ABOUT SATSIVI  Satsivi is a staple of winter holiday feasts in Georgia. There are also vegetarian varieties of this dish made with eggplants or cauliflower.

INGREDIENTS Chicken -2 KG Walnut-500 g rams Garlic – 5-6 cloves Dried seasoning-1tsp Dried coriander-1tsp Yellow flower-1tsp Hot pepper, red -Salt Onion – 1 head

STEP -Choose white, greasy walnuts. The amount of spices you can adjust to your taste. Boil the turkey first, then fry it in the oven and not on the pan. Squeeze the required amount of broth. Before the turkey is cooked, prepare the walnuts. Grind walnuts in a blender. Grind garlic with it. Add spices and mix well by hand.

Quality, fatty walnuts will soon produce oil.

Store this oil in a separate container

STEP Finally, chop the onion and cook in the broth fat. Pour boiling broth over the processed walnuts and let it get the desired thickness.

The mass should be the thickness of kefir, and after cooling, it will thicken even more.

Add the boiled onions, and either blend to get a homogeneous structure, or strain it so that large pieces of onion and walnuts do not follow. Add salt and pepper to taste. Cool this mass first at room temperature, then pack the turkey pieces in it and keep in refrigerator for at least 4-5 hours. Pour the exhausted oil before serving.
