ABOUT THE WATERSHED AGRICULTURAL COUNCIL The Watershed Agricultural Council (WAC) works with farm and forest landowners in the New York City Watershed region to protect water quality on behalf of nine million New York residents. WAC uses Whole Farms Plans, Forest Management Plans and Conservation Easements to help farmers, forest professionals and private landholders address water pollution concerns on properties located in the Croton and Catskill/ Delaware Watersheds. elcome to the 2017-2018 Guide to Pure Catskills Products, your one-stop source for where to eat, drink, shop, stay and play in the Catskills! The pages of this magazine showcase over 270 farm and forest-based businesses, restaurants, local artisans, other non-profit organizations and accommodations located throughout Delaware, Greene, Schoharie, Sullivan, Otsego and Ulster Counties in New York State. The local food movement is not new to the Catskill region. It is a part of our livelihood, our everyday routine, and to put it simply—it’s our lifestyle. This year we are proud to feature nine restaurants who are just as passionate about preparing high quality meals as they are about purchasing locally sourced food. These pages will show you a glimpse inside the doors of the Peekamoose Restaurant and Tap Room, Ruby’s Hotel, Pickled Owl, Table on Ten, The Bull and Garland, Zephyr Restaurant, The North Branch Inn, Rolling River Café and Two Old Tarts and One Smart Cookie. Every establishment is committed to the same mission, to source the best and most nutritious products from the very region they reside in. he Bull & Garland pub and inn brings an authentic taste of the English countryside to the Catskills. Owners Oliver and Melissa Pycroft moved from London, UK to Hobart, NY in 2015 after falling in love with an 1830's former coaching house and private residence on Main Street that reminded them of the country pubs they used to frequent in England. They were delighted to discover that Hobart was also home to a charming book village community modeled after the well-known book village of Haye-on-Wye in Wales. The couple spent a year renovating their building before opening in October 2016 with Oliver (and his decade of restaurant experience in London) managing the pub and Melissa (with her extensive arts and project management background) operating as head innkeeper. The pub is now a vibrant hub for visitors and locals alike, serving British and NY craft beers on tap and a seasonal menu of traditional pub favorites, using the best of locally sourced ingredients to create their homemade savory pies, pastas, soups and pates and a changing array of daily specials. 'We strive to highlight local produce while showcasing the best of British cuisine and our Pure Catskills membership has provided us with an invaluable resource as new entrepreneurs in the area. We buy from many farms, and are proud to have our own chickens for eggs and a large garden for much of our produce. We serve an international menu whose elements are directed by seasonal availability. We have a rotating menu that is posted weekly on our Facebook and website. The café is an old carriage house perched on the Little Beaverkill River. Much of the original structure remains to uphold the cozy farmhouse feel, and the walls always exhibit works of local artists. In the warm months, we offer outdoor seating along the river, the evenings lit with twinkling string lights and candles. We encourage you to hop over to our ping pong table for a riverside game! Next door we have a quaint country inn which is available year round. t’s been five years. What started as a Fitzcarraldo enterprise—pushing a boat over a hill to build an opera-house in the wilderness—has become a way of life. Every new season confirms we’re part of something bigger, as the spaces between what is possible gets smaller and opportunity increases. hat is now Ruby’s Hotel and Restaurant was once the Myers Hotel in Freehold, NY. It closed down in the 1960’s and had remained boarded up for years. Ana Sporer and Frank Giorgini discovered this 1800 architectural gem; complete with original tables, chairs, light fixtures, Art Deco bar and soda fountain. Together they purchased the building and lovingly restored it to its former glory. They opened for business in 2002 and have been building a loyal following of local and metropolitan food lovers ever since. Chef Ana Sporer was formally a chef at the Pierre Hotel and is currently teaching at the Institute of Culinary Education in Manhattan. She brings her skills to Ruby’s kitchen utilizing all the freshest ingredients from Hudson Valley purveyors and her own extensive organic garden. Her seasonally changing menu of culinary delights can be enjoyed in the front bistro, in the more formal back room or outside on the creek side patio in the summer. Ruby’s also houses two charmingly restored hotel rooms and a designated Fine Art Gallery on the second floor.
