25 years of professional photography and I am still having a blast!!!! I started my career photographing bands, models and actors. After a few years I found myself in the wedding industry. There I learned how to photograph people in the most flattering way, and helped preserve countless memories for my clients. Today I no longer photograph weddings but I now have years of experience behind me. So, I’m back! Back to my passion, back to bands, back to models and back to actors. Having even more fun than the first time. I am so passionate about my work. My business has expanded to include Head Shots for both actors and business professionals, Modeling portfolios and family portraiture, I‘m also one of the house photographers at the Paramount in Huntington. I am thrilled to be doing this issue of Village Connection Magazine and I look forward to many more. I truly have the best job in the world!!! Thank you so much 2013 Len Marks

Finally, Spring! As I'm writing this, there is still a chill in the air, but the color is returning in flowers and trees that have started to bloom. There is a lot to love about Spring; it's filled with new and exciting beginnings. All things seem possible. Our schedule has been picking up with the warm weather too. We continue to feel grateful for the continued growth of Village Connection, and as busy as we are, we try to stop every once in a while and enjoy the fun of the journey. As this issue hits the streets, we will be celebrating our 2nd Annual Swimsuit Issue with a big party at Honu Kitchen & Cocktails in Huntington Village, which was recently named one of the Top 100 restaurants in the entire country in OpenTable's Diner's Choice Awards. You are all invited to join us on May 6 to take part in some of the great, positive energy that we're enjoying. Visit our website to register and the first drink is on us. I'm also happy to announce the debut of my new internet talk show that will broadcast live every Wednesday night on MadHouseTV.com "In the Village" will bring to life the best of Village Connection Magazine as I interview the local artists, musicians, writers, chefs, business people and community members that fill our pages. As we go to press, we've just found out that I am a finalist in this year's Long Island Press Club Awards, along with my sister and Associate Publisher, Jeanne Murphy and Feature Writer Elise Pearlman. We will have to wait for the ceremony to find out what we've won for, but we're thrilled that our small, local magazine is being judged (and winning) along with Long Island's finest media outlets. Now, go find yourself a nice quiet spot in the sun somewhere, and enjoy this issue. It's filled with local content and new writers and features. And make sure you look for us next month, when we will be heading south to Babylon with our new Daytripper column.

See you In The Village...

Boho Chic H

ere is a trend that’s close to my heart! Being a vintage seller, I have an affection for the 60’s and 70’s and I would definitely say that my personal style is influenced from that time period. So, I’m thrilled that the boho chic look is huge this season! Though the style comes and goes, this time around it’s showing itself in a more updated way. A perfect example is the YSL Spring 2013 collection. Billowy fabrics and romantic maxi dresses with huge floppy hats were the shows highlights everywhere you looked. There was a little rocker edge added with fitted crop jackets and skinny pants to make it more modern. Far from the hippie/Woodstock look (though that’s where the trend began) there is a more upscale sensibility. In Hollywood, it’s going strong with actresses Kate Hudson, the Olsen twins, Nicole Richie and Sienna Miller, just to name a few, who always pull this look off in a big way. Retailer Free People has built an entire brand from the boho look and is a great inspiration. The style conjures up the carefree California lifestyle and fits so perfectly with the approaching warm season. Lightweight fabrics that are loose and flowing, filled with ethnic prints -- just begging to dance the day away at Summer festivals -- are mainstays. Lots of chunky jewelry consisting of over-sized rings, cuffs and long dangling earrings, are hot accessories, as well as the must-have big floppy hat. Shoes range from gladiator sandals to chunky heels and knee-high boots. Think unstructured lines with big bell sleeves, floaty skirts and wide-leg flares. It’s a style that can flatter almost every body type. And don’t forget about your hair. Loose braids, low pony tails, ombre mermaid waves and even chalk colored highlights! You can add your own personal touch by being very feminine and ethereal or add a little rock and roll edge to it. It’s all about lightening up, having fun and connecting with your wild side!

Hot, Hot, Hot!

This season’s hottest swimwear photographed at one of the country’s Top 100 restaurants! by joanne kois

Kara Buono Honu Kitchen & Cocktails, always a village hot spot, is the perfect stage for our spring- into -summer swimsuit issue. The excitement of the coming summer season gets us in the mood to feel glamorous in this setting of dramatic high ceilings, glittery chandeliers, and modernist art that is the warm décor of this hipster restaurant. Honu brings the heat of summer indoors. What’s the hottest restaurant in town? According to Open Table, the online restaurant reservation service, Honu Kitchen & Cocktails is an official “hot spot” in the restaurant scene. Honu made the coveted list of “Top 100 Hot Spots” in the United States in Open Tables’ Diner’s Choice Awards for March 2013. The dining trend-spotters at Open Table reviewed the combined opinions of more than 5 million verified diners for 15,000 restaurants across the country and Honu’s hip, modern vibe and excellent food proved to be a winner! Guests come to Honu for the spirited bar scene and for its exciting menu of seasonal specialties and creative twists on classic American dishes. As we warm up to summer, Honu

gives us a cool head start with refreshingly bright and bold new drink creations from their signature cocktail menu. Owner and managing partner, Mark Zecher suggests The Brooklyn Botanical & Tonic, a standout cocktail made with Dorothy Parker Gin from a Brooklyn distillery, artisanal tonic (refreshing, not sweet) and simply finished with cucumber and basil. Mark is the consummate host, sharing his food knowledge and good energy with his guests. Experience Honu’s potent libations like the Watermelon Martini garnished with the sugary candy slice from our childhood days, the Absolute Strawberry Lemonade, all naturally made to really quench your thirst and the new Sunset Margarita made with exotic passion fruit, blood orange and lime.

Food choices at Honu abound ---from soups--- the Truffle Mushroom is earthy and divine! —to small plates, ---Pumpkin Tortellini is so luscious that customers insist it never leave the menu, to a colorful selection of seasonal salads, gourmet burgers and delectable sides. The trio of appetizers “on a stick”—Thai chicken, shrimp chimichurri and grilled Portobello mushrooms with roasted pepper –are delectable and fun for sharing. Large Plates are plentiful as each dish is seasonally inspired and colorfully presented. For a taste of spring, try roasted monkfish with artichoke and spinach in a lemon thyme beurre blanc. Steak lovers can indulge their carnivore side or splurge on the sweet butter poached lobster tail in the classic surf and turf. The Strawberry Shortcake Cream Brulee is the dessert of the moment! Come to Honu Kitchen & Cocktails and experience one of only three “hot spots” on all of Long Island. You will find that it is easy to get comfortable here, while enjoying its chic Manhattan vibe, excellent food and warm hospitality right here in Huntington Village. Swimsuit Trends for 2013 Great news for vintage lovers, retro style is in this year with swimsuits that are very feminine, curvaceous and sexy. Taking inspiration from the pinup girls of the 1950s, summer collections are full of styles that include high-waisted bikini bottoms, sweetheart necklines and halter tops, one-pieces with cinched-in waists and prints like polka dots, gingham and Hawaiian florals.

Mismatched bikini tops and bottoms are a great way to create a playful, abstract look. You can ease into the trend by picking one piece with a fun print and sticking to a solid color for the other. Or go bold and choose two complimenting prints from the same color family. This year it’s perfectly acceptable to mix and match your prints, styles and textures to suit your own creativity and mood.

One-piece bathing suits are getting a little more daring this season with bold geometric cut-outs. Whether it’s a detailed back, pieces cut from the side, or a few keyholes in a bandeau top, these suits let you show a little skin. Nicole Stumpf

This summer’s swimwear catalogs are filled with digital prints, including soft florals, cityscapes and abstract patterns. Pick the print that shows your strong individuality.

What can possibly be sexier than looking like a Greek goddess on the beach? The intricate draping, gathering and metallic accents of these suits are reminiscent of the elegant togas worn by ancient Grecian women. Play with colors and pick one that compliments your beautiful tan.

Boudoir bathing suits are another hot trend this year. The lingerie look is not something everyone would feel comfortable in, but as long as you are confident, you can pull this off. Black, chic and sexy are just a few of the details in this look.

Nicole Stumpf

Fringe bikinis are everywhere. They’re a fun and sexy look for those who want to add a little edge.

Neon colors are the hot trend of new collections, they are popular in onecolor versions and in fashion prints.

What’s Trending Right Now & How to Wear It

I

t’s that time of year again; when you are compelled to open the windows and do some spring cleaning! Make sure you clean out your closets too. Put away the sweaters, push basic black to the back, welcome in some color and some new clothes. Welcome Spring! Your key pieces this Spring are maxis, wide-leg pants, high low tops and dresses and ombre anything. New for spring in the shoe department are open-back booties and clogs. The color you will want in your accessories this season? MINT. Maxi dresses and skirts are all over this season. Wear your maxi with a wedge sandal or a cute flip flop for spring and summer, and bonus, add a boot and jean jacket for fall; maxis are being shown right through next year. The most common question I get from my petite clients is how to wear this look. Petite women can wear maxis. It’s all about proportion. When choosing a maxi dress, choose a style that shows off your frame. Either it should fit snugly or A line. Go with solid colors, ombre or smaller prints. Don’t go for huge prints, dresses that have no waist or Umpire waists. Leave those for the tall girls. We are loving maxi skirts

this spring as well. Pair a brightly colored maxi skirt with a solid V neck top and a denim jacket. I like V neck’s with Maxi skirts because they are visually flattering, making you appear taller. Next, you’ll be seeing wideleg pants. I love this trend. Wear them printed, in ombre or tie dye. Choose simple neutral tops and a blazer. If you are bottom heavy, make your pant a solid color -- black or grey (ombre will work too) -- and then focus color on your top in print, tie dye or pop colors. Printed pants are fun to wear with heels and it makes this look that much more fun! Spring is about color, and mint is the color of the season. You can wear it or accessorize with it. Try a mint pocket book and flip flops. Don’t forget to update your tees this Spring as well. Replenish white and black tops with fresh ones and add in pops of colors in some new high low tops. Coral and turquoise are fun colors and they will take you right into summer.

Day-Tripper Goes to Babylon Summer Fashion At Monsoon

Next month the Village Connection goes on a day trip to explore the shopping, dining and nightlife in Babylon Village. For Huntington villagers who seek destination dining, take a trip across the island south to Babylon, a town with both a historic heritage and a spirited nightlife. Be sure to experience Monsoon, the modern Asian restaurant voted a Top 100 “Hot Spot” in Open Table’s Diners’ Choice awards this year. The Village Connection will be at there to enjoy the relaxed, yet hip vibe of Monsoon as a backdrop for our summer fashion issue. In the early days, Babylon was once a part of a larger Huntington township, so we share a sense of communal history, each with waters-- one north, one south--each encompassing great natural beauty and old world charm. Be a day-tripper and come south with us this summer to explore Babylon Village, our “sister town”.

All About Wedding Vows

Many couples want to have a personalized wedding ceremony and writing your own wedding vows makes your ceremony special and unique. Writing your wedding vows can seem like a daunting task! It can be nerve racking coming up with words to express the love you feel for your fiancée and putting your promises on paper can be an emotional experience. Don’t leave this to the last minute because you may need a few days to mull over your ideas. To prime the pump of your thoughts you may want to do a Google Search and look for wedding readings and poetry. You can also garner a great deal of inspiration from greeting cards and reading quotes on love. Before you begin writing, take some time to remember what made you want to get married. Think about what made you fall in love. Reflect on the moment you recognized your relationship was meant to be. Begin to write down your thoughts and feelings about the commitment you are making in marriage. What are you promising?

What is your intention? Think about dedication, loyalty, devotion, and faithfulness and what they mean to you. Write down whatever thoughts and phrases come to your mind. Don’t censor anything at this point and take your time in this process. Don’t be afraid to use humor if that’s your style. Next review your ideas and highlight those most important to you. Where appropriate, begin to combine them with one of the following phrases: “I Vow,” “I pledge,” I promise,” or “I commit.” When ready, go through the first draft; edit or add in new thoughts. Practice reading them aloud. How do your vows sound? How do they feel when you say them? The process is complete when you say your vows and they flow and feel just right. Dr. Janine H. Burns, Interfaith Chaplain, Spiritual Coach, graduated from Emerson Theological Institute. She loves to perform weddings and other ceremonies. Check out her website at www.ilovetodoweddings.com

Enjoy the process of getting married! 38 • village connection • may 2013

Burpees for a Better Body

I have a few exercises that I consider to be perfect, well-rounded exercises, and one of my all-time favorites is the burpee. No, it’s not a plant company or something you do after you guzzle a beer. This type of burpee works every muscle in your body, increases your heart rate and makes any workout intense. The burpee has four components: Start in a standing position Drop down into a squat with your hands on the floor Jump both feet out behind you, putting you in a push-up (extended plank) position Jump both feet back in towards your hands, and then stand back up. You want to do all four positions with perfect form and a quick motion. The burpee can be done anywhere, at any time, and with no equipment. There are many variations and modifications. You can vary it by: jumping up at the end, doing a push-up while down on the floor, doing mountain climbers while down on the floor, doing

40 • village connection • may 2013

it on one leg, double push-up burpees and much more. If you have injuries you can modify the burpee in many ways, such as stepping your legs out and in, instead of jumping them out and in. Why do I consider this a perfect exercise? Because it works all of the major muscles in your legs -- quadriceps, hamstrings, gluteals and calves; your core, including abdominals and upper and lower back muscles; your chest; and your arms, including shoulders, triceps and forearm muscles. burpees use your body weight only and when you take your body down to the floor and have to lift it back up again, your heart has to pump really hard to get oxygen and blood to all of the muscles fast. This increases your heart rate, making a burpee a strength and cardiovascular exercise. Now drop and give me ten! Have a great workout! How Does Your Hospital Rate?

I’ve been reading disturbing things about hospitals. Get this; about 200,000 people die in U. S. hospitals every year. Half die from hospital acquired infections and the rest from preventable accidents, injuries and errors. The famous airline Captain “Sully” Sullenberger tried to put this statistic into perspective saying “It would be like having 20 Boeing 747 airliners going down each week. People would not be flying. There would be intense investigations.” While I’m not aware of any intense investigations, I learned that a hospital quality and safety watchdog organization, the Leapfrog Group, has been assigning an A through F safety letter score based on annual surveys to many U. S. hospitals using 26 safety measures. Below is the Long Island hospital safety score map copied (as of April 2013) from Leapfrog’s Hospital Safety Score website (http://www.hospitalsafetyscore.org/). Each letter score on the map represents a specific hospital that can be identified by clicking on the letter to see the hospital’s name. In the Patient’s section of this website the following is stated: “We all deserve to know how safe our hospitals are and should be empowered to choose the best care available. Going to a hospital

42 • village connection • may 2013

can be frightening, but being uninformed about the hospital’s safety record can be a life or death issue. We’re here to help you decide which hospitals to use and which ones to consider avoiding. Choosing your hospital is a matter of personal preference, but we know “A” hospitals do a better job at preventing errors. The statistics are alarming: 1 in 4 Medicare patients will experience some sort of infection, injury or fatal error when entering a hospital. The Hospital Safety Score highlights the safest hospitals. Before deciding on a surgery or procedure, talk with your doctor about the hospital you’ll be visiting.” Money talks! Imagine if we began considering safety scores when selecting hospitals? Not only would we be better off but it would also act to reward safer hospitals and pressure the others to improve. That would be something.

Cereal is a Loser Breakfast “I eat very healthy! I had whole grain cereal for breakfast!” I lost count of the number of times I’ve heard this. If you want to lose that last bit of fat around your belly, get off the cereal! Aside from aesthetics, this breakfast can be a root cause of a Pandora’s box of health issues such as ADHD, moodiness, chronic fatigue, cancer, and auto-immune diseases including MS, arthritis, and celiac. Here’s my campaign to get you off the Losing Path. The number of reasons to avoid cereal is nearly infinite, but here is an overview of the main points: Many cereals have a high carb load and high glycemic index, lacking vital proteins and fats. In other words, they provide the body with an abundant source of carbs that digest quickly. This causes our blood sugar to rise and fall very quickly. This sugar roller coaster ride often expresses itself as an unstable mood, lethargy, and constant hunger. Long term, this can result in diabetes or hypoglycemia. The carb, fat and protein ratio puts the body’s hormones in a zone that halts fat loss. Not only is fat loss halted, but the high-carb, low-fat and low-protein macronutrient ratio encourages fat storage. That’s a double whammy: no fat loss, increased fat storage. For optimal fat loss, stable moods and satiation, the body should be filled with foods high in nutrients that release carbs into the bloodstream slowly. This macronutrient ratio promotes silent inflammation, a root cause of nearly every degenerative disease including type 2 diabetes, heart disease, cancer, allergies, and alzheimer’s disease. Silent inflammation is an inflammatory response with symptoms that often fly under the radar. It won’t manifest in obvious symptoms like visible swelling or a rash, but silent inflammation can be detected by a blood test for C-reactive protein. Aside from the macronutrient ratio, cereal’s grain content makes it a pro-inflammatory food. “Whole grain” cereals are the worst culprit for inflammation. They will aggravate all conditions with inflammation at the root cause, including arthritis. Even in “healthy” individuals, the wheat protein, gluten, leads to improperly digested wheat proteins and stomach bacteria. This results in an inflammatory response. Gluten might be the root of several neurological and psychiatric conditions, including ADHD. Gluten causes an elevated level of antibodies in sensitive individuals. Incomplete digestion and elevated anti-gliadin antibodies (gliadin is a component of gluten) result in immunity problems that express themselves in an array of symptoms. These symptoms are then commonly diagnosed as autoimmune diseases including arthritis, fibromyalgia, celiac disease, multiple sclerosis, Parkinson’s, and chronic fatigue syndrome. Just one teaspoon of gluten can cause brain inflammation that will persist for approximately one month. Gluten can decrease the blood supply to certain parts of the brain by one third. Without adequate blood supply, the brain can’t function optimally. As you can see, gluten can cause a host of mental and physical problems. Remove the root cause (gluten), and the symptoms will disappear. Consequently, the “disease” will disappear. Unfortunately, many doctors’ common antidote for gluten-

44 • village connection • may 2013

specific symptoms is medication that will eliminate the symptoms. Due to undiagnosed gluten sensitivity, many people take unnecessary medications to disguise gluten sensitivity symptoms….Tragic! The majority of people who have a problem with gluten don’t even know it! Testing can help to indentify gluten sensitivity, but the only way to know if gluten is negatively affecting you is to complete an elimination diet. Simply, eliminate all gluten for 2-4 weeks and see how you feel. Then reintroduce it into your body, and observe the changes that occur. Are you eating cereal for the high fiber content? Most sugary cereals are a weak form of fiber, a diet necessity for satiation. Fiber encourages healthy elimination, moving chemicals out of the body, and promoting fullness via physical volume and the release of the hormone CCK (cholecystokinin). You can obtain abundant fiber from fruits, vegetables and seeds, such as chia, without the additional sugar, pesticides, food coloring, aspartame, sucralose, pesticides, genetically modified organisms (GMOs), and other wonderful chemicals that occupy our fat cells. Our bodies hold onto fat cells and make new fat cells to protect the body from being poisoned. Specifically, fat cells prevent us from being poisoned by removing toxins from circulating blood to keep them away from major organs. Take in fewer toxins and you will give your fat less motivation to stick around. With less work, less employees (fat cells) are needed. Here’s a fun fact: most of the corn in the US is a genetically modified version released by Monsanto, and insects’ stomachs explode after eating it. Corn is the base of many cereals. If it makes insects’ stomachs pop, is it truly safe for us? A popular way to keep cereal’s carb count low is to use aspartame or sucralose as sweeteners. There is overwhelming anecodotal evidence supporting aspartame’s contribution to common health complaints. After adding sucralose and aspartame to my diet for 3 weeks, I experienced lethargy, a depressed mood, lack of concentration, dizziness, rapid weight gain and visible bloating, and a need for frequent naps. After removing these artificial sweeteners from my diet, the symptoms went away. Cereal is an acid-forming food. Our body’s ph should be slightly alkaline (7.35-7.45) for optimal health. Acidity causes calcium to be leached from our teeth and bones, which can lead to bone loss and osteoporosis. Acidity encourages our body to hold onto fat. Diseases thrive in an acidic environment. Where’s the Basil? O

ne of the most frequently asked questions in May, at the garden centers where I’ve worked, was, “Where’s the Basil?” It was always that time of year when the spring temperatures were still too cold, especially at night, to put some of the herbs outside to sell. We would have to leave them in the greenhouse for protection because the new, tender growth was susceptible to cold damage. The customers eager to get started early would be looking outdoors to find the basil and we would always end up telling them that it was too early to plant outside yet. Basil is probably the biggest selling herb, along with Italian parsley, dill, rosemary, lavender, sage and thyme. There are many different varieties of basil to choose from these days. It is probably best to categorize them so that it makes it easier to choose what type of basil may suit your needs if you decide you’d like to plant some. Dwarf Basil: Spicy Globe, Dwarf Bush, Fine Green, Boxwood Basil and Thai Basil are all compact, small leaf type varieties that have excellent flavor. They are great for containers or tucked Purple Basil into areas where space is limited. You can use it as an edging plant as well as in a formal garden or as a border for your vegetable garden. Boxwood Basil is ideal for pesto sauce with its strong flavor. Scented Basil: Even though most varieties of basil are scented, specific kinds are unique to the category. They would include:

48 • village connection • may 2013

Lemon, Lime, Clove, Cinnamon and Licorice Basil. They are all small leaf varieties that have a distinctive scent that separates them from other types of basil. Many people like to keep them in a sunny kitchen window or in a patio pot just for the fragrance alone. Purple Basil: Flavorful and definitely more ornamental, these varieties add a splash of color to containers or planted with annuals and perennials in the border. They make a great accent addition to salads. Their purple stems and pink to lavender flowers are an added feature to their ornamental uses. Purple Ruffles, Osmin Purple, Red Rubin, African Blue and Dark Opal are some of the more popular varieties. African Blue has a sweeter flavor more like anise. Italian Basil: Probably the most requested and used of all varieties is the Sweet Italian Basil. Genovese Basil is another common name for this type and is the most popular in Italian cooking. Large Leaf Basil: Includes Mammoth and Lettuce Leaf Basil that go great in salads. Ethnic or Specialty Basil: Such varieties as Cuban, Greek and Thai Basil would fall in to this category. They are used for culinary dishes that are more specific to the cuisine of that culture. Growing fresh herbs is an ideal, healthy way to kick off your outdoor gardening this season and it adds a delicious dimension for all you culinary enthusiasts out there! TIP: PINCH THE TIPS Pinching back the tops and tips of the stems on the basil will keep the plant fuller and prevent it from going to seed quickly. This will give more “staying power” through the hotter days of the summer and provide for a more productive plant.

outdoor living • charles h. gamarekian

Light Up Your Life... And Your Outdoor Lifestyle Until recently, planning landscape lighting meant taking a jaunt to a local garden shop or lighting store that also sold outdoor fixtures. There you could find the latest designs that ranged from garden lights on stems that stick out of a mulch bed to Asian paper lanterns or plastic novelty lights to adorn your patio. Hoorah! The outdoor living room scene has become more sophisticated and the landscape lighting selection has matured along with it. Today’s outdoor living rooms, driveways and pathways rely on durable hardscape materials to maximize their curb appeal and backyard ambiance while affording homeowners durability and plenty of “Return on Investment” (ROI). Leading-edge manufacturers of pavers, wall systems and outdoor living room components see lighting as a natural adjunct to their core products and have tasked their research and development teams to step up to the plate. It’s time that savvy homeowners who are planning a new patio, driveway or walkway look into lighting products that have an integral relationship with surrounding hardscapes. First and foremost, it is important to have basic understanding of available, artificial light sources. To this end, we will be covering two types of landscape lighting — low voltage and solar. Low voltage, 12-volt lighting, is more efficient than conventional 120v-plus capacity but requires a direct electrical supply totally dependent on household current. On the other hand, solar energy is totally self sufficient and not dependent on municipal energy. Also, it does not require a transformer or cable in order to operate. As the expression goes: “to each his own.” The goal of most outdoor lighting is to provide general, ambient, task or delineation light. Hardscape-inspired lights usually address ambient- and task- related objectives such as safety, security, beauty and outdoor entertaining. Most hardscape contractors

52 • village connection • may 2013

and landscape architects prefer subtle light to obtrusive hot spots although lighting that is built into stationary outdoor kitchen components should be bright enough to serve your cooking needs. You should keep all of this in mind when shopping around and making product comparisons. LED-based solar lighting can be used as a task light or an ambient light. The LED lamp (LED light bulb) is a solidstate lamp that relies on light-emitting diodes (LEDs) for their source of light. They offer long service life and highenergy efficiency. For now, LEDs are not considered general light sources — yet, solar lighting has advanced to levels considered acceptable for many accent and also wayfinding applications. Let’s look further at your proposed interlocking pavement system. Hardscape manufacturers offer various types and styles of paver lighting, all of which are designed specifically for interlocking concrete pavement systems and can include low-voltage as well as solar powered varieties. Similar to most paver lights, lighting for manufactured, hardscape wall systems actually replaces the wall unit in the course. There are also wall lights that are designed for specific applications in the system such as corner and column lights, step (tread) lights and lights that fit under the wall cap. These lights shine down with a slightly diffused and pleasing illumination. Don’t stay in the dark. Ask your contractor, visit a hardscape products manufacturer’s website or stop at a hardscape supply yard for more information. Remember, for optimum results, seek out a manufacturer whose brand you know and trust and tell your professional contractor.

Latino Appreciation Day at Toyota of Huntington For This Dealership, It’s All About Community There’s a true spirit of community at Toyota of Huntington, where for four years General Manager Leonard Cafarelli and his team have been working hard to make sure every guest feels welcome. Known throughout the North Shore for stellar customer service, Toyota of Huntington’s commitment to their Huntington community remains a priority. Toyota of Huntington has become a cornerstone for community activity: frequently, the dealership will hold events for the community as a way to get to know everyone in their neighborhood. Whether you’re a family of four, a recent college grad or a senior interested in what’s new on the floor, everyone is welcome, a tradition of excellence that’s top priority at Toyota of Huntington. There’s no sales pressure, as guests are welcome to browse or simply chat it up with Cafarelli and his exceptionally knowledgeable staff. In May, Toyota of Huntington is celebrating the vibrant Latino community, a population that has started to grow significantly in Huntington over the past few years, with Latino Appreciation Day. This family-friendly event will feature great food, music and fun prizes for the kids. There will even be face-painting for the little ones to make sure it’s a great day for everybody “We want Latinos to know they’re welcome at our dealership. We go the extra mile for all our customers, and we want everyone in this vibrant community to know they’ll always be greeted by our friendly, helpful staff,” said Cafarelli. For the first time ever at the dealership, Toyota of Huntington will host a “hands-on” car giveaway at Latino Appreciation Day. At the event guests will place their hand on a brand-new Toyota. The last person to remove their hand wins the car. It promises to be an exciting event for everyone! Stop by Toyota of Huntington to sign up for the contest. “We create a seamless buying experience for Latino customers, many of whom are unsure about navigating the purchasing or credit process,” said Cafarelli, who with his team ensure that Toyota of Huntington a friendly, welcoming

Toyota of Huntington has been a cornerstone of the Latino community since its doors opened in 2008. Cafarelli himself has been with Toyota for more than 30 years, bringing a deep well of experience helping customers find the right car for their needs, whether they’re first-time buyers, returning customers or just looking for a dealership where they feel at home. Boating Safety Tips No matter how much experience you have, it’s always a good idea for everyone to review boating safety rules before departures. Read below to familiarize yourself with these 10 basic boating safety tips: 1. Be Weather Wise: Always check local weather conditions before departure- TV and radio forecasts can be a good source of information. If you notice darkening clouds, volatile and rough changing winds, or sudden drops in temperature, play it safe by getting off the water. 2. Follow A Departure Checklist: Proper boating safety means being prepared for any possibility on the water. From compliance with fire safety regulations to tips for fueling up, following a pre-departure checklist is the best way to make sure no boating safety rules or precautions have been forgotten. 3. Use Common Sense: One of the most important parts of boating safety is to use your common sense. This means operating at a safe speed at all times, especially in crowded areas. Be alert at all times,

and steer clear of large vessels and watercraft that can be restricted in their ability to stop or turn. Also be respectful of buoys and other navigational aids, all of which have been placed there for one reason only- to ensure your own boating safety. 4. Designate An Assistant Skipper: Make sure more than only one person on board is familiar with all aspects of your boat’s handling, operations, and other boating safety tips. If the primary navigator is injured or incapacitated in any way, it’s important to make sure someone else can follow the proper boating safety rules to get everyone else back to shore. 5. Develop A Float Plan: Whether you choose to inform a family member or staff at your local marina, always be sure to let someone else know your float plan. This should include where you’re going and how long you’re going to be gone. 6. Make Proper Use Of Life Jackets: Did you know that the majority of drowning victims are the result of boating accidents were found not to be wearing a Lifejacket? Make sure that your family and friends aren’t part of this statistic by assigning and fitting each member of your onboard team with a lifejacket-prior to departure. 7. Avoid Alcohol: Practice boating safety at all times by saving the alcohol for later. The probability of being involved in a boating accident doubles when alcohol is involved, and studies have also shown that the affect of alcohol is exacerbated by external effects such as sun and wind. 8. Learn To Swim: If you’re going to be in and around the water, proper boating safety means knowing how to swim. 9. Take A Boating Course: Beginning boaters and experienced experts alike need be familiar with boating safety rules of operation. Boater education requirements vary by state- some require validated completion of at least one boating safety course. Regardless of your individual state's requirements, it's always important to be educated, aware and prepared for every circumstance that might arise. You can learn boating safety rules by taking a local community course, or there are online tutorials to help educate novice boaters. 10. Consider A Free Vessel Safety Check: Take advantage of a free Vessel Safety Check from the US Coast Guard (see links below). They offer complimentary boat examinations to verify the presence and condition of certain Safety Equipment required by State and the Federal regulations David Tuohy, Jr. is a dedicated Allstate agent and owner of The Tuohy Agency located at 233 East Main Street in Huntington. Startling Statistics: •The fastest growing drug of abuse in American high schools is heroin. •Drug related deaths claim a life every 14 minutes, now outnumbering traffic fatalities in the United States. •There are now more first-time adolescent prescription drug abusers than first-time marijuana users. •An estimated 1.8 million youth age twelve and older are current users of cocaine. Volvo S60

The Volvo With An Attitude Often described as the “Volvo with an attitude,” the S60 stands out from the crowd with a revolutionary design that creates a strong sense of motion. The S60’s profile radiates the look of a four-door coupe with a twist. The slim roofline is accompanied by a distinctive contour of the shoulders of the lower body, creating a “double wave” that stretches from the headlights to the taillights. Volvo’s award-winning S60 continues to win praise for its breathtaking design, outstanding driving dynamics, advanced powertrains, innovative technology and tremendous value. For 2013, the sportiest and most dynamic Volvo ever becomes even more attractive thanks to the introduction of new trim levels plus an array of enhancements. For the first time, Volvo’s All-Wheel Drive with Instant Traction is available on the value-leading S60 T5. Providing the best possible grip in all situations - on wet, slippery or completely dry roads. The extensive list of standard features on all S60s grows even longer for 2013. Rain sensor windshield wipers and headlight washers are now standard on all models. New Tunnel Detection automatically turns on the headlights when the car enters a tunnel and then returns the lights to the previous setting when exiting the tunnel. Dual polished exhaust pipes are a new standard feature for the S60 T5. The T6 AWD gains a standard power passenger seat, power glass moonroof and Keyless Drive with Personal Car Communicator (PCC). The S60’s standard safety systems include City Safety, another world-first technology that made its debut on the Volvo XC60. City Safety is a driver support system aimed at preventing or mitigating collisions with a vehicle ahead occurring at speeds of 31 mph or less. It utilizes a closing velocity sensor to help determine whether

a collision is likely. Depending on the closing speed, City Safety will either pre-charge the brakes or automatically brake the S60 to help avoid a rear-end collision or lessen its impact. The S60’s standard Volvo Sensus system has been improved for 2013. Sensus manages information from the audio unit, navigation system (if equipped) and other functions, displaying them onto a seven-inch high-definition color monitor in the upper part of the center console. It allows the driver to explore the high-tech features of the car and personalize them to suit his or her needs. Steeringwheel-mounted scroll functionality for the thumb-activated rotator is increased for more intuitive and consistent flow of information including Radio Media, “TEL,” “SAT” and “NAV” functions. Volvo once again offers a premium line of automobiles, all with the high quality standards for which Volvo is known. From the precision of Volvo engineering, the craftsmanship of Volvo’s design and Volvo’s meticulous attention to detail, in an uncertain world, you can still trust Volvo. If you’re in the market for a new Volvo, come to Volvoville Huntington to see the 2013 Volvo S60 and all the other new Volvo models. Volvoville prides itself on hiring the most committed and professional sales staff who will help you select the Volvo that’s right for you, combining performance, economy and convenience. They offer exceptional customer service and are eager to share their knowledge with you. Call Volvoville at 888-515-4706 for more information, or visit them online at www.Volvoville.com. History, Hauntings and Happenings

Since I’ll be writing about ghosts and spirits in my column, it’s good to have an understanding of some paranormal terms: orbs and EVP’s. Orbs are light anomalies which appear in photographs (especially in digital images) and are thought to be a form of energy or the actual spirit of a person or animal who has passed on. Unlike dust particles, orbs can move around and won’t appear in the same spot twice. They are often translucent and can be very colorful. Like people, each orb is different. EVP is Electronic Voice Phenomena, or "spirit voices" that are said to manifest themselves on audio recordings. My partner on the Ghosts of Long Island books, Joe Giaquinto, a clairaudient medium, specializes in these types of recordings. I’m proud to say that I’ve received a few EVP’s on my own when conducting interviews. It really is quite incredible when you hear them. My specialty, however, is photographing orbs. The spirits use the energy from both the camera and the digital recorder to leave their mark, so to speak. Joe and I recently did an investigation at the elegant Fiorello Dolce bakery in Huntington

68 • village connection • may 2013

where we captured lots of orbs, and a few EVP’s as well. The most remarkable thing to occur however, was that the store’s surveillance camera actually picked up orbs in motion! Fiorello Dolce is a culinary treasure tucked away in the corner of a tiny parking lot off Wall Street. I must say, that owner/pastry chef Gerard Fioravanti, defines talent in the beautiful French and Italian delicacies he creates daily. But, like other popular spots in Huntington, he does have a ghost or two. I found this out last July when I went there to film his cannolis for the book trailer for my novel, The Medal. The topic of ghosts came up, and before long Gerard was telling me about the phenomena that has taken place in his store. Everything from hearing his name being called when no one was there, to pastry carts rolling on their own, to buckets mysteriously falling off shelves, to a wispy figure fleeting by. I always say that ghosts are good for business. So the next time you’re visiting Fiorello Dolce for a decadent flourless chocolate cake, make sure you ask about Eddie. He seems to be the resident ghost. If you were a ghost, wouldn’t you want to hang out there?

The Little Red Schoolhouse That Grew Until Larkfield School was opened, most of the elementary school children in East Northport attended the Claypitts Union Free school house built in 1893 on Larkfield Road. On land donated by the Gildersleeve family, this small red school house was erected to replace the original school on Laurel Road. Within ten years, the school board wanted to acquire the adjoining land. The owner, Chester Smith, did not wish to sell, and to forestall condemnation proceedings, he planted a peach orchard. To accommodate the increase in students, the school house was enlarged and repaired. This space also quickly became inadequate. An additional room was added in 1909 and

the entire building was expanded a few years later. In 1924, two years after the consolidation of the Northport-East Northport School District, a new wing was constructed giving the school a total of six classrooms, and the students in grades 7 and 8 were transferred to the Laurel Avenue School. Life for students in this bigger red schoolhouse still resembled the storied life of the iconic little red school houses throughout the country. According to Mabel Carll, who attended at the time, the building had no drinking water available and students had to use the well of a nearby house. Another student, Maurine Failey, has noted that since there was no support staff for the teachers, the students took turns doing such tasks as answering the phone in the office across the hall and ringing the school bell to signal the beginning and end of the school day. Student life improved a bit in 1928 when a cafeteria was added in the basement. Failey has been quoted remembering: “I used to come home for lunch and go back. And then when I was in elementary school there, they decided to have hot lunches in the basement. It was not a pleasant place to have lunch, but at least it was a hot lunch.” The red schoolhouse continued to serve the elementary students in East Northport until 1939 when Larkfield School opened on Cheshire place. In 1940, the former schoolhouse became the home of the East Northport Public Library with 321 registered cardholders and a collection of 1200 books. Unfortunately, the wood-frame building caught fire in 1945. Although the local Boy Scout troop helped to save most of the books, the building was irreparably damaged and had to be demolished. A new library building was erected on the site, and the red schoolhouse which had served so many was now only a fond memory.

Bob Little is a long-time resident of the Northport area who greatly enjoys delving into the community’s fascinating history and writing his column for the Northport Historical Society.

Make Some Outdoor Music For those who enjoy the comfort and relaxing environment of their favorite tunes inside their homes, now is the time to think about filling your backyard, patios or porches with the rich sounds of your choice musical artists or composers. Now that you have cleaned up from a battering winter, dragged out the lawn furniture, uncovered your pool and got the barbecue ready for those steamy days and breezy nights, how do you take your music outdoors without looking like a group of kids on the basketball court with your clunky boom box plugged in to an outlet? Outdoor Speakers! The multitude of ways to fill the yard with sound can vary depending upon the application and aesthetic value. Speakers that look like rocks or outdoor lighting fixtures, flush speakers in covered porches or a traditional enclosure under the house soffit can provide full, rich sound within your space. The high quality speakers we typically install come with anything from a 5-year to a lifetime warranty. So, don’t bring them in and out, don’t bother covering them; if they break just get a new one, free. In most cases your music can be piped out from an inside stereo or existing system providing FM, Satellite radio, IPOD tunes or even cable stations to keep up with the Sunday afternoon sporting game.

Systems like Sonos can be locally wired back to even a pool shed and controlled poolside from your IPhone, delivering Pandora radio and even streaming radio stations from anywhere around the world for free. If you’re interested in matching the big sounds with big pictures right in your backyard, how about a custom weatherproof all-season TV? Outdoor flat screens in environmental enclosures can complete your ultimate backyard oasis and are completely remote from a cable box anywhere in the house or even the pool shed. Enclosures can be conveniently placed by a hot tub, outdoor bar area or even lining the poolside in the landscaping. So, don’t go another season in a quiet backyard. Give yourself a reason to be outside longer and more often this summer. We all braved the winter, now is the short time to enjoy the weather and soak in the sun. Mayo Clinic on Advantages of Red Wine There is nothing like a good Merlot paired with a prime steak. Though it is the suggested choice with all red meats, rustic pasta dishes, strong-flavored cheese, and even dark chocolates, but there is more. Much more. According to the Mayo Clinic, red wine is good for you in moderation. Red wine contains antioxidants, which may help prevent heart disease by increasing levels of "good" cholesterol and protecting against artery damage. The key is resveratrol, a powerful ingredient in all red wines. More good news: studies have shown that moderate amounts of all types of alcohol benefit your heart, not just alcohol found in red wine. The bad news: most research on resveratrol has been done

by ron wood

on animals, not people. Good Merlots come from the Napa Valley, Washington State and Long Island. Being a Long Islander, I am intrigued by the 10-mile stretch of the North Fork from Riverhead to Peconic, along with a few outposts on the South Fork. This area is an established producer of fine wines since the early 1980s. Currently there are about 38 vineyards in this area -- popular destinations for tourists, day-trippers and wine connoisseurs who enjoy tastings and other wine events. Now back to my Martha Clara (Long Island, NY), 2009 Merlot and steak. The wine has a dark fruit laced taste with subtle floral notes. Julia Zaffer’s Secret Garden J

ulia Zaffer worked as an English teacher in Wantagh before moving to Northport with her husband to raise her young family. Her poetic nature is now expressed in enchanting, impressionist paintings of flowers that populate her country garden as well as the birds, such as robins and cardinals, who are frequent visitors. Taking her clue from the early botanical artists and naturalists of the 18th century, the self-taught artist works in watercolors and oils to capture nature in all its intricacies and nuances, with breathtaking results. “I am captivated by the way certain light touches the delicate, undulating, rhythmic movement of ranunculus or the way pools of water gather in the petals of geraniums after a summer shower. The study of light, attention to detail, and patient observation, coupled with a true love for nature, is at the heart of all my work,” Julia said. One oil painting, “Field Notes,” invites the viewer to heed springtime’s call and tread country landscapes dotted with colorful wildflowers. In contrast, the watercolor “Decadence,” pays tribute to the multitude of lush shades of lavender and purple that enliven the petals of a single iris.

Like the naturalists of yesteryear, Julia also takes great pleasure in creating diminutive verdant vignettes by placing glass domes over birds’ nests that have been cradled in moss. She then photographs these vignettes, which she dubs “a true marriage of art and science.” Julia’s watercolors and oil paintings are currently on view at The Firefly Artists, a cooperative located inside LaMantia Gallery, 127 Main St., Northport Village. To learn more about her artistic process, visit juliazaffer.com. You can also purchase her work on www.etsy.com/ shop/juliazaffer.

Elise Pearlman, an arts and leisure journalist, has been reviewing photography and art exhibits, theater and restaurants for nine years. Her work has appeared in Newsday, Dan’s Papers and Long Island Pulse Magazine as well as local newspapers. She creates the popular ‘There’s No Place Like Northport’ calendar with her husband. Kashi Japanese

Everyone loves to eat sushi - well, almost everyone I know! Eating Japanese is a fun experience to share with family, friends and business associates. My new favorite place to meet up for lunch is Kashi, a modern Japanese restaurant, sleekly hidden on Elm Street in Huntington Village. Kashi is where to go for fresh, artfully presented sushi and creative lunch specials. Entering Kashi, you get the visual on a stylish dining experience. Black and white contrasts sharply with the accents of blue LED lights and modern artwork. Comfortable booths line the perimeter, as the sushi bar in the back is the focal point of the contemporary decor. Service is attentive and you can sip hot, green tea on request. Classic lunches like tempura, teriyaki, hibachi and yaki udon (soy noodles) are perfect for the non-sushi fan. For guests who delight in all bites Japanese, try the Kitchen Lunch Boxes for a three-course meal. Sushi Bar Lunch Box ($15) is a treat for the sushi-lover. All sushi boxes come with a uniquely original signature roll along with two other choices like spicy tuna with chips or special tuna gyoza. Miso soup or refreshing salad is included. Kashi’s most popular lunches are the sushi roll specials. Any two rolls ($8) or any three ($11) from the menu of favorites like spicy crunchy salmon or tuna, seared tuna scallion, spicy crab, eel cucumber, shrimp avocado and so many more are all stylishly served and come with choice of soup or salad. This is a very affordable lunch deal that feels more like an indulgence! Beautiful plates of sushi pieces and sashimi are a feast for the eye and the belly. Kashi’s menu of signature

rolls includes many choices of traditional, cooked and vegetarian rolls. A fan favorite is the Out of Control, which combines tuna, salmon, yellowtail, and asparagus, and the Twister, a beautifully composed roll of white tuna tempura and spicy lobster topped with spicy tuna and avocado. Try the Blue Crab Fajita for an out of the ordinary small bite. Another flavorful appetizer is the aromatic Winter Truffle White Tuna. There are delicious specialty salads like the Crabmeat Avocado Salad, a mound of jumbo lump crabmeat tossed in a spicy mayo atop thick slices of avocado that will melt in your mouth, and the Crispy Duck Salad with lime hoisin dressing for the perfect balance of savory and sweet. Take a look at Kashi’s website which features an exciting array at Kashi’s “artfully delicious” dishes. Kashi’s lunch specials are also available for those on the go. Call ahead for pick-up or delivery or maybe relax at lunchtime and spend a little time eating outdoors at their sidewalk seating. At night, Kashi Sushi Lounge is an upbeat place to go for masterfully mixed cocktails and sophisticated seafood and steak entrees. Colorful Eating Spring is the perfect time to brighten up our plates with a vibrant palette of colorful fruits and vegetables. There is no question that eating three to five servings of fruits and vegetables daily will improve your health. Experts now agree that it is not only about how many servings you eat, but also about the variety you pick. The Mystique of Morning Mist: Andrea Gomez

It is in the wee hours of the morning, when Northport’s familiar waters are eclipsed by fog, that photographer Andrea Gomez finds both inspiration and magic. When the early riser, who holds a BFA degree in graphics and photography, ventures out with camera in hand, she said that she is deeply enchanted by the “quiet and sensual power” of her surroundings. Andrea hopes that her images, which she refers to as “romantic landscapes,” elicit the same appreciation of nature and feelings of peace and tranquility in viewers. “Spring Morning,” a harborside tribute to the transformation wrought by fog, was recently displayed at the Northport Historical Society as part of their juried exhibit, “An Artist’s Vision of Northport.” The impressionistic image is currently on display at the Huntington Arts Council’s Main Street Petite Gallery as part of their photography show. Andrea’s alluring image, “Snow Dunes,” which focuses on the interplay of light and shadow on wintry banks of white, is also on view. These two photographs were among 32 chosen by out of 300 entries by juror Yvonne Berger, director of the Center for Photographic

Art. The Main Street Petite Gallery is located at 213 Main Street, Huntington Village and the exhibit runs through June 3. “Fall morning,” another shot of the landscape off Bayview Avenue, draws its mystique from the fog’s muting of orange and yellow foliage, and the reflection of these colors in the water. To learn more about Andrea’s work and to purchase her images, contact her at hotoscapesbyandie@gmail.com.

Southern Hemisphere Harvest Sierra Nevada Brewing Company The Sierra Nevada Brewing Company is known for using only fresh full-cone hops, so what's a brewery to do when hops are only harvested in late summer? This ale features freshly picked hops from New Zealand, the only location on the planet that harvests hops in March and April. The company was the first American brewery to source hops from the southern hemisphere. The hops are dried right after being picked, flown immediately to Chico, and used for brewing the week after they were picked so that they retain peak aromatics and flavors. This copper-hued beer is a fusion of north and south, as the southern hops impart a piney and pungent aroma and a spicy flavor that's balanced with maltiness from North American grown malts.

Online Dating Tips Dear Gina and Margery, I Need Advice. I just re-entered the dating scene & decided to give online dating a try. This guy that I’ve been speaking to for several days sent me his number and asked me if I’d like to meet him tonight. I sent a text to his number to say I would like to meet up, but I got no reply. Then an hour later I asked if he still wants to meet up, and still no reply. ll no reply. He asked me around 5 p.m. and has not responded since. He initiated a meeting and gave me a number, so was this a joke or scam? I’m new to online dating and don’t know what to expect. Signed, Please Help

Dear Please Help, This is not a smart way to online date. You are setting yourself up to meet all players and to get hurt or worse. Find someone you’re interested in on the dating site and initiate contact. If he replies, exchange a couple of emails. Don’t reveal too much about yourself; enough that you seem interesting and fun and whatever else that you want people to know. Exchange 3-5 emails before you ask (if he hasn’t already) if he’d like to meet for a drink or a cup of coffee. If you like him after meeting, THEN exchange phone numbers so that you can have additional conversations and/or set up another date. DO NOT text, send countless emails or have long phone conversations. Do NOT waste time with guys who are not looking for a relationship. If all they want to do is text and meet up on short notice late at night they are not looking for a relationship, they are looking for a one night stand. Use your head, date wisely. Peace & Love, Gina & Margery

Ceviche Tours Announces “Citizens Scientists” To Swim With Whale Sharks - Visitor Allowed To Adopt Whale Sharks Whale shark season is officially upon us in the beautiful island of Isla Mujeres, Mexico, located right off the coast of Cancun. Championing the need to preserve a fragile marine ecosystem, ecotourism travel agency, Ceviche Tours proudly announces that it is now booking tours to swim with large groups of up to 40-foot long whale sharks from May 15 through September 17, 2013. During whale shark season, Ceviche Tours offers visitors to the island a chance to participate in an ecotourism adventure by swimming alongside the whale shark, an endangered species and largest fish in the ocean. Don’t worry, these magnificent whale sharks are filter feeders; like whales they feed on plankton, algae and krill. All swimmers will get to swim with a fully licensed, expert diver/guide. “There is nothing like this in the world,” said John Vater, co-founder of Ceviche Tours. “These docile creatures are approximately the size of a school bus. When you are surrounded by hundreds of them, it is truly an experience that you will never forget.” In an effort to raise awareness for the need to preserve the area’s marine ecosystem, Ceviche Tours is asking guests to become “citizen scientists” and “adopt a whale shark.” Guests can swim with whale sharks and join in an effort to protect and preserve these graceful creatures by adding their underwater photos to the nonprofit, Ecocean global database. The Ecocean library is maintained and used by marine biologists to collect and analyze whale shark encounters and to help learn more about these amazing creatures. The library utilizes photographs of the skin pattern behind the gills of each shark, and any scars, to distinguish between each animal. Cutting edge software supports rapid identification using pattern recognition and photo

management tools. Citizen scientists can help by submitting photos and sighting information. The information submitted will be used in mark and recapture studies to help with the global conservation of the species. To date, more that 43,000 photos have been collected and there have been over 20,000 sighting reports. “By taking a photo and submitting it, guests are adopting their very own whale sharks. The Ecocean library continually sends updates on your shark, such as where it was last sighted, so you always know the location of this unique ‘pet’,” continued Vater. “It allows adults and kids alike to turn their vacation into something bigger. An experience that never ends.” Ceviche Tours provides sustainable ecotourism and travel services to the Yucatan and Isla Mujeres. It was founded by John and Adriana Vater of Spa Adriana in Huntington Village, with longtime friend and Isla Mujeres native Luis “Cuco” Refugio and his family. Ceviche Tours works with the indigenous islanders of Isla Mujeres to help preserve their culture and maintain the integrity and beauty of the surrounding marine environment. Through education and photo identification efforts, Ceviche Tours joins the worldwide effort to protect and preserve whale sharks. Participants on their whale shark tours are invited to be part of those identification and tracking efforts. Travel arrangements and bookings for Whale Shark season can be made through Ceviche Tours www.cevichetours.com. More information on becoming a citizen scientist can be found at www.whaleshrk.org. Growing Up With Huntington Monsters If you grew up within broadcast range of the Empire State Building during the 1970's, and you loved scary movies, then you definitely remember weekly horror and monster movies showcased on "Chiller Theatre" and "Creature Features". Before Netflix, Blu-Ray and downloading, broadcast TV was it. This was only venue one could catch wonderful old horror flicks starring Boris Karloff, Bela Lugosi, Christopher Lee and many others. If the television station ran a baseball game instead, or dad decided this is the night to take you all to Sizzler Steak House, you were out of luck. No monster movie for you! WPIX, Channel 11, ran "Chiller Theatre" on Saturday nights at 8:30 pm from 1971 to 1982. It’s famous logo featured a six-fingered claymation hand oozing from a swamp and magically forming the words CHILLER. Early, eerie electronic music accompanied a spooky moan of “Chillleerrrrrrrr…..” This bit of animation would then fade to the featured movie. "Chilller" was the first place I saw Vincent Price trip out over "The Tingler", London get smashed to popcorn by "Gorgo", and Fay Wray scream in "Mystery of the Wax Museum". WNEW- Channel 5 had their own version of “Chiller”, titled Creature Features with horror films hosted by a dignified man in tux and sunglasses identified only as “The Creep”. The Creep told us what movie was in store that night. He sometimes gave some quick production background, ran a quiz during the film, and offered a joke. Regardless of how campy the movie was, The Creep never trashed the upcoming film. “The Creep” was actually Channel 5 announcer Lou Steele. The late Mr. Steele was also famous amongst New York parents for his nightly question: “It’s 10 p.m. Do you know where your children are?” “Creature Features” ran memorable drive-in films like Richard Boone in the wonderfully minimalist, but chilling “I Bury the Living” and the totally ridiculous, but fun walking tree in “From Hell It Came”. Rival station WOR-TV (Channel 9) entered the horror ring in 1973 with Fright Night. Their assortment of films was much wider, and more contemporary, so many of the films they played- like “Psychomania”

and “Invasion of the Bee Girls” (Both made in the early 1970’s) encountered censorship versions. Home video and Cable TV nailed the coffin shut forever on “Chiller Theatre”, “Creature Features”, and “Fright Night” during the mid 1980's. These weekly horror shows provided a weird film-making lesson. As a child, I noticed how formulistic most horror films were. The 90-minute horror show started at 8:30 pm. For the next half hour, either the monster would create small introductory damage (like smashing a tool-shed, or icing the town drunk) or we’d sit and squirm through dull character development or a romantic subplot. The middle third of the movie is when the monster would start causing havoc, and the thrills would ignite. The final thirty minutes of the film had our heroes finding a solution to defeat the creature or creatures. Many films became so routine here, you could set your watch to Creature Features. But then the odd film would come through. We are only five minutes into “Carnival Of Souls” and the leading lady dies. Or halfway through “Rodan” you realize the man-sized insects the cops are battling aren’t the monsters- they’re the little snacks for a really, really large monster. You noticed how brazen film-makers tossed the monster-movie recipe book out. Many times I pleaded for my parents to get us all home from Saturday evening shopping because “The Island Of Lost Souls” or something starts at 8:30. The watchwhenever-you-want luxury of Tivo and DVD of today is great, but it does deprive young film goers that movie-watching can actually become a anxiously waited for event.

It’s that time of year again when the galas kick off on Long Island, and Planting Fields in Oyster Bay held its opening night celebration of their spring exhibit of America’s love affair with railroads. On a chilly April evening, 150 people gathered in a tent next to the Manor House on the Planting Fields grounds to enjoy cocktails and hors d’oeuvres served by conductors in gold and black hats. Holding the event in tents in April, when the daffodils are afraid to poke their heads out of the frozen ground, was probably not the best idea. Some guests danced to the music while others tried to keep warm with liquid libations from the era.

Executive director, Henry Joyce, Mary Ann Rosman & Bruce Herlich The exhibit - held in the Manor House, complete with heat - is a fascinating story by H.H. Rogers, father of Mai Coe, Planting Fields co-owner with her husband W.R. Coe, about the Virginia Railway built

between 1907 and 1909 . The railroad was used to haul coal from remote West Virginia coal fields to the docks of eastern Virginia almost 500 miles away. It was a very successful and profitable undertaking, but sadly enough Rogers never saw the profits of his railway, dying within a month of its opening. His estate went to his children, including Mai Coe who inherited $6.8 million dollars (equivalent to $167 million today). This money was used to create the beautiful Coe Hall which still stands today. Throughout the exhibit visitors will learn about the bond Rogers had with his good friend Mark Twain, who he helped out of bankruptcy. He also became friends with Booker T. Washington and donated money to help support his new school. The exhibit runs through September 2 daily from 11:30 a.m. to 3:30 p.m. at the Manor House at Planting Fields. Admission is free with $8 parking fee. There are several fun filled events coming up which are well worth the visit, including Movie Night at the Manor House on May 10 at 7 p.m. featuring North by Northwest. On Saturday May 11 from 6- 8:30 p.m. enjoy a sit-down dinner and hear author James Porterfield speak about his book, “Dining by Rail.” If dancing is your thing, on May 17 there is a Bluegrass Party at the Manor House with hors d’oeuvres and cocktails. On Sunday, May 25 from 6 to 7:30 p.m., enjoy a free concert at the west portico of Coe Hall to kick off your Memorial Day weekend. Hopefully the weather will warm up by then. For a complete list of events go to www.plantingfields.org. Dr. Cynthia Paulis, a medical correspondent and international lecturer, is board certified in both Emergency Medicine and Family Practice. he moment I walked into Dark Horse Restaurant for the first time, I knew it would be special. The interior décor is Art Deco – a bright and welcoming space boasting a handsome bar and floor-to-ceiling windows. There is a large-screen television behind the bar and a gas fireplace above it. I was greeted warmly at the door and quickly ushered to a table. The noise level reflected happy patrons obviously enjoying themselves. While handing us menus, our server explained that local farm-fresh ingredients are used whenever possible. I started with the Roasted Shrimp Bisque – velvety, well seasoned and satisfying. The Asian Orange Almond Salad, consisting of Napa greens, scallion, mandarin oranges, black sesame seeds, crispy bean noodles, steamed tender edemame beans and almonds, was a winner. The savory Asian dressing was tangy and flavorful. I added duck confit, which arrived delectably crisp and juicy. Grilled shrimp, chicken or beef may also be added. Oysters Rockefeller were tender, prepared with a touch of sweetness in a light hollandaise sauce. The glutenfree fried calamari was light and tender, served with a Jamaican house-made chipotle orange mayo. Main Course Short ribs were perfectly cooked, falling-off thebone tender. They were served with a red wine and vegetable reduction, and sides of savory smashed potatoes, pickled onions, scallions, kale and broccoli. The chili-lookalike vegan Azteca dish was entirely pleasing – roasted tomato, beans, a trio of South American super greens, red onion, white hominy and corn. My server explained that it was a modern re-interpretation of a classic ancient recipe. There are many other delicious home-style vegan and vegetarian offerings from which to choose. The fresh fish catch of the day, a beautiful filet of scrod, was artfully prepared in a brownbutter lemon sauce and fresh scallions. Local caught sea scallops, seared on the outside with a light crust, were tender, sweet and mild.

The sirloin, prepared with a touch of butter in a demi-glace reduction, was reminiscent of a fine French Brasserie. Smashed potatoes, house-made pickled pearl onions and farm-fresh assorted local vegetables were the perfect complement. Burgers are a real treat, with your choice of either prime beef or bison. The bison burger boasts less fat, but is equally juicy and delicious. There is an all-day $10 Burger & Brew special on Wednesdays, which includes your choice of burger on a toasted potato bun, hand-cut local fries, homemade coleslaw & BBQ sauce, and an ice-cold brew. Choose from a selection of five beers on tap. Desserts are all gluten-free, and they are all delicious. My personal favorite was the Blondie with house-made warm caramel sauce and salted peanut brittle, topped with a cloud of vanilla ice cream. Other winners were the warm blueberry cobbler with oatmeal crumble, sinfully rich chocolate silk, and a dreamy chocolate panna cotta with raspberry. All bottled wines have received a minimum of 88 points by Wine Spectator Magazine. A carefully curated selection of house wines is offered by the glass or bottle. Chef/Owner Dee Muma and Executive Chef Jeffrey Trujillo visit world-class local vineyards and choose the finest vintages. All house wines are stored in casks using nitrogen lines to ensure that each glass is served fresh. There are nine wines available by the glass. Bottles prices range from $30 to $75 with most under $35. Dark Horse Restaurant also offers catering with farm-fresh gourmet choices and delicious desserts to satisfy every taste, including home-style favorites, vegetarian, gluten-free, vegan and more. They also create custom dishes upon request. Local and organic ingredients are used whenever possible. They offer five levels of service, from quick and convenient pick-up to full-service catering. In addition to Burger & Brew Wednesdays, the restaurant also offers Meatless Mondays and offer gluten free, vegan and vegetarian suggestions every day. Weekends offer gentle, live music. Dark Horse Restaurant is located at 1 East Main Street, in Riverhead. The building was erected in 1929 and was completely renovated in 2009. It is part of the Historic National Registry. Free parking is available behind the building. The restaurant is fully wheelchair accessible. Lunch: M-F, noon to 3 p.m. Dinner: M-TH 3 to 10 p.m., FRI 3 to 11 p.m., SAT 1 to 11 p.m., SUN 2 to 10 p.m. There is a First Seating menu for those who wish to dine early: Available 4:30 to 6 p.m., which includes 3 courses for $21.95, plus tax and gratuity. Major credit cards accepted. For reservations, call 631-208-0072.
