Destinations Magma UNESCO Global Geopark in South West Norway is an area characterised by geological cultural and natural beauties, more than 6000 lakes and thousands wonderful islands characterised by anorthosite rocks: the same rocks that you can find on the surface of the moon! In Magma people and nature are used to live in harmony since hundreds years ago: mining, agriculture and fishing have been the main activities along the history till modern time. Nowadays is stil possible to take part to these old traditions visiting the local food producers, taking a boat fishing tour and exploring the abandoned mines.

The Faroe Islands are working towards establishing a geopark within the network of UNESCO Global Geoparks, and these preparations are coordinated by Jarðfeingi, the Faroese Geological Survey. The Faroe Islands are the remnants of a huge landmass built by volcanoes that died some 50 million years ago. The land slowly eroded and partially subsided so all that is left today are 18 small and steep islands with landscapes deeply moulded by time in this stormy location far out in the North Atlantic Ocean. The landscapes and seascapes in a cold oceanic climate provide rich natural resources to the islanders, including prosperous fishery and mountain meadows for sheep raised the traditional way.

Katla UNESCO Global Geopark in South Iceland opens a natural wonderland of active volcanoes, glaciers, waterfalls, black sand beaches, and moss-covered lava fields to its visitors. A top priority of the park is to protect the natural environment, promote local sustainable development, to introduce and preserve local culture and tradition, and place a strong emphasis on nature tourism in its area. Katla Geopark covers around 9% of Iceland´s surface area (9542 km2) but only 1% of Iceland´s population live in the geopark or about 3500 inhabitants (year 2022). Despite a challenging environment due to a constant threat related to natural hazards, agriculture is one of the main sources of income for the area, with a long history of traditions and local knowledge originating to the period of settlement in the 9th century. Local food therefore plays a large role in the sustainable development of the area and is highly integrated in the geoparks tourism offer.

Geir Arne, the general manager of a corporate health service, has found himself spending ever more time on the hobby of beekeeping, honey and jelly making. In 2009, Geir Arne and Gretha moved to Sokndal and began helping Sverre with the hives.

Sverre had at that point more than fifty beehives, and Geir Arne proved to be an interested and quick learner of the necessary skills. Moreover, Geir Arne noticed that the honey had different colour, consistency, and taste depending on the time of year and which flowers the bees brought nectar from. This observation came also as a welcome eyeopener for Sverre, who had produced honey by the bucket thinking that honey was honey. The production was then reorganised, and distinct types of honey were developed, such as heather honey, farm honey, summer flower honey, etc. The different types of honey were then made available in different jar sizes.

Sverre, who has been keeping bees for more than 80 years, is still active at the age of ninety-four. He still keeps a couple of hives on his own, and he can sit and look at the bees flying in, reflecting on where they come from and what nectar they bring with them. Another more serious aspect, is the way that the present climate change threatens the existence of bees, and, by extension, our production of

pollination-dependent fruits. Therefore, in caring for the beekeeping tradition and the bees, Gretha, Geir Arne and Sverre do a most important job.

The Nordic brown bee, Apis mellifera mellifera, is considered an ecotype or subspecies of the ancient European honey bee. The Nordic brown bee is the only original bee breed in Northern Europe and is today considered a breed worthy of conservation. In the Norwegian purebred areas in Flekkefjord, Lund, Sokndal and Sirdal, it is forbidden to keep bees other than the brown bees. Here, there are natural boundaries with mountains, valleys and oceans that isolate the population and prevent mating with other bee breeds.

NORWAY

Sverre Sirevåg was born in 1927 and started keeping bees already at the age of fourteen. He started off with two beehives, but they gradually grew into many more, in addition to the ones he looked after for others. In 2010, his daughter Gretha took over the production together with her husband, Geir-Arne. They received useful help from their mentor Sverre, and they now produce under the brand “Den brune bien” (The Brown Bee), offering various types of honey and jelly.

The mountains and the many valleys that make it possible to maintain a purebred area for the brown bee, have been created by the long-term weathering down of a mountain range the size of the Himalayas. The bedrock along the sea consists of anorthosite, a rare rock which has weathered in the warmer periods of Earth’s history, creating the many valleys that give the landscape its distinctive form. In today’s relatively cold climate, however, the anorthosite does not weather much and therefore creates the basis for little vegetation, apart from the patches of heath so highly appreciated by the bees.

The alternating sections of anorthosite and the more fertile rock norite, which contains both phosphorus and iron and thus deteriorates rapidly, creates a great biodiversity treasured by the bees and the honey lovers alike. Anorthosite is also to be found on the moon’s surface.

Den Brune Bie Sverre Sirevåg ble født i 1927 og begynte å stelle bier allerede som 14-åring. Han begynte med to egne bikuber som etter hvert ble mange flere, i tillegg til at han også passet bikuber for andre. I 2010 overtok datteren, Gretha, driften sammen med mannen sin, Geir-Arne. De fikk god hjelp fra mentor Sverre som fortsatt er aktiv i en alder av 94. De driver nå under merket «Den brune bien» og kan tilby flere forskjellige typer honning og gelé.

Geir Arne som er daglig leder for en bedriftshelsetjeneste, har en hobby som tar over mer og mer av hans tid og det er som birøkter og produksjon av honning og gele. Han og kona Gretha flyttet til Sokndal i 2009 og begynte å hjelpe Sverre med bikubene. Sverre hadde da over 50 bikuber og Geri Arne var lærte raskt og var tydelig interessert i å lære.

Fjellene og de mange dalene som gjør det mulig å opprettholde reinavlsområde for brunbien er skapt gjennom forvitring av en fjellkjede på størrelse med Himalaya gjennom millioner av år. Berggrunnen langs havet består av den sjeldne bergarten Anortositt som gjennom varmere perioder i Jordens historie er blitt forvitret og dannet grunnlaget for de mange dalene i området. I dagens kalde klima forvitrer anortositt ikke og skaper derfor lite vegetasjon, men oftest mer lyngheier som biene flittig besøker.

Det Geir Arne la merke til var at honningen hadde forskjellige farge og konsistens og smak alt etter når på året og hvilke blomster biene hentet nektar fra.

Dette ble også en stor opplevelse for Sverre som i større grad hadde produsert honning i bøtter og spann og trodd at honning var honning.

Anortositt finner du ellers på overflaten av månen.

En veksling mellom områder med anortositt og den mer fruktbare bergarten noritt som både inneholder fosfor og jern og dermed forvitrer raskt, skaper et stort biologisk mangfold som biene og honningelskere setter stor pris på.

Produksjonen bla så lagt om og det ble utviklet forskjellige typer honning som Lynghonning, Gårdshonning, sommerhonning m.fl. og det ble mulig å kjøpe de forskjellige typene på forskjellig størrelser glass. Sverre som nå har holdt på med bier i mer enn 80 år har fortsatt et par bikuber og er fortsatt en god læremester da det er få i verden som siter på så mye kunnskap om birøkting.

Han kan sitte å se på biene når de kommer og forstå hvor de kommer fra og hvilken nektar de har med seg. En annen ting er at bier er ved å bli truet av klimaendringer så det er viktig å ta vare på dem da de ville bli lite med bl.a. frukt dersom de forsvant.

Gretha, Geir Arne og Sverre gjør derfor e meget viktig jobb i å ta vare på birøkter tradisjonen og i å ta vare på biene.

Nordisk brunbie regnes som en økotype eller underart av den gamle europeiske bien. Nordisk brunbie er den eneste opprinnelige bierasen i NordEuropa, og regnes i dag som en bevaringsverdig nordisk bierase. I de norske renavlsområdene i Flekkefjord, Lund, Sokndal og Sirdal er det forbudt å holde andre bieraser enn brunbia. Her er det naturlige grenser med fjell, daler og hav som isolerer bestanden og hindrer paring fra andre bieraser.

Sandbekk´s 50-year history

The Sandbekk plant came into being mainly due to Det Norske Aktieselskab for Elektrokjemisk Industri’s strong commitment to the development of pigment white. They established Titania’s sister company Titan Co AS, which built the first titanium pigment factory in the world in Fredrikstad, for which Sandbekk would then provide raw materials.

In 1916, Titania, then a small mining company, bought the Sandbekk Farm from dance teacher Adolf Sandbæk, who shortly thereafter moved to Denmark. Little could dance teacher Adolf at that time know about all the hefty dancing that would take place in the welfare facilities at Sandbekk in the 1950s, 60s and 70s.

The same year, 1916 – just when World War I was at its worst – saw the start of a difficult construction period. In 1919, the first year of proper production, a small washing facility, a quarry, and the track to Rekefjord were ready. In the beginning, horses were used on the track, but they were eventually replaced by electric trains. A train has been preserved and

can be admired in Jøssingfjord Vitenmuseum (a science museum).

Stavanger Aftenblad’s travelling reporter visiting the works in 1919 stated: We went into a room filled with ear deafening noise and caught sight of a monster churning stones with insatiable hunger. A couple of workers kept feeding the troll. Small rocks and gravel were shovelled into its mouth: larger rocks weighing up to 30-40 kilograms were hurled in by hand. One got the impression that the monster’s rage increased when large rocks were thrown into its throat; the huge steel gape cracked and banged, and the mountain itself shook beneath our feet.

NORWAY

The first patented methods for extracting titanium oxide from ilmenite were developed around 1910.

This led to plans to build one of the largest and most complex extraction plants in Norwegian mining history at the site of Sandbekk. Prior to this, ilmenite was exploited for its iron content more or less successfully, as ilmenite ore has a high melting point compared to other types and is difficult to melt.

Titanium oxide is used as white pigment in painting, plastic, medicine, and food.

“They didn’t reach old age, those guys” Oddly enough, manual rock extraction continued well into the 1930s, although more mechanised technology was being employed elsewhere.

Gradually, more modern equipment was introduced.

The term “Two-cow workers” points to the fact that about 50% of the workforce combined work at the mines with farming in the 1930s. The Sandbekk site became quite complicated over the years and consisted of three installations that were built on and into each other: the washer of 1920, the crusher of 1930, and the washer of 1936. It reached its final shape as late as the 1950s.

From 1936 onwards, up to five hundred men worked in the company at times, and in 1958 the company switched from piecework to fixed hourly wages. This signalled a big shift in the workplace environment, with a more relaxed and cordial tone between the ranks.

In the 1950s, one found out that going deeper into the bedrock would be too expensive. The ore at

Sandbekk dips at about 30 degrees, something which is too steep for machines and not steep enough for blasted ore to fall by itself. One then started looking elsewhere and found Tellenes in 1955.

However, before long the times became more difficult, and in 1964-1965 the workforce had decreased by 193 men. Plans for building a smeltery in the village were shelved in 1963, so many workers had probably been kept on in the hope that the smeltery would become a reality.

Still, for 50 years Sandbekk was a mining site providing work opportunities and income for the local population. But Sandbekk was not only a production unit, it also had a welfare plan and a venue for social events: the Velferden fest og forsamlingslokale, with dining room, wardrobe, doctor and a public health nurse’s office.

Confirmations and weddings as well as parties were held here.

Sandbekks 50-årige historie Ca. 1910 kom de første patenterte metodene på å fjerne Titanoksid fra Ilmenitt. Dette ble starten på planen om å bygge et av de største og mest kompliserte oppredningsanlegg i norsk bergverkshistorie på Sandbekk. Før dette var Ilmenitt benyttet for sitt jerninnhold med vekslende hell da ilmenitt har et høyt smeltepunkt i forhold til andre typer jeg og er vanskelig å smelte. Titanoksid blir blant annet brukt som hvitt pigment i maling, plastikk, medisin og mat.

Sandbekk ble i all hovedsak til pga Det norske Aktieselskab for Elektrokjemisk Industri sitt store engasjement for utviklingen av pigmenthvitt. De etablerte Titania’s søsterselskap Titan Co AS som bygget den første titanpiggmentfabrikk i verden i Fredrikstad og som Sandbekk da skulle være råstoffkilde til.

I 1916 kjøpte så Titania, som da var et lite bergverksselskap, Sandbekk Gård fra danselærer Adolf Sandbæk. Adolf flyttet da straks til Danmark.

Danselærer Adolf skulle da bare ha vist hvor mye dansing det ble på Velferden på Sandbekk på 50-, 60- og 70-tallet.

I 1916 akkurat når første verdenskrig var på sitt verste, startet så en vanskelig anleggsperiode. I 1919 som ble det første riktige produksjonsåret, sto et lite vaskeri, et dagbrudd og banen til Rekefjord klar. På banen ble det i starten brukt hester, men etter hvert elektriske tog. Et tog har blitt tatt vare på og kan beundres i Jøssingfjord Vitenmuseum.

Stavanger Aftenblad reisende medarbeider som besøkte verket i 1919 uttalte seg: Vi gikk inn i et rom, hvorfra en overdøvende larm hørtes, og fikk her se det uhyre, som tygger sten med en liketil forfærdende grådighet. Et par mand holdt på at mate trollet. Småsten og grus kastes med skuffer i dens gap: de større stene av opp til 30-40 kilograms vegt kastes med henderne ned til det.

Man fikk formentelig inntryk av at et særlig raseri kom over uhyret, når slike store stene kom i dets svelg; det knaket og det smalt i det svære stålgap og selveste fjellet vi sto på rystet. ”De ble ikke gamle de karene” Merkelig nok ble manuell bergbrytning opprettholdt i stor grad godt ut på 30-tallet, selv om teknologien for mer maskinell drift ble brukt andre steder. Men etter hvert startet en mer moderne driftsperiode. ”To kyrs arbeiderne” var et begrep og ca. 50 % av arbeidsstokken drev kombinasjonsbruk i 1930 årene.

Sandbekk’s verk som med årene ble veldig komplisert, besto av tre verk som ble bygget på og inn i hverandre: 1920 vaskeriet, 1930 verket og 1936 vaskeriet. Den endelige formen fikk det først på 1950 tallet.

Fra 1936 og fremover arbeidet det til tider opp mot 500 mann i bedriften og i 1958 gikk man over fra

akkordlønn til fast timelønn. Dette ble et stort skifte og omgangstonen ble bedre og folk var plutselig dus og på fornavn med hverandre.

Planene om et eget smelteverk i bygda ble skrinlagt i 1963 så mange arbeidere var nok blitt holdt i håp om at smelteverket skulle bli en realitet.

På 50-tallet fant man ut at det å gå dypere ville bli for dyrt. Malmen på Sandbekk dykker ca 30 grader noe som er for bratt for maskiner og ikke bratt nok til at skutt malm raser ned av seg selv. Man begynte da og lete andre steder og fant Tellenes i 1955.

Men det varte ikke lenge før det ble mer vanskelige tider og i 1964-1965 ble det 193 personer færre i arbeidsstokken.

Men i 50 år var Sandbekk det stedet hvor gruva lå og på Sandbekk var det arbeide å få. Sandbekk var ikke bare en produksjonsbedrift, men hadde også et velferdsregime og en sosial arena. et sted for sosiale sammenkomster. Her lå nemlig Velferden fest og forsamlingslokale med spiserom, garderobe, lege og helsesøsterkontor. Her ble det holdt konfirmasjoner og bryllup. Her ble det holdt fester.

Fruit growing and cidermaking at Fossmoen

66-year-old Odd Harald finds it immensely satisfying to see the trees take root and grow and, after he has grafted them, bear fruit. He follows their development and is eventually able to reap the rewards. There is a lot to be learnt about cider production, which has become somewhat of a science. Cider production has gradually become a relatively large industry in Norway, and the product is today sold through Vinmonopolet, the state-owned alcoholic beverage retailer.

The fruit trees were planted on a rock-strewn hillside.

This makes the orchard impossible to access with machines, so everything has to be done manually. On the other hand, the rocks act as a large stove that gets heated by the sun during the day, the stones giving off heat and keeping the area and the trees warm well into the evening and night.

They have also tried to keep some beehives, but have lately chosen to focus more on bumblebees, as bumblebees are excellent at pollinating the trees when they bloom in spring. They have therefore made different types of bumblebee houses to make life easier for the bumblebees and attract more of them.

The bumblebees are also a key element on the cider label.

Odd and Anna make several types of cider. They started off with a pure apple cider and produced a couple of varieties with slightly different sweetness and from various apple types. Later, they expanded the range by adding different types of berries to the apple cider. Their present production consists of a couple of varieties of apple cider as well as a couple of varieties of pear cider.

Frukt og ciderproduksjon Cider produsent Odd Harald Slettebø har gått på kurs i Hardanger for å lære seg og produsere cider. Han har nå førtidspensjonert seg fra oljeindustrien for å satse på fruktdyrking og cider-produksjon sammen med kona Anna Slettebø.

66 år gammel Odd Harald synes det er veldig tilfredsstillende og se trærne sette rot og vokse seg til og setter frukter etter at man har podet dem. Han følger med på utviklingen og etter hvert kan man til slutt høste fruktene. Det er veldig mye å lære om cider produksjon som har blitt en hel vitenskap. Cider produksjon har etter hvert blitt en relativt stor industri i Norge og produktet selges i dag via Vinmonopolet.

NORWAY

Cider maker Odd Harald Slettebø attended a course in cider making in the Hardanger district. He has now retired early from the oil industry to focus on growing fruit and making cider together with his wife, Anna Slettebø.

Frukttrærne er plantet inne i ei stor steinrøys som gjør det umulig å komme til med maskiner så alt må gjøres for hånd. Men steinrøysa virker derimot som en stor varmeovn hvor sola varmer opp steinen i løpet av dagen og holder området og trærne varme og lune langt ut over kvelden og natta ved at steinene gir fra seg varme.

De har også forsøkt seg med noen bikuber, men har i det siste valgt å satse mer på humler da humler er veldig gode til å bestøve trærne når de blomstrer på våren. De har derfor laget forskjellige typer humlehus for å gjøre livet lettere for humlene og tiltrekke seg flere humler. Humlen er også et sentralt element på etiketten til cideren.

De lager forskjellige typer cider. De startet opp med en ren eplecider og produserte et par varianter av den med litt forskjellig sødme og litt forskjellig epletyper.

Senere er sortimentet utvidet med at det er satt til forskjellige typer bær i eplecideren så nå lages det et par forskjellige sorter eplecider og et par forskjellige typer pærecider.

The taste of Magma Geopark

The morr sausage traces its origins back to the Viking Age. Norway’s first southbound seafarers needed light provisions. The Vikings had already two world-class products at hand: the men built ships that were sensationally good, the women wove superb sails. But that was not enough. They needed a third product – a product that would enable them to make long journeys and become masters of the sea.

The Viking Era would never have happened without the sheep. The sheep provided both sail and provisions. At some point, a clever mind came up with the idea of mincing pluck and stuffing it into sheep stomachs. The Vikings themselves never gave this travel food any name, but the Scots called it haggis and later made it their national dish. They stuff stomachs with heart, liver, and lungs, mixed with suet, spices, and onion. The name haggis derives from “hag”, an Old Norse verb meaning to chop.

Having sent off her husband abroad with stuffed sheep stomach in his sea chest, the Viking housewife found that she had loads of intestines left.

She then realised that she could stuff the intestines with the pluck hitherto unused. This time she gave the product a name: morrpølse, or morrbjuga in the words of the saga writers (morr meaning minced pluck). It consisted probably of more than pluck.

Everything that was left on the grilled animal body after the tasty meat had been taken, was minced and stuffed into the intestine. It is made the same way today. Ingredients like chopped udder or food pipe would give the sausage a distinct flavour.

The sausage is not a Norwegian invention, of course – people from all over the world have eaten sausage. The morr sausage variant is however very local. It comes in various versions, depending on which part of the country you are in, but one thing is common: the idea of using the parts of the animal that would not otherwise be used. Filling those parts into the intestine is what makes the morr sausage.

Although being less common many places, it still holds its ground in Egersund and the Dalane district.

Skilful sausage makers have supplied the local population with high-quality morr sausage. Even children like the morr sausage, preferably without the intestine, and fried with chopped onion and butter on the pan.

NORWAY

The taste of Magma Geopark district condensed in a sausage. The morr sausage has constituted a highly treasured part of the local diet ever since King Olaf Haraldsson set up base in the good harbour.

Somewhere in Western Norway – possibly between the Sognefjord and the Hardangerfjord – the morr sausage changes. North of this boundary, the morr sausage transformed into a cured sausage hundreds of years ago. You therefore have to go south of that border to get the original morr sausage, the offal sausage that has changed little since it was enjoyed by the Vikings.

Today, the morr sausage contains more meat than it used to, but it is the suet and the spices that give the sausage its distinctive flavour. A tasty morr sausage should be both salty and sweet.

Back in the earlier days, the morr sausage was unjustly considered to be peasant food. The morr sausage is far from peasant food in the sense of simple food, however. There is nothing simple about it. A morr sausage is the product of meticulous preparation and generations of love for its taste.

Thus, it has become the taste of childhood, ancestry and birthplace. Relocated Egersundians eat morr sausage when they feel homesick.

No wonder, then, that the Magma Geofood project aim to bring the sausage back on the dinner tables of the local people. The Dalane region has Norway’s largest population of sheep. The morr sausage is therefore local food in its true sense – made from sheep grazing all around, giving the sausage its touch of sea, coast and heathland, to be felt whether you enjoy it at home or at one of the downtown restaurants.

Når det indre teller mest, er svaret morrpølse Smaken av Magma Geopark komprimert i en pølse: Helt siden kong Olav Haraldsson hadde base i den gode havna, har morrpølsa vært en kjær del av det lokale kostholdet.

Historien om morrpølsa starter i vikingtiden. Norges første sydenfarere trengte proviant som var lett å frakte med seg. Vikingene hadde fra før to store oppfinnelser på samvittigheten: Mennene hadde klart å bygge verdens beste skip, og kvinnene hadde klart å veve verdens beste seil. Men det var ikke nok. De trengte en tredje oppfinnelse for å bli en suksess på havet. Slik oppfant de verdens beste skipsproviant for lange sjøreiser.

Vikingtiden hadde aldri blitt vikingtiden uten sauen.

Den har æren for både seilet og skipsprovianten.

Det hele begynte med at en eller annen gluping kom på å hakke opp innmat og fylle den i sauevommer.

Vikingene ga aldri navn til denne skipsprovianten, men da skottene fikk prøve den norske delikatessen, kalte de retten for haggis. I dag er den skottenes nasjonalrett. De fyller dyrevom med godsaker som hjerte, lever og lunger, og blander det hele med nyrefett, krydder og gjerne løk. Navnet haggis kommer av «hag» som på gammelnordisk betydde å hakke opp.

Etter at vikingkona hadde sendt mannen av gårde til utlandet med fylt sauevom i skipskista, satt hun igjen med sauetarmer i lange baner. Slik fikk hun ideen om å fylle tarmene med innmaten som var til 15

overs. Nå ga hun retten et navn, morrpølse, eller morrbjuga som sagaforfatterne kalte den. Den besto trolig ikke bare av innmat. Alt som var igjen på dyret etter at gildehallene hadde grillet de ytre godsakene, ble hakket opp og kjørt inn i tarmen. Slik er det også i dag. For eksempel kan opphakket jur og spiserør sette en ekstra spiss på den lokale morrpølsa.

Pølsa er ikke norsk. Alle kulturer har spist pølse siden tidenes morgen – ja, unntatt svenskene, som spiser korv – men morrpølsa er ikke bare norsk; den er samtidig svært lokal. Morrpølsa kommer i mange slags varianter alt etter hvor du befinner deg i landet, men én ting er felles.

Det handler om å bruke det som ellers ikke ville blitt brukt på dyret. Når dette så fylles i en tarm, har du plutselig morrpølsa.

Mens morrpølsa har vært på tilbaketog mange steder, har den holdt stand i Magma Geopark.

Dyktige, lokale slaktere sørget for at morrpølse av høy kvalitet fant veien inn i lokale ganer. Til og med unger liker morrpølse, da gjerne uten tarm og steikt sammen med hakket løk og godt smør på panna.

Et eller annet sted i landet – kanskje i Sognefjorden, kanskje i Hardangerfjorden – går det en grense der morrpølsa skifter karakter. Nord for denne grensen har den i løpet av hundrevis av år forvandlet seg til en spekepølse. Det er derfor i sør du får den opprinnelige morrpølsa, selve urpølsa, innmatpølsa som vikingene elsket, og som har holdt seg temmelig uforandret siden vikingtiden.

I dag er det nok litt mer kjøtt i morrpølsa enn det var i den opprinnelige pølsa, men det er fortsatt fettet og krydderet som gjør susen. En god morrpølse skal nemlig klare kunststykket som det er å smake både litt salt og litt søtt.

Morrpølsa ble før i tiden gjerne omtalt som husmannskost, men det er høyst misvisende. Hvis husmannskost er det samme som simpel kost, så passer det ikke på morrpølsa. Det er ingenting simpelt med den lokale tradisjonsmaten. Bak ei

morrpølse ligger det mye arbeid, gammel kunnskap og kjærlighet til en smak som generasjon etter generasjon har elsket. Slik har den blitt selve smaken av barndom, ætt og hjemsted. Utflyttede egersundere spiser morrpølse når de lengter hjem.

Det er ikke tilfeldig at Magma Geopark ønsker å løfte den lokale morrpølsa opp på de tusen spisebord. Området er Norges største sauedistrikt.

Morrpølsa er derfor på alle måter kortreist – ja, den beiter rundt oss på alle kanter og gir morrpølsa den lille ekstra anelsen av hav, kyst og lynghei du kan merke så godt hvis du nyter morrpølsa på en av byens restauranter eller tilbereder den hjemme hos deg selv.

The taste of a mythical landscape

Tre Tyttebær is a small, local enterprise producing cultural food from local ingredients. Sidsel Salvesen is the entrepreneur behind Tre Tyttebær, and the production takes place at her farm in Rekefjord, at the foot of Mount Oddsfjellet.

Salvesen likes to think that the mythical landscape gives her products an extra flavour, which means that the food acquires an additional quality when being associated with a story. Everyone who has visited a French vinery cellar knows that the wine served there tastes excellent. The same wine bought from one’s local wine shop tastes not quite as good, though.

In other words, taste is linked with the knowledge we have about the food that we eat and drink. All food tastes better when accompanied by a good story. Similarly, when Salvesen harvests kelp from the shore beneath Mount Oddsfjellet, smokes it and sells it as ”smoked Viking salt», she embeds the product in an old Icelandic saga, the Saga of ÖrvarOdd. The famous Viking Örvar-Odd lies buried at the top of Mount Oddsfjellet. He was born closely nearby, at the Bergly farm. When Örvar-Odd was 12-13 years old, the farm was visited by a seeress, a völva. She foretold that Odd’s horse, Fakse, would be his bane.

In order to avoid the prophecy from being fulfilled, Fakse was put to death and buried near Lake Faksetjern.

Later, Odd travelled to all the famous Viking destinations, such as Holmgard (Novgorod), Kænugard (Kyiv), Miklagard (Istanbul), Jorsal (Jerusalem) and Jorvik (York). While at Jorsal, Odd was baptised in the river Jordan. Odd later married a princess in Sikiløy (Sicily).

As an old man, Odd returns to his home farm, Bergly. One day he takes a walk in the heath near Lake Faksetjern. After some time, he sees a horse skull sticking out among the heath shrubs. He kicks the skull, but a worm darts out of it and bites Odd’s foot, injecting deadly poison into it. At his deathbed, Odd expresses three wishes for his burial; that he be buried at a place where he can hear both the sea, the church bells, and the cock at Bergly. That place is at the top of Mount Oddsfjellet.

NORWAY

Will the taste of the kelp reveal its origin in the sea below Mount Oddsfjellet, the burial site of Örvar-Odd, the famous Viking? If you do think that champagne has a taste of the Champagne region, Parma ham a taste of the city of Parma, and cognac a taste of the commune of Cognac, then the answer is surely yes.

Today, a marked trail takes you up to the top of the mountain. The walk up to the top takes some 15–20 minutes. A funny fact: three of the top Norwegian football clubs are named after Odd from Bergly.

Firstly, the Skien based club Odd. Secondly, Rosenborg, who bore the name Odd up to 1929, and thirdly, one of the founding clubs of Start, originally called Orvar Odd. Such is the story that Sidsel Salvesen and her Tre Tyttebær brand has fused into her products made by ingredients from the area surrounding Mount Oddsfjellet. The name Tre Tyttebær (Three Lingonberries) refers to Odd’s three wishes on his deathbed.

Most of the products contain fresh and tasty kelp, which is readily available on the coast of Rekefjord.

The kelp is harvested during the growth season (it rests during the winter) and is then dried in a drying shed. A good thing about kelp salt is that it reduces the need for adding salt to the food. In addition to

smoked Viking salt, Tre Tyttebær offers Donn’s lighthouse salt, chili pepper salt, lingonberry salt, and kelp salt from Kattarauo.

Salvesen also produces dandelion syrup, spruce tip syrup, rowanberry jelly, and rosebay willowherb jelly, all harvested in the mythical landscape surrounding Mount Oddsfjellet. She emphasises that these are seasonal products. They should be enjoyed when they are at their best, which is during their season.

“I want Tre Tyttebær to represent something more, something a little indefinite that I like to call ‘cultural food’,” concludes Sidsel Salvesen.

Mersmak fra et mystisk landskap Går det an å kjenne på smaken at taren er tatt i havet utenfor Oddsfjellet der den berømte vikingen Orvar Odd ligger gravlagt? Svaret er ja hvis sjampanjen har smak av Champagne, parmaskinken har smak av Parma og konjakken har smak av Cognac.

«Tre Tyttebær» er et lite, lokalt foretak som produserer kulturmat av lokale råvarer. Det er Sidsel Salvesen som står bak «Tre tyttebær», og produksjonen foregår bokstavelig talt ved foten av Oddsfjellet. Eiendommen ligger i Rekefjord, på gården som Oddsfjellet er en del av.

Salvesen liker å si at produktene har en mersmak fra et mytisk landskap. Med det mener hun at mat får en ekstra kvalitet når den kan knyttes opp til en historie. Alle som har vært dypt nede i en kjeller på en vingård i Frankrike, vet at vinen smaker fantastisk. Den samme vinen i hylla på polet smaker annerledes. Smak henger med andre ord nært sammen med kunnskapen vi har om det som vi spiser eller drikker. Alt smaker bedre med en god historie knyttet til produktet. Når Salvesen for eksempel sanker tare i havet utenfor Oddsfjellet, røyker den og selger den som «Røykt vikingsalt», lar hun produktet ta opp i seg en eldgammel fortelling fra Island, nemlig Sagaen om Orvar Odd. 19

På toppen av Oddsfjellet ligger graven til den berømte vikingen Orvar Odd. Han ble født like i nærheten, på gården Bergly. Da han var i 12-13 års alderen, fikk Bergly besøk av ei volve. Hun spådde at hesten til Odd, Fakse, skulle bli hans bane. For at ikke spådommen skulle gå i oppfyllelse, ble Fakse avlivet og begravet ved Faksetjern.

Som voksen reiste Odd i viking og var innom alle de berømte vikingstedene som Holmgard, Kænugard, Miklagard, Jorsal og Jorvik. Mens han var i Jorsal, ble han døpt i Jordanelva. Seinere giftet Odd seg med en prinsesse på Sikiløy (Sicilia).

Først da han blir gammel, vender han tilbake til Bergly. En dag går han i marka ved Faksetjern. Der ser han en hodeskalle fra en hest stikke opp mellom lyngtuene. Han sparker til skallen, og ut piler det en orm. Den hogger Odd i foten, og han blir dødelig forgiftet. På dødsleiet har han tre ønsker for stedet der han skal gravlegges: han skal kunne høre havet, kirkeklokkene og hanen på Bergly. Det stedet er toppen av Oddsfjellet.

I dag er det tilrettelagt en sti opp til toppen. Du bruker 15–20 minutter på turen.

Som en kuriositet kan det nevnes at tre topplag i fotball er oppkalt etter Odd fra Bergly. Først og fremst Odd i Skien, men Rosenborg het Odd fram til 1929, og et av lagene som ble til Start, het opprinnelig Orvar Odd. Denne historien er det Sidsel Salvesen og «Tre tyttebær» har tatt opp i seg når hun lager produkter med råvarer fra området rundt Oddsfjellet. Navnet «Tre tyttebær» viser til de tre ønskene til Odd på dødsleiet.

De fleste produktene inneholder tare. Utenfor Rekefjord finnes frisk og god tare i massevis.

Denne sankes i sesongen (taren hviler om vinteren) og tørkes i et lite tørkeri. Det fine med taresalt er at taren i seg selv gjør at det trengs mindre salt i maten. «Tre tyttebær» tilbyr foruten «Røykt vikingsalt», også «Donns fyrsalt», «Chilisalt», «Tyttebærsalt» og «Taresalt fra Kattarauo».

Sidsel Salvesen produserer i tillegg «Løvetannsirup», «Granspiresirup», «Rognebærgele» og «Geiteramsgele», alt høstet i det mytiske landskapet nær Oddsfjellet. Hun presiserer at dette er sesongvarer. De skal spises når de er best, og det er i sesongen.

«Poenget er at «Tre Tyttebær» skal stå for noe mer, noe litt ubestemmelig som jeg liker å kalle kulturmat», sier Sidsel Salvesen.

The Søya Costume The Søya Costume was developed following studies of our Viking history, and it has a design that is meant to reflect that history.

Søyadrakten Søyadrakten er utviklet etter studium av vikinghistorien vår, og designet på drakten skal føre tankene hen til historien. Vikingene brukte saueull til å lage klær og vikingseil, ull som de fikk fra gammalnorsk spælsau (den som jeg kaller jernaldersau).

The bronze jewellery made for the costume was developed in cooperation with a local silversmith.

The sheep head is a common motif of the jewellery accessories, and emphasises the sheep’s importance in our history. The jewellery design is otherwise influenced by historical jewellery.

Draktsmykkene av bronse er utviklet i samarbeid med en lokal sølvsmed. Jeg bruker sauehode i mange av smykkene som hører til, for å understreke sauens betydning for menneskene gjennom tidene.

Ellers er draktsmykkene utformet i tråd med gamle historiske smykker.

The Søya Costume is designed and sewn by me, Anne Karin H. Søyland, from wool collected from the 150 Old Norwegian sheep on our farm. We use the wool from our sheep to produce yarn – some with self-made designs – which we also use to make woven rugs. Another product of ours is printed sheepskin.

Traditionally, symbols from five different symbol groups should be printed on the sheepskins: the sun, water, plants, animals, and the heart. The symbols were meant to embellish the skins and make them decorative, but equally important was the belief that the ornaments and symbols carried a special power. The purpose of the symbols was to instil peace, rest, safety, and love, and to provide protection, a long life, fertility and prosperity.

NORWAY

The Vikings used sheep wool, with the most common sheep breed at that time being spælsau (Old Norwegian Short Tail Landrace) – which I like to call Iron Age Sheep. The wool was used to make clothes and sails.

Ellers har vi skinnfeller med skinntrykk. Tradisjonelt skulle skinnfellen være trykket med symboler fra fem ulike symbolgrupper: sol, vann, planter, dyr og hjerte. Symbolene skulle forskjønne fellene og være dekorative, men minst like viktig var troen på kraften i ornamentene og symbolene. Hensikten med symbolikken var at man skulle finne ro, hvile, trygghet og kjærlighet. Symbolene skulle gi beskyttelse, langt liv, fruktbarhet og velstand.

Collecting edible seaweed and kelp with students from Flekkefjord

One of the edible seaweed varieties is the rockweed or bladder wrack, which is a species of brown algae that grows along the entire Norwegian coast.

Rockweed grows in the littoral zone in saltwater, but it also tolerates water with a lower salinity.

Rockweed is mostly located on rocky areas in the shallower part of the water. It can reach anywhere from 30 cm up to two meters.

Among the kelp species – which is a type of brown algae – one edible species is the oarweed. These can be up to 2-3 meters long and grow in the low tide line along the entire Norwegian coast. It attaches itself to the substrate with a branched fastening organ and a long, pliable stalk. Oarweed is perennial, has a kind of growth rings, and it is the leaf part that grows.

One of the best-known kelp species we have in Norway is the sugar kelp, which forms large forests along the shore. Sugar kelp is a very good ingredient to use in cooking, as it is sweet and tasty, as well as healthy. When you rinse it in fresh water, a lot of mucus is produced, which can be a good binder, for example in crispbread. It can grow up to a whopping four meters long and 10 to 75 cm wide.

It, too, grows along the entire coast, in exposed areas with a lot of sea and large waves, and inside the fjords, where the waves are smaller and the wind weaker. It grows on cliffs, rocks, and shells,

and you can find it from the shoreline and all the way down to a depth of thirty meters.

NORWAY

The coast of Magma abounds with seaweed and kelp, which is becoming more and more popular as a food, be it as the main or an additional ingredient in the dish. You can use various types of seaweed and kelp, and many of them are tasty and contribute to a healthy meal. The best time for harvesting is spring and early summer.

Using seaweed in food is both healthy and sustainable. By using it, you are helping to meet the UN Sustainable Development Goals. There are several ways to process seaweed and kelp; one can boil it, fry it, pickle it, bake with it, and even use it as a fertilizer in the garden. Seaweed is very healthy as it contains little fat and many of the minerals we need. Seaweed can be produced in large quantities in a small area of the sea surface. Thus, in addition to being sustainable, it is also economical. Seaweed and kelp are very nutritious foods that will become a good nutritional resource in the future and make up an increasing part of our meals.

Kelp is wholesome, and six grams of dried kelp correspond to six whole fruits or six hundred grams of vegetables.

Spiselig tang og tare

Langsmed Magma sin kyst vokser det mye tang og tare som blir mer og mer populært å bruke i maten, som en større eller mindre del av måltidet. Man kan benytte forskjellige tang og tarer og mange både smaker godt og bidrar til et sundt måltid. Den beste sankeperioden er vår og tidlig sommer.

En av de spiselige tangsortene er blæretang som er en brunalge som vokser langsmed hele norskekysten. Blæretang vokser i strandsonen i

saltvann, men den tåler også vann med et lavere saltinnhold. Blæretang befinner seg mest på steinete områder i den grunnere del av fjæra. Den kan bli alt fra 30 cm opp til 2 meter høy.

En spiselig tare er fingertaren som også er en type brunalge. Fingertare kan bli opp til 2-3 meter lang. Fingertare vokser i lavvannslinjen langsmed hele norskekysten. Den er festet til fjellet med et forgreinet festeorgan med en lang bøyelig stilk.

Fingertare er flerårig og har en form for årringer, og det er da bladdelen som vokser.

En av de mest kjente tarearter vi har i Norge er Sukkertaren, den vokser ofte sammen i store områder. Sukkertare er veldig god å bruke i matlagning da den er litt søt og smaker godt og er et sunt alternativ. Når du skyller den i ferskvann så produseres mye slim som også kan være et godt bindemiddel i for eksempel knekkebrød. Den kan bli opp til hele 4 meter lang og 10 - 75 cm bred. Den vokser også langs hele kysten, både der det er mye sjø og store bølger og inne i fjordene hvor det er små bølger og lite vind. Den vokser både på fjell, stein og skjell og du finner den i fjæra og helt ned på 30 meters dyp.

Det å bruke tang og tare i mat er både sunt og bærekraftig. Bruker du det er du med på å oppfylle FN’s bærekraftsmål. Det er mange måter og behandle tang og tare på, man kan koke det, steike det, sylte det og bake med det og til og med bruke det som gjødsel i hagen.

Tang og tare er veldig sunt da det inneholder lite fett og mange av de mineraler vi trenger. Tang og tare kan produseres i store menger på et lite areal av havoverflaten så er derfor i tillegg til å være bærekraftig også økonomisk. Tang og tare er veldig næringsrik mat som kommer til å bli en god næringsressurs i tiden framover og vil bli en økende del av våre måltider.

Tare er sundt og 6 gram tørket tare tilsvarer 6 hele frukt eller 600 gram grønnsaker.

in the shadow mountain meadows The village Signabøur is located on the southern slope by the fjord Kollafjørður on the island of Streymoy. The steep north-facing mountain slopes mean that being in the village you would not see the sun in the middle of the winter and the whole mountain slope receives no direct sun light in the middle of the winter.

The lack of direct sunlight gives some special challenges and opportunities to the farmer, Dorthea Joensen, who runs the farm Signabøgarður with her husband and family. They have run the farm as a family business for many generations and have learned how to raise sheep in the shadow mountain meadows.

The Signabøgarður-farm is about 5.4 km2 reaching from sea level to the mountain of Kaldbakskambur 588 meters above the sea. The farm has a value of 6 merkur according to the ancient land value system which is still in use.

In the spring, the north-facing mountain slope, which is in total shadow during the middle of the winter, suffers from slow and late spring growth. The farmers need to feed the sheep more and for a longer time than most other farmers.

The land of the farm is steep in many places and sometimes so difficult to reach that it can only be reached by boat. To productively use all the land, the farmers put special effort into selecting sheep that in a natural way chose to live in the various places throughout the mountain meadows.

In the autumn the benefit of the location on the north facing mountain slopes is evident. The grass that was so slow to begin growing in the spring now continues growing late into the fall, providing the sheep on the mountain slopes with fresh grass until the time of slaughter. facing slopes is good for the sheep, and the mutton that will be produced on the farm gets a special and good quality.

Seyðahaldið á skuggasíðuni

Signabøur liggur soleiðis, at brøttu fjallalíðirnar venda norðureftir út til Kollafjørðin. Hetta merkir, at í Signabø sært tú ikki sólina mitt um veturin, og fjallalíðin fær ikki beinleiðis sólskin í tíðarskeiðnum frá 22. oktober til 22. februar.

Væntandi sólskinið gevur haganum serligar avbjóðingar og møguleikar, sigur Dorthea Joensen, sum rekur Signabøgarðin saman við manni og familju.

Familjan hevur rikið garðin í mong ættarlið og ment seyðahald í fjallalíðini, sum liggur á skuggasíðuni.

Signabøgarður er umleið 5.4 km2 og røkkur frá sjóvarmálanum niðan á Kaldbakskamb, sum er 588 metrar uppi. Garðurin er seks merkur.

Av tí at fjallalíðin vendir norðureftir, so líðin er í skugga mitt um veturin, byrjar gróðurin ikki fyrr enn seint um várið. Í mun til aðrar seyðabøndur, má bóndin í Signabøgarði geva seyði fóðurískoyti longur út á várið.

Hagin hjá garðinum er so brattur í støðum, at ringt er at koma til, og neyðugt kann vera at koma við báti. Fyri at tryggja at alt lendið verður nýtt so skynsamt sum gjørligt, leggur bóndin serliga orku í at seta seyð við, sum natúrliga velur sær ávís støð um allan hagan.

Um heystið sæst ein fyrimunur við fjallalíðini á skuggasíðuni. Grasið, sum byrjaði so seint og spakuliga at vaksa um várið, heldur nú fram at vaksa út á heystið og gevur seyðinum gott og frískt gras til slaktið byrjar. Fríska heystgrasið frá skuggasíðuni, sum vendir norðureftir, er gott hjá seyðinum, og seyðakjøtið, sum verður framleitt á garðinum, fær eina heilt serliga góðsku og ein sera góðan smakk.

At the farm Signabøgarður on Streymoy the farmer, Dorthea Joensen, raises sheep with good and tasteful mutton. In addition to the meat, Dorthea also works on a special wool project which is turning into a sheep breeding program with a special focus on wool.

Dorthea describes how the sheep live in the mountain slopes of Signabøur, which is in shadow during the middle of the winter. The mountain area is steep, and it is important that the sheep wool gives the animals good protection during the cold and challenging part of the year.

The Faroese sheep wool is characterized by having a combination of two types of hair. The outer part of the wool is composed of coarse long hairs giving the wool a good protection against wet and cold weather. The inner part of the wool is composed of soft and short hairs providing good insulation against the cold wind. The wool has a lot of lanoline, wool fat, which is good protection in wet weather.

”The mountain area is steep, and it is important that the sheep wool gives the animals good protection during the cold and challenging part of the year.”

The farm has developed a special breeding program with sheep that use the whole area from the coast to the highest mountain, Kaldbakskambur. In addition to this, sheep are selected that have a variety of colours. They are especially focusing on preserving the dark brown wool colour. This is the colour that Dorthea inherited from her father who had a special herd with dark brown sheep.

The farm Signabøgarður produces its own yarn in five colours. All the colours are natural: dark brown, light brown, gray, white and black.

Tann føroyska seyðaullin er serlig við tað, at hon hevur tvey sløg av hárum. Tann uttasti parturin av ullini eru long hár, ið verja væl fyri einum vátum og køldum veðurlagi. Innast er ullin sera mjúk, og hárini eru stutt, hetta verjir væl fyri tí kalda vindinum.

Harafturat inniheldur ullin á føroyskum seyði sera nógva lanolinolju, ullafeitt, ið verjur væl fyri vátum veðri.

Á Signabøgarði hava tey lagt seg eftir, at seyðurin brúkar allan hagan, heilt niðri frá sjóvarmálanum og niðan á Kaldbakskamb. Harafturat gera tey nakað serligt burturúr at varðveita fjølbroytni í litunum.

Serliga er tað tann morreyða litin, sum tey gera nógv fyri at varðveita. Tað er liturin, Dorthea hevur arvað eftir pápa sín – hann hevði eitt fylgi, har flestu ærnar vóru morreyðar.

Signabøgarður hevur nú sína egnu framleiðslu av tógvi í fimm litum. Allir litirnir eru natúrligir: myrka morreytt, ljósa morreytt, grátt, hvítt og svart.

In Signabøur on Streymoy some special stories can be experienced in the coastal landscape. A lot of shells lie on the ground next to a large flat rock close to the shore. Here you find broken shells from various kinds of whelk and mussel, and you wonder how these broken shells ended up by the flat coastal rock.

”You wonder how these broken shells ended up by the flat coastal rock?”

If you were here a busy day in the summer, you could observe what is going on by the shell rock.

Oystercatchers and other birds living from shellfish collect fresh shells close to the shore. They fly up in the air with the shells, and high above they drop the shell so that it hits the shell rock. As the shell falls to the ground and lands with force on the flat rock, the shell shatters, and the bird can eat what is inside.

The pieces of broken shells scatter around the flat rock.

The story behind the shell rock is a story about how the animal world makes practical use of the available surroundings – in this case the flat coastal rocky ground.

Á Signabø á Streymoynni eru nakrar serliga áhugaverdar søgur, ið kunnu upplivast fram við sjóvarmálanum. Sera nógvar skeljar liggja í lendinum á og beint við eina hellu niðri við sjóvarmálan. Her finnur tú alskins sløg av goggum og kræklingum, og mann undrar seg yvir, hví allar hesar knústu skeljarnar liggja við og omaná hesi fløtu helluni.

For many centuries the Faroese horse was indispensable for society. It was important for hard work and very important when travelling around on the islands.

Throughout these centuries, the horse breed developed into what we today can acknowledge as the special Faroese horse with its own characteristics.

The Faroese horse is small, strong, and very robust, with fairly long wool during the winter, especially well-suited for travelling in the steep Faroese landscape.

Modern technologies and a modern infrastructure have taken away the demand for the Faroese horse.

Machines can do the hard work today and there is no need for horses when you travel - the network of roads is plentiful. The result is that the special breed of Faroese horse is threatened by extinction if nothing is done to save the horse.

Today a breeding programme has been developed to save the Faroese horse from extinction and the farm Signabøgarður is a part of the programme.

the sea lice eating Lumpsuckers which will improve the production of salmon for food consumption. The Akvanest is becoming a very interesting product that Tari can produce for the fish farm industry, both in the Faroe Islands as well as internationally.

The bay in the little beautiful village Fámjin on the western side of Suðuroy lies protected behind shallow scerries. Inside the scerries is a shallow lagune, while westward is open ocean. In Fámjin the tidalwater and natural environment provides good growing conditions for seaweed. The unique natural environment in Fámjin has caught the attention of Agnes Mols Mortensen.

Agnes is a biologist, PhD, and has experience growing and using seaweed for food in the Faroe Islands. She and her brother Mortan Mols Mortensen have established the aquafarming company Tari, and their hatchery activities are located in Fámjin.

The company grows seaweed and develops products to sell to markets in the Faroe Islands as well as abroad. Tari has developed various food products, such as Ocean Spaghetti (known as sea thong) which can be used as vegetables, and Ocean Wings, which can be used for spicing and salt. Agnes and Morten are developing a new product, which has caught the interest of large fish farming companies in the Faroe Islands and internationally.

Salmon farming is an important industry in the Faroe Islands and one of the challenges that the industry struggles with is sea lice which are bad for the salmon. The little fish lumpsucker is commonly used in the salmon aquaculture as cleaner fish to eat lice off the salmon. However, with no shelter or resting places the lumpsucker thrives poorly in the salmon rings. Tari is developing a shelter made from seaweed, that the small lumpsuckers can use for hiding and resting. The seaweed shelters, named Akvanest, made from natural material, are a sustainable way to improve the living conditions of

to the farm on Stóra Dímun

Eva and Jógvan Jón, a married couple living on one of the smallest islands on the Faroe Islands, are running the farm called Dímunargarður.

Stóra Dímun is surrounded by the sea with steep cliffsides on all sides of the island. If you arrive by boat, you can only go ashore on a small natural harbour when the sea is calm. After stepping ashore you have to walk under the cliffs to the east till you find the place where you climb up around 90 meters in a cliff on a narrow track to get up on the island itself. Fortunately, the circumstances have improved a lot the last 30-40 years and today you can get on and off the island three times a week by helicopter.

For centuries only one family has lived on the island.

The past years Eva and Jógvan Jón have lived there with their two children and Janus, Eva’s brother, and Erla his wife with their three children. Together, they run the farm Dímunargarður. Instead of focusing on large industrial farming production, Eva and Jógvan Jón have chosen to focus on smaller and different kinds of production. This way they can make better use of the resources available on the island. This makes the farming more profitable – in particular as it is easier to include the entire family, friends and others, in the different daily work, on the farm all year around.

Sheep-farming is the main production on the farm, just as it was in the old days. On Stóra Dímun the sheep herd is around 500 animals (Áseyðir).

After the summer between 430-470 sheep are slaughtered. On Dímunargarður they begin the slaugther in September, a bit earlier than usual and one of the reasons for this is to get the female sheep, the ewes, in better shape before the winter season starts.

FAROE ISLANDS

A helicopter ride In addition to the sheep, they also have cattle for meat-production. At the moment there is a cow and a heifer, and 12 bull calves. The bull calves live in the rich grass lands of Stóra Dímun for almost 2 years. Every year six of the calves are slaugthered and this meat is sold privately, in Faroese stores and to restaurants.

Different types of vegetables are cultivated on Stóra Dímun. The root crop, both the early garden turnip and the turnip, grow particlarly well, and are sold in stores all around the Faroe Islands. A few years ago, they decided to try something new. They began a new brew from turnip – a light brew called the “Mai Rótabrygg”. The turnip wine is sold in restaurants and the alcohol monopoly stores around the Faroe Islands.

On Dímunargarður they have to take into account the difficult travel circumstances to and from the Island. The production on the farm, such as mutton and beef, vegetables, gut tallow and Mai brew, has to be shipped off the islands on a helicopter. This can be a challenge during the tourist-season, when the helicopter is full of tourists travelling around the islands leaving little room for the shipment of farmproducts.

Stóra Dímun is a special island with very beautiful nature and a rich cultural story, that goes all the way back to the Viking Age. This attracts more and more, mostly local tourists to the island, which is another important and still growing business.

Á Dímunargarði er vanligt at byrja slaktið longu í september, næstan ein mánaða fyrr enn flest onnur støð í Føroyum. Neytakjøtið verður selt til føroyska heimamarknaðin, handlar og matstovur.

Ymiskt grønmeti verður velt á garðinum, og tann vinnan, sum rættiliga hevur tikið dik á seg á Stóru Dímun, er framleiðslan av rótum, bæði mairótum og kálrabi, sum verða seldar til handlar um allar Føroyar. Fyri fáum árum síðani fóru tey nýggjar leiðir og byrjaðu at bryggja burturúr mairótum ein lættan drykk, sum kom út til tann føroyska heimamarknaðin sum Mai Rótabryggj á fløsku.

The farmers on Stóra Dímun are self-sufficient

Living on the island Stóra Dimun as farmers on Dímunargarður with varied food production to the Faroese marked is a captivating challenge, Eva í Dimun says. She and her husband Jógvan Jón Petersen run the farm along with Eva’s brother and his family.

In order to succeed with farming on a small island, where the only travel connection is by helicopter, it is very important that the two households on the island are as self-sufficient as possible. The less commodities that have to be ordered and transported by helicopter, the better.

All activities on the farm focus on using the resources in a sustainable way. The farm relies on meat production from sheep and cattle. Most of the meat is sold and transported off the island by helicopter. The meat and entrails that are not sold are used by the people on the island throughout the year.

Long time ago people on the island were able to make an income from the rich and plentiful bird life, such as puffins, guillemot, fulmar, and other birds.

The past decades the birdlife on Stóra Dimun is deminished to such a degree, that practically all bird catching has ceased. Today only a few young birds from Manx shearwater, Fulmar and puffins are caught for self-consumption.

The farm has a cow which supplies milk to the two households. There are also hens, ducks and geese, which give eggs and good bird meat.

Small fields are cultivated for carrots, potatoes, and other vegetables for self-consumption, that the household can use throughout the year.

Heating of houses with an oil furnace usually demands much oil. On Stóra Dímun the oil furnace was exchanged and today the houses are heated by an air-water-heat-exchanger and sun cells on the barn roof. The green energy saves much oil so less oil has to be transported to the island by helicopter. Clean drinking water is a very important resource on Stóra Dímun both for people and all the animals on the farm. The island is small and there are practically no streams. On the mountain slope above the houses a spring supplies water for most of the year. A few weeks every summer there is drought and people on the island need to save water. Today this challenge is less threatening as a pump has been installed to a spring further down the island, while two large water tanks have been installed.

Um hetta skal eydnast úti á eini so lítlari oyggj, sum bert hevur tyrlusamband, hevur tað stóran týdning, at húsarhaldið í so stóran mun sum gjørligt er sjálvbjargið. Jú minni skal keypast og flytast út við tyrlu, jú betri. Í øllum virksemi á garðinum verður dentur lagdur á at fáa tilfeingið til høldar so væl sum til ber.

Garðurin livir av kjøtframleiðslu frá seyði og neytum.

Meginparturin av kjøtinum verður seldur og fluttur av oynni við tyrlu, men alt frá slaktinum, sum ikki verður selt, verður á ymiskan hátt gagnnýtt av teimum, sum búgva á oynni. Í gomlum døgum høvdu fólk á oynni stóra gleði av ríka fuglalívinum, bæði lunda, lomviga, havhesti og øðrum fuglum. Seinnu árini er fuglalívið á oynni minkað burtur, so mestsum øll fuglaveiða er steðgað. Í dag verða bert líri, náti og nakrir fáir lundar tiknir seint um summarið til nøkur fá døgurðakók. Á garðinum er kúgv, og hervið er húsarhaldið sjálvbjargið við mjólk. Her eru hønur, dunnur og gæs, sum geva egg og góðan fugl til matna. Smáar veltur eru við gularótum, eplum og øðrum grønmeti til egna nýtslu, sum húsarhaldið hevur gagn av alt árið.

Upphiting av húsum við oljufýring krevur vanliga nógva olju. Í Stóru Dímun var oljufýringin skift út fyri mongum árum síðani, og í dag verða húsini upphitaði við luft-til-vatn-hitavekslara og sólsellum á fjósatakinum. Grøna orkan sparir nógva olju og minkar um tørvin at flyta olju út í oynna við tyrlu.

Reint vatn er týdningarmikið tilfeingi á Stóru Dímun til bæði fólk og djór á garðinum. Oyggin er lítil, og her eru mestsum ongar áir. Í líðini uppi yvir húsunum er ein vatnkelda, sum gevur vatn stóran part av árinum. Nakrar vikur hvørt summar er turkur og vatntrot, so fólk á oynni mugu spara upp á vatnið. Í dag er henda avbjóðing minkað, við at pumpa er sett upp til eina keldu longri niðri á oynni, samstundis sum tveir størri vatnbrunnar eru bygdir.

Fulmar traditions in Mýrdalur

Áslaug Einarsdóttir was born and raised on the farm Sólheimahjáleiga in the municipality of Mýrdalshreppur and has lived in the town of Vík for the last forty years. When Áslaug was growing up, her family hunted fulmars in the fall, and they were always excited to get fresh fulmar for dinner. During the fall the fulmar was cooked „fresh“, but to store the fulmar for longer it was salted in containers. Áslaug’s father really enjoyed eating fulmars and when he was growing up the fulmar was a welcome addition to the food source of the family. Then there were about 300 fulmars hunted each fall and they were able to have them for dinner once a week the entire year. Áslaug’s mother, however, did not grow up eating fulmar as often, as there were not many fulmars where she grew up, but they always tried to get enough fulmars for one or two dinners in the fall.

Later, when Áslaug had met her husband and started a family, they too started to hunt fulmars for themselves and have been doing that the last 44 years. The fulmar nests in many of the mountain cliffs around the town of Vik. The mountains are all palagonite mountains, formed in subglacial and/or submarine eruptions from the volcanic system of Katla. Since their formation they have been shaped by glaciers and waves, which has formed steep cliffs in many of them which is perfect nesting grounds for the fulmar. Many of these cliffs used to be sea cliffs, but due to change in relative sea level at the

end of the Ice Age and because of high amount of sediments brought to the area in repeated glacial outburst floods during eruptions in Katla, a flat lowland has formed in front of many of them. The lowland is where many of the young fulmars land during their first flight, as they are unable to make it to the sea in one go. The lowland is also where Áslaug and her family hunts fulmars as it is much easier to hunt them there than on the cliffs. They hunt around 35-40 fulmars per year now and invite friends and family for a fulmar feast each fall. The preparation of the fulmar takes some time, as it is first left to cool down for about a day before it is defeathered. Once it has been de-feathered the wings are chopped of it and it scorched with a torch and then the head and the legs are removed. Finally, there is a cut made on its chest to get to the insides and then the bird is scraped and washed. If the bird is salted it is put in a container with salt, where one handful of salt is enough for one bird. Áslaug normally puts the fulmar in salt rather than serve it fresh, and she stores it in the salt for three weeks before it is eaten.

ICELAND

Hunting fulmars is a long and well-established tradition in Mýrdalur, south Iceland, and despite that the fulmar does not play as an important role in the diet as it once did, it is still an important link in the culture of the area. Much fewer fulmars are hunted today but they are prepared and cooked the same way as they used to be. Here, Áslaug Einarsdóttir tells us how she prepares and cooks fulmars and what she serves with the fulmar, including soðkökur bread.

When the bird is cooked, it is boiled for an hour and 15 minutes. The “fyllan”, which is about 1 cm thick layer of fat that the bird has, is also eaten but not everybody can stomach it though, but most people try it though. The taste of it is hard to describe and something you need to taste for yourself, but Áslaug recommends that people only try a small amount of it, at least when you are trying it for the first time. Áslaug serves potatoes and beets with the fulmar along with special cakes called “soðkökur” in Icelandic and translates to boiled cakes or bread.

The cakes are made from wheat and oatmeal that is mixed with boiling hot water and then kneaded into small round balls. The balls are then flattened out and put in boiling water and boiled until they are cooked. The cakes do not change colour as they

are cooked and therefore one needs to learn to trust their gut feeling to be able to tell when they are perfectly cooked. Áslaug was introduced to these boiled cakes by her mother-in-law as she always served them with fulmars at her household. The cakes themselves are served with butter, where the butter is spread on top of the cakes rather than the cakes being cut in halves and the butter spread on either side.

The way that fulmars are cooked and served is normally quite traditional, but new ways prop up every now and then. Áslaug and her family for example started to smoke the meat of some of the birds. The birds that are smoked are the ones that are difficult to de-feather, so are instead skinned and smoked using birch. The birds are lightly smoked and have been popular in Áslaug’s family. Hunting, cooking, and eating fulmars has been a strong tradition with Áslaug and her family, and her children and grandchildren have all grown up with these customs, learning how to prepare and cook the fulmar, making sure that the tradition carries on with the next generations.

Fýlahefðir í Mýrdalnum Að taka fýl er löng og rótgróin hefð í Mýrdalnum og þrátt fyrir það að fýlinn spili ekki sama hlutverk og hann gerði fyrr á tímum þá er hann enn mikilvægur hlekkur í menningu svæðisins. Nú í dag eru færri fýlar veiddir en þeir eru verkaðir og eldaðir á sama máta. Áslaug Einarsdóttir lýsir því fyrir okkur hvernig hún verkar og matreiðir fýla og meðlætinu sem hún hefur með þeim, þar með talið soðkökur. Áslaug Einarsdóttir er fædd og uppalin í Sólheimahjáleigu í Mýrdalnum og hefur búið í Vík í Mýrdal síðustu fjóra áratugi. Áslaug ólst upp við að fjölskyldan tók fýl á haustin og var alltaf mikill tilhlökkun hjá fólki að fá fyrsta nýja fýlinn að hausti.

Fyrst var fýllinn eldaður „nýr“, það er að það var gert að honum og hann eldaður, en fýllinn var einnig saltaður í fötur. Föður hennar þótti fýllinn afskaplega góður matur, en hann ólst upp við þessa hefð og var mikil búbót á þeim tíma þegar 45

hann var að alast upp á Holti í Mýrdalnum. Þar voru teknir um 300 fýlar að hausti og það passaði að það var fýll í matinn einu sinni í viku árið um kring. Móðir hennar ólst hins vegar ekki upp við þessa hefð þar sem ekki var mikið um fýl á hennar uppeldisslóðum en þó var alltaf reynt að fá fýl í eina eða tvær suður að haustinu. Seinna, þegar Áslaug kynntist eigimanni sínum, byrjuðu þau sjálf að taka fýl og hafa nú tekið fýl í 44 ár. Fýllinn verpir í hömrum og giljum í nágrenni Víkur. Fjöllin eru öll móbergsfjöll mynduð af gosum úr eldstöðvakerfi Kötlu. Fjöllin hafa síðan þá verið mótuð af jöklum og sjávaröldum, og hafa þverhníptir hamrar myndast við þá mótun, sem er fullkomið varplendi fyrir fýlinn. Þessi hamrar voru lengi vel sjávarhamrar, en vegna breytinga á afstæðri sjávarhæð við lok síðasta kuldaskeiðs ísaldarinnar og vegna mikils framburðar í jökulhlaupum vegna eldgosa í Kötlu, þá hefur láglendi myndast fyrir framan marga af hömrunum. Láglendið er nú þar sem margir fýlsungar lenda á sínu fyrsta flugi þar sem þeir eru of þungir til að ná til sjávar. Áslaug og fjölskylda hennar veiða fýlinn eftir að hann er lentur því það er mun auðveldara að komast að honum þar en í hömrunum. Þau taka nú um 35-40 fýla á hverju ári og bjóða vinum og kunningjum í fýlaveislu að hausti. En áður en boðið er til veislu þarf að verka fýlinn. Fýllinn er fyrst geymdur í um sólarhring eftir að hann er veiddur þannig að hann sé orðinn kaldur þegar hann er reyttur. Síðan eru vængirnir höggnir af og hann sviðinn, og eftir að hann er sviðinn er hausinn og lappirnar höggnar af. Eftir það er gerður sérstakur skurður á bringunni, en af því að fuglinn er svo feitur þá þarf að gera skurðinn með sérstökum hætti, og síðan er fuglinn þveginn og skafinn. Ef hann er saltaður þá er mátulegt að setja einn lófa af salti á hvern fýl og hann saltaður í fötu. Áslaug og fjölskylda salta núna fýlinn frekar en að borða hann „nýjan“ og er fýllinn geymdur í salti í þrjár vikur áður en hann er borðaður. Þegar fýllinn er matreiddur er hann soðinn í klukkutíma og 15 mínútur og er hann þá alveg passlegur. Fyllan, sem er um 1 cm þykkt spiklagið yst á fuglinum, er borðuð en það eru ekki allir sem borða hana en reyna þó að smakka alltaf aðeins af henni. Fyllan er sérstök á bragðið og er erfitt að lýsa bragðinu, þetta er eitthvað sem fólk

þarf að smakka, en þó mælir Áslaug með því að smakkið sé lítið til að byrja með. Með fýlnum ber Áslaug fram kartöflur og rófur, og síðan soðkökur.

Soðkökur eru gerðar úr hveiti og haframjöli, þar sem sjóðandi vatni er hellt yfir mjölið og það hnoðað í litlar kringlóttar kúlur. Kúlurnar eru síðan flattar út og settar í sjóðandi vatn og soðnar þangað til þær eru tilbúnar, en farið er eftir tilfinningunni hvenær þær eru tilbúnar þar sem þær taka ekki lit við suðuna.

Hefðinni á bak við soðkökurnar kynntist Áslaug hjá tengdamóður sinni, en hún var alltaf með soðkökur með fýlnum. Soðkökurnar eru smurðar en þær eru ekki skornar í helminga heldur er smjörið smurt utan á brauðið. Þó svo að margar hefðir séu í kringum fýlatöku og matreiðslu hans þá koma upp nýjungar

af og til og fyrir nokkrum árum þá byrjuðu Áslaug og fjölskylda hennar að láta léttreykja fyrir sig fýl. Þá eru þeir fýlar sem erfitt er að reyta hamfléttir í staðinn og birkireyktir. Þykir fuglinn mjög góður þannig en það er víst ekki algengt að hann sé reyktur.

Að taka fýl og borða hann er sterk hefð innan fjölskyldu Áslaugar og hafa börnin og barnabörnin alist upp með og lært á þessar hefðir, hvernig fuglinn er verkaður, matreiddur og að borða hann, og munu því hefðirnar í kringum að taka fýl halda áfram næstu kynslóðir í Mýrdalnum.

- Fish farming in a lava field

The company Lindarfiskur was founded in 2011 when Drífa Bjarnadóttir, the manager and one of the owners of Lindarfiskur, got the idea of setting up a fish farm. The idea for and the interest in fish farming came to Drífa, who has degrees in biology and fish farming (aquaculture), when on a field trip with the University of Iceland to Hólar University.

Prior to the trip she had always seen fish as something that was cold, wet, and slimy, but that view changed drastically at Hólar.

The fish they farm is Arctic char which is in the family of Salmonidae and is similar to salmon, but its meat is finer, and it tastes sweeter and milder than the salmon.

Once the idea had been born, a suitable location for the fish farm needed to be found. Luckily, Drífa‘s mother is from a place called Botnar in the municipality of Skaftárhreppur. Botnar are however about 20 km inland, so they are not the first location that springs to mind when somebody mentions fish farm. But the place is perfect for fish farming, due to abundance of cold and clean water. Drífa and her family, that is her husband, mother, father, and

sister, dived into the project of establishing a fish farm and got the first fish egg masses from Hólar University. The fish they farm is Arctic char which is in the family of Salmonidae and is similar to salmon, but its meat is finer, and it tastes sweeter and milder than the salmon. The fish is processed in the town of Vík by themselves and is then mainly sold to restaurants within Katla Geopark and to fish shops in the capital area, but a portion of it is also sold online. The company has always been a family company and has had a slow and steady growth since its foundation. It produces about 100 tons annually with plans to increase that to 300 tons in the future.

ICELAND

Lindarfiskur is a family run fish farm that was founded in 2011. The grow arctic char at a place called Botnar, deep within the lava field of Eldgjárhraun and almost surrounded by another lava field called Eldhraun. There they grow about 100 tons of char and the farm has a policy of being as sustainable and environmentally friendly as it can be and there is no waist from the farm. For the farm they use fresh water from the glacial river of Skaftá that has flown through the lava fields and has been filtered by the process.

Since the start, Lindarfiskur has had the policy of being as sustainable and environmentally friendly as possible and today there is no waist from the farming. The cuts from the fish are used in feed for pigs and sheep and what does not get used for the feed goes into compost, which is then used as a fertilizer for meadows, which in turn provide winter feed for the sheep. The only thing so far that the farming has been unable to use is the little amount of material that goes with the water out of the fish tanks. However, that is about to change as there are plans to go into aquaponics and grow vegetables on banks made from wool that will float on top of the waist water, soaking up the last remaining bits from the water. Water is the most important thing in fish farming, which is one of the main benefits of the area of Botnar. The water comes mostly from the glacial river of Skaftá as a part of it flow towards Botnar.

The river does not flow directly to Botnar though, rather it flows through the lava fields of Eldhraun and Eldgjárhraun on its way. Eldgjárhraun lava field was formed in an eruption from the volcanic fissure

of Eldad around the year 939 A.D. and Eldhraun lava field from an eruption from the Lakagígar craters from 1783-1784. These two lava fields are the two largest lava fields to have been formed during historical times on the planet and came from the volcanic systems of Katla and Grímsvötn.

The Eldhraun lava field lies on top of Eldgjárhraun around Botnar and when the two lava fields formed, they altered the flow of Skaftá river with the results that a part of it now flows through them. As the water flows through the field, it gets filtered and remains at ideal temperature of 4°C, which is perfect for fish farming.

Farming fish is not easy, there are 7 working days per week 365 days of the year and often in very bad weather and with other obstacles that need to be overcome. In 2015 for example, there was a large glacial outburst flood from the river Skaftá which partially filled the lava field with sediments causing the flow rate of the water through it to slow down. That made the water warmer and less oxygen rich which in turn caused the death of about two years’ worth of char. The adversity has however not weakened the will of the family, on the contrary strengthened it. The family for example has adopted Murphy’s law as their slogan, “Anything that can go wrong will go wrong”, and faces the adversity with calmness and patience, as the future of the company is bright.

Lindarfiskur - Fiskeldi á hrauni Lindarfiskur er fjölskyldurekið fiskeldi sem stofnað var árið 2011. Fiskeldið ræktar bleikju langt inn í Eldgjárhrauni, í Botnum, og eru svo að segja umkringd af Eldhrauninu. Þau rækta um 100 tonn af bleikju þar og er eldið að mestu sjálfbært, umhverfisvænt og engin afföll eru af eldinu. Í eldinu nýta þau vatn úr Skaftá sem hefur síast við það að renna í gegnum Eldhraun.

Lindarfiskur var stofnaður árið 2011 eftir að Drífa Bjarnadóttir, framkvæmdastjóri og einn af 49

eigendum Lindarfisks, fékk þá flugu í höfuðið að byrja með fiskeldi. Hugmyndin um og áhuginn á fiskeldi kom fram hjá Drífu, sem er líffræðingur og fiskeldisfræðingur að mennt, þegar hún var í vettvangsferð á Hólum í Hjaltadal með Háskóla Íslands. Fyrir þá ferð hafði hún alltaf litið á fiska sem kalda, blauta og slímuga og hafði ekki bein mikinn áhuga á þeim, en óhætt er að segja að ferðin að Hólum hafi breytt því viðhorfi. Þegar hugmyndin var komin þurfti að finna hentuga staðsetningu fyrir fiskeldið og þá vildi svo vel til að móðir hennar Drífu er frá Botnum í Skaftárhreppi. Sú jörð er reyndar um 20 km inni í landi og því líklega ekki fyrsta staðsetningin sem kæmi upp í hugann fyrir fiskeldi, en jú svæðið hentar fullkomlega fyrir fiskeldi þar sem þar er nóg af köldu ferskvatni. Fjölskyldan, þ.e. Drífa og eiginmaður hennar ásamt móður, föður og systur hennar, skelltu sér í verkefnið og fengu fyrstu hrognin frá Hólum. Fiskurinn sem þau rækta er bleikja, en bleikja er laxfiskur sem svipar mjög til lax en er mun fínni í holdinu, sætari og mildari á bragðið. Fyrirtækið hefur ávallt verið fjölskyldufyrirtæki og vaxið hægt og þétt í gegnum árin og framleiðir nú um 100 tonn af fiski á ári, með ráðagerðir um að stækka eldið upp í 300 tonn í framtíðinni. Fiskurinn sem þau rækta er verkaður í Vík í Mýrdal af þeim sjálfum og er aðallega seldur til veitingastaða innan Kötlu jarðvangs og í fiskbúðir á höfuðborgarsvæðinu, en þá er einnig hluti af honum seldur á netinu.

Frá upphafi hefur Lindarfiskur haft þá stefnu að eldið sé sem mest sjálfbært og umhverfisvænt og í dag eru engin afföll af eldinu. Afskurðurinn af bleikjunni fer t.d. í fóður fyrir alisvín og kindur en það sem fer ekki í skepnurnar fer í moltu sem síðan er nýtt sem áburður fyrir tún, sem aftur gefur vetrarfóður fyrir kindurnar. Það eina sem hefur hingað til ekki náðst að nýta er það litla sem fer með vatninu úr fiskitönkunum. Það stendur hins vegar til að breyta því, en ráðgert er að hefja ræktun á grænmeti sem mun verða ræktað á flotbökkum úr ull og nýta affallsvatnið úr tönkunum. Það mikilvægasta í fiskeldinu er þó ferskvatnið og er það ein helsta búbót svæðisins.

Mikil vinna er við fiskeldið, nánar tiltekið 7 daga vikunnar alla daga ársins, og þá eru náttúruöflin ekki alltaf blíð. Það gerðist t.d. árið 2015, þegar það var stórt hlaup í Skaftá, að framburðurinn úr fljótinu fyllti upp í hluta af Eldhrauni og því hægðist á vatnrennslinu í gegnum hraunið. Við það hlýnaði vatnið og varð súrefnissnauðara og olli því að hluti tveggja árganga af fiski töpuðust. Þetta mótlæti hefur þó ekki veikt vilja fjölskyldunnar heldur þvert á móti styrkt hann og hefur til dæmis öll fjölskyldan tekið lögmál Murphys upp sem einkennisfrasa, þ.e. „ef eitthvað getur farið úrskeiðis, mun það gera það“, og tekur því á móti mótlætinu með yfirvegun og þolinmæði, enda framtíðin björt hjá fyrirtækinu.

ICELAND

Ferskvatnið á svæðinu kemur að miklu leyti úr jökullánni Skaftá þar sem hluti af henni rennur í átt að Botnum. Vatnið fer þó ekki beina leið að Botnum heldur rennur í gegnum Eldhraun og Eldgjárhraun.

Eldgjárhraunið myndaðist í Eldgjárgosinu í kringum árið 939 en Eldhraun úr gosinu í Lakagígum frá 1783-1784. Þessi tvö gos eru stærstu hraungos sem orðið hafa á jörðinni á sögulegum tíma og komu úr eldstöðvakerfum Kötlu og Grímsvatna. Eldhraunið liggur ofan á Eldgjárhrauninu við Botna og þegar hraunin runnu þá hafa þau haft áhrif á farveg Skaftár en áin síðan á endanum fundið nýja leið í gegnum hraunin og kemur nú úr hrauninu við Botna. Þegar vatnið kemur úr hrauninu hefur það farið í gegnum náttúrulega síu ásamt því að hraunið veldur því að hitastigið á vatninu er stöðugt í um 4°C og því fullkomið fyrir fiskeldi.

Traditional fulmar hunting in Hjörleifshöfði

Þórir Kjartansson was born on the farm SuðurHvammur but he traces his ancestry to the farm of Hjörleifshöfði, where one of the largest fulmar colony and hunting grounds used to be within Katla Geopark.

Hunting fulmar, or Fýlatekja as it is called in Icelandic (e. taking fulmars), started during the 19th century when fulmars started to colonize areas along the south coast of Iceland. The arrival of the fulmar offered a new food source during times when food was scarce in Iceland and was hunted by farmers both for themselves but also to sell to others. The fulmar started to nest on the cliffs of Hjörleifshöfði around the year 1820 and by 1860 the cliffs were fully colonized. The farmers of Hjörleifshöfði farm did normally not take the eggs from the nest and preferred to take the fledglings, as the fulmar only lays one egg at a time and the farmers believed that the bird would not lay another egg if the first one was taken. At the height of the fulmar hunting, around 7000 birds were hunted at Hjörleifshöfði each year. The fulmar hunting came mostly to an end when the farm got abandoned in 1936, but Þórir and his family continued to own the farm and hunted some fulmars for themselves.

The hunting season of the fulmar started in August each year and the birds were hunted by three methods: by climbing up rock faces to get to them, by abseiling down rock faces and finally hunting

the fulmar once it had left its nest. The climbing was done where it was relatively easy to get to the birds and the cliff face was not too high, whereas when the cliff faces were steep and high, they were abseiled.

ICELAND

Fulmar hunting at Hjörleifshöfði farm started in the 19th century when the bird started to nest in the steep cliffs of Hjörleifshöfði tuya. Þórir Kjartansson, who‘s family is from Hjörleifshöfði farm and has hunted fulmars for decades, describes here the methods that were and are used to hunt fulmars, what equipment was used and how the fulmar was cooked.

When people abseiled, a small seat was made from leather that also had leather straps to put around the waist and each leg. The seat made it much more comfortable to abseil, especially since during the high season when people could spend the entire day abseiling. To further increase the safety of the person doing the abseiling, especially during high abseils, a rope called bjargól (e. safety noose) was used. The rope went under one arm and over the opposite shoulder and had the purpose of keeping the person in the seat upright, keep the person from spinning and prevent the person from falling out of the seat. It was especially important during accidents, such as getting hit in the head by a falling rock, as it meant that the person could be easily pulled back up to safety even when unconscious.

When cliffs that were shorter than about 100 meters were abseiled, there were normally two people that secured the rope that was used for the abseiling, whereas if the cliff was higher there would be up to five people securing the rope. The person abseiling usually had another rope that he could use for stability, but also to lighten the load for the people who were securing the main rope. When abseiling, the person sometimes had to unfasten itself from the rope to get to the fulmars, for example where there were large ledges, something that is clearly not for people that have a fear of heights.

When the fulmar was hunted it was knocked unconscious by using a tool similar to a small and thin axe, called fýlaklappa in Icelandic. It also came in handy while climbing in the rocks as it could be

used to carve steps into the rocks and as an anchor to pull oneself up. Once the bird was unconscious it was tossed down to the ground below where it was then collected. After fulmars were hunted in the cliffs, the fledglings that had already left the nest were hunted. Due to their heavy weight, many of them are unable to reach the sea when they leave their nest, so they land on the lowlands in between the sea and the cliffs. Once they are on the lowlands it is easy to get to them and use the fýlaklappa to knock them unconscious. During the wintertime, the fulmar was sometimes caught by using nets, but that way was seldom used at Hjörleifshöfði. Abseiling for fulmars has mostly stopped in Iceland but hunting the fulmar on the lowlands continues, although in much smaller capacity than it used to be.

Hjörleifshöfði is a tuya formed in a submarine and/ or subglacial eruption during the latter part of last Ice Age. The tuya has then been shaped by glaciers and waves, which have formed the steep cliffs that the fulmar later colonized. At the end of the last Ice Age Hjörleifshöfði would have been an island but is today far inland and surrounded by a flat sea of black sand due to the sediments brought to the area in repeated glacial outburst floods from Katla volcano. It is this flat lowland that the fulmar fledglings often land on, on their way to the sea, where in the past they could have flown straight out to sea.

The fulmar is eaten both fresh and salted and Þórir always boils the fulmar and serves it with potatoes and beets. The bird was always de-feathered, not skinned, as it has about 1 cm thick layer of fat which largely gets removed if it is skinned.

It was considered in Þórir’s family that anybody who did not eat the layer of fat with the bird was not a “proper” fulmar eater, as the fat layer is very nutritious. As Þórir was growing up fulmar was usually eaten once a week, and normally at the start of a new hunting season they were eating the last fulmars of the hunting season the year before.

Hefðbundnar fýlaveiðar í Hjörleifshöfða Fýlaveiðar í Hjörleifshöfða byrjuðu á 19. öldinni þegar fýlinn hóf að nema land þar í bröttum hlíðum höfðans. Þórir Kjartansson, sem á ættir sínar að rekja til Hjörleifshöfða og hefur stundað fýlaveiðar lengi, lýsir hér fyrir okkur hvernig það var farið að því að veiða fýlinn, hvaða útbúnaður var notaður við veiðarnar og hvernig fýllinn var síðan matreiddur. Þórir Kjartansson er fæddur í Suður-Hvammi en forfeður hans áttu heima í Hjörleifshöfða sem var mesta fýlatekjupláss í Mýrdalnum, og fór Þórir oft til fýlatekju þar, en það nefnist þegar fýll er veiddur.

Fýlatekja er gamall siður í Mýrdalnum og nágrenni en byrjaði til að hafa aukin björg í bú varðandi mat fyrr á tímum og einnig til að selja. Fýlinn hefur hins vegar ekki verpt mjög lengi í Hjörleifshöfða, það var t.d. enginn fýll þar í kringum 1800. Hann byrjaði að nema þar land um 1820 og um 40 árum seinna var bergið orðið alþakið fýl. Það var hins vegar ekki tekið mikið af fýlaeggjum úr Höfðanum þar sem Hjörleifshöfðabændur höfðu þá trú að fýllinn verpti yfirleitt ekki aftur ef að eggið væri tekið, en fýllinn verpir aðeins einu eggi, og vildu frekar taka ungann en eggið. Þegar mest var voru í kringum 7000 fýlsungar teknir í Höfðanum á ári. Fýlatekjan lagðist að mestu leyti af þegar byggð var hætt í Höfðanum, en þar lagðist af byggð 1936, en Þórir og fjölskylda hans áttu Hjörleifshöfða og héldu áfram að taka þaðan fýl fyrir sig.

Um miðjan ágúst var byrjað að fara í bjargið og sækja ungann, það var bæði farið í það sem var kallað að fara í lausagöngur, þar sem menn klifruðu þar sem hægt var að fara án þess að vera með band, og síðan sigið eftir fuglinum. Þegar sigið var eftir fuglinum þá var yfirleitt útbúið sigasæti úr leðri sem var með breiðum leðurólum fyrir mitti og lærin.

Gerði sætið sigið mun þægilegra enda þurftu menn oft að vera í sætinu heilu dagana. Til að auka öryggi sigmannsins, sérstaklega ef sigið var hátt, var notuð svokölluð bjargól. Bjargólin var band sem haft var undir handlegginn og yfir öxlina og var til þess að

Í fýlatekjunni var fuglinn rotaður, og var yfirleitt notast við verkfæri sem kallað er fýlaklappa.

Fýlaklappan var þannig að hún var eins og örmjó exi og var sérstaklega mikið notuð í lausagöngur því þá notuðu menn verktækið til að höggva sér spor í bergið og til að hífa sig upp á skaftinu. Eftir að fuglinn var rotaður þá var honum hent niður, þar sem ekki var hægt að hífa hann upp vegna mikils magns og þyngdar, og þar var honum safnað saman. Yfir vetrartímann fýllinn stundum veiddur í háf, en það var ekki mikið stundað í Hjörleifshöfða. Þegar var búið að síga í björgin og ná þar sem hægt var, þá var samt eftir aragrúi af fýl sem var dreifður um allt láglendið, en það var hin svokallaði flugfýll.

Flugfýllinn er unginn sem flýgur úr hreiðrinu þegar hann er orðinn nægjanlega gamall, en hann er oft svo feitur og þungur að hann nær ekki að fljúga alla leið til sjávars og lendir því á láglendinu á milli fjalls og sjávar. Þar var hann síðan eltur uppi og rotaður, og þannig hefur seinni tíma fýlatekja í Mýrdalnum aðalega verið.

Hjörleifshöfði er stapi myndaður í eldgosi undir sjó eða jökli á síðari hluta ísaldar. Höfðinn hefur síðan hann myndaðist verið mótaður af jöklum og öldum sem mynduðu klettabeltin sem fýlinn nam síðar meir. Höfðinn hefur verið eyja við lok síðustu ísaldar, en síðan þá hefur efni úr jökulhlaupum frá Mýrdalsjökli umlukið hann og er hann nú nokkuð inn

í landi, umlukinn sjó af svörtum sandi. Það er þetta flata láglendi sem fýlsunginn lendir á á leið sinni til sjávar, en fyrr á tímum hefur unginn geta flogið beint út á haf.

Fýlinn var bæði borðaður nýr og saltaður, og hjá Þóri var fýllinn alltaf soðinn og hafðar kartöflur og rófur sem meðlæti. Þegar gert var að fuglinum var hann alltaf reyttur en ekki hamfléttur. Ástæðan fyrir því er sú að hamurinn á fuglinum, eða fyllan eins og hún er kölluð, er með þykkt lag af fitu og var enginn talinn fýlaæta nema að borða alla fylluna með, enda mikil næring í fitunni. Fýll var oftast borðaður einu sinni í viku hjá Þóri og var það þannig að verið var að borða síðustu fýlana frá því á árinu á undan þegar verið var að fara að veiða þá aftur.

ICELAND

ef eitthvað kæmi fyrir sigmanninn, kannski hryndi grjót á hann og hann rotaðist, að hann snérist ekki við og sturtaðist úr sigasætinu ef eitthvað kæmi fyrir hann, heldur að hann héldist með hausinn upp og var þá hægt að hífa hann upp aftur. Þegar var farið í lægri sig þá sátu yfirleitt tveir undir, kallaðir undirsetumenn, og héldu í bandið sem sigmaðurinn fór í. Sigmaðurinn hafði einnig auka band, sem var oftast kallað handvaður, og var til að halda sér í og létta undir með undirsetumönnunum. Í stórsigunum, þegar bjarg var kannski 150 til 200 metrar að hæð, þá þurfti fleiri undirsetumenn og voru yfirleitt um fimm manns. Í slíkum sigum þurfti sigmaðurinn stundum að leysa sig úr bandinu, t.d. þegar þurfti að fara eftir stórum hillum í berginu, og hefur það alls ekki verið fyrir lofthrædda.

Growing Rapeseeds in the shadow of Eyjafjallajökull Volcano Ash from Eyjafjallajökull Volcano and other nearby volcanic systems has formed a nutrient rich soil on the low grounds south of the Eyjafjöll mountain chain. Þorvaldseyri is one of the farms there that uses the rich soil to grow grain and rapeseeds.

Rapeseed oil is then produced from the rapeseeds by pressing them. The oil is sold as cooking oil but Þorvaldseyri now plans to experiment by turning it into biodiesel to use on diesel engines. Ólafur Eggertsson and Guðný A. Valberg live on the farm Þorvaldseyri and Ólafur is the third generation of his family that lives there since his grandfather bought the farm in 1906. Ólafur and Guðný have four children and their son, Páll Eggert Ólafsson, will take over the farm in the future. Þorvaldseyri farm is located south of a volcanic mountain chain called Eyjafjöll and is semi-surrounded by four mountains, the Steinafjall mountain to the west, Lambafell and Raufarfell mountains to the east and the infamous volcano Eyjafjallajökull to the north. It is this location that makes the growing conditions for crops so good, as glacial rivers move sediments down to the lowlands during spring flooding and glacial outburst floods and volcanic ash is periodically spread over the area during eruptions of Eyjafjallajökull, Katla Volcano and other nearby volcanic systems.

The sediment and the volcanic ash have over time created a nutrient rich soil that is now used for agriculture. The last eruption and the following glacial outburst flood that spread ash over the area was during the 2010 eruption of Eyjafjallajökull Volcano. Large amount of ash settled in the area, and it took farmlands several years to recover completely. The thickness of the ash was about 4-5 cm near Þorvaldseyri farm and any thicker and it could have suffocated the underlying vegetation.

The ash did a lot of good as well even though it 55

did harm for a short period of time, as vegetation blossomed once the ash had been integrated into the soil. Þorvaldseyri farm is about 1100 hectares and the conditions there are good for agriculture. Today the farm is a dairy farm with 60 milking cows but used to be a sheep farm as well for many decades.

Since 1960 grain has also been grown there and has been successful (not ideal conditions in Iceland to grow grain) and the grain is used for fodder for the cows and sold for bread and beer production.

The lates experiment at Þorvaldseyri regarding growing crops, however, has been Rapeseed.

About 10 years ago they began experimenting with growing rapeseeds with the goal of producing oil and biodiesel for diesel engines. Until now, they have mostly been producing rapeseed oil for human consumption, but the plan is to start tests this summer on converting the oil into fuel for diesel engines, fuel that then could be used to power tractors and other mechanical equipment on the farm. The experiment with rapeseed cultivation has now been going on for some time and it seems to be possible to cultivate rapeseed most years, e.g., there has been no crop failure as of yet. They have been cultivating rapeseed in about 10-12 hectares so far, in comparison the grain cultivation is in about 40 hectares, but they plan to increase the production if the conversion of the rapeseed oil into fuel goes well. They have been experimenting with growing two types of rapeseeds, spring, and autumn rapeseed. The spring rape is sown in early spring and threshed in early October. But if the autumn variety is used, it is sown in the first part of July and then the plant grows until autumn and forms leaves that fall when the winter begins. Next spring the plant begins to grow again and is then threshed in August. The advantage of the autumn rape is that

it produces better oil, but the disadvantage is that only one crop is obtained every two years. The biggest problem is that the summer in this country is not long enough to use the autumn variety, but it is usually sown in September and threshed in August the following year in other countries and then a harvest is obtained every summer. This is yet not possible in Iceland but might be so in the future. When the rapeseed has been threshed, the rapeseed seeds are collected and pressed in a machine. When the rapeseed seeds are pressed, the oil in them separates and leaks out while the remains of the seeds are pressed into pellets.

They produce all protein and nutrient supplements for the farm themselves, by mixing the barley with fishmeal and the rapeseed pellets. The cows then receive this mixture together with hay. Having a dairy farm and growing grain and rapeseeds goes well together as it in a sense forms a production cycle. The rapeseed produces both feed and oil, the grain is used as a feed, the cows get fed the grain and the rapeseed pellets and produce milk, and then the manure from the cows is used as fertilizer for the fields that produce the hay, grain and rapeseed. Finally, if the biodiesel production is successful, the machines that distribute the manure on the fields, plant the seeds for the grain and the rapeseed and thresh them will then be run on oil produced from the rapeseed oil.

Þorvaldseyri farm aims to be as sustainable as they can be, and they are always looking for new ways to achieve that goal.

Jörðin Þorvaldseyri er um 1100 hektarar að stærð og eru aðstæðurnar mjög góðar til ræktunar. Í dag er búið kúabú, með 60 mjólkurkýr, en þar var einnig stundaður sauðfjárbúskapur í marga áratugi. Þá hefur einnig verið ræktað korn á landinu síðan 1960 sem gengið hefur mjög vel og er kornið nýtt sem fóður og selt til framleiðslu á t.d. brauði og bjór. En nýjasta tilraunin í ræktun er hins vegar repja en fyrir um 10 árum byrjuðu þau að prófa sig áfram með hana. Markmiðið þá var að framleiða olíu og bíódísel til að nýta á fiskiskip og dísilvélar. Hingað til hafa þau að mestu leyti verið að framleiða olíu úr repjunni til manneldis en núna ætla þau að fara að prófa sig áfram í að breyta olíunni í eldsneyti fyrir díselvélar sem væri síðan hægt að nota á tækin á búinu.

Aska úr Eyjafjallajökli og öðrum eldfjöllum hafa myndað frjóan jarðveg á láglendinu undir Eyjafjöllum. Þorvaldseyri er eitt af búunum þar og nýtir frjóan jarðveginn til að rækta m.a. korn og repju. Repjan gefur af sér fræ sem eru síðan pressuð og skilst við það olía úr fræjunum. Olían er síðan nýtt sem matarolía, en nú stendur til að prófa

Repjuræktun í skugga Eyjafjallajökuls

Ólafur Eggertsson og Guðný A. Valberg búa á jörðinni Þorvaldseyri og er Ólafur þriðji ættliðurinn sem býr þar, en afi hans keypti jörðina árið 1906. Ólafur og Guðný eiga fjögur börn og mun sonur þeirra, Páll Eggert Ólafsson, taka við búinu í framtíðinni. Þorvaldseyri er býli undir Eyjafjöllum, í hálfgerðum fjallahring þar sem Steinafjall og Núpurinn gnæfa yfir því að vestanverðu, Lambafell og Raufarfell að austanverðu og síðan að sjálfsögðu Eyjafjallajökull sjálfur að norðanverðu. Það er staðsetning búsins undir Eyjafjallajökli sem gerir ræktunarskilyrðin svona góð, en það er bæði vegna fjölda jökuláa sem færa set niður á láglendið í vorleysingum og í jökulhlaupum sem og vegna öskufalls úr eldgosum úr Eyjafjallajökli, Kötlu og öðrum nálægum eldstöðvum. Setið og gosaskan hafa með tímanum myndað frjóan jarðveg sem nú nýtist til ræktunnar. Síðasta eldgos og jökulhlaup sem dreifði ösku yfir svæðið var árið 2010 þegar Eyjafjallajökull gaus. Mikið af ösku lagðist yfir ræktarlandið á Þorvaldseyri og víðar undir Eyjafjöllum og tók það nokkur ár að jafna sig að fullu. Þykktin á öskunni var um 4-5 cm og hefði ekki mátt vera mikið þykkari því þá hefði hún kæft gróðurinn undir. Askan gerði ýmislegt gagn þótt hún hafi gert ógagn í stuttan tíma því allur gróður virtist taka mjög vel við sig eftir ágjöfina.

nokkurn tíma og virðist vera hægt að rækta repjuna í flestum árum, það hafa t.d. ekki orðið afföll hjá þeim.

Repjuræktunin hefur náð yfir um 10-12 hektara hingað til, en til samanburðar er kornræktunin um 40 hektarar, en ef það gengur vel með að breyta olíunni í eldsneyti er ætlunin að auka framleiðsluna. Á Þorvaldseyri hafa þau verið að prófa tvær tegundir af repju, vorrepju og haustrepju. Vorrepjunni er sáð snemma á vorin og þreskjuð í byrjun október. En ef haustafbrigðið er notað þá er sáð fyrri part júlí og þá vex plantan fram á haust og myndar kálblöð sem falla síðan þegar veturinn byrjar. Strax næsta vor byrjar plantan að vaxa aftur og er síðan þreskjuð í ágúst. Kosturinn við haustrepjunna er að hún gefur af sér betri olíu, en gallinn er að aðeins ein uppskera fæst á hverjum tveimur árum. Aðal vandamálið er að sumarið hér á landi er ekki nógu langt til að nota þetta afbrigði, en vanalegar er því sáð í september og þreskjað í ágúst árið eftir og þá fæst uppskera á hverju sumri, en því miður ekki enn hægt hér á landi. Þegar búið er að þreskja repjuna er repjufræjunum safnað saman og þau pressuð í þartilgerðri vél. Þegar repjufræin eru pressuð skilst olían í þeim og lekur úr á meðan hratið myndar köggla ekki ólíka fóðurbætiskögglum.

Allt kjarnfóður fyrir búið framleiða þau sjálf, en byggið er blandað með fiskimjöli og repjukögglunum. Kýrnar fá þessa blöndu síðan ásamt heyi. Mjólkurframleiðslan fer því vel með korn- og repjuræktinni því saman mynda þetta eins konar hringrás. Repjan nýtist fullkomlega sem bæði fóður og olía, kornið fer í fóður og hálmurinn fer í svepparækt, kýrnar fá fóður úr ræktuninni og framleiða mjólk, og síðan er mykjan frá kúnum notuð sem áburður á tún og akra sem gefa af sér gras, korn og repju. Síðan ef vel gengur með bíódísel framleiðsluna þá munu vélarnar sem dreifa mykjunni, planta fræjunum fyrir kornið og repjuna og þreskja síðan, vera keyrð á olíu framleiddri úr repjuolíunni. Þorvaldseyri stefnir því að vera eins sjálfbært bú og þau geta verið og eru ávallt að leita að nýjum leiðum til að ná því markmiði og verður því forvitnilegt að sjá hvað þau munu gera í framtíðinni.

Crowberry jelly from Eldgjárhraun lava field

Æsa Guðrúnardóttir is born and raised in the small village of Vik and now lives on the old farm of Norður-Vík in Vik. She has been going to berry picking since she was a little girl and usually went with her mother, grandmother, and other family members. She has kept that tradition and chooses to go berry picking when the weather is nice and enjoys being out in the nature. Going berry picking is still a family event, as most of the time her boyfriend Haukur and her four daughters go with her. The best place to pick berries are in the lava field of Eldgjárhraun, about 60 km east of Vik. Eldgjárhraun lava field was formed in a large fissure eruption from Eldgjá, which is a part of the Katla volcanic system, around the year 939 and is the largest lava field to have formed on Earth in the last 1200 years. Another equally impressive lava field, called Eldhraun, is close by and was created during the 1783-1784 eruption of Lakagígar. They can be told apart as the younger lava field is still rough and covered by moss while over the centuries, wind, and water erosion, aeolian sediments, ash from volcanic eruptions and sediments brought in by glacial rivers have filled in the Eldgjárhraun lava field and levelled it, allowing more complex vegetation than moss to colonize the lava field, with one of these plants being the crowberry. When they have picked enough berries, they go home and start the jelly process.

The first thing that needs to be done is to get rid of the pieces of grass and other plant material that often comes with the berries and that is done by spreading the berries around outside and let the

wind blow away the lighter plant material. Once that is done the berries are rinsed with water, chopped in a food blender, and put in a pot. The berries are then boiled, and several ingredients added, such as sugar and gelatin, and everything stirred together. Æsa does not boil many liters at once since the pot needs to be stirred regularly and it is much more difficult to do so when the pot is completely full, better to boil less and more often. Once the berries have been boiled, the leftovers of them are put into the freezer and is used later for breadmaking. Once the jelly is ready, it is put into glass containers and is then ready to be served.

ICELAND

Æsa has been making Crowberry jelly for a few years now and started to make it for the breakfast buffet at Vik-hostel that she owns and runs. She picks the Crowberries from a lava field called Eldgjárhraun that was formed in an eruption around the year 939.

Æsa bought the old farm of Norður-Vík in the year 2000. The two farms, Norður-Vík and Suður-Vík (e. north- and south-Vik) were the first farms in Vik before the village started to form in the early 20th century. The house in Norður-Vík was built in 1950 and Æsa now runs the Vík-Hostel there. The hostel is the main reason why Æsa started to make jams and jelly, as the jam is a part of the morning buffet at the hostel. The jams are not the only home-made food on the morning buffet there, as Æsa also bakes waffles and sour dough bread and makes several types of syrups form plants that grow in and around the town. The jelly is however not only available at the morning buffet, as Æsa’s jam and jelly making has been increasing slowly over the years, and now they are also sold at the hostel and at a small bus café called Skool Beans in Vik. The jelly goes really well with waffles and bread, and it is absolutely essential with the Christmas steak says Æsa. She also continues to find new recipes for jams and syrups and enjoys experimenting with new concepts. The future is therefore bright, and the selection of jams, jellies and syrups will undoubtedly grow in the coming years.

Krækiberjahlaup úr Eldgjárhrauni Æsa hefur verið að búa til Krækiberjahlaup í nokkur ár og byrjaði að gera það fyrir morgunverðahlaðborðið á Vík-hostelinu sem hún á og rekur. Krækiberin fyrir hlaupið tínir hún í Eldgjárhrauninu sem myndaðist í stóru eldgosi í kringum árið 939. Æsa Guðrúnardóttir er fædd og uppalin í Vík í Mýrdal og býr nú á bænum Norður-Vík í Vík. Hún hefur farið í berjamó til að tína krækiber síðan hún var lítil, fór þá með móður sinni, ömmu og öðrum fjölskyldumeðlimum. Æsa hefur haldið í hefðina og velur sér góðviðrisdag þegar hún fer í berjamó og nýtur þess að vera úti í náttúrunni.

Ferðin í berjamóinn er yfirleitt fjölskylduferð eins og þegar hún var lítil, en Haukur kærastinn hennar og dæturnar hennar fjórar fara oftast með henni.

Besta krækiberjalandið er í Eldgjárhrauninu um 60 km fyrir austan Vík. Eldgjárhraunið myndaðist í stóru sprungugosi úr Eldgjá, sem er hluti af eldfjallakerfi Kötlu, í kringum árið 939 og er stærsta hraun sem runnið hefur á jörðinni á sögulegum tíma. Annað hraun sem er álíka jafn stórkostlegt er einnig að finna í grenndinni, en það er Eldhraun sem myndaðist í gosinu úr Lakagígum árin 17831784. Auðvelt er að greina þau í sundur þar sem Eldhraunið er enn gróft og þakið mosa á meðan vind- og vatnsrof, vindborinn sandur, aska og flóð hafa fyllt Eldgjárhraunið af jarðvegi og flatt það nokkurn veginn út, sem hefur gert plöntum á við krækilyngið mögulegt að nema þar land. Þegar þau eru búin að tína nóg af berjum er haldið heim á leið og byrjað að undirbúa hlaupgerðina.

Fyrst þarf að hreinsa lyngið frá berjunum og er það gert með því að láta berin standa úti og láta goluna feykja í burtu léttara lynginu. Eftir það eru berin skoluð, hökkuð og sett í pott. Látið er sjóða á berjunum og bætt við út í t.d. sykri og hleypi, og allt hrært saman. Æsa sýður ekki marga lítra í einu því það þarf að hræra vel í pottinum og er það mun erfiðara með miklu í, því er betra að sjóða oftar og 61

minna í einu. Hratið, það er afgangurinn þegar búið er að sía frá berjunum, er síðan fryst og notar Æsa það seinna í brauðbakstur. Hlaupið er síðan sett í krukkur og er þá tilbúið. Æsa keypti Norður-Vík árið 2000. Bæirnir NorðurVík og Suður-Vík voru fyrstu bæirnir í Vík áður en þorpið fór að byggjast upp, en það fór ekki að byggjast upp fyrr en rétt eftir aldamótin 1900.

Norður-Víkur húsið sem stendur núna var byggt árið 1950 og rekur Æsa hostelið Vík-Hostel í því og er það helsta ástæðan fyrir því að Æsa fór að gera sultur og hlaup því sulturnar eru bornar fram á morgunverðarhlaðborðinu á hostelinu. Sulturnar eru ekki það eina sem er heimagert á hlaðborðinu en þar eru alltaf heimabakaðar vöfflur og súrdeigsbrauð á boðstólum ásamt nokkrum tegundum af sýrópi sem Æsa býr til úr plöntum sem vaxa í nágrenni Víkur. En hlaupið er ekki einungis í boði á hostelinu, því framleiðslan hefur vaxið hægt og þétt og hefur hún verið að selja aðeins af hlaupinu undanfarin ár. Þær eru seldar núna í Norður-Vík og á kaffihúsinu, eða kaffi strætónum Skool Beans í Vík. Krækiberjahlaupið er rosalega gott á vöfflur og brauð, og alveg bráðnauðsynlegt með jólasteikinni segir Æsa og er hún alltaf að finna nýjar uppskriftir að sultum og sýrópum og hefur gaman af því að prófa sig áfram í þeim efnum. Framtíðin er því björt og án efa á úrvalið af sultum, hlaupi og sýrópi eftir að aukast á næstu árum.

About GEOfoodEDU Norway GEOfoodEDU-prosjektet ble ledet av Magma Geopark sammen med Katla Geopark (Island) og Jardfeingi (Færøyene). Prosjektet har funnet historier fra den nordatlantiske NORA-regionen som forteller om de skjøre økosystemer som folk lever i og hva de kan gjøre for å redusere deres miljøpåvirkning.

Prosjektet skal skape interesse for arbeidet som gjøres for å fremme lokal mat og bærekraftig praksiser i regionen.

Prosjektet har derfor samlet lokale historier knyttet til mat, kultur og innovativ praksis som serveres i skreddersydde og illustrerte historier. Disse skal fremme NORA-regionen innenfor merkevaren GEOfood i de to deltakende UNESCO Globale Geoparker.

Denne boken er et av prosjektets hovedresultater, og fokuserer på å dele historier fra de avsidesliggende områdene som er involvert i prosjektet og er preget av hardt klima hvor mytologi, kultur og kunnskap om landskapet og naturen alltid har vært grunnlaget for å overleve.

Målet med boken er å fortelle historier, holde historiene levende, dele historiene med mennesker over hele verden og øke kunnskapen om NORA-regionen og viktigheten av bærekraft og respekt for naturen.

About GEOfoodEDU Faroe Islands Verkætlanin GEOfoodEDU verður rikin av Magma Geopark, og Katla Geopark (Ísland) og Jarðfeingi (Føroyar) eru eisini við í verkætlanini. Ætlanin við verkætlanini er at styrka um vitanina hjá fólki í NORA-økinum, serliga tilvitanina um viðkvomu vistskipanina í økinum, og hvat fólk kunnu gera fyri at minka um umhvørvisligu ávirkanina.

Eftir ætlan fer verkætlanin at knýta áhugapartar í økinum saman til at birta upp undir staðbundna matmentan og burðardyggar vanar og hættir. Hetta verður gjørt við at samla søgur um mat, mentan og nýskapandi livihættir, ið stuðla NORA-økinum og GEOfood-merkinum í báðum luttakandi UNESCO Global Geoparkunum og tí føroyska økinum sum virkar fyri at gerast ein geopark.

Hendan bókin er eitt av høvuðsúrslitunum í verkætlanini.

Søgurnar hava til felags, at tær koma úr fjarskotnum støðum við hørðum veðurlagi, har ið sagnir, mentan og vitan um landslag og náttúru altíð hava verið alneyðugir partar av lívinum.

About GEOfoodEDU Iceland GEOfoodEDU verkefnið er samstarfsverkefni Kötlu jarðvangs á Íslandi, Jarðfeingi í Færeyjum og er í umsjá Magma jarðvangs í Noregi. Þessi bók er einn helsti afrakstur verkefnisins og miðar að því að deila sögum sem tengjast eingöngu dreifbýlum svæðum sem einkennast af krefjandi umhverfisaðstæðum og loftslagi, og þar sem þjóðsögur, menning og þekking um landslag og náttúru hefur alla tíð skipað veigamikinn sess í lífsbaráttunni.

Markmið bókarinnar er að halda á lofti þessum mikilvæga menningararfi okkar, deila sögum með öðrum þjóðum til að fræða um sérstöðu NORA svæðisins og hversu mikilvægt það er að stuðla að umhverfislegri sjálfbærni og virðingu fyrir náttúrunni.

Unique stories

The GEOfoodEDU project led by Magma Geopark including Katla Geopark (Iceland) and Jardfeingi (Faroes) is designed to strengthen the North Atlantic NORA Region inhabitants’ awareness about the fragility of the ecosystem they are living in and what are the practices they can adopt do to reduce their environmental impact.

The project wishes to Increase or establishing the local network of stakeholders working to promote local food and sustainable practices, collecting local stories related with food, culture and innovative practice integrated within a tailored storytelling for promoting NORA Region within GEOfood brand in the two UNESCO Global Geoparks participating.

The present book is one of the main project outcomes, is focusing on sharing stories strictly linked with the remote areas involved in the project characterized by hard climate and where mythology, culture and knowledge about the landscape and nature has been always fundamental for surviving.

The aim of the book is to tell stories, keeping the stories alive and sharing the stories with people across the World increasing the knowledge about the NORA Region and importance of sustainability and respect for nature.
