A Super Natural

At 33, Israeli native Gal Gadot is a military veteran, a former beauty queen and a big-screen sensation. By Donna Rolando

Her credits include the action crime thriller Criminal (playing the wife of heartthrob Ryan Reynolds) and the action comedy Keeping Up with the Joneses (she’s a secret agent). She’s clearly earned her comedy chops—but also looks forward unironically to at least two more spin-offs with Wonder Woman anticipated through 2019.

Gadot was in law school when the acting bug bit her so hard she couldn’t ignore it. Although as a kid she always craved attention (at age 5 she soaked adult party guests with a hose just to get laughs), it wasn’t until her success with the Miss Israel pageant that she recognized her true calling and dropped the law books for a lucrative modeling and acting career.

Today she pleads her case in the court of fan opinion—and her runway past can’t hurt when it’s time to dress to the nines and beyond. Gadot’s not shy about wearing a Christian Dior dress in a bright red or showing some skin with her crimson-sequined Armani Privé gown slit up the thigh. She’s also embraced Millennial Pink with a stylish Oscar de la Renta suit; yet at a ballgame, she looks like the gal next door in a beige trench coat, black leggings and flats.

Hollywood’s glitz doesn’t seem to have gone to this star’s head—her priorities remain family: her husband, Israeli real-estate developer Yaron Varsano and their two daughters, Alma, 7, and Maya, 1. She imagines her films being a legacy to her children, and acting gives her months off for her favorite role of all: mom.

Where is the limit for this star who apparently has it all—looks, talent, brains and commitment? One can only wonder.

h, what a Gal! When Israeli-born actress Gal Gadot took on the iconic role of Wonder Woman in the 2016 movie Batman vs. Superman: Dawn of Justice, she had a tough audience to please: DC Comics fans. But she came through like a warrior, repeating the role last year in Justice League and in the superheroine’s own big-screen saga, Wonder Woman.

To those who have followed Gadot’s career since she played Gisele in the Fast and the Furious series starting in 2009 (in which she performed many of her own stunts), all of this was the fulfillment of an almost obvious destiny.

At a youthful 33, this former supermodel and ubiquitous cover girl can look back on an illustrious life already: She was crowned Miss Israel 2004 at age 18, served as a combat instructor in the Israeli Defense Forces and just this year snagged a spot on Time’s annual list of the world’s 100 most influential people.

(In the magazine’s trademark star-does-star approach, her writeup was penned by none other than Lynda Carter, TV’s Wonder Woman in the 1970s.)

Of course, the double-W is more than a careermaker for Gadot. It’s also a platform for promoting her feminist goal, which she defines as equality for all. “I feel I’ve been given such a huge opportunity to show the strong, beautiful side of women—finally,” she says. And Wonder Woman fits the bill because of her independent spirit. “She’s not relying on a man,” says Gadot, “and she’s not there because of a love story.”

That’s not to say that Gadot does every thespian turn on a soapbox—indeed, she’s mixed things up.

PORSCHE DOES IT AGAIN

With a stick in its bag of tricks, Porsche’s latest iteration of the iconic 911 is a true driver’s car. By Luca Sumberac

Stupefying. Scintillating. Ingenious. Insane. When adjectives like these are lavished on the 991.2 GT3, Porsche’s newest high-performance iteration of its inimitable 911, nobody bats an eyelash. After all, it’s a Porsche.

The GT3 has been called “the definition of a gentleman’s racer.” Its 4.0-liter, six-cylinder, horizontally opposed and naturally aspirated engine offers 500 hp, 339 lb-ft of torque and a high-revving design that can hit up to 9,000 RPM. It goes from 0 to 60 mph in 3.2 seconds and boasts a redesigned front end with large openings and new air blades on each side to improve cooling. You’ll be grateful for the added ventilation because this car begs to be pushed to the limits. The GT3’s rear spoiler is also higher than previous generations and is located farther back to be more effective. The added downforce of that massive spoiler helps to keep the car planted, and the increased stability comes in handy when testing out that 9,000 RPM rev limit.

The GT3’s racing chassis sports dynamic engine mounts and rear-axle steering for superb turns, along with GT tuning plus a high-performance brake system with six-piston aluminum brake calipers at the front and four-piston equivalents in the rear. With its outstanding braking and aero stability, courtesy of that massive wing, you’ll be able to charge corners with supreme confidence. Of course, high-hp cars can be relegated to paperweight status if a driver can’t effectively control them—but not this baby. This is a true driver’s car.

The 911 GT3 comes standard with Porsche’s performance-oriented automatic seven-speed Porsche Doppelkupplung (PDK) gearbox—Porsche-speak for the advanced double-clutch automatic transmission. The PDK is, without a doubt, a superior way to shift gears, but die-hard Porsche enthusiasts have been clamoring for a traditional manual gearbox in the GT3, and Porsche has obviously heard those cries. That’s right—the six-speed GT sports manual transmission is now an option (at

no extra charge). Don’t get me wrong; the PDK is fast—it tops out at 197 mph. The dual clutch automatically shifts with little to no power loss, which translates into more speed and offers up to 14 percent better fuel economy than the manual version. But to a true motorsports fan, all that efficiency pales against the chance to use the increasingly endangered third pedal, especially on a GT3. For me, it’s worth sacrificing a quicker 0–60 time for the ear-to-ear smile that comes with pushing a shift knob through the gears.

Starting at $143,600, the GT3 comes standard in white, black, Guards Red or Racing Yellow. For a little extra you can choose one of four metallics. Or go ahead and splurge for the exotic Miami Blue, Carmine Red, Chalk or Lava Orange. If these colors don’t grab you, ask if paint-to-sample customization is available.

While the color options are great, it’s not the paint job that matters in the long run, is it? This vehicle’s true appeal lies behind the wheel. And as this enthusiast car finds the owners whose hearts clamor for it—knowingly or not— we’re sure to hear more adjectives.

INGREDIENTS n 3¼ lbs. rib eye beef FOR THE MARINADE n 1 Tbs. coarse freshly ground black pepper n 1 Tbs. chopped rosemary leaves n 3 garlic cloves, ground into a smooth paste n 2 tsp. celery seeds n 3 Tbs. canola oil n 2 tsp. brown sugar n zest and juice of 1 lemon n sea salt FOR THE SAUCE n 3 Tbs. sour cream or crème fraîche n 5 Tbs. horseradish sauce n 1 Tbs. heavy cream n 1 tsp. sugar n squeeze of 1 lemon n sea salt and freshly ground black pepper INSTRUCTIONS STEP ONE: Roll the beef into a neat round shape and tie at intervals with a butcher’s string. For the marinade, mix all the ingredients in a bowl. Rub into the meat, covering the whole roast, and leave to marinate for 1–2 hours. Set the rotisserie at its medium setting. (If you do not have a rotisserie, you can cook this dish on a barbecue grill.)

STEP TWO: Thread the beef onto the rotisserie skewer and place on the rotisserie. Season and cook for about 1 hour for a rare piece of beef. Reduce the heat if the meat browns too quickly. Leave to rest in a warm place for 20 minutes.

STEP THREE: For the sauce, mix all the ingredients in a bowl and season well. Cut the beef into thin slices and serve with the sauce.

MAPLE AND MUSTARD CRUSTED RIB OF BEEF SERVES: 4 – 6

PREP: 30 MINUTES

roughly chopped into small rounds n 1 lb. 2 oz. shallots n 2 celery stalks, roughly chopped n 4 garlic cloves n 1¾ cups red wine n 2 Tbs. maple syrup n 3 Tbs. Dijon mustard, plus 1 tsp. extra n ½ cup port wine n 2 cups beef stock n 4 tsp. cornstarch, mixed with a little warm water n 2 tsp. red currant jelly

INSTRUCTIONS STEP ONE: Preheat the oven to 400°F. Rub the beef with 2 Tbs. of oil and season well.

Fry the beef in a large frying pan until just brown all over. Remove from the heat.

STEP TWO: Place the bread crumbs, rosemary, parsley and half the thyme in a large bowl. Season, mix well and press the mixture over the fat on the beef until evenly coated.

STEP THREE: Place the carrots, shallots, celery, garlic and remaining thyme and oil in a large roasting pan and mix well. Place the beef on top of the vegetables and cover with an oiled sheet of foil. Roast in the oven for 30 minutes.

STEP FOUR: Then remove the pan from the oven and add half the red wine and a splash of water. Reduce the oven temperature

to 350°F and roast for an additional 40 minutes, adding more water if necessary.

STEP FIVE: Meanwhile, mix the maple syrup and mustard in a small bowl. Remove the pan from the oven and take off the foil. Coat the crust with the maple and mustard mixture, and press down lightly.

STEP SIX: Return the pan to the oven for an additional 30 minutes, until the internal temperature of the meat reaches 140°F. Remove from the oven. Place the beef on a serving dish and let rest for at least 30 minutes.

STEP SEVEN: Remove and discard any excess fat from the pan. Add the port wine, stock and remaining red wine. Place the pan over high heat and bring to a boil. Then strain and discard the vegetables. Reduce the heat, add the cornstarch mixture and cook the sauce until thickened. Then add the jelly and remaining mustard, season and serve with the beef.

INSTRUCTIONS STEP ONE: Place the sugar, thyme, mustard, garlic salt and smoked paprika in a food processor. Season with pepper and grind to form a fine powder. Place the steak on a large piece of plastic wrap and rub the mixture all over. Wrap tightly in the plastic wrap and chill for at least 1 hour.

STEP TWO: For the sauce, place all the ingredients in a large serving bowl and mix well to combine. Cover with plastic wrap and chill for at least 1 hour to allow the flavors to develop.

STEP THREE: Remove the steak and the sauce from the fridge and bring to room temperature. Set the barbecue at its highest setting. Brush the steak with a little oil and grill on both sides until cooked to your liking: 4–6 minutes on

each side for rare, 6–8 minutes on each side for medium, and 8–10 minutes on each side for well-done.

STEP FOUR: Remove the steak from the heat, cover loosely with foil and let rest for at least 10 minutes. Cut the steak into thick slices and serve with the chimichurri sauce.

Rebels in red and white In California, knowing the rules but choosing to break them has yielded some wonderfully unusual wines. By Josh Sens

W

hen most winemakers describe their work, they lean on artsy or scientific terms. They talk about terroir or malolactic fermentation or the handmade magic required to coax the most out of their fruit. But Scott Sampler is not like most vintners. He speaks of spaghetti sauce.

“That was the association I had from the start,” he says. “I was thinking of cooking low and slow, like the Sunday dinners my mother used to make.”

Those dinners were served in the Silver Lake and Los Feliz neighborhoods of Los Angeles, where Sampler grew up. His father was a noted graphic designer. His mother was an actress of Italian descent. Among her specialties was pasta smothered in long-simmered tomato and meat sauce. Whatever the meal, wine was always on the table, and Sampler’s father often slipped him sips, developing his son’s appreciation for the stuff. But that didn’t make a winemaker of him.

After college at UC Berkeley, Sampler returned to LA and worked as a script writer and music video director.

It was the emotionally taxing end of a romantic relationship in the early aughts that sent him on a new path.

Traveling around on what he calls a “breakup tour,” he wound up crashing with a friend whose home sat in the mountainous folds of Malibu. Looking at the steep-sloped property around him, Sampler thought, “Why not plant

grapes and start making wine?”

Fast-forward to the present. Sampler is the driving force behind the Central Coast Group Project (CCGP), a collaborative—and iconoclastic—winery that produces startling vintages in anything but the old-fashioned way. From his first release, in 2012, he has opted for what he describes as a “neo-primitive” approach. Another way to put it is that he makes his wine the way his mother made sauce—low and slow. He lets the grapes stay in contact with the skins and stems for anywhere from a month to six months. He stirs frequently throughout the process, tasting as he goes, not unlike an Italian home cook hovering over a stove.

In the early goings, Sampler’s many wine-world acquaintances were skeptical of his process; they thought it sounded like a recipe for vinegar. It turned out to be a blueprint for beautifully subtle vintages that marry wonderfully with food. No matter the wine—a boldly structured Syrah; a red Rhone varietal red; a bright everyday white— Sampler stuck to his rule-breaking methods: long maceration, little sulfur, no new oak. There was no arguing with his results. CCGP wines have been embraced by sommeliers and have found a home at acclaimed restaurants from Le Coucou and Racines in New York to Craft and Spago in LA. “There is a certain amount of risk to making wine this way, because a

lot can go wrong,” Sampler says. “But I’m working in small batches, and I’m watching things very, very closely. I’m basically living with the wines, and I know what I’m after, which is a clear, honest expression of whatever varietal I’m working with.”

In his departure from convention, Sampler is unusual. But in California, he’s not alone. Elements of his rustic, low-sulfur approach are mirrored at wineries such as Piedrasassi, a Lompocbased producer of unvarnished Syrah and Sauvignon Blanc, among other varietals; and the aptly named Lo-Fi Wines in Los Alamos, where Mike Roth and Craig Winchester rely on native yeast and little to no sulfur to produce irresistibly drinkable Cabernet Franc, Chardonnay and Chenin Blanc.

Like Sampler, Roth, a former chef, draws inspiration from his favorite kitchens, where the idea was to gather great ingredients and then not fuss with them. His wines, he says, aren’t meant to be collected, but to be enjoyed. To make them, he relies on just a few rules: They shouldn’t be overmanipulated, overripe or overpriced.

“Ultimately, the standard is deliciousness,” Roth says. “Forget about the process for a minute. In the end, you want wines that are like food—so good you don’t want to stop eating. The wines should be so gulpable, you want to pour yourself another glass.”

TASTING NOTES Lo-Fi 2017 Santa Barbara Cabernet Franc, $24 Bright, brambly fruit runs through this medium-bodied wine, a vintage so versatile it marries with almost anything from soup to steak. Delicious lightly chilled, it can even be enjoyed with a salad.

Droning On! With confidence built into its name, Surefly is the ’copter that doubles as a drone. By Timothy Kelley

It’s like nouvelle cuisine cooked up as a ’copter. Planned for a 2019 debut at a price under $200,000, the Surefly from the Workhorse Group is powered by a BMW 600-cc, twin-cylinder generator engine that responds to joystick commands. You’ll need a pilot’s license to fly it, but because it’s classed as a light-sport aircraft, that credential requires fewer hours of training than does a standard helicopter pilot’s license.

“Organic moonshine roots music” is how Tennessee native Valerie June Hockett describes her body of work, but there’s nothing imitative about it. A skilled songwriter and musician, she effortlessly blends blues, bluegrass, folk, soul and classic pop into original ballads that are at once earthy and ethereal. Her voice, too, is one of a kind—high, light and twangy, raw, achy and emotive. That voice alone makes her recent release, The Order of Time, an absolute treat.

SUN SEEKER

Lilting, starkly melodic, whimsical and sometimes psychedelic, Sun Seeker is one of the more inventive current bands to emerge from a Nashville basement.

Alex Benick (guitar), Asher Horton (bass) and Ben Parks (drums), now 22, have been hanging out and collaborating since eighth grade. Like one of their 1960s inspirations, The Band, these guys possess the poise and musicality to sound polished at a young age. They call their sound “cosmic American music,” and you’ll find it highly listenable.

Mississippi Hill Country blues is a loose boogie style that can have a hypnotic effect on listeners. One of its foremost masters is R.L. Boyce, a protégé of the great R.L. Burnside. Although he started as a drummer, Boyce was destined to sing and play guitar, which he does with improvisational abandon. Every track on the album Roll and Tumble was recorded in one take, capturing the backyard-jam ethos of the Hill Country.

Boyce’s extemporaneous lyrics are awesome.

Through funky tunings, he blurs the line between minor and major keys, “so that the weight of the emotion rests solely on the vocal melody and the lyrical content,” he explains. Sneakers have been hot for a while. When are they appropriate and inappropriate?

Sneakers are really intended for the denim look. We see certain people—including some celebrities and high-profile people—who wear them with suits, and that really shouldn’t be. Today, sneakers—although they are dressier—should still be worn with denim.

Although depending on the sneaker type, you can elevate them. They’re not only comfortable but they have real style to them and it elevates the whole denim look together with a blazer or a sweater. We have a lot of selection in sneakers. For fall/winter, you’ll see more suede, more colors.

What are some common faux pas you see customers making?

It’s important to follow through with your whole outfit.

Casual clothing is very popular but when I see a customer come in and he’s got a nice sweater and shirt and a nice pair of jeans but he’s wearing a ski jacket… they forget that outerwear is an important part of the look.

I see that a lot. And there’s no reason for it. If it’s raining, we have beautiful rainwear. We offer a lot of different

looks in outerwear so we can definitely find something appropriate. Or I’ll see men wearing nice suits with lousy shoes. You might have a beautiful suit on, but if you don’t have the right shoes, it takes away from what you’re trying to accomplish.

Can you give us an update on accessories?

We’re excited about Hestra. They’re an internationally well-known glove company based in Sweden.

They’re very high quality. We also carry beautiful pocket squares. A lot of guys aren’t wearing ties with suits these days and often they don’t have anything in their pocket—so we’re putting an emphasis on pocket squares this fall so you can have pops of color that are nice when you’re wearing suits or jackets.

Speaking of pocket squares, what’s your advice regarding them?

Originally the pocket square would match or somewhat match the tie. Today if you’re not wearing a tie, you have to coordinate with the suit or the jacket to bring out some of the color in the jacket. If the jacket is solid you can wear just about anything and it becomes an expression of your personality.

Can we look for any changes in the store in the upcoming months?

We’ve never really done shop-in-shops, but this season we will be introducing a couple of them. We’re very excited that (Ermenegildo) Zegna will be taking over our center room, our rotunda. It’s a sizable collection this season, with an emphasis on casual luxury. Additionally we’ll be introducing Slowear; they’re an Italian company and we carry three of their lines: Incotex trousers, Zanone knitwear and Montedoro jackets.

They’re all nice, sophisticated. We also just renovated our made-to-measure area, which we’re very excited about. That business is very important to us, and our MTM customers will really benefit from the upgrade.

What are some of the trends you see this fall/winter season and how are you addressing them?

There’s been a major shift in the market toward corporate casual or dress casual. So having an outerwear jacket that coordinates with your casual outfits is critical. We’re addressing that with some Italian companies.

One of them is Manto, which has some beautiful weatherproof wools and down-filled jackets.

Another one is Corneliani.

We’ll be showcasing some of its unique items: sportcoats and hybrid outerwear that have always been very popular; we call them ID jackets.
