Dans ce numéro d'été de Verbier Life, l'équipe d'Entretrail nous raconte comment elle participe au nettoyage et à l'entretien des sentiers de VTT de la région, et Catie Friend s'est entretenu avec Andrew Ridgeley (mieux connu en tant que membre du duo WHAM), le rugbyman Lawrence Dallaglio et Warren Smith à Verbier pour parler de leur randonnée cycliste de bienfaisance. Nous offrons également des conseils en décoration intérieure à ceux qui souhaitent ajouter chez eux une touche d'élégance alpine, et Eileen Gent propose une recette d'été simple et délicieuse.

In this summer issue of Verbier Life, the crew from ‘Entret’trail’ tells us about how they are helping clear and maintain the local bike trails, Catie Friend met up with Andrew Ridgeley (best known as part of the WHAM duo), rugby player, Lawrence Dallaglio and Warren Smith in Verbier to hear about their charity cycle ride. We also offer some interior design tips for anyone wanting to add some alpine elegance to their home and Eileen Gent suggests a simple, yet delicious summer recipe.

erbier and the Alps may seem like a relatively litter-free zone, but anyone who has participated in the annual ‘ramassage’ (volunteer litter clean-up) will know there is a huge amount of discarded rubbish carelessly dropped on the mountain each year. The fight against waste and single-use plastic is increasingly on the agenda and one person taking on the battle first-hand is photographer and filmmaker, Peter Charaf. Swapping life in Verbier, Charaf is now working onboard ‘Race for Water Odyssey.’ The Lausanne based foundation, Race for Water, is funding a project around the world which aims to save the planets oceans from plastic pollution—a truly impressive quest that is finding long term solutions for the environment. Le combat contre les déchets et les plastiques à usage unique est de plus en plus d’actualité, une bataille à laquelle participe activement le photographe et réalisateur Peter Charaf. Il a troqué sa vie à Verbier pour travailler à bord de la « Race for Water Odyssey ». Basée à Lausanne, la fondation Race for Water finance actuellement un projet mondial dédié à la préservation des océans contre la pollution plastique — une mission grandiose qui consiste à trouver des solutions durables pour l'environnement. NOUVEAU SENTIER SUSPENDU NEW SUSPENDED ROPE COURSE

• La station de Verbier/Val de Bagnes a le plaisir de vous annoncer l'ouverture d'un tout nouveau sentier suspendu à Médran. L'accrobranche sera ouvert jusqu'au 28 octobre. Au départ de la tour de douze mètres de haut, les trois parcours proposent trois degrés de difficulté croissants, avec des hauteurs différentes selon le niveau : Parcours Vert : parcours facile, composé de huit jeux et d’une tyrolienne.

Parcours Bleu : parcours moyen, composé de neufs jeux et d’une tyrolienne.

Parcours Rouge : parcours difficile, composé de onze jeux et de sept tyroliennes.

Située au centre du sentier, l'impressionnante tour de douze mètres jouit d'un superbe emplacement en pleine forêt. L'utilisation d'un baudrier et d'un casque (fournis aux participants) est obligatoire sur l'ensemble des parcours. • The destination Verbier/Val de Bagnes is pleased to announce the opening of a brand-new trail hanging at Médran. The suspended rope course will be open until October 28. Starting from the 12m high tower, the three courses offer three levels of difficulty and are at different heights depending on the level: Green course: easy course, composed of eight games and a zip line.

Blue course: average course, consisting of nine games and a zip line.

Red course: difficult course, composed of eleven games and seven zip lines.

The impressive 12m tower is central to the course, which is beautifully set in the forest. All of the courses require the use of a harness and helmet which is provided for those taking part. • THE BEACH. Open from mid-June until the end of September, 'The Beach' will take center stage and is the ideal mountain escape.

VERBIER X TRIATHLON Septembre 1 + 2 • Le Verbier X Triathlon est le nouvel événement sportif de Bagnes en

été : au programme, natation en eau libre, VTT et trail. Nous proposons différentes distances dans les 3 sports, notamment les catégories Sprint et Classique ainsi qu'un relais. • The Verbier X Triathlon is the new summer sport event of Bagnes, including open water swimming, mountain biking and trail running. There are categories of all three sports in both sprint and classic distance and a team relay version. You can also choose any combination of two disciplines and race for yourself. All adult categories are held in the morning and the Kids Triathlon will take place in the afternoon. There is the option for the smaller children will just bike and run.

'The Summer Party' is going to be held on September 1 and 2, with new fun activities added to the programme each year. ENTRETRAIL Un groupe de vététistes locaux et l’equipe de Verbier Bike Park a récemment mis en place une association nommée Entretrail. L’équipe travaille bénévolement et en collaboration avec la commune de Bagnes, pour réparer les sentiers de la région et sensibiliser aux bonnes pratiques. Sylvain Haederli, qui travaille au Verbier Bikepark, nous en dit plus à propos d’Entretrail…

A group of local mountain bikers and the Verbier Bike Park team have recently set up a new group called ‘Entretrail’. Cooperating with the commune the team have been busy working on their new community project, repairing and maintaining the trails of Val de Bagnes and surrounding areas. Sylvain Haederli, who works for Verbier Bikepark tells us more about Entretrail…

VL: Why did you start Entretrail?

Sylvain : Grâce au très bon travail de la station, de l’office du tourisme et de tous les commerçants locaux qui croient au développement du VTT, de plus en plus de cyclistes visitent le val de Bagnes et profitent des magnifiques sentiers. Cependant, plus il y a de pratiquants, plus les chemins se dégradent rapidement et l’entretien doit être adapté aux nouvelles pratiques. La commune fait un magnifique travail d’entretien sur un immense réseau d’itinéraires. Avec l’évolution si rapide du nombre de vététistes dans la région, nous avons considéré qu’il serait utile de partager nos connaissances entre les services d’entretien de la commune, les shapers du bikepark et les pratiquants locaux.

Sylvain: Thanks to the positive efforts of the resort, tourist office and local businesses, each year more bikers are visiting the Val de Bagnes and surrounding areas and enjoying the trails. However, with more use, comes more wear and tear and the trails need regular upkeep.

The commune do a good job to maintain them, but with such a huge trail network, we could see that more input is needed. The number of mountain bikers has evolved so quickly that we need to adapt the trails maintenance and it is good to share knowledge between the commune, the Bikepark crew and local riders.

VL : Quelle est la mission d’Entretrail ?

Sylvain: We aim to try and maintain the trails along with educating trail users that we need to respect other people who use them. It’s also important to communicate to mountain bikers a correct code of conduct. We want to build a strong mountain biking community.

There are lots of groups of bikers in the area but perhaps we can do more as an organised group with ideas and feedback. This would then improve the image of bikers and make walkers and trail runners aware that we are working on, repairing and respecting the trails. We need to communicate to walkers that bikers are allowed on the trails, as not everyone knows this. Hopefully, we can get the local biking community more involved, to feel ownership of their trails, and to give feedback and provide ideas on upcoming developments. We can then discuss problems with the commune or people concerned early enough, so that we can find solutions, rather than simply close a trail to mountain bikers as we have seen in other communes. We aim to use social media as a platform to easily communicate to all bikers.

VL: What are the goals for Entretrail?

Sylvain : Nous donnons un coup de main au service d’entretien communal pour remettre à neuf les portions de sentiers qui souffrent du passage des VTT. Dans l’intérêt de tous, piétons comme cyclistes. Mais nous voulons aussi toucher la racine du problème qui est la cohabitation entre les différents usagers des chemins pédestres. En sensibilisant les pratiquants (VTT et marcheurs) au respect et aux bonnes pratiques, nous pensons qu’il est possible de partager les chemins de la vallée.

Comme tout le monde ne le sait pas forcément, il est important de rappeler que les VTT sont autorisés sur le réseau pédestre. En aidant à l’entretien, nous essayons aussi d’améliorer l’image de ces derniers qui sont encore trop souvent perçus négativement.

Nous espérons aussi renforcer la communauté locale de vététistes pour l’influencer de manière positive. Les gens qui viennent nous aider, ou qui simplement réalisent que nous travaillons sur les chemins, se sentent plus responsables dans leur pratique. L’avantage d’une communauté de pratiquants soudés est aussi dans le partage d’idées et l’implication facilitée lors de projets. La discussion avec les autorités est facilitée en cas de problème, plutôt que de se voir interdire l’accès à certains itinéraires sans même être consulté, comme on a pu le voir dans certaines communes. Les réseaux sociaux actuels permettent de communiquer efficacement au sein d’une communauté. www.verbierlife.com

VL: Who is involved in the group?

Sylvain: So far, the Commune de Bagnes, Verbier Bikepark and local bike guides and tour operators. We want to spread the word and get more people involved, local riders, bike shops, walkers, trail runners. All users who want to put something back into our trails that we love and enjoy.

mais si je devais en choisir un, ce serait le chemin La Chaux-Lourtier. Une pure descente de 1’200 m qui débute par une belle arête puis plonge dans la forêt pour terminer par des épingles techniques et raides ! Un vrai régal pour les bikers qui aiment les sentiers naturels et sauvages. Afin de préserver ces beaux chemins qu'offrent le val de Bagnes et afin qu'on puisse continuer à les rouler, pensez à respecter la faune et la flore et évitez de couper les épingles. Un gros travail d’entretien est effectué chaque année par des riders locaux pour offrir la meilleure expérience possible aux pratiquants, alors pensez à eux et ridez futé.

• There are several trails that I really like in the area, but if I had to choose one, it would be the La Chaux to Lourtier trail. It’s 1,200m of pure decent that begins with a drop down into the forest with lots of technical turns.

It’s the perfect route for bikers who like trails through wild nature. We need to protect these beautiful trails of the Val de Bagnes so we can continue to enjoy them in the future—respecting the flora and fauna, avoiding cutting the corners. A lot of work is done each year by local riders to ensure bikers have the best possible experience, so please remember that and ride smart.

• Mon sentier préféré, c’est sûrement la descente du col de Mille jusqu’au

SYLVAIN HAEDERLI

Châble. C’est un sentier typiquement alpin et surtout, on peut éviter la moitié de la montée en prenant le bus postal, ce qui est vraiment incroyable ! Une fois au col, on peut manger un bon lunch à la cabane. La descente est super variée, commençant par un chemin bien technique, alpin, mais relativement roulant. La seconde moitié se fait dans la forêt par un itinéraire très flow. J’ai de super souvenirs sur ce sentier avec de bons copains, mais aussi avec les clients que l’on guide. Tout le monde a le sourire quand on arrive en bas !

• My favourite trail would be the one down Col de Mille to Le Châble.

It’s a typical Swiss alpine trail, you can avoid half of the climb with public buses which is awesome! Then at the top, you can have a good lunch at the Cabane de Mille. And the way down is one of the longest and most varied runs in the valley, starting with alpine technical bits and finishing by flowing trails through the woods! I have so many good memories on that trail with friends and clients as well. Everybody is so stoked at the bottom! www.verbierlife.com

VL : Qui fait partie de l’association ?

S : Pour l’instant la commune de Bagnes, le Verbier Bikepark, les guides (tour-opérateurs) de VTT locaux et ponctuellement quelques pratiquants de la région. Nous voulons faire parler du projet pour impliquer et sensibiliser le plus de monde possible : riders locaux, magasins de vélo mais aussi marcheurs, traileurs, tous les utilisateurs qui veulent partager leur passion pour ce terrain de jeu incroyable.

VL: What should people consider when using the trails?

Sylvain: We suggest following a code of conduct. Mountain bikers should be aware that: - Hikers have priority - Stop when passing walkers on narrow trails - Control your speed - Respect the signs and forbidden trails - Slowdown in villages - Do not cut corners or create new trails - Do not overestimate your ability, black trails can be dangerous - Try not to skid - Use a bell or a friendly ‘hello’ to announce your presence to other trail users.

VL : Quel comportement doit-on adopter sur ces chemins ?

Sylvain : Nous suggérons le code de conduite suivant : Pour les vététistes : - Les piétons sont prioritaires ; - Ralentissez et arrêtez-vous avant chaque croisement (surtout si le sentier est étroit) ; - Contrôlez votre vitesse ; - Respectez le balisage et les interdictions ; - Ralentissez dans les villages ; - Ne coupez pas les virages en lacet ; - Ne surestimez pas vos capacités, les itinéraires noirs peuvent être dangereux ; - Limitez les dérapages ; - Utilisez une sonnette ou dites « bonjour » pour avertir de votre arrivée.

Hikers and trail runners should be aware of the following: - Mountain bikers are allowed on trails and you might meet some - When meeting bikers they should give you priority but please leave some room for them to pass - The Bike Park DH tracks are made for high speed mtb riding and are not supposed to be shared as pedestrian trails, they are not safe to walk on.

Also, it is a simple thing but everyone should be friendly and say hello, take the time to be polite.

Pour les marcheurs/traileurs : - Les VTT sont autorisés sur les sentiers pédestres, préparez-vous à en rencontrer ; - Si vous croisez des vététistes, et que la situation s’y prête laissez-leur la place de passer ; - Les pistes du bikepark sont faites pour une pratique à haute vitesse et donc ne se prêtent pas à une cohabitation contrairement aux sentiers.

Et simplement pour tout le monde, soyez respectueux, prenez le temps de dire bonjour.

VL: What are some issues that Entretrail have to deal with?

Sylvain: Corner cutting is an issue—one of the tasks that takes us the most time when repairing trails is to block the inside cut of switchbacks. Some mountain bikers find it easier to cut turns rather than try it the technical way. We are riding technical alpine trails around Verbier and we have to adapt our skills to the trail and not the trail to our (lack of) skills. A ‘nose turn’ is a technical but very fun and useful move to be able to ride the red and black trails around here.

VL : Quelles sont les problématiques rencontrées par Entretrail ?

Sylvain : Certains pratiquants préfèrent couper les épingles plutôt que faire l’effort de prendre un virage serré, et cela nous prend beaucoup de temps d’aménager les sentiers pour empêcher ces comportements. Verbier est renommé pour ses chemins alpins très techniques et chacun doit adapter sa technique au sentier et non le sentier à son manque de technique. Le « nose turn » est un mouvement technique mais extrêmement fun une fois maîtrisé ! C’est une technique essentielle pour pouvoir s’aventurer dans les sentiers rouges et noirs des environs.

Strava nous pose également des problèmes. C’est une application GPS mobile qui permet de se chronométrer sur des portions d’itinéraires. Un super outil d’entrainement dans certains sports mais complètement incompatible avec une pratique respectueuse et partagée sur les sentiers pédestres. Cet outil pousse les utilisateurs à rouler à des vitesses dangereuses, à couper les virages et croiser les autres utilisateurs de manière inappropriée.

Strava can cause some issues too. The GPS app on phones is used to compare your time with other users, whatever activity you’re doing. It’s a very good training tool, but it is not appropriate to use it to race down pedestrian trails on a mountain bike! People start cutting corners, disrespect other users and ride at frightening speed. Please enjoy the technical challenges, the views, the atmosphere of the trails, rather than race down them.

VL: How can people get involved?

From the Swiss Alps to the polluted oceans, photographer Peter Charaf shares some of his photos from his travels with the Race for Water Foundation.

hotographer and film maker, Peter Charaf, swapped life in the Verbier mountains to join Lausanne based foundation, Race for Water. Charaf, known for his film on the history of the Bec des Rosses and other projects in Verbier, has been commmitted to the foundation dedicated to water preservation since 2015. As we are all aware, the planets oceans are under massive threat from plastic pollution. The foundation aims to identify, promote and help implement solutions that give end-of-life plastics a value, thereby helping to prevent the plastic pollution from the world’s waterways. Using an innovative approach inspired by the principles of a circular economy and social entrepreneurship, the foundation aims to create new sources of income for the people most affected by pollution, by giving an economic value to plastic waste.

e photographe et cinéaste Peter Charaf a échangé sa vie dans les montagnes de Verbier pour rejoindre la fondation Race for Water basée à Lausanne. Charaf, connu pour son film sur l'histoire du Bec des Rosses et d'autres projets à Verbier, s'est engagé auprès de la fondation dédiée à la préservation de l'eau depuis 2015. Comme nous le savons tous, les océans de la planète sont menacés par la pollution plastique. La fondation vise à identifier, promouvoir et aider à mettre en œuvre des solutions qui donnent une valeur aux plastiques en fin de vie, contribuant ainsi à prévenir la pollution plastique des cours d'eau du monde entier. En utilisant une approche innovante inspirée des principes de l'économie circulaire et de l'entrepreneuriat social, la fondation vise à créer de nouvelles sources de revenus pour les personnes les plus touchées par la pollution, en donnant une valeur économique aux déchets plastiques.

Le bateau, « Race for Water Odyssey » est un projet écologique impressionnant en soi. Le navire est propulsé uniquement par l'énergie renouvelable de la nature, le soleil et le vent. Le pont du bateau est recouvert de 500m2 de panneaux solaires, et lorsque les conditions le permettent, une aile de cerf-volant est hissée au-dessus du bateau pour le propulser en utilisant le vent. De l'eau est également produite à bord, transformant l'eau de mer en eau potable. La deuxième phase du projet a quitté les côtes françaises en 2017 et vise un retour en 2021. L'équipage engagé s'est déjà rendu dans les régions de l'Atlantique et reprendra son voyage dans le Pacifique. Charaf a documenté visuellement la pollution plastique en cours de route. Les photos illustrent clairement à quel point le problème est réel et sérieux, mais la fondation nous montre aussi qu'il y a de l'espoir et qu'il existe des solutions....

The boat, ‘Race for Water Odyssey’ is an impressive eco-friendly project in its own right. The vessel is propelled solely by nature’s renewable energy, the sun and wind. The deck of the boat is covered in 500m2 of solar panels, and when conditions allow, a kite wing is hoisted above the boat to propel the boat using the wind. Water is also produced on board, transforming seawater to drinkable H2O. This second stage of the project left the coast of France in 2017 and aims to return in 2021. The committed crew have already travelled to areas of the Atlantic, and will resume the journey in the Pacific. Charaf has been visually documenting the plastic pollution en route. The photos clearly illustrate how real and serious the problem is, but the foundation also shows us that there is hope and there are solutions…

• “January 2018: Passing through the Panama Canal was a very emotional moment. We left behind the Atlantic Ocean with sights on the Pacific Ocean and plans to attack this second year of Odyssey. We passed up through three locks, each around thirty metres, to reach Lake Gatun; then three locks to come down again, at the level of the Pacific Ocean. It was a delicate operation to prevent our boat, made of carbon fiber, from rubbing up against the walls of the locks.”

• “With almost no options for waste treatment, along with the exponential increase of pollution, the reality is the plastic flows out into the ocean. Particularly in developing countries, the consumption of waste has increased faster than the infrastructure for collection and recycling.

In a district of Santo Domingo, we have a project which transforms the plastic waste into electricity. This project is done in partnership with the local NGO Heroes Del Medio Ambiante, the teams of the presidential project "Nuevo Domingo Savio" and the Ministry of the Environment.

The ceaseless dance of the trucks which come to pour their nauseating cargo gives rhythm to the everyday life of the thousands of recyclers, mainly Haitian. We nicknamed them the ‘divers’, because they literally dive under the trucks to be the first one to collect what they can then resell. The accidents are not rare, and the sanitary conditions are horrifying."

• " Even the most isolated islands and atolls are impacted by the plastic pollution. Under the influence of vast currents, called gyres, the plastic waste flows in the oceans five to ten years before running aground on the beaches of islands situated in these zones. During their oceanic wandering, plastics degrade under the influence of UV, waves and salt. They decompose into smaller and smaller particles of plastic which are then partly ingested by the marine wildlife, the rest ending its journey on the beaches. Here, a young inhabitant of Easter Island discovers, with dismay, the amount of microplastic collected by the scientific team in only 25cm3 of sand. The nearest coastline to Easter Island is 4,000km away, and yet …"

Séverine Boson from Arts Décos Créations, who has been responsible for the interior design in numerous chalets and apartments in Verbier suggests starting with the floor and working your way up. “A nice floor is a great base to any renovation project. Painting old furniture and doors can revamp a house inexpensively and have a huge impact,” comments Séverine. “Some simple changes can modernise and give a room a fresh new look, for example new cushions or artwork.”

Mixing old with new is something that Katrine Riekehr from Cabane Blanche enjoys. With her Danish heritage influencing her style, Katrine likes to bring in a modern twist to her chalet home. e all know how popular Verbier is in the winter. It’s buzzing and full of people, famous and otherwise, taking advantage of its world-famous slopes and après-ski. It is also an incredible, and increasingly popular, summer destination—sometimes celebs sneak in and get to revel in just how beautiful it is. They can ride up the infamous Verbier hill on their road bikes, stay in gorgeous hotels and eat superb food with only me to bother their otherwise unencumbered visit to our stunning corner of the world.

a popularité de Verbier en hiver n'est un secret pour personne. Ça grouille de monde, de gens célèbres et autres, profitant de ses pistes et de son après-ski renommés dans le monde entier. C’est aussi une destination estivale formidable et de plus en plus prisée : on voit parfois des vedettes y venir discrètement et succomber à sa beauté.

Elles peuvent grimper les fameuses côtes de Verbier en vélo de route, descendre dans de magnifiques hôtels et déguster une cuisine fantastique, avec moi seule pour déranger la quiétude de leur séjour dans notre petit coin de paradis.

In late May, I was invited to interview Lawrence Dallaglio, Warren Smith and Andrew Ridgeley as they rode through on their charity ride—the Dallaglio Slam. As you may have guessed, it is a Dallaglio initiative, organised every two years, in aid of his charity, RugbyWorks.

Fin mai, j'ai été invitée à interviewer Lawrence Dallaglio, Warren Smith, Andrew Ridgeley, au cours de leur randonnée de bienfaisance, le Dallaglio Cycle Slam, à laquelle ils participaient. Comme vous l'aurez deviné, il s'agit d'une initiative de Lawrence Dallaglio, organisée tous les deux ans au profit de RugbyWorks.

Established in 2009, the charity helps young people excluded from mainstream education by teaching them, through the medium of rugby, important skills such as teamwork, punctuality, respect and discipline. This latter, according to Matt Ryan, lead coach, is a word many of these young people fear for its negative connotations in their short lives.

The charity also actively helps these youngsters find gainful employment in the local community and beyond.

Fondée en 2009, l'association caritative vient en aide aux jeunes exclus du système scolaire classique en leur inculquant, par le biais du rugby, des valeurs essentielles telles que le travail d'équipe, la ponctualité, le respect et la discipline.

Cette dernière, explique Matt Ryan, coach principal, est un mot que beaucoup d'entre eux redoutent pour la connotation négative qu'elle a revêtue au cours de leur courte vie. En outre, l'association contribue activement à leur trouver des emplois rémunérés au sein de la communauté locale et au-delà.

So what does all this have to do with my tremendous evening of celeb spotting? Well, these men, along with around 60 others (some joining on the way), and a handful of delightful, longsuffering women (the language and the testosterone levels are on a next-level scale) were cycling 1,800 km with 30,000 m of climb from Evian, in France, to Split, in Croatia, via Switzerland, Italy and Slovenia, to raise funds for the charity. About 25 core riders take on the full 15-day ride, with many more riders joining for one of the five-day stages.

Mais quel rapport avec ma folle soirée de repérage de stars ?

Eh bien, ces messieurs, ainsi que près de 60 autres (certains se joignant en route), plus une poignée de femmes tenaces et très sympas (je vous laisse imaginer le langage et le niveau de testostérone), s'étaient engagés sur un parcours de 1'800 km à vélo, avec 30'000 m de dénivelé positif entre Évian en France et Split en Croatie, en passant par la Suisse, l'Italie et la Slovénie, et ce, afin de récolter des fonds pour l'association. À savoir que 25 cyclistes aguerris seulement effectuaient la randonnée complète (15 jours), auxquels de nombreux autres venaient se joindre pour l'une des trois étapes de cinq jours.

My interview with these three core riders was fun and informal.

They were relaxed (read: pretty tired after a big day) and happy to spend time regaling me with tales of cycling derring-do and favourite rides. Dallaglio and Smith have a connection to, and an obvious love for, Verbier. One part owns a mountain restaurant and the other has a ski school here. It was very clear to me that they got a great sense of pride, riding up that brutal 8 km climb into town, and being able to introduce the team to “their” resort.

Mon interview avec ces trois cyclistes chevronnés a été des plus décontractées. Ils étaient détendus (comprenez « très fatigués après une grosse journée ») et heureux de me régaler en me contant leurs prouesses et leurs sorties favorites. Andrew et Warren sont tous deux très attachés à Verbier. L'un y possède un restaurant de montagne, l'autre une école de ski. Il m'est apparu très clair qu'ils étaient très fiers de grimper les huit impitoyables kilomètres d'ascension vers le village et de faire découvrir « leur » station à l'équipe.

They laughed as they described their first bikes (metallic green single speed for Ridgeley, BMX for Dallaglio and a Tomahawk for Smith), answered thoughtfully about where they would ride if they only had one last ride in them (the Land’s End Loop for Andrew, Stelvio Pass for Lawrence and Warren would like to compete in RAAM, Race Across America) and agreed unanimously that an inconsistent lead rider is the worst thing to have in a peloton.

Ils se sont marrés en évoquant leurs premiers vélos : un une vitesse vert métallisé pour Andrew, un BMX pour Lawrence et un Tomahawk pour Warren. Puis, ils m'ont gentiment révélé la sortie qu'ils feraient s'il ne leur en restait qu'une : la Land’s End Loop pour Andrew, le col du Stelvio pour Lawrence et la RAAM (Race Across America) pour Warren, tout en s'accordant unanimement sur le fait qu'un leader irrégulier est la pire chose à avoir au sein du peloton.

Although, when I say “them”, I never actually saw Andrew again after his speedy departure from Verbier (something I said?).

Lawrence was the consummate host all day, despite a 4 am finish at Tbar, and I rode much of the day with Warren and a couple of his ski coaches. The whole team could not have been more welcoming and generous with their time, just proving that beasting yourself up a hill or into a headwind on a bike is a great leveller!

J'ai eu la chance de rouler avec eux le lendemain. Je dis « eux », même si je n'ai jamais revu Andrew après son départ canon de Verbier (j'ai dis quelque chose de mal ?). Lawrence a été l'animateur parfait, malgré une arrivée au Tbar à 4 h du matin, tandis que je roulais une grande partie de la journée avec Warren et plusieurs de ses entraîneurs de ski. L'ensemble de l'équipe ne pouvait me réserver un accueil plus chaleureux et être plus généreux de son temps, ce qui prouve tout simplement que s'échiner à grimper une côte ou à rouler vent de face permet de mettre tout le monde sur un pied d'égalité !

ette recette de tarte tatin, avec une petite touche personnelle, est absolument délicieuse. Vous pouvez remplacer les abricots par des pêches, des prunes, des poires, des pommes au fur et à mesure que la saison avance. J’espère que vous l'apprécierez autant que moi.

Tarte Tatin aux nectarines du Valais

Valaisanne Nectarine Tarte Tatin

100g de sucre blanc

100g white sugar

40g de beurre, coupé en cubes

40g butter, cut into cubes

4 c.à.s. d’eau

4tbsp water

3 gousses de cardamome verte, concassées en poudre

3 green cardamom pods, crushed to powder

1 c.à.c. de pâte de vanille

1tsp vanilla paste

his tarte tatin recipe, with a little twist, is absolutely delicious.

You can substitute the apricots for peaches, plums, pears, apples as the season evolves. I hope you enjoy it as much as I do.

Pour 6 belles portions

Serves 6 generously

400g d'abricots frais (environ 30 abricots), dénoyautes et coupés en quartiers épais

400g fresh apricots (about 3 apricots), stoned and cut into thick wedges

75g de pâte feuilletée déjà roulée (idéalement pur beurre) et de la farine blanche pour saupoudrer

75g ready-rolled puff pastry (ideally pure butter one), plus plain flour for dusting

De la crème fraîche, ou de la crème vanille de bonne qualité, pour servir

Crème fraîche or good quality vanilla ice cream, for serving

Pour le gâteau, préchauffer le four à 220ºC. Vous aurez besoin d’une poêle résistant au four ou d’une plaque à gâteau de 20cm. Placez le sucre et l’eau dans une casserole ou dans la poêle et poser sur un feu moyen. Cuire jusqu’à ce que le sucre fonde, puis caramélise, puis devienne brun doré. Ne remuez pas le sucre mais faites-le tourner délicatement pour l'aider à fondre de manière uniforme. Retirer le caramel du feu et y incorporer le beurre en mélangeant avec une cuillère en bois. Faites très attention car le sucre fondu est extrêmement chaud et peut provoquer de graves brûlures. NE GOÙTEZ PAS ! Ajoutez votre cardamome broyée et la pâte de vanille. Continuez à remuer doucement, ne vous inquiétez pas si le mélange a l’air séparé et un peu huileux, continuez à remuer jusqu’à ce qu’il devienne homogène (cela peut prendre 3-4 minutes). Lorsque le caramel est onctueux, grattez-le sur votre plaque à gâteau et étaler. Laisser refroidir pendant 15 minutes puis arranger avec soin les nectarines en forme de cercle comme un éventail.

For the tart, preheat the oven to 220ºC. You'll need a 20cm ovenproof baking dish or frying pan. Place the sugar and water in a saucepan or, if using, frying pan and set it over a medium heat. Cook until the sugar first melts and then caramelises and turns golden brown. Don’t stir the sugar but swirl it around to help it melt evenly. Remove the caramel from the heat and stir in the butter with a wooden spoon. Be very careful as melted sugar is extremely hot and can cause serious burns. DO NOT TASTE! Sprinkle in your crushed cardamom and vanilla paste. Continue stirring, don't worry if it looks split and a bit oily, just continue stirring until it becomes uniform in consistency (this can take 3-4 minutes). When the caramel is smooth, scrape it into your baking dish (if using) and spread.

Leave to cool for 15 minutes then carefully arrange the nectarines in a fan-like circle.

Dérouler la pâte à gâteau sur une surface légèrement recouverte de farine.

Placer une grande assiette (environ 25 cm de diamètre) sur la pâte et découper autour de l’assiette. Glisser délicatement la pâte par-dessus les nectarines et rentrer tous les bords. Avec un couteau aiguisé, faire quelques petites entailles dans la pâte pour permettre à la vapeur de s’échapper. Cuire la tarte tatin pendant 20 à 25 minutes, jusqu’à ce que la pâte soit dorée et que le jus fasse des bulles le long des bords. Retirer la plaque du four et laisser refroidir légèrement. Décoller délicatement les bords avec un couteau et placer un grand plat à servir ou une planche au-dessus de la tarte. Retournez-la rapidement en faisant très attention. La tarte devrait se poser délicatement sur le plat. Couper avec un couteau à dents et servir encore chaud avec de la crème fraîche ou de la glace vanille artisanale.

Unroll the puff pastry sheet on a lightly floured surface. Place a large dinner plate (about 25cm wide) on the pastry and cut around it. Gently slide the pastry on top of the nectarines and tuck in all the sides. With a sharp knife, place a few small slits in the puff to allow steam to escape.

Bake the tarte tatin for 20 - 25 minutes until the pastry is golden-brown and the juice is bubbling around the edges. Remove the pan from the oven and allow to cool slightly. Gently loosen the edges with a knife and place a large serving plate or board on top of the baking dish. Very carefully and with a quick hand, turn it over. The tarte tatin should drop gently on to the serving plate. Cut with a serrated knife and serve warm with crème fraîche or local vanilla ice cream.

ous connaissons tous le « crépi », l’enduit de mortier qui recouvre nos murs. Il existe toutes sortes de crépi, intérieur, extérieur, rugueux, lisse, dans une multitude de couleurs. Si habitez dans un appartement datant des années 80, vous avez peut-être du crépi rugueux sur vos murs, et la limite entre le crépi et le stucco est un mystère pour moi.

y definition, the French word ‘crépi’ translates to ‘roughcast plaster’ in English. There are many sorts of plaster, inside, outside, rough, smooth and in all sorts of colours. If you live in a 1980s flat, you may have rough crépi on your walls, and where crépi stops being crépi and starts being stucco is a mystery to me.

French people that live on the other side of the border and along the shores of Lake Geneva, and mention Crépy, they would probably pull out a bottle of wine. Now, it is just possible that the wine is there to help negotiate the cost of plastering your walls, but it is more likely to be on the table for the purpose of getting you plastered.

Cela dit, s’il vous arrivait de mentionner le mot Crépy à un « HautSavoyard », vous savez, les gens français qui habitent de l’autre côté de la frontière et le long des côtes du Lac Léman, il vous sortirait probablement une bouteille de vin. Il est possible que le vin aide à négocier le prix pour crépir vos murs, mais il est plus probablement sur la table pour vous plâtrer !

You may not know, but in the Haute Savoie, they produce their own version of Fendant using the Chasselas grape, just like here in Switzerland. However, so there is no confusion, they call it Crépy. It has an AOC designation and is taken as seriously by its producers as Fendant by our Swiss winemakers. So, no mixing of Chasselas here, Fendant is Fendant and Crépy is Crépy.

Vous ne le savez peut-être pas, mais la Haute Savoir produit aussi sa propre version du Fendant à partir du cépage Chasselas, tout à fait comme ici en Suisse. Pourtant, afin d’éviter toute confusion, ils l’appellent Crépy. Il possède son AOC et il est pris autant au sérieux par ses producteurs que le Fendant l’est par nos vignerons en Suisse. Donc, pas de mélange de Chasselas ici, un Fendant est un Fendant et un Crépy est un Crépy.

The AOC Crépy is one of the oldest in the Haute Savoie, dating from 1948 but covers only 90 hectares. Thanks to the sunny climate, the grapes mature in a similar way to their Swiss cousins, and produce a wine similar to Fendant. It has a light, pale-gold colour, a minerally nose, with a light, nutty flavour, containing notes of almond and hazelnut.

L’AOC Crépy est l’une des plus anciennes de Haute-Savoie, datant de 1948, mais elle couvre seulement 90 hectares. Grâce au climat ensoleillé, le raisin mûrit de manière similaire à son cousin suisse, et produit un vin qui ressemble au Fendant. Il a une couleur claire, or pâle, un nez minéral, avec un goût léger, une touche de noix et des notes d’amande et de noisette.

Trying to buy Crépy is tough here in Valais: after all, we are loyal to our local wayward child, Fendant. I must admit that, over the years, Fendant has evolved greatly from my first encounters with it back in the 70s, where it was a dry, acidic, light white with few redeeming points, to today’s richer, more complex, fruit-driven wine, that is much better received by the Anglo-Saxon palate (and all palates, for that matter). I am always pleasantly surprised today when I open a bottle of Fendant – fresh, light, fruity wine that goes so well with a summer afternoon.

Essayer d'acheter du Crépy ici en Valais est difficile; après tout, nous sommes fidèles à notre enfant du pays, le Fendant. Je dois admettre qu’au fil des années, le Fendant a beaucoup évolué, entre mes premières dégustations dans les années 70, quand il était encore acide, de couleur blanc clair, et le vin porté sur le fruit d’aujourd’hui, plus riche et complexe, qui est beaucoup mieux accueilli par les palais AngloSaxons (et d’ailleurs tous les palais pour être honnête). Je suis toujours agréablement surpris aujourd’hui lorsque je débouche une bouteille de Fendant - vin frais, léger, fruité qui accompagne tellement bien une après-midi d’été. Pour en revenir à mon sujet du Crépy: Il existe d’autres régions en Haute-Savoie qui cultivent du Chasselas, mais le Crépy est mon préféré. Les Savoyards font même un vin mousseux appelé Ayze à partir du raisin Gringet: je ne l’ai jamais goûté mais je suis sûr que ces vignerons français font un bon travail.

Returning to my subject of Crépy: there are several other regions in the Haute Savoie that grow Chasselas but Crépy is my favourite. The Savoyards even make a sparkling wine called Ayze from the grape Gringet: never tried it but I’m sure those French guys do a good job.

So off to your local wine purveyor and then to the delicatessen (love that word) for some dried meats and local Bagnes cheeses, and treat yourself to a perfect afternoon tasting Fendant or, if you have been over to Chamonix lately, Crépy.

Allez donc faire un tour chez votre marchand de vin local et dans une épicerie fine pour acheter des viandes séchées et des fromages locaux de Bagnes, et faites-vous plaisir une après-midi en dégustant un Fendant, ou un Crépy si vous êtes récemment passés par Chamonix.
