ARE lettrici e cari lettori, l'estate è stata clemente con Bolzano e l’Azienda di Soggiorno chiude una stagione straordinariamente positiva, anche perché è tornata una parvenza di normalità nella nostra quotidianità. Ripresosi dallo shock e dalla lunga fase di stallo, il capoluogo altoatesino è tornato in piena forma e con il desiderio di rinnovarsi.

Ci sono novità da segnalare anche dietro le quinte dell’Azienda di Soggiorno di Bolzano: Il nuovo consiglio di amministrazione si è insediato ( foto sopra), e con esso si guarda con ottimismo al futuro, ai progetti che saranno realizzati nei prossimi cinque anni di mandato, con un focus speciale sulla sostenibilità ambientale. Come imprenditore bolzanino, con lunga tradizione familiare, ne sono particolarmente orgoglioso.

L'autunno, con il suo splendore di colori e abbondanza, sembra essere stato ordinato proprio per festeggiare il nuovo inizio. Con esso parte anche la corsa contro il tempo per organizzare i nostri popolari highlights invernali, come il Mercatino di Natale di Bolzano, con i suoi tradizionali espositori e prodotti locali – un appuntamento particolarmente amato che avvolgerà Bolzano, porta delle Dolomiti, nel veramente tanto atteso clima natalizio.

In questo senso, auguro a tutti e tutte Voi una stimolante lettura del numero autunno/inverno del BM.

IEBE Leserinnen und Leser, der Sommer hat’s gut gemeint mit Bozen, und das Verkehrsamt blickt auf eine außerordentlich positive Saison zurück, auch weil sich so etwas wie Normalität in unseren Köpfen und im geschäftigen Treiben der Stadt eingestellt hat. Von der Schockstarre und der langen Flaute erholt, läuft die Südtiroler Landeshauptstadt in ihrer Erneuerungslust zur Hochform auf.

Neues gibt es auch hinter den Kulissen des Verkehrsamts zu berichten: Der neue Verwaltungsrat steht (im Bild oben), und damit macht sich Freude an neuen Projekten breit, die in den nächsten fünf Jahren mit besonderem Augenmerk auf die ökologische Nachhaltigkeit realisiert werden. Als alteingesessener Bozner Unternehmer bin ich darauf besonders stolz.

Der Herbst mit seiner Farbenpracht und Fülle scheint wie bestellt für diesen Neubeginn, und mit ihm startet auch der Wettlauf mit der Zeit beim Organisieren unserer traditionsreichen Winter-Highlights, wie dem Bozner Christkindlmarkt mit seinen beliebten Ausstellern und heimischen Produkten – ein willkommener Termin, um die Alpenstadt in die gewohnte und diesmal wirklich ersehnte Weihnachtsstimmung zu versetzen.

At the Bolzano Tourist Board, we look back on an extraordinarily positive season, as some form of normality resumed, setting us buzzing with the hustle and bustle of the city. Recovering from the shock and the long slump, Bolzano is in top form and keen for renewal.

Behind the scenes at the Bolzano Tourist Board, a new board of directors having taken the helm ( pictured above). They bring fresh input and enthusiasm for the many new projects slated for next five years: with a special focus on environmental sustainability. As a long-established Bolzano entrepreneur, I am particularly proud of this.

Autumn, with its celebration of colour and abundance, is spearheading this new beginning. With it, comes the annual race against time to ready our traditional winter highlights, including the Bolzano Christmas Market. A welcome date for the diary, full of local products and your favourite stalls, the Bolzano Christmas Market puts the alpine city into a familiar, and longed-for more than ever, Christmas mood.

GOOD NEWS FERRI TAGLIENTI per affilare i coltelli del cuciniere nonché le sciabole e baionette dei soldati ancora molto in uso nonostante fucili e cannoni. Tuttora siamo quattro fratelli attivi nel settore e il nome di famiglia come binomio di bottega e arte delle “affilature” si è sparso in tutta Italia e ben oltre i confini nazionali, offrendo oggetti taglienti ricercati e fatti per durare nel tempo. Mentre scompaiono le botteghe di antica tradizione, quelle dell‘artigianato, i Lorenzi sono diventati un punto di riferimento anche per curiosare nella storia. Per noi proporre un oggetto tagliente diventa un fatto di cultura. Questo vorremmo veicolare. L’Azienda di Soggiorno e l’Assessorato alla Cultura di Bolzano hanno accolto l’idea con interesse sostenendo fattivamente l’iniziativa.

Aperta da poco presso la Galleria Civica di Bolzano la singolare mostra “Ferri taglienti: storia, arte, cultura”, uno sguardo a un importante e sottovalutato aspetto della cultura materiale, quello delle lame e dei ferri taglienti in genere, che ci accompagnano nel quotidiano fin dai tempi più antichi. Da semplici selci utilizzate per diversi scopi, le lame si sono in seguito specializzate, garantendo successo in diverse attività, lasciando il segno nella quotidianità e nelle culture di ogni epoca e divenendo espressione di mode e ricordi. Partendo dalle prime attestazioni in selce risalenti al Paleolitico, la mostra affronta un viaggio tematico nella storia delle lame: pugnali e armi da caccia, rasoi, strumenti chirurgici, forbici, trousse da viaggio, così come posate realizzate con i materiali più svariati, lame curiose e oggetto di design, nonché lame di uso contadino e artigiano legate in particolare all’area trentino-tirolese. L’idea è partita dai fratelli Lorenzi, arrotini e coltellinai di Bolzano, dove gestiscono due botteghe nel centro, e con uno di essi, Franco, scambiamo qualche battuta: Chi Le ha messo la pulce nell’orecchio?

Sono più di 70 anni che la coltelleria Lorenzi si è stabilita nel centro storico di Bolzano. La mia famiglia, proveniente dalla Val Rendena in Trentino, opera nel settore oramai da tre geneazioni. Si narra che il primo Lorenzi abbia seguito le truppe di Napoleone

Cosa collega alle Sue prime esperienze da arrotino?

La piccola bottega con annesso laboratorio in centro, dove mio padre Nicola aprì la sua attività nel 1948, era per me adolescente uno scrigno di tesori: profumo di ferro e smeriglio, rumori strani e scintille. In quello scrigno curiosavo tra i ferri taglienti, ognuno con una forma particolare per le più svariate esigenze. Le lame mi hanno subito affascinato. Forse è stato proprio il coltello, antico come il mondo nella mano dell’uomo, che mi ha dato lo spunto per accrescere il mio interesse verso questa materia, credo poco conosciuta nonostante faccia parte della nostra vita quotidiana.

Come è cambiato il mondo della lama?

Dalla pietra al rame, dal bronzo al ferro e in seguito all’acciaio, sono passati centinaia di migliaia di anni con un’evoluzione straordinaria nella ricerca di qualità e forme. Se una volta i ferri taglienti erano realizzati dai fabbri, con la rivoluzione industriale alle soglie del 20imo secolo la produzione di lame è diventata più standar-

Nel 1923 si sono cominciate a realizzare lame e strumenti in acciaio inossidabile, evitando così l’ossidazione dei metalli. La ricerca nel campo delle lame sia in termini di qualità che di forme è in continua evoluzione, e questa esposizione darà il giusto merito a degli oggetti, la cui storia e sviluppo sono andati di pari passo con il progresso sociale.

Der sardische Hotel Manager Carlo Dessalvi, Direktor des nigelnagelneuen B&B Hotels Bolzano - Bozen in der Industriezone (seit Mai 2021 geöffnet), und seine polyglotte Frau kennen Bozen seit einem knappen Jahr. Vorher waren sie an anderen renommierten Urlaubsdestinationen tätig, am Lago Maggiore, in Abano Terme, Vicenza und Padua, Courmayeur, aber lange Zeit auch in der Schweiz, Deutschland, in Kenya. Die Hotelkette B&B Hotels führt 49 Häuser im Dreisterne-Segment in mittlerweile 30 Städten. Der erste Eindruck des Hotelmanager-Paars ist eine Liebeserklärung an die Stadt: die Herzlichkeit ihrer Bewohner*innen gepaart mit der Schönheit der Umgebung sei ein Selbstläufer. Ausgesucht haben sie sich den Standort selbst, weil Bozen am Schnittpunkt der deutschen und italienischen Kultur es ihnen ermöglicht, zwei Welten zu vereinen und ihren Nachwuchs mehrsprachig aufwachsen zu sehen.

Tra la città e Maria Assunta, grazie alla trazione a cremagliera, lo storico trenino era adatto soltanto al trasporto di persone, superava infatti un dislivello enorme prima di proseguire su un percorso pianeggiante da Maria Assunta per Soprabolzano, Stella e Collalbo. Per tutte le frazioni o i masi che non potevano essere raggiunti con il trenino, inoltre, c'era solo un sentiero ripido e pericoloso attraverso i vigneti e al bordo di precipizi rocciosi. Oggi come allora ci fu chi si oppose all’innovazione e vedeva nella strada la fine della situazione idilliaca sull’Altopiano. Nel 1954 arrivò il benestare del Consiglio Superiore dei Lavori Pubblici di Roma, nel 1959 si iniziarono i lavori che, anche per carenza di soldi, si protrassero fino al 1966 e costarono al Comune, alla Provincia e allo Stato complessivamente oltre un miliardo di lire. www.ritten.com

TECHNO IN MUSEION An exhibition that starts from a question: what does a musical genre that emerged in the 1980s have to do with globalisation? This group exhibition, initiated by Bart van der Heide, Director of Museion, takes up the entire museum building and also occupies a disused hydroelectric power station for a programme of collateral events. Part of the answer certainly is, this much can be revealed: efficiency, surpassing one’s limits, buornout and the experience of community, systemic injustice, exploitation, neglect. Techno“ can be seen ” as a call to action to break up the status-quo and expose social change.

Es gibt viel Platz, Licht und Holz im neuen Sitz des Tourismusvereins Eppan. Die Tore in der Bahnhofstraße 7 in St. Michael/Eppan sind seit kurzem geöffnet. Das sanierte Gebäude unter Ensembleschutz mitten im Dorfzentrum liefert nun viel Platz für neue Ideen und den direkten Austausch mit Einheimischen wie Gästen. Es ist toll, dass wir als Team wieder unter ” einem Dach zusammenarbeiten“, freut sich Direktor Thomas Rauch. Die vergangenen Jahre waren eine Herausforderung, mit einigen Mitarbeiter*innen am Rathausplatz in St. Michael und anderen im Infohaus beim Pillhof. Der großzügige Empfangsraum bietet einen Infobereich für Flyer und Broschüren und ein Frontoffice für die persönliche Beratung. Außerdem verweist Rauch auf den Mobilitätsschalter, eine neue Dienstleistung für Einheimische genauso wie für Gäste (siehe S. 18). Auch der Mobilitätsschalter befindet ” sich hier, den wir neuerdings im Auftrag der Gemeinde führen, im Sinne der Nachhaltigkeit“. Das Backoffice ist hingegen im ersten Obergeschoss angesiedelt. Insgesamt umfasst die neue touristische Ideenschmiede 200 Quadratmeter.

30 Jahre Bozner Christkindlmarkt wollen auch von den Kleinen gebührend gefeiert werden. CAFFÈ DELLE LINGUE Non a caso è nato a Bolzano, città poliglotta e molto aperta all’apprendimento delle lingue. Ha compiuto 20 anni quest’estate, il progetto, gratuito e senza prenotazione, organizzato dal Centro Giovani papperlapapp in collaborazione con la scuola di lingue alpha beta piccadilly. Al Caffè delle lingue persone tra 0 e 99 anni possono conversare in una lingua straniera in un'atmosfera accogliente e informale, anche per un solo incontro. On the Tschögglberg/Monzoccolo Mountain a new project aims to satisfy our playful streak. NaTour the Nature Tour - is a treasure hunt which explores the area around Jenesien, Mölten and Hafling. Eight especially beautiful and impressive spots take centre stage. There are naturally-occurring geological monuments, small lakes, a mountain church, towers of piled-up sandstone at 2,000 metres above sea level, Salten - Europe’s grandest larch plateau - and even earth pyramids. Each of these spots is marked and numbered on the accompanying map, along with a clue. Players just need to find the wooden signs engraved with symbols, then copy the information into the correct space on a map - so, don’t forget your pen! L’uscita del libro ha fatto scalpore, non tanto per l’argomento ma per la sua attualità e la potenza degli stereotipi sessisti così ben radicati, che portano, lo sappiamo, alla violenza di genere e al suo culmine i femminicidi. Barbara Bachmann, giornalista di Brunico, e Franziska Gilli, fotografa di Bolzano, hanno percorso l’Italia assieme, in un viaggio folle durato tre anni alla scoperta dell’immagine femminile dei nostri giorni raccogliendo testimonianze. Si sono soffermate sulle donne tra Vaticano, tv berlusconiane e Covid-19 e hanno cercato di capire come vivono le donne stesse questa contrapposizione e come si inseriscono le giovani in questa orrenda classificazione, formandosi in un femminismo intersezionale emergente (edizione raetia, 2021 – euro 24,90).

nter den fast 8.000 Gemeinden und 111 Landeshauptstädten Italiens sticht Bozen 2021 mit einem außergewöhnlich nachhaltigen Entwicklungskonzept heraus. Wir reden von mittel- bis langfristigen Maßnahmen. Bei der Auszeichnung ”Klimagemeinde Gold“ handelt es sich um den europaweit höchsten Preis für kommunalen Klimaschutz, vergeben vom europäischen Zertifizierungsprogramm ”European Energy Award“ und ins Leben gerufen von der Südtiroler Klimahaus Agentur. Aus ganz Europa haben sich bisher über 1.600 Gemeinden beteiligt. Ausschlaggebend war Bozens vorbildliches Vorgehen bei der Anpassung an den Klimawandel, durch Maßnahmen wie die energetische Sanierung kommunaler Gebäude, den Ausbau der Radmobilität, die Sensibilisierung der Bevölkerung für energie- und klimarelevante Themen und schließlich die Entwicklung eines ehrgeizigen Energiemanagement-Plans bis 2030.

Die Klimakrise im Nacken und die große Transformation vor Augen Dass eine 360° Wende notwendig ist, bestreitet heute niemand mehr. Die Unbeherrschbarkeit der Natur mit außerordentlich ergiebigen Regenfällen, Überflutungen, Erdrutschen und Hitzeextremen im vergangenen Sommer haben uns global wie lokal aufgerüttelt. Was die gefürchtete Erderwärmung noch aufhalten kann, hat die EU in klaren Zielvorgaben für den Zeitraum 2021 bis 2030 definiert, im Rahmen des Europäischen Grünen Deals. Das UNKlimaübereinkommen von Paris 2015 zum Erreichen des 1,5-Grad-Ziels und die Arbeit des Weltklimarats IPCC waren dafür die Grundlage. Dass auch auf der kleinsten territorialen Ebene, jener von Gemeinden, dafür gearbeitet und motiviert wird, macht das Ganze überhaupt erst greifbar. Durch den Beitritt zur europäischen Initiative ”Konvent der Bürgermeister

che Fußabdruck in Südtirol beträgt derzeit 5,3 Tonnen CO2-Äquivalente pro Jahr (das ambitionierte Ziel bis 2050 liegt bei 1,5 Tonnen). Acht sind die Themenschwerpunkte, anhand derer man einen besseren Überblick über kommunale Angebote und Dienstleistungen erhalten kann: im Übergang zu erneuerbaren Energien, in der energetischen Gebäudesanierung, beim Vermeiden von Energie- und Ressourcen-Verschwendung, in der nachhaltigen Mobilität (44% der Emissionsquellen macht in Südtirol der Verkehr aus) und schließlich auch im nachhaltigen Konsum. Ein Zeichen für hohe Lebensqualität ist gerade die Qualität der Umweltdienste einer Stadt: frisches gutes Trinkwasser, einwandfreie Gas- und Abwassernetze, eine Abfallbewirtschaftung, die sich sehen lässt, wie ein gepflegtes Stadtbild. Dafür ist in Bozen seit 20 Jahren die SEAB - Energie- und Umweltbetriebe Bozen AG zuständig. /

für Klima und Energie“ hat sich die Stadt Bozen verpflichtet, bis 2030 die eigenen Kohlendioxyd-Emissionen um mindestens 40% gegenüber dem Wert von 2010 zu senken. Daneben arbeitet man seit Jahren bereits an der Verdichtung der Stadtbegrünung, u.a. mit der Förderung von Gründächern, an der Entsiegelung von Böden, an der Förderung der energetischen Gebäudesanierung einschließlich Nutzung erneuerbarer Energiequellen, an der Verbesserung der Energieeffizienz in den gemeindeeigenen Gebäuden. Im Rahmen der Klimaanpassung setzt man auf den Gefahrenzonenplan, auf einen verbesserten Bevölkerungsschutz und den Ausbau bzw. die Instandsetzung von Hangsicherungssystemen.

Auch hat man im Bozner Rathaus verstanden, dass es zum Erreichen der Ziele notwendig ist, das Bewusstsein der Bürger*innen zu verändern. Dafür wurde u.a. ein ”Klimasparbuch“ mit praktischen Tipps gestaltet.

Die Broschüre, die es auch digital auf der Gemeindeseite gibt, weist praxisnah auf, wie der eigene ökologische Fußabdruck verringert und gleichzeitig Geld gespart werden kann. Übrigens, der durchschnittli-

Natur-Tipp im urbanen Raum Am orografisch rechten Eisackufer ist derweil auf einer 1,5 Hektar-Fläche ein Bioenergetischer Pfad als Freizeit-Lebensraum und Ort für eine regenerierende Pause entstanden. Die Stadtgärtnerei kümmert sich darum: 160 Bäume, davon 28 Spezies, von der Linde über die Buche und die verschieden Ahorne bis hin zur Kiefer, erzeugen unterschiedliche elektromagnetische Felder mit wohltuender Wirkung auf den Menschen.

Eine akkurate Beschilderung erklärt die therapeutische Wirkung auf unterschiedliche Organe anhand der elektromagnetischen Frequenzen und lädt zum ”Treehugging“ ein und auf jeden Fall zum Verweilen in Flussnähe.

Mit dem Rad flotter Wie kaum eine andere italienische Stadt verfügt Bozen über ein ausgedehntes innerstädtisches Radwegenetz: rund 50 km Radwege, die alle fünf Stadtviertel, alle Hauptziele miteinander verbinden, auch Sehenswürdigkeiten. Dem Urban Cycling widmet das 16

Verkehrsamt eine eigene Broschüre mit neun thematischen Radausflügen und Tipps auf Bozner Stadtgebiet (fragen Sie beim Infoschalter nach!). Wer das Fahrrad benutzt, auch als Gast, fährt sicher und kommt schneller ans Ziel als mit einem Motorfahrzeug, meist sogar schneller als die Öffis, insbesondere zu Stoßzeiten. Die Gemeindeverwaltung plant derzeit einen Radschnellweg mit Überwachungskameras, geregelten Überquerungen sowie intelligenter Beleuchtung, Pumpstationen und Notrufsäulen. Und sie setzt schon lang auf einen engmaschigen Dienst für den Radverleih im Bikesharing-System, der nun mit öffentlichen Verkehrsangeboten (Autobusse, Züge und Seilbahnen) besser integriert werden soll und auch ElektroLeihräder an verkehrsstrategischen Stellen zur Verfügung stellt.

Bolzano Bozen Card Eine kleine Gästekarte macht seit über zehn Jahren den (nachhaltigen) Unterschied: Mit ihr lassen sich alle öffentlichen Verkehrsmittel Südtirols frei nutzen genauso wie Bozens Museen- und Schlösser-Landschaft kostenlos erschließen. Auch die Stadtführungen des Verkehrsamts gehören zu den Inklusivleistungen.

In den letzten 120 Jahren ist die Durchschnittstemperatur im Alpenraum um rund 2°C gestiegen, wie die Forscher*innen der Europäischen Akademie Bozen EURAC, errechnet haben. Das ist doppelt so viel wie im globalen Durchschnitt. Gerade darum ist es wesentlich, dass der ganze Ballungsraum Bozen mit einer gezielten Energie- und Umweltpolitik gegen den Treibhauseffekt Verantwortung übernimmt. Auch die Beispiele Jenesien, Eppan und Ritten machen Schule.

Besonderes Engagement steckt Jenesien, die Gemeinde am Bergrücken oberhalb von Bozen, in die nachhaltige Energiepolitik. Dafür hat sie 2018 die Zertifizierung ”Klimagemeinde Silver“ und den European Energy Award für ihren besonderen Einsatz im nachhaltigen Umweltmanagement erhalten. Das Bozner Fernwärmenetz Eine herausragende Erscheinung in Bozen Süd unter Schloss Firmian mit seinem Messner Mountain Museum ist eindeutig der Alperia Tower, von weitem sichtbar.

Seit vier Jahren begeistert der neue Wärmespeicher Vorbeifahrende vor allem nachts durch sein Lichtspiel.

Der 40 Meter hohe Turm mit seiner beleuchteten Aluminiumhülle verbindet technische Innovation mit Kunst und Architektur. Es wurde nach einem Konzept der Künstlerin Julia Bornefeld realisiert. Im Turm wird thermische Energie in Form von 5.850 Kubikmeter Wasser gespeichert, das durch die Abwärme der nahen Müllverwertungsanlage auf bis zu 95°C erhitzt werden kann, also ohne Verbrauch fossiler Quellen und ohne Ausstoß von CO2-Emissionen. Bei vollem Speicher wird so die gespeicherte thermische Energie (bis zu 220 MWh) für das städtische Fernwärmenetz bereitgestellt. Der Vorteil: Sie wird dann genutzt, wenn sie effektiv gebraucht wird, nämlich zu Spitzenzeiten. Das Bozner Fernheizwerk ist seit rund 30 Jahren in Betrieb und wird laufend ausgebaut. Wie wichtig Wärme in einer Alpenstadt wie Bozen ist, davon zeugt die gesetzliche Regelung, wonach von Mitte Oktober bis Mitte April geheizt werden darf.

denn eines haben alle verstanden: Gegen die Erderwärmung arbeiten heißt auch die Lebensqualität im Dorf wesentlich zu steigern. Jenesien hat letzthin nicht nur den Ressourcenverbrauch und die Abgase drastisch gesenkt, sondern auch bei der Attraktivität unter umweltbewussten Gästen gepunktet. Denn die meisten Beherbergungsbetriebe und auch Bauernhöfe am Hochplateau sind bemüht, bei Unterkunft, Verköstigung und Freizeitangebot Außergewöhnliches im Sinne eines aktiven Umweltschutzes zu leisten. Im kommenden Schuljahr wird die bereits plastikfreie Grundschule zu einer echten ”Klimaschule“, die auf Schulweg, Jause, Schulmaterialien und Energieverbrauch im Schulgebäude achtet. Lokale und saisonale Produkte spielen im Ländlichen eine wichtige Rolle: Bauernmarkt, Hofläden, sogar ein Hof, der sich auf die Herstellung von Bier mit eigenen Hopfensorten spezialisiert hat, der Guggenbergerhof (Guggenbräu) in Afing. Und noch einer, der Menihof, der Urlaub auf dem Bauernhof in einer energieautarken Inselanlage anbietet. Was das heißt? Auf einer Lichtung mitten im Fichtenwald auf 1.250 m Höhe das Leben am Bauernhof mit eigenem Quellwasser, großem Regentank für die Bewässerung, einer Photovoltaik- und einer Hackschnitzelanlage gestalten und sich selbst versorgen.

Auch Eppan an der Weinstraße ist seit 2018 ”Klimagemeinde Silver“. Neben einem kostenlosen Energie-, Bau- und Sanierungsberatungsdienst der Gemeinde, wurden zahlreiche Sensibilisierungskampagnen durchgeführt, die eine aktive Beteiligung der Bevölkerung im Fokus hatten. Erreicht hat man sie auch über das Eppaner Zukunftsforum 2020-2030, das weiterhin die Leitplanken der Klima-Gemeindepolitik bildet und hin zur Plakette ”Gold“ schielt. Fahren mit Öffis und Bike, auch eBike: Besonders aktiv ist Eppan in der Mobilitätspolitik, mit einem eigenen Bürgerschalter für nachhaltige Mobilität, mit Infoabenden, Preisen und Fahrradwettbewerben, mit einer sukzessiven Verbindung der übergemeindlichen Radmobilität und vor allem mit Akzenten für Pendler*innen: So hat das Rathaus in den letzten Jahren eBikes angekauft, die sehr günstig an Ortsansässige vermietet werden und, mit GPS ausgestattet, deren effektive Bewegungen aufzeichnen. Dieser Fuhrpark wird nun auf 120 aufgestockt, denn die Bikes gingen weg wie die warmen Semmeln. Ab 2022 sollen auch Pendler*innen innerhalb der Gemeinde damit einbezogen und Unternehmen motiviert werden, die Erreichbarkeit des Firmensitzes mit dem Fahrrad zu erleichtern und die eigenen Angestellten in das Projekt ”Radmobilität“ einzubinden.

gar nicht erst mit oder lässt es bis zur Heimfahrt in der Parkgarage stehen. Siehe www.ritten.com unter ”Ritten mobil“. Und wer mit dem Elektroauto auf den Ritten fährt, findet in Klobenstein eine öffentliche Ladestation. Und die Abfallvermeidungs-Aktion ”Refill your bottle“ hat am Ritten jüngst mit Erfolg Fuß gefasst, mit einer wiederverwertbaren Wasserflasche aus Edelstahl, die als Trink- oder als Thermosflasche dient und an die Milchbehälter erinnert, die früher bei den Bauern gängig waren. Sie ist in den Büros des Tourismusvereins Ritten käuflich. Derzeit arbeitet der Tourismusverein Ritten in der Gruppe des Nachhaltigkeitsindex‘ Tourismus Südtirol mit. Ziel ist es, 2022 auch als Pilot-Destination dabei zu sein.

Seit 2009 läuft auf über 1.000 Höhenmetern am Ritten ein Fernheizwerk und versorgt die zahlreichen Wärmeabnehmer in den Fraktionen Oberbozen, Wolfsgruben und Klobenstein mit Bioenergie: erneuerbare Holzressourcen aus dem Rittner Waldbestand werden dafür herangezogen, und die einhergehende Durchforstung des Waldbestands verbessert auch noch seine Qualität. Außerdem betreibt die FernheizwerkGenossenschaft Ritten eine Kompostieranlage für den im Gemeindegebiet anfallenden Grün-, Baum- und Strauchschnitt und verarbeitet diesen hochwertigen Dünger zusammen mit der Arbeitsgemeinschaft für biodynamische Wirtschaftsweise ARGE und Bioland zu Humus, der wiederum in der Biologischen Landwirtschaft Verwendung findet. Ein Vorzeigemodell ist die Gemeinde Ritten aber vor allem in puncto sanfter Mobilität: Die Verbindungen zur Talsohle sind sowohl über die schnelle und hochmoderne Rittner Seilbahn als auch über die außerstädtischen Busse hervorragend. Wer hier urlaubt, nimmt das Auto am besten

NOCH EMISSIONSFREIER UND GRÜNER Irene Senfter und Sonja Abrate stehen als Geschäftsführerin die eine, als Projektmanagerin die andere dem Südtiroler Ökoinstitut vor: einer Genossenschaft, die Wirtschaft und Soziales für praktikable Umweltziele begeistern will. Ein Gespräch über die Zukunft der 108.000 Seelen-Stadt Bozen, Tor zum Weltnaturerbe Dolomiten.

Inwiefern übernimmt Bozen eine Öko-Vorreiterrolle?

Bei der Radmobilität ist Bozen im italienischen Ranking ganz vorn, sowohl vom Angebot (Radwegenetz, Beschilderung, Reifenfüllstationen, Fahrradständer) als auch von der Nutzung, denn fast ein Drittel der täglichen Fahrten der Bozner*innen werden mit dem Fahrrad zurückgelegt. Neben der Fahrradfreundlichkeit haben Mobilitätsfachkräfte aus anderen europäischen Städten oft schon das Projekt ”Pedibus“ bestaunt. Dieser sogenannte ”Bus auf Füßen“ hat in Bozen eine lange Tradition und garantiert Grundschüler*innen Sicherheit auf ihrem Schulweg, erzieht sie aber gleichzeitig zu mehr Bewegung und hat noch eine soziale Komponente, nämlich diese täglichen Wege gemeinsam zurückzulegen. Mittlerweile hat Bozen ganze zehn Pedibus-Linien: Wie bei einem herkömmlichen Linien- oder Schulbus gibt es auch hier einen Fahrplan mit Haltestellen, die Kinder sind Fahrgäste und die Schülerlotsen ”Chauffeure“. Außerdem hat Bozen sehr früh schon verstanden, dass Schulzonen verkehrsberuhigt werden müssen, dass die entsprechenden Straßen zu Unterrichtsbeginn und -ende für den Autoverkehr zu sperren sind.

Ein drittes dickes Plus kriegt Bozen beim Stadtgrün: Wir haben 130 Hektar öffentliche Grünflächen auf 52 km2 Stadtfläche, zusätzlich die Promenaden, wir haben 13.000 Bäume auf öffentlichem Raum, dabei 340 verschiedene Baumarten (1.300 davon stehen aufgrund von Durchmesser und Höhe unter Schutz). Die Stadtgärtnerei führt einen digitalen Baumkataster, als eine der ersten italienischen Städte hat die Gemeinde 2004 einen Beschränkungsindex der versiegelten Flächen in die Bauordnung eingeführt – alles Bemühungen hin zu

mehr Begrünung und Entsiegelung. Und noch etwas: Die Stadtverwaltung hat mit ihrem institutionalisierten Angebot an Umwelterziehung in Kindergärten, Grundund Mittelschulen einen Meilenstein gesetzt.

Wo besteht Aufhol- oder Nachholbedarf?

Natürlich gibt es noch kleine Lücken am Radwegenetz, die zu schließen sind, gerade bei der Beseitigung von Gefahrenstellen … Was wir allerdings am meisten vermissen, ist eine andere Grundhaltung in Politik und Bevölkerung, nämlich die Erkenntnis, dass Fußgänger*innen und Radfahrer*innen Vorrang haben und der motorisierte Individualverkehr erst an dritter Stelle kommt, nämlich nach dem öffentlichen Nahverkehr.

Wir wollen eine Stadt mit Flair, die primär zu Fuß und am Fahrradsattel erlebt wird. Und: Es ist für (fast) alle machbar, eine Strecke von bis zu 5 km mit dem Fahrrad zurückzulegen. Es kann nicht ökologisch sein, sich als 60-80 kg schweres Wesen von einem 2-TonnenGefährt herumkarren zu lassen, und zwar egal, ob fossil oder elektrisch angetrieben. Wenn wir von Nachhaltigkeit reden, dann mit dem Gedanken, den der Klimatologe Luca Mercalli jüngst in einem Interview ins Spiel gebracht hat: ”Nachhaltigkeit ist heute eine Frage des Subtrahierens und nicht des Addierens.“ Ihr habt bei der Entwicklung des CityTrails mitgewirkt. Warum?

Weil dieser Lauf ein besonderer ist und den Kriterien entspricht, die wir gerade angesprochen haben. Das Verkehrsamt der Stadt Bozen ist an uns herangetreten mit der Idee, einen ”Genuss-Lauf“ zu organisieren.

Am 17. Oktober fand übrigens die vierte Ausgabe statt, mit einem Lauf über 10 km im Flachen und mit zwei sportlich anspruchsvolleren Läufen, einmal auf der Anhöhe der Promenaden über Bozen mit Ausblick auf die Dächer der Stadt, die Weinberge und umliegenden Gipfel und einmal im klassischen St. Magdalener Gebiet mitten in den Weinbergen. Aber bei allen drei Varianten geht es darum, die Stadt zu er-laufen

Habt ihr Tipps für Tourist*innen und Stadtbummler*innen?

Kommt bitte mit den öffentlichen Verkehrsmittel in die Stadt - Bozen ist hervorragend am öffentlichen Verkehrssystem angebunden. Orientiert euch bei einem Spaziergang und leiht euch zwischendurch ein Fahrrad aus, um eure gesteckten Ziele, Sehenswürdigkeiten, Lokale oder Keller auch in den peripheren Stadtteilen zu erreichen. Nehmt auf euren Wegen durch die Stadt eure Trinkflasche mit und füllt sie mit dem top Bozner Leitungswasser, aufgrund seiner Qualität auch ”Talferlagrein“ genannt, an einem der 19 Brunnen im Stadtgebiet. Und kauft und konsumiert so, dass ihr möglichst keinen oder wenig Abfall zurücklässt.

Um das Ökoinstitut vorzustellen, muss man in die Ökobewegungs-Geschichte Südtirols blicken: 1989 wurde es vom Visionären Hans Glauber gegründet, der die ”Toblacher Gespräche“ in seinem Geburtsort initiiert hatte. Mit seinem Nachhaltigkeitstraum überzeugte er Menschen in Politik und Gesellschaft von der Wichtigkeit der Themen Klimaschutz und Zukunftstauglichkeit.

Nach dem frühen Tod des Ökologen und Soziologen führte sein Freundeskreis das Ökoinstitut fort. 2018 wurde der gemeinnützige Verein in eine Genossenschaft umgewandelt. Heute erarbeitet es Projekte in der Umweltbildung, in der Mobilität, im Klimaschutz, im sanften Tourismus und überhaupt in der Wirtschaft. Es berät und zertifiziert zudem für die Labels ”Green Event – KlimaLand Südtirol“, ”CSR – Corporate social responsability“ und ”KlimaGemeinde“. (ar)

UNA CITTÀ VUOLE ESSERE UN MODELLO BOLZANO È RECENTEMENTE DIVENTATA IL PRIMO COMUNECLIMA GOLD IN ITALIA. E GIUSTAMENTE.

Tra i quasi 8.000 comuni e 111 capoluoghi di provincia in Italia, Bolzano si distingue per una politica di sviluppo locale eccezionalmente sostenibile che le ha permesso di ottenere la certificazione di "ComuneClima Gold". Si tratta del più alto riconoscimento europeo per la protezione del clima comunale, assegnato dalla piattaforma di certificazione European Energy Award, che Bolzano ha ottenuto dopo un percorso promosso dall'Agenzia CasaClima dell'Alto Adige. Il fattore decisivo è stato l'approccio esemplare di Bolzano all'adattamento ai cambiamenti climatici.

La crisi climatica che incombe e la grande trasformazione davanti ai nostri occhi Oggi, nessuno contesta più la necessità di una svolta a 360°. Aderendo all'iniziativa europea "Patto dei sindaci per il clima e l'energia", la città di Bolzano si è impegnata a ridurre le proprie emissioni di anidride carbonica di almeno il 40% entro il 2030 rispetto al 22

valore del 2010. Inoltre, la città sta lavorando da anni per aumentare il verde cittadino, compresa la promozione di tetti verdi, la limitazione all’impermeabilizzazione del suolo, la promozione dell’efficientamento energetico degli edifici privati, compreso l'uso di fonti di energia rinnovabili, e il miglioramento dell'efficienza energetica negli edifici del Comune stesso.

Nel contesto dell'adattamento al clima, l'attenzione si concentra sul Piano delle zone di pericolo, sul miglioramento della protezione civile e sull'espansione o la riparazione dei sistemi di protezione dei pendii.

Il Comune ha anche capito che è necessario cambiare la consapevolezza dei cittadini per raggiungere gli obiettivi. A questo scopo, è stato creato una brochure per la protezione del clima con consigli pratici e buoni di acquisto sostenibile.

Punta della natura nello spazio urbano Nel frattempo, su un'area di 1,5 ettari lungo la riva destra dell'Isarco, è stato creato un percorso bioenergetico come rinnovato spazio per il tempo libero e luogo per una pausa rigenerante. La cartellonistica sugli alberi spiega l'effetto terapeutico delle frequenze elettromagnetiche emanate dalle varie specie arboree sui diversi organi umani e invita al "treehugging", l’abbraccio del tronco, e in ogni caso a soffermarsi sulle panchine disposte vicino al fiume.

La rete di teleriscaldamento di Bolzano Una costruzione che salta subito all’occhio a Bolzano Sud, sotto Castel Firmian con il suo Messner Mountain Museum, è chiaramente la Torre Alperia, visibile da lontano. Da quattro anni, il nuovo serbatoio di accumulo di teleriscaldamento delizia i passanti con i suoi giochi di luce, soprattutto di notte. La centrale di teleriscaldamento di Bolzano è in funzione da circa 30 anni e viene costantemente ampliata. L'importanza del calore in una città alpina come Bolzano è dimostrata dalla vigente regolamentazione legale che permette il riscaldamento da metà ottobre a metà aprile.

Più veloci in bicicletta Come quasi nessun'altra città italiana, Bolzano ha una vasta rete di piste ciclabili interne: circa 50 km da percorrere sulle due ruote che collegano tutti i cinque quartieri della città e tutte le destinazioni principali, compresi i luoghi di interesse. L’Azienda di Soggiorno e Turismo ha dedicato una propria brochure al ciclismo urbano con nove escursioni a tema in bicicletta e consigli sul territorio della città di Bolzano (chiedete al banco informazioni!). Bolzano City Council also understands how crucial it is to change citizen awareness, in order to achieve the goals. To this end, and among other things, a climate savings book with practical tips has been designed.

Bolzano Bozen Card Since its inception ten years ago, the Bolzano Bozen Card has been making a (lasting) difference for visitors. Not only does it provide free use of all South Tyrol’s public transport, it also allows free entry to Bolzano's museums and castles. Guided tours of the city by the tourist office are also included.

Faster by bike For an Italian city, Bolzano has an almost unapparelled network of inner-city cycle paths. Around 50 km of cycle paths link the five city districts with all the main destinations, including places of interest. The tourist office has produced a brochure, dedicated to urban cycling, with nine thematic cycling excursions and tips for the Bolzano city area (ask at the information desk!). If you’re a cyclist of any level, even as a visitor, you’ll travel safely and reach your destination faster than by car, usually even faster than the public transport system, especially at rush hour.

mpossibile immaginarsi una posizione migliore: sulla collina di Santa Maddalena, sul soleggiato pendio rivolto verso sud, immerso nei vigneti e con un’impareggiabile vista sulla conca bolzanina: è l’Eberlehof, uno degli antichi masi che punteggiano questo territorio che dista solo poco più di chilometro dal centro di Bolzano, raggiungibile facilmente anche a piedi, se non ci spaventa un po’ di salita. bm è andato a trovare la famiglia di vignaioli che abita e lavora all’Eberlehof, ad accoglierci troviamo Tomas Ziller, con la moglie Margit e il figlio Christian.

L’Eberlehof lo troviamo citato in documenti antichissimi, addirittura del 1312, ci sono secoli di tradizione alle spalle dell’odierna conduzione. Cosa significa per Lei e per la Sua famiglia gestire un maso contadino così antico? È innanzitutto un grande onore poter portare avanti il lavoro di tante generazioni precedenti. Lo considero una grande fortuna, anche se dietro l’aspetto idilliaco del luogo che colpisce tanto i visitatori si cela in realtà molto lavoro, impegno e dedizione. Un onore, ma certo anche molta responsabilità: quella di portare avanti una tradizione così importante, conservarla adattandola però alle esigenze dei tempi moderni, e trasmetterla alle generazioni successive. Con tanto impegno, giorno dopo giorno.

Gestire un maso contadino significa vivere e lavorare sempre in famiglia: come si riesce a mantenere l’armonia e l’equilibrio in questo contesto?

Funziona, come ha sempre funzionato: ciascuno ha delle proprie abilità e conoscenze specifiche, per esempio io mi occupo più delle filtrazioni, delle analisi si occupa maggiormente mio figlio, ma ci si sostituisce e aiuta in base alle esigenze. Certo, ciascuno ha le proprie competenze, ma ci integriamo molto bene. A volte possono nascere dei piccoli contrasti, per esempio tra esperienza acquisita e voglia di innovazione, ma alla fine si trova sempre il modo di bilanciare e di far funzionare il tutto al meglio.

Qual è il primo ricordo che ha Lei della vigna e del lavoro in vigna?

Abbiamo 3 ettari di terreno coltivato a vigneto tutt’intorno al maso, cosa ormai piuttosto rara. Nel vigneto c’è sempre

qualcosa da fare, praticamente tutto l’anno, per cui la vita si svolge da sempre soprattutto tra le vigne. Da piccolino i miei genitori mi mettevano in una cesta di vimini e mi portavano in vigna con loro, i miei primi ricordi sono legati al gioco. Ed è giocando che si inizia a dare una mano, per quel che si riesce, e lo stesso abbiamo fatto noi con i nostri figli. In fondo, dove trova un parco giochi più bello e naturale di questo?

Il vostro maso quindi da sempre produce soprattutto vino.

In passato i masi avevano un po’ di tutto, bestie da cortile, diverse colture… tutto quello che serviva per vivere in autonomia. La vigna però qui ha sempre dominato, la posizione e il terreno sono ideali. Nel tempo si è quindi sviluppata sempre di più. Abbiamo uve rosse, con le quali produciamo il vino principe della collina, ovvero il Santa Maddalena Classico DOC, ma anche Lagrein e Merlot. Con la varietà di uve bianca Blaterle produciamo invece un fresco vino bianco.

Santa Maddalena, Lagrein e Blaterle sono vitigni autoctoni dell’Alto Adige. In tutto con le nostre vigne produciamo circa 30.000 bottiglie all’anno.

Come è cambiata la produzione e il mercato del vino negli ultimi decenni?

Sicuramente è cambiato in direzione di una maggiore qualità, a discapito della quantità. La tecnica e i procedimenti in cantina si sono evoluti naturalmente, e anche il consumatore oggi è informato ed esigente, cerca vini di qualità, e noi puntiamo su questo. Siamo tanti “piccoli” produttori, dobbiamo necessariamente lavorare insieme per promuovere i nostri prodotti, che pur si differenziano da tenuta a tenuta. Una volta tutto questo non era necessario, si produceva quel che serviva, ognuno più per conto suo.

Quindi è importante la comunicazione, il dialogo col consumatore.

Per me è essenziale. E in questo siamo molto aiutati anche dall’Azienda di Soggiorno e dagli eventi che propone la città, sempre molto belli e molto utili, come Calici di Stelle e la Mostra Vini di Bolzano. È fondamentale incontrare i consumatori, spiegare i

Cosa si sente di dire alle future generazioni, ai figli e ai futuri nipoti che porteranno avanti la secolare tradizione dell’Eberlehof?

Innanzitutto bisogna mantenere, conservare quello che c’è. Ma la tradizione non deve essere un limite, bisogna sempre cercare di migliorarsi, aprirsi alle novità e guardare al futuro. Fermarsi mai. (aa)

Immagino che i visitatori rimangano incantati anche dalle tante opere d’arte esposte nelle cantine, appartenenti ad artisti e periodi diversi. Da dove provengono?

Collezionare opere d’arte è sempre stata in realtà una passione di mio padre, Horst, che li ha acquistati nel tempo da privati e da artisti locali, come Peter Fellin, Robert Spiss, e altri. Anch‘io ho avuto la fortuna di conoscerne

qualcuno, quindi per me vedere esposti quadri e sculture nel maso e nelle cantine dove si fanno i vini è sempre sembrata una cosa normale e mi sono appassionato anche io.

prodotti, farli conoscere, e poi portarli anche qui, nella tenuta, dove settimanalmente offriamo visite guidate e tutti rimangono affascinati dal posto, dalle antiche cantine e soprattutto dai nostri vini che facciamo degustare.

Soprattutto i giovani sono interessati a conoscere cosa c’è dietro al bicchiere di vino che assaggiano. C’è un interesse crescente fra le giovani generazioni, e in questo vedo anche un po’ il mio compito, ovvero trasmettere conoscenza sul vino, ma anche sugli altri aspetti del nostro territorio, sulla storia e sulla cultura dell’Alto Adige.

ZWISCHEN TRADITION UND MODERNE TOMAS ZISSER, DIE SEELE DES EBERLEHOFS Eine bessere Lage kann man sich gar nicht vorstellen: auf dem Hügel von St. Magdalena, am sonnigen Südhang, umgeben von Weinbergen und mit einem atemraubenden Blick auf den Bozner Talkessel: Der Eberlehof ist einer jener typischen alten Bauernhöfe dieser Gegend, wenig mehr als einen Kilometer vom Bozner Stadtzentrum entfernt und auch zu Fuß zu erreichen, wenn man einen kleinen Aufstieg nicht scheut.

Der Eberlehof wird in Dokumenten von 1312 bereits erwähnt. Was bedeutet es für Sie und Ihre Familie, einen so alten Bauernhof zu führen?

In erster Linie ist es eine große Ehre, die Arbeit so vieler Generationen fortsetzen zu können und ihn dann weiterzugeben an die nächsten Generationen. Ich betrachte es als Glück, selbst wenn hinter dem idyllischen Erscheinungsbild, das die Besucher so sehr beeindruckt, in Wirklichkeit viel Arbeit, Engagement und Hingabe steckt, um ihn zu erhalten. Es geht darum, ihn an die Bedürfnisse der modernen Zeit anzupassen, ohne seinen Charakter zu verfälschen. Heute produzieren wir insgesamt etwa 30.000 Flaschen pro Jahr aus den autochthonen Rebsorten St. Magdalena, Lagrein und Blaterle.

Was ist Ihre erste Erinnerung an den Weinberg?

Wir besitzen 3 Hektar Rebfläche, und die befindet sich rund um den Hof, was heutzutage recht selten ist. Hier ist immer etwas los, praktisch das ganze Jahr über, und so hat sich das Leben schon immer hauptsächlich zwischen den Reben abgespielt. Als ich ein Baby war, 32

nahmen mich meine Eltern in einem Weidenkorb mit in den Weinberg, und ich erinnere mich, wie ich schon als Kleinkind dort spielte. Beim Spielen fängt man im Grunde an zu helfen, so gut man kann. Das haben wir auch mit unseren Kindern so gemacht.

Kann man sich einen schöneren und natürlicheren Spielplatz vorstellen?

Wie haben sich die Weinproduktion und der Weinmarkt in den letzten Jahrzehnten verändert?

Sie hat sich hin zu einer höheren Qualität auf Kosten der Quantität verändert. Die Techniken und Verfahren im Weinkeller haben sich natürlich weiterentwickelt, und wer heute Wein konsumiert ist informiert und anspruchsvoll, sucht nach Qualitätsweinen, und darauf konzentrieren wir uns. Vor allem junge Menschen wollen wissen, was hinter dem Glas Wein steckt, das sie verkosten. Das Interesse wächst.

Woher kommen die vielen Kunstwerke, die der Eberlehof in seinen Kellerräumen ausstellt?

Das Sammeln von Kunstwerken war schon immer eine Leidenschaft meines Vaters Horst, der sie im Laufe der Zeit von Privatpersonen und lokalen Künstlern wie Peter Fellin, Robert Spiss und anderen kaufte. Ich hatte das Glück, einige von ihnen kennen zu lernen, so dass es für mich ganz normal war, Gemälde und Skulpturen auf dem Hof zu sehen, wo die Weine hergestellt werden.

My father, Horst, was passionate about art. He collected over time, from private individuals and local artists such as Peter Fellin and Robert Spiss, among others – and I’ve been lucky enough to know a few of them. So for me, seeing paintings and sculptures on display in the farm and wine cellars has always been normal. However, it’s something I’ve become passionate about too!

What are your first memories of vineyard life?

Three hectares of vineyard surround the farm, which today is quite rare. There's work in the vineyard all year round, so life has always been spent among the vines. As a child, my parents used to put me in a wicker basket and take me with them, so my first memories are of playing there. Then, you start helping out

Has wine production and the market changed in recent decades?

The emphasis now is more quality, less quantity. Cellar techniques have evolved and today’s consumer is also better-informed and more demanding, so quality has become our focus. Younger people, in particular, are very interested in knowing what’s behind the wine - and this interest is growing.

The Eberlehof farm is documented way back to 1312. What does running such a piece of history mean for you and your family?

It's a great honour, continuing the work of so many previous generations. Although behind the idyllic appearance, there’s a lot of work and commitment to preserving it, adapting it to the needs of the modern world, and preparing it for the next generation. Here, we produce 30,000 bottles a year from our own St. Magdalena, Lagrein and Blaterle vines.

Skyalps is a subsidiary of Fri-El Green Power AG. Here, we look at the role this forward-looking, environmentally-orientated business plays: now and into the future.

The back story: just two years ago Josef Gostner, CEO of the Fri-El Group of Companies, bought the Bolzano airport operating company and infrastructure. This was in partnership with the real estate investor René Benko and the building contractor Hanspeter Haselsteiner.

Following acquisition, Gostner founded Skyalps, the regional airline offering flights since June 2021. He tells bm Magazine what flying - his personal passion - has to do with Bolzano: as a location in itself and its international accessibility.

Accessibility is an issue for a destination that has an average stay of 4-5 days, and there’s an expectation that a journey of 1,000 km must not exceed 3-4 hours. At the moment, overnight stays in South Tyrol amount to 33 million but only 11% are with international visitors. By comparison Innsbruck, which has a much shorter tourist high season (three months in winter and three months in summer), has almost 30% international visitors. This is despite South Tyrol's tourist season lasting ten months, of which 40% is winter tourism and 60% summer tourism. So, what attracts guests to South Tyrol? The Alps, the sun and the Mediterranean food. The city of Bolzano will also bene-

fit from targeting international visitors. Our clientele are higher end of the sector, where quality trumps everything. Skyalps has already received letters from customers in Düsseldorf and Berlin, thanking us for the fact that South Tyrol can now be reached in just a few hours and that it’s now far speedier to reach the south side of the Alps. That is the essence of our business model, we want to be ambassadors of the Alps and we define ourselves as local globetrotters.

What destinations does Skyalps currently offer from Bolzano?

We started operations last June with charter flights to Sardinia (Olbia) and Spain (Ibiza) and scheduled flights to Parma, Rome, Berlin and Düsseldorf. For the winter, we’re planning an expansion of the flight network to include London, Brussels, Amsterdam, Rotterdam, Hamburg and Copenhagen.

A new start with pandemic omens: How is air mobility shaping up at the moment?

Clearly, the pandemic created a severe crisis for the aviation industry and has gravely impacted tourism as a whole. On the other hand, it has increased the desire and longing for travel. In the meantime, we have flown many South Tyroleans to the beaches of Ibiza and the even closer Olbia - all of them overjoyed to take off from Bolzano! At present, passengers can be picked up by shuttle buses. Four and five-star hotels often pick up their guests even from Venice airport or Verona. But from 2026, in just four years, it will be possible to travel by train to the new San Giacomo train station, near Laives - right on Bolzano airport’s doorstep. Public transport plays an increasingly central role, also for reaching the airport.

So the benefits extend to hotels and guesthouses as well, not to mention the positive impact on the environment and climate.

In the current process of transformation towards a green, electrified world, we in South Tyrol have a head start because we already produce 150% renewable energy. Now, the global challenge is to find better energy-storage systems.

This is the great challenge, also and especially for air traffic. Half of all global flights are shorter than 500 miles – and that’s the sweet spot, the optimal range for electric aircraft. Also, electric aircraft have fewer moving parts, so are less maintenance-prone. Elect-

Speaking of sustainability: air travel doesn’t have a good reputation, due to a disastrous ecological footprint.

Europe has set itself the goal of becoming carbonneutral by 2050, but Bolzano Airport will have achieved this goal by 2030. How? At the moment, South Tyrol produces 150% green energy, which is sold on.

We want to invest the surplus in our fleet and vehicles. As early as 2024, we expect to fly 19-seater electric aircraft, moving to 80-seaters in the 4-5 years after, as technology progresses. This will allow us to offer the most sustainable aircraft in the regional sector. All the vehicles that move around our airport area, our entire fleet, will also be electric. Electric motors emit no pollutants and move almost silently.

Considering that 80% of the world's population live in cities and that it is there that we will soon have clean air, the advantages are clear. Electric air mobi-

ricity is cheaper as fuel, meaning flight costs could drop by more than half, to around $150 per hour, thereby increasing margins for airlines that rely on this type of mobility. Finnair has already purchased the first of Heart Aerospace's Electric ES-19 aircraft for short-haul flights, which are expected to go into commercial service in a few short years. Heart Aerospace is a Swedish start-up company and there’s a lot going on in the electric driving scene at the moment. (ra/pb)

In che modo?

Fin dall'inizio Sky Alps non punta sul low-cost e altrettanto poco sul turismo di massa. La destinazione Bolzano/Alto Adige Südtirol e l'intera regione alpina devono impegnarsi per un turismo sostenibile ed ecologicamente responsabile. Sì, l'Alto Adige è una destinazione turistica e Skyalps porta in volo i turisti che vogliono visitarci. L'accessibilità è un problema per una destinazione che ha un soggiorno medio di 4-5 giorni.

E un viaggio di 1.000 km non deve superare le 3-4 ore.

Al momento, i pernottamenti in Alto Adige ammontano a 33 milioni con solo l'11% di visitatori internazionali.

In confronto: Innsbruck ha quasi il 30% di visitatori internazionali e un'alta stagione turistica molto più breve (tre mesi in inverno e tre mesi in estate). L'Alto Adige opera per dieci mesi in termini di turismo, di cui il 40% è un turismo invernale e il 60% estivo.

Quali destinazioni offre attualmente Skyalps da Bolzano?

Abbiamo iniziato lo scorso giugno con voli charter per la Sardegna (Olbia) e la Spagna (Ibiza) e voli di linea per Parma, Roma, Berlino e Düsseldorf. Per l'inverno, stiamo progettando di espandere la rete di voli verso Londra, Bruxelles, Amsterdam, Rotterdam, Amburgo e Copenaghen.

Parlando di sostenibilità: i viaggi aerei non hanno una buona reputazione a causa di una disastrosa impronta ecologica...

L'Europa si è posta l'obiettivo di essere neutrale per il clima entro il 2050, e l'aeroporto di Bolzano avrà raggiunto questo obiettivo entro il 2030. Come? Attualmente, l'Alto Adige produce il 150% di energia verde, che viene venduta. Vogliamo investire il surplus nella nostra mobilità e ci aspettiamo di volare con aerei elettrici da 19 posti già nel 2024, e poi da 80 posti in 4-5 anni con il progresso tecnologico. Anche tutte le auto che si muovono nella nostra area aeroportuale, la nostra intera flotta, saranno elettriche. I motori elettrici non emettono inquinanti e si muovono quasi silenziosamente. Se si considera che l'80% della popolazione mondiale vive nelle città e che è proprio lì che avremo presto aria pulita, i vantaggi sono chiari. Ma la mobilità aerea elettrica offre molti più vantaggi: in futuro avremo bisogno di meno infrastrutture come le reti autostradali e ferroviarie. Skyalps will sich auf den Südtiroler Tourismus konzentrieren. Inwiefern?

Gleich vorweg: Sky Alps setzt nicht auf Lowcost und genauso wenig auf Massentourismus. Die Destination Bozen/Südtirol und der gesamte Alpenraum muss einen nachhaltigen und ökologisch verantwortungsvollen Tourismus anstreben. Ja, Südtirol IST ein Tourismusland und Skyalps FLIEGT Touristen ein, die uns besuchen wollen. Erreichbarkeit ist nun mal ein Thema für eine Destination, die einen Durchschnittsaufenthalt von 4-5 Tagen hat. Und eine Anreise von 1.000 km darf da die 3-4 Stunden nicht überschreiten. Momentan belaufen sich die Nächtigungen in Südtirol auf 33 Millionen mit lediglich 11% internationalem Publikum. Im Vergleich: Innsbruck hat fast 30% internationales Publikum und eine viel kürzere touristische Hochsaison (im Winter und im Sommer je drei Monate). Südtirol arbeitet touristisch zehn Monate lang, davon 40% Wintertourismus und 60% Sommertourismus.

Apropos Nachhaltigkeit: Flugreisen haben aufgrund eines desaströsen ökologischen Fußabdrucks keinen guten Ruf ...

Europa hat sich vorgenommen, bis 2050 klimaneutral zu sein, der Flughafen Bozen wird dieses Ziel schon 2030 erreicht haben. Wie? Momentan produziert Südtirol 150% grüne Energie, die weiterverkauft wird. Wir wollen den Überschuss in unsere Mobilität investieren und rechnen damit, bereits ab 2024 Elektroflugzeuge mit 19 Sitzen zu fliegen, 4-5 Jahre später, mit dem technologischen Fortschritt, dann 80-Sitzer.

Auch sämtliche Autos, die sich in unserem Flughafenbereich bewegen, unser ganzer Fuhrpark, wird elektrisch betrieben sein. Elektromotore emittieren keine Schadstoffe und bewegen sich nahezu geräuschlos.

Wenn man bedenkt, dass weltweit 80% der Menschen in Städten lebt und wir gerade dort bald saubere Luft haben, sind die Vorteile klar. Die elektrische Flugmobilität punktet aber mit weit mehr: Wir werden künftig weniger Infrastrukturen wie Autobahn- und Schienennetze benötigen. Das ist der Grund, warum ich auch schon für die nahe Zukunft optimistisch bin.

Fürs Publikum geöffnet ist sie sonntags von Mitte November bis Mitte Februar (www rittenarena com). Bozner*innen lieben das Eislaufen vor allem am Wolfsgrubener See, weil der Ort romantisch-friedvoll anmutet und weil er bequem und schnell mit den öffentlichen Verkehrsmitteln, mit Seilbahn und Schmalspurbahn erreicht werden kann.

Ein Schlittschuhverleih wird am Eisring und am Natureisplatz in Oberbozen angeboten. Der Zutritt zu allen Freizeitaktivitäten ist mit der RittenCard entweder kostenlos oder vergünstigt möglich.

Schlitten fahren, Schlitten fahren Das entsprechende Gefährt muss man gar nicht dabeihaben, es kann nämlich an der Talstation Pemmern ausgeliehen werden. Auf ihren 2,5 Kilometern führt die Rittner Naturrodelbahn von der Mittelstation der Rittner Horn Bahn zur Talstation in Pemmern. Sie ist so mit der Bergbahn bequem erreichbar. Übrigens: Geöffnet ist die Bahn vom 4. bis 12. Dezember 2021 und ab 18. Dezember 2021 bis 20.

Während der Eisstock-Weltmeisterschaft der Herren, Damen, U23, U19 und U16 im Februar findet ein zwölftägiges EisstockSpektakel statt, zur Kürung der Welt- und Europameister im Mannschaftsspiel, im Zielund Weitenbewerb in allen Kategorien. Nach den Weltmeisterschaften von 2008 und 2016 werden abermals in den drei Eisstock-Disziplinen 24 WM-Medaillen vergeben und 250 Sportler*innen aus 27 Ländern erwartet.

Vor nur einem Jahr hatte er nach Erfahrungen in der Entwicklung von Rennfahrzeugen die Südtiroler Rodelfirma Bachmann aus Winnebach übernommen und deren Sitz nach Klobenstein verlegt. Advent am Ritten Der Rittner Advent beginnt traditionsgemäß mit einer urigen Veranstaltung zu Maria Empfängnis. Natürlich warten alle sehnsüchtig auf die Genehmigung zur Austragung auch des Rittner Christbahnls in seiner gewohnten Form. Derweil laufen die Vorbereitungen zur 12. Ausgabe auf Hochtouren. Vom 27. November bis zum 29. Dezember soll der außergewöhnliche Weihnachtsmarkt am Ritten seine zahlreichen Fans in den Bann ziehen, jedes Wochenende von 10 bis 18 Uhr, mit QualitätsHandwerk, Accessoires neben Weihnachtsschmuck und Gaumen-Freuden. ABER: Statt der üblichen Weihnachtsstände stehen auf seinen zwei Schauplätzen am Bahnhof von Oberbozen und im Zentrum von Klobenstein einmal nachgebaute alte Bahnwaggons (in Oberbozen) und einmal moderne Stände mit Weihnachtsbaum-Silhouette (in Klobenstein), aus denen der Duft von Lebkuchen und Glüh-

wein strömt, aber auch von Gerstsuppe und anderen typischen Gerichten und heimischen Weihnachts-Schmankerln.

Abseits des städtischen Trubels lädt dieser kleine Christkindlmarkt zum Staunen, zum Hörgenuss von Alphornbläser-Klängen und zu Märchen für Groß und Klein, neben Kulinarischem. Junge Künstler*innen der Rittner Kindergärten, Grund- und Mittelschule schmücken mit ihren fantasievollen Weihnachtsdekos die Haltestellen entlang der Bahnstrecke von Oberbozen bis Klobenstein. Auf ihrer Fahrt tuckert die Rittner Schmalspurbahn durch eine zauberhafte, fast surreale Winterlandschaft. Neu: Das Plattner-Bienenhof-Museum wird ein Teil des Rittner Christbahnls. Wer an den Wochenenden des Christbahnls bei der Haltestelle Wolfsgruben aussteigt, begibt sich in eine weitere Advents-Landschaft mit handwerklichen Produkten und einem Museum, das gewöhnlich in den Wintermonaten geschlossen hat. Der Eintritt ist frei, empfangen wird man mit einem Krüglein Gratis-Honigpunsch, Kerzen und Laternen bei Dämmerung. Das Rittner Christbahnl ist in nur 12 Minuten vom Bozner Zentrum aus mit der Seilbahn erreichbar. (ar)

E dopo aver praticato del sano movimento all'aria aperta, l’Altipiano del Renon invita a godere di delizie culinarie, con l’evento “Gastronomia sulla neve”, o nelle trattorie dei rifugi durante le lunghe serate invernali. Per la stagione invernale 2022, è stato creato un pacchetto vacanze per famiglie di 7 notti - RittenCard compresa, che raccoglie tutte queste proposte, soddisfa la curiosità di nuove esperienze sulla neve (prova di slittino, prova di sci alpinismo) e rende superflua l'auto.

Il programma invernale per bambini Novità 2022: dal lunedì al giovedì, dalle 10.30 alle 12.30, un istruttore di sci certificato insegna ai bimbi attraverso il gioco a fare le prime curve sugli sci, mentre nel pomeriggio i piccoli si divertono a cuocere il pane, con prove di equitazione e altre attività.

Pattinaggio che passione!

Per chi ama pattinare sul ghiaccio c’è solo l'imbarazzo della scelta: volteggiare sull’incantevole Lago di Costalovara ghiacciato, poi allenarsi sulla pista di ghiaccio naturale di Soprabolzano, infine avventurarsi sull'anello di ghiaccio della Ritten Arena di Collabo, dove corrono i pattinatori più veloci del mondo e si svolgono anche i campionati europei e mondiali.

Slittare a più non posso Non c'è nemmeno bisogno di avere con sé il proprio slittino, perché si può noleggiarlo alla stazione a valle di Pemmern. La pista da slittino naturale del Renon, lunga 2,5 chilometri, porta dalla stazione intermedia della funivia del Corno del Renon alla stazione a valle di Pemmern. È quindi facilmente accessibile con la cabinovia.

A proposito: la pista è aperta dal 4 al 12 dicembre 2021 e dal 18 dicembre 2021 al 20 marzo 2022. L'accesso a tutte le attività ricreative è gratuito o a tariffe ridotte esibendo la RittenCard.

Avvento sul Renon L'Avvento del Renon inizia con un evento tradizionale in occasione dell’Immacolata Concezione. Naturalmente, c’è grande attesa di poter finalmente visitare di nuovo il Trenatale del Renon nella sua forma abituale. Dal 27 novembre al 29 dicembre, lo straordinario mercatino di Natale sul Renon tornerà ad affascinare i visitatori e i suoi estimatori ogni fine settimana dalle 10 alle 18, con artigianato di qualità, accessori, colorate decorazioni natalizie e delizie per il palato. Tobogganing, tobogganing You don't even have to bring your own toboggan, as you can rent one at the Pemmern valley station. The 2.5 km Ritten natural toboggan run leads from the middle station of the Horn of Ritten cable car, to the valley station in Pemmern: easily accessible by mountain railway. The run is open from 4th to 12th December 2021 and then from 18th December 2021 to 20th March 2022. Access to all leisure activities is either free or at a reduced rate with the RittenCard.

It’s perfect for newcomers and for children of all ages! The Dolomite views and sporting attractions are especially appealing to cross-country skiers on the high-altitude trail. The well-kept winter hiking trails are ideal for snowshoeing and for nature lovers, also off the slopes. Those who want to have fun on the toboggan or skate the ice with sharp blades will also find what they are looking for. After the physical activity in the cold outdoors, there are the inviting culinary delights to enjoy, in the Ritten Pistnkuchl or in the gastropubs, during the long winter evenings. For the 2022 winter season, a 7-night family holiday package has been put together with the RittenCard, which combines all this, satisfying curiosity for new experiences in the snow (with introductions to tobogganing and ski touring). a oramai parte dell’identità e della tipicità bolzanina nella stagione invernale, lo storico Mercatino di Natale, primo in assoluto in Italia. La tradizione risale infatti al 1990, quando Comune e Azienda di Soggiorno riuscirono a portare nel Capoluogo altoatesino la consolidata tradizione dell’area germanica del Christkindlmarkt (il “mercato di Gesù Bambino”). Dopo un anno di sosta per via della pandemia, l’appuntamento torna con i suoi suoni ovattati, i sapori e i profumi speziati di dolci come il zelten, i biscotti assieme al vin brulé, di legno di pino cirmolo lavorato da mani artigiane, di aghi di pino e candele profumate. Tornano anche le casette di legno con i posti espositivi, di vendita e di degustazione, gli addobbi e la moltitudine di luci, con l’albero di Natale gigantesco illuminato a festa, il presepe con la Sacra Famiglia all’interno di una stalla e la corona d’Avvento in piazza Walther a testimoniare l’attesa, l’Avvento appunto, da godersi nelle piazze e vie del centro, in molti cortili e nel Parco della Stazione.

Si alzerà il sipario sulle molte novità e gli eventi contorno del Mercatino di Natale. Saranno una settantina le casette distribuite in centro con una molteplicità di oggetti di artigianato locale e prelibatezze gastronomiche del territorio. Da non perdere quest’anno gli stand dell’Associazione delle Donne Coltivatrici Sudtirolesi che creeranno sul posto decorazioni natalizie secondo vecchie tradizioni alpine. Torna, invece, la Wine Lounge con una selezione di vini tipici di Bolzano. Oltre ai vini autoctoni Santa Maddalena e Lagrein si potranno degustare anche gli spumanti e i distillati tipici dei dintorni. Nel Parco di Natale (Parco della Stazione) verranno allestiti altri 40 stand di artigianato artistico e di gastronomia, fra i quali anche stand dedicati a grappa e birra di produzione artigiana locale. Fino al 23 dicembre in piazza del Grano ci sarà poi anche il mercatino solidale, con prodotti il cui ricavato andrà ad associazioni che operano nel tessuto sociale cittadino.

Weihnachtliches Brauchtum leben ist momentan eine Herausforderung, in die der Tourismusverein Eppan viel Herzblut steckt. Warum und wie erzählt dessen Präsidentin Evelyn Falser.

ie vorweihnachtlichen Initiativen in Eppan sind viele, und der Dezember üblicherweise Hochsaison, sowohl im Hintergrund, im Büro des Tourismusvereins, als auch für die Nutznießer*innen der vielen Veranstaltungen und Aktionen: ausgiebige Nikolaus- und Krampusumzüge, Beschauliches bei der KrippenWeihnacht in St. Pauls, LichterWeihnacht in St. Michael, Wei(h)nachten in Girlan, Weihnachtsmarkt, aber auch Religiöses aus der christlichen Überlieferung wie die Lebende Krippe in der Adventszeit. Sich zurückbesinnen und Vergessenes aus der Mottenkiste der Dorfchronik herausholen, das liegt seit Jahren im Trend, so dass einiges an Veranstaltungen im Jahreslauf auch im Eppaner Raum letzthin mit Freude neu belebt wurde. Doch dann kam die Pandemie und mit ihr das Bangen um die Durchführbarkeit von Veranstaltungen. Mit dieser Erfahrung im Hinterkopf versucht der Tourismusverein Eppan mit Spitzfindigkeit und der gebotenen Vorsicht sich für den anstehenden Winter zu wappnen und das stimmungsvolle Angebot um Lichter, Handwerk und Genuss anzupassen. Ein Gespräch mit Evelyn, Falser, seiner Präsidentin.

Die Vorbereitungen haben bereits im Spätsommer begonnen. Gut Ding braucht gut Weil. Was steht für euch im Vordergrund?

Im Vordergrund steht der Wunsch, ein deutliches Zeichen zu setzen und Weihnachtsstimmung in den Ortskernen entstehen zu lassen und zu verbreiten, für die Bewohner*innen genauso wie für unsere Gäste. Der Charakter des christlichen Festes und seine Bedeutung für die Dorfgemeinschaft und das Territorium ist uns wichtig, und die Gemeindeverwaltung unterstützt uns dabei. Eppan ist mit ihren 15.000 Bewohner*innen die sechstgrößte Gemein-

de Südtirols, da sind die logistischen Herausforderungen andere als in einem Bergdorf. Und dass gut Ding gut Weil bedeutet, erfahren wir in Zeiten wie diesen umso deutlicher, weil die Unsicherheit nicht nur lähmt, sondern uns organisatorisch Prügel in den Weg legt.

Was heißt das konkret?

Für uns heißt das, dass das Risiko kalkulierbar sein muss. Dass wir einen Plan B haben müssen und dass wir parallel eine Minimal- und eine Maximalvariante nicht nur andenken, sondern auch organisieren, dass wir sehr flexibel auf Änderungen reagieren müssen, auf die Covid-Lage und die gesetzlich vorgesehenen Einschränkungen. Logistisch heißt es zum Beispiel beim Weihnachtsmarkt, dass wir uns auf einen zentralen Marktplatz konzentrieren und die Stände nicht weitläufig verstreuen, dass wir Absperrungen vorsehen, mit Ein- und Ausgängen. Beim Weihnachtsmarkt arbeiten wir seit Jahren eng mit unserem Partner SelberGMOCHT Südtirol zusammen, der sich um die Stände kümmert und für Ursprünglichkeit und Qualität der Produkte bürgt. Unser LichterWeihnacht“ ist seit 2019 ein Green Event, ” wir legen viel Wert drauf. Aber da heißt es auch diesbezüglich viel Aufwand betreiben. Unser Bestreben ist es, kreative Lösungen für jede einzelne Aktion zu finden. Beim Nikolaus- oder Krampusumzug wird das eine andere sein als bei statischen Veranstaltungen wie der KrippenWeihnacht in St. Pauls. Die Organisationsmaschine ist seit dem Spätsommer am Laufen und der Sitzungsmarathon ebenso.

Wenn ich zurückblicke auf die Veranstaltungen im Spätsommer: Da ist viel Energie in die Entwicklung von neuen Formaten geflossen, z.B. das Picknick auf den Gaidner Wiesen ist anfangs als Notlösung entstanden, um Menschen zusammenkommen zu lassen, im Genießen von lokalen Produkten, im Freien und mit Abstand. Das Ganze war ein Riesenerfolg.

Wir haben damit wohl ein Urbedürfnis befriedigt.

Und wir haben verstanden, dass Menschen derzeit das gemeinsam Alleinsein“ suchen. ”

Auch dass Schellen und Glocken, Rute, Stock und Pferdeschweif, auch Fackeln und Rauch (fast) nur symbolische Anwendung finden, erhebt die Krampusse zu kindertauglichen Mahnern bei unartigem Benehmen: Ehrfurcht spielt eine Rolle und für Erwachsene wohl auch die Ambiguität von Gut und Böse (Nikolaus-Krampus). In unserer Gegend ist dieser Brauch eine Zeitlang in Vergessenheit geraden, aber vor ca. fünfzehn Jahren besannen sich die zwei Tuifl-Vereine ( Wild Monn Tuifl aus Girl“/Girlan ” und Schildhauser Tuifl“ in Gand) auf die alte Traditi” on und haben seitdem eine Lawine losgetreten. Allein bei der Ausstellung von historischen Krampusmasken vor zwei Jahren hatten wir einen regelrechten Besucheransturm. Das Wiedererstarken des Brauchtums und das Pflegen von Alltagskultur holt offensichtlich Tiefsitzendes an die Oberfläche. (ar)

NATALIZIE È ATTUALMENTE UNA SFIDA IN CUI L'ASSOCIAZIONE DEL TURISMO DI APPIANO METTE CUORE E ANIMA

Ci sono molte iniziative prenatalizie ad Appiano, e dicembre è di solito il momento clou, sia dietro le quinte, negli uffici dell’Associazione Turistica, sia per i visitatori dei numerosi eventi: le lunghe sfilate di San Nicolò e Krampus, la contemplazione dei Presepi di San Paolo, le Luci di Natale a San Michele, il Natale a Cornaiano e il mercatino di Natale, ma anche eventi religiosi della tradizione cristiana, come il Presepe Vivente durante l'Avvento. La passione di far rivivere e conoscere le antiche tradizioni natalizie dei paesi è cresciuta di anno in anno, negli ultimi tempi. Ma poi è arrivata la pandemia e con essa i timori sulla fattibilità degli eventi. Con questa esperienza in mente, l'Associazione Turistica di Appiano sta cercando di attrezzarsi per il prossimo inverno con grande cura e la necessaria cautela e di adattare l’atmosfera intorno alle luci, all'artigianato e al divertimento.

L’affascinante tradizione del Krampus La forza del male è trascinante, ma il fatto che ci sia un essere umano dietro alla smorfia spaventosa, alla maschera di legno elaboratamente intagliata con le corna, alla pelliccia che puzza di capra, rende queste creature demoniache degli eroi. Il fatto che campane e campanelli, frusta, bastone e coda di cavallo, persino torce e fumo siano usati (quasi) solo simbolicamente, eleva poi i Krampus allo status di ammonitore per i comportamenti sbagliati adatto ai bambini: al centro qui c’è il tema del rispetto e per gli adulti probabilmente anche l'ambiguità del bene e del male (Nicolò-Krampus). Dalle nostre parti questa usanza era stata dimenticata per un po', ma una quindicina di anni fa le due associazioni Tuifl (“Wild Monn Tuifl aus Girl”/Cornaiano e “Schildhauser Tuifl” di Ganda) hanno rispolverato la vecchia tradizione riscuotendo una valanga di successo.

As they stride around, with their bells and staffs, torches and smoke, they re-enact today the times when they prowled looking for naughty children.

From adults, there is a sense of awe for the interplay of good and evil represented in St. Nicholas and the Krampus. In our region, this custom was neglected for a while, but about fifteen years ago, the two Tuifl associations - the Wild Monn Tuifl aus Girl, in Girlan and Schildhauser Tuifl in Gand – revived this ancient tradition and have seen it grow and spread.

The Eppan pre-Christmas calendar is full of events, with December the busiest season for the tourist office and anyone working in the background. But the fruits of their labour are many. There are the St. Nicholas and Krampus processions, the contemplative nativity scene in St. Pauls/San Paolo, Christmas lights in St. Michael/San Michele, Christmas nights in Girlan/Cornaiano and the Christmas market. Other traditions include the living nativity scene, during Advent, with many of these events forming regular chapters in the village chronicle. Then came the pandemic and its impact on these events. Escursionismo sostenibile: una vocazione di lunga data per San Genesio Da sempre San Genesio, del resto, punta sull’escursionistico sostenibile. Ci sono centinaia di chilometri di sentieri molto belli e invitanti in tutto il territorio comunale, cui se ne aggiungono sempre di nuovi. Negli ultimi anni sono stati inaugurati diversi nuovi sentieri tematici, come ad esempio il sentiero dei castelli, il Castelronda, che conduce da Bolzano attraverso il territorio comunale di San Genesio fino a Terlano e collega diverse rovine e castelli. Nuovo è anche il sentiero del legnaiuolo Avia, che si snoda dal centro di San Genesio ad Avigna e poi fino a Mezzavia in Val Sarentino: fornisce informazioni sul taglio e la lavorazione del legno in nove stazioni, alcune delle quali interattive. Panorami mozzafiato, molte informazioni e avventura intorno al cavallo avelignese e ai larici sono invece offerti dall'altrettanto recente sentiero Guggn, piacevole percorso

a tema per tutta la famiglia che conduce attraverso prati e boschi. Nove postazioni di gioco e interessanti pannelli informativi sul tema cavalli e larici guidano da San Genesio fino all’altopiano del Salto per poi snodarsi a Tschaufen. Che si tratti della classica escursione agli Omini di pietra, del sentiero europeo di lunga percorrenza o di uno dei numerosi sentieri forestali, l'escursionismo, che qui parte direttamente dalla porta di casa, è senz’altro una delle forme più sostenibili di vacanza e di ricreazione.

Non solo camminate Naturalmente San Genesio, anche in inverno, ha da offrire molto di più delle lunghe escursioni a piedi: di spazio sull’altopiano, infatti, ce n’è tanto, ma non per la noia! Che si tratti di intense ciaspolate nella neve fresca sul Monzoccolo, di evoluzioni sui pattini sulla pista su ghiaccio di San Genesio, oppure di diverten-

ti discese in slittino sui vasti pascoli di Meltina e di splendide tour con gli sci di fondo, l’offerta di attività invernali soddisfa tutta la famiglia e ogni necessità adrenalinica, anche per chi non vuole rinunciare allo sci nordico: molti i comprensori facilmente raggiungibili da San Genesio, come quello di Merano 2000.

Ma c’è un’esperienza veramente molto green che non va assolutamente tralasciata: per chi sa, o vuole provare, a cavalcare, attraversare i lariceti in sella ad un biondo e docile cavallo Haflinger (avelignese), la razza autoctona proprio dell’altipiano, l’emozione è davvero unica. Per i più comodi: altrettanto fiabesca la gita in carrozza trainata da cavalli, un modo per scoprire San Genesio e l’intero altopiano assolutamente affascinante, un tuffo nel passato e nell’incanto invernale da non lasciarsi sfuggire. Real holidays for real people The plateau larch forests feel the sun's rays penetrate, illuminating the undergrowth and making the snow on the wide meadows along the footpaths glisten. In the distance, the imposing Dolomite peaks, silhouetted against the blue sky, provide an unmistakable backdrop. Jenesien and the Salten high plateau - only a few kilometres from Bolzano - offer wintery alpine landscapes, the vision of which are food for the soul. In these times, the pandemic and the impending environmental crisis have forced us to rethink our relationship with nature. The quest for healthier and more environmentally-compatible forms of leisure has become more urgent than ever.

Hiking in the snow Jenesien has always been committed to sustainable exercise in the alpine air. In recent years, a number of themed trails have been created. A great example is the Castelronda Castle Trail, which leads from Bolzano, through the municipality of Jenesien to Terlan/Terlano, taking you past several ruins and castles on the way. Another new addition is the Avia Woodcutters' Trail, which leads from the village centre of Afing/Avigna to Halbweg/Mezzavia, in the Sarentino Valley.

Along the way, it provides information to ramblers about woodcutting and woodworking at nine different points, some of which are interactive. Other themes and adventures, such as the Haflinger horse or the larches, offer family-orientated destinations (e.g. the Guggn way), as well as for the more sports-minded. Whether it's the classic hike to the Stone Men, the European Long-Distance Trail or one of the many forest trails - hiking, which starts right here, remains one of the most sustainable, balanced and relaxing forms of holiday.

m alpenländischen Grenzland Südtirol spielt die Musik von Bürgerkapellen eine große Rolle: Über 200 Musikkapellen gibt es in einem Land, das nur eine halbe Million Einwohner*innen zählt. Das sind fast doppelt so viel Kapellen wie es Südtiroler Gemeinden gibt (116). Die Zahlen sprechen für sich: Über 9.300 Musiker*innen gehören einer dieser 200 Musikkapellen an, die im Schnitt 44 Mitglieder aufweist. Über die Hälfte dieser Musiker*innen sind jünger als 30 Jahre alt, was darauf schließen lässt, dass es keine Nachwuchssorgen in der Szene gibt.

Musikkapellen sind bekannt dafür, mit ihrem Gemeinschaftsleben und der Freude zur Musik ganze Dorfgemeinschaften zusammenzuschweißen. Sie spielen bei Kirchfesten genauso auf wie bei Eröffnungen, und sie trumpfen letzthin mit einer regen Konzerttätigkeit. Besonders in Bozen, wo es gleich vier Bürgerkapellen gibt - neben der ältesten, der Bürgerkapelle Gries, auch die Stadtkapelle Bozen, die Bürgerkapelle Zwölfmalgreien und die Kapelle Corpo Musicale Mascagni.

Als die Bürgerkapelle Gries 1821 im heutigen Bozner Stadtviertel Gries gegründet wurde – als Grie” ser Musikgesellschaft“, war Gries gerade von einer eigenständigen Landgemeinde zu einer Marktgemeinde herangehoben worden, mehr noch. Sie war ein nobler Luftkurort im Habsburger Süden vor allem für Lungenkranke. Die allerersten Kur“-Kon” zerte waren demnach königlichen und kaiserlichen Honoratioren gewidmet, die hier Erholung suchten oder auf der Durchfahrt waren. Erst 1901 wurde die Grieser Musikgesellschaft“ in Bürgerkapelle Gries“ ” ” umbenannt, zur Zeit der wirtschaftlichen Hochblüte des Hotel- und Villen-Luftkurortes Gries, und erst 1925 unter faschistischer Herrschaft wurde Gries von der Stadt Bozen eingemeindet. Im Laufe der Jahre entwickelte sich die Musikkapelle zu einem beachtlichen Klangkörper, der bis heute einen tragenden Pfeiler im kulturellen Leben von Gries darstellt. Heute umrahmen sowohl die Kapelle als Ganzes als auch kleinere Formationen aus der Kapelle die zahlreichen kirchlichen und weltlichen Veranstaltungen.

Ein Meilenstein ihrer Geschichte ist ihr erstes Neujahrskonzert 1968 im Bozner Waltherhaus. Seitdem wurde keines ausgelassen. Freilich, das letzte ihrer Kapellengeschichte, musste aufgrund der Pandemie über den Radio-Äther ausgestrahlt werden, aber es fand statt. Und wie jedes gehörte es zu den Höhepunkten im Musikjahreslauf.

Vier Männer haben den Zusammenhalt und die Musikprägung entscheidend zu verantworten: Josef Silbernagel, Gottfried Furgler, Franz Targa und Georg Thaler. Silbernagel war 35 Jahre lang Kapellmeister, unter seiner Leitung avancierte die Kapelle zu einer der Spitzenkapellen in Südtirol. Gottfried Furgler, heute Ehrenobmann des Verbands Südtiroler Musikkapellen, und Franz Targa haben die Geschicke der Kapelle jeweils 21 Jahre lang als Obmänner geleitet. Seit nunmehr 23 Jahren steht die Kapelle unter der musikalischen Leitung von Kapellmeister Georg Thaler und seit 2017 unter der organisatorischen Leitung des Obmanns Roland Furgler. In diesen Jahren im Vordergrund standen vor allem die musikalische Entwicklung der Kapelle und die Suche nach neuen Entfaltungsmöglichkeiten der Blasmusik. Dieser Suche folgten eine Reihe von Auszeichnungen: Neben 78

Preis beim internationalen Blasmusikwettbewerb “Filcorno d´Oro” in Riva, wurden in den letzten Jahren in Zusammenarbeit mit Kirchenchören, Künstler*innen und Artist*innen sowie mit einer Rockband interdisziplinäre Projekte durchgeführt. Im Jahre 2010 hat die Bürgerkapelle Gries den Würth-Förderpreis für besonders herausragen” de Projekte“ erhalten. Für ihre originellen Ideen und den zeitgemäßen Gestaltungswillen wurde die Bürgerkapelle Gries 2011 mit dem Südtiroler Blasmusik” preis“ ausgezeichnet, eine von der Landesregierung gestiftete Ehrung. Und 2019 hat sie beim Juventus Music Award den 1. Preis erhalten, als Förderung besonders nachhaltiger und musikalisch-gemeinschaftlicher Projekte.

Dank einer gezielten Jugendförderung - gemeint ist das Blasmusikluft schnappen von klein auf bei den Griessini“ und bei der Jugendkapelle - kann der ” Nachwuchs im kleinen Orchester mitwirken und so Teamgeist und Verantwortungsbewusstsein erleben.

Die generationsübergreifende Freude am gemeinsamen Musizieren gehört entschieden dazu, das jüngste Mitglied ist 17 Jahre, das älteste 64. Wichtig sind

der BK Gries auch soziales Engagement: So stand das Neujahrskonzert 2017 im Zeichen der Migration. Das Thema wurde aus der Sicht eines einzelnen Migranten musikalisch aufbereitet. Dabei erzählte der direkt Betroffene 24-jährige Aminur Islam aus Bangladesch die Geschichte seiner Flucht über Libyen bis nach Bozen. Das Schönste am Projekt? Allen Skeptikern und Kritikern zum Trotz hat es die BK Gries geschafft, dieses schwierige Gesellschaftsthema mit Hilfe eines Betroffenen und der Musik, greifbar zu machen und damit einen Beitrag für mehr Verständnis und Empathie in der Gesellschaft geleistet zu haben. Abgerundet wurde das Projekt mit Integrationshilfen für Kinder von Flüchtlingsfamilien und mit einer Bilderausstellung im Foyer des Konzerthauses. Dafür wurde die Bürgerkapelle Gries 2017 mit dem alpenländischen Arge-Alp-Preis ausgezeichnet ( mit innovativen An” sätzen Integration ermöglichen“) und 2018 mit dem Förderpreis Weingut Ritterhof“. ” Heute zählt die BK Gries 83 Mitglieder (58% Männer, 42% Frauen) plus Kapellmeister. Das Durchschnittsalter beträgt 33 Jahre. Die Formation erlaubt ein riesiges Repertoire an Blasmusik-Literatur, mit Querflöten, Klarinetten, Oboen, Fagotte, Saxophone, Hörner, Trompeten/Flügelhörner, Posaunen, Tenorhörner, Tubas und Schlagwerk. Die Vorbereitungen zum Bestandsjubiläum laufen auf Hochtouren. Die Aufführung einer von Thomas Doss eigens komponierten Blasmusikoper ist für Dezember 2021-Jänner 2022 geplant. Der Linzer Komponist und Dirigent Doss hat als literarische Grundlage den Bestseller-Roman „Blasmusikpop“ der österreichischen Autorin Vea Kaiser (*1988 in St. Pölten) herangezogen, die durch das gleichnamige Roman-Debüt 2012 zum Shootingstar wurde. Das Libretto verfasste Silke Dörner, die einen dichten humorvollen Operntext daraus gemacht hat.

Die Blasmusikoper wird in Zusammenarbeit mit den Vereinigten Bühnen Bozen uraufgeführt, im Großen Haus des Bozner Stadttheaters am Abend des 1.1.2022 (18 Uhr). Weitere Termine am 2.2.22 (18 Uhr), 5.1.22 (20 Uhr), 7.1.22 (20 Uhr), 8.1.22 (18 Uhr) und 9.1.22 (11 Uhr).

Nur so viel sei verraten: „Blasmusikpop“ erzählt mit viel Ironie die Geschichte dreier Generationen im abgeschiedenen Bergdorf St. Peter am Anger. Der junge Johannes will nicht Fußball spielen, sondern forschen, um in die Fußstapfen seines Großvaters Johannes zu treten, dem ersten Doktor des Dorfes. Wissensdurstig nach der Welt hinter den Bergen geht er aufs Gymnasium, wo er die klassische Bildung mit allen Mitteln verteidigt.

Als er unerwartet durch die Matura rasselt, folgt er dem Ruf seines Lieblingsautors Herodot, dem Vater der Geschichtsschreibung, und beginnt die Chroniken seines Heimatdorfes aufzuschreiben. Schließlich will es ein Zufall, dass er ein Ereignis verursacht und das Bergdorf damit für immer verändert.

Weitere Höhepunkte im Jubiläumsjahr 2021 sind der Druck eines Jubiläums-Wochenkalenders mit witzigen Details und Anekdoten sowie eine Ausstellung zu den 200 Jahren BK Gries im Bozner Merkantilmuseum.

Die interaktive Sonderausstellung wird von Mai bis Juli 2022 zu sehen sein und samstags von Kammermusik-Konzerten und Matinees der BK Gries begleitet.

FROM CIVIC BANDS TO ROCK & POP FROM THE GRIES MUSIC SOCIETY TO

TODAY'S GRIES CIVIC BAND - A 200-YEAR JOURNEY WITH PLENTY OF MILESTONES. In the alpine border region of South Tyrol, the music of civic bands plays a central place. In this province of only half a million inhabitants, there are over 200 musical bands! In Bolzano city itself, there are four civic bands. In addition to the oldest - the Gries Civic Band – there’s also the Stadtkapelle Bozen, the Bürgerkapelle Zwölfmalgreien and the Corpo Musicale Mascagni.

When the Bürgerkapelle Gries was founded as the Grieser Musikgesellschaft in 1821, in today's Gries district of Bolzano, Gries was in the process of becoming a health resort for the well-heeled from the Habsburg south, especially for respiratory ailments. The very first “cure” concerts were thus dedicated to royal and imperial dignitaries, who were recuperating here, or passing through. Over the years, the music band has developed into a considerable reputation, remaining a pillar of Gries cultural life to the present. A milestone in its history was its first New Year's concert in 1968, held in the Waltherhaus in Bolzano. Since then, not one New Year’s has been missed, even if – due to the pandemic - the last concert had to be broadcast over the radio. Nevertheless, the concert went ahead, becoming one of the highlights of the musical year.

For the last 23 years, the 83-member band has been under the musical direction of bandmaster Georg Thaler, with Roland Furgler as chairperson, who has overseen the organisational aspects since 2017. During these years, the main focus has been on the musical development of the band and search for new directions to develop brass music. This search has been followed by a series of awards, the most recent of which, in 2019, it received at the Juventus Music Award, for its promotion of particularly sustainable musical projects in the community.

THE 200TH ANNIVERSARY Preparations for the anniversary are in full swing.

The performance of a brass band opera called Blasmusikpop, specially composed by Thomas Doss, is planned for December 2021-January 2022.

The premiere will be in cooperation with the Vereinigte Bühnen Bozen, to be held in the Great Hall of the Bolzano City Theatre, on the evening of 1st January (6pm). Further dates on 2nd January (6pm) and 5th and 7th January at 8pm; then on the 8th of January at 6pm and on the 9th January at 11am. Another anniversary year highlight in 2021 will be an exhibition on the history of the Bürgerkapelle Gries in the Bolzano Mercantile Museum. The interactive special exhibition will be on display from May to July 2022 and will be accompanied by chamber music concerts and matinees of the Bürgerkapelle Gries on Saturdays. www.bkgries.it

Nella regione alpina di confine dell'Alto Adige, la musica delle bande locali gioca un ruolo importante: ci sono più di 200 bande in una provincia con solo mezzo milione di abitanti. A Bolzano ci sono non meno di quattro bande cittadine - oltre alla più antica, la banda civica di Gries, ci sono anche la Stadtkapelle Bozen, la banda Zwölfmalgreien e la banda del Corpo Musicale Mascagni.

Quando la Bürgerkapelle Gries fu fondata nel 1821 nell'odierno quartiere bolzanino di Gries - come "Grieser Musikgesellschaft", Gries era in procinto di diventare una nobile stazione climatica a sud degli Asburgo, soprattutto per i malati di polmoni. I primissimi concerti furono così dedicati ai dignitari reali

e imperiali che qui si curavano o erano di passaggio.

Nel corso degli anni, la banda musicale si è sviluppata in una notevole orchestra, che ancora oggi rappresenta un pilastro portante della vita culturale di Gries. Una pietra miliare nella sua storia è stato il suo primo concerto di Capodanno nel 1968 nel Waltherhaus di Bolzano. Da allora, non ne è mancato neanche uno. Certo, l'ultimo della storia della banda ha dovuto essere trasmesso via radio a causa della pandemia, ma ha avuto comunque luogo. E, come ogni volta, è stato uno dei momenti salienti dell'anno musicale.

Da 23 anni, la banda composta da 83 membri è sotto la direzione musicale del direttore musicale Georg Thaler e, dal 2017, sotto la direzione organizzativa del presidente Roland Furgler. Durante questi anni, l'obiettivo principale è stato lo sviluppo musicale della banda e la ricerca di nuovi modi per valorizzare la musica degli ottoni. Questa ricerca ha conseguito una serie di premi, il più recente dei quali, nel 2019, lo Juventus Music Award, per la promozione di progetti particolarmente sostenibili e musicali e comunitari. . Infine, ma non ultimo per originalità, ha aperto da poco i battenti in Via Bottai ¡Toma! dello chef stellato Claudio Melis, dove, all’interno di una stube originale del 1600, sono invece la gastronomia spagnola, i tapas, una selezione con oltre 600 etichette fra vini e birre della penisola Iberica e la “caña”, la tipica piccola birra alla spina spagnola, a rapire i clienti, trasportandoli in atmosfere lontane. Melis, sardo di nascita e a Bolzano da qualche anno dopo avventure gastronomiche in tutt‘Italia e in Arabia Saudita, è una fucina d’idee: dopo un solo anno di esperienza come chef dell’allora “Zur Kaiserkron” a

Bolzano, ha realizzato con un colpo di genio gastronomico il suo “In viaggio” conquistando per sé e per la città una stella Michelin. Poi ha dato vita ad altre innovative idee in campo gastronomico, aprendo il primo ristorante food sharing, dal nome “Tree Brasserie”, a due passi dal Municipio, e ora ¡Toma!, il primo tapas bar di Bolzano. Dass sich Bozen zunehmend als Tempel der kulinarischen Exzellenz etabliert, mag manche Besucher*innen noch überraschen. Den Anfang macht Palais Campofranco, das kürzlich restaurierte Jugendstilgebäude gegenüber des Bozner Doms: Es fällt durch sein glitzerndes Kupferpavillon auf. In den eleganten historischen Räumlichkeiten und auf der Panoramaterrasse wurde kürzlich das neue META Restaurant & Bar eröffnet. Seine internationale Küche verspricht, auf originelle Weise auf regionale Aromen zu integrieren.

Die Stadt Brasserie Città befindet sich ebenfalls am Waltherplatz. Mit ihrer Eröffnung möchte das renovierte Stadt Hotel Città den Bozen-Reisenden die italienische Essensund Weinkultur näherbringen, wobei größter Wert auf die Saisonalität der Rohstoffe und auf die Lieferkette der verwendeten Produkte gelegt wird. Vom Norden bis zum Süden werden die 20 italienischen Regionen die Protagonisten der Gerichte sein, präsentiert von einer aus ganz Italien stammenden Brigade um Chefkoch Riccardo Forzan. Ein Eintauchen in den Geschmack des Belpaese steht auf dem Programm, samt Publikumsliebling, der Gourmet-Pizza am Abend.

Il Palato Italiano begann als Foodhunter und Coach für professionelle Küchenbrigaden. Filippo und Tiziana Sinisgalli haben sich damit hervorgetan, Nischenprodukte und junge Talente ausfindig zu machen und maßgeschneiderte kulinarische Erlebnisse zu schaffen.

Der gebürtige Sarde Melis hat nach gastronomischen Abenteuern in ganz Italien und in Saudi-Arabien nun in Bozen seine neue Heimat gefunden: Mit einem gastronomischen Geniestreich hat er sein exklusives In viaggio“ aus dem Boden ” gestampft, mit dem er einen Michelin-Stern nach Bozen holte. Danach folgte der zweite Streich mit dem ersten Food-Sharing-Restaurant, der Tree Brasserie“, nur einen Stein” wurf vom Rathaus entfernt, und jetzt ¡Toma! eine Neuheit im ohnehin schon Top-Angebot der ethnischen Küche Bozens.

Then there's ¡Toma!, from Michelin-starred Sardinian chef, Claudio Melis. Recently opened in via Bottai, in authentic, early 17th-century rooms, it serves Spanish cuisine, tapas and a remarkable selection of wines and beers from the Iberian Peninsula. After gastronomic adventures all over Italy and in Saudi Arabia, Claudio found his new home in Bolzano. In a stroke of gastronomic genius, he launched his exclusive In viaggio, bringing his Michelin star to Bolzano. He followed this up with the first food-sharing restaurant, the Tree Brasserie, just a stone's throw from the town hall, and now ¡Toma! has become the latest addition to the already top-notch cuisine in Bolzano.

With its opening, the renovated Stadt Hotel Città aims to introduce Bolzano travellers to Italian food and wine culture, with utmost attention paid to seasonal variation and the supply chains of products used. From the north to the south, the 20 Italian regions are represented in its dishes, presented by chef Riccardo Forzan and his team of chefs from all over Italy. A full immersion in the flavours of Italy is on the programme, including the perennial favourite - gourmet pizza in the evening.

That Bolzano is establishing itself as a centre of culinary excellence may still surprise some visitors. In the historic city centre - between via della Mostra, Piazza Walther and via Bottai - the city's vibrant restaurant scene has expanded. Several new additions raise local gastronomy to new levels.

Ricetta Gulasch di capriolo Genuino e squisito, perfetto per arricchire il menù di Natale Il gulasch, in origine alimento ungherese della popolazione nomade, a partire dal 18esimo secolo si diffuse con forza in Austria e in tutta la zona del Tirolo. In Alto Adige il gulasch è altrettanto presente sulle tavole, in diverse varianti, dalla Gulaschsuppe (zuppa di gulasch), al gulasch di manzo e di selvaggina. Quest’ultimo piatto è considerato particolarmente prelibato e non può mancare in tavola durante le festività natalizie.

La carne di selvaggina, del resto, è la carne più naturale, salutare ed etica - se confrontata con quella prodotta nei grandi allevamenti - che possiamo portare in tavola, una volta trovata dal vostro macellaio di fiducia. Povera di grassi, priva di antibiotici o altri residui chimici, ricca di proteine, è un alimento pregiato e assolutamente a chilometro 0. In Alto Adige viene cucinata in molti modi, soprattutto durante le festività.

PREPARAZIONE 1. Sbucciare la cipolla, le carote, il sedano rapa e la radice di prezzemolo e tagliarli a piccoli cubetti.

Togliere i tendini dalla carne e tagliarla in pezzi di 3-4 cm. Scaldare un po' d'olio in una casseruola e soffriggervi le verdure tagliate a dadini fino a quando sono traslucide. Poi toglierle e metterle da parte.

2. Scaldare di nuovo l'olio nella pentola, scottare la carne su tutti i lati e condirla con sale e pepe. Poi aggiungere di nuovo le verdure, mescolare la passata di pomodoro e rosolare un po'. Cospargere di paprika in polvere e deglassare con 1/3 del vino rosso. Versare il resto del vino rosso in due volte e lasciarlo cuocere a fuoco lento.

3. Aggiungere metà del brodo e cuocere il gulasch a fuoco lento per circa 1 ora. Aggiungete il resto del brodo a poco a poco.

4. Dopo il tempo di cottura, aggiungere al gulasch la foglia di alloro, i rametti di rosmarino e di timo e le bacche di ginepro schiacciate. Cuocere a fuoco lento per altri 30 minuti.

5. Aggiungere l’amido mescolato con un po’ di acqua e addensare con esso la salsa.

Tradizionalmente viene rifinita con la marmellata di mirtilli.

100g onion 60g carrots 40g celeriac 40g parsley root 600g shoulder, neck or leg of venison Extra virgin olive oil for browning 1 tablespoon of tomato puree 1 teaspoon sweet paprika 1 teaspoon of hot paprika

200ml red wine (preferably Lagrein DOC) 1.5l game (or meat) broth 1 bay leaf, 1 rosemary sprig, 1 thyme sprig, 5 pressed juniper berries 1-2 heaped teaspoons of thickening agent (e.g. corn starch) 2 tablespoons of cranberry jam Salt, pepper to taste

1. Peel the onion, carrots, celeriac and parsley root and cut into tiny cubes. Remove the tendons from the meat and cut into 3-4 cm pieces. Heat a little oil in a pan, then fry the diced vegetables until translucent. Remove and set aside.

2. Heat the oil in the pan again, sear the meat on all sides and season with salt and pepper. Then, add the vegetables again, stir in the tomato puree and brown a little. Sprinkle with paprika powder and deglaze with 1/3 of the red wine. Add the rest of the red wine in two parts and simmer.

3. Add half the stock and simmer the goulash for about an hour. Add the rest of the stock little by little.

4. Next, add the bay leaf, rosemary, thyme and crushed juniper berries. Simmer for a further 30 minutes.

5. Add the corn starch, mixed with a little water, to thicken.

Traditionally, it is finished with a little cranberry jam.
