Santa Fe’s Self-Guided Foodie Tours & Trails SANTA FE MARGARITA TRAIL

Thanks to José Cuervo, who reportedly introduced tequila to New Mexico at the turn of the 20th century, Santa Fe is a mecca for the delicious cocktail. Taste 50+ margaritas at popular bars and restaurants on the Santa Fe Margarita Trail, bringing people together over fun drinks since 2014. Track your progress with the paper Passport or the app and earn rewards!

BREAKFAST BURRITO TOUR

Santa Fe is arguably the birthplace of the Breakfast Burrito—savory scrambled eggs, melted cheese, hash browns or rough-cut roasted potatoes, your choice of bacon, sausage, chorizo or calabacitas, pinto or black beans, red, green, or Christmas chile, wrapped in a fluffy, warm tortilla. Handheld or smothered, find them everywhere, including Tia Sophia’s, The Pantry, and the Plaza Café.

COFFEE LOVERS TOUR

Santa Fe is known for its chile, but our coffee is pretty remarkable, too, with many shops roasting their own beans for a signature strength and flavor. The Tour will guide you to some engaging locals’ hangouts all over town, like Ohori’s, Agapao, or Iconik, where you can relax and absorb the scenes.

FOOD TRUCK TOUR

In Santa Fe, the demand is high for a super-tasty on-thego repast, so it’s a good thing there are dozens of food trucks open year-round, like El Queretano on Airport Road, Bo’s Authentic Thai near the Capitol building, James Beard Foundation Award-nominated El Chile Toreado off Cerrillos Road, La Loncherita Salvadoreña in Midtown, and Ras Rody’s Jamaican Vegan Kitchen on Agua Fria Road.

CRAFT BEER & SPIRITS TOUR

Jump on this inspired itinerary to various breweries, beer halls, tasting rooms, and distilleries! Try hop-filled IPAs, like Santa Fe Brewing Company’s Happy Camper, opaque stouts, hard kombuchas or the local cideries’ variety of fruit-derived fermentations from sweet to dry. For the harder stuff, there’s gin from Tumbleroot or Los Poblanos, Santa Fe Spirits’ The Original Santa Fe Whiskey PX, and As Above So Below’s Ritual Vodka. And don’t miss the New Mexicobased Gruet Winery’s tasting room, which serves Pinot Noir- and Chardonnay-based sparkling wines with roots originating from Gilbert Gruet’s Champagne house in Bethon, France.

THE CHOCOLATE TRAIL

This rich and sweetly flavored route connects Santa Fe’s world-class artisan chocolatiers, who offer everything from traditional cacao drinks to hand-rolled truffles and hand-dipped chocolates accented with piñons and chile. Chocolate Maven Bakery, Kakawa Chocolate House, Señor Murphy Candymaker, Sweet Santa Fe, and The Chocolatesmith look forward to welcoming you!

Farm Fresh Ingredients Fuel Santa Fe Restaurants

S

anta Fe is undeniably a food town, and I am living proof of that. My culinary journey began more than 30 years ago when my parents started a small organic farm in the Española Valley, just north of Santa Fe. Freshly graduated from college, I helped staff our farm stand at the Santa Fe Farmers’ Market, and that experience sparked my passion for food and the local food culture. The Santa Fe Farmers’ Market, along with the city’s vibrant fine dining scene, had such a profound impact on me that I decided to enroll at the Culinary Institute of America in Hyde Park, New York. Eventually, I returned home and now I run Monte Vista Farm, the family business, with my younger brother. I am also proud to serve as president of the Board of Directors for the Santa Fe Farmers’ Market. Launched in 1968, the Santa Fe Farmers’ Market, consistently ranks among the top 10 farmers’ markets in the United States. Its success embodies Santa Fe’s rich and dynamic food culture. While I expect you will be experiencing our city’s historic landmarks, world-class museums, opera, music festivals, and breathtaking sunsets, I urge you to begin your Santa Fe adventure at the Santa Fe Farmers’ Market. It is the heart of our local food scene. Each week, local chefs from Santa Fe’s finest restaurants shop at the market, selecting the freshest ingredients to feature on their menus. Whether it’s lamb pastured in the Sangre de Cristo Mountains, freshly harvested greens, or roasted New Mexico chile, these chefs know that the best ingredients come straight from our local farms and ranches.

New Mexico’s agriculture is central to our unique food culture. Traditional cuisine in Northern New Mexico evolved around our staple crop, New Mexico chile peppers and the Three Sisters of Native American tradition—beans, squash, and corn. Our state also boasts a rich winemaking history that dates back to 1629 when Franciscan monks planted the first vineyards, nearly 300 years before statehood and 50 years before the first vines were planted in California, making New Mexico the oldest wine-growing region in the nation! Throughout the year, we celebrate this legacy with several wine festivals, the most famous being the Santa Fe Wine & Chile Fiesta, held every September during chile roasting season. If you happen to visit during peak harvest season (July to October), you’ll have the opportunity to experience chile roasting as well as the abundant local produce sourced from farms and ranches in the 15-county area of Northern New Mexico, much of which you can find at the Santa Fe Farmers’ Market. Each vendor is verified to be selling what they produce themselves. The market is open year-round every Saturday, with additional hours on Tuesdays during peak season. Many restaurants in this magazine source their ingredients from the Santa Fe Farmers’ Market, making it an integral part of our culinary scene. Visit the market, and if you spot a chef picking ingredients, ask where those perfect peaches or juicy tomatoes are headed—you might just discover your next delicious meal! I wish you happy travels and welcome you to our city!

Jennifer Fresquez,

Farmer at Monte Vista Farm and President of the Board, Santa Fe Farmers’ Market

The Compound Restaurant 653 Canyon Road 505.982.4353 Tues–Sat, 12–2 pm, 5–9 pm

*Starred items are part of Celebrating Chef Mark Kiffin and 25 Years of The Compound Restaurant

The Compound Restaurant, renowned for its distinctive style and elegance has distinguished itself as the cornerstone of the culinary landscape in Santa Fe. The restaurant maintains a loyal following of locals and travelers alike with its inspired locally sourced menu and an award-winning global wine list. The Compound’s seasonally contemporary American menu focuses on Mediterranean influences highlighting available regional ingredients and local sourcing, making the restaurant truly farm-to-table. Equally impressive are the wine program, cozy bar, and attentive staff. Much like its dynamic menu, The Compound’s wine-sourcing vision looks globally beyond France and California to Baja, South America, Australia, and Greece and features over 400 selections. Owned and operated by Chef Mark Kiffin, winner of the James Beard award for Best Chef of the Southwest 2005, celebrates his 25th anniversary of ownership in 2025. In 2022, Michelin-trained Executive Chef, Weston Ludeke, joined the team to lead The Compound into the future. Chef Weston will continue Kiffin’s legacy of bringing the bounty of the farmers market to the table and pairing it with the same French technique and philosophy for which The Compound is known. Such seasonal menus offer hearty braised dishes like Osso Buco with pear in the fall and winter, while in spring and summer feature fresh local vegetables such as ripe heirloom tomatoes and peaches along with naturally raised organic lamb and duck. The New York Times, Gourmet magazine, The Wall Street Journal, and Wine Spectator have all selected the Compound as Santa Fe’s favorite.

The James Beard Foundation Awards

RECOGNIZE SANTA FE CHEFS & RESTAURANTS

I

n 1990, five years after the illustrious James Beard had passed, the annual awards in his name were established to “recognize exceptional talent and achievement in the culinary arts, hospitality, media, and broader food system, as well as a demonstrated commitment to equity, community, sustainability, and a culture where all can thrive.” And right out of the gate, Chef Mark Miller of Santa Fe’s Coyote Cafe, often called the “founder of modern Southwestern cuisine” was recognized as a nominee for Best Chef of the Southwest, eventually winning the coveted James Beard Foundation Award in 1996. Ever since, chefs and restaurants from the small city of Santa Fe (population 85,000) have not only been nominated again and again, but have WON many times. Why is this?! Perhaps some clues lie in looking back over the centuries, where an amalgam of influences, including Native American and Spanish have shaped Santa Fe’s gastronomy. From the “Three Sisters”—corn, beans, and squash—to the cherished chile pepper, Santa Fe’s culinary scene continues to be an epicenter of cultural exploration in the Southwest, with hundreds of one-of-a-kind, locally owned, world-class restaurants, both uber-casual and fine, helmed by passionate chefs. It’s safe to say that The City Different’s multicultural community is devoted to creative and novel approaches to the culinary arts! The Man Behind the James Beard Foundation Awards While it’s a shame that James Beard will never know of his great legacy, it’s rewarding to reflect on his life and what led to his becoming so influential.

Born in 1903 in Portland, Oregon, James Beard steadily developed a keen interest in food. He spent his early twenties rambling through Europe, where he joined a theater troupe, eventually landing in Paris and falling in love with French cuisine. Hollywood and New York then called his name for a career in the theater, and when that didn’t materialize financially, he and a friend started a catering company and shop called Hors d’Oeuvre, Inc., with an aim to take advantage of the post-Prohibition cocktail party trend. This is where Beard’s true calling took hold as he began lecturing, teaching, and writing about the importance of real cooking and fresh ingredients, which he saw as the bedrock of American cuisine. In 1940, he published Hors D’Oeuvre and Canapés, a collection of his catering recipes and in 1942, Cook It Outdoors. Within a few years, he became a celebrity in the American food world, with more published cookbooks and articles, appearances on television and radio, numerous consultant gigs, as well as a Nantucket Island restaurant. Anointed the “Dean of American cookery” by The New York Times in 1954, he opened James Beard Cooking School in 1955 and taught at two locations (New York and Seaside, Oregon) for the next 30 years, all the while spreading his simple message of the value of wholesome American food. After Beard’s death in 1985, contemporary and kindred culinary spirit Julia Child was inspired to memorialize his home as the dear gathering place it had become over the years. Now his renovated brownstone in Greenwich Village is North America’s only historic culinary center and hosts the James Beard Foundation, established in 1986, to “provide scholarships to aspiring food professionals and champion the American culinary tradition.” Morphing over the years, the JBF of today aims to be “a destination for excellence across the independent restaurant industry, driving the country towards a better food system.”

James Campbell Caruso, La Boca “The James Beard Foundation has spotlighted the great diversity of Santa Fe chefs for years. We have a strong, tight knit culinary community here and when the awards come up, we are always rooting for each other. I feel honored to have been recognized as a nominee and to be part of this tremendous family of chefs and restaurateurs.” Martín Rios, Restaurant Martín “I am honored to have been nominated for a James Beard Award 10 times over the course of my career. It is among the highest honor in our profession and I am so proud to have been recognized and to represent Santa Fe and New Mexico on this national stage.” Ahmed Obo, Jambo Cafe “It was an honor to be nominated for a James Beard Award; I appreciate it. I am grateful, mostly, for the friends and patrons here in Santa Fe for being a part of Jambo Cafe for over 15 years.” Fernando Olea, Sazón “Being recognized by the James Beard Foundation is an incredible honor for me and Santa Fe’s culinary community. For more than 30 years, this city has embraced me, and in return, I strive to honor its heritage by blending its rich traditions with global flavors. My greatest joy comes not only from sharing my cuisine but from giving back—whether through mentoring young chefs, supporting families through Cooking with Kids, or helping Santa Fe shine as a true culinary destination. These awards are not just mine, they are my gift to the community that has given me so much.” Eduardo Rodriguez, Zacatlán Restaurant “I feel very proud of this achievement. Zacatlán was nominated first for the restaurant award and that led to the chef award. This proves how essential it is to have a strong team. We are always looking into the satisfaction of our guests and we want to continue to improve the quality of food hospitality that Zacatlán delivers.”

Mark Kiffin, The Compound Restaurant “[The James Beard Foundation] honors us, not just for our food, but our service, our wine, our cocktail program. I’ve got nearly 25 years in this house and I am still here every day we’re open— but I want to say we’re grounded by the locals. The tourist business, I mean, it’s so critical to Santa Fe, but we’re a tiny town and the locals are so important to me. It’s important to me, too, that we’re still relevant.” Hue-Chan Karels, Alkemē “Being named a 2024 James Beard semifinalist for Best New Restaurant is an incredible honor that validates the heart of what Chef Erica and I set out to do—celebrate and reimagine the heritage cuisines that shaped us. Alkemē is more than a restaurant; it’s a story of resilience, tradition, and innovation. This recognition affirms that our cultural narratives matter, that the flavors of our ancestors deserve a place at the table, and that food is a powerful bridge between past and future. We are deeply grateful to share this journey with our team, our community, and everyone who finds connection in our dishes.“ Cristian Pontiggia, formerly of Sassella “Being nominated for the James Beard Foundation Award is a great honor and I hope that it makes it easier to understand what chefs do outside of a kitchen, working with different non-profit groups that care for the environment, agriculture, and the Santa Fe community. It’s not just about the food— it’s about a bigger picture! I’m immensely proud to be a part of this group of chefs and recognized for the hard work, especially since Santa Fe is becoming a stronger culinary community every day.” Fernando Ruiz, Escondido “I feel humbled. Hard to believe I am on this list, that I made it, even if I didn’t win this year. I’ll just say, if it weren’t for my wife, I wouldn’t be here at all.” Chef Berenice and Luis Medina, El Chile Toreado “We feel honored that our ancestral flavors come through and are felt with hearts and full stomachs.”

BREAKFAST served all day

Celebrating more than 75 years of continuous local ownership! The Plaza Café, Santa Fe’s oldest restaurant, has been serving highly acclaimed, authentic traditional dishes since 1905. In 1947, Dan (Dionysus) Razatos, a Greek immigrant with an American dream, took over the Plaza Café and his family has been feeding Santa Fe ever since. Dan married a local girl named Beneranda Maria Saiz and together they ran the Plaza and raised six children. As their children grew, they all worked at the Plaza and helped to create what the restaurant is today. At the Plaza Café everything on the menu is made from scratch. The famous recipes have been handed down for generations, and the Razatos family has been serving Santa Fe using fresh, quality ingredients since 1947. Diners are treated like family, and the staff is proud to share an authentic Santa Fe experience with everyone who enters. Good cooking takes time, so Plaza Café starts early every morning baking their homemade breads, buns, biscuits, muffins... and don’t forget the signature pies, cakes, and cookies! Dessert is not to be missed here.
