WHEN I REFLECT BACK on last January and realize I did not quite achieve a handful of goals, I am heartened that I get another go at those resolutions. My biggest one is strength training—maybe this will be the year. January is perhaps one of the more inherently optimistic times of the year because of the promise to realize those New Year’s resolutions.

In the spirit of offering up some inspiration, we kick off this issue with a dream achieved by local resident Rachel Mansfield—whom we featured two years ago in Millburn & Short Hills magazine. As her new healthy

The Citrus Spritz: A celebratory, sparkling refresher INGREDIENTS • Juice of 1 orange • Juice of ½ lemon • ½ tsp. honey (optional) • Sparkling water • Orange slice and rosemary sprig (for garnish) INSTRUCTIONS Shake the juices and honey with ice. Strain into a glass filled with ice, and top with sparkling water. Garnish like you mean it.

GONE ARE THE DAYS when your only alcohol-free option at a party was sparkling water with a lemon wedge. With health, wellness, and mindful living on the rise, more people are skipping the booze, and mocktails are having their moment. They’re stylish, flavorful and hangover-free. Whether you’re hosting a winter celebration, a game night with friends, or just want something that feels festive without the alcohol, mocktails are here to raise the bar (pun intended).

“It’s about making everyone feel included when I’m hosting,” says Millburn resident Ali Thomas. “Some people don’t drink, some are driving. When you put effort into a beautiful mocktail, nobody feels left out.”

Today’s mocktails are more than just sugar-loaded drinks. Think fresh herbs, cold-pressed juices, sparkling waters, fancy garnishes, and even gut-friendly ingredients like kombucha or apple cider vinegar.

“The flavors you can play with are endless,” Thomas says. “Sometimes these taste even better than alcoholic drinks because you can really appreciate all the ingredients.”

Berry Bramble Fizz:

Perfect for kicking your feet up fireside with friends

INGREDIENTS •½ cup fresh or frozen berries (raspberries or blackberries work best) • 1 tsp. maple syrup • J uice of ½ lime •½ cup club soda •M int leaves (for garnish)

INSTRUCTIONS Muddle the berries and maple syrup in a shaker. Add lime juice and shake with ice. Strain into a glass over ice, top with club soda, and toss in some mint for flair.

Cucumber Cooler: Like a spa day in a glass INGREDIENTS • 4 slices cucumber • Juice of ½ lime • 4 oz. coconut water • Splash of tonic or soda water • Cucumber ribbon and lime wheel (for garnish)

INSTRUCTIONS Muddle cucumber and lime juice in a shaker. Add coconut water and shake well. Strain into a chilled glass, and top with tonic. Be creative with your garnish.

Here are three signature mocktails you can easily make at home for everyone to enjoy. The best part about making mocktails? You don’t need to be a bartender or own a cocktail shaker to enjoy these. A mason jar and a wooden spoon will do just fine. These easy, feel-good sips prove that skipping the booze doesn’t mean skipping the fun.

Short Hills mom and food influencer Rachel Mansfield creates a healthy snack that kids love.

IF YOU’VE SPENT any time scrolling through the appetizing corner of Instagram over the past decade, you likely know Rachel Mansfield. She is the culinary fairy godmother for anyone who wants to eat delicious food but whose body politely declines gluten, dairy, or anything that causes inflammation.

Mansfield’s origin story is the stuff of entrepreneurial dreams: Laid off from a corporate job, she pivoted to a blog (rachLmansfield. com) and built a digital empire on the back of almond flour and enthusiasm. She authored the hit cookbook “Just the Good Stuff,” amassed a dedicated following, and became a trusted voice in the better-for-you food space.

However, running a venture capital fund (grt sht ventures) alongside her husband, Jordan Carpenter, writing books, and raising three boys apparently wasn’t quite enough chaos.

Mansfield is now taking on the titans of the grocery aisle with her new kids’ snack brand, cadootz!

WHAT’S IN A NAME? Complete with an exclamation point, cadootz! is the snack brand Mansfield and her husband spent three years developing. But more than anything, it’s the result of JANUARY 2026 |

being parents to three young sons and struggling to find snacks that met their standards.

Mansfield is the first to admit that launching a consumer packaged goods (CPG) company was never in the cards. Having invested in and advised other brands alongside her husband, she knew exactly how grueling the industry could be. “To be honest, I had zero intention or plan to start a food CPG company,” Mansfield says. “We know enough from investing to know this isn’t an easy path. But we looked endlessly for a brand doing what we are doing with cadootz! and failed at finding one. So, in 2023, we decided to roll up our sleeves and create the

snack brand we had been in search of for years.”

The catalyst for cadootz! was the realization that feeding three growing boys is a full-contact sport.

“It’s no secret that for kids, snack time isn’t just a time of day—it’s truly a way of life,” she says. “But so often it feels like snacks (especially kids’ snacks) have to come with a compromise.”

Naming a brand is a notoriously treacherous endeavor, but for Mansfield, the answer was sitting right in her living room. “Nobody warned me about how crazy it is to name a brand, but I am so happy we went down the name journey,” she says. “I’m sure all parents can relate

to having dozens of nicknames for their kids, as we do, and cadootz! is a variation of one we’ve always called our youngest son, Cooper— who absolutely loves to snack.”

The name stuck because it captured a specific feeling of pure joy. “Over time, for our family, the word cadootz has come to represent the infectious childlike excitement that all kids display,” Mansfield explains.

BITE-SIZED BLISS Creating the product, however, was less “childlike joy” and more “rigorous science.” Mansfield didn’t just want a cracker; she wanted

something the grocery aisle had convinced her didn’t exist. It took three years to develop the debut lineup of savory crackers because Mansfield refused to lower the bar.

“Our team laughed at me with the list of brand standards I dreamt of for cadootz!” she says. “It was really important to us to create a snack that had absolutely nothing to hide.”

The result is a refreshing spec sheet of ingredients: organic; gluten-free; kosher; non-GMO; and a “no” list that includes no seed oils, nuts, glyphosate residue, or added flavoring. “We are also really proud of the fact we don’t use natural

flavors to enhance the flavor in our crackers,” Mansfield notes, pointing out a common industry loophole. “Most are just now learning that natural flavors aren’t as natural as you think. There can be dozens of hidden ingredients to make up that one ‘natural flavor.’”

CRUNCH TIME The decision to go gluten-free was more a personal choice than a marketing ploy to capture the wellness crowd. Mansfield’s husband has celiac disease. “We knew from the beginning that we wanted cadootz! to be glutenfree,” she says. However, she was adamant about avoiding the texture profile common in the genre, which often ranges from “chalk” to “damp cardboard.” She

adds, “cadootz! is one of those snacks where you are eating it and say, ‘Oh wow, this is glutenfree? I had no idea!’”

While nutritional statistics impress parents, they don’t mean much to a 5 year old. If a snack doesn’t taste good, it stays in the lunchbox. Mansfield used her own children as the ultimate focus group to test the crackers.

“Kids don’t fake it around food, and seeing ours love cadootz! is the most amazing and surreal feeling,” she says. “When we came back home with our very first benchtop samples and saw how much our kids were obsessed, we were so proud.”

Working with her husband to build this legacy has been the cherry on top. “You can

actually have fun if you make it fun,” she says of working with Jordan. “It’s not glamorous being together 24/7, but it is so incredibly special to be running three businesses together and showing our kids that you can be your own boss and follow an unconventional path.” cadootz! isn’t just about crackers; it’s about solving a problem Mansfield faced daily.

“Our ultimate goal is to take the stress and guilt out of snack time for parents,” she says. “And fingers crossed, they come to buy it again and again … and again.”

As cadootz! launches nationwide, if the empty boxes in her own pantry are any indication, she won’t need to cross her fingers for long.

IT’S A TYPICAL SENIOR year at Millburn High School—college applications, AP exams, and the countdown to graduation—but Jessica Pei has found her artist’s sanctuary at home surrounded by mismatched jars filled with pens, pencils, and brushes. “It’s chaos, but organized chaos,” she says.

For this 12th-grade art student, that organized chaos has yielded extraordinary results. This year alone, Pei has earned two Scholastic Gold Keys and two Silver Keys, been featured in the Morris Museum’s Fresh

Perspectives exhibition and the SOPAC Inspired Minds exhibition as a finalist, and received a perfect score on her AP 2D Art and Design portfolio.

Despite these accolades, the artist remains refreshingly grounded about her achievements. “I don’t think winning awards has influenced my current or future goals and plans,” she says. “While I’m really happy to be acknowledged for my art, I don’t create it for the sake of winning. Art is something I find really fun, and the joy I get from creating these pieces is what motivates me the most.”

FRAME OF REFERENCE Pei’s artistic journey began with a simple act of admiration. “I can’t pinpoint a specific moment where I fell in love with art, but my earliest memory of what sparked my interest in art is watching my older sister drawing fairytales at the dining room table,” she recalls. “I remember sitting beside her, just watching her draw, and wanting to be an artist, too.”

That childhood dream has evolved into a sophisticated artistic practice.

Today, Pei’s creative process begins with spontaneous doodles on Post-It notes, progresses to refined sketches in her sketchbook or iPad, and culminates in exceptional finished

pieces. Her medium of choice is acrylic markers. “I’m really drawn to the flexibility of the medium as it’s easily able to be covered up, and the vivid colors it offers allow me to experiment more with mark-making and stylization,” she says.

THE ARTIST NEXT DOOR Pei finds inspiration in the most unexpected places—often right in her own backyard. “I love the people and vibrant community,” she says. In her free time, she enjoys urban sketching around town, an activity that has transformed her relationship with familiar spaces. “I’ve noticed that through taking time out of my day to sit down and sketch the places I see all the time, I’ve started to notice details I never paid attention to before.”

This keen observational skill extends to all aspects of her life.

“I find inspiration everywhere,” Pei notes. “Many of the patterns, objects, and buildings I feature in my art are inspired by things I find interesting in my daily life.”

is her childhood teddy bear. “I’ve had him since I was born, and I’ve taken him almost everywhere with me,” she explains. “In a way, he’s a symbol of my childhood, which is something that has influenced my artwork.” This personal touch adds depth and emotional resonance to her pieces, connecting her present creative work to her earliest memories.

Pei’s recent piece “The Land of the Bears” pushed her far outside her comfort zone. Working with watercolor on a much larger scale than usual, she faced technical challenges that forced her to adapt.

“The paper kept warping because of the water, and I found myself

changing the design and method as I went,” she says. “Through this process, I learned the importance of being flexible and adapting to my situation instead of starting over or giving up.”

A COLORFUL JOURNEY Pei’s artistic horizons continue to expand. After being captivated by Salvador Dalí’s “The Little Theater” at the Museum of Modern Art in New York this year, she’s eager to explore blending 2D illustration with 3D elements. Currently, she’s experimenting with ceramics, designing a whimsical set of characters based on fish-fruit hybrids.

While she may not pursue fine arts professionally, Pei hopes to find a career in an art-adjacent field. “I think art has always had an important role in society and always will,” she says. “It allows people to express themselves, tell a story, and raise questions in a way that I find hard to express with other media.”

As she prepares to graduate and embark on her next chapter, Pei remains influenced by her peers at school. “Seeing them experiment with new materials or techniques inspires me to try new approaches to my own work, too,” she says. It’s this collaborative spirit that makes Pei an artist to watch—one organized chaos at a time.

THERE’S SOMETHING refreshingly radical about walking away from a successful career to pursue work that feeds your soul. Real estate had given Andrea Fine her financial security and professional credibility, but it had also taken her further from her family and deeper into a role that never quite fit. “I reached a point in real estate where the sales side never felt like ‘me,’” Fine says. “I’ve always loved psychology, and my own therapy journey shaped so much of who I am. I knew I wanted a career with deeper meaning— one where my life experiences and empathy could actually support people in a real way.”

HOW TO FOCUS ON A FRESH START As 2026 begins, Fine shares these actionable approaches to intentional living: • Reframe Your Goals: Set intentions that come from care rather than pressure.

Ask yourself, “What would genuinely support my well-being this year?” When goals are rooted in kindness instead of self-criticism, they become far more sustainable.

• Protect Your Morning: Give yourself a gentle buffer before the world comes rushing in. Even 20 to 30 minutes in the morning without your phone can change your whole day.

• Reset Somatically: Check in with your body at least once a day. Notice your breath, your shoulders, your tension. That tiny moment of awareness pulls you out of autopilot and back into yourself—and presence always starts in the body.

“I learned how to stay calm, read people quickly, support couples who communicate very differently, and hold space when things get overwhelming. In a funny way, it was great training for therapy, just with fewer home inspections.”

Having shepherded people through both buying homes and beginning therapy—two experiences that routinely top lists of life’s biggest stressors—Fine brings an unusually grounded perspective to her practice. “When something matters, people show you their most vulnerable selves,” she says.

“Stress brings out old patterns and magnifies communication differences, especially for couples.

Those experiences taught me to lead with patience, empathy, and grounding—because underneath

the stress, people just want to feel safe and understood.”

A NEW FOUNDATION One of a group of diverse therapists at Presence of Mind Therapy, Fine has created something that feels entirely authentic. Her approach blends mindfulness, somatic techniques, and practical tools, helping clients navigate relationships, transitions, anxiety, and identity questions. “My goal is to make therapy feel human, comfortable, and empowering—like you can show up exactly as you are,” she says.

Fine is also determined to challenge outdated assumptions about whom therapy is for. She’d most like to retire the misconception that you need to be in crisis to go.

She says, “Therapy isn’t just for when things fall apart—it’s also for growth, clarity, and learning how to feel more grounded in your life.”

• Create Micro-Pauses: Even a one-minute reset between tasks stops overwhelm from snowballing.

• Practice the Grounding Breath: Inhale for four, hold for two, exhale for six. It signals safety to your body and brings you back into the moment in under 10 seconds.

• Embrace “Good Enough”: Perfection is exhausting— consistency and compassion are what keep you well.

SOMETIMES INNOVATION in education starts with a generous teacher willing to give up their prep period and a single “what if?” moment.

Meet The Millburn Morning Show, a studentdriven Millburn High School (MHS) podcast where neurodiverse students build essential skills like communication and community navigation. Kristina Holness, the 21st Century Living Skills teacher behind the project, talked with us about happy accidents, saying yes, and why watching students see themselves as creators might just be the point of education.

What sparked the idea for The Millburn Morning Show?

A desire to give students a platform where their voices could be heard and celebrated. When I saw the studio, I immediately thought, “My students can do this—they should be part of something creative, public, and empowering.” That belief became the foundation of our show. Students now alternate between recording cooking segments and podcast episodes.

These experiences offer meaningful growth. Students learn communication skills, teamwork, sequencing, problemsolving, and digital literacy. They also build confidence as they take creative risks, interview guests, and watch their work evolve into polished final videos.

Where is the studio located, and how do you choose topics?

We record in the Digital Production Podcast Studio, called Studio 462, located inside MHS. We aim for a mix of themes like cooking, school events, and celebrations, balanced with student-led niche interests like gaming or sports. We are in the first academic year of bringing this to fruition with this class. The guiding question is, “Will this encourage students to express themselves authentically?”

Could you walk us through a typical episode?

It begins with brainstorming, then script drafting or question writing. Students rehearse, record in the studio, and help review the footage. My favorite part is the moment they put the headphones on and suddenly transform—they sit taller, smile wider, and step into their role with pride.

How do you help students overcome challenges?

The most challenging part is speaking clearly and confidently into a microphone.

To support them, we practice with warmups, breathing exercises, and low-stakes conversations to build comfort and familiarity.

Our cooking segment on making banana bread. The students measured, mixed, narrated, reacted, and problemsolved on camera. Seeing their excitement and all the impromptu moments made my day. For example, my student Oliver went directly in front of the camera to name our “secret ingredient”—it showed so much of his personality when the final edited video played.

Who is your typical listener, and how do you reach non-podcast fans?

Our listeners are students, staff, and families who enjoy celebrating student creativity. To reach new audiences, we keep episodes short, fun, and visually engaging—especially through cooking and behind-the-scenes content.

What misconception about student podcasts would you like to debunk?

That they’re “just for fun.” In reality, student podcasts are powerful literacy tools—they teach communication, planning, expression, digital production, and social-emotional growth. The learning behind each episode runs deep.

What is your favorite behind-the-scenes podcast moment?

Any time the students see themselves on camera for the first time. The room fills with laughter, cheering, and pure joy.
