At 73 years young, Phyllis Teats is a grandma on the go. Whether hosting a poolside picnic or cheering at her grandson’s ball games, there’s not much that keeps her on the sidelines. Long before high-rise apartments and condos took over in Fort Lee and Cliffside Park, the magnificent view of the New York City skyline belonged to Palisades Amusement Park. With its wild roller coasters, water rides, big-name concerts and enormous saltwater pool, it was one of the country’s most visited destinations until it was shuttered in 1971. But whatever happened to those beloved attractions? The iconic Cyclone roller coaster is back in Fort Lee after spending years in storage in a Pennsylvania barn. Last year, five cars from the ride were donated to the borough to be refurbished by Fort Lee and Cliffside Park. Restoration was completed on the first car, which made its debut at the Fort Lee Memorial Day Parade last May. The goal, according to Tom Meyers, Fort Lee’s director of cultural and heritage affairs, is to display the refurbished cars in museums and other places for public viewing. Tenafly parents now have a way to protect their student-athletes. The new Tenafly Protect a Heart Committee, with support from Englewood Hospital and Medical Center and the Philadelphia-based nonprofit Simon’s Fund, is offering free heart screenings for kids ages 8 to 19. Screenings will be offered March 12 at Stillman Elementary School. The process is easy and quick—it takes about 30 minutes. You fill out a medical history form online in advance, then a clinical professional records your child’s data and completes an electrocardiogram and if necessary an echocardiogram. Kids deserve the best, Jerry Kallman believes. And not just those in affluent Bergen County, but African children too. Kallman has participated in dozens of service projects as a member of the Ridgewood Rotary Club, but one stands out the most from the seven years he’s been president of the organization. Since 2008, Kallman, his wife, Lorraine, and a group of Rotarians have been visiting and supporting the Kishermoruak Primary School in the Maasai Mara Reserve in southeast Kenya. They’ve implemented a hot lunch program for the 440 students, refurbished nine classrooms and administrative offices and installed a deep-water well. Solar panels are next on the list in an effort to bring audiovisual components to learning. But during their annual visit last summer, the Kallmans and two retired middle school principals—Patricia Hanratty of Mahwah and Patty Ann Faugno of Belmar—went a step further by introducing the Maasai girls to AFRIpads, washable sanitary napkins developed in Uganda. “The girls had no concept of feminine hygiene,” Kallman says. “When they had their monthly periods, they would stay home from school. If they were out for a week, they simply missed what was taught then. If we can keep the girls in school, what a difference that makes!” But that’s not where the story ends. The group soon learned that Maasai girls usually don’t wear underwear, which is essential for the AFRIpads to work as intended. The solution was to purchase 132 pairs of underwear (two for each girl) for the young women to use with the ARFIpads. “The head teacher reports that the girls have adopted and embraced them,” says Kallman. “So we’ve actually begun to address the kids’ health—that’s something special.”

many qualified people give advice on he althy e ating. but advice can be easy to forget—or to rationalize away. Happily, there’s an expert here in Bergen County who’s willing to go beyond advice to share a “diary” of foods she actually consumes. She’s Jacqueline Ehlert-Mercer Ed.D., R.D., a registered dietitian and nutrition educator (wisegourmet.com). “Think pleasure, not dread,” she counsels. “Notice the different tastes, textures and portions of the food your body needs. A once boring fruit can be transformed into a delicious frozen yogurt treat, or a vegetable into a delectable snack.” To get on track, she suggests keeping a diary of the foods you eat (as well as when and why you ate those foods) so you can reflect on the good choices you made and identify areas that need improvement. Here’s a page from her own food diary:

Lunch Round rye crackers are an excellent complement to many foods. They add crunch to breakfast with a mere 40 calories, zero grams of fat and two grams of fiber. I top them with egg whites because they are high in protein and contain no fat, and I add a few tablespoons of salsa for extra flavor. If I’m in a hurry, I layer yogurt, fruit and seeds or whip up a super-tasty berry smoothie. (The berries are full of antioxidants and vitamin C.) I also include protein powder and psyllium, which together contain a good amount of protein and fiber. Between breakfast and lunch I’ll sip two cups of green tea.

I love the simplicity of the packaged organic salad mix. Researchers tout the cancer-fighting powers of broccoli sprouts, the probiotic properties of cabbage and Brussels sprouts, and the antioxidant potency of kale and chicory. Top with tofu or chicken and creamy slices of avocado and crunchy apple. I drink unsweetened green Sencha tea, which has been found to protect against cancer.

Afternoon Snack n 1 100-calorie bag microwave popcorn n 1 glass ginger-lemon sparkling water (made with a SodaStream Sparkling Water Maker) As the day wears on, I liven up my afternoon with a crunchy/ salty treat such as a bag of popcorn. The SodaStream allows me to turn regular tap water into a delicious beverage without the added calories from sugar.

After-Dinner Snack n Frozen Yogurt Mango Treat (see recipe at right) n 1 cup decaf green tea This easy and delicious treat, made with Greek yogurt, whey protein, psyllium, dates and vanilla, is packed with vitamin A, beta-carotene, protein and fiber. It’s excellent for eyesight and the digestive tract.

Frozen Yogurt Mango Treat ½ cup frozen mango chunks ½ cup vanilla Greek yogurt 1 date ½ scoop whey protein 1 Tb. psyllium ½ cup ice cubes Water as needed Place ingredients in a blender or smoothie machine and blend until mixture is smooth but still semisolid. Scoop into your preferred mold and freeze until serving time.

Smoky poblano peppers are the perfect counterpart for sweet cherry preserves. The creamy brie brings them all together. n ½ tsp. olive oil n 1 whole poblano pepper, sliced n 1 clove garlic, minced n 1/8 tsp. salt n 2 tsp. butter n 4 slices hearty white bread n 4 slices brie cheese (rinds removed) n 2 generous Tbs. cherry

Heat olive oil in a skillet over medium heat. Add poblano peppers. Cook peppers for 3 minutes. Add garlic and salt. Cook an additional minute. Remove from heat. Spread ½ teaspoon of butter on one side of each piece of bread. Place two slices of bread buttered side down on a hot grill pan. Top with two slices of brie and a tablespoon of preserves on each sandwich, followed by pepper slices. Cover with remaining bread, buttered side up.

kale and brussels sprouts stuffed pita sandwich Salty pancetta, crunchy Brussels sprouts and creamy blue cheese make this light pita sandwich irresistible. SALAD n 8 oz. Brussels sprouts, thinly sliced n 2 oz. pancetta, chopped n 3 cups tightly packed curly leaf kale n 2 Tbs. blue cheese, crumbled

VINAIGRETTE

In a bowl, toss together the Brussels sprouts, pancetta, kale and blue cheese. Prepare the dressing by whisking together shallots, mustard, vinegar, olive oil and salt. Pour dressing over salad. Toss to coat. Stuff salad inside each pita. Serve.

crab cake sandwich with artichokes and crème fraîche The problem with crab cakes is that you never get enough. So here’s a version that offers dependable crab-cake satisfaction whenever the craving strikes. n n n n n n n n n n

8 oz. lump crab meat

¼ cup mayonnaise 1 egg, lightly beaten 1 tsp. lemon juice ¼ tsp. salt 1 Tb. parsley ¾ cup panko Japanese bread crumbs 1 Tb. butter 4 small sandwich rolls 4 Tbs. chopped marinated artichoke hearts

In a bowl, combine crab meat and mayonnaise. Stir in egg, lemon juice and salt. Add parsley and panko and stir until combined. Do not overmix. Refrigerate mixture for 1 hour. In a large skillet, melt 1 tablespoon butter over medium heat. Shape crab mixture into 4 patties and cook for 5–8 minutes per side, or until golden brown. Place one crab cake on the bottom of each sandwich roll. Top with 1 tablespoon chopped artichokes and 1 tablespoon crème fraîche. Sprinkle ½ teaspoon of fresh tarragon over each crab cake. Top with roll top.

spicy apricot pork sandwich with honey lime slaw This smoky sweet pork and zesty slaw will be requested at every BBQ! APRICOT PORK n n n n n n n n n n n

3 lb. pork tenderloin 2 tsp. olive oil 2 cloves garlic, minced 1 cup ketchup ¾ cup apricot preserves ½ cup brown sugar ¼ cup cider vinegar ¼ cup cayenne pepper sauce 1 tsp. cumin ½ teaspoon salt 1 Tb. Worcestershire sauce

Place pork tenderloin in a slow cooker. In a bowl, combine olive oil, garlic, ketchup, preserves and next 6 ingredients. Stir and pour over pork. Cover and cook pork on high for 3 hours. Shred fully cooked pork. For the slaw, place cabbage in a bowl. Add cilantro, honey, lime and salt. Toss to coat. Divide pork among each roll and top with slaw.

this gluten-free grain is full of nutritional benefits—and it pops! does sorghum sound likE SOMETHING way down on ingredient lists? It’s really the world’s fifth most important cereal crop (after rice, wheat, corn and barley). The durable sorghum plant resists drought, heat and insects, so it grows where other crops can’t. Cooked like rice, made into porridge or baked

into flatbreads, it’s a staple food for millions in Asia and Africa. It’s gaining increased culinary attention in the United States too, because it can be ground into flour and used as an alternative to wheat flour—yet it’s gluten-free. If your grandparents hail from Dixie, they may recall a widely used sweetener made from sorghum that was called sorghum molasses (though it wasn’t really molasses). And baijiu, known as “China’s national drink,” is a clear liquor made partly from sorghum.

Sorghum is rich in nutrients and especially high in fiber and iron—a 3.5-ounce serving meets about one-fourth of an adult’s daily need for each. Such a serving also has more protein than corn (11 grams to 9 grams) or wheat (9.7 grams). Sorghum is clearly a great choice for those with celiac disease, but even gluten-tolerant eaters may wish to try it, as its slower digestion rate leads to longer-lasting energy. Compounds in the grain called 3-DXA have shown to help the body fight cancercell growth. And when University of Nebraska scientists fed sorghum to hamsters, it reduced the critters’ HDL (“bad”) cholesterol levels— researchers think it could have the same benefit for humans in a dietary supplement.

Nigeria, India, Mexico and the U.S. are among the top producers worldwide, while the leading sorghum-producing states are Kansas and Texas. And unlike corn, sorghum hasn’t been touched by genetic engineers.

Most grocers sell whole-grain sorghum and sorghum flour. Store grains and flour in airtight containers in the pantry, where they’ll keep for months. Used for baking, sorghum flour may require an added binding agent— check the recipe. Soak the grain overnight and let it simmer a bit less than an hour, and it’s ready to sing in casseroles, soups and crunchy salads; try it in recipes that call for Israeli couscous or wheat berries. The Emerald Isle’s First craft distillery rolls out a double-barrel irish whiskey that’s the toast of the town. when you’re having a drink with your friends on St. Patrick’s Day, put down the pint of beer and raise a glass of Irish whiskey instead. That seems to be the trend—sales of Irish whiskey in this country have jumped more than 500 percent since 2002, according to the Distilled Spirits Council of the United States. Credit manufacturers like Glendalough Irish Whiskey, Ireland’s first modern craft distillery, for the recent resurgence. In the 18th and 19th centuries this whiskey-loving land had more than 200 licensed distilleries (and goodness knows how many unlicensed ones). The number later dropped to a handful, but Glendalough is dedicated to reviving this neverquite-lost art. The company seeks, it says, to “make innovative spirits while staying true to the tradition and heri-

tage of our ancestors.” In that spirit, Glendalough introduced a new singlegrain, double-barrel Irish whiskey about a year ago. It’s crafted in small batches from a mash of malted barley and corn, then aged first in American oak bourbon barrels and finished in Spanish Oloroso sherry casks. The cask-strength liquor is cut with pure spring water from the surrounding Wicklow Mountains before bottling. Will Glendalough’s double-barrel Irish whiskey claim the allegiance of Eire’s sons and daughters worldwide? It’s too soon to know for sure. What seems clear is that this new whiskey offers fruity notes on the nose, a sweet and creamy presentation on the palate, a finish that hints of ginger—and a delicious new way to celebrate the dude who rid Ireland of its snakes. —darius amos

Benjamin A. Gilman Scholarship Bergen Community College, Paramus, bcc.edu Bergen Community College student Elie Tanous of Moonachie has been awarded a U.S. Department of State Benjamin A. Gilman International Scholarship to study in China during the spring 2016 academic term. Tanous is one of approximately 800 undergraduate students from 355 colleges and universities across the U.S selected to receive the award. He is the seventh BCC student to be so honored since 2011.

you could say she married well. French luxury brand LVMH (Louis Vuitton Moët Hennessy) could have its choice of lovely “mademoiselles” when searching for a suitable match in North America, but the boutique hotel on Anse des Flamands, probably the prettiest beach on the island, won out and after a year-long engagement (read: renovation), it joined the exalted Cheval Blanc family. (Other family members include Courchevel in France and Randheli in the Maldives.) Perhaps the best part of the union is that it appears that little has changed at the beloved hotel, now called the Cheval Blanc St.-Barth Isle de France. The staff—the hotel’s heart and soul—remains the same: affable, accommodating to a fault and decidedly French. The only difference is that now they don charming seersucker uniforms. Similar too are the guest quarters—40 suites, bungalows and villas, which feel less like hotel rooms than the bedrooms of a Provençal family. The whitewashed country furnishings have been upgraded with the brand’s signature taupe plus accents of the palest salmon-pink, which you’ll find on everything from beach towels to pillows to glassware. Thankfully, the popular daily fashion shows remain too. They feature resort wear from the hotel’s closetsized boutique stuffed with everything from Pucci bikinis and stylish caftans to straw hats and jewelry. Don’t be surprised if the model, Roxane, looks familiar: When she’s not strolling the sandy catwalk, she’s taking your dinner order in a charmingly halting English. Oh, yes, the food. As a French territory, St. Barts not surprisingly has a cuisine that reminds you of dining in the south of France. Chef Yann Vinsot oversees a pair of excellent eateries on this property: La Case de L’Isle, featuring sophisticated French-Caribbean plates (plus a 150-odd selection of wines and champagnes) and the more casual La Cabane de L’Isle, site of the fashion shows. Only eight miles across, St. Barts (short for St. Barthélemy and sometimes spelled St. Barth) is a hilly (thanks to a number of volcanic peaks) speck popping out of the northeast Caribbean in the French West Indies. Discovered by Christopher Columbus in 1493 (who named it for his brother Bartolomeo), the island was settled by the French and owned for a while by Sweden before returning to French

control. It became chichi after the Rockefellers and Rothschilds fell for its charm in the mid-’50s. With no direct flights, getting to St. Barts isn’t easy. Some folks fly to St. Maarten and take a short flight or ferry across. A more civilized crossing (read: easier) is flying to San Juan, then boarding a tiny puddle jumper. One of Tradewind Aviation’s multiple daily flights will do nicely. Its Pilatus PC-12s are comfortable and sturdy—important features as the eight-seater threads between two jagged peaks before touching down on a teensy runway. (Flights from St. Thomas and Antigua are also available.) While the atmosphere is relaxed, folks do dress to impress while shopping or dining in the capital city, Gustavia, with its yacht-lined harbor. (The island hosts one of the world’s most thrilling yacht races, Les Voiles de St. Barth.) Luxury brands abound along with unique boutiques, often outposts of exclusive Parisian designers. Prefer to test your sea legs with a more gentle cruise? Rent a catamaran with crew for a day-long or half-day tour. Our captain, Miguel of St. Barth Sailor, anchored in the bay near Colombier, where we swam to the beach (the only one of 16 beaches not easily accessible), after which we sipped champagne and nibbled on a gourmet lunch prepared by Cheval Blanc (lest we miss the restaurants’ gastronomic delights too much). Back on terra firma, we proceeded to Bonito, where fashionistas flock to enjoy a delicious Latin American menu alongside unrivaled views of the harbor from an open-air pavilion. If your “cruise” doesn’t offer enough of a respite, the spa back at Cheval Blanc will chase away any lingering stress. It offers signature Guerlain treatments. (It’s the only Guerlain spa in the Caribbean.) Try the Solar Escape, a body massage combined with a facial, or let a beauty coach choose an indulgent experience for you. Do you think you could enjoy an island with no casinos, no all-inclusives, no cruise ships in port? An island with no poverty, no crime, no beach vendors? With unfailingly polite people, awe-inspiring vistas, white sand (or shell or stone) beaches and top-notch cuisine? I do.
