camps instead are taking place 62 WATERWAYS | June 2020

online, with campers assigned to virtual cabins with counselors and a variety of online activities for participants to enjoy at home.

“Just like we teach our kids in summer, we are not going to give up,” said ACS CEO Erica Blue. “We can do hard things. We can overcome challenges, and we are going to persevere.”
