Gawthorpe Hall

Step back in time and discover how your ancestors marked the festive season.

Christmas with the Tudors Christmas was the greatest festival event in Tudor times. Celebrated for the entire 12 days of Christmas (25 December – 6 January), the Tudors stopped working and visited friends and family in this community festivity. On the Saints’ Days the most sumptuous feasts were held, and left-over food was used to feed the poor.

Christmas with the Elizabethans Christmas was a time to ‘eat, drink and be merry’, a time to celebrate and enjoy a little luxury. In 1588, Queen Elizabeth I ordered the whole of England to eat goose for their Christmas Dinner to celebrate England’s victory over the Armada because it was the first meal she had eaten after the Navy had defeated Spain’s ships.

Christmas Victorian Style It was during the Victorian period that the meal we now associate with Christmas began to take shape. Evergreens, flowers, and the best china and lines would have graced the dining room table. When Queen Victoria came to throne, the centre piece of the Christmas feast in the northern counties of England was most likely roast beef, whilst in the south it was turkey or goose. Later the popularity of turkey overtook the other meats as its size meant it could easily feed a large Victorian family gathering.

visitlancashire.com

INGREDIENTS Port & Balsamic Reduction

Antipasto Wreath

140ml Port

30 small wooden skewers

90ml balsamic Vinegar

350g cured meats

1 tbsp honey

150g mozzarella balls

30 cherry tomatoes

30 basil leaves

200g artichoke hearts

10 fresh rosemary sprigs

Christmas ribbon (optional)

METHOD 1.

To make the reduction, put the port, balsamic vinegar and honey into a saucepan and bring to boiling point.

2. Once boiling, leave the mix to simmer for 10-15 minutes until it has reduced by half, before letting it cool. 3. Next, make the skewers by arranging the cured meats, mozzarella balls, cherry tomatoes, basil leaves, olives and artichoke hearts onto the wooden skewers. 4. Arrange the skewers on a board in a circular shape to create a wreath and pour the port and balsamic reduction into a small bowl for dipping. 5. Before serving, decorate the wreath with sprigs of rosemary and a bow made from ribbon (if using).

Chef’s Tip To make a delicious vegetarian option swap the cured meats for plant-based alternatives and make sure the mozzarella is vegetarian friendly.

ONION SOUP WITH EPOISSES AND CARAWAY CRUST

by John Whaite

54 |

#ChristmasinLancashire

|

visitlancashire.com

INGREDIENTS Croutons

Soup

1 French baguette, torn into chunks

1 tablespoon olive oil

1 tablespoon garlic oil (or olive oil, if you prefer)

100g unsalted butter

1 tablespoon caraway seeds

500g pink onions, finely sliced

150g Epoisses cheese, chilled

2 tablespoons plain flour

100g Comté cheese, coarsely grated

175ml dry white wine

1 litre beef stock

1 tablespoon onion chutney (optional, but damn good)

Fine sea salt and coarsely ground black pepper

METHOD 1.

Preheat the oven to 200°C/180°C fan/gas mark 6.

2. For the croutons, place the torn baguette onto a baking sheet and toss together with the oil and caraway seeds. Bake for 5–10 minutes, or until dry and crispy. 3. For the soup, heat the oil and butter in a large saucepan or casserole over a high heat. When the butter melts, add the onions and cook for 10 minutes or so, until they are starting to colour around the edges. Once they are gently browned, reduce the heat to low and cook slowly for anything up to 40 minutes. The onions should caramelise deeply, and smell strong and sweet. 4. When the onions are caramelised, add the flour and stir to coat the onions. 5. Increase the heat to high, wait a minute for the pan to get hot, then pour in the wine and let it bubble and evaporate almost entirely. Add the stock and bring to the boil, then reduce to a simmer and cook for 45 minutes, partially covered. Stir in the chutney, if using, and salt and pepper to taste. 6. Preheat the grill. 7. Divide the soup between serving bowls – make sure they’re heatproof – then scatter over the croutons. Slice the Epoisses into fairly thin slices (do so quickly before it starts to melt) and lay them on top of the croutons. Scatter over the Comté, and grill until the cheese has melted and burned a little at the edges.

Christmas

Cocktails Indulge at home this winter with our festive cocktail selection.

Whatever the size of gathering this year we think every festive party needs two things to make it fun and fabulous: food and drinks (and some sparkly decorations, of course!). When it comes to planning your drinks, you can’t go wrong with delicious wines and beers, but what about the holly-jolly festive cocktails? Whipping up a round of fun mixed drinks or bubbly champagne cocktails is one of

the best ways to spread some holiday cheer. And of course, here in Lancashire there is no shortage of artisan producers creating handmade spirits each flavoured with individual mixes of heady spices and fragrant botanicals inspired by the counties rural landscape to give your cocktails that true Lancashire twist. In this recipe section you will find a selection of delicious festive drink recipes from both Lancashire producers and local businesses, perfect to get the party started.

Bottoms up!

PLANNING YOUR TRIP By Road

By Rail

The M6 runs right through Lancashire connecting to the M61, M65, M55 and several major A roads. In less than an hour’s drive from Manchester, Liverpool and Leeds you could be exploring the vast Pennine Fells, beautiful Ribble Valley or driving along the world famous Blackpool promenade.

Lancashire has excellent rail connections from all over the country – just two hours from London on the West Coast Line with Avanti West Coast with stations at Preston and Lancaster. Change at Preston to reach the towns of Clitheroe, Burnley, Blackburn, Colne and Ormskirk. There are also direct trains traveling from Manchester to most Lancashire towns and cities.

By Water

By Air

If you’re lucky enough to travel by water then both the Lancaster canal and Leeds-Liverpool canal give you the chance to sail right into the heart of places like Lancaster, Garstang and Burnley, whilst you’ll also get amazing views of our stunning countryside and wildlife on route.

Both Liverpool John Lennon Airport and Manchester Airport have frequent flights serving Europe and international airports including Beijing, Hong Kong and New York. Manchester Airport has direct trains to many Lancashire destinations every 30 minutes and it’s less than an hour’s drive from Manchester to Preston.

You can pick up hire bikes from a number of railway stations including Morecambe, Blackburn, Preston and Ormskirk, all at reasonable prices. Leisure Lakes Bikes in Lancaster city centre has a range of hire bikes including electric and hybrid, and Blackpool hire scheme has comfortable yellow bikes from the Palatine Leisure Centre.
