Our pomace olive oil and extra virgin olive oil are sweet and apt for the Indian pallet. Extra virgin olive oil obtained from two varieties of olives: Manzanilla Cacereña and Carrasqueña. The combination of these two varieties results in an exquisite fruity and ripe flavor, with shades of green leaf. It also has a perfect spicy and bitter balance. Furthermore it has a high nutritional and therapeutic value, as Manzanilla Cacereña olive contains more than 75% of oleic acid, a higher percentage than other varieties. The Manzanilla Cacereña olive is harvested by hand in the olive grove from the North region of the province of Cáceres (Sierra de Gata, Las Hurdes, la Vera, Valle del Jerte y Valle del Ambroz) and pressed in the following 24 hours. In these regions with a particular microclimate, the harvest starts in the first days of October and finishes at the end of November. This way we obtain unique and superior olive oils, for its composition (its acidity is less than 0'2%), and for what it can be appreciated with our senses. For its great flavour it is a perfect oil to be used in raw food (salads, breakfast, vegetables, carpaccio) and boiled fish. It is presented in dark glass bottles or tin cana to protect it from the light that could harm the Extra Virgin Olive Oil.

S m o k e d Pa p r i k a Only D.O Spice in the world. Our unique raw materials for the elaboration of our Smoked Paprika Powder “La Chinata” are the dried peppers with oak wood smoke that we buy from the farmers through contracts covered by the Denomination of Origin. They are reviewed by our experts upon arrival at our facilities and only the best raw materials are selected. The grinding process begins with a pre-crushing. Once ground, the peppers go through a cleaning system that removes any impurities they may have. Once cleaned and crushed, the peppers are directed to the milling system, consisting of eight stone mills. These mills operate by rubbing two stones of granite together, through which the paprika powder goes through. This process is repeated as many times as necessary to achieve the fine powder that is characteristic of our product. When the grinding process is finished, and after a pre-cooling session, our Smoked Paprika Powder is stored in our cold rooms for conservation. This ensures that once packaged, our product reaches our customers with all its organoleptic characteristics intact. FLEUR DE SAL Flor de Sal is the purest and most precious form of salt. Very specific meteorological conditions are required for this mineral-rich aromatic salt to crystallise on the surface of the salt flats: a lot of sunshine, a gentle breeze and low air humidity. A fine layer of flower-shaped crystals thus forms, which is harvested with rakes in the longstanding traditional way. Contrary to other common sea salts, nothing is added or removed from Flor de Sal d’Es Trenc during the entire process. It is harvested by hand from the surface of the salt flats and slowly dried under the Majorcan sun. RED SALT FROM HAWAII Black Hawaiian sea salt, or Hiwa Kai, has a stunning dark brown color. Activated charcoal is added to the salt for its stunning visual presentation, and flavor enhancing properties. Charcoal has also become popular for use in detox diets. Though not in large enough quantities to take as a detox supplement here, the activated charcoal in Hiwa Kai Black Hawaiian Sea Salt adds a pop of color and tasty flavor to your dishes. Available in coarse grain—great for tableside presentation and grinders. PERSIAN BLUE SALT Persian Blue salt is harvested from just one single mine in the world, situated in Iran. Persian Blue salt is famed for its unique blue colour as well as its distinct taste which mellows quickly into a subtle and pleasant mild aftertaste. It is one of the world rarest salts; mined in the northern province of Semman in Iran. Persian Blue salt has been long sought after due to the crystals intriguing colour bringing a delightful additional sparkle to the table. Beautiful when lightly sprinkled on dishes to give an effect of jewels. Suitable for seasoning all kinds of dishes, but especially delicious with poached fish, white meat, vinaigrettes and dressings, or to decorate salads and vegetable dishes. HIMALAYAN PINK SALT Himalayan Pink Salt is a pure, hand-mined salt that is derived from ancient sea salt deposits, and it is believed to be the purest form of salt available. The high mineral crystals range in color from sheer white, varying shades of pink, to deep reds, the result of high mineral and iron content. peppers SICHUAN PEPPER Sichuan pepper (xanthoxylum peperitum) is native to northern China and is not related to black pepper (peper nigrum), which is native to India. This pepper is quite aromatic but not very hot. Before Asian cultures were introduced to chile pepper, Sichuan pepper was used along with ginger to give heat to many dishes. The heat in modern Sichuan cooking comes instead from red chile pepper (capsicum annum), introduced to Asia in the 15th century. Generally green peppercorns are used in Asian dishes but are versatile enough for many types of cooking. White peppercorns are the seed of the pepper plant with the dark skin of the fruit removed. It is very similar in taste to black pepper; however, there is a slight difference due to the lack of outer fruit. White pepper is commonly used in dishes that require pepper but where the appearance of black pepper would be distracting or unwanted. Jamaican Peppercorns are commonly grown in tropical regions such as South and Central America, and are known as "All Spice." These peppercorns are light brown in color and considerably larger than most peppercorns. Jamaican Peppercorns are spicy yet have a fruity overtone. Yes it’s a bold assertion but once tasted you’ll have no hesitation in agreeing! Ortiz tuna has been a Juberfam Mittal’s best-seller for years and it’s loved in equal measures by top chefs and food writers where you’ll see the famous red and yellow print cans on their kitchen shelves. Conservas Ortiz is based on the Cantabrian coast of north west Spain – it’s a family-run business and has been supplying top quality tuna and anchovies since 1891. The best cuts of the fish are filleted on the boats and tinned in good olive oil. Unlike water, the olive oil adds flavour and imparts a silky texture over time. Water can actually leach flavours from the tuna. Bonito del Norte or White Tuna is caught in the summer months using rods and live bait. The fillets are white to pale pink in colour with a mild flavour and good, firm texture. Atun Claro or Yellowfin Tuna is a little darker and with a stronger flavour than Bonito.

Ibericos

The best Iberian Hams& Cold Cuts Ibérico ham can only come from black pigs of the Iberian breed whose unique origin can be traced back to ancient times. This legendary and select race has many qualities, including a great capacity to accumulate fat under its skin and between the muscular fibres. The fat is what produces the typical white streaks that make its hams so special. The main feature that distinguishes Ibérico from the rest of cured hams is the purity of the breed, allowed to freely move around the extensive wooded pastures called ‘Dehesas’. At least a hectare of healthy dehesa is needed to raise a single pig. All pigs are fed on a diet of grass and the best acorns from Holm and Cork Oak meadows to provide its distinctive aroma and exquisite taste. Hams are generally classified by the amount of acorns eaten before slaughter. The intestine is filled with a mixture of finely-chopped pork, paprika, garlic and salt, and the end tied in a knot.. Once filled and securely tied, the chorizo sausage was ready for hanging. It would be left to cure in a well-ventilated place, for at least 3 months. The pig is killed in the local abattoir, under strict, hygienic conditions. A vet will test the meat and, once it's been approved, the owner of the pig will collect it, take it to this factory and carry on with preparing the finest iberian chorizos.

The Catalunya region of Spain makes a few famous salami varieties. One of the most famous is fuet. In Catalan, fuet means whip so the salami's name comes from its whip-like shape. It is a long, thin, hard sausage with a thick natural layer of white mold. Catalans make fuet from pork, white wine, pepper and other spices. This salami is much less condimented than Italian salami, and contains only salt and pepper as seasoning. Catalans cut this salami very thin and eat it as an appetizer.

Native to Spain, this type meat is a cured hard Sausage that resembles a traditional hard salami. Salchichon Sausage is produced from pork meat that is coarsely ground with some spices added. Chunks of ground peppercorns randomly distributed among the bits of fat are common throughout the hard texture of this Sausage,. Salchichon is commonly served as an appetizer with cheese or with hearty breads and robust red wines.

Iberian lomo which comes from the acorn fed Iberico hogs is something different altogether… This lomo is mottled with creamy white/yellowish fat but it is the texture of this speciality as well as the flavour that will impress. Iberian lomo has nutty tones and is literally melt in the mouth not unlike its cousin the Iberian ‘jamon’. Iberian lomo is expensive but will deliver a gastronomic experience unlike any other, weight for weight, this lomo is even more costly than Iberico ham which should suggest that it is very much one of the finest cured meats in the world.

This is a popular cut of meat from between the shoulder blade and loin of the prized Iberian pigs – it has an amazing flavour. This not not a recipe, it is ad “idea”, a “secret” – the meat tastes so wonderful because the surface is marbled with fat – when cooked over a high flame or hot griddle, the fat on the outside melts giving a fantastic tasty and crispy crust, while the meat inside is tender, juicy and so very tasty. To cook, lightly oil a griddle or frying pan with good quality olive oil, season the meat with sea salt flakes and freshly ground black pepper, when the griddle is hot, cook until the the outside is crispy and a golden colour with a crispy crust. Leave to rest for a few minutes then carve into strips.

Location: This cut comes from the shoulder section of the loin with more fat; therefore more tasteful even than the loin. It is thought that the shape and size is similar to a feather or pluma in Spanish. Properties: This meat stands out for its tenderness, juiciness and flavour. Very small in size, with only 2 available from each Ibérico pig.

A long, cylindrical cut of meat taken from along the spinal column, narrower at the front end. The cut is streaked with fat which makes it particularly delicious. Along with hams and pork shoulders, the loin is one of the most highly prized cuts of the Iberian pig. Large pieces of marinated pork loin (known in Spain as lomo de la orza) can be fried. Pork loin can also be filleted and grilled, although this is much less common.

A long, cylindrical cut from the lumbar region, near the ham or back leg. Tenderloin is, as the name suggests, a very tender cut. It is a deep-red colour and contains little fat. Its outstanding flavour means that it has always been highly sought-after by chefs. Traditionally served grilled, tenderloin is actually a very versatile cut of meat and can be cooked in many different ways.

A flat, triangular cut of Iberian meat in the shape of a feather or wing (hence the name, which translates literally as ''feather''), separated from the loin during the quartering process. Particularly good barbecued or grilled. Very tender and juicy because of the good balance between meat and fat.

ANCHOVIES The anchovy is a small, bony, schooling fish that lives in the warm waters of the South Atlantic. Imported from Spain, these hand-filleted flat anchovies are perfect for antipasto and salads. Not overly salted like some others we have experienced, Ortiz brand anchovies have a superbly balanced flavor and a subdued aroma Ortiz anchovies spend at least 6 months curing in rock salt and are hand-filleted to give large, meaty fillets without “hairiness”. We find they simply melt in the pan – and in your mouth! Won gold in the 2008 Great Taste Awards. These are not your average anchovy in a can -- these are wonderful! They truly add flavor to tomato sauce, tomato soup, salad, .... they just melt into the food. People wonder why my food is better than theirs -- it's probably the addition of these anchovies!(I even use the olive oil in the bottom of the jar after the anchovies are used up.
