• 300g basmati rice • 1 tbsp sun ower or vegetable oil • 2 large onions, sliced • 2 garlic cloves, chopped • 450g tomatoes, cut into chunks • 3 tbsp tikka curry paste • 400g can coconut milk • 4 skinless, boneless pollock llets (about 150g/51/2oz each), or other sustainable white sh, cut into 4cm/11/2in chunks • ½ small pack coriander, roughly chopped

Method STEP 1

Put a large saucepan of water on to boil and cook the rice following pack instructions. Meanwhile, heat the oil in a large, wide saucepan over a medium heat and add the onions. Cook for 5-10 mins until softened and starting to colour. Add the garlic and tomatoes, and fry for 2 mins. Add the curry paste, fry for 2 mins more, then pour in the coconut milk and bring to the boil.

STEP 2

Add the sh to the pan and simmer gently for 5-8 mins until just cooked through. Turn o the heat. Sprinkle the coriander over the curry and serve with the rice.

Method

Put all the ingredients into a blender. Pulse until smooth. Serve.

Method STEP 1

Pour the milk into a small pan and then place over a medium heat until simmering, stirring so it doesn’t scorch. Remove the pan from the heat then add the white chocolate and stir. Once the chocolate has melted, place the pan back on the heat to warm through. Add the coconut- avoured rum and pour into a mug.

STEP 2

Garnish with the dark chocolate and a few toasted coconut akes if you like.

SALTED CARAMEL RUM HOT CHOCOLATE

Method STEP 1

Warm the milk in a saucepan over a medium heat until simmering. Remove from the heat and add the chocolate and stir until melted. Pop the pan back on the heat until warm then add the rum mixture and a pinch of aky sea salt. Pour into a mug and serve.

CHOCORANGE HOT CHOCOLATE

Enjoy the heavenly combination of citrus and chocolate in sumptuous drink form by whipping up this double cream-based dream.

Ingredients

• 150ml milk • 50ml double cream • zest of 0.5 orange • 50g dark chocolate, chopped • 25ml orange liqueur

Method STEP 1

Heat the milk, cream and orange zest together in a saucepan until simmering then remove from the heat and pour through a sieve into a jug to remove the orange zest. Pour the infused milk mixture back into the pan and add the chocolate, stirring until the chocolate has melted and is really smooth.

STEP 2

Put the pan back on the heat to warm through then add the orange liqueur. Pour into a mug and serve.
