Preheat & Prepare: Preheat your oven to 180°C (350°F) Rinse the chicken inside and out and pat dry with paper towels
Season the Chicken: In a small bowl, mix olive oil (or butter) with chopped rosemary, thyme, oregano, garlic, salt, pepper, and paprika Rub this mixture all over the chicken, including under the skin for extra flavour Place the lemon halves inside the cavity.
Prepare the Roasting Pan: In a large roasting pan, spread the potatoes, carrots, and onion Pour the chicken stock or white wine over the vegetables to enhance their flavor and keep the chicken moist
