It’s been a long time coming, but we are both happy and proud to be back in your lives. For a while, fashion understandably took a backseat to more serious matters. The truth, though, is that Raleigh Limited Menswear never really left.

Thank you to all of our devoted associates and tailors for standing alongside us as we navigated through the rocky road of the past year and a half.

Thank you to all of the designers who adjusted deliveries, jumped on endless Zoom meetings and sent so many samples to help make the upcoming season one of the most exciting. Most of all, we pass along our sincerest gratitude to all of the loyal customers who supported us each day of the pandemic. You’re the reason we kept going, and will continue to keep going.

When you declared, “I’ll pay anything for a great-tasting dish!” four restaurants didn’t realize it was a figure of speech. Now they’re ready to help you explore the question: Just how good can a morsel of food possibly taste?

Barclay Prime, Philadelphia. Before you crown Pat’s or Geno’s the cheesesteak champ, grab a table at this white-linen restaurant, where Wagyu beef reigns supreme. With that in mind, go ahead and try the Barclay Prime Cheesesteak, a $130 sandwich with wagyu ribeye, foie gras, truffled cheese, onions (“whiz wit”) and a half bottle of champagne.

Dhamaka, New York City. This Indian eatery on the Lower East Side serves familiar dishes like grilled prawns and chicken murgh kofta, but then the adventure begins. You can try macher jhol (baby shark with turmeric and tomatoes) for a modest $28, or break out the Benjamins for

the $190 rajasthani khargosh (whole rabbit with yogurt and cloves).

Fleur, Las Vegas. Located inside the Mandalay Bay hotel, this French bistro doles out plenty of traditional seafood and lamb dishes. Then there is the signature burger, the Fleur Burger 5000. It’s a Wagyu beef patty topped with foie gras and black truffles and paired with a bottle of 1995 Chateau Petrus. As for the digits in its name, that’s the price: $5,000.

Barton G., Miami. Specializing in over-the-top apps and entrées, this restaurant also spares no expense in the dessert department.

Neighborhood carnival favorites such as cotton candy and funnel cake are jazzed up and marked up to around $40, but the special creations (check out @bartong on Instagram) leave a bigger impression—there’s a $250 brownie drenched in chocolate mousse and a $190, 4-foot-tall ice-cream cone, for starters.

LISTEN UP! If you think you’ve heard the same song play time after time on FM and satellite radio, you’re not wrong. The shuffle and repeat options at these stations have been overused, leaving listeners searching for something new. The solution: Tune into podcasts. There’s truly something for everyone, and lively hosts lead the discussion. Here are three Indianapolis-based podcasts that are worth a listen right now (and any day!): Crime Junkie: Indianapolis natives Ashley Flowers and Brit Prawat host this true

crime podcast, which brings out the inner sleuth in all of us.

Off Track with Hinch and Rossi: Motorsport pros James Hinchcliffe and Alexander Rossi host this local sports podcast, focusing on daily headlines and taking deep dives with compelling guests.

Shift Drink: Restaurant owner Ed Rudisell talks about all things in the hospitality industry, from great tastes around the globe to spotlights on local businesses that are still feeling the impact of the COVID shutdown.

A TRADITION RICH IN COMFORT AND STYLE

Two companies come to mind when discussing big names in American fashion: The first is Raleigh Limited Menswear, and the second is Woolrich.

Every sport relies on star power—LeBron James and Tom Brady are always must-see TV. But today a quieter game is creating stars of its own: chess. Long considered a pursuit for child prodigies and men’s clubs, chess is garnering a new following. Tournament-tested and world-ranked players are taking their games to social media and live-streaming sites, calling “checkmate” while showing off their chess skills and personalities. They also take on ordinary folks on sites like chess.com. You may not buy jerseys as you do for your favorite athletes—instead, you’ll hit the “follow” or “subscribe” button to show support for the top chess players. If you’re wondering whom to follow, here are four top players: Magnus Carlsen (pictured). It’s easy to mistake this 30-yearold Norwegian for an actor, but he’s all business—sometimes ruthlessly so—on the chessboard when the sportcoat comes off.

He’s the world’s top-ranked chess player, a grandmaster (GM) and a pretty good competitor in other games as well: Check out some of his sporty shots on Instagram (@magnus_carlsen).

Hikaru Nakamura. Born in Japan but raised in the U.S., Nakamura is a top-20-in-the-world player and one of Carlsen’s biggest rivals. He earned the GM title at 15, becoming the youngest American at the time to achieve that feat. Now 33, he competes in international competitions and matches on chess. com and has fans worldwide thanks to his popular Twitch stream and YouTube channel (GMHikaru on both services).

Alexandra Botez. This 25-year-old woman FIDE master is a social media celeb thanks to her prowess on the black-and-white squares. (The initials FIDE stand for the International Chess Federation’s name in French.) Dallas-born, Vancouver-raised Botez competes in global tourneys and against opponents on chess.com, and she’s built a massive fan base thanks to her Twitch and YouTube accounts. The channels (BotezLive on both services) follow her and her chess-playing little sister, Andrea, in their daily activities, such as challenging chess hustlers in New York’s Washington Square and Union Square parks.

Keti Tsatsalashvili. A grandmaster since 2010, this 29-yearold Tbilisi, Georgia, native conquered the chess world early, capturing plenty of international titles before she turned 18.

Since then she’s added chess commentator to her arsenal of roles, hosting championships and titled tournaments across the globe. Like Botez, she runs an active YouTube channel and Twitch account (LetsChessLive), where she streams her online matches from chess.com.

Most men didn’t spend their childhood playing dress up; seldom do boys protest which T-shirt or sweater they would wear, and rarely do they make a fuss over a pair of pants. For these guys, few things change over the years. Even the most discerning gentleman today doesn’t want to spend a lot of time in a dressing room: It’s usually “get the perfect fit and go”—especially when it comes to wardrobe basics like denim.

At Raleigh Limited Menswear, we understand that many men may not want to get worked up while looking for jeans, but we also know that finding the perfect pair takes more than searching for a size tag on the waistband. A department store brand with a 32x30 tag, for instance, might fit differently when compared with Raleigh’s high-quality denim by designers like Jacob Cohen and Teleria Zed. When you visit Raleigh, Mark Koplow, Gerald Moreau and our other style pros will talk to you even before you start trying on pants. “We focus on getting the fit right as quickly as possible,” says Koplow. He and the team ask three basic questions: 1. Do you like low rise or mid rise? “Mid-rise jeans tend to be most popular with our customers.”

2. How fitted do you want them? “Some men like their jeans to be quite fitted around the thigh, but others want to be more comfortable.”

3. What kind of leg opening do you like? “The trend is slim, but our best-selling fit is still regular straight leg.”

Once the staff gets your answers, they’re good to go. Inventory experts, they’ll know to grab jeans from brands like 34 Heritage, Ermenegildo Zegna, Jacob Cohen, PT Torino and Teleria Zed, among others.

“We’ll get the fit right in less than three tries,” says Koplow.

But Raleigh goes beyond fit. Denim is about style too.

“Then we can talk about washes—a dark, clean pair that you can dress up or something more fun with detailing and distressing,” he says. “We have a jean for every guy of every age…but you have to find the right fit first.”

SKINNY FIT Popularized by young hipster types in the late ’00s, the skin-tight denim phenomenon stuck around for about a decade before trends began to shift. But with slight modifications, today’s skinny-fit jeans are both fashionable and comfortable—and yes, they do allow breathing.

How they fit: The skin-tight feeling has given way to something more modern.

Keep doing those squats because this style still hugs your seat and thighs. Most are mid-rise, meaning that the waistline will sit slightly below your belly button, but guys with uber-thin, Mick Jagger-type bods will benefit from a low-rise jean that sits closer on the hip. Dudes also should pay attention to the level of skinniness in the leg. Many brands still offer jeans that carry the close fit all the way through the ankle, but if that tightness is too boy-band for you, opt for a pair with only a slight taper at the bottom.

Who’s wearing them: Paparazzi often capture style icon Harry Styles wearing a pair of black denim skinny jeans with a statement button-up and Chelsea boots, but your day-to-night look can be perfect with a lightwash pair and a long-fit T-shirt. And while skinny fit may be favored by the nightclub crowd, it’s also suitable for the discerning man. Pair a subtler skinny jean with a sportcoat and loafers for a sophisticated look that is far from dated.

SLIM FIT It’s easy to use “skinny” and “slim” interchangeably in conversation, and there are indeed similarities when you’re talking about garments. But if you have a slightly fuller body, you’ll want to know the difference when putting on a pair of pants.

How they fit: Like skinny-fit denim, slimfits also are close to the seat and thighs.

They differ, however, in the leg opening— the calf and ankle loosen in most of the latter styles, providing greater mobility.

Average slim-fit jeans are constructed with a mid-rise—meaning that the length from the crotch to the belt is anywhere between 9 and 11 inches—and give off a casual vibe. High-rise slim-fit jeans sit just above the waist and provide a neater, sometimes tailored appearance.

Who’s wearing them: Slim-fit jeans are a great everyday cut for men looking to take the town by storm. Their versatility and ability to be paired with everything from sweaters and button-up shirts to sneakers and monk straps make them a preferred choice. And though they’re popular with Hollywood’s trim leading men, guys of all body types can feel confident in a pair because the slightly tapered yet close fit complements any figure.

REGULAR FIT In the beginning, jeans were utilitarian pants worn for any and every task— thus, comfort was the priority, then fashion. That meant they had to provide the wearer plenty of room to move while still appearing tidy. That’s the story of regular fit.

How they fit: Unlike slim-fit denim, which has a narrow silhouette and hugs the body, regular-fit jeans have a straight fit through the hips and thighs.

In other words, they’re not too loose, not too tight. Though there’s no such thing as a one-size-fits-all pant, regular fit comes close. For shorter guys the style’s mid-rise adds balance while elongating the body’s frame. Taller fellows also benefit from the mid-rise, which can reduce the visual appearance of long legs.

Who’s wearing them: Once worn mostly by blue-collar workers on the job, these jeans are perfect for casual Fridays at the office. The extra fabric standard in regular jeans gives added comfort to all body types. This style pairs well with sport shirts and boots for a casual or rugged look, but a darker wash can be dressed up easily with a dress shirt, sweater and monk strap shoes.

LOOSE FIT The fashion police didn’t ban baggy pants (though some U.S. cities did). In fact, this style isn’t the faux pas that some made it out to be a decade ago.

By considering a few sartorial rules, you can rock loose-fitting jeans and always be in style.

How they fit: Loose-fit jeans offer maxcomfort feel and max-casual vibe. That’s because the style is typically cut to sit below the waist, providing extra room in the seat and thigh area. The straight leg also is roomy, but doesn’t give off an excessive bulky or baggy appearance.

A high-rise fit can help men with larger waists flatten their mid-sections and shape their rear ends; it also allows more room in the leg for dudes with bigger calves. Watch the length of the leg: Jeans should not extend past the top of the shoes.

Who’s wearing it: This style is best kept in casual settings (ball games and the like), but a variety of styles—different colors, patterns and washes, for example—will keep outfits interesting. For a smart combo, wear loose jeans in a light wash with layered pieces like hoodies, bomber jackets or large coats. Because of the jeans’ relaxed nature, finish a loosefit outfit with boots or sneakers.

DENIM THAT’S NOT DENIM Gold-rush miners of the 1850s knew they were wearing durable pants, but little did they know that their garb would be a long-lasting fashion trend. Of course, indigo-dyed cotton denim has come a long way since then, going through more than a century’s worth of transformations and incarnations (some memorable, others regrettable).

Today’s jeans and five-pocket pants are better than ever: They’re just as durable to wear to a 9-to-5 job, whether you’re mining or managing clients, but they are constructed with comfort and style in mind too. Top designers such as Jacob Cohen and Teleria Zed are incorporating fabrics such as elastane and Lycra to give their pant formulas stretch properties. Four-way stretch denim, for instance, provides the ultimate luxury. These pants stretch in four different directions, so they move with your body while you’re on the go, and they won’t lose their shape as they stretch over time—that was an issue with earlier stretch jeans. They’re also super-soft (like your athleisure wear), so you can relax in a pair while you watch the whole ball game or binge the entire series of a Netflix show on your couch. Available in different washes and colors, stretch denim and five-pocket pants can be used equally in an office setting or out on the town. You’ll be tempted to wear them at the health club— they’re that comfortable—but go with the shorts and sweats for your workout.

Girl Makes Good For entrepreneur and fashion icon Rihanna, becoming a star descriptions of her style sense. As a trendsetter, Rihanna is considered as influential as David Bowie, Prince, Michael Jackson and Madonna have been. She’ll pick an outfit for an intriguing silhouette or a slightly “off ” feature—think sweatpants with pearls or a masculine denim jacket with a corset.

And by outfit, we mean the works right down to accessories, such as white-rimmed sunglasses with army pants; metallic boots with an orange trench coat; or Louboutin stilettos with a Versace animal print.

Her bold approach was hard to beat when she wore an ensemble by Maison Margiela that was topped by a papal-style hat to the 2018 Met Gala with beaded headdress, strapless mini and detailed overcoat.

Rihanna did more than turn heads at the 2015 Met Gala, when she appeared in a 55-pound dress of gold thread and fox fur that took an embroideress two years to make. The online frenzy that surrounded Chinese designer Guo Pei’s creation included Photoshop images of a giant pizza or omelette. Beyond laughs, the showstopper was part of director Pietra Brettkelly’s documentary Yellow is Forbidden, a look at haute couture and China.

Rihanna is no doubt perfectly at home in this or any controversy, perhaps staying up at night thinking how next to stun her fans. “I’ve never been afraid to take risks,” she says.

Love her, hate her or simply don’t know what to make of her, one thing is certain: Her one-word name has entered the culture, whether it’s topping the charts at a given moment or not. “Told you I’ll be here forever,” sings Rihanna in one of her megahits. It seems just possible.

Move over, Madonna—and Beyoncé too. Make room for Rihanna. A professed work-work-workaholic, she took top place among female musicians on the 2020 Forbes list of America’s richest self-made entrepreneurs. This was a first for the 33-year-old Barbados native, born Robyn Rihanna Fenty, but not unexpected—she signed her first record contract at age 16.

Right now, her net worth of $600 million leaves giants like Madonna and Beyoncé in the dust. But Rihanna says she’s more about finding joy in the work than becoming the next billionaire. Fact is, she also shines for her charitable spirit—for example, giving upwards of $8 million to pandemic relief. And her sometimes startling, often stunning personal fashion choices draw notice for sure.

It would be easy to file Rihanna under “M” for music. After all, she has amassed nine Grammy Awards as well as multiple American Music Awards, Billboard Music Awards and Guinness World Records. “Umbrella,” the lead single on her breakthrough 2007 album Good Girl Gone Bad, topped the charts in 13 countries.

But she’s also an actress, with films like Ocean’s 8 and Bates Motel under her belt.

And the biggest source of her $70 million annual paycheck is not on any playlist.

She gets most of her fortune from Fenty Beauty, which she launched in 2017 with 40 foundation shades. To say she filled a need for diversity is an understatement.

This cosmetics venture with French luxury goods giant LVMH made $100 million in the first 40 days, $600 million that initial year and is still going strong.

Another booming success is Savage X Fenty, a lingerie line valued at $1 billion that she co-owns with LA-based TechStyle Fashion Group. Thriving despite COVID, the size- and gender-inclusive company recently introduced its first bridalwear.

In 2019, Rihanna achieved another milestone as the first black woman in charge of a major luxury fashion house in Paris. Under the family name Fenty, she developed a line as diverse as she is, everything from sculptural suits and minis to bright island-hued wraps and tangerine dresses. For her the fashion had to be honest. “I don’t want anyone to pull up my website and think, ‘Rihanna would never wear that.’”

That line with partner LVMH was put on hold two years later during the pandemic. Some say it has been shuttered for good. But that’s not about to hold back Rihanna. Beauty and fashion remain her muses as much as chartbusters. She traces this love back to childhood and watching how her mom put together her own individual style.

Today the street fashion industry keeps watch on Rihanna as if every ensemble is a future gold mine. Anyone else might feel intimidating pressure knowing that what they pop out of the closet is so inspirational. But not Rihanna. Loud, unapologetic—these are not just album titles, but apt

OFF-ROAD ROYALTY

Land Rover’s Defender reigns once more, taking drivers from unpaved trails to city streets with ease and style. By Darius Amos

The station wagon was first on the scene; then came the minivan. Today, the sport utility vehicle (SUV) is the preferred family transport option, thanks to ample seating, cargo space and four-wheel-drive systems. (Sporty names suggesting adventure and ruggedness help too.)

But as car manufacturers continue to search for the next thing, British automaker Land Rover has opted to spice up its original formula.

Returning from a three-year hiatus is the mighty Defender, which was one of the company’s first models when it launched in 1948. (Back then, the trucks were simply named for their wheelbases: the 127, the 110, the 90.) With a fully capable 4WD system, the stylish new iteration maintains the Defender’s standing as an off-roading champ.

But as thoroughly as the Defender proves itself on the red rocks in Moab, it does just as well on the interstate and in stop-and-go city traffic. That’s because engineers made three powerful engines available to the vehicle: a turbocharged four cylinder, a turbocharged six and a supercharged, 518-horsepower eight. And the comforts in the cabin mirror those found in an uber-luxurious sedan: hand-stitched leather upholstery, three-zone automatic climate control and a standard 10-inch infotainment system display, to name three.

As for the iconic “boxy” appearance of its forebears, the new Defender retains that general shape with a few sexy curves added. Rugged, good-looking and familyfriendly—that’s today’s SUV. Starting at $46,100.

Although the iconic Defender yellow of yesteryear isn’t available for 2022, there are 10 other paint colors to choose from, including Pangea Green and Gondwana Stone, both inspired by ancient supercontinents.

Unlike other Land Rover models that use two screens, the Defender relies on a single 10-inch touchscreen with faster response times to control its infotainment system. An optional 11.4-inch screen is available.

Optional turbocharged sixcylinder and supercharged eight-cylinder engines give the Defender extra power, whether it’s needed to pass in the fast lane or ascend a rocky cliff.

If an SUV with speed is your thing, the Defender’s optional V8 engine produces 518 horsepower and can complete the 0-to-60mph dash in 4.9 seconds.

Traversing rocks, wading across streams and hopping a curb are easy tasks for the Defender, which has 11.5 inches of ground clearance.

An air spring suspension upgrade enables the driver to adjust the ride height on the fly.

PANT LEG LENGTH: Though you’ve shown plenty of ankle this summer, keep them covered at a formal event. Our tailors will be sure that your pants aren’t too short and also aren’t bunching on the bottom. In general, trousers should have half or no break. The half break is standard, showing a slight dent where the hem rests on the top of the shoe.

PANT LEG WIDTH: Finding a cut that flatters your waist, thighs and calves is key. In other words, pants that are too tight will wrinkle, while anything that has too much material runs the risk of appearing baggy and sloppy.

JACKET LENGTH: There are a couple rules of thumb that are easy to follow: The jacket should cover your rear end and, with your arms at your side, the garment should end between your thumb’s knuckle and base.

JACKET SLEEVE: For the perfect length, be sure the sleeve shows about a half-inch of the shirt cuff— just enough for others to see your fancy cuff links.

JACKET LAPEL: Wear a silk-faced peak lapel for highly formal occasions and a rounded shawl style when you want to soften your look. A notch lapel is versatile but the least formal for a tuxedo.

JACKET CUT: A trimmer, modern fit comes with a fashion-forward and flattering silhouette—for all body types. It is slimmer through the chest and shoulder than a traditional-cut jacket, and it’s appropriate for all occasions.

Now Jackson Hole, Wyoming, has a nearby five-star luxury hotel worthy of its stellar skiing and eye-popping vistas. By Everett Potter Jackson Hole Mountain Resort, Wyoming, is one of the grand prizes of American skiing, an adventure that begins with a jaw-dropping view. Set at the base of the Teton Mountains, these jagged spires of rock are arguably the most scenic stretch of the Rocky Mountains range.

Jackson Hole has long attracted the big dogs of the skiing and snowboarding world, who come here for so-called Big Mountain skiing. If you’re unfamiliar with that term, it means what it says. Jackson Hole is a behemoth, with a vertical drop of more than 4,000 feet and 2,500 acres of in-bounds terrain, on a 10,400foot mountain. While there are easier green and blue runs, you don’t head to Jackson for easy turns. It gives fresh meaning to the term “challenging.”

The out-of-bounds terrain is more than 3,000 acres and, basically, if you can see it, you can ski it—but only those with avalanche gear and training are encouraged to head past the ropes. In-bounds has challenges aplenty. There are runs with enormous moguls and chutes, the most famous being Corbet’s Couloir.

It starts with a fear-inducing vertical drop, a double black-diamond entry into a narrow chute where you need to start making turns instantly. I count myself among those who’ve peered over the edge, only to retreat while a braver soul gamely takes the plunge down what looks like a sheer vertical wall. Just ride the tram from the base to get a drone’s-eye view of the action as you near the top of the mountain.

But hard-core skiing is only part of the story. Jackson Hole has slowly evolved over the past 20 years, and while it still attracts plenty of 20- and 30-somethings eager for a steep and deep experience, it long ago recognized that a well-heeled crowd would come for better hotels and fine dining, make a few turns and admire the dramatic vistas over cocktails. Thus Four Seasons Resort and Residences Jackson Hole, Hotel Terra and Caldera House came to town, the leading edge of the luxury options at the base of the mountain, where also there are restaurants, shops and

neighborhoods with CEO-level homes that routinely sell well into mid-eight figures. The ultra-chic Amangani Resort lies a couple of miles away.

At Jackson Hole, you can still have a frosty après ski beer with the cliff jumpers at the Mangy Moose bar, with Warren Miller movies playing in an endless loop. But your dining choices are more like those found in Los Angeles or New York and trend to upscale steakhouses, sushi bars and Italian trattorias.

Staying at the base of the mountain is great. But you’re in Jackson Hole. Twelve miles down the road lies the town of Jackson itself, an upscale cowboy town, centered on a town square whose four corners are ringed by inventive clusters of elk antlers that had been shed and collected.

Surrounding the square are wooden sidewalks a la the old West, roofed over against the elements.

There’s also a range of restaurants, shops and bars, the most colorful being the Million Dollar Cowboy Bar, whose neon sign shows a rider on a bronco.

There’s even another ski mountain in town, Snow King, that is beloved by locals.

Now, with the opening of Cloudveil in May 2021, Jackson finally has what it’s long been missing: a fivestar luxury hotel. Part of the Autograph Collection of hotels owned by Marriott, it takes its name from the Cloudveil Dome, a peak within the Grand Tetons.

It’s the first major building project on the town square since 1997—and a game changer. From Cloudveil you can walk to the restaurants and shops, and you’re directly across from the town square. Skiing or riding? There’s a shuttle to slopes, so you can leave the often gnarly winter driving to the pros.

The design was a group effort by three firms: TruexCullins, CLB Architects and IBI Group. There was clearly an attempt to invoke rugged local elements, so they used materials such as stone, metal and wood throughout, as well as huge windows.

The lobby has a giant, 3,000-pound boulder that functions as the front desk, and the lobby fireplace

is a welcome touch. A three-story granite wall is a reminder that you’re in the heart of climbing country.

The hotel has 100 rooms and suites, and the décor has accent walls of wood, banquettes, wrought iron touches and neo-midcentury-modern chairs. Some of the rooms have corner fireplaces and balconies. There are smart TVs, and the bathrooms are stocked with Grown Alchemist products. On a sensible riff on the mini-bar, each floor of the hotel has a pantry stocked with complimentary local snacks and drinks.

If you need to get your heart rate up before tackling the moguls on Jackson Hole, it’s good to know that there’s a gym with weights and Peloton equipment and, for après ski, a heated outdoor pool and Jacuzzi.

The hotel’s 5,000-square-foot terrace is the only rooftop space of its kind in Jackson and is designed for summertime yoga and meditation. It’s expected to be open to the community as well for music performances and stargazing. Given Jackson’s proximity to both Grand Teton and Yellowstone national parks, the latter about 60 miles away, there’s little question that summer and fall will be big here as well.

Nor do you need to wander far for breakfast, lunch and dinner. The Bistro, a French-inspired restaurant in the hotel, is the brainchild of the Fine Dining Restaurant Group, led by Gavin Fine and Roger Freedman. Fine is the Danny Meyer of Jackson, a savvy restaurateur who has put the town on the culinary map with such acclaimed eateries as Bin22, The Kitchen, II Villaggio Osteria, Bar Enoteca, Bodega, Sugar + Spice and Bovine + Swine. It offers outdoor café dining, a zinc bar, an oyster bar and a newly established reputation as a dining destination itself.

So the sage advice is to come to Jackson Hole prepared for challenges and stay for the deep creature comforts of the new Cloudveil. It’s the newly crowned cool kid on the block, perfectly positioned to offer the ultimate in Western chic in the hippest ski town in the West. Enjoy the vibe, even if you can’t quite bring yourself to leap into Corbet’s Couloir.

No law says you can’t get away with serving just one great wine at your next get-together. But maybe, given the vagaries of the past year and a half, it’s your first for a while, and you’d like to step it up. To make the evening truly memorable, you can pair each course of your meal with its own bottle, one chosen to complement its individual flavors.

What might such a dinner be like? We asked Andrew Fortgang, co-owner and wine director of critically acclaimed restaurants Le Pigeon and Canard in Portland, Ore., to be our sipping guide. He picked some underappreciated and unexpected varietals to enjoy with each phase of the meal, from appetizer to entrée to dessert.

CHOCOLATE: When eating something sweet, Fortgang prefers drinking something sweet or savory with it. He loves dark chocolate with Banyuls, a dessert wine with some spice and herbalness from the Roussillon region in Southern France. A nuttier, oak-aged Tawny port is his ideal companion for milk chocolate, while he leans toward an amber-hued Madeira, made with white grapes, for white chocolate treats.

CHARCUTERIE: When assembling a plate of meat, cheese, fruit and veggies for a crowd, our expert likes to drink a wine from the country that the food on the charcuterie platter comes from: Italy, Spain or France, for example.

“It doesn’t mean it’s a better pairing, but I like that connection,” he says. Generally speaking, though, this type of appetizer works best with a dry white wine like the Fino en Rama Sherry. “This is an unfiltered pinot, so it has a little more weight and texture but is still bright and dry,” Fortgang says of the selection.

GRAPE STEAK ENTRÉE: Many of us associate juicy steak with a nice bottle of red, and Fortgang agrees. “With steak, you have to have a wine that either has the tannin or the acidity,” he says. And the type of red you opt for depends on how you serve the main course. If you’re preparing your meat with lots of herbs and veggies, he likes a Cabernet Franc from Bourgueil. “It has weight and structure and depth and herbaceous qualities to mirror what you’re cooking,” he says. A barbecuesaucy steak is great with a Grenache (Garnacha), which has spicy and fruity flavors.
