other's Day was held in Boston in 1872 at the suggestion of Julia Ward Howe, the writer of “The Battle Hymn of the Republic.” But it was Anna Jarvis, daughter of a Methodist minister in Grafton, West Virginia, who made it a national event. During the Civil War, Anna Jarvis’ mother organized Mother's Day Work Clubs to care for wounded soldiers. In her honor, Anna persuaded her church to set aside the second Sunday in May, the anniversary of her mother’s death, as a day to appreciate all mothers. Encouraged by the reception, she organized it in Philadelphia, then began a letter-writing campaign to ministers, businessmen and politicians to establish a national Mother's Day. N

ow, I’ve seen you two on stage before. You were in Always..Patsy Cline, Lost Highway, Woody Sez, Ring of Fire, The Will Roger Follies, Pump Boys and Dinettes, it goes on and on. David, why did you go to London to study? DL: As I said, I was in the choir when I was a youngster, and I actually studied music as well in England. I attended a summer program at the Royal School of Church Music when I was a kid. In the performance aspect of my life, I’ve always been something of an Anglophile, and I played folk music. I lived in Aspen, Colorado. I actually met Mr. Denver a couple of times while I was out there being a ski bum. And then when I decided to shift to acting on the stage, I just thought of England again and decided to go there. What kind of a guy was John Denver? Was it just a brief perfunctory introduction or did you spend any quality time talking?

DL: We were playing on the same bill at a couple of charity events and things like that in Aspen, and so he was always a very nice fellow to me. He was a fisherman and so am I, and so we did have a few common interests in addition to music. Sherry, I think you’re so on target with this, that this is just so appropriate for this time, we need something that’s happy. SL: Yes, Allen Cornell really just picked one out of the ether that was perfect for this moment, and he’s right on the money for what we all really need right now. And for people who love John Denver, it’s a no-brainer, you’re going to have a great time. The people who are just learning about him and maybe have thought he’s a little bit boring or not their cup of tea, they’re going to be proven wrong when they see what we’ve done with his music. It deserves to be heard because of who he was and what he was saying and the messages that he was trying to bring. He was a huge environmentalist. He really spent a lot of time as an activist, working to end hunger, to help us all realize the gifts that we have been given in this world and not to take advantage of them. That’s a message that we should all get behind today. It’s in his music, and I think young people will really appreciate that. He was ahead of his time, wasn’t he? SL: He really was. I really admire him, and I think after seeing the show, a lot of people will want to Google a lot of things about him. Sherry and David Lutken, thank you for spending this quality time with us.

A total of 1,304,472 soldiers have died in U.S. wars since 1776. This Memorial Day, let’s not forget the true meaning of the day and take time to honor those who gave their lives defending our freedoms and way of life in our beloved

A

t 5:47 p.m. on Monday, March 25th, 1918, the HRMS Mauretania, destined for Liverpool, England, departed Cunard Pier No. 54 in New York City Harbor. My paternal grandfather, George James Day, was on board. He was a private in the 2nd Battalion, Battery C of the 55th Artillery Division, the “Old First” Massachusetts Regiment. The transatlantic voyage would take eight days. Liverpool was not his final destination. The end-point of his journey was much more ominous: the border of France and Belgium, the Western Front, and the final Allied offensives of World War I. His wartime experiences along the Western Front were no different than the experiences of the 44,000,000 U.S. personnel who have served this great nation since 1776. But I know that his personality, moral standards, and spiritual beliefs helped him to survive 1918 in France and guided him through the rest of his life. George James Day By all accounts, the Atlantic crossing was November 14, 1891 - September 1, 1961 smooth and uneventful and I know that my grandfather’s faith was incredibly important during his journey between continents. Wolfpacks of German submarines were a constant threat in the North Atlantic. The Canadian troops (my grandfather was a Canadian citizen at the time) took the submarine peril very seriously. It was reported that the Canadians sat around on deck reading Bibles and prayer books and looking glum while they watched for signs of approaching destruction.

n the other hand, the Americans were singing, playing cards, shooting craps, and shouting, “When do we eat?” That Atlantic crossing included three important religious observances: Passover (on March 27th), Good Friday (on March 29th), and Easter Sunday (on March 31st). The extreme conditions of the crossing made the men and women aboard the Mauretania more thoughtful about honoring these three religious holidays. Good Friday was so filled with drills and inspections that a religious service appeared to be out of the question. But finally, at the last possible instant, permission was granted for a worship service to be held in the men’s mess hall. Chaplain Albert W. Mathews and his superior, Chaplain Fredric Morse Cutler, held a service worthy of that solemn Good Friday evening. More than a thousand officers, servicemen, and nurses crowed into the mess hall. Holy Communion was a fitting end to the service. When the elements were offered, 350 men and women pressed forward. The sermon that night was preached by Chaplain Cutler. It centered around the seven final phrases said by Christ on the cross. 1. “Father, forgive them; for they know not what they do.” (Luke 23:34) 2. “Verily, I say unto thee, today shalt thou be with me in paradise.” (Luke 23:43) 3. “Woman, behold thy son! Then saith he to the disciple, Behold thy mother!” (John 19:25-27) 4. “My God, my God, why hast thou forsaken me?” (Matthew 27:46) 5. “I thirst.” (John 19:28) 6. “It is finished.” (John 19:30) 7. “Father, into thy hands I commend my spirit.” (Luke 23:46) Four of these final phrases should have resonated deeply with my grandfather and

350,000 casualties. The U.S. losses were aggravated by the inexperience of the newly-minted troops (including my grandfather), the tactics used during the early phases of the battle, and widespread mortality caused by the global Spanish Flu pandemic. Near the end of the offensive, my grandfather was exposed to mustard gas and the long-term adverse effects of the gassing never left him. his comrades, although they probably did not realize it at the time. I wonder whether they knew during their transatlantic journey that they were descending into hell on earth. From July 15-August 6, 1918, eight months after enlisting, my grandfather fought in the Second Battle of the Marne, the last major German offensive of WWI. He was promoted to Corporal. This field promotion was in anticipation of what would be the final battle of WWI. The Meuse–Argonne Offensive was fought during 47 days, ending with the Armistice on November 11th, three days before my grandfather’s 27th birthday. It is the largest battle in U.S. military history, involving 1.2 million American soldiers. It was the second deadliest battle in American history, resulting in more than

But, back to Chaplain Cutler’s Good Friday sermon. The first phrase spoken by Christ on the cross that should have caught my grandfather’s attention was, “Father, forgive them; for they know not what they do.” The Great War began in Europe in June 1914 and quickly engulfed the world. It led to the mobilization of more than 70 million military personnel, and was one of the deadliest conflicts in history, with 8.5 million combatant deaths, 13 million civilian deaths, and 3 million Spanish flu deaths. The geo-political origins of the conflict originated in Sarajevo with the assassination of the Austro-Hungarian Archduke Franz Ferdinand. This single action pitted France, Russia, Italy, and Britain against Germany and Austria-Hungary. For much of the 19th century, the major European powers had tried to maintain a tenuous balance of power among themselves, resulting in a complex and confusing network of political and military alliances. I am confident that my grandfather and his colleagues knew little about this, and that it would be years, if ever, before they realized that they were just pawns in a huge geopolitical chess game. “…for they know not what they do.” The fourth phrase spoken by Christ should also have resonated with my Grandfather: “My God, my God, why hast thou forsaken me?” The Western Front of 1918 was truly hell on earth with massive artillery bombardments, infantry advances and retreats, and an enormous number of casualties. o break the deadlock of trench warfare, both sides experimented with new military technology, including poison gas, heavy artillery, aircraft, and tanks. Trench life involved long periods of boredom mixed with brief periods of terror. The threat of death kept soldiers constantly on edge, while poor living conditions and a lack of sleep wore away at their health and stamina. Rats, lice, fleas, bacteria, and viruses tormented the troops day and night. The enemy remained largely hidden from view and soldiers often felt powerless against arbitrary and sudden death. I’m sure that many along the Western Front in 1918 felt that they were totally forsaken. The fifth phrase uttered by Christ was: “I thirst.” Life along the frontlines of the Western Front was never predictable. In mid-October 1918 my grandfather’s 55th Artillery supply depot, kitchen and mess tent containing all of their food and water took a direct hit from German artillery. This most important part of the camp was obliterated and the members of the 55th were without food and water for more than three days. Life on the Western Front was difficult enough, but to live without food and water must have been unbearable. And Christ’s sixth phrase was: “It is finished.” The collapse of the Central Powers in 1918 came swiftly. On 11 November, at 5:00 a.m., an armistice with Germany was signed in a railroad carriage at Compiègne, France. At 11 a.m. on 11 November 1918— the eleventh hour of the eleventh day of the eleventh month—a ceasefire took effect. During the six hours between the signing of the armistice and its taking effect, opposing armies on the Western Front began to withdraw from their positions. On February 6, 1919, my grandfather was honorably discharged from the U.S. Army and headed home to Boston traveling by rail from Fort H.G Wright, NY to New London, CT to Boston, MA on a ticket that cost $27.07. On December 15th of that year he officially became a citizen of the United States. My grandfather survived his ordeal in Europe, although he returned home scarred for life. I am sure that he was one of the Canadian troops praying on the deck of the Mauretania to ward off the submarine attacks. I am sure that he listened carefully to

Chaplain Cutler’s Good Friday sermon and that he fully participated in that service. He received Holy Communion somewhere in the middle of the Atlantic Ocean on March 27th, 1918. He carried his faith with him into the Second Battle of the Marne and into the Meuse-Argonne Offensive, and throughout his life after service to his new country. To him, along with 44,000,000 of our fellow citizens, past and present, we are deeply indebted.

recently had the opportunity to sail out of Lisbon on Silversea Cruises along the coast of Southern Spain to Barcelona. I’ll cover Spain and Barcelona another time, but this month the column is dedicated to Lisbon; a city I always had on my list but never had the opportunity to visit. I’m glad I did because this city is a jewel by the sea. Relatively easy to get to with connecting flights, you can also take a drive to Miami for non-stop service on TAP Airlines. You still need to be vaccinated to enter the country and a test prior to departure as of this printing, but the testing requirement is soon to end like it has ended in the rest of the European Union. Unlike many other European capitals, the international airport is close to the city center, so within 30 minutes I was in my hotel room at the Four Seasons Ritz Hotel. Surprisingly affordable (as is the city on a whole), this hotel is one of most stylish in the city with a one-star Michelin restaurant, Cure. Nearby the Ritz is the Intercontinental and along the city’s main thoroughfare Avenida Liberdad you will find a fantastic Sofitel Hotel. Great shopping and cafés abound along the avenue, so it is worthy of a day’s stroll. For our evening, though, instead of the gastronomic dinner at Cure, my friend and I chose a casual evening and went to a great seafood restaurant named Ramiro, easily accessible by one


of the quaint trams. Be sure to make a reservation or be prepared to wait in line for what was originally one of the many beer halls in the city fifty years ago that started serving seafood. Made famous by a visit from Anthony Bourdain, it is now a little touristy, but other seafood/beer halls are easy to find and you can’t leave without at least one night’s dinner while visiting. You order usually by the kilo of a particular shellfish, but do not leave a restaurant without having a small steak sandwich for dessert – yes, that is the way a good seafood dinner is finished in this town. I did not have much time to explore as I was catching a cruise, so we had to save a day trip to Sintra for another time and hired a driver to explore the popular areas of the city. Lisbon, like Rome, is a city with seven hills, and you will definitely want to visit the Castle Sao Jorge on top of the largest hill to get an amazing view. It is near the historic old town where you can get lost in the winding streets and do some great local shopping. The old town is adjacent to an area for nightlife, which is monitored by police, and I found the city to be very safe compared to other major metropolitan city centers. ventually we wound our way to the famous Tower of Belem, but nearby the famous Lisbon Cathedral is Café Belem which started out as a small pastry shop and now includes many buildings. It is where the famous pastry is created with a secret recipe, and while it is sold throughout the city with imitations that are very tasty, the original recipe can only be found here…and it is a crime if you don’t sprinkle with some powdered sugar and cinnamon on top. While we were only there for a day and a half, I recommend taking a journey there for three days, heading up to the Moorish town of Sintra, then heading to Porto where you can taste fabulous Port wine and begin a river cruise up the Duoro River in one of the most beautiful valleys in Europe. Although I only had a taste of Lisbon, I can tell you from the rest of my cruise up through cities along the Spanish Coast that tourism in Europe is open and welcoming. With great deals as travel restrictions relax, now is the time to plan your trip for the summer and enjoy the Jewel of the Atlantic.

It’s Mother’s Day Month.

Mothers deserve a month, not just a day. Every mother I know loves French Silk Chocolate Pie. And since every mother also loves whipped cream, our recipes this month feature whipped cream.

French Silk Chocolate Pie INGREDIENTS One 9-inch pie crust, baked For the filling 1 cup heavy cream or heavy whipping cream Two 4-ounce quality semi-sweet chocolate bars (like Ghirardelli’s), finely chopped (do not use chips) 4 large eggs 1 cups granulated sugar, divided 2 sticks unsalted butter, softened to room temperature 2 teaspoons vanilla extract For the topping 1 cup heavy cream or heavy whipping cream 2 Tablespoons granulated or confectioner’s sugar 1/2 teaspoon vanilla extract Chocolate shavings or curls, mini chocolate chips, or toasted coconut for garnish INSTRUCTIONS • Using a stand mixer fitted with a whisk attachment, whip the heavy cream on medium-high speed until stiff peaks form, about 4 minutes. (Stiff peaks hold their peak shape and do not droop.) Place in refrigerator. • Put the chopped chocolate in a medium heat-proof bowl. Melt in 20-second increments in the microwave, stopping and stirring after each increment until completely melted and smooth. Set aside until the end of the next step.

Strawberry Cream Shortbread Pie Mom will love this easy yet elegant dessert with a buttery crust and creamy strawberry filling. INGREDIENTS For the Crust 10 tablespoons unsalted butter, room temperature 1/3 cup confectioner’s sugar 1/4 teaspoon salt 1 1/4 cups flour 1 teaspoon vanilla extract For the Filling 4 cups strawberries, fresh, with additional for garnish * 2 tablespoons fresh lemon juice 3/4 to 1 cup sugar (depending on sweetness of strawberries) 1/3 cup water, cold Two 1/4-ounce packages unflavored gelatin 2 cups heavy cream or whipping cream Fresh strawberries to garnish INSTRUCTIONS • Preheat oven to 350°. Lightly grease a 9” round springform pan. You can use a 9” square pan, but the springform pan makes a prettier presentation. Bake crust a few minutes longer in the springform. • Put all of the crust ingredients a standing mixer bowl and beat at medium speed until the dough comes together. This could take up to 2 minutes. If the dough won’t come together, drizzle in a teaspoon of milk at a time until it does. • Pat the dough into the bottom of the prepared pan, and prick it all over with a fork. Bake the crust for 10 minutes, then reduce the heat to 300° and bake 15

to 20 minutes longer, until golden. Remove the crust from the oven, and let it cool completely. • Trim the green tops off the strawberries. Place in a food processor or blender, along with the lemon juice and granulated sugar. (Make the berry purée a bit sweeter than you think you should; by the time you add the whipped cream, the filling should be perfectly sweetened.) Set aside. • Place 1/3 cup cold water in a microwave-safe bowl or very small saucepan. Add the gelatin, stirring to combine. The mixture will become stiff and jelly-like. • Heat gently, in the microwave or over a low burner, just until the gelatin dissolves and the mixture liquefies. • Add the liquefied gelatin to the strawberries in the food processor, and process until the berries are puréed. • Refrigerate the purée until it thickens enough to mound on a spoon, about 45 minutes. Stir it every 15 minutes so it thickens consistently throughout; you want to avoid as much lumpiness as possible. • Whip the 2 cups cream until stiff. • Fold in the strawberry purée gently but thoroughly. • Spoon the filling over the crust in the pan, smoothing the top. Refrigerate until ready to serve. (For easier slicing, freeze 30 minutes before serving.) • Garnish with fresh sliced berries. • Wrap well and refrigerate any leftovers. Note: May substitute frozen strawberries. Recipe adapted from King Arthur Baking

t was deep in the forest, and most would never find its location. Fed by quality rains, the lagoon boasted an incredible waterfall. The overhanging branches hid it from most angles, and the bird song that was produced from the feathered gatherings on those branches sounded eerie with reverberation from the rounded rock wall behind. At the base of the falls was a jagged protuberance cutting off to the left, with moss growing thick disguising the sharp edges. To the right, the rock had been worn down. The sharp edges were softened with years of a steady drip, a trickle really, that demanded its right to fall beside the more powerful, steady stream six feet away. On the rock sat a frog, basking in the flickering light that cut through the leaves, completely content with his perch. The smooth rock promoted friendship. What was once coarse and angular had been worn down, with time and persistence. The frog recognized the spot as a place of safety and belonging. Peace reigned. Life can be jagged and sharp, with edges and situations that cut and repel, making us feel insecure and afraid. Look for the trickling water and place yourself beneath it. It may come as a church home, a book club, a 12-Step group, or some other gathering of regular attendees. Always, you will recognize the relief that comes with the persistence of the group to show up. Accountable to creating sanctuary, these bands create fellowship and belonging. They eliminate the jagged edges of circumstance. Don’t be fooled into loneliness. Like the waterfall, many will never find their personal friendship location simply because they fear the trek into the deep forests of vulnerability. Chance it and be known. Connection starts with allowing it to happen.
