Thumb on C… there you go… index finger on D…” It was my first piano lesson – well, the first one I was teaching. I’d sat on piano benches since age five, but at 14 decided it was time to give back, so I took on the role of piano teacher at “Promise in Brevard,” a nonprofit that provides housing and other facilities to adults with cognitive and physical disabilities. 6

n that first day teaching Promise’s special needs residents, I brought along my own yellowing and wrinkly piano books, the same ones I used when I began taking lessons. My students that day were Brooke, Matthew, and Garrison, all adult residents at Promise with speech and cognitive disabilities, such as Down syndrome. But after that first day of teaching, I quickly realized that many of my students were struggling. Learning music presents mental challenges even for the best of players, but pairing these challenges with cognitive disabilities adds a new layer of difficulty. In particular, I could see that the ins and outs of traditional music notation – rests, ties, dotted notes – became mental hurdles for my students. When Matthew played “Mary Had a Little Lamb,” for example, he became frustrated, shaking his head back and forth and wringing his hands as he tried to read the notation. I came home from the Promise campus that day determined to find a solution. Perhaps there was a more effective way to expose the joys of music to those with special needs. After doing some research online, I found Occupational Octaves Piano™, a book series written by Lee Stockner, a special needs music educator from Long Island, New York. Stockner’s series utilizes his own “Lee Stockner’s Music Box Method,” a simple coding system involving colorful rings that are placed on a student’s fingers to correspond to colors in the music. If a student sees a green-colored “D” on the page, he knows to press the key D with his “green” finger. I bought some of Stockner’s books, and the results with my Promise students were immediate and astounding! Brooke, for example, was able to soar through five songs in one lesson, and by the Lee Stockner’s Music end of 30 minutes she was using all five fingers on Box Method books one hand – something she hadn’t been able to do in previous lessons. I noticed similar progress with other students: within their first lesson using Stockner’s books and techniques, there was a positive change in their performance, understanding, and attitude. The students felt accomplished and happy with their fast-paced progress, and it made me feel so proud to see them grow musically! (Continued next page)

Ripped away from face-to-face lessons at Promise, I started wondering how music instruction and education could still flourish, even if we now required computers and Zoom calls. Reaching out to Stockner personally in the summer of 2020, I created video demonstrations of his curriculum that could be feaJeffrey Kringer The videos, called tured on his–website, occupationaloctaves.com. One of my first recordings was of “Twinkle, Twinkle Little Star,” using an LED ring light, a keyboard, and my phone. I placed the colored rings on my own fingers, stated the song title clearly, and then played the nursery rhyme under tempo so that viewers could focus on my hand position and the movements of my fingers. More than 40 Dhyana’s Demos videos are now available on Stockner’s website to students around the world without charge. They range from the simple “Mary Had a Little Lamb” to the more complex “Bach’s Minuet in G Major.” For me, creating these videos has been a joyful journey, as I’ve learned from and bonded with Lee Stockner through our love for music and passion for bringing the Occupational Octaves Piano™ experience to a larger audience. These days I’m back at Promise in Brevard every Sunday teaching my students in person. More than two years, 35 visits and 100 lessons later, I still feel that same thrill I experienced on my first day of teaching – because I know that I’ve made someone’s day a little bit brighter.

Better yet, you don’t have to wait long for relief. “Patients typically notice considerable improvement after one or two sessions, but we recommend three.” Recently, none other than the “Mayor of the Air Waves” (aka Rhett Palmer) was treated at the Center with the IPL procedure by Dr. Mallon for a dry eye condition that has plagued him for years…as well as for a few “red-brown spots” on his face. (We are not implying that these are age-related.) When I was about ten we lived in an apartment complex, and I figured out how to access the fire escape and get up on the roof. From the top, I found the place that was located right above the main walkway that led out to the parking lot. Well, there was an older lady that would always yell at me and my friends for playing too close to her window. One morning, I decided to “camp” out on the roof with the biggest water balloon I could make and wait for her to leave for work. Me and another kid from the neighborhood used to go into the woods and play with matches and burn stuff. Paper, dead leaves, that kind of thing. Yeah, well, it wasn’t the brightest idea in the world because while we were being stupid and playing with fire, a tree started to burn. Luckily, he had brought a bucket of water as a “safety precaution” and we were able to put it out before the whole woods caught fire. We didn’t get caught, but I learned a valuable lesson about playing with fire. That was the last time we decided to burn things in the woods.

As a kid I grew up here in South Florida and the year that Hurricanes Frances and Jean rolled through and shut everything down, I kicked back and enjoyed the time out of school. Until the time came to go back. Well, I wasn’t quite ready to go back yet. We were scheduled to go back to school on a Wednesday, but I bought myself an extra few days by telling my parents that school wasn’t re-opening until the following Monday. I ran my own “store” when I was in middle school. I would take my allowance and buy things like candy bars, gum, toys, and whatever else I saw that I thought would be cool. There was a 100% markup. Anything I bought, I would charge double what I paid for it and the other kids would shell out their money for it. I made hundreds of dollars over the course of the school year, which to a twelveyear-old kid was a lot of money!
I stole my sister’s car! What I didn’t realize was that she wasn’t driving it because it was broken down and our dad was trying to fix it. I only got a few blocks away before the car broke down and I had to push it all the way home as quick as I could so I wouldn’t get caught!

hose who know me know I love my dog, Shlomo. While he loves where he boards when I travel (shout out to Paw Prints in Vero Beach) taking a trip with him is always so much fun! Our first was the road trip to Asheville, North Carolina, last year stopping in Savannah on the way north, and we’ve had a few more since then. So I thought it would be great to discuss some options for traveling with your favorite pet, since road trips are the thing to do during the last stretch of the pandemic and I’ve covered some great road-trip destinations in previous issues, such as St. Augustine, Savannah, Asheville and even further away (read – why not take your dog to New Orleans and stop half way there?). Years ago, traveling with your pet meant only one dog or cat less than 25 pounds, but the world of traveling with your pet has opened up tremendously. We’ll stick with road trips in this issue since flying has its own set of rules, but not out of the question if they can fit in a pet carrier under your seat; mostly Yorkies and Chihuahuas fit (no pun intended) into this category. Note that you must make a reservation with the airline and there is a charge and that only one dog is allowed per seat purchased. Some of you may have two little dogs that can fit into one carrier, but that doesn’t fly (pun intended). When driving, be sure to keep your dog safe by having it buckled in. There are many options at your favorite pet store for safety devices when driving or for carriers, but also be sure to bring treats, something to play with, and if your dog is anxious traveling, there is no need to go to the vet. I’ve found Adaptil which you can buy online or in pet stores works fine to calm your pup down whether driving, on a plane or in a hotel room. One website that is a friend for all dog lovers is www.bringfido.com. It lists whether or not there is a charge, how many dogs you can stay with and what weights are allowed. In many cities you’ll find luxury hotels like Four Seasons are pet friendly and even have dog room service menus with gourmet pet treats! Need a stop on the roadside along the journey? Residence Inn is one of my favorites along with Choice Inns and Hyatt Place for that quick overnight stop on the way to my final destination. That said, the best dog-friendly chain, bar none, are the Kimpton hotels throughout the USA. They allow dogs up to ANY size and treat

them as regular guests! In fact, if you have family visiting you here in Vero Beach, the Kimpton Vero Beach Hotel is the place for them to stay with Rover (and daycare at PawPrints), so don’t worry about inviting your friends and family to come for a holiday or family celebration if they have a dog; it can all be arranged for everyone to have a wonderful time. I found staying at Kimpton Brice Hotel in Savannah with Shlomo extremely fun because of how many dogs were there, and the proximity to a dog park. Finally, if you are looking for a super quaint road trip, look no further than a dog-friendly Bed and Breakfast! One of my favorites is the Barksdale House Inn in Charleston, South Carolina. The drive isn’t too long, Charleston is great, and the B&B has a great location…they can even arrange for pet sitting services! And once you are there??? If you aren’t strolling through the city and parking your dog under a table at a sidewalk café, be sure to check www.hikewithyourdog.com to find the best trails and state parks to have a fun day out in nature. The point is…embrace traveling with your dog and take a road trip to get rid of the pandemic blues and start 2022 out with fun for the WHOLE family! Napping at the Kimpton Hotel

REVIEWS Yellowstone Season 4 Rated TV-MA Paramount Plus or Amazon by Chuck Cannon
T
his show keeps getting worse and worse. The first three seasons had me a hardcore Dutton Ranch fan. They’re quickly losing me in Season 4. The previous seasons depicted a realistic life battle of a true family ranch trying to survive in today’s world. I’m not sure if the show’s creator, Taylor Sheridan, has just lost his touch or if he has stepped back and handed the reins over to a team of hired writers, but this show gets progressively worse. Season 1 and 2 were good. Seasons 3 and 4 have been aimless and the writing gets worse. I am (or was) a big Taylor Sheridan fan; it’s why I’ve watched Yellowstone since it premiered. But each episode of Season 4 has just been... stupid. There is no overarching plot, no good character development. They have all but forgotten the hit on the family at the end of Season 3. Each episode fails to move the story forward, and just contains stupid plots. Character gets stabbed in the chest and then fights the next day like it never happened. Character who is branded gets fired – when in past seasons the “brand” meant you are there for life, or you go to the train station (get killed). Jamie is still a coward; John Dutton hooks up with a hippie young enough to be his

daughter; Beth takes in an orphaned child and then casts him aside as soon as he acts like a child; they let these pointless girls hang out at the ranch and distract the cowboys. And again, the whole family was attacked at the end of the last season and NO ONE SEEMS TO CARE ANYMORE. What the hell happened to this show? It was a small fan favorite, but it seems Taylor Sheridan was thrust into stardom and is involved in too many projects and Yellowstone is suffering. I am waiting for Yellowstone stars to get studio applause when they enter a scene a la Happy Days. If in the next season the Duttons vacation in Hawaii or go to Disney, I’m out. CHOCOLATE MOLTEN LAVA CAKES INGREDIENTS Baking spray and cocoa powder 1 stick unsalted butter, cut into pieces 2 ounces high quality bittersweet chocolate 2 ounces high quality semisweet chocolate 1 1/4 cups powdered sugar 2 whole eggs 3 egg yolks 1 teaspoon vanilla extract 1/2 cup all-purpose flour Confectioners’ sugar for dusting Raspberries for garnish Vanilla ice cream (optional) INSTRUCTIONS

ne of my favorite restaurant desserts is a chocolate lava cake with a warm gooey center that oozes out when you dig in. Yum! Topped with confectioner’s sugar, raspberries, and a scoop of vanilla ice cream, it’s a delicious indulgence for you and your Valentine. And, it’s quick and easy to make!

• Preheat oven to 425 degrees. Spray four 6-ounce ramekins with baking spray and a dusting of cocoa powder. Place on a rimmed baking sheet. • Microwave butter and chocolates in a large bowl on high until the butter is melted, about 1 minute. Whisk until the chocolate is melted. Stir in the sugar until well blended. • Whisk in the eggs and egg yolks. Add vanilla and fold in the flour. • Spoon evenly into the ramekins and bake until the sides are firm and the centers are soft, about 13 minutes. Let stand 1 minute. Invert each ramekin onto individual serving plates (use oven mitt!) and let sit until cakes release from the ramekin, about 1 minute. Lift off ramekin and dust with confectioner’s sugar. Top with raspberries and add a scoop of vanilla ice cream on the side. Serve immediately.
Note: Don’t use chocolate chips. They won’t create the same ooey-gooey filling.

received a wonderful cookbook for Christmas, “The Perfect Cake,” by America’s Test Kitchen. While flipping through it, oohing and aahing over the beautiful pictures, I came across a chocolate raspberry heart cake for Valentine’s Day which inspired me to make one. My first heart cake. Had I known how simple it is without a special heart-shaped pan, I would have been making them for years. “Bake your cake in one 8” square baking pan and one 8” round cake pan. Work with completely cooled cakes. Leave the square cake whole. Cut the round cake in half vertically. Position the square cake with a point towards you and place the flat side of each half circle against each of the top two edges of the square cake forming a heart. Using a long serrated knife, shave off domed tops to make them even in height.” Voila! A heart cake ready for frosting. I enjoy making specialty cakes from scratch when I have the time, but when life is busy I use a cake mix. Right now my favorite chocolate cake is Betty Crocker’s Triple Chocolate Fudge. It has little bits of chocolate chips…yum. My aunt uses box cakes as a base and changes some of the added ingredients. She uses one or two extra eggs, and for a chocolate cake uses coffee instead of water and may add cocoa powder with more sugar. Other additions are instant pudding, sour cream or buttermilk. She says dairy makes it taste more homemade.
MY CHOCOLATE CAKE RECIPE INGREDIENTS Betty Crocker Delights Triple Chocolate Fudge cake mix 1 1/4 cup coffee, cooled (in place of water) 1/2 cup vegetable oil 4 eggs (not 3) 1/2 cup sour cream INSTRUCTIONS • Preheat oven to 350, or 325 for dark or nonstick pans. • Cut parchment paper to fit one 8” square baking pan and one 8” round cake pan. Spray the bottom only of each pan and place the parchment on top. Spray the parchment paper. • In large bowl combine all ingredients and beat on low speed or mix by hand just until blended, 30 seconds. Increase speed to medium and beat for two minutes, or beat vigorously by hand for two minutes. • Pour into prepared pans, trying to get the batter the same level in both pans. (I dipped a toothpick in each pan to compare and spooned batter from the higher pan to the other to make it level.) • Bake 25–30 minutes. Mine were done at 28 minutes. • Cool 10 minutes before removing from pans. Remove parchment paper and cool completely. • Use the method in the description above to create a heartshape cake. I did shave a bit of the domes off the cakes but found they were much more even when they were flipped over, bottom sides up. They were also easier to frost because there were fewer crumbs. Voila! A beautiful heart cake ready for frosting.
RASPBERRY CREAM CHEESE FROSTING Cream cheese frosting is my all-time go-to favorite. It’s good on everything. INGREDIENTS: 1 brick (8 ounces) full fat cream cheese, room temperature 6 tablespoons unsalted butter, room temperature 2 cups powdered sugar 3/4 teaspoon vanilla 1/4 -1/2 cup raspberry preserves (Bonne Maman brand is good) INSTRUCTIONS • Using a stand mixer with paddle attachment, beat the butter on medium speed 1 minute. Add the cream cheese and beat on high speed until smooth and creamy, 3 minutes. • Add the powdered sugar and vanilla beat on low speed until blended, 30 seconds. Increase to high speed and beat 2 minutes. • Add the preserves and beat on medium speed just until incorporated. February 2022 / ISSUE 133 / Vero’s Voice 23

What Does it Mean to Get Saved?

hat does it mean to get saved? Getting saved means that you have made a decision to make Jesus the Lord of your life. That you believe He is the Son of God. Many people make getting saved or becoming a Christian a very complicated thing. The Bible teaches us that to get saved the requirements are as follows:
ROMANS 10:9 (NKJV) 9 that if you confess with your mouth the Lord Jesus and believe in your heart that God has raised Him from the dead, you will be saved. The requirements are to confess and believe. Jesus did everything on the cross so that all we have to do is believe that Jesus died and rose again and that He is the son of God and we will be saved. Many people believe there are a lot of requirements needed to be saved. An example would be that you need to first get baptized before you can be saved. If that were the case, then how is it possible that when Jesus was on the cross, He told the thief hanging on a cross next to him that “today you will be with me in paradise?” All he did was sincerely believe. The beautiful thing about being saved is the fact that once we believe, no matter where we are at in life, this is the moment our walk with God begins. Then we start following it up with the things the Bible instructs us to do, for Grace comes to us when we get saved. That is called justification. All the things that proceed after that are called sanctification. That is living out our salvation, practically every day, by being obedient to the Word of God. Isn’t the grace of God just one of the most Pastor Alex Pappas amazing gifts given to man?

In Mark 5:25-34 we read about a woman with a blood problem who heard about Jesus. She spent all her money on doctors, but she got worse. She said if she could touch His garment she will be healed. She reached out in faith and touched Jesus’ garment and she was healed after being diseased for twelve years! No matter what you are going through, you can reach out in faith and be healed. Trust Jesus. Jesus still heals. There is hope. Receive His healing touch. Jesus told her that her faith has made her whole. She went in peace, healed of her disease. Peace and healing comes from Jesus. Receive His touch today. God bless you and keep you,
