A STAGIONE ESTIVA DI BOLZANO si rivela già in queste pagine vivace, colorata, ricca di appuntamenti: il panorama musicale e di danza, le sagre e feste all’aperto, il semplice passeggio nel centro con la sosta nei numerosi caffè e locali, i musei e i castelli, la gastronomia e lo shopping sono gli ingredienti per un’esperienza di vacanza di almeno qualche giorno.

Di un aspetto di Bolzano sono particolarmente orgoglioso: ovunque l’ospite si muova, il contatto con la città, i suoi operatori e abitanti è garantito, consentendo un approccio con la realtà locale nella sua autenticità. Auguro una lettura emozionante e rivelatrice e un buon soggiorno nella nostra città.

Sie sind voll von Terminen, von musikalischen Lichtblicken. Sie glänzen mit Tanz-Veranstaltungen, Volksfesten und Kirchtagen. Ein Spaziergang durch die Stadt mit Einkehr in den zahlreichen Kaffeehäusern und Lokalen, in Museen und Burgen, die außergewöhnliche Gastronomie und die Gelegenheiten einzukaufen sind außerdem allein schon Grund für einen mehrtägigen Bozen-Urlaub.

Auf einen Aspekt der Bozner Gastfreundschaft bin ich ungemein stolz: Egal wohin es unsere Gäste treibt, der Kontakt zur Stadt, ihren Bewohnerinnen und Bewohnern, ist garantiert. Das erlaubt Nähe und echte Beziehung, und es ist Zeugnis der Bozner Authentizität.

UMMER BATHES THE CITY OF BOLZANO in a brilliant light and an array of colour, as you can see from this issue of bm magazine. The pages are packed with events, this season with a musical flavour, with dance, folk and village festivals all to be experienced. A stroll through the city, with an obligatory pause in one of the bars and cafes, a visit to our museums and castles, of course sampling our extraordinary gastronomy or taking the opportunity to shop. All are good enough reasons on their own for a holiday here in Bolzano.

I am immensely proud of one particular aspect of Bolzano hospitality: no matter where our guests go, contact with the city and its inhabitants is guaranteed. This allows for a closeness and the cultivation of a genuine relationship with us: and this is a testimony to Bolzano's authenticity.

Dank der Begegnungen mit Boznerinnen und Boznern unserer Zeit gelingt es ihm, nicht nur seine eigene Geschichte zu rekonstruieren, sondern auch die schönsten Ecken der Stadt kennen zu lernen: ein Stadtrundgang durch die Augen eines Kindes. Das Buch, geschrieben von Luigi dal Cin und illustriert von Simona Mulazzano, ist im Auftrag des Verkehrsamt Bozens im Athesia Verlag erschienen und möchte Kindern zwischen acht und elf Jahren die Kunstwerke und Geschichte unserer Stadt nahebringen.

Le api sono essenziali per l’impollinazione. Senza api non è pensabile coltivare frutta e verdura. Preservare il benessere delle api mellifere è quindi un compito importante per la salvaguardia del nostro pianeta. Cosa significa? In poche parole, ridurre l’inquinamento atmosferico, visto che le api sono sensibilissime, tanto che la loro presenza e lo stato di salute di un alveare indicano che l’ecosistema è ancora intatto.

Al momento, sul territorio di Bolzano, sono 51 gli apicoltori, di cui 13 donne, che allevano un totale di 460 colonie d’api. Negli ultimi 3 anni il numero degli apicoltori bolzanini è cresciuto del 30%. Non solo, apicoltori da fuori hanno scelto la periferia del capoluogo, per condurci ben 365 delle loro colonie nomadi.

TORNARE BAMBINI Al Museo della Scuola di Bolzano, sui banchi di scuola di una volta, quelli del periodo che va dalla fine del 1800 ai primi decenni del 1900. Il museo ricostruisce percorsi della memoria, in cui si intrecciano esperienze personali e storia collettiva, attraverso la vita scolastica di un tempo: materiali didattici, fotografie, pagelle, documenti, arredi, cartelloni murali. Auf der Bozner Talferpromenade und im Garten der Stiftung Südtiroler Sparkasse spielt sich vom 5. bis 8. Stessa cosa per le novità della protezione civile che comunica così in modo tempestivo eventuali emergenze (frane, ondate di calore e altre emergenze).

Oltre alla funzione notifiche PUSH, GEM2GO raggruppa tutte le principali funzionalità disponibili, utili per facilitare la vita di turisti e cittadini. In tema di mobilità, troviamo PARKING BZ, con l’indicazione sempre aggiornata dei parcheggi liberi nelle diverse strutture bolzanine, BUS BZ, per individuare esattamente dove si trova l’autobus che vogliamo prendere, e alcuni link esterni che per esempio indicano i punti di ricarica per le auto elettriche, spiegano come pagare i parcheggi blu, danno informazioni sul Carsharing.

IE APP GEM2GO MISCHT DIE KARTEN DER SMARTPHONE-INFORMATION NEU UND DAMIT AUCH WIE BOZEN ERLEBT WIRD: MOBILITÄT, VERANSTALTUNGEN, PARKPLÄTZE, BUSSE, APOTHEKEN, NOTFÄLLE. Die App hat der Südtiroler Gemeindenverband entwickeln lassen, die Stadtgemeinde Bozen hat sie den eigenen Zwecken angepasst. Gäste und BürgerInnen haben damit einen mobilen Zugriff auf verschiedene Dienste, Online-Inhalte und auf zeitnahe Informationen über die Mobilität zum Beispiel: welche Straßen sind gesperrt, wo gibt es Stau, wie ausweichen ... Direkt auf das Mobilgerät und zwar ganz unmittelbar gelangen aber auch Informationen zu potentiellen Gefahren, die der Zivilschutz bearbeitet.

Genauso gibt es in Echtzeit Infos über das Angebot der öffentlichen Verkehrsmittel sowie Wichtiges über die Standorte der Ladestationen für die E-Mobilität (sogar, ob sie besetzt oder frei sind). Auch längerfristige Straßensperren bei Veranstaltungen können über Push-Meldungen ohne Umwege auf die Mobilgeräte gesendet werden, wenn die App heruntergeladen und bei den Einstellungen BOZEN gewählt wurde.

Über die App GEM2GO erhalten Bozner Gäste wie BürgerInnen den mobilen Zugriff auf alle Inhalte, so auch auf Details, die den Alltag erleichtern, wie PARKING BZ mit einer stets aktuellen Angabe der Parkplätze in den verschiedenen Parkhäusern und Parkplätzen, BUS BZ, mit Infos zu den Bussen, Bushaltestellen und Zielen. entre in cima alle Dolomiti regna il silenzio, ai loro piedi, d’estate, domina la musica. Con il BOLZANO BOZEN FESTIVAL, le festeMUSICALI, il JAZZ FESTIVAL, il CONCORSO PIANISTICO BUSONI e il BOLZANO DANZA, la città s’inonda di note e si trasforma per tre mesi in un gigantesco palco internazionale.

Iniziamo in ordine cronologico: i primi ad accattivare il pubblico sono i CONCERTI A CASTEL RONCOLO DELLE KLANGFESTE-FESTEMUSICALI (20 giugno-12 luglio). Quest’anno festeggiano i 20 anni, un’occasione per fare una retrospettiva e riproporre in rassegna alcune delle più forti emozioni del passato, attingendo al patrimonio musicale di eccezionali gruppi come i Federspiel, un settetto per fiati su un percorso sonoro incantato, Gli Uwaga!, l’esplorativo quartetto di acoustic crossover dal balletto alla disco music, o gli Jütz con la loro musica folk alpina in un’interpretazione contemporanea. Alcune novità plasmeranno il Festival al maniero illustrato di Bolzano (vedi pag.

76). Fra di loro, il trio austriaco folksmilch, con uno stile spensierato oltre il limite delle convenzioni musicali, e il brunicense Hubert Dorigatti, con brani che raccontano il blues. www.klangfeste.org

Nasce nel 1982 il SÜDTIROL JAZZFESTIVAL ALTO ADIGE (28 giugno-7 luglio). Per i musicisti che vi partecipano, suonare non significa solo raggiungere ardite vette musicali, ma anche scalarle portandosi in spalla gli strumenti, per dare vita a concerti d’alta quota in contesti paesaggistici straordinari. Ma è tutto il festival che ama arrampicarsi su vie ancora inesplorate, procedendo a tastoni su terreni accidentati, con l’obiettivo dichiarato di scoprire nuovi paesaggi sonori. Questo promettono gli organizzatori. Scorrendo il cartellone del festival si capisce subito che il mainstream è in via d’estinzione. Qui dominano i contrasti e le simbiosi artistiche, le location che non ti aspetti e le sonorità inesplorate. Anche quest’estate, come da tradizione consolidata, il Südtirol Jazzfestival Alto Adige decollerà l’ultimo venerdì di giugno, per concludersi la prima domenica di luglio, dopo 10 giorni di grande musica.

Il 2019 punta sulla penisola iberica, Spagna e Portogallo nello specifico, una vivace scena che risente chiaramente delle influenze del jazz contemporaneo internazionale così come di flamenco, pop, rock, musica etnica nordafricana e musica popolare di Catalogna e Paesi Baschi. In Portogallo, nel 1948 esisteva, ed esiste tuttora, il leggendario “Hot Clube de Portugal” di Lisbona, in assoluto uno dei primi jazz club europei.

23 sono i concerti solo nella città di Bolzano, dal Waltherhaus, al Museion Passage, al Grifoncino, al Parkhotel Laurin, al centro culturale Trevi, a Piazza Erbe, al Museo di Scienze naturali, a Palais Toggenburg, al Sudwerk Ca’ de Bezzi, fino al NOI Techpark alla Fiera di Bolzano e al Parco Semirurali. Fra i luoghi nuovi protagonisti del festival, anche la nuova sede della Cantina Bolzano (vedi pag. 66), oltre al Hotel am Wolfsgrubener See al laghetto di Costalovara sull’altopiano del Renon e a Castel Hocheppan ad Appiano (vedi pag. 34).

Balletto e danza contemporanea, fantastiche coreografie e tanta voglia di partecipare contraddistinguono la manifestazione BOLZANO DANZA (11-27 luglio) che si articola in una sezione workshop e una sezione spettacoli. Numerose compagnie di danza italiane ed estere presentano i loro spettacoli al Teatro Comunale di Bolzano e in altri spazi sparsi in tutta la città. Il Festival di danza contemporanea con le sue 32 rappresentazioni riafferma la propria unicità con un’edizione ricca di sorprese che renderà lo spettatore un ‘viandante del tempo presente’ alla scoperta di intrecci con altre arti: la musica eseguita dal vivo in molti spettacoli in programma, il nouveau cirque e le arti visive. Danza anche nelle piazze, e in molti casi gratuita, oltre a una sezione dedicata alle famiglie che include la Notte a Teatro per i bambini (20/21 luglio).

Un festival con due anime: da 35 anni Bolzano in luglio si riempie di giovani che hanno l’opportunità di conoscere, studiare e approfondire i vari stili della danza (Step, Jazz, Lindy Hop, Contemporary, Latin Jazz, Afro Caribbean e Bollywood – quelli più particolari) e di vedere le opere dei maggiori coreografi internazionali sul palco. I dati parlano chiaro: il numero dei frequentatori dei corsi è passato dai 96 iscritti degli inizi, agli 800 iscritti di quest’anno suddivisi in 80 corsi, mentre sono più di 400 i coreografi provenienti da 5 continenti che si sono esibiti al festival.

Anche quest’anno Bolzano si riconferma capitale del pianismo mondiale: tra i più importanti concorsi pianistici a livello mondiale, e tra i più longevi, il CONCORSO PIANISTICO INTERNAZIONALE FERRUCCIO BUSONI, giunto alla sua 62˚ edizione (28 agosto-6 settembre), vedrà 27 pianisti, selezionati nel 2018 tra più di 400 candidati provenienti da tutto il globo, sfidarsi per l’ambito primo premio. Questi giovani talenti dovranno affrontare due prove solistiche, una prova cameristica, accompagnati dal Quartetto David Oistrakh, e la Finalissima, con l’Orchestra Haydn al Teatro Comunale. www.concorsobusoni.it

Ed ecco che, a fine luglio, arriviamo al BOLZANO FESTIVAL BOZEN (25 luglio-6 settembre), una rassegna musicale multiforme e multicolore, i cui protagonisti sono giovani talenti europei, ma anche grandi star della direzione d’orchestra e Jugendorchester, solisti d’eccezione.

La musica sinfonica è uno dei fiori all’occhiello del Bolzano Festival Bozen. Il repertorio eseguito dalle grandi orchestre comprende le opere dei più noti compositori di tutti i tempi. Ospiti del festival sono due tra le orchestre giovanili più celebri al mondo per livello e per forza espressiva, la Gustav Mahler, diretta da Herbert Blomstedt, e la European Union Youth Orchestra, diretta da Vasily Petrenko e Stéphane Denève. La rassegna si apre con il concerto sinfonico dell’Orchestra dell’Accademia Gustav Mahler, diretta da Marc Minkowski e formata dagli allievi dei corsi di alto perfezionamento estivo che si contraddistingue da anni per la carica emotiva delle sue interpretazioni.

Per la prima volta quest’anno sarà ospite a Bolzano anche la National Youth Orchestra of China, diretta da Ludovic Morlot. Inoltre, l’Orchestra Haydn si esibirà in un concerto al Parco delle Semirurali, sotto il cielo stellato, di fronte alle rovine di Santa Maria in Augia.

All’interno del Bolzano Festival Bozen, un ampio spazio è dedicato alla musica eseguita con strumenti originali. I capolavori del Barocco e del Rinascimento rivivono nella rassegna Antiqua, grazie agli ensemble dediti allo studio di strumenti storici, una vera chicca per gli amanti della musica antica.

Attiva a Bolzano dal 1999, l’Accademia Gustav Mahler organizza ogni anno corsi di alta formazione per giovani musicisti europei. I ragazzi sono selezionati tra i migliori allievi delle più importanti scuole europee che

per due settimane frequentano i corsi dell’accademia seguiti da docenti di fama internazionale, tra cui, in particolare, i membri della Mahler Chamber Orchestra. Quest’anno, i corsi saranno dedicati al compositore Franz Schubert e alle sue opere sinfoniche e cameristiche.

I concerti del Bolzano Festival Bozen non si svolgono solo al coperto, ma anche nelle piazze di Bolzano e in alcuni suggestivi luoghi della periferia bolzanina.

Was nicht aufhört, ist das Staunen über die Vielfalt und die Grenzüberschreitungen des musikalischen Sommers in der Stadt.

Während am Berggipfel in den Dolomiten Stille herrscht, ist zu ihren Füßen in Tallagen der Klang ausgebrochen.

Die Musik bewegt die Bozner Luft in der Sommerhitze, alljährlich mit einer Reihe von großen Formaten. In der Stadt braust’s: Drei Monate lang verwandelt sie sich in eine riesige internationale Bühne.

KLANGFESTE (20.6.–12.7.)

Der Bogen wird im 20-Jahr-Jubiläum weit gespannt, von der Klassik zum Jazz, von der Volksmusik der Gegenwart zur Weltmusik, von Blues-Gitarrenklängen zu zarten Zithermelodien, vom A-Cappella-Gesang zu Trompetentönen: Federspiel, Uwaga!, Jütz, die Gruppe folksmilch, die Liguriani, der Brunecker Hubert Dorigatti. Das stimmungsvolle Ambiente von Schloss Runkelstein (siehe S. 30) tut sein Übriges dazu, um originelle Konzertabende entstehen zu lassen. www.klangfeste.org 14

SÜDTIROL JAZZFESTIVAL (28.6.–7.7.)

Musik, die neue Wege beschreitet. MusikerInnen, die sich abseits vom Mainstream bewegen und Quirliges zustande bringen. Mit seinem Länderschwerpunkt besucht das Festival heuer die iberische Halbinsel. Apropos Karriere-Aus als Musiker. War das eine bewusste Entscheidung?

Ja. Ich habe entdeckt, dass mir das Monomanische weniger liegt als die Vielfalt und der Perspektivenwechsel. Aber der Zeitpunkt war ein Zufall. Ich wurde 2001 gefragt, die Schwazer Klangspuren zu leiten und habe zugesagt. Dann habe ich die Faszination des Ermöglichen für mich entdeckt und die Arbeit ist wie eine Lawine losgetreten. In Südtirol folgte Transart und vieles mehr. Ich war zeitlich gar nicht mehr frei, meine pianistische Laufbahn weiter zu verfolgen.

an hat dich als Virtuose des Zeitgenössischen“ ” bezeichnet, als ”Erschließer neuer Räume für die Produktion und Rezeption zeitgenössischer Kultur“. Wie betrachtest du dich?

Mir gefällt der Begriff ”Ermöglicher“. Ich sehe mich als unerschrockenen Ermöglicher und Vermittler. Das hat mit meinen Ursprüngen als Pianist zu tun, da ist man Interpret von Werken anderer und denkt darüber nach, wie man dem Meister gerecht wird, wie man es aber auch schafft, dem Publikum die Musik er-leb-bar zu machen. Dieser Ansatz hat sich durchgezogen, er macht meine kulturelle Seele aus. Ich habe das Ende meiner eigenen Konzerttätigkeit nicht als Bruch erlebt, sondern als Fokussieren auf das Vermitteln und Ermöglichen.

Was ist das Faszinierende einer künstlerischen Leitung?

Dass du es mit brillanten Köpfen zu tun hast, und du die Konstellation bestimmen kannst.

Der kreative Vorgang dabei ist berauschend.

Es gibt das Interesse für das Unverwechselbare und das zieht sich in allen Festivals durch, auch beim Busoni-Klavierwettbewerb.

Was bedeutet dir der Busoni?

Unheimlich viel, weil dieser Klavierwettbewerb auch eng mit meiner Kindheit verbunden ist.

Mit 13 Jahren habe ich ihn zum ersten Mal besucht, und ich war damals schon sprachlos,

dass in meiner eigenen Stadt so etwas ausgetragen wird, das so hervorragende Künstler hervorgebracht hat. Die Geschichte des Busoni-Wettbewerbs ist einzigartig, 1949 gegründet, sofort hochkarätig besetzt, mit dem deklarierten Ziel Musikgeschichte zu schreiben.

Heute ist der Musikbetrieb wieder einem radikalen Wandel unterworfen: Internet und Streaming, die visionäre und wirtschaftlich starke chinesische Pianistenschule … Wir müssen groß denken, um mitzuhalten.

2001 gründet er das Festival zeitgenössischer Kultur Transart in Südtirol, das jährlich im September stattfindet (http://transart.it).

Seit 2007 arbeitet er als künstlerischer Leiter des Internationalen Klavierwettbewerbs Ferruccio Busoni (siehe S.15).

Der Weltenbummler Kainrath hat auch ein Faible für zeitgenössische Kunst, 2008 hat er die Manifesta 7 in der Region koordiniert, war Berater und später Vizedirektor der International Manifesta Foundation in Amsterdam.

Bozen vor der kulturellen Linse. Wie erlebst du die Stadt?

Hier passiert außerordentlich viel. Das Zusammenspiel zwischen Vereinigte Bühnen Bozen, Teatro Stabile di Bolzano, Südtiroler Kulturinstitut, die Konzertszene, das Museion, die ar/ge kunst, der Filmclub – das Angebot ist grandios. Es ist eine sehr lebendige Schmelztiegel-Stadt.

Ab 2020 ist er Intendant des Klangforums Wien.

Die Kainrath-Musiktradition geht weiter: Sein Sohn Julian (Jahrgang 2005) bereitet sich derzeit auf eine Karriere als Geiger vor.

Als Journalist bist du ein Kommunikator. In deinem Fall im Vermittlungsdienst der zeitgenössischen Kultur …

Heute habe ich selten Zeit, selbst an der Front zu filmen, ich koordiniere und motiviere. Und ich sage gern zu meinen MitarbeiterInnen: Stell dir vor, du stehst vor einem 10.000 Personen umfassenden Stadion und hast nur fünf Minuten, etwas zu erzählen. Sogenannte schwierige oder elitäre Themen zu vermitteln ist umso spannender.

Tätigkeit als Konzertpianist weltweit bis 2001, im selben Jahr übernimmt er die künstlerische Leitung des Festivals für Neue Musik Klangspuren Schwaz in Nordtirol, das er 12 Jahre lang leitet; seit 2004 koordiniert er das Bolzano Festival Bozen (siehe S.15).

Daneben unterrichtet er zwei Jahrzehnte lang am Bozner Musikkonservatorium, das er 2015 verlässt.

Seit den 1980er Jahren arbeitet er auch als Publizist für RAI Südtirol, im Radio und seit 1996 im Fernsehen.

Für den öffentlich-rechtlichen Sender hat er das TV-Kulturmagazin „Kulturzeit“ entwickelt, später auch das Minderheitenmagazin „Minet“.

Jahrgang 1964 wächst in Bozen auf und wird hier und in Wien zum Konzertpianisten ausgebildet. Studiert eine Zeitlang Theaterwissenschaften in Bologna und macht einen Master im Konzertfach Klavier am Tschaikovsky Konservatorium in Moskau.

Hast du Ziele als Ermöglicher“? ” Ja, gegenwärtige Musik, aber überhaupt Kultur einem möglichst breiten Publikum zu erschließen, den Kulturbegriff auszudehnen, spartenübergreifend zu denken und zu planen. Ich finde, Kultur braucht nicht die Eintrittskarte Verstehen“. Das ist ein großes ” Missverständnis. Kultur hat eine andere Dimension, die des Erlebens. Man muss kein Spezialist sein, um sich zeitgenössischer Kultur auszusetzen. Neugierde braucht man und die Lust, das Unerhörte zu suchen.

Es ist nicht wesentlich zu wissen, woher die Vierteltontechnik kommt oder das Experimentelle im Tanz.

Es kann helfen einzuordnen oder zu beurteilen, o.k.

Aber fürs Erlebnis spielt es keine Rolle. Aus dem Nischendenken von Kultur möchte ich raus.

CULTURALI RADIO E TV: DIRETTORE ARTISTICO, GIORNALISTA E MANAGER CULTURALE. RITRATTO DI UN TALENTO POLIEDRICO. È stato definito come un “virtuoso della contemporaneità”. Come si vede Lei? Mi piace pensare di essere un instancabile “facilitatore”, il mio ruolo è quello di rendere possibile, di creare collegamenti. Ha a che fare con il mio passato di pianista, quando interpretavo brani scritti da altri, e mi chiedevo come onorare l’opera del maestro e allo stesso tempo renderla fruibile per il pubblico.

Cosa l’affascina della direzione artistica?

Mi piace avere a che fare con teste brillanti e poter decidere la costellazione. Il processo creativo è esaltante.

Il puntare all’originalità e all’eccellenza, e questo in tutti i festival, anche nel concorso pianistico Busoni.

Cosa significa per Lei il Busoni?

Molto, perché lo associo strettamente alla mia infanzia.

Avevo 13 anni quando vi ho assistito per la prima volta e già allora rimasi a bocca aperta, sorpreso che proprio nella mia città si esibissero artisti di così alto livello. La storia del Busoni è unica: nato nel 1949, fin da subito fu chiaro che sarebbe entrato nella storia della musica.

I Suoi prossimi obiettivi come “facilitatore”?

Portare la musica contemporanea, e in generale la cultura, al grande pubblico. Trovo che per fruire della cultura non sia necessario “capire”.

Questo è un grande equivoco. La cultura ha un’altra dimensione, quella dell’esperienza. Non serve essere degli esperti per confrontarsi con la cultura contemporanea. Il mio obiettivo è farla uscire da questa nicchia.

Come giudica Bolzano, dal punto di vista culturale? È una città in cui succede moltissimo. L’interazione tra le Vereinigte Bühnen Bozen, il Teatro Stabile di Bolzano, il Südtiroler Kulturinstitut, l’offerta di concerti, il Museion, ar/ge Kunst, il Filmclub è grandiosa. È un crogiolo culturale molto vivace.

PETER PAUL KAINRATH Classe 1964, si forma come pianista a Bolzano e a Vienna. Studia scienze dello spettacolo a Bologna e consegue un master in pianoforte al Conservatorio Tschaikovsky di Mosca. Pianista a livello internazionale fino al 2001, anno in cui assume la direzione artistica (che manterrà per 12 anni) del festival Klangspuren Schwaz, in Tirolo del Nord. Dal 2004 coordina il Bolzano Festival Bozen e fino al 2015 insegna al Conservatorio di Bolzano.

Dagli anni Ottanta collabora anche come pubblicista per la RAI Alto Adige. Nel 2001 fonda il festival della cultura contemporanea Transart che ha luogo ogni anno in settembre (http://transart.it).

Dal 2007 è direttore artistico del Concorso Pianistico Internazione Ferruccio Busoni (vedi pag. 13).

Si occupa anche di arte contemporanea, nel 2007 come coordinatore in regione di Manifesta 7, e come consulente e vicedirettore dell’International Manifesta Foundation di Amsterdam. Dal 2020 sarà direttore del Klangforum Wien.

Yes, I discovered my attraction to cultural variety with Schwazer Klangspuren in 2001. Transart and much more followed, meaning I couldn’t continue with the piano.

What is so fascinating about artistic direction?

Dealing with brilliant minds and their creations.

As a journalist you communicate, but as a mediator?

I coordinate and motivate. I push my journalists to communicate topics seen as elitist. It’s exciting!

How do you see Bolzano culturally?

LE STELLE CONSIGLIANO L’ESTATE NEL PIATTO Cosa bolle in pentola, in estate? Quali ingredienti scegliere e come fare la spesa per i piatti estivi? Occasione più che ghiotta per chiacchierare con Claudio Melis, chef stellato a Bolzano.

Ce lo consiglia Claudio Melis, unica stella Michelin a Bolzano, sardo di nascita, bolzanino per scelta. Il suo bagaglio di esperienza professionale è impressionante. La sua cucina, dai sapori decisi, si ispira alla Sardegna e all'Alto Adige, ma anche alle tante esperienze di viaggio che lo chef riporta nelle sue creazioni. Si definisce “cuoco per caso“, visto che nessuno in famiglia gli ha tramandato la passione. Cresciuto a Gadoni, un paesino in provincia di Nuoro, dove è nato 47 anni fa, Claudio ha frequentato l’istituto alberghiero di Sassari, specializzandosi come cuoco. Ha scelto questo tipo di formazione più o meno lanciando la monetina. Il parroco del paesino gli aveva passato i contatti della scuola e lui decise così, senza pen-

“Quando sono arrivato a Lione, in Francia, a poco più di 20 anni, ero lo straniero di turno, ma dopo soli tre mesi sono passato al “fourneu”, mentre i colleghi francesi ci hanno messo degli anni. Sotto l’ala protettrice dello chef, ho fiutato che c’era di più a cui aspirare.” Poi, a 24 anni, si trasferisce a Parma con il ruolo di chef, mantiene la stella al “Parizzi”, infine prende in gestione uno chalet a Madonna di Campiglio, dove nasce il suo amore per le Dolomiti. Quindi passa al “Hermitage” e poi a “La Siriola” a San Cassiano, uno dei ristoranti di proprietà della famiglia Wieser. È lì che conosce la sua futura moglie, Monica Wieser. Con lei, e con il figlio appena nato, nel 2010 parte alla volta dell’Arabia Saudita. Insieme gestiranno un ristorante all’interno di un enorme complesso alberghiero. Dopo soli tre mesi il ristorante italiano passa da 30 coperti al giorno, a 90 a pranzo e 180 a cena. I due scaleranno le gerarchie in un lampo.

L’ultima tappa, prima di rientrare in Alto Adige, è Dubai, dove Claudio e Monica prenderanno in mano il settore italiano di una catena di ristoranti. Quindi la svolta: i due approdano a Bolzano, per aiutare il fratello di Monica nella gestione del ristorante “Zur Kaiserkron” e dare vita a nuovi progetti imprenditoriali nella gastronomia locale.

Dopo poco tempo lancia “In viaggio”, l’esclusivo tempio gastronomico stellato.

Non vuol dire passare più tempo in cucina, ma mettere maggiore attenzione nella ricerca di alimenti freschi, di contadini o fornitori della zona, di mercati o negozi biologici, di ricette creative che tengano conto dell’equilibrio nutrizionale. L’estate è comunque la stagione che invita a sbizzarrirsi al massimo, vista la vasta reperibilità di verdura e frutta fresca, di erbe aromatiche e fiori commestibili. Tutto è possibile nella bella stagione, da un’insalatona, alla zuppa, a due spaghetti saltati in padella, arricchiti con prodotti freschi di campo, bosco, malga o dal maso.

Mostri sacri della cucina che l’hanno forgiato con importanti lezioni di lavoro e di vita, preparandolo anche al peggio della vita da cuoco. Come dormire sullo zerbino, per aver fatto i croissant troppo piccoli, lavorare 18 ore al giorno, dedicarsi anima e corpo ai fornelli…

he sia chiaro, tutti ne parlano, tutti ormai lo sanno: freschezza, stagionalità e provenienza dei prodotti alimentari sono fondamentali non solo per i sapori, ma anche per salute, ambiente e quindi benessere di noi tutti. Ma cosa cambia in cucina, se ne teniamo davvero conto? Soprattutto il modo di fare i nostri acquisti (più spesso e in quantità minore, maggiore consapevolezza), la scelta di dove fare la spesa, l’occhio ai chilometri di trasporto dei singoli prodotti, le abitudini alimentari stesse e anche la voglia di mettersi in gioco, di sperimentare davanti ai fornelli.

Un’esperienza sensoriale avvolge l’ospite, varcarne la soglia è il punto di partenza. Solo 5 tavoli, 8-10 coperti, un’atmosfera accogliente ed elegante, quasi intima - un ristorante sui generis, su appuntamento. La presenza in sala di Claudio, che racconta dei suoi piatti, fa parte del viaggio.

“Voglio stimolare il palato con gusti decisi e vini particolari, perché il palato stimola il cervello, e il cervello il cuore.”

Questa stessa convinzione ha ispirato anche altri progetti che portano il marchio Esemdemì di Claudio, Monica e Robert. Come il ristorante inaugurato da poco “Tree Brasserie”, al piano terra dell’antico Parkhotel Mondschein, immerso in un parco in pieno centro città. È il primo ristorante a Bolzano con uno sharing concept, dove il cibo viene servito a centro tavola, contestualizzato e condiviso tra i commensali. Pochi sono gli esempi in Italia di quest’antica tradizione improntata sulla cultura della condivisione a tavola. Altra ventata di novità: lanciare il brunch domenicale, aprire il primo tapas bar a Bolzano. La voglia di mettersi in gioco di questo sardo-alto atesino è grande. La sua carica

energetica fluisce nei suoi piatti, stimolati anche dalla suggestione delle nostre zone che attirano ospiti da lontano. Claudio osserva divertito come importanti affari internazionali vengono conclusi mangiando nei suoi locali. “La città cresce. È bello quando capisci che partecipiamo alla crescita, mettendo noi stessi in quello che creiamo”.

Claudio, in estate, consiglia i funghi freschi, porcini in questo caso, per una serata con gli amici o in famiglia.

BRODO DI MANZO, FUNGHI, ERBA LEPRE, LATTE DI CAPRA Ricetta di Claudio Melis, In viaggio, 2019

per il brodo: mezza gallina 600 gr biancostato manzo 1 carota 1 costa sedano 1 cipolla 1/2 cipolla steccata con chiodi di garofano e tostata per la chiarificazione: 500 gr polpa manzo 300 gr albumi pastorizzati 40 gr concentrato pomodoro 1 carota 1 costa di sedano 1 cipolla 1/2 porro 100 gr funghi porcini secchi per la farcitura dei ravioli: 500 gr latte capra 10 gr erba lepre (nepeta mussinii) 5 gr agar-agar polvere

Preparazione Per il brodo mettere tutti gli ingredienti lavati e pelati in una pentola capiente e ricoprirli con abbondante acqua fredda.

Portare ad ebollizione e cuocere per 2 ore a leggero bollore.

Filtrare e far riposare una notte. Il giorno dopo unire al brodo gli ingredienti per la chiarificazione tutti tritati finemente. Portare ad ebollizione e cuocere lentamente per 15 minuti. Filtrare il brodo che dovrà risultare chiaro e privo di qualsiasi impurità.

Per la farcitura dei ravioli far bollire il latte di capra e legarlo con l’agar-agar. Insaporire con l’erba lepre, filtrare e far rapprendere in frigorifero. Frullare e insaporire con sale e pepe.

Per la pasta fresca impastare tutti gli ingredienti come per una pasta tradizionale. Tirare delle sfoglie sottili e farcirle con il latte di capra. Ricavare dei bottoni con l’apposito tagliapasta. Tagliare i funghi porcini freschi in sottili lamelle e farli saltare in padella con olio, aglio in camicia e poco burro.

Con l’aiuto di un piccolo cerchio di metallo, adagiare i porcini al centro delle fondine. Cuocere i bottoni in acqua salata per 2 minuti e scolarli; adagiarli in modo armonioso intorno ai funghi. Guarnire con le cimette di erba lepre. Versare il brodo aromatizzato ai funghi direttamente davanti ai commensali. © 17

Was in aller Munde ist, liefert der Sommer in einer bunten Vielfalt, die unserer Gesundheit, unserem Geschmackserlebnis und der Umwelt guttut. Wohlbefinden durch die Küche also, wenn wir bewusst einkaufen und unserer Kreativität hinterm Herd freien Lauf lassen. Falsch zu glauben, dass wir deshalb mehr Zeit in der Küche verbringen. Richtig, dass wir lernen müssen, besser zu planen, was auf den Teller kommt und wo wir einkaufen. Die Sommerzeit bietet sich an, vermehrt aus dem Gemüse-, Obst- und Kräutergarten zu schöpfen und auch die Alm und den Wald nicht außer Acht zu lassen.

Genau das macht Claudio Melis mit Vorliebe. Der Meister setzt auf starke Geschmacksnuancen, die an seine alte Heimat erinnern. Geboren ist er 1972 im Dörfchen Gadoni in der sardischen Provinz. Erst vor drei Jahren hat es Claudio nach Bozen verschlagen, wo er gemeinsam mit seiner Frau Monica Wieser im stadtbekannten Restaurant Zur Kaiserkron“ ” 26

Zum Kochen kam er aus reinem Zufall. Über ” den Dorfpfarrer habe ich erfahren, dass die Hotelfachschule in Sassari Schüler suchte. Ich habe mich kurzentschlossen für den Kochkurs entschieden. Doch Feuer gefangen habe ich erst über einen französischen Patisseur an der Costa Smeralda, der mir die Augen für die Haute Cuisine geöffnet hat.

Dann folgten andere Lehrmeister, in Lyon, in Mailand, in Parma, in Madonna di Campiglio, wo meine Liebe für die Dolomiten entzündet wurde. Von dort nach St. Kassian zu La ” Siriola“, wo ich über die Eigentümerfamilie Wieser meine Frau Monica kennengelernt habe. Als junge Familie sind wir 2010 nach Saudi Arabien gezogen, wo wir ganze Hotelketten im Gastronomiebereich geführt haben, schließlich nach Dubai.“ In Bozen hat Claudio Melis nach nur einem Jahr Chef-Erfahrung im Zur Kaiserkron“ ” seinen gastronomischen Geistesblitz In ” viaggio“ verwirklicht. After only a year as Chef at Zur Kaiserkron Claudio was inspired to create In viaggio. The family business Esemdemì is busy developing other gastronomic projects, such as the recently opened Tree Brasserie, where the food is served in the middle of the table with an emphasis on sharing, and Toma: Bolzano’s first tapas bar, opening in autumn. This is precisely Chef Claudio Melis’s approach. Born in Sardinia, he came to Bolzano three years ago with his wife Monica Wieser, to join her brother Robert at the well-established Zur Kaiserkron restaurant. Here, Melis created the gastronomic temple In viaggio, earning him Bolzano’s first Michelin star in 51 years.

Claudio became a chef by pure chance, learning from his village priest that the hotel management school in Sassari was looking for pupils: “I decided spontaneously to take the cooking course, but my real passion was aroused by a French patisseur on the Costa Smeralda, who opened my eyes to haute cuisine. Then others taught me more, in Lyon, Milan, Parma, and Madonna di Campiglio, where my love for the Dolomites was ignited. From there to La Siriola at San. Cassiano, where I met my wife Monica.

We moved to Saudi Arabia in 2010, where we managed entire hotel chains, finally to Dubai."

oman(t)ische Ansitze, verwunschene Schlossruinen aus der Gotik, massige Burgkolosse. Sie gehören zu den Reichtümern Südtirols. Rechnet man Ruinen dazu, gibt es an die 400 Burgen. Ein Großteil davon kann besichtigt werden.

Gar einige verstecken sich in der Landschaft rund um Bozen, andere betten sich ins Stadtgefüge, weitere thronen über dem Talkessel oder stehen auf schwer erreichbaren, meist schwindelerregenden Höhen. Sie gehören zu den Attraktionen der Stadt und liefern zahlreiche Spazier- oder Wandergelegenheiten, besonders für Familien mit Kindern. Wer sich vom Faszinosum Burg bei seinen Erkundungen der Gegend leiten lassen will, dem liefern wir hier gern Impulse für Tages- oder Halbtagesausflüge.

Auf Entdeckungstour in der Stadt stoßen wir auf zwei geschichtsträchtige Schlösser, die beinahe ganzjährig geöffnet sind. Sie gehören der Stadt Bozen: Schloss Maretsch, mitten in der Stadt, und Schloss Runkelstein, etwas nördlicher, erreichbar ab dem Walterplatz über einen 40-minütigen Spaziergang entlang der Wassermauer-Promenade am Talferufer oder mit dem Linienbus Nr. 12.

Talferpromenade auf der einen Seite, Weinreben und Rosengartenblick auf der anderen. Das Schloss inmitten der Bozner Altstadt gehört zu ihren schmucksten Sehenswürdigkeiten, mit einem Laubengang, der seltene Renaissance-Fresken offenbart und mit zahlreichen Sälen, die für Kongresszwecke renoviert wurden. Heute prestigevolle Kulisse für Veranstaltungen, Hochzeiten und modernes Tagungszentrum im Stadtgrün mit angrenzendem Parkplatz, lieferte das Schloss seinen Bewohnern ab der ersten Hälfte des 13. Jahrhunderts vor allem eins, Zuflucht. Die Herren von Maretsch standen den Landesfürsten von Tirol nahe. Und dies in einer Zeit, in der diese Gegend ein Zankapfel war, um den sich der Landesfürst mit dem Bischof von Trient stritt. Im 15. Jahrhundert wurde das Schloss im Renaissance-Stil erweitert. Unter den zahlreichen Kuriositäten an den Wänden von Schloss Maretsch ist auch ein magisches Quadrat mit der Inschrift Sa” tor Arepo“, das an verschiedensten Orten der Welt zu unterschiedlichen Zeiten auftaucht. Das älteste bisher gefundene Beispiel wurde im antiken Pompei gefunden. Bis heute hat man keine Gewissheit über seine Bedeutung: Gebet, Segen oder Fluch?

SCHLOSS SIGMUNDSKRON MIT DEM MMMUSEUM

SCHLOSS RUNKELSTEIN, DIE BILDERBURG Der besterhaltene profane Freskenzyklus im Alpenraum und noch dazu der größte und älteste in Europa. Dafür ist die Burg auf dem Aussichtsfelsen am Eingang des Sarntals bekannt. Erbaut wurde sie von den Brüdern von Wangen, einem Bozner Adelsgeschlecht. 1237 wurde der Grundstein gelegt. Erst Ende des 14. Jahrhunderts ließen weitere Brüder, diesmal aus dem Geschlecht der Vintler, die Burg zu einer gotischen Residenz umgestalten und mit Szenen aus dem Leben am Hofe und mit Geschichten aus der Literatur bemalen, u.a. mit der Liebesgeschichte von Tristan und Isolde und mit Episoden aus dem Leben von Ritter Garel, einem Mitglied von König Artus Tafelrunde. Das macht aus ihr ein Bilderbuch der mittelalterlichen Mode, was viele VIPs im Lauf der Jahrhunderte aus unterschiedlichen Gründen schätzten: So war Kaiser Maximilian I entzückt über die Artussage, die dort in Fresken gebannt war. Sie inspirierte ihn zur Planung seines eigenen Grabmals. Aber auch der Dichter und Regisseur Pier Paolo Pasolini setzte auf die Burg, diesmal als Filmschauplatz und drehte hier einige Szenen seines Films Il Decameron“ (1971). ” Die Burgschänke mit historischem Keller und ausladender Terrasse verführt heute noch zum Verweilen.

Wieder ist es ein Felsvorsprung, diesmal im Süden der Stadt, auf dem das Schloss steht. Reinhold Messner hat sich hier ein Denkmal gesetzt und 2006 das Messner Mountain Museum Firmian eröffnet. Es ist das Herzstück seines 6-Standorte-Bergmuseums geworden, mit dem verzauberten Berg“ als Leitmotiv: Hauptwerke aus sei” ner Extrembergsteiger-Sammlung. Sie thematisieren die Auseinandersetzung Mensch-Berg. Dabei nutzt das Museum auch die Wege, Treppen und Türme der weitläufigen Schlossanlage, die auch für die Landesgeschichte eine große Bedeutung hat: Hier hat die Symbolfigur der Autonomiegeschichte Südtirols, der damalige Obmann der Südtiroler Volkspartei Silvius Magnago, 1957 das Los von Trient“ vor 35.000 Menschen gefordert - ein ” Meilenstein der Zerreißprobe mit dem Staat Italien.

DIE HASELBURG ist heute ein Restaurant mit Skybar und ein erhabener Standort für Kulturveranstaltungen und Feste. Fresken aus der Zeit um 1500 in den historischen Mauern und der Blick über das Tal machen sie zu einem beliebten Ausflugsziel. Hoch über dem Stadtviertel Haslach gelegen, auf einem Porphyrfelsen, ist sie entweder über eine einstündige Wanderung mit großartigen Ausblicken auf Bozen und das Etschtal oder über eine enge, aber bequeme Teerstraße erreichbar.

DIE BURGRUINE RAFENSTEIN

Kinder, die mindestens 3 der 6 Burgen besuchen und sich ihre Castelronda-Karte abstempeln lassen, erhalten einen kleinen Preis.

Sie können einzeln erkundet werden oder über eine längere Burgenwanderung im Burgendreieck Eppan.

Hocheppan besticht durch den fünfeckigen Bergfried aus dem 12. Jahrhundert und durch die Burgkapelle mit ihrem romanischen Freskenzyklus, augenzwinkernd Sixtinische Kapelle der Alpen genannt. In der Burgschänke liegt der Fokus auf Knödel, passend zu den Wandmalereien der Kapelle, die erstmals eine Knödelesserin darstellen. Auch Schloss Boymont (bei Missian) wartet in seinen stattlichen Gemäuern aus der Romanik mit einer Burgschänke auf. Faszination Mittelalter Im Zeichen der spätmittelalterlichen Vergangenheit werden neben Auftritten von Mittelaltervereinen aus dem deutschund dem italienischsprachigen Raum auch Impulsreferate zu Themenschwerpunkten aus dem mittelalterlichen Alltag und ein dichtes Kinderprogramm geboten, das die Kleinen ins Mittelalter zurückversetzt. CASTELRONDA

befindet sich am westlichen Talhang des Sarntals über der Talferschlucht, unterhalb von Jenesien. Sie wurde im 13. Jahrhundert errichtet und bald darauf in den Kriegen zwischen Graf Meinhard II von Tirol und Bischof Heinrich von Trient bis auf die Grundmauern zerstört.

Im 14. Jahrhundert wurde sie wiederaufgebaut, um in den Napoleonischen Kriegen erneut zerstört zu werden. Eine erste Tiroler Landesbeschreibung entstand zu Beginn des 17. Jahrhunderts durch einen Nachkommen der Wolkenstein Familie in diesen Mauern. Die Ruine ist mit Voranmeldung und Führung zugänglich (Wanderung ab dem Waltherplatz dauert 1’15 h).

CASTEL RONCOLO, IL MANIERO ILLUSTRATO È famoso soprattutto per il suo ciclo di affreschi profani, il più esteso, più antico e meglio conservato d’Europa. Situato all’imbocco della Val Sarentino, è raggiungibile a piedi, con 32

una passeggiata di 40 minuti dal centro di Bolzano, o col bus di linea n. 14. Fu costruito dalla famiglia nobile Von Wangen, a partire dal 1237, e ampliato in una residenza gotica da un’altra nobile famiglia, i Vintler, alla fine del 14esimo secolo. Pier Paolo Pasolini girò nel maniero alcune scene del suo film “Il Decameron“ (1971).

CASTEL FIRMIANO CON IL MMMUSEUM Da uno sperone di roccia che si affaccia sull’Oltradige, a sud di Bolzano, troneggia Castel Firmiano. Reinhold Messner vi ha allestito qui nel 2006 il suo Messner Mountain Museum Firmian, cuore dei suoi sei musei dedicati alla montagna. Il percorso espositivo tematizza il rapporto tra l’uomo e la montagna, in diverse epoche e culture, con molti pezzi e impressioni raccolte da Messner durante le sue imprese intorno al mondo.

Uno dei tratti principali della manifestazione è la combinazione tra l’aspetto amatoriale e quello agonistico. Ogni tappa prevede una tratta cronometrata in montagna che conferisce al Giro la sua componente agonistica. La maggior parte dell’itinerario, però, è percorso in gruppo e a una velocità controllata. Inoltre, chi non vuole partecipare all‘intera settimana, può iscriversi anche per solo tre giorni, o a singole tappe. Cosa contraddistingue il Giro delle Dolomiti?

L’atmosfera familiare e al contempo internazionale, con centinaia di ciclisti di oltre 30 nazioni diverse e di tutti i continenti che vi partecipano con grande entusiasmo. Poi, la possibilità di scoprire l’Alto Adige e, soprattutto la città di Bolzano, in bicicletta, scoprendo scorci sempre nuovi, ma anche incontrando nuovi compagni di tappa, tradizioni, specialità e prodotti locali.

Il tour ciclistico toccherà l'Altopiano del Renon, Passo delle Erbe, i passi Fedaia e Valparola, Cortina, l'Alpe di Siusi e i frutteti attorno ai paesi vitivinicoli di Magrè, Cortaccia, Cortina sulla Strada del Vino e Salorno. Si attraverseranno vigneti verdeggianti, si costeggieranno i meleti lungo la strada del vino e si oltrepasseranno suggestive pareti rocciose, arrampicandosi sui passi alpini e dolomitici.

Le novità della 43˚ edizione: il numero dei partecipanti sarà limitato a 600 al giorno, la modalità di iscrizione sarà semplificata e ci saranno toilette femminili mobili lungo l'itinerario. La base logistica del Giro delle Dolomiti 2019 è la Fiera di Bolzano, da dove partono le tappe. Solo la partenza dell’ultima tappa, la gara cronometro a squadre, sarà allestita in Piazza Walther, in pieno centro storico di Bolzano. Buon Giro!

a domenica 21 luglio a sabato 27 luglio 2019, una settimana di full immersion in Alto Adige e, soprattutto, a Bolzano: nessun altro evento sportivo sudtirolese offre ai partecipanti una panoramica così completa della provincia più settentrionale d'Italia. Il fascino cittadino che sprigiona Bolzano è la costante che caratterizza l’intera settimana in bici. Infatti, partenza e arrivo delle sei tappe sono sempre nel capoluogo altoatesino.

“Sia gli abitanti dei luoghi attraversati, sia i numerosi volontari della nostra organizzazione che si sforzano di esaudire ogni desiderio dei partecipanti, sono i veri pilastri dell’evento” ribadisce il direttore del comitato organizzatore, Simon Kofler. “Non c'è da stupirsi, quindi, che la maggior parte dei ciclisti ritorni ogni anno, spesso in compagnia di tutta la famiglia.”

Mit seiner 43-jährigen Geschichte gehört der Giro zu den traditionsreichsten Sportveranstaltungen im Land. Sein Alleinstellungsmerkmal? Der alljährliche Amateur-Straßenrad-Termin besticht mit kontrolliertem Tempofahren, aber auch mit freier Fahrt, lockt ein buntes Hobbyradler-Publikum aus über 30 Nationen und allen Kontinenten nach Bozen und feiert die kolossale Dolomiten-Bergkulisse. Bozen also diesmal wörtlich Tor zu den ” Dolomiten“.

Wer mitmacht legt während der Giro-Woche insgesamt 657 Kilometer und 10.154 Höhenmeter zurück. Das Starterfeld wird heuer auf 600 TeilnehmerInnen begrenzt, um den Genussfaktor, das familiäre Ambiente und das Netzwerken unter RadfahrerInnen und Dolomiten-Freunden zu ermöglichen. Am Programm stehen das Rittner Hochplateau, das Würzjoch, der Fedaia- und der Valparola-Pass, Cortina, die Seiser Alm und die Weindörfer Magreid, Kurtatsch, Kurtinig und Salurn. Nach drei Tagen wird am Mittwoch eine Pause eingelegt. Aber nicht alle müssen sämtliche sechs Etappen bezwingen. Auch Tages- oder Drei-Tages-Tickets sind erhältlich. Täglicher Start ist das Messegelände in Bozen, am letzten Tag wird das Zentrum von Bozen belagert, denn der Startschuss fällt am Waltherplatz.

With its 43-year history, the Giro delle Dolomiti is one of the most traditional sporting events in the country. The unique attraction of this annual road cycling event is that it brings together a colourful selection of amateur cyclists from over 30 nations to celebrate the stupendous Dolomite Alpine scenery. So this time, Bolzano literally is the gateway to the Dolomites.

Whoever completes the competition will have covered a total of 657 kilometres and a dizzying 10,154 metres in altitude during the Giro Week! This year, the starting field has been restricted to 600 participants, to encourage enjoyment,

a family atmosphere and networking between those present. The programme includes the Renon plateau, the Passo delle Erbe, the Fedaia and Valparola passes, the Alpe di Siusi and the wine villages of Magrè, Cortaccia, Cortina and Salurno. After three days there will be a halfway break on Wednesday. However, completing all six stages is not at all obligatory, with one-day or three-day tickets also available. The race starts daily from the Fiera trade fair complex in Bolzano. However on the last day, the centre of Bolzano is besieged, because the start is from Piazza Walther – at the very heart of the city.

Paolo hat jede Eis-Auszeichnung bereits eingeheimst. Für die Frische und die Transparenz seiner Zutaten, die Originalität und Qualität seines Speiseeises. Aber mehr als über Ehrungen seiner fast 40-jährigen Karriere freut er sich darüber, dass sein Sohn Gabriele nach der Matura die eigenen Studienpläne über Bord geworfen hat, um bei ihm das Eismachen von der Pike auf zu lernen. Die Begeisterung eines Lebens war ansteckend.

Angefangen hat Paolo bei seiner Mama Elvira, einer Institution in Bozen, Pächterin der legendären Bozner Morettibar in den 1950er Jahren. Sein Vater war im Supermarkt-Business tätig und hat ihm den Warenkunde-Horizont ausgebreitet.

1981 folgt der Sprung ins kalte Wasser mit der Eisdiele Avalon, kurz nachdem er von Genua, wo er aufgewachsen war, nach Bozen zog. Es war ein langer Weg vom zaghaften Start mit sechs Eisrezepten seiner Mutter auf einem A3-Blatt über die autodidaktischen Offenbarungen bis hin zur hohen Kunst der Eisherstellung: Der erste Bozner Eishersteller mit Meisterbrief Paolo Coletto hat ein bewegtes Leben hinter sich, war Musiker, Weltenbummler, hat sich u.a. in Indien zum Yoga-Lehrer ausbilden lassen. Und er zaubert diese Weltoffenheit in seine Eisvariationen.

Woran erkennt man heute ein gutes Eis“? An der Far” be: je dezenter, desto wahrscheinlicher, dass keine künstlichen Farbstoffe verwendet wurden. An der Konsistenz: Hochwertiges Eis ist fest, aber geschmeidig, es lässt sich mit dem Spatel streichen. Am Konservierungsbehälter: Gesundes Eis wird in geschlossenen Metallbehältern konserviert, so behält es seine Konsistenz.

Hoch aufgetürmtes Eis kann sich gewöhnlich nur länger als ein paar Stunden halten, wenn ihm künstlich Fette beigemischt werden.

Wer Eis mit Pulvermischungen macht oder Fertigprodukte hineinmischt, mogelt. Auch wenn kein Gesetz das verbietet. Die Aufschrift Eis aus eigener Herstel” lung“ verrät leider nichts über dessen Zutaten und stellt auch kein Qualitätszeichen dar. Eine herkömmliche Eishersteller-Lehre gibt es hierzulande nicht. Ganz neu ist ein 120-stündiger Lehrgang des Handels- und Dienstleistungsverbands Südtirol, der die Voraussetzung zur Eintragung ins Berufsverzeichnis der Handelskammer darstellt. Das meiste läuft also nach der Learning-by-Doing-Methode, obwohl die europäische Eistradition gerade in den Dolomitentälern entstanden ist. Früheste Zeugnisse von Eisherstellung sind aus China überliefert, in Europa stammten die meisten frühen Eismacher aus dem Cadore und Zoldo, zwei hoch gelegenen Tälern in den bellunesischen Dolomiten. Die Erfahrung im Umgang mit Schnee, Eis und Milch stellte den Reichtum dieser Talschaften dar.

”MEIN EIS IST LIEBE UND RESPEKT VOR DER NATUR“

Ursprünglich wird Speiseeis aus Frischmilch, Sahne, pasteurisierten Eidottern, Zucker und Früchten zubereitet, ohne Farbstoffe, ohne künstliche Aromen und ohne Konservierungsmittel. Ein solches Eis ist, in Maßen genossen, gesund, denn es enthält viel Kalzium durch die Milchkonzentration, je nach Sorte sogar Vitamine und Mineralstoffe, plus einen hohen Energiegehalt durch Fett und Zucker, was das Eis zur Mahlzeit macht. Kalorienreich sind Schokolade- und Nusseissorten, kalorienärmer Fruchteis und Joghurteis.

Bio ohne Biozertifikat, ein Rebell im Eisgeschäft: Auf keinen Fall kommt ihm Milchpulver ins Eis, auch sonst keine Chemie. Er will mit eigenen Augen sehen, woher seine Ingredienzen kommen, fährt persönlich zu den Produzenten, sieht sich deren Verfahren an, diskutiert mit ihnen über Lebens- und Lebensmittelphilosophie. Seine Erdbeeren holt er in Schlinig, die Marillen in Stilfs im Vinschgau, die Himbeeren vom Schlernplateau, die Pistazien aus dem Bronte-Gebiet in Sizilien, die Milch aus Sexten.

Und die frischen Mangos - eine Geschmacksexplosion am Gaumen - hat er gerade aus Thailand mitgenommen, wo er neulich geheiratet hat.

EisKUNST ist das, was er in seinem kleinen Eislaboratorium im Keller der Eisdiele macht. Seine Rezepte werden jedes Mal verfeinert, je nach Verfügbarkeit der Zutaten und Tagesverfassung des Tüftlers, der selbstverständlich täglich produziert. Die verfügbaren Geschmacksrichtungen leuchten am Eisdielen-Himmel hoch über den Köpfen von Vater und Sohn auf. Jeden Tag andere. Das Geheimnis hinter seiner Eiskunst? Meine Beobachtergabe, die ” Intuition, die Lust am Experimentieren und die Hingabe zu dem, was ich tue, Eismachen. Ich lerne von meinen Zutaten, der Respekt vor der Natur diktiert meinen Alltag.“ Sagt’s und schenkt dem Mädchen an der Theke seine ganze Aufmerksamkeit beim Aussuchen der Eiskugel, mein Gast, keine Kundin“. ”

BESTER KUNDE“ ”BIN MEINAndrea Fogli Sein Arbeitstag beginnt lang vor Ladenöffnung um 8 Uhr frühmorgens in der Eiswerkstatt und endet auch nicht zur Sperrstunde um Mitternacht. Die Nachtstunden gehören der Herstellung von Eistorten. Erst dann ist Schluss. Egal wie anstrengend der Arbeitsrhythmus, Andrea freut sich auf die nächste Produktion und die Gaumen-Überraschung beim Kosten neuer Eissorten.

Für ihn hat alles 1996 begonnen, als er zusammen mit seiner Familie die gleichnamige Eisdiele des Onkels übernommen hat. Diese Eisdiele Mario war bereits seit 1966 eine angesagte Bozner Eis-Adresse. Und das Eismachen länger schon Familientradition, mit dem Opa als Wanderhändler in der Nähe des Bozner Zugbahnhofs und einer Eiswerkstatt in Haslach. Als Lehrbub hat Andrea seinem Onkel früh über die Schulter geschaut. Heute beschäftigt er zehn Festangestellte und zusätzliche Saisonkräfte am Wochenende. Täglich verarbeitet er während seiner besten Eismonate Mai und Juni zwischen 250 und 400 Liter Südtiroler Milch, zentnerweise Frischobst oder Tiefkühlobst – je nach Jahreszeit.

Er liebt es, seinen Eisgefühlen freien Lauf zu lassen und auch außergewöhnliche Sorten zu kreieren: Gerade probiert er beispielsweise eine neue Eissorte, den Camembert-Polenta, um auch Stammgäste noch zu überraschen. Mit den Eismoden mitzugehen begeistert ihn weniger, er betrachtet die verschiedenen Trends kritisch, kommt den Wünschen seiner Kundschaft nach veganem, aber zunehmend auch gluten- und oder laktosefreiem Eis aber nach.

Ich war lang mein bester Kunde. Heute muss ich ” mich zurückhalten, freue mich aber aufs Ausprobieren der frisch zubereiteten Eissorten. Da kommt täglich eine ordentliche Portion Eis zusammen.“

Keine Pülverchen kommen Andrea in seine Kreationen: Unsere Konkurrenz ist die Industrie, die un” sere Preise drückt. Doch wenn jemand bei uns Eis isst, kennt er den Unterschied und meidet erstere.“ Er verkaufe echte dolcezza“ … ein Ausdruck, der ” im Italienischen mehr als nur Süßes bedeutet, nämlich auch Liebreiz, Zärtlichkeit. Das schönste Kompliment seien ohnehin die Menschenschlangen am Wochenende und die zufriedenen Gesichter seiner KundInnen. Dann wisse er, dass sich das Frühaufstehen lohne.

Gemeinsam mit seinem Sozius Walter Job führt er seit 1990 die Eisdiele Brivido“ (Kälteschauer) im Wohnvier” tel Don Bosco. Im selben Viertel ist er aufgewachsen, in der halbländlichen Semirurali-Zone, dem Arbeiterwohnviertel der späten 1930er Jahre, das die faschistisch verordnete Zuwanderung durch den Industrialisierungsschub südlich von Bozen errichtet hatte.

Damals stand hier die alte Gelateria Veneta“, die er ab” löste, nachdem er einige Jahre als Barist Erfahrung gesammelt hatte. Das Eismachen hat Graziano noch von den Alten“ vor Ort gelernt und im kreativen Handwerk ” bald Gefallen gefunden. Von den anfangs zwei Eigentümern plus zwei Verkäuferinnen ist die Eisdiele mittlerweile auf 2+8 angewachsen. Jedes Jahr kommen Neuigkeiten hinzu, nicht nur neue Eissorten, sondern auch neue Experimente und Zutaten, auch bei den aufwändig dekorierten Eistorten und Semifreddi, für die seine Eisdiele bekannt ist. Auch das Auge will schließlich ” mitessen.“ Außerdem sei der kreative Impuls im Eislabor, das Aushecken neuer Kombinationen das eigentlich Tolle am Job. Die Herausforderung derzeit sei es, mit den vielen Allergenen zurechtzukommen und eine große Auswahl anzubieten. Seine Favoriten? Cremino (Gianduia und Sahne geschichtet) und Torroncino mit Orangencreme.

Raiders leave the UK in June, crossing Europe to meet in Innsbruck on 8th June. Arrival in Bolzano is scheduled for the afternoon of Sunday 9th June. Once in Bolzano, they will take on a number of Alpine passes, including Passo Stelvio. The highlight for Bolzano will be the driving skill competition against members of the Bolzano Veteran Car Team, at Bolzano’s Piazza del Tribunale on 14th June, starting 6 pm. Afterwards, the vintage cars will be on public display at Piazza Walther. Finally, on 16th June, they will race home again and it will be goodbye until 2029!

All this begs the question: what is so special about Frazer Nash cars? The answer is that they have a chain-drive on the rear axle, instead of the usual propeller-shaft: hence the "chain gang" nickname for the drivers. The drive shaft rotates at the same speed as the engine, with only the clutch between the shaft and the engine. This is a distinct advantage when driving on roads with tight bends. They are surprisingly fast and agile, even compared to modern cars.

This classic car pilgrimage from the UK to Bolzano takes place every ten years, to celebrate its exploits in the Alpine rallies of 1932, 1933 and 1934.

This year sees the sixth commemorative raid in history. The first, in 1969, was organised by David Thirlby (see photo on page 46) and fielded ten cars in the Mendola Hillclimb race. The 2019 raid has been organised by Thirlby's daughter, who will drive one of his cars for the occasion.

Was das Besondere am Frazer Nash ist? Der Wagen ist mit einem Kettenantrieb an einer durchgehenden Hinterachse ausgestattet, anstatt mit dem üblichen Kardanwellengetriebe. Darum der Übername der Fahrer als chain gang“ bzw. Ketten” bande. Die Antriebswelle dreht sich mit derselben Geschwindigkeit wie der Motor, da sich zwischen der Welle und dem Antrieb nur die Kupplung befindet. Diese Fahrzeuge besitzen daher kein Differenzial, was ein Vorteil ist, wenn Straßen mit engen Kurven befahren werden. Der Reiz des Frazer Nash-Fahrens ist folglich die leichte und direkte Lenkung und die stabile Hinterachse, die überraschend schnelles und wendiges Fahren ermöglicht, selbst im Vergleich zu modernen Autos.

Um Missverständnisse gleich aus dem Weg zu räumen: Es geht um ein britisches Automobil, das zwischen 1921 und 1954 gebaut wurde und den Namen seines Erbauers trägt, Frazer Nash, ein leidenschaftlicher Rennfahrer der 1920er Jahre.

Und diese Oldtimer-Pilgerfahrt von rund 90 Frazer Nash-Fahrzeugen von Großbritannien nach Bozen findet alle zehn Jahre statt, um die heldenhafte Teilnahme dieses Automobils an den Alpen Rallyes von 1932, 1933 und 1934 zu feiern. Der heurige Raid“ im Juni ist der sechste Gedächtnis-Raid ” der Geschichte. Der erste fand 1969 statt. Bereits damals wurde Bozen als Basis gewählt und David Thirlby (siehe Foto S. 46) organisierte das Treffen. Damals nahmen zehn dieser Autos sogar am Bergrennen Bozen-Mendelpass teil. Die diesjährige Ausgabe wurde federführend von Thirlbys Tochter organisiert, die zum Anlass einen seiner legendären Automobile fahren wird.

Alle Raiders werden im Juni also von zu Hause in Großbritannien starten, halb Europa überqueren und am 8. Juni in Innsbruck zusammentreffen. Das Ankommen in Bozen ist am 9. Juni geplant. Während ihres Aufenthalts steht die Überquerung verschiedener Alpenpässe auf dem Programm, außerdem ein Geschicklichkeitsfahren im Wettbewerb gegen Mitglieder des Veteran Car Teams auf dem Bozner Gerichtsplatz am 14. Juni ab 18 Uhr. Nach diesem Rennen werden die Oldtimer bis zum Waltherplatz fahren, wo man sie bewundern kann, bevor sie am 16. Juni wieder nach Hause abdüsen. Auf Wiedersehen bis 2029!

Per sgombrare il campo da ogni possibile malinteso, stiamo parlando di un’auto d’epoca inglese, costruita tra il 1921 e il 1945 che porta il nome del suo costruttore, Frazer Nash, un appassionato corridore degli anni Venti. Il raduno bolzanino di circa 90 Frazer Nash, provenienti dall’Inghilterra, ha luogo ogni dieci anni, per evocare la gloriosa partecipazione di quest’automobile ai Rally delle Alpi del 1932, 1933 e 1943. Quello di quest’anno è il sesto revival della storia, il primo ha avuto luogo nel 1969. Già allora venne scelta Bolzano come base e fu David Thirlby (vedi foto pag.

46) a organizzare il tutto. Allora dieci di queste automobili parteciparono addirittura alla mitica corsa in salita Bolzano-Mendola. L’edizione di quest’anno è organizzata dalla figlia di Thirlby che per l’occasione guiderà la leggendaria automobile del padre.

Le bande hanno radici anche in città, Bolzano ne ha ben quattro, ciascuna con una propria storia e tradizione. Partiamo dalla banda più antica, la Bürgerkapelle Gries, fondata ormai due secoli fa, nel lontano 1821.

Bürgerkapelle vuol dire banda, o orchestrina di cittadini. Originariamente, la banda di Gries, oggi popoloso quartiere di Bolzano, allora piccolo comune a se stante, inglobato dal capoluogo solo nel 1925, suonava per i notabili reali e imperiali che vi transitavano o soggiornavano nella stazione climatica di Gries. Una pietra miliare dell’evoluzione di questo corpo musicale fu il primo concerto di Capodanno del 1968. Da allora non ne è saltato uno, questo concerto fa parte degli eventi clou della città e risulta uno dei più attesi di questo genere. Del resto, la musica per strumenti

a fiato ha subito un rinnovamento negli ultimi anni, tanto da invogliare sempre più giovani a partecipare e mettersi in gioco. Da 23 anni la banda è diretta da Georg Thaler che ne è l’anima. La banda ha vinto il 1˚ premio al concorso bandistico internazionale “Flicorno d’Oro” di Riva del Garda nel 2003; nel 2011 è stata premiata dalla Giunta provinciale come banda più innovativa, per le collaborazioni con cabarettisti, artisti vari e una rockband. Il suo impegno sociale con progetti sulla migrazione ne fa una delle bande musicali più interessanti. Tra due anni compie 200 anni e la banda ha in programma la messa in scena di una sinfonia per strumenti a fiato – ancora da scrivere - in collaborazione con la compagnia teatrale Vereinigte Bühnen Bozen. Una prima assoluta.

L

a musica folcloristica, per coro e per banda, ha svolto un ruolo davvero essenziale per la tradizione popolare della più estesa provincia italiana delle Alpi meridionali. Sul territorio esistono oltre 200 bande musicali, quasi il doppio rispetto ai comuni altoatesini (116). Pensare che in tutt’Italia sono poco più di 2.300. Le cifre parlano chiaro e raccontano di una tradizione molto radicata nel tessuto socio-culturale: in provincia, oltre 9.300 musicisti fanno parte di questi tipici corpi musicali, una banda conta in media 44 musicisti. Oltre la metà dei membri complessivi ha un’età inferiore ai 30 anni, quindi non mancano certo le nuove leve. Accanto ai molti concerti in pubblico, le bande musicali sudtirolesi accompagnano eventi liturgici, feste, inaugurazioni ecc.

Per l’estate 2019 la Banda di Gries si trasforma in un circo, ogni musicista in artista circense e, tramite brani molto particolari e un’avvincente storia di fondo, coinvolgerà il pubblico: un clown vuole assolutamente far ridere la triste vivandiera, forzando un cambiamento dello stile musicale e non solo.

La Banda Musicale di Bolzano, Stadtkapelle Bozen, invece, è stata fondata nel 1919 dalla gioventù cattolica di Bolzano come banda musicale giovanile. Dal 1989 la dirige Alexander Veit, noto direttore d’orchestra di fiati e direttore artistico di vari brassfestival.

Molti giovani talenti della banda vengono apprezzati anche come solisti e partecipano a concorsi e festival internazionali. Sabato, 1 giugno la Banda Musicale di Bolzano ha celebrato l'anniversario per i suoi 100 anni con una festa a Castel Mareccio.

La terza banda musicale, per data della sua costituzione, è la Bürgerkapelle Zwölfmalgreien, fondata nel 1920, nove anni dopo che il quartiere bolzanino Dodiciville (la traduzione di Zwölfmalgreien) divenne parte di Bolzano rinunciando al proprio stato di comune rurale. Sono famosi i suoi concerti dedicati a Santa Cecilia in novembre. Anche questa banda musicale bolzanina punta molto sul lavoro con i giovani e sulla formazione dei suoi musicisti. www.mkz.bz.it

La storia del Corpo Musicale Mascagni è molto singolare per la città di Bolzano. Infatti, questo corpo musicale di stampo più italiano, nasce nel 1945, all’indomani del termine del secondo conflitto mondiale, per volere di un gruppo di amici che si riuniscono e danno vita alla “Banda del Lavoratore”. Sotto la guida del maestro Mario Mascagni, il gruppo di amici comincia l’attività concertistica, prima con un modesto repertorio, formato da marce e da brani sinfonici di facile esecuzione. Con la crescita del suo organico, nel corso degli anni cambia lo stile, ma crescono anche le ambizioni. Nel 1987 subentra in qualità di maestro il direttore d’orchestra australiano Steven A. Lloyd che riesce in breve tempo ad avvicinare alla banda nuove giovani leve, proponendo accanto ai brani di musica classica, pezzi moderni, jazz e anche musical. Nel 1998 lo dirige una donna, la pianista Rossella Simonazzi che ha accompagnato il corpo musicale al concorso di fama nazionale di Salsomaggiore. Dal 2010 la banda è sotto la guida del maestro Ivan Marini.

Die Chor- und Musikkapellenmusik spielt eine besondere Rolle im Land: Über 200 Musikkapellen, das sind fast doppelt so viel wie es Gemeinden in Südtirol gibt (116). Die Zahlen sprechen Klartext über das soziokulturelle Geflecht: Über 9.300 MusikerInnen gehören einer dieser Musikkapellen an, die durchschnittlich 44 Mitglieder aufweist. Über die Hälfte der MusikerInnen sind jünger als 30 Jahre alt. Keine Nachwuchssorgen also in der Szene, denn die Musikkapellen schweißen ganze Dorfgemeinschaften zusammen, spielen bei Kirchfesten genauso wie bei Eröffnungen und weisen letzthin eine rege Konzerttätigkeit auf.

Die Stadt Bozen hat deren vier, die älteste ist die Bürgerkapelle Gries, 1821 im heutigen Stadtviertel Gries – damals eigenständiger Luftkurort - gegründet. Die ersten Konzerte waren denn auch königlichen und kaiserlichen Honoratioren gewidmet, die hier verweilten. Ein Meilenstein ihrer Geschichte ist das erste Neujahrskonzert 1968. Seitdem wurde keines ausgelassen; sie gehören zu den Highlights des Bozner Musikjahres.

The city of Bolzano has four such bands. The oldest, the Bürgerkapelle Gries, was founded in 1821 when today's Gries district was known internationally as a health resort. Its first concerts were dedicated to the royal and imperial dignitaries who came to stay. Their New Year’s concerts are one of the highlights of the Bolzano musical calendar.

Georg Thaler has been director for 23 years now, leading them to innumerable awards along the way. Their 200th anniversary in 2021 will be a premiere event, with a specially commissioned brass music opera. www.bkgries.it

Musical bands, or Musikkapellen, have a special place here: there are 200 musical bands – almost twice as many as there are boroughs in South Tyrol! The figures speak plainly about their cultural importance: some 9,300 musicians belonging to one of these bands, each with an average of 44 members. Over half the musicians are younger than 30, so their future is assured. This is important, since these bands create bonds in every village, with a central role at community events.

What are the advantages of production on the slopes?

Apart from the aesthetics and protection of the landscape, the construction in the mountain with a ventilation tunnel ensures that we have a natural cooling system. We are currently testing this in practice.

In your experience, what makes for quality wine?

Location and the work of the growers in the vineyard are essential. Together, they make up about 75%, and the trend for premium wines is rising. Only the remaining 25% is determined by the cellar technique, i.e. the pressing, cellaring and maturation.

The winery's task is to bring the grapes to the wine bottle as gently as possible. Ah, and the moment of bottling is also very important. The question of whether the wine has aged enough to be bottled is generally underestimated.

So, from craftsmanship to art?

If art is the result of experience, of feeling and intuition, then yes. You must have a feeling, found only through experience, to know the right moment. In the case of high-quality wines, this is the final touch, perhaps 4-5%. But this does make the difference.

Mr Filippi, why is vertical pressing gentler?

Pump movements cause a constant friction with the grapes, so more sediment gets into the must. These cloudy substances prevent the fruit aromas from developing cleanly. The friction also brings out certain tannins, which make the wine harder and rougher. In essence, the wine becomes more elegant through processing using gravity, which allows it to reveal more of the grape from which the wine is made.

How was the first pressing?

It was a race against time! On the one hand, the harvest started two weeks earlier due to the warm summer of 2018; on the other hand, construction delays really made us sweat. The challenge was to bring the machinery from our two previous winery locations into line with the new technology and control systems. The test run was a headache, but it went like clockwork in the end.

We were lucky, because shortly afterwards the first grapes arrived for processing.

his is about the picture-perfect landscape of the Bolzano valley basin - instantly recognizable from the motorway or the railway - and its premium autochthonous grape varieties: Lagrein and St. Magdalener. It is also about technical sophistication fused with years of wine-making and refinement. It is about the pursuit of quality that leads to distinction. But at the heart, it is about the sensitivity and intuition essential for producing exceptional wines, qualities that remain quite simply beyond words.

And how does the winery determine cultivation?

Through close cooperation with our members, the winegrowers. After the great wine crisis at the beginning of the 1980s, there was a move away from mass production and towards quality. At the same time as the crisis, there was a generational change.

We younger, better-trained technicians brought in our ideas. We went to the vineyards ourselves, created programmes there, organised tastings and consultations for the winegrowers. The market immediately rewarded this new approach, so it was not difficult to convince our members. At that time, we had only a few 0.75l bottles of St. Magdalener - the rest was in litre bottles. Within a very short period, we reached 100% in 0.75l bottles. Today, we still organize tastings for our members every year at Candlemas, 2nd February, in order to assess the quality together. Passionate winegrowers, mostly full-time viniculturists, are our foundation.

Stephan grew up in the vineyards of Bolzano and is a third-generation oenologist.

His formal training was in San Michele all'Adige and his relationship with Kellerei St. Magdalena began with a summer internship.

Organic or conventional?

Our main business will remain conventional in the medium term, but we are currently testing some areas, a total of 12 hectares. We are thinking of a niche production of Pinot Blanc, Chardonnay and perhaps also Lagrein and Pinot Noir from 2020.

And what about the 2018 vintage?

It is developing splendidly, especially the reds, thanks to last year's heat. Our top wines in 2018 will be our Pinot Noirs, Merlots and Cabernets, which can compete with those from other wine-growing regions. Our flagship Lagreins and St. Magdaleners are also a pleasant surprise.

Cutting-edge & Original “A symbiosis of nature and architecture” is what marketing strategists call Bolzano’s newest oenological landmark, the new winery complex built mostly into the hillslope near the regional hospital. It is home to the Kellerei Bozen, the leading producer of St. Magdalener and Lagrein wines in South Tyrol. Through its foundation in 2001, it united Bolzano’s two traditional cooperatives wineries: the Kellerei Gries, with its full-bodied red wines; and the Kellerei St. Magdalena, with its lighter red varieties. The winery had to wait almost 18 years for its new, logistically-perfect centralised location on the outskirts of the city. The move took place in the summer of 2018, just before the grape harvest. Only the administration building is visible from afar with its façade depicting a stylized vine leaf, in perforated aluminium sheet. Production, the heart of the winery, is hidden in the mountain, where the principle of vertical pressing is applied. The grapes are delivered to the highest point of the building and cascade step by step from top to bottom, then to storage in the cellar. A

KELLEREI BOZEN IM NIGELNAGELNEUEN SITZ IN ST. MORITZING. EIN GESPRÄCH ÜBER SÜDTIROLER WEINKULTUR MIT STEPHAN FILIPPI, IHREM CHEF-ÖNOLOGEN. Eine Symbiose aus Natur und Architektur nennen die Marketingstrategen das neue Wein-Wahrzeichen Bozens, den Kellerei-Neubau in der Nähe des Landeskrankenhauses, zum Großteil in den Hang hineingebaut. Es beherbergt die Kellerei Bozen. Das ist seit 2001 der führende Produzent des St. Magdaleners und des Lagreins in Südtirol: 224 Weinbauern bewirtschaften an die 340 Hektar der sonnenverwöhnten Bozner Weinhügel in Lagen zwischen 200 und 1.000 Metern. Fast 18 Jahre musste die Kellerei auf ihren neuen Standort warten. Nun ist nur das Verwaltungsgebäude von weither sichtbar, mit seiner Fassade in Form eines stilisierten Rebenblattes. Das Herzstück, die Produktion, ist im Berg versteckt, wo das Prinzip von oben nach unten“ der Kelle” rei zum Tragen kommt - das vertikale Keltern: Die Trauben werden an die höchste Stelle des Gebäudes angeliefert und fallen etappenweise hinunter bis zur Lagerung im Keller.

Warum ist das vertikale Keltern schonender, Herr Filippi?

Pumpbewegungen verursachen eine ständige Reibung der Trauben, dadurch gelangen mehr Trubstoffe in den Most. Diese Trubstoffe verhindern, dass die Fruchtaromen sich sauber entwickeln. Und die Reibung holt außerdem auch bestimmte Tannine heraus, die den Wein härter, ruppiger werden lassen.

Was macht die Qualität des Weins Ihrer Erfahrung nach?

Wesentlich sind die Lage und die Arbeit der Bauern im Weinberg. Zusammen macht das an die 75% aus. Tendenz steigend bei den Spitzenweinen. Nur die restlichen 25% werden von der Kellertechnik bestimmt, also vom Keltern, der Einkellerung und Ausreifung. Die Aufgabe der Kellerei ist es, die Traubenbeere so schonend wie möglich in die Weinflasche zu bringen. Ah, und ganz wichtig ist auch der Moment der Abfüllung. Die Frage, ob der Wein reif genug ist, um in die Flasche zu kommen, wird generell unterschätzt. Bei den

Er entwickelt sich prächtig, dank der Hitze im vergangenen Jahr. Vor allem die Roten: Blauburgunder, Merlot und Cabernet, die Sorten unserer Produktion, mit denen wir uns auch mit anderen Weinbaugebieten messen können, werden Top-Weine. Eine Überraschung bergen auch unsere Zugpferde Lagrein und St. Magdalener.

2018 - UN’ANNATA PROMETTENTE 3,5MILIONI DI BOTTIGLIE: QUESTO IL PRIMO

“BOTTINO” MESSO A SEGNO DALLA CANTINA BOLZANO NELLA SUA NUOVISSIMA SEDE DI SAN MAURIZIO. UNA CHIACCHIERATA SULLA CULTURA DEL VINO IN ALTO ADIGE CON IL MASTRO DI CANTINA, STEPHAN FILIPPI. Gli strateghi del marketing la definiscono una simbiosi tra natura e architettura: la nuova sede della Cantina Bolzano, nei pressi dell’Ospedale di Bolzano, costruita in gran parte dentro la collina, è già assurta a tempio del vino del capoluogo. Dal 2001 è la maggior produttrice altoatesina di Santa Maddalena e di Lagrein: 224 viticoltori coltivano 340 ettari di vigneti collinari, baciati dal sole, ad un’altitudine compresa fra i 200 e i 1000 m. La cantina ha dovuto attendere quasi 18 anni per avere una nuova casa. Oggi, la sede amministrativa è ben visibile e riconoscibile già da lontano, con le sue facciate a forma di foglia di vite stilizzata. Il cuore, la produzione, è invece nascosta nella montagna, dove vale il principio “dall’alto verso il basso”, ovvero della vinificazione verticale: l’uva viene immessa dal punto più alto dell’edificio e il materiale scende, tappa dopo tappa, durante le varie fasi di lavorazione, dall’alto verso il basso, fino alla conservazione del vino nelle cantine.

Biologico o convenzionale?

A medio termine continueremo a concentrarci sulla produzione convenzionale, ma stiamo già testando qualche bottiglia di biologico, per circa 12 ettari, e pensiamo ad una produzione di nicchia a partire dal 2020 di Pinot Bianco, Chardonnay e forse anche Lagrein e Pinot Nero.

Secondo la Sua esperienza, cosa determina la qualità del vino?

Fondamentali sono soprattutto la posizione dei vigneti e il lavoro dei viticoltori. Insieme determinano la qualità per il 75%, anche di più per i vini di massima qualità. Solo il restante 25% dipende dalla tecnica di vinificazione, quindi da pigiatura, fermentazione e affinamento. Compito della cantina è far sì di portare i chicchi in bottiglia nel modo più delicato possibile. Ah, anche il momento dell’imbottigliamento è molto importante. La questione, se il vino sia sufficientemente maturo per finire in bottiglia viene spesso sottovalutata. Per i vini di qualità superiore questo tocco finale influisce per un 4-5%. Ma fa la differenza.

E cosa fa l’annata 2018?

Sta sviluppandosi meravigliosamente, grazie al gran caldo dello scorso anno. Soprattutto i rossi saranno al top: Pinot Nero, Merlot e Cabernet, i vitigni per i quali competiamo anche con altre zone produttive. Pure i nostri cavalli di battaglia, Lagrein e Santa Maddalena, ci riserveranno delle belle sorprese.

Per quale motivo la vinificazione verticale risulta essere migliore?

Perché, diversamente, il movimento generato dalle pompe causa un continuo sfregamento delle uve che cedono così al mosto una maggiore quantità di depositi. Questi impediscono che gli aromi fruttati si sviluppino in modo nitido. Lo sfregamento fa sprigionare anche determinati tannini che rendono il vino più duro, disarmonico.

Die Ausstellung erzählt von den Geschehnissen aus dem Leben verschiedener Persönlichkeiten, die in der Zeit zwischen dem Mittelalter und der Neuzeit entlang der Brennerroute reisten.

Die Sonderausstellung beleuchtet spannende Funde aus dieser Anfangszeit der Archäologie, untersucht die ersten Grabungen und erzählt von frühen Museumsgründungen.

Dabei kommen die Pioniere und Protagonisten dieser Anfangszeit zur Sprache. Die Ausstellung widmet sich dieser Zeit des Umbruchs und vermittelt ein spannendes Bild der Archäologiegeschichte Südtirols vor 1919.

Il 4 novembre 1501 l'imperatore Massimiliano I fece visita a Castel Roncolo dove rimase impressionato dagli splendidi affreschi. Le immagini di Castel Roncolo ebbero un profondo impatto sull'imperatore e sulla sua cultura della “rimembranza”, diventando modelli per opere letterarie e figurative e ispirando infine il celebre cenotafio di Innsbruck.

Am 4. November 1501 besuchte Kaiser Maximilian I Schloss Runkelstein und war von den mittelalterlichen Fresken beeindruckt. Die Bilderwelt von Runkelstein sollte sich entscheidend auf Maximilians Gedächtniskultur und Selbstdarstellung auswirken und nicht nur Schlüssel zu literarischen und künstlerischen Werken sein, sondern auch Vorbild für ein Grabmal in Innsbruck werden.

In 1501, Emperor Maximilian I visited Runkelstein Castle and was impressed by the splendid frescoes. The images of Runkelstein Castle had a profound impact on the Emperor and his culture of remembrance, the images becoming models for literary and figurative works and subsequently inspiring the famous cenotaph of Innsbruck.

SÜDTIROL JAZZ FESTIVAL Anche stavolta il Jazzfestival Alto Adige va alla scoperta di nuove scene jazzistiche europee, dedicando l’edizione 2019 alla penisola iberica. Classic music and young musician fill the city in summer. The European Union Youth Orchestra and the Gustav Mahler Jugendorchester are guest in town for the Bolzano Festival Bozen, as well as the Antiqua festival of baroque melodies, the International Piano Competition Ferruccio Busoni and the Gustav Mahler Academy.

Im August macht Bolzano Festival Bozen die Südtiroler Landeshauptstadt zu einem pulsierenden Schauplatz klassischer Musik in all ihrem Facettenreichtum. Hochkarätige internationale Interpreten und die unverbrauchte Vitalität und Spontaneität einer neuen Generation junger Instrumentalisten sind das Erfolgsrezept dieses Festivals: Antiqua mit einem frischen Zugriff auf barocke und Alte Musik; die Konzerte des Gustav Mahler Jugendorchesters und des European Union Youth Orchestra; der Internationale Klavierwettbewerb Ferruccio Busoni; die

Meisterkurse der Gustav Mahler Akademie. Gemeinsam gestalten sie ein dichtes Programm im Sinne von Musik und Jugend.

Il successo del festival è garantito dagli interpreti internazionali, dalla vitalità e dalla spontaneità della nuova generazione di musicisti. Il festival di musica sacra Antiqua, i concerti della Gustav Mahler Jugendorchester e della European Union Youth orchestra, il Concorso Pianistico Internazionale Ferruccio Busoni e l’Accademia Gustav Mahler sono gli appuntamenti dell’estate musicale.

9.8.2019 CALICI DI STELLE LORENZINACHT Ottimi vini, atmosfera suggestiva e prelibatezze gastronomiche attendono i visitatori della tradizionale degustazione di vini nel centro storico di Bolzano.

Venerdì 9 agosto dalle ore 18 alle ore 24, torna Calici di Stelle, una serata dedicata al vino e un’occasione per incontrare i produttori di Bolzano nella splendida cornice dei Portici. Si potrà degustare il prezioso nettare di Bacco delle diverse cantine vinicole di Bolzano.

Alle delizie del palato provvederanno gli stand partner.

Eine Veranstaltung für alle Weinliebhaber: Guten Wein, eine stimmungsvolle Atmosphäre und gastronomische Leckereien erwarten die Besucher der traditionellen Weinverkostung im Hochsommer.

Am Freitag, 9. August werden die Bozner Lauben zum Austragungsort der Lorenzinacht und die Bozner Winzer laden von 18 bis 24 Uhr zur Verkostung ihrer besten Weine ein. Neben den circa 20 Produzenten sorgen die Partnerstände für den Gaumenschmaus.

Don’t miss the traditional Summer wine tasting event of Bolzano. On Friday, the 9th of August, the suggestive location under the medieval arcades of Bolzano will host about twenty wine-grower, that offer their best wines, and a number of partners with gastronomic delights.

Die Bürgerkapelle Gries hat sich für den Sommer 2019 ein ganz besonderes Projekt vorgenommen. Die Musikanten verwandeln sich während des Konzerts in Zirkusartisten und natürlich wird das Ganze mit einer guten Portion Zirkusmusik temporeich begleitet.

Il rilancio della cooperativa Südtiroler Werkstätten - Artigiani Atesini parte da un ritorno alle origini, però guarda al futuro e si presenta con la volontà di coinvolgere come parte attiva i turisti e clienti del negozio di via Portici 39.

Da giugno a ottobre gli Artigiani Atesini organizzano uno speciale appuntamento con cadenza mensile, una dimostrazione pratica dal vivo, con uno o diversi artigiani.

Die Genossenschaft der Südtiroler Werkstätten bringt authentisches Kunsthandwerk nach Bozen, in die Laubengasse 39. Von Juni bis Oktober gibt es dort „lebendes Handwerk“ zu sehen: Einmal im Monat können die Besucher einem Kunsthandwerker bei seiner Arbeit über die Schulter schauen.
