What inspires you? A philanthropist raising money for a global cause, an artist who creates innovative work, an educator devoted to enriching children’s lives. For me, it could be a piece of music, a simple act of kindness or just about anything that motivates me to get going. When putting together this year’s Fashion Issue, we assembled a plethora of stories, interviews and photographs that we hope will stimulate your senses and encourage you to consider your personal style. We sat down with our style pros, four Bergen County boutique owners, who discussed fashion trends, date-night looks and the people they admired both in and out of the industry. (One of their answers, Audrey Hepburn, is one of my personal favorites too.) Read what Sue Bahng, Lynn White, Yansi Fugel and MaryAlice Farella shared on page 44. Everyone knows that denim is a fashion staple, and we all have our favorites. PARADE PREMIERE Rutherford residents needn’t travel far to enjoy a St. Patrick’s Day parade this year: The town is hosting its very first on March 4. The idea was proposed to Mayor Joe DaSalvo by Patrick O’Neill, a local police officer and member of the Emerald City Pipe & Drum Band who travels down to Belmar’s parade every year. It was O’Neill’s hope—and now reality—that local musical groups and Irish organizations could participate in an event closer to home. Meanwhile, the Bergen County Irish Association is holding its 37th annual parade on Sunday, March 11 at 2 p.m. on Washington Avenue in Bergenfield. Resident Thomas O’Reilly will serve as this year’s grand marshal, and there will be performances from local Irish stepdance troupes and musical groups.

The New Jersey Center for Teaching & Learning (CTL) in Trenton awarded 35 NJ teachers $5,000 scholarships; with a donation from Bayer USA, CTL was able to help the educators earn certification in physics so that NJ students have as many science, technology, engineering and mathematics (STEM) role models as possible. TURKISH DELIGHT The brand-new Usta Grill in Cliffside Park is promising “spontaneous, homemade” Turkish dishes like kofte (meatballs), paninis, stews and cold bean salads, which are served seven days a week until 9:30 p.m. Owners Adem Kazanci and Kemal Buyukbaran are running the show, with Adem in charge of all chef’s duties (including pastries); the restaurateur has been cooking since he was 13 and most recently worked at a kosher steakhouse in Brooklyn. DOMINICAN DIGS Authentic Dominican food is on tap at El Malecon, one of Fort Lee’s newest restaurants. TGIF Looking for a new Friday night dinner spot? Try Kinyobi in Hackensack—after all, its name literally means “Friday” in Korean. The establishment’s owner used to cook for friends and family on the weekends and decided to turn this passion into a business. Now, the culinary wiz is serving authentic Korean fare with a twist—like traditional bulgogi (marinated beef) inside of sliders and burritos, topped with guacamole and white kimchi. Other specialties include fried meat, veggie dumplings and spicy sweet chicken wings with crispy fries on the side. India Uhia recently visited Kinyobi with her boyfriend and was more than pleased. “We tried the vegetable pancakes, wings and fried dumplings,” she says. “The portion sizes were perfect, and you could tell that everything was freshly prepared.”

LOCALS LOVE
Let’s face it: You can’t talk about Paramus without obsessing over its malls—but before we expound on those legendary shopping outlets, let’s talk about all the other reasons Paramus is prime. First off, the borough is an outdoor enthusiast’s dream: The 596acre Saddle River County Park stretches all the way from Rochelle Park to Ridgewood courtesy of a 6.8-mile walking/bike path, with babbling brooks, duck ponds, picnic areas, a waterfall and, in Paramus itself, the historic Easton Tower, built in 1899, along the way. The Van Saun County Park, meanwhile, offers baseball, softball and soccer fields; basketball and tennis courts, a mini-train ride, a playground, a carousel, pony rides and—best of all—a zoo that features mountain lions, spider monkeys, bald eagles and countless other animals. For indoor activities, there’s Humdingers, an “eatertainment” hybrid with 12 boutique-style bowling lanes, eight automated batting cages and plenty of grub; at The Players Club, you can have a 3D golf adventure at once of nearly 50 world-famous golf courses. As far as schooling, the Paramus Public School district educates more than 4,000 students in pre-K to 12th grade (courtesy of about 314 teachers). There’s also Paramus Catholic High School, Yavneh Academy and Yeshivat Noam (for K-8) and Frisch School (for grades
9-12). For higher education, Bergen Community College has satellite centers around the county (the bulk of its 17,000 students are at the Paramus location). Home stores abound in Paramus: There’s Safavieh, Porcelanosa, Lazzoni and BoConcept. Mitchell Gold + Bob Williams has its 10,000-sq.-ft. flagship store in the borough, Nortons Paint is the largest retailer of Benjamin Moore in Bergen County, and, in addition to its wares, Floor & Décor offers free how-to classes. And that, at last, brings us to those glorious malls: With 2.1 million square feet of leasable space and more than 300 stores, including Lord & Taylor, Macy’s, Neiman Marcus and Nordstrom, Westfield Garden State Plaza is the largest mall in all of New Jersey. Nearby, Paramus Park includes a Macy’s plus a soon-to-come Stew Leonard’s (complete with movie theater); the Outlets at Bergen Town Center boasts a Lindt Chocolatier, the gigantic Century 21, Target and a Whole Foods Market. The Fashion Center, meanwhile, has a Lord & Taylor, TJMaxx, Bed Bath & Beyond, Toys R Us, Fairway Market and Best Buy. And despite the infamous Blue Law (all those malls are closed on Sundays), Paramus’ shopping centers generate over $5 billion in annual retail sales—more than any other zip code in America.

n Paramus was home to one of the earliest drive-in theaters ever, the Paramus Drive-In, located behind what’s now Westfield Garden State Plaza. It closed in 1987 after showing one last double feature: Crocodile Dundee and The Untouchables. n When ’80s teen queen Tiffany launched her now-famous “mall tour” to promote her debut album back in 1987, her very first stop was Bergen Mall. n The Sopranos featured Paramus more than once: Garden State Plaza was shown in several episodes, and in the series finale, a scene with everyone’s favorite underboss (aka Paulie Walnuts, pictured) was filmed there.
There’s plenty of good food at Garden State et al (including the Capital Grille), but man does not live by malls alone: Locals head to El Cid for giant helpings of Spanish cuisine (and lots of sangria); the fairly new Phat Platters, meanwhile, serves Halal/ Mediterranean dishes (including wings that have already gained a rabid following). And at Chakra, chef Thomas Ciszak whips up multicultural dishes in an Asian-inspired, candlelit atmosphere (space is limited, so be sure to call ahead for a reservation).

Tell us about your personal style. I love to be on trend, but in an age appropriate, subtle manner. I like classics with a twist—a little sensual, but not too sexy. What’s your make-it-or-break-it statement piece? Most of the time, it’s a new jean silhouette or the must-have shoe for the season. I also like to cycle older pieces with updated ones to get a fresh look. When it comes to date night, what’s your favorite look? Since most date nights are pretty casual—a dinner and a drink—I like to wear a sexy jean with a feminine blouse and a little heel. Voilà! You’re ready to enjoy the evening. What’s your daily go-to outfit? Jeans and a fun top paired with a cute bootie or slip-on sneaks. Since I’m running around all day, I like to be comfortable yet put together. When it gets really hot, I’m partial to one-pieces—a light jumpsuit is my favorite. Put it on and go! As far as the all-important LBD, how can one dress it up or down for either daytime or evening? A LBD can take you anywhere, and I believe a girl can never have too many of them. Because slip-on sneakers and mules are so on trend, pair them with a classic LBD shape along with a crossbody bag during the day. For the evening, simply change shoes, accessories and the bag. Put on a fabulous metallic heel, switch the bag shape to a clutch, add statement hoops and you’re ready for cocktails.

On my 16th birthday, my mother gave me a string of pearls and a bottle of Chanel No. 5, and I’ve continued this tradition with my daughter and granddaughter. Coco is timeless. What’s your make-it-or-break-it statement piece? A piece that is made to last, like a tailored pair of pants made of quality fabric. Women go out and buy items from outlet stores that they have to replace after a few washes when they could just purchase a high-end piece that will last from 5 to 10 years. Tell us about your personal style. I am deeply influenced by Coco Chanel and Audrey Hepburn— their looks will be forever fashionable. Back in the ’50s, Audrey’s go-to casual outfit was a pair of slacks and a turtleneck, and you better believe this look still works today. That’s the kind of timeless style I emulate. I’ve been wearing the same strand of pearls for 60 years, and they are as fabulous as the day I got them. What’s your daily go-to outfit? One I can wear in a variety of situations, like a smart pant suit with a cashmere sweater. It’s a look that works for meetings, client consultations and a dinner out. When it comes to date night, what’s your favorite look? It all depends on where a woman is going. Out for dinner at a fancy restaurant? Staying in to watch a movie? Every woman should have three LBDs in her closet, one for each season. She can wear the piece on its own for work, then dress it up with a strand of pearls. One of my most beloved pieces is from her—a lamb leather clutch with a metal clasp and pockets made specifically for a woman’s lipstick and address book. It’s so indicative of the time, and it will always remind me of her. She always sewed my clothing with patterns of her own invention and taught me how to make my own. What’s your make-it-or-break-it statement piece? A black turtleneck—it’s classic yet subversive. You can pair it with jeans and a leather jacket, or even a sleek tux jacket with leather pants. It’s a timeless closet essential. Tell us about your personal style. I approach style with a timeless attitude but try to stay current as well. I’m all about high-quality pieces with a minimalistic aesthetic—not needing a ton of items in my closet but being able to mix and match them well. What’s your daily go-to outfit? Something comfortable for a day in the studio! Comfort and movement are so important to me. I’ll usually throw on a skinny pant and oversize top with a pair of shoe boots. They are my go-to shoes—I have them in varying heights, styles and patterns. When it comes to date night, what’s your favorite look? It’s all about what you wear on top. You’ll most likely be sitting down to dinner or a movie, so dress up the top half of your body with a fun top and jewelry, and pair with skinny blank pants. My mother taught me to wear styles that work best for me—I’m a curvy 6-feet tall —and I’ve embraced that for years. Everyone is a different height and shape, so dressing for yourself is key. It’s an art I often teach clients—it builds inner confidence, as many people stress over getting dressed. Recently, a client told me I am her “style secret weapon,” and I couldn’t be happier with a compliment like that! Tell us about your personal style. It varies from day to day—one day, my mood may be chic, classic jeans with a cashmere sweater layered over a tank or under a fur vest with boots; on another day, I may be feeling edgy and mix a fitted black long sleeve tee with track striped joggers and a very cool Chanel sneaker. No matter what, I always need to be comfortable. What’s your make-it-or-break-it statement piece? I have so many—my very favorite is the pair of canary & white diamond earrings my husband gave me on our wedding day. They can be worn casually with jeans and a tee shirt or formally with any cocktail or evening attire. Another daily favorite are a mix of bracelets I’ve collected through the years. Stacking and mixing them gives me an edgier look that can’t be duplicated. When it comes to date night, what’s your favorite look? A silk blouse, jeans, a great pair of shoes, statement jewelry and a good fur. I usually plot date night wears around a statement accessory like a favorite clutch or piece of jewelry. Everyone looked amazing, and the styles were very sophisticated and individualized. n Breast Self-Exam and Clinical Breast Exam: Both are not recommended for average-risk women, but should be done to evaluate complaints or for higher-risk women. n Mammogram: Screening for women aged 40 to 49 should be individualized based upon risk; the U.S. Preventative Services Task Force (USPST) recommends biennial screening mammography for women aged 50 to 74 years. The evidence is insufficient to recommend routine screening after age 75.
n Cancer screening: Colonoscopy every 10 years or high sensitivity stool-based tests for average risk individuals (can be done at home and requires no bowel preparation) every year. Talk to your physician about which option is best for you. For those at average risk, colon-cancer screening should occur from age 50 to 75. Heart Health n Blood pressure test: The USPSTF recommends adults aged 18 and older with normal blood pressure should have their blood pressure checked every year. Adults whose measured systolic blood pressure was 120 to 129, or have risk factors for hypertension (obesity, for example), should have their blood pressure checked semiannually. n Cholesterol panel: Women who are 20 years and older who are at increased risk for coronary heart disease. Discuss the right frequency for you with your healthcare provider.
Women’s Health Primary Care n Pelvic exam: Screening pelvic examination is recommended at the time of screening for cancer (PAP) and/or STI screening, as well as for complaints; the American Congress of Obstetricians and Gynecologists (ACOG) recommends annual screening for adults 21 years of age and older. n Pap test: At least every three years for ages 21 to 65 years. Women older than 65 should have the test if they have not had adequate prior screening. n Sexually Transmitted Infection (STI) tests: Screening, if sexually active, for STIs and human immunodeficiency virus (HIV). n Human Papillomavirus (HPV) vaccine: Women up to age 26 whose HPV vaccine series is incomplete (two to three doses are required, depending on the age at which the vaccine is given) should discuss vaccination with their healthcare provider.

PASTA-BILITES
With lots of healthy vegetables, nuts and beans, these vegan dishes pack quite a nutritional punch. Plus, they have so much flavor, you won’t be missing meat!
ASIAN STIR FRY Yields: 3 or 4 servings
INGREDIENTS
n 12 oz. rice noodles n 4 heads of bok choy, white stems separated from the greens n 2 garlic cloves, chopped n ½ red chile, sliced or chopped n 1 thumb-sized piece of fresh ginger, peeled and finely chopped n 4 Tbs. tamari or soy sauce n Sweet & Salty Cashews, chopped (see recipe below) SWEET & SALTY CASHEWS n 1 Tbs. maple syrup n 1 Tbs. nama shoyu or tamari n 1 tsp. garlic powder n 1 tsp. smoked paprika (optional) n 1½ cups raw cashews
DIRECTIONS
Cook the noodles in boiling water following the package instructions. When done, drain then rinse with cold water and let sit. Chop the white stems of the bok choy and cook them in a wok over high heat with a splash of water, stirring constantly. After 3 to 4 minutes, add the garlic, chile and ginger and keep stirring. After a minute, add the noodles, bok choy greens and a splash of water if needed. Mix well until the noodles are warm (about two minutes), then add the soy sauce or tamari. Toss well. Serve scattered with the chopped cashews. You can also drizzle with some toasted sesame oil, if you like. TO MAKE THE CASHEWS Preheat the oven to 350°F and line a baking sheet with parchment paper. In a small bowl, mix the maple syrup, nama shoyu or tamari with the garlic powder and smoked paprika, if using. Place the cashews in a large bowl, pour over the sauce and mix well until thoroughly coated. Transfer the cashews (leave the excess seasoning in the bowl) to the lined baking sheet, spread out evenly and roast in the oven for 3 minutes.

OIL-FREE PISTOU WITH PASTA Yields: 4 servings
INGREDIENTS
n 14 oz. short pasta n 1 4 oz. green beans, cut in half or into thirds n 1 head of broccoli, cut into small florets n 2 large bunches of basil (each 3 oz.), roughly chopped n ¼ avocado n 4 to 6 garlic cloves, chopped n j uice of 1 lemon n p ine nut “parmesan” (optional, see recipe, below) PINE-NUT “PARMESAN” n ¼ cup pine nuts n ½ tsp. garlic powder (optional) n 3 Tbs. nutritional yeast
DIRECTIONS
Cook the pasta according to the package instructions in plenty of boiling water. Bring another pot of water to a boil and add the green beans. Cook for 7 to 8 minutes with the lid on, and after 3 to 4 minutes, add the broccoli, then drain and let sit. Meanwhile, make the pistou. Put the basil, avocado, garlic, lemon juice and 1 tsp. salt in a blender and add about ¼ cup of water. Process until smooth. Add more water a tsp. at a time if it needs loosening. Drain the pasta, reserving 3 Tbs. of the cooking water. Add the vegetables, pistou and reserved cooking water (it will make your pasta creamier) to the pasta and mix so the pasta is evenly coated. Serve immediately. TO MAKE THE “PARMESAN” In a food processor, combine the pine nuts, garlic powder, if using, and yeast with ½ tsp. of sea salt; pulse until a grated Parmesan-like consistency is formed.
When you substitute a vegan-based cheese, like the pine nut ‘parmesan,’ for a dairy-based one, you cut out excess fat and salt but still get the desired flavor. Meanwhile, the broccoli and green beans in this recipe provide antioxidants, nutrients, fiber and immunit-boosting health benefits.”

NOODLES WITH CARROT MISO SAUCE Yields: 4 servings
INGREDIENTS
n 9 oz. carrots, peeled and grated n ½ cup light miso paste n ¼ cup tahini n 1 Tbs. yuzu vinegar or rice vinegar n 1 thumb-sized piece of ginger, peeled and grated n 12 oz. noodles of your choice n 1 ¼ cup cooked edamame beans
DIRECTIONS
First make the sauce by blending the grated carrots, miso, tahini, vinegar, ginger and 1 cup of water in a high-speed blender until smooth. Taste, add more salt if needed, then let sit. Cook the noodles in boiling water according to the package instructions. When ready, drain and rinse. Divide the sauce between four bowls, then top with the noodles and beans and serve immediately.
This is a well-balanced dish consisting of real, whole foods. Carrots are high in Vitamin A, which is an essential nutrient for good vision, and ginger has Vitamin E, which aids in digestion. Edamame is a great plant-based protein with fiber, calcium and iron too. Extra Oregano, Please
You’ll be ordering more of the herb on just about every dish—including pizza, of course—when you discover how it fends off cancer, fights fungus and more. The mere mention of it may bring to mind a smorgasbord of Italian-American dishes but, turns out, oregano has been used in Mediterranean cuisine for years—a relative of marjoram, it’s actually referred to as “wild marjoram” in the Mediterranean, where it flourishes in the countryside. Because it’s an herb, you’re not likely to eat a lot of it at once—but fortunately, it doesn’t take much oregano to reap a host of health-boosting benefits. POWER UP At only three calories, one teaspoon of dried oregano has a whopping 8 percent of the recommended daily value (RDV) of vitamin K, which helps your blood clot and promotes bone health. It also has 2 percent of the RDV of fiber (.4 grams), calcium (15.8
micrograms) and iron (.4 grams). Other vitamins it contains include A, C, E and B6 as well as folate. A study at Louisiana State University found that adding oregano extract can also help extend the life of heart-healthy omega-3 fatty acids in fish when cooked at high temperatures. Meanwhile, oregano oil has been studied for its antimicrobial and antioxidant effects (including its ability to kill MRSA), and it’s still used in Greece as a natural treatment for certain ailments, including gastrointestinal issues. It works as a preservative too, thanks to its antifungal capabilities—the Herb Society of America reports that Egyptians traditionally used the herb as both a disinfectant and preservative. In the Philippines, its leaves are boiled into a tea to combat the common cold. In addition, two studies found oregano extract may fend off colon cancer by killing cancerous cells and preventing them from proliferating, and another study found it to have the same effect on breast cancer. Its extract is used to ease everything from parasitic infections to respiratory infections to toe fungus (but of course, consult with your doctor before using home remedies, including essential oils).
BUY/STORE/SERVE Unlike other herbs, oregano keeps its flavor well when dried. In fact, some chefs prefer the dried form because of the mellower taste and the rich aroma it produces. If buying fresh, look for healthy-looking leaves that are green with no bruises or discoloration. Buy only a few days before you plan to use them (they can be stored, wrapped, in the refrigerator), and add them to your dish toward the end of cooking. As mentioned earlier, oregano is a welcome addition to Italian food: You can use it in tomato sauces and breadcrumbs, and on pizza. But also consider how other nationalities use the herb—it’s a popular seasoning for meats, including lamb, beef, and chicken, can be added to fish, and can be mixed into a lemon vinaigrette and served on top of a Greek salad. Some other foods the herb complements include eggplant, peppers, mushrooms, olives and even beans. DID YOU KNOW? Oregano has had a place in history dating back millennia. It was likely referenced in the Old Testament (as hyssop) and was traditionally used in laurels for marriage ceremonies by the Greeks and Romans. —Liz Donovan

n 1 oz. midori n 1 oz. vodka n 1 oz. lemon or orange juice n ¼ or ½ oz. simple syrup, to taste n ice OPTIONAL GARNISHES n honey n g reen sugar for rim n kiwi
DIRECTIONS
To make green sugar, mix sugar with green food coloring.
Combine midori, vodka, juice and simple syrup in a cocktail shaker filled with ice. Shake vigorously until cold and pour into martini glass.
To make simple syrup, combine equal parts water and sugar in a small saucepan over medium-low heat until the sugar is melted.
Garnish with kiwi and other St. Patrick’s Day embellishments.

A new Mediterranean restaurant in East Rutherford is owned by a mom/daughter duo—and the love shows.
worried that I’d be too full for the entrée. My dinner partner chose the seafood pasta, a heaping mound of house-made fettuccine with shrimp, calamari, scallops and mussels. We counted a dozen mussels in the dish (and plenty of the other fish), which featured a smooth tomato sauce and perfectly cooked pasta. While I was tempted to try one of the lesser-known whole fishes—such as lavrai, a flaky white European sea bass; tsipoura, a firm, mild Mediterranean dorado; or fagri, a pink snapper—I couldn’t resist the Halibut a la Plancha. Served atop trahana, a pebble-shaped grain, with baby peas, grapes, currants, tomatoes and chestnut puree, the fish was perfectly grilled, moist and flavorful. (I did end up taking more than half home to enjoy the next day.) Even though we were sated, we couldn’t resist dessert. We shared the Ekmek Kataifi, a baked custard atop shredded phyllo with a thick layer of whipped cream, crushed pistachios and banana brulee. It was tasty but did not outshine the tried-and-true walnut baklava, served with vanilla ice cream, which proved that a great classic never gets old. Back in our car, I was reminded that we were indeed in East Rutherford. Good! Step inside the East Rutherford restaurant Elia and you just might forget you’re in New Jersey. The whitewashed brick and stucco walls, giant market umbrellas and ficus plants suggest seaside towns on the Mediterranean. There’s a long Carrera marble bar, an open kitchen with a farmer’s market-style front, showcasing fresh fish, fruits and veggies, and white tables with banquette- and chair-style seating. Tables are white with black cloth place mats and a small yet stylish bouquet of greens with wispy flowers. Occupying the space that housed Park & Orchard for 40-odd years, Elia, named for the Greek word for “olive,” unmistakenly exudes a very different vibe. It’s the brainchild of Rutherford native Annamaria Adinolfi and her mom Anna Rosati, and this pair effortlessly reigns over the chic yet unpretentious operation, featuring Greek-Mediterrean fare. Silent owners they are not. It happens that my dining companion’s name was that of a lovely town on the Amalfi coast. When we made our reservation, Annamaria mentioned that it’s her favorite place in the world. When we arrived, she took up the conversation, chatting as if we were old friends. Both mother and daughter were affable, taking pains to ensure that diners enjoyed their experience. Annamaria made the rounds several times during our visit to check on patrons. A busboy quickly filled glasses with water and brought a basket of hot, triangular-cut pitas and a creamy, tangy hummus. Our friendly server, Nikolas, answered our questions about various dishes. (It was only later that I realized he hadn’t told us the specials. Fortunately, we had a fine meal anyway.) Executive chef Jose Luis Falcon has been serving up Greek dishes in New York City, so it’s no surprise that he’s partial to fish. In fact, about three-quarters of the offerings hail from the sea. We chose accordingly. For starters, we opted for the baby shrimp and calamari, flash-fried and served with two dipping sauces: a spicy tomato number and basil aioli. Both the crustaceans and the mollusks were crisp yet tender with no trace of the greasiness that sometimes mars this dish. While that was delicious, it was the grilled octopus that stole the course. Sushi-grade fish—and plenty of it—was grilled to perfection and served with potatoes, grape tomatoes and balsamic onions in a Romesco sauce, an almond and red pepper-based concoction, which had just the right hint of sweetness but was in no way cloying. After eating the pitas and appetizers, I
