ELCOME to the latest edition of Fiscal Fitness! As the temperatures rise at the Jersey Shore, so does the fear of coronavirus and the financial impact it’s having on many in our communities, including family and friends. With interest rates at historic lows, corporate restructuring and pension buyouts and layoffs, many individuals are wondering what to do next. The steady stream of doom and gloom has caused far too many to make important financial decisions based on emotions.

THE URGE TO PANIC Did you know that nearly a third of all investors age 65 and older sold their full equity holdings during the market volatility between March and June of this year1? How many investors missed the initial rally because of the severe emotional conflict between the current state of the economy and the stock market (a leading indicator)? Did those same investors get back into the market or are they waiting for the “right” time? $5 TRILLION dollars sit in money markets or savings accounts as investors ran to the safety of cash. Did you know that assets in money market funds as of 6/30/20 is the highest it’s ever been?1 The previous 2 records followed the Dot Com Bubble (Jan-03, at $2.3T) and the Global Financial Crisis (Jan-09 at $3.8T). Investors who sat it out missed strong stock market returns over the next few years.2 Despite both crises, long -term recoveries eventually followed. SEQUENCE OF RETURNS RISK A real concern for preretirees and something you can’t afford to underestimate. It is the risk that an investor will experience negative portfolio returns early in retirement when withdrawals are being taken, causing the portfolio to fall

faster than if those same negative returns occurred later in retirement. So how to safeguard yourself? A financial plan might include a cash reserve bucket to cover a year’s worth of expenses, tapping into home equity wisely through a line of credit, limiting the withdrawal rate in early years and creating an “income ladder” using various investments. No easy task and particularly daunting if facing it alone. For those needing to tap into their retirement savings, THE CARES ACT brings welcome relief for many. PLAN WITHDRAWALS The 10% penalty tax on early withdrawals (pre 59 ½) from IRAs and retirement plans up to $100,000 is being waived for “coronavirus related hardship” distributions this year. Taxes still apply but can be spread out over a 3-year period to ease the tax burden.3 It’s more complicated than it sounds so speak to your tax advisor before making any decision. Loans from retirement plans have also been relaxed and allows participants to borrow the greater of $10,000 or 100% of your vested account balance. REQUIRED MINIMUM DISTRIBUTIONS for 2020 are waived completely for IRAs, beneficiary IRAs and deferred compensation plans, such as a 401(k). They do not need to be made up the following year. C

But don’t fret: We plan to celebrate all the winners and reprise the festivities in 2021, when more things are certain and the world has returned to “normal.” Of course, resuming everyday life might be easier for some than others. Such is the case for Suzanne Quigley, who was just a dental student when her sister died during the September 11 terrorist attacks. In “Gifts of a Tragedy,” Quigley shares how she worked past that dark day 19 years ago and used the friendships made through her late sister to open a familyoriented orthodontics practice in Red Bank during the pandemic. COLLEGE, 2020 STYLE This year, when local campuses roll out the welcome mat, it will be “safety first.” A collegian’s move-in day—parents helping sons and daughters tote suitcases, futons and mini fridges into stuffy dormitories— has long been a rite of passage. But this year, because of the continuing danger of COVID-19, the semester will begin a bit differently for many. Here’s what local campuses have planned: —Brookdale Community College: Classes start Tuesday, Sept. 8. Most will be conducted in a distance-learning format, with a few exceptions. “Automotive tech, ceramics, culinary, architecture, fashion, graphic design, organic chemistry and a few allied health programs that require clinical placements will be in-person,” says Matthew Reed, vice president for academic affairs. Virtual classes will be either “remote live”—in which students can interact with their peers and professor—or “online,” in which they watch a prerecorded class as their schedule permits. Social distancing will be enforced in classes held onsite, says Reed; hand sanitizer will be available in high-traffic areas such as around vending machines, and plexiglass partitions will be in-

stalled where appropriate. There will be fewer entrances into these buildings, and before entering campus, everyone will answer questions about their symptoms and get their temperature taken. Perhaps most important, only two BCC campuses will be holding classes this fall: the main campus in Lincroft and the smaller Wall campus, home to Brookdale’s new nursing simulation station. —Monmouth University: The West Long Branch-based four-year college will also begin its fall semester on Sept. 8. It is instituting a combination of “in-person instruction, online sources and hybrid course delivery,” according to president Dr. Patrick F. Leahy’s address on the university website, in order to prioritize both students’ health and their education. Masks and face coverings will be required inside all buildings and common areas such as classrooms and dining spaces, as well as inside residence halls (though students don’t have to wear masks in their individual rooms). Public lounges inside the dorms will be closed, but dining services remain: Monmouth University has even created a new mobile app through which students can order their meals in advance for takeout. Temperature checks will be required upon entering high-traffic areas, and students and faculty also must fill out daily questionnaires about potential COVID-19 symptoms. Academically, “the flexible grading policy from the spring and summer sessions will continue in the fall,” Dr. Leahy says, “as a way to support our students through this unsettling time of their academic journeys.”

LIVE SHOWS ARE ALIVE AND WELL We hate to admit it, but it’s going to be a while before we can safely gather in a stadium or theater again to enjoy a live show. But in a spacious parking lot or a field? That’s another story. Talented Monmouth County folk have been taking advantage of outdoor events being permitted statewide by putting on performances and fundraisers for locals. One such event was the “Open Field Comedy Show,” a drive-in at the Freneau baseball field in Matawan on July 12 featuring six local comedians, who donated all proceeds to the Freneau Firehouse. The Count Basie Theater in Red Bank jumped on the bandwagon too throughout July with its “Drive-In Live at Monmouth Park” series, which featured live performances from the likes of Jim Gaffigan and Queen cover band Almost Queen, among others (proceeds benefitted the Count Basie Center for the Arts and the New Jersey Pandemic Relief Fund). Vehicles at both events remained nine feet apart and were staggered to maintain social distancing protocols and ensure that every audience member could see the stage. We anticipate seeing a lot more of these outdoor shows before winter’s chill kicks in, so welcome to our new normal!

CULINARY CORNER

NEED MASKS? SHOP LOCAL Face coverings are now required indoors and outdoors when social distancing isn’t possible, making them 2020’s hottest accessory. But instead of buying a stash of masks at a big-box chain store or website, why not buy local? Think of it as a way to keep yourself and your family safe on errand runs and support local businesses that need our help now more than ever. Want to show off your Jersey pride? The Etsy shop titled OnlyAfterRain, based in Asbury Park, sells masks featuring photos from Shore towns and landmarks. Etsy’s Four k design shop out of Matawan sells a “Jersey strong” mask showing the American flag and a cutout of the state, and the seller can customize the item according to your specifications. Brick-and-mortar store Serenity by the Sea in Ocean Grove sells handmade masks that are soft, safe and washable, while Cabana 19 in Red Bank has some fun mask holders (they basically look like sunglasses holders) worn around the neck to ensure that you won’t misplace what will cover your face.

Dog: Crosby Cooper, a 9-month-old F1 English cream goldendoodle Owners: Mary-Jo and John Petryshyn of Middletown When the Petryshyns were on the hunt for the perfect puppy to join their family, they drove six hours to a doodle breeder in Upstate New York after doing heavy research for the perfect one. They were fifth in line as potential pet “parents” to choose from a litter of 11, and they had no gender preference—they just knew they wanted to raise a dog from puppyhood as they had just welcomed their first grandchild. But the Petryshyns knew Crosby was “the one” when he kept going over to them—the pup even fell asleep on John’s lap! Crosby is a very cuddly pet, and even though he weighs almost 50 pounds, he thinks he’s a lap dog. “He’s very friendly and thinks anybody walking by is there to pet him and be his BFF,” says Mary-Jo. Crosby loves hanging out with his two kitty siblings and is a total social butterfly—his owners enjoy taking him to Holmdel Park, the Seafarer Bar in Atlantic Highlands and 8th Avenue Dog Beach in Asbury Park. They even bring him along on shopping trips to animal-friendly stores such as Home Depot, Lowe’s, Petco and PetSmart. While many restaurants have shut their doors under the pressure of the COVID-19 quarantine, a few intrepid souls have defied the odds by opening brand-new eateries: —Branch Cantina and LBK Grill are two new dining options at Wave Resort in Long Branch. —Salinas Café & Restaurant, a family-owned café in Red Bank, replaces the West Side Café. —Joe’s Rotisseria is a pizza and rotisserie spot in Asbury Park. This quarantine period has been diffi cult, but it’s also been energizing for some. For Rob Doran of Rumson, it inspired the bicycle trip of a lifetime. The 31-year-old was abroad at the beginning of 2020 researching new coffees—he loves a good cuppa joe! Once the pandemic hit, he returned to U.S. soil in sunny Siesta Key, Florida, where he hunkered down for about six weeks. But on April 20, he decided it was time to return home to Monmouth County, and, too nervous to take a fl ight during COVID, he biked 1,700 miles in about a month—roughly nine hours of biking each day—before completing his journey at Shrewsbury Bikes, his dad’s store. Doran’s next adventure is his new business, currently in the works in Lincroft: a coffee shop.

CELEBRITY SIGHTINGS Outdoor dining has been up and running in New Jersey for most of the summer, and the famous are taking full advantage. On Wednesday, July 1, Governor Phil Murphy and rock star Jon Bon Jovi, accompanied by their wives, broke bread in the parking lot seating area at B2 Bistro & Bar in Red Bank. Both own homes nearby on the Navesink River. Meanwhile, on July 5, most of the cast of MTV’s Jersey Shore Family Vacation gathered at the Butcher’s Block in Long Branch for a surprise party on the outside patio for cast member Mike “The Situation” Sorrentino’s birthday. “Love my roomies!” Nicole “Snooki” LaValle wrote on the birthday boy’s Instagram post. “Our first outdoor dinner!”

Protests following the death of George Floyd in police custody in Minneapolis May 25 have focused new attention on racism and on the Confederacy, whose armies in the Civil War (1861–1865) fought to preserve slavery. In that spirit, Howell High School has dispensed with its longtime mascot, a Confederate soldier. Though the school’s teams will still be known as the Rebels (for the time being, anyway), the mascot image got a makeover. The new design features an American soldier with his head nodding down and a big “H” at the tip of his hat. The image reads “Howell Rebels” across the bottom, and the colors remain navy blue, gray and white. “What I love most about the final logo is that it’s open to interpretation—it tells a different story to each individual who views it,” says Kylie Burst, the graphic designer who created the winning design when the high school ran an online contest for submissions. “Knowing that my mascot will represent Howell for years to come is a feeling like no other,”adds Burst, a member of Howell High School’s class of 2012. “I’m still kind of taking it all in.”

THE CHANGE WE KNEED The Black Lives Matter movement has been making waves this summer across the country, and Monmouth County is no different. In early June, Red Bank held a socially distant march for equality and social justice that brought more than 500 protesters to Count Basie Fields. Community members spoke, marchers held signs and residents recited chants demanding justice. Meanwhile, on June 14, Howell conducted a similar rally at Oak Glen Park, in which protesters even took a knee during a moment of silence. (Just don’t forget your masks, OK?)

WELCOME BACK TO BREAST CARE The new regional director of breast radiology leads a dedicated team to safe and cutting-edge care in the COVID age and beyond.

Monmouth Medical Center (MMC) and its sister facilities Monmouth Medical Center, Southern Campus in Lakewood and Community Medical Center in Toms River recently welcomed Alexander King, M.D., as the new regional director of breast radiology. In his new role, he will be responsible for the overall clinical quality provided at all affiliated breast imaging locations. In addition, he will collaborate with physician and administrative leadership to develop new programs that improve access to breast imaging services for the community. Prior to accepting this position, Dr. King served as attending breast radiologist with RWJBarnabas Health Medical Group, interpreting screening and diagnostic exams performed at all three Southern Region hospitals and presenting radiologic findings at the Monmouth Medical Center and Community Medical Center Breast Tumor Board. He joined Monmouth Medical Center as an attending breast radiologist in July 2016. Dr. King received his medical degree from Robert Wood Johnson Medical School, Piscataway, and completed the diagnostic radiology residency program at Saint Barnabas Medical Center in Livingston. He also completed fellowship training in breast imaging and intervention at Barnabas Health Ambulatory Care Center, Livingston. His professional affiliations include the American College of Radiology and the Society of Breast Imaging. Dr. King spoke with Monmouth Health & Life about his new role, the Jacqueline M. Q: Tell us about Monmouth Medical Center’s breast imaging services—what does the hospital offer in terms of cuttingedge technology and programs? We offer a full suite of all breast care needs from screening to biopsy—and beyond. All our mammography equipment is tomosynthesis equipped, also known as 3D mammography. We offer screening ultrasound and breast MRI. We were the first in the region to offer prone tomosynthesis guided biopsy. We are closely following the evolution of machine learning as it relates to breast cancer screening. There are many promising studies that show improved cancer detection rates when utilized in conjunction with the radiologist. We hope to add this tool within the next few years to improve our screening program. Q: Under your leadership, how do you hope to continue—as well as expand—the excellence of Monmouth’s breast health care? We are excited to add three fellowshiptrained breast radiologists over the next six months. As our practice rebounds and expands after the COVID-19 pandemic, particularly in the Lakewood and Toms River areas, we are ready to provide exceptional care. We personalize the care for each patient based on her individual risk factors and tailor a screening regimen that will provide the best outcomes aligned with recommendations from the Society of Breast Imaging and American College of Radiology. Q: What are the current guidelines for breast cancer screening? For average-risk women, annual screening mammography should begin at age 40. Women with extremely dense breasts may benefit from screening ultrasound in addition to annual mammography. Further, women at higher risk of developing cancer may benefit from supplemental breast MRI. To begin the process, it is recommended that at age 30 women undergo a cancer risk evaluation (easily found online) to find out if they are higher than average or have any underlying risk factors. Women should speak to their primary care doctors about starting this process at the right time. Q: How did the pandemic impact services at MMC? We voluntarily paused our screening program mid-March, even before guidelines suggested. We know screening saves lives every year, but flattening the curve can save lives every day. We remained open for “emergencies”—lumps, discharge, known cancers needing surgery that couldn’t wait. We closely followed health and safety guidelines along with the entire

RWJBarnabas Health system as the pandemic unfolded. At the same time, we started preparing for resumption of screening as soon as possible. We spaced out patient appointments, screened patients for symptoms via telephone before their appointment and again at entry into our breast center. During this time, we also adjusted the layout of waiting and shared space areas while also adhering to a strict cleaning regimen in exam rooms between patients. Q: What is the “Welcome Back” campaign? We are excited to be back and have modified our practice to meet the community’s needs. This includes extended evening and weekend hours at most locations. We will continue social distancing in our waiting areas and screen patients before and at the time of their arrival. We recognize the changes required to keep our patients and staff safe are the “new normal” and will continue for the foreseeable future. Q: Why is it important for people, especially those who put off appointments or testing because of COVID, to resume their breast health care with professionals? We know that annual screening saves the most lives. Studies show increased mortality when screening every other year. If you missed your appointment from COVID, you don’t need to wait until 2021. We are back— with extended hours—and are prepared to remain more available as long as it takes to meet our community’s backlogged needs. Q: For those who are still scared or wary about returning, how will you assure they will remain safe while receiving the same top-notch care? We have rigorous screening protocols for both patients and staff. All staff members are screened daily with temperature checks and required to wear masks throughout the day. System-wide testing has also been available for employees, allowing us to remain confident in our health and systems. We have strict cleaning protocol for equipment between patients and utilize the appropriate protective gear for all procedures. Q: What is one piece of advice that you stress to patients? Annual screening mammography saves the most lives! That being said, breast cancer screening guidelines are constantly evolving and becoming more patient-specific as we learn more about the disease. Now is the time to take your breast health seriously and start the conversation with your doctor. We are here to help make the process go smoothly!

BACK ON TRACK After two unsuccessful lumbar surgeries in NYC, a Jackson woman turns to Monmouth Medical Center for a third—and she’s finally pain-free.

Dorothy Scerbo is a spirited 85-year-old. Rarely does she sit still at her Jackson home—she’s constantly out and about, taking daily trips to church while driving all over the state to see family and friends. And though she oftentimes thinks about dancing, this octogenarian knows her limits. Knowing all that, one would never guess that Scerbo has had three back surgeries. The first surgery came in 2015 after she sustained back and leg injuries while she and her late husband moved from Bridgewater to their current home. “My husband was diagnosed with pancreatic cancer,” she says, “so when we moved, I did all the heavy lifting. It was difficult.” Surgeons at a New York City hospital performed a lumbar decompression and fusion surgery, which required a nearly 5-inch incision in her lower back. The procedure provided temporary relief, but the back pain eventually returned and prompted doctors to “do [the surgery] over again.” Scerbo returned to New York in fall 2017 for her second back surgery, which ultimately could not correct the pain. In addition, she felt numbness and weakness in her legs. “My left leg and foot were so weak, and the nerves were damaged,” says Scerbo, a Christopher Gillis, M.D. retired registered nurse. “I was using a walker and in constant pain—I was in misery. I couldn’t stand in the kitchen for 10 minutes. SAME-DAY PROSTATE CANCER SURGERY An expert explains how new robotic technology allows patients to go home from the hospital sooner. Not long ago, prostate cancer surgery—even the high-tech robotic kind—required hospitalization. Now, new robotic technology is allowing some patients to have surgery on an outpatient basis, says Isaac Kim, M.D., PhD, MBA, medical director of robotic surgery at Monmouth Medical Center (MMC), chief of the Division of Urology at Rutgers Robert Wood Johnson Medical School and chief of urologic oncology at Rutgers Cancer Institute of New Jersey. To commemorate Prostate Cancer Awareness Month this September, Dr. Kim, who recently completed his 2,000th robotic prostatectomy, explains which patients can benefit from this cutting-edge technology.

Theoretically, this translates into decreased pain and lower complication rates. Specific to prostate cancer surgery, SP allows the physician to avoid the space that contains the bowel. As a result, the risk of decreased bowel function requiring hospitalization is negligible. Accordingly, patients who are stable may be discharged to their homes about four hours after surgery.

Q: How is this new robotic technology different from older versions? The “conventional” robot, which is manipulated by a surgeon, has four arms that require four separate incisions, or “ports.” Two additional ports are necessary for assistance. They enable the bedside surgeon or assistant to see better and pass and remove needles. With the new robot-assisted surgery device, called da Vinci SP (Single Port), the four arms do their work through one port (a single incision), plus an “assistant” port. This technology allows surgeons to work in smaller, tighter spaces. Currently, the da Vinci SP device is being used to perform ear, nose and throat (ENT) procedures like tonsillectomies as well as radical prostatectomies (removal of the prostate—a walnut-sized gland that produces fluid that carries sperm—to treat prostate cancer). Q: How do patients benefit from “single port” robotic surgery? Since there is only one robotic port, the required surgical space is small.

Q: Who is a good candidate for this type of surgery? Patients with stage I or II (low to intermediate risk) prostate cancer are the ideal candidates. These patients have cancers that are confined to the prostate. Patients who require surgery to remove one or more lymph nodes to determine whether the cancer has spread are usually better off with multiport robotic surgery.

Q: Is this technology widely available? No. MMC is the first hospital in central and southern New Jersey and the 11th in the nation to purchase this technology. The SP robot is currently approved for urologic and ENT procedures, but it’s anticipated that the application will expand to gynecologic and general surgeries in the near future.

GIFTS OF A TRAGEDY Can something good come out of a terrible event? We sometimes hate to admit it, but Suzanne Quigley now knows it can. She believes in resilience. “It’s a mindset I had to struggle to acquire,” she says. When she talks about the subject, Quigley makes it clear that her optimism about the future was hard-won, and that much of it can be traced back to her sister, Beth, and to a day Quigley can’t possibly forget. She’d graduated from the University of Medicine and Dentistry of New Jersey (now Rutgers Dental School) in 1999 and, after a year’s residency in general dentistry, had returned to get a degree in orthodontics, a long-held dream. Situated in downtown Newark, the school offered a striking view of the Manhattan skyline from its open-air courtyard, and on one crystalline late-summer morning that view was particularly vivid. At 10 a.m., after a two-hour class, Quigley stepped out onto the courtyard and was greeted with an astonishing sight: Smoke was pouring out of One World Trade Center, a massive black smudge against the brilliant blue sky. Quigley knew the building well. She’d visited her sister there, at her office on the 104th floor, where she was a trader for the financial services firm Cantor Fitzgerald. As the courtyard filled with people, word circulated that a plane had hit the tower. When Quigley phoned her father to see if he’d had word of Beth, he said repeatedly, “This isn’t good. This isn’t good.” In one of Quigley’s favorite photos, she and her sister—with their dark, glossy hair and sweet smiles—look almost like twins, though in fact, Suzanne was born two years before Beth. As kids, they’d experienced standard sibling rivalry—what Quigley calls “typical girl stuff”—but as young adults they’d become extremely close. On the morning of September 11, 2001, all that love turned to grief. That day, Beth Quigley was killed along with every other Cantor Fitzgerald employee who’d shown up at work that day, 658 in total. Her death ripped a hole in Suzanne’s heart, invisible but every bit as devastating as the damage caused by the hijacked airliner. When she returned to school in October, after a memorial mass for her sister (rather than a funeral, as the family had no remains), she was certain she couldn’t continue working toward her degree in a place whose associations were so painful and so raw. A good friend convinced her otherwise. “She was the one person who said—and it made so much sense to me—‘What’s your alternative? To go out and practice as a general dentist, something you’re not passionate about?’” Quigley remembers. So in 2003, she received her degree in orthodontics, got engaged, and at the end of the summer bought an orthodontics practice in Woodbridge with the same friend who’d given her such good advice. That might have been the happy ending to her story, had her partner not been diagnosed with cancer in 2009 and decided to leave the firm, suggesting that Quigley take it over. She did, out of a sense that it was what she should do, though she knew the pressures of work would make MONMOUTHHEALTHANDLIFE.COM

it hard for her to spend time with her husband and daughters, one a newborn, the other a toddler. She became deeply unhappy, and she and her partner sold the firm a year later, a decision that left her feeling she’d failed as a professional woman. However, in 2006, Quigley met William Wood, a fellow orthodontist nearly 25 years her senior, with whom she’d struck up a close friendship. They had first met at a professional conference, and then again at a fundraiser she’d organized at the Count Basie Theater in her sister’s memory. It turned out, astonishingly, that Wood had met Beth when she was a teenager working an after-school job at a shop he frequented at The Grove in Shrewsbury. The two had forged a friendship when Wood discovered that Beth was hoping to attend the College of the Holy Cross, his alma mater, but lost touch when she left the job after high school. Then, in the fall of 2001, he was reading the Holy Cross alumni magazine when he came upon Beth’s obituary. He was bereft, a feeling that stayed with him and impelled him to attend the fundraiser in her name. His friendship with Beth’s sister blossomed, and so it was that, in 2019, having turned 70 and anticipating retirement, he asked Quigley if she’d like to take over his practice. This time it felt absolutely right. The difficulties she had endured at her first practice, she says, “provided the breeding ground to learn what harmony and balance are for me, both as a professional woman and as a wife and mother.” And then the world took another hit. In March, the COVID-19 pandemic shut down dental practices along with every other nonessential business. Quigley’s accountant urged her not to go forward with buying Wood’s firm until at least September, when she might have a better sense of what that could entail during a global pandemic. But she finally decided to go ahead, even as COVID raged around her. “I’m optimistic that the practice I purchased is the sort of place that we all might be wanting to get back to now,” she says, noting that it’s a small, hometown practice in which she can pursue the kind of personal dentistry that she’s always preferred. This time around, she’s made it a family affair: She and her husband renovated the space together. Her father is her bookkeeper. Her business model is no longer based simply on volume and allows for her to spend time at home. Best of all, the practice is in Red Bank, where she and her sister were born, and near Lincroft, where they grew up. “To me this is home,” she says, “and I couldn’t imagine doing it any other way.” Looking back, Quigley sees her late sister as a thread tying all of her choices together. “Now that I’m finally landing where I think I’m supposed to be—where I’ve been guided to be—I can look back and feel Beth’s presence in the way everything has unfolded,” she says. She’s arrived at the knowledge, she adds, “that life isn’t always going to be easy, but that if you’re willing to open your mind to the possibility that good can come out of the darkest times, it might very well happen.”

INGREDIENTS:

n 1 can (12 fl. oz.) fat-free evaporated milk n 1 cup semi-sweet or milk chocolate morsels n ¾ cup water n ½ tsp. ground cinnamon n 1 ripe, fresh avocado, halved, pitted, peeled and diced n 8 5-oz. paper cups n 8 wooden craft sticks

DIRECTIONS:

Heat evaporated milk, chocolate morsels, water and cinnamon in a small saucepan over medium heat until simmering. Stir until smooth, then cool for 10 minutes. Place avocado and chocolate mixture into a blender. Blend on high until very smooth. Divide into eight 5-oz. paper cups. Cover each cup with aluminum foil and insert one stick through the center of each foil cup. Freeze for four hours until firm. Tip: Frozen treat molds may be used. Yield may vary.

RICH AND CREAMY AVOCADO FLAN Yields 8 servings

INGREDIENTS:

n 1½ cups sugar, divided n ¼ cup water n 2 cups whole milk n 1 ripe, fresh avocado, halved, pitted and peeled n 4 large eggs n 1 tsp. vanilla extract n ½ tsp. salt

DIRECTIONS:

Preheat oven to 350°F. Heat 1 cup sugar and water in small heavy saucepan over low heat, stirring until sugar dissolves. Increase heat to medium-high. Wipe the inside of the pan with a wet cloth to remove sugar crystals. Cook, without stirring, about 10 minutes until golden brown. Divide caramel between eight custard cups and swirl to coat bottoms. Place cups in 9x13-inch baking pan. In blender, combine milk, avocado, eggs, vanilla and salt and purée until smooth. Divide mixture between custard cups. Carefully fill baking pan with enough hot water to 1-inch depth. Bake for 30 to 35 minutes or until just set in center. Remove to wire rack to cool slightly. Refrigerate for several hours or overnight. To serve, run small knife around edge of the baking dish. Turn over and shake gently to release.

INGREDIENTS ■ sea salt, for rimming glass ■ ¼ cup freshly squeezed lime juice, plus lime wedges for rimming glass and garnish ■ 1½ cups cubed watermelon, chilled ■ 1/3 cup silver (white) tequila ■ ¼ cup triple sec (or Cointreau) ■ 1 cup ice

DIRECTIONS ■ Place sea salt on a small plate. Run lime wedge around the rim of glass and then place glass upside down on plate to coat rim in salt. Place glass in the freezer to chill. ■ Add watermelon, lime juice, tequila and triple sec to blender and blend to combine. Add ice and blend for about a minute, until smooth. ■ Pour margaritas into glass and garnish with lime wedge.

SHOPRITE OF MONMOUTH COUNTY ShopRite and Chobani donated 18,000 cups of freshly made Greek yogurt to Fulfill in Neptune.
