This year, it felt like winter went on forever; endless days of unrelenting cold and snow in mid-April!

And then BAM! Mother Nature flicked a switch and seemingly overnight, it’s June. Hello, sunny skies and warm temperatures.

Winter gave us a host of bills associated with staying warm and cosy during the long, cold days and nights. Our energy consumption increased to heat our apartments and keep the lights on to ward off the dark. Spring and summer bring a whole new set of variables. We’ll use our indoor lighting less, but to get through the hot, humid dog days ahead, we need to cool off with fans and air conditioning.

Saving on our monthly utility bills is not always easy, but there are a few ways we can all be more energy efficient. Check out the article on page 18 for tips on how you can put more money into your pocket while reducing your environmental footprint.

EIGHT ENERGY-SAVING TIPS

FOR RENTERS

Whether you rent an apartment, townhouse or a home, these tips will help you to be more energy efficient and save money. If there are things you can’t change on your own, share these tips and encourage your landlord to make a change for the better.

1. Lighting is one of the easiest places to start saving energy.

Replacing your five most frequently used light fixtures or the bulbs in them with ENERGY STAR certified LED lights can save more than $65 a year in energy costs.

• Turn off the lights when you leave a room. Turning off just one 60-watt incandescent bulb that would otherwise burn eight hours a day can save about $15 a year!

2. Considering purchasing a room air conditioner? Buy an ENERGY STAR qualified model. It will use at least 10 per cent less energy than standard models.

Be sure the unit fits tightly in the window so outdoor air does not get in.

3. Consumer electronics play an increasingly larger role in your home’s energy consumption, accounting for 15 per cent of household electricity use. Many electronics use energy even when switched off. Unplug any battery chargers or power adapters when not in use (like your cell phone charger!). Use a power strip as a central “turn off” point when you are done using equipment. And even when turned off, electronic and

IT equipment often use a small amount of electricity. For home office equipment, this stand-by or “phantom” power load can range from a few watts to as much as 20 or even 40 watts for each piece of equipment.

Using a power strip for your computer and all peripheral equipment allows you to completely disconnect the power supply from the power source, eliminating standby power consumption.

4. A 10-minute shower can use less water than a full bath.

With a low-flow shower head, a 10-minute shower will use about 25 gallons of water, saving five gallons of water over a typical bath. A new showerhead will also save energy — up to $145 each year on electricity — beating out both the bath and an oldfashioned showerhead.

5. To keep out the heat of the summer sun, close window shades and drapes during the day.

6. Run the dishwasher with a full load and use the air-dry option if available.

7. Wash your laundry with cold water whenever possible. To save water, try to wash full loads or, if you must wash a partial load, reduce the level of water appropriately. Washing full loads can save you more than 3,400 gallons of water each year.

8. Don’t over-dry your clothes.

Remember to clean the lint trap before every load. Dry full loads or reduce drying time for partial loads. One of the easiest things to increase drying efficiency is to clean the lint trap before each and every load. This step can also save up to $34 a year.

s a kid, I remember being bombarded with infomercials for kitchen knife sets. I thought, to be a decent cook, I had to have more knives than there are stars in the night sky. I quickly learned 99 per cent of kitchen work is done with just three knives.

PARING KNIFE. Typically three to four inches in length, this little guy is for detailed work. Think of it as your kitchen scalpel, peeling small fruits and vegetables, removing seeds, knocking the tops off strawberries...

SERRATED KNIFE (or “bread” knife). I’m not a fan of calling it a “bread” knife because it has more uses than just cutting bread. Super handy for anything that’s particularly fragile: Layered cakes, pavlovas, tomatoes. I also find it helpful for peeling large hard vegetables such as squash and pumpkin.

CHEF’S KNIFE. This is a generic term that covers any blade between six and seven inches, typically up to 10 inches. Picking the right one is a matter of personal taste, since they vary in weight, handle grip, style, blade shape and overall feel.

CHICKEN & SHRIMP QUINOA PAELLA

INGREDIENTS: • 1 lb raw medium-sized shrimp (peeled if you prefer) • 1 med/large chicken breast, cut in 1/2-inch cubes

Paella is the perfect keep-them-all happy dish.

Something for everyone and it’s also a great one for experimenting with a super wide range of meats, veggies and seafood

• 1 medium white onion, finely diced • 3 garlic cloves, finely sliced • 1 tbsp each ground cumin and paprika • 1 each red and yellow bell pepper, finely chopped

• 1 cup quinoa • 2 1/2 cups chicken, vegetable or fish broth • Juice and zest of 1 lemon • 1 tsp chili flakes (to taste) • 1/3 cup peas (frozen is fine) • 1 bunch of fresh parsley

INSTRUCTIONS » In a large pan over medium/ high heat, add a splash of olive oil. Add chicken, onion, garlic, cumin and paprika and sauté until garlic and onion are tender, about two minutes. Add bell peppers and cook for three to four minutes more.

» Add quinoa, broth, lemon zest, juice and chili flakes. Cover and bring to boil, then reduce to a simmer on medium/low and continue to cook until most of the liquid is absorbed and quinoa becomes al dente (about eight to 10 minutes). Stir occasionally. Add a little more stock if required. You’re looking for a consistency similar to risotto. » Last five minutes (just as quinoa becomes al dente), add shrimp and peas and cover until shrimp is cooked. Be sure quinoa remains al dente, you don’t want it to be soggy. Check and adjust seasoning, serve with torn parsley, a good splash of olive oil and fresh lemons.

Chef Mike’s top three tips for buying a knife GOOD QUALITY WILL LAST YOU A LIFETIME. Specifically, good quality steel holds its edge longer. As a general rule, it’s hard to go wrong with German or Japanese steel. A blunt knife is a dangerous knife, dull edges create unpredictability, and that leads to “ouch!”

A GOOD QUALITY KNIFE WILL MAKE YOU FEEL MORE CONFIDENT. It should feel like an extension of your hand, and it will do what you ask it to with predictability and safety. I can’t explain it better; it’s just a feeling you experience when you hold a fantastic knife.

TAKE A LITTLE EXTRA CARE: Virtually all knives are dishwasher safe nowadays, but I prefer to run the blade under hot water and wipe it down and not put my darlings through the torture of being bashed around with other utensils in the dishwasher. If you’ve invested good money, take that extra 30 seconds and your knives will reward you with a lifetime of excellent service.

BEFORE YOU MOVE, THINK NOISE KATHRYN KUSYSZYN If living in peace and quiet is important to you, consider these nine sources of noise before you sign on the dotted line.

1. CONSTRUCTION NOISE. If you are moving into an area that has properties under construction, or scheduled construction, be prepared to experience longterm noise.

2. BUSES. Find out where the local public transit routes are and their schedules.

3. NEIGHBOURS. Seniors tend to be quiet, working professionals tend to be working, resting or out of the house while

students and families with children are more generally active in the home and hence make more noise.

4. COMMERCIAL ZONING. If you live in a mixed-use area, there may be businesses that stay open late, like bars with loud music playing.

5. CHURCHES AND TOWN HALL CLOCKS. Historic and melodic

as these bells are, consider if their clanging is what you want to listen to on a regular basis.

6. SCHOOLS. Playground noise may reduce or cease in summer, but some school bells ring all year round.

7. FIRE DEPARTMENT. You may not want to hear that siren on every call they receive.

8. TRAINS. This includes long

distance, subway and streetcars.

They sure can screech.

9. PLANES. Is your new home on a flight path to a major airport?

Or a minor one with small planes that have loud engines?

Find out the flight schedule because late-night wakeup calls may become tiresome after awhile.
