Crispy Rice Cups:

Edible Fun for Entertaining Ingredients Rice paper wrappers (round) Neutral oil for frying Cooking Tools A pair of scissors Ladle or small strainer to shape Tongs Chopsticks Directions Prep the Rice Paper Use scissors to cut small slits evenly around the edges of the rice paper. This helps create fun, bowl-like shapes when frying. Heat the Oil Pour a few inches of neutral oil (like canola or vegetable oil) into a deep pot. Heat over medium-high heat. To check if the oil is ready: • Dip the tip of a wooden chopstick into the oil—if bubbles form around it, the oil is hot enough. • Alternatively, drop a small piece of rice paper in; if it immediately floats and puffs up, you’re ready to fry. • If the oil is too hot, reduce the heat or carefully add a bit more oil to cool it down slightly. • Ideal frying temperature is around 350–375°F (175–190°C). Use a thermometer for best results. Fry and Shape the Rice Paper Carefully lower a sheet of rice paper into the hot oil using tongs. It will puff up quickly—in about 5–10 seconds. • To create a bowl shape, press the center gently with the back of a ladle or use a small metal strainer while it fries. • Once puffed and crisp, immediately remove the rice paper and place it on paper towels to drain excess oil. Cool and Fill Once cooled, the crispy bowl is ready to be filled with your favorite ingredients— salads, noodles, sautéed veggies, tofu, or protein of choice.

Holiday Vegan Pad Thai Appetizer: Easy Thai Noodles for Entertaining Ingredients ¼ cup + 2 tbsp Watcharee’s Pad Thai Sauce 50 g medium-width dried flat rice noodles (or bánh pho noodles) ¼ cup edamame 1–2 small carrots, shredded ¼–½ cup firm or extra-firm tofu, cut into small cubes 2 tbsp preserved sweet radish 1 cup bean sprouts 2 garlic chives, cut into 1-inch pieces ¼ cup ground, unsalted roasted peanuts 2 tbsp oil ¼ cup water 1 lime wedge 1 tsp ground hot chili (optional) Directions: Soak the rice noodles in cold water for 20–30 minutes until softened. Drain and set aside. Heat 1 tbsp oil in a wok over medium heat until hot. Add tofu and preserved sweet radish. Cook until the tofu is lightly browned on all sides, then push to one side of the wok. Add the remaining 1 tbsp oil and the soaked noodles. Stir until the noodles begin to soften and turn translucent. Add water as needed to loosen the noodles, but avoid adding too much to prevent them from becoming mushy. Add carrots, bean sprouts, garlic chives, and edamame. Stir-fry for about 30 seconds until everything is well combined. Turn off the heat and stir in ground peanuts. Serve with a squeeze of lime and dried red chili, if desired.

Smashed Mushroom Sandwich

with Watcharee’s Basil Garlic Sauce Ingredients 3–4 tbsp Watcharee’s Thai Basil & Garlic Sauce 12–16 oz mushrooms (oyster or portobello work best) 1–2 tbsp oil (avocado, canola, or light olive oil) Pinch of salt Freshly ground black pepper 4 slices crusty bread, brioche or sourdough Butter or oil for toasting Directions Heat a heavy skillet over medium-high heat until hot. Lightly oil the pan and place cleaned whole mushrooms or thick slices in a single layer without crowding. Season lightly with salt and pepper. Place a burger press or a flat weight on top of the mushrooms to press them firmly against the pan. Sear for 2–3 minutes without moving them to develop deep browning. Lift the press, flip the mushrooms, and press again. Cook another 2–3 minutes until the mushrooms are deeply caramelized and release very little moisture. Reduce heat to medium and drizzle a small amount of oil if the pan looks dry. Add a spoonful of Watcharee’s Basil & Garlic Sauce to the pan and toss the mushrooms briefly to coat. Warm the sauce for 30–60 seconds so it clings to the mushrooms without burning. Toast bread or sandwich rolls in the same skillet until golden. Spread a thin layer of additional Basil & Garlic Sauce on the bread if desired. Layer seared mushrooms onto the bread along with optional toppings such as microgreens, red onion, lettuce, tomato, cucumber, or pickled vegetables. Press the sandwich lightly, slice, and serve warm

Crispy Spring Rolls

with Watcharee’s Pad Thai Sauce Ingredients Watcharee’s Pad Thai Sauce (for dipping) 1 pack of spring roll wrappers (square 6” x 6”) 2-3 tbsp of oil 1 cup raw ground turkey 2 bundles of glass noodles (soak in water, drain and cut into short pieces) 3 cups mixed vegetables such as broccoli slaw, shredded carrots or shredded cabbage 2 tbs soy sauce ½ ts sugar ½ ts ground white pepper corn (or black pepper corn) 2 tbs all purpose flour 1 tbs water Directions Mix flour and water and set aside to use as paste to seal each spring roll. Heat oil in a wok at medium high heat. Add turkey and cook through. Add glass noodles, vegetables, soy sauce, ground pepper corns and sugar. It might be necessary to add a little of water to cook glass noodles completely. Turn off the heat and set aside the filling to cool. Separate each spring roll wrapper and cover with a damp cloth or wet paper towel to prevent wrappers from drying out. To wrap each spring roll, lay each wrapper on a flat surface, add about 2 tbs of filling in the middle and roll half way. Fold both ends and continue to roll. Seal the ends with flour paste. Set an air-fryer to 375 F. Air fry for 7-10 minutes depending on the size of your spring roll. If you don’t have an air fryer, heat oil in a wok and deep fry until golden brown about 5 minutes. Serve crispy spring rolls with WATCHAREE’S pad Thai sauce.

Smoked Salmon Salad

with Watcharee’s Pad Thai Sauce Ingredients 1⁄4 cup Watcharee’s Pad Thai Sauce 1 cup smoked salmon 1⁄2 cup green mango, shredded 2 cup mixed salad greens 1/3 cup lemongrass, sliced 1 cup, fresh mint leaves Fresh lime juice (optional) Fresh red chili, chopped (optional) Directions Cut smoked salmon into bite-sized pieces. Mix all ingredients together. Add fresh lime juice and red chili if you like your salad more tangy and spicy. Serve as an appetizer.

Crab Cakes

with Watcharee’s Pad Thai Sauce Ingredients 1 lb. lump crab meat, drained 1 egg 3-4 tbs. WATCHAREE’S Pad Thai sauce 2 tbs. cilantro, chopped 1 cup panko (Japanese bread crumbs) 1 tbs. sesame seeds (optional) Lime wedges THAI SRIRACHA MAYONNAISE DRESSING ½ cup mayonnaise (for lighter version use egg free, gluten free and dairy free mayonnaise) 3-4 tbs. Thai Sriracha chili sauce (or more to taste) Pinch of black pepper Directions In a mixing bowl, combine crab meat, egg, Pad Thai sauce, cilantro and panko and mix well. Chill for 10-15 minutes. Form into patties and broil for 10-15 minutes or until cooked through. If you have a Philips Air Fryer, set the temperature to 350. Add one tablespoon of water and cook crab cakes for 7-10 minutes depending on the size of the patties. Serve crab cake patties with pad Thai sauce or Thai Sriracha mayonnaise dressing. Sprinkle sesame seeds. Enjoy!

Ahi Tuna Tartare

with Watcharee’s Pad Thai Sauce Ingredients 1 jar WATCHAREE’S Pad Thai Sauce 1 lb. sushi grade tuna, diced into small cubes 1 medium zucchini, sliced 1 tbs. lime zest 1 tbs. black and white sesame seeds Directions In a mixing bowl, add tuna and drizzle WATCHAREE’S Pad Thai sauce 2 tablespoons at a time to reach your desire taste. Our sauce is concentrated, please do not add too much sauce at the beginning. Add lime zest and mix well. Form a circle with the sliced zucchini and fill it with mixed tuna. Sprinkle with the sesame seeds before serving. Alternatively, you can serve tuna tartare with pad Thai sauce in a rice bowl or on a bed of spring mix. You can add mango, avocado, ginger or other fresh vegetables. Enjoy creating your own delicious dish!
