pring is in the air, March is a great month to be in Verbier and this year should be no exception. One event not to miss this month is the 22nd Boss Des Bosses Moguls Contest on March 16. The event started when Chamonix-based founder Tom Banfield challenged a friend from Val d’Isère to settle their dispute over which resort had the best skiers. Since then Zermatt, Verbier, Méribel and Courchevel have joined in the fun event. The photo above is from when we met up with Verbier crew in training - readying themselves to show the other resorts that obviously Verbier has the best skiers! Read more about the event on page 24. March usually hosts the Verbier Swatch Xtreme, however this year it will be held on the first weekend in April. Those needing an extreme skiing fix should head to the tenth Nendaz Freeride, which is set to take place between March 11 -16, and watch some of the Freeride World Tour competitors in action. With the increase in people pushing themselves further and exploring more off piste, it’s always good to remind ourselves about mountain safety. In this issue of Verbier Life, experienced skier Charlotte Percle takes a Swiss Mountain Training course, she gained a lot from the experience, read her article on page 42. Women are obviously different physically to men when it comes to skiing, but according to experienced coach Emma Cairns, females benefit more from being coached in a way that is specifically adapted to their psychology. Element Concept invited Verbier Life to take part in an off piste ski clinic designed especially for women. Maev Cox writes about her weekend with Emma on page 30. Also, in this edition, Verbier Life readers can experience what it would be like to enjoy a day at Sir Richard Branson’s Lodge. As usual we have our monthly recipe from Eileen Smith – this months cookies are definitely worth making! Finally, we see the return of ‘Grumpy’, he couldn’t resist having his say at least once this winter. e printemps est dans l’air, le mois de mars est un mois idéal pour séjourner à Verbier et cette année ne devrait pas faire exception. L’événement à ne pas manquer ce mois-ci a lieu le 16 mars avec le 22ème Boss des Bosses, une compétition de ski de bosses. Celle-ci est née le jour où Tom Banfield, son créateur basé à Chamonix, a mis au défi un de ses amis de Val d’Isère pour régler leur différends, à savoir quelle station possédait les meilleurs skieurs. Depuis lors, Zermatt, Verbier, Méribel et Courchevel participent à cette amusante manifestation. La photo ci-dessus a été prise lors de notre rencontre avec l’équipe de Verbier, se préparant pour montrer aux autres stations que, évidemment, Verbier possède les meilleurs skieurs ! Plus d’infos à ce suget à la page 24. Le mois de mars accueille généralement le Swatch Xtreme Verbier, mais cette année, il aura lieu le premier week-end d’avril. Pour ceux qui ont besoin de leur dose de ski extrême, nous leur conseillons de se rendre au 10ème Nendaz Freeride, qui aura lieu du 11-16 mars, et de regarder une sélection de concurrents du Freeride World Tour en action. Avec une tendance du public à davantage se surpasser et explorer les domaines hors-piste, c’est toujours une bonne idée de se rappeler sur la sécurité en montagne. Dans ce numéro de Verbier Life, la skieuse aguerrie Charlotte Percle a suivi un cours chez Swiss Mountain Training, une expérience qui lui a énormément apporté : lisez son article à la page 42. Dans le domaine du ski, il est évident que les femmes diffèrent des hommes sur le plan physique, mais selon Emma Cairns, entraîneuse expérimentée, les femmes profitent davantage d’un entraînement spécifiquement adapté à leur psychologie. Element Concept a invité Verbier Life à participer à une séance de ski hors-piste conçue spécialement pour les femmes. Maev Cox raconte son week-end en compagnie d’Emma à la page 30. Également dans cette édition, les lecteurs de Verbier Life peuvent éprouver comment se déroulerait une belle journée au Lodge de Sir Richard Branson. Next month, Verbier welcomes Charlie Winston,Texas, 77 Bombay Street and Stephanie Heinzmann for the first Verbier Impulse event. The concept was tested last year during the popular High Five by Carlsberg with UK artist Marlon Roudette, and has been developed into an event which will take place over two weekends. A combination of concerts on and off the slopes will take place featuring international and Swiss artists along with tribute bands and young local talents.The main stage, called ‘Attelas’, will be located just below Chalet Carlsberg – not many concerts can offer such incredible views and be accessed on skis! 5,000 spectators are anticipated – spring snow, music and great views sound like the perfect combination. If you haven’t been there already, Le Shed is a new burger restaurant in Verbier, run by three Swedish guys from the west coast of Sweden. The restaurant (located opposite the Fer à Cheval) offers a selection of delicious burgers along with a choice of wine and cocktails.The newly designed area was put together by ‘Ross and Friends (RAF) Interior Projects’, a Verbier-based renovation and alpine home design company. The Ross and Friends team, used their creative knowledge along with authentic materials in order to transform the previous interior into the new restaurant. “We integrate local and long-lasting materials in the furniture, accessories and interiors, which underline the roots in Alpine territory. Stone and wood, some of which originate from Swiss farms more than a century old, lend tradition and magic. With Le Shed, a new exciting adventure has started and working with the boys to create a new burger joint in Verbier has been a great opportunity”, comments Chantal Sleurs.The restaurant is open every day from 11.30am to midnight. INSTAGRAM TREASURE HUNT CHASSE AU TRÉSOR INSTAGRAM Lawrie White was the happy winner of one of last month’s treasure hunts, finding the gold envelope in under an hour – he won some delicious cocktails at the W Lounge. After this rather easy find, an Instagram follower requested the next envelope to be more challenging, and we were happy to oblige. The next envelope was hidden in a random tree up on the mountain. After two days the envelope was found by Iona Pawson who won après-ski burgers and beers for two at Brasserie Le Bec. Supported by our advertisers, we will be doing more treasure hunts soon, so make sure you follow us on Instagram so you don’t miss out! Suite à cette découverte plutôt facile, un abonné d’Instagram a demandé à ce que la prochaine enveloppe soit plus difficile à trouver, une demande à laquelle nous avons accédé avec plaisir. L’enveloppe suivante était cachée dans un arbre choisi au hasard dans la montagne. Il a fallu deux jours pour que Iona Pawson trouve l’enveloppe, remportant des burgers et des bières à l’après-ski de la Brasserie Le Bec. LE BOIS SAUVAGE Le Bois Sauvage is a newly renovated restaurant and bar in the 4 Vallées ski area, just 300m from the new high-speed Hérémence lift station. The restaurant offers a relaxed and welcoming atmosphere with breathtaking panoramic views stretching across the whole of the Val d'Hérens, including the Dente Blanche and the peak of the Matterhorn. Proprietor couple Ashley and Darren met in Verbier whilst working as Head Chefs for the Farinet Hotel and The Lodge respectively. Their philosophy is based on using local and seasonal produce, showcasing some of the best produce in the Valais region. SKI FOR MINH – March 14 Earlier this season on January 16, Minh Becker sadly lost his life doing what he loved most – skiing. His many friends in Verbier would like to celebrate his 35th birthday up on the mountain followed by some après-ski drinks. “Everyone is welcome, no matter what your ski and drinking level...” comment his friends. “The only thing that matters is that you do your best in memory of Minh! He was a person with such a pure soul and the biggest smile. Everyone that crossed his path remembers him, his great stories, knowledge and selflessness. He left his footprints in our hearts and precious moments in our minds. In his words, ‘we don’t remember days, we remember moments’. Le 16 janvier, Minh Becker a malheureusement perdu la vie en faisant ce qu’il aimait le plus au monde : skier. Ses nombreux amis de Verbier aimeraient fêter son 35ème anniversaire sur les sommets, suivi par quelques verres à l’après-ski. « Tout le monde est le bienvenue, peu importe votre niveau de ski ou votre descente’’..., commentent ses amis. La seule chose qui importe est que vous offriez le meilleur de vous-même à la mémoire de Minh ! C’était une personne à l’âme si pure et au si grand sourire. Tous ceux qui ont croisé son chemin se souviennent de lui, de ses fabuleuses histoires, de son savoir et de son altruisme. Il a inscrit son empreinte dans nos cœurs et de précieux instants dans nos esprits. Comme il le disait : « on ne se souvient pas des jours, on se souvient des instants ». The legendary Boss des Bosses, Europe’s biggest inter-resort mogul competition comes to Verbier! Following a 20-year stint in the Chamonix valley, the 22nd edition of the Boss des Bosses will take place in Verbier, Switzerland on March 16. Founder Tom Banfield organised the first Boss des Bosses in Chamonix back in 1990, throwing down the gauntlet to a friend from Val d’Isère to settle their dispute over which resort had the best skiers. Tom Banfield explains that after a 5-year hiatus, “the Phoenix rises again.” This time on the Swiss side of the border, where he has been warmly welcomed by Téléverbier. For the 2016 event, teams and supporters from Zermatt, Chamonix, Meribel and Portes du Soleil will join Verbier for Europe’s biggest inter-resort, head-to-head mogul competition. Male and female athletes navigate a steep section of snowy bumps (‘bosses’ in French) scoring points for speed, style and two giant jumps, which are built into the course. Each team includes skiers, snowboarders, télémarkers and a mono-skier, battling it out to impress the judges and to determine which resort has the best skiers. Participants must possess a season pass for the resort they represent. Prizes are awarded for; the winning team, the best run, best jump, best wipeout and best costume. Two-time French National Champion Ben Cavet, representing Portes du Soleil, will race against the likes of extreme ski legend Glen Plake, who lives in Chamonix. While Glenn is a Boss des Bosses veteran, it’s a first for 22-year old, British-born Ben, who was World Junior Champion and came a respectable 8th at the Sochi Olympics. It’s guaranteed to be a thrilling series of battles and a great day on the mountain. Les prix récompensent l’équipe gagnante, la meilleure descente, le meilleur saut, la plus belle chute et le meilleur costume. Ben Cavet, double champion de France et représantant les Portes du Soleil, se mesurera à des légendes du ski extrême comme Glen Plake, qui vit à Chamonix. GIRLS WHO SKI On a weekend in late January, five feisty females joined ski coach Emma Cairns for a two-day women-specific off-piste camp. Maev Cox tagged along and discovered the link between girl skiers and ninja warriors. Un weekend fin janvier, cinq femmes pleines de fougue on rejoint le coach de ski Emma Cairns pour un camp de deux jours spécial hors-piste réservé aux femmes. Maev Cox a suivi le groupe et a constaté des ressemblances entre les femmes skieuses et des guerriers ninjas.

f the quality of a course is measured by its instructor, we were off to a fine start with Emma. She is a tough Scottish lass who learnt to ski in the rugged hills of Glenshee from the age of three. She is also a fully-qualified ski instructor and a BASI trainer, which means she is an examiner in the British ski teaching system. On her rise through the ranks of skiing, Emma has contemplated the glaring gender divide in her field. While roughly the same percentage of men and women pass their final technical exam, last year 80% of the entrants were male and, of the 400-odd ski teachers currently holding the BASI Level 4 qualification, only 60 are women.
i la qualité d'un cours était mesurée par son moniteur, nous étions partis sur le bon pied avec Emma. C'est une femme écossaise, qui a appris à skier à l'âge de trois ans sur les collines accidentées de Glenshee. Elle possède aussi sa qualification complète d'instructeur BASI, ce qui signifie qu'elle est examinatrice dans le système d'enseignement du ski britannique. Lors de son ascension dans les rangs du ski, Emma a pu se rendre compte du fossé flagrant qui sépare les hommes et les femmes dans son domaine. Alors qu'un pourcentage assez similaire d'hommes et de femmes passe le premier examen technique, l'an passé 80% des candidats étaient des hommes, et parmi les 400 moniteurs qui ont leur certification BASI 4 aujourd'hui, seulement 60 sont des femmes.
“I think there is a different psychological approach for women – I’ve noticed in my coaching that there isn’t always much technical difference between genders, but the motivational and psychological factors are very different,” says Emma.
"Je pense qu'il y a une approche psychologique différente chez les femmes j'ai remarqué dans mes cours qu'il n'y a pas toujours de grande différence technique entre les genres, mais les facteurs psychologiques et de motivation sont très différents," explique Emma.
“Not only are men and women made differently, we’re wired differently too,” continues Emma. “By skiing in women-only groups we can deal with the positive and negative psychological influences at our own pace and focus on female biomechanics”

And that’s exactly what we did. The first of many lessons was on the importance of a slow warm up for optimal performance, rather than bombing out of the gondola like a race horse on steroids. Multiple slow and controlled runs are required to gently awaken the muscles, achieve centred balance and make precise movement patterns. According to Emma, this also gives you a much better chance of avoiding injury.
C'est exactement ce que nous avons fait. La première d'une longue série de leçons a traité l'importance d'un échauffement lent pour une meilleures performance, plutôt que de sortir du télécabine en courant comme un cheval sous stéroïdes. Plusieurs descentes tranquilles et contrôlées sont nécessaires pour réveiller les muscles doucement, trouver son point d'équilibre et effectuer des mouvements précis. D'après Emma, vous évitez aussi grandement le risque de blessure.

Staying on the piste, Emma then focussed on the nuts and bolts of our skiing, paying attention to posture and balance, lateral and rotational movements, and core strength. The last aspect is something Emma believes is a vital consideration for women in skiing. Generally speaking, female core strength is weaker than that of our male counterparts and, if we neglect to focus on it, the unevenness of the off-piste is likely to set us off balance very quickly, effecting a rag-doll impersonation. Taking the time to engage the core muscles (as opposed to tensing them) before launching ourselves into a field of powder can make a remarkable difference.
Tout en restant sur les pistes, Emma s'est ensuite concentrée sur les rouages de notre ski, en observant spécialement notre posture et notre équilibre, nos mouvements latéraux et de rotation, ainsi que la force de nos muscles du tronc. Emma pense que ce dernier aspect est essentiel pour le ski féminin. En règle générale, la force des muscles du tronc est moins grande chez les femmes que chez les hommes, et si nous négligeons de nous concentrer sur cet élément, les irrégularités du hors-piste risquent de nous faire rapidement perdre l'équilibre, nous faisant ressembler à une poupée au chiffon – what do u want to say here ?. Prendre le temps d'engager les muscles du tronc (et non pas les crisper) avant de nous lancer dans un champ de poudreuse peut faire une différence remarquable.
Next we covered an essential part of off-piste learning: avalanche safety. Emma guided us through the principles of safety. Exercises in finding our transceivers hidden under the snow left us all feeling confident of our abilities to help rather than a hindrance in an emergency situation.
Nous avons ensuite traité d'un sujet essentiel à l'apprentissage du horspiste la sécurité et les avalanches. Emma nous a présenté les principes de la sécurité. Quelques exercices de recherche de nos ARVAs enfouis sous la neige nous ont donné confiance en nos capacités à être utiles plutôt que des entraves dans une situation d'urgence.
Towards the end of day one, we headed to Savoleyres for a gentle introduction to the off-piste, where we put into practice the tools that Emma had so clearly demonstrated and discussed during the course of the day. Emma took the time to focus on each of us, pointing out specific issues for us to work on, and as the light began to soften on the mountain, we headed back to Verbier, tanked up on practical information and nurturing a quietly growing confidence.
Vers la fin de la première journée, nous nous sommes dirigées vers Savoleyres pour une introduction à l’hors-piste en douceur, où nous avons pu mettre en pratique les outils qu'Emma nous avait si clairement expliqués et démontrés pendant la journée. Emma a pris le temps de se concentrer sur chacune d'entre nous, mettant le doigt sur certains points à travailler. Alors que le soleil commençait à descendre, nous avons pris le chemin du retour à Verbier, ayant fait le plein d'informations pratiques et avec le sentiment que notre confiance grandissait tranquillement.
Day two dawned with a mix of sun and cloud and our group buzzed with anticipation as we headed up the mountain. Following another gentle warm up, we worked on some technical exercises which

targeted specific areas of skiing and quickly exposed weaknesses (there’s nothing like skiing on one leg to check your balance!). Emma’s levelled approach advocates both mental and physical preparedness, aligning them with what she calls “technical focus”. Like a ninja facing conflict, she suggests we approach the off-piste with a zen-like calm, reflecting on our core, which is strong, engaged and without tension. Only once we have readied ourselves in this manner should we venture into extreme terrain.

Comme un Ninja qui s'apprête à partir au combat, elle suggère d'approcher le hors-pistes avec un calme Zen, en pensant à nos muscles du tronc, solides, engagés mais pas crispés. Ce n'est qu'une fois préparées de la sorte que nous pouvons songer à nous aventurer dans un terrain plus extrême.
With all this in mind we headed off for an off-piste adventure that took us through powder snow down the back of Greppon Blanc to Coûta in the far corner of the Four Valleys. We lunched at the new and very delicious Le Bois Sauvage at Hérménce (the excellent customer service extended to a mini-bus collection and drop-off at the local lift) and returned to Verbier, tired and content.
Avec ces concepts en tête, nous nous sommes lancées dans une aventure qui nous a menée dans la poudreuse de l'envers du Greppon Blanc jusqu'à Coûta dans un recoin éloigné des Quatre Vallées. Nous avons mangé au nouveau et délicieux "Le Bois Sauvage" à Hérémence (l'excellent service inclut même la navette depuis et jusqu'aux installations mécaniques), puis sommes rentrées sur Verbier, fatiguées et heureuses.
“I've taken many lessons in the past, but I've never digested a lesson so clearly,” Louise Beer told me as we downloaded from the mountain. As I headed home and reflected on the weekend, I had to admit that this girls-only gig had affected a real perspective shift in my skiing. The other girls agree - thanks Emma.
"J'ai suivi plusieurs cours par le passé, mais je n'ai jamais retenu aussi clairement les choses," me dit Louise Beer en descendant à Verbier. En rentrant chez moi, me remémorant le weekend, je dois admettre que ce cours réservé aux femmes a vraiment eu une influence sur mon approche du ski. Les autres filles sont d'accord - merci Emma!

ith breakfast served until the last guest gets up, there's no need to rush out of bed (which is a good thing after experiencing some of Verbier's renowned nightlife!). The atmosphere is relaxed as I head down to the dining area for breakfast. Drooling over the menu, my biggest challenge of the day might be deciding what to indulge in. It's a toss-up between the poached eggs with spinach, bacon & hollandaise sauce, served on a homemade English muffin or a full English breakfast. I decide on the full English and complement it with a healthy 'Morning Detox' juice. The combination of apple, kale, cucumber, lime and mint should balance out the decadence of the bacon and sausages. I might have a pain au chocolat as well.

Je tranche pour le petit-déj’ anglais agrémenté du jus santé « Détox du Matin ». Le mélange pomme, chou kale, concombre, citron vert et menthe devrait équilibrer les méfaits du bacon et des saucisses. Aussi, il se pourrait bien que je prenne un pain au chocolat.

La carte du spa se révèle un défi quasi équivalent à celui de la carte du petit-déjeuner. On me recommande le « Relâchement Musculaire Intense » ; d’après la description de la carte, il s’agit d’un « massage profond apaisant les muscles tendus, fatigués et douloureux ». Il semble que c’est juste ce dont j’ai besoin. Après le massage, la moindre des politesses semble de faire honneur au hammam et de me détendre avec mon livre au bord de la piscine.
The spa menu presents almost as much of a challenge as the breakfast menu did. I'm recommended the 'Intensive Muscle Release' - the card reads that it's 'a deep massage that soothes tight, tired and aching muscles'. Sounds like just what I need. After the massage it seems only polite to make the most of the steam room and relax with my book by the pool.

It's a clear evening and the light of the full moon is looking spectacular reflecting on snowy mountains. A glass of Champagne in the outside hot tub seems like the natural thing to enjoy before a shower with Cowshed's 'Knackered Cow' body wash (an appropriate name) and dressing for dinner.
Ce soir, le ciel est clair et la pleine lune brille de façon spectaculaire, se reflétant sur les montagnes enneigées. Savourer un verre de champagne dans le Jacuzzi extérieur semble être la chose la plus naturelle au monde avant une douche avec le gel de corps Cowshed « Knackered Cow » (Ndlr : « Vache Éreintée ») (un nom approprié) et de m’habiller pour dîner.

Canapés and Champagne are served before a three-course dinner with a selection of cheeses to finish. The menu changes each evening using local seasonal products cooked by their excellent Head Chef, Hugh Millard. If Richard Branson is staying during a 'hotel' week, he’s likely to sit and enjoy dinner with the guests. After a delicious meal, guests can enjoy a drink at the bar, head down to the party room get a lift from The Lodge team down to one of the many bars in Verbier. I decide on a quiet glass of red, a game of chess and an early night. I could get used to this...
On me sert des canapés et du champagne avant un dîner à trois plats et se terminant sur un plateau de fromages. Le menu change chaque soir et inclut des produits saisonniers locaux préparés par l’excellent chef cuisinier Hugh Millard. Lorsque Richard Branson vient passer un séjour d’une semaine, il y a de fortes chances qu’il s’assied et profite de dîner avec les clients. Après un délicieux repas, les clients peuvent prolonger le plaisir en prenant un verre au bar, en descendant à la salle dédiée à la fête, ou en se faisant conduire par l’équipe du Lodge à l’un des nombreux bars de Verbier. Je choisis un verre de rouge au calme, une partie d’échecs et de me coucher tôt. Je pourrais m’habituer à tout cela...

With the incredible access we have, you can be in avalanche territory within minutes of getting off the lift. Carrying the equipment alone doesn’t equip you for avalanche. With this in mind, Charlotte Percle joins Adrenaline for their Swiss Mountain Training course and learns quickly that knowledge is your best friend... As we reach the top of La Chaux Express at 9am, the chairlift pops up above the clouds revealing a picture-perfect day. We're told to keep our eyes open and to be aware of our surroundings as we ski down to a plateau of snow beside the piste. I look around and think of how conveniently placed we are between the Bec de Rosses and the Mont Gelé. The day’s discussion starts on the topic of warning signs. Our guide, Frédéric Sauthier, points out a slide behind us on a south-facing ridge which gets the sun most of
Alors que nous arrivons au sommet du La Chaux Express à 09h00, le télésiège traverse le plafond nuageux et dévoile une journée splendide digne d'une carte postale. On nous dit d'ouvrir les yeux et de rester attentifs à notre environnement pendant que nous descendons vers un plateau neigeux en bordure de piste. Je regarde autour de moi et me dit que nous sommes idéalement placés entre le Bec des Rosses et le Mont Gelé. La discussion du jour commence avec le sujet des signes d'alerte. hen is the last time you went out to practice using your transceiver? I ask myself this question as I put my backpack on to head out for a day of avalanche safety training with Adrenaline. I regularly go off piste, about three or four days a week, but shamefully, I can't really say that I’ve ever been fully prepared. It was time to change that…
quand remonte la dernière fois que tu t'es exercée avec ton DVA? Je me pose cette question en enfilant mon sac à dos, en route pour aller suivre un cours sur la sécurité et les avalanches avec Adrénaline. Je me rends souvent hors-piste, environ 3 ou 4 jours par semaine, mais, honteusement, je ne peux pas vraiment prétendre y avoir jamais été entièrement préparée. Il était temps de remédier à cela.

the day. He then points over to the ridges on the top of Mont Fort and brings our attention to the white trail billowing from them and deduces the direction of the wind from this. The morning session is very much about opening your eyes and ears to your surroundings and paying attention to all of nature’s clues and warnings. We also learn how to read the avalanche forecast. Making a visual connection to these forecasts is important, so reading them everyday is a good habit to get into, or at the very least, every day before you head out into the backcountry.

La session du matin se base beaucoup sur l'importance d'ouvrir nos yeux et nos oreilles, de rester attentifs à votre environnement et d'observer les signes et mises en garde (?? –CHECK WITH AUTHOR) que nous donne la nature. Nous apprenons aussi à lire le bulletin d'avalanches. Il est essentiel de pouvoir se représenter visuellement (this has no meaning – check with author please !) les informations contenues dans ces bulletins, prendre l'habitude de les lire tous les jours est recommandé, ou au moins systématiquement avant de s'aventurer en horspistes.
We break for a delightful lunch at the Cabane Mont Fort, basking in the sunshine. The younger boys fuel up on Croute au fromage and we all discuss what we have learnt. Following the meal, we practice our search and rescue using the transceiver and probe. This is a key part of the day because, if you are ever in this situation, you have just 15 minutes to save someone’s life. After this time, the chances of survival drop significantly. Finding the spot where someone is buried should be the fastest part of your search. We take it in turns to run (yes, run!) up the slope in deep snow with our transceivers to the buried backpack about 60m above us, while the rest of us start digging a snow pit. Frederic repeats this exercise six times (seemingly without so much as losing a drop of sweat) and I remember that the boys ate Croute for lunch and chuckle to myself. The snow pit reveals what's been happening beneath the surface. There are about 10cms of shiny crystals near the ground, this is heat-affected snow which has created a weak layer. Having covered all the material earlier than expected, we head over to Col de Mouches to practice traveling through avalanche terrain (something that is normally covered in the level 2 course).
Nous nous arrêtons pour un délicieux repas à la Cabane Mont Fort, nous prélassant au soleil. Les plus jeunes reprennent des forces sous la forme de croûtes au fromage, et nous discutons ensemble de ce que nous avons appris. Après le repas, nous faisons des exercices de recherche à l'aide de nos DVA's et de nos sondes. Ce sujet est une partie essentielle de la journée car en cas d'accident, vous avez à peine 15 minutes pour sauver une vie. Après cette durée, les chances de survie diminuent fortement. Trouver l'endroit où est enfouie la victime devrait être la partie la plus rapide de votre recherche. Nous nous relayons pour courir (oui, courir!) dans la neige profonde avec nos DVA's jusqu'au sac à dos enfoui sous la neige, environ 60m au-dessus de nous, pendant que le reste du groupe commence à faire une coupe dans le neige. Frédéric répète l'exercice six fois (apparemment sans une seule goutte de sueur) et je me rappelle en ricanant que les jeunes ont mangé une croûte au fromage à midi. La coupe dans le neige nous montre ce qui s'est passé sous la surface. Il y a environ 10cm de cristaux proches du sol, il s'agit de neige qui a subi l’effet de la chaleur et a formé une couche fragile. Ayant terminé le programme du cours plus tôt que prévu, nous nous dirigeons vers le Col de la Mouche pour exercer le déplacement en terrain avalancheux, sujet qui est normalement abordé dans le niveau 2 du cours. Je recommande fortement ce cours à toute personne habitant ou visitant Verbier et souhaitant explorer la région. Ces dernier hivers ayant été particulièrement dangereux, avec des sous-couches fragiles devenant de plus en plus la norme, nous devons tous y réfléchir deux fois avant de nous précipiter hors-piste. Le savoir est notre seule protection lorsque nous nous mesurons aux forces de la nature. Les avalanches peuvent être un sujet intimidant, mais nous devons absolument avoir ces conversations. Malgré
I cannot recommend this course more highly to anyone living in or visiting Verbier and wanting to explore. With the last few winters being particularly dangerous and an unstable snowpack becoming more normal, we all need to think twice before jumping into the backcountry. orgive me, I know I shouldn’t do it, I know it’s bad, but I’ve been eavesdropping again. In my defence, I didn’t do it deliberately, I was propped up against the bar one Friday night when a particularly gregarious group of young men entered the bar and started up their conversation right behind me.
ardonnez-moi, je sais que je ne devrais pas, je sais que c'est mal, mais j'ai encore écouté aux portes. Pour ma défense, j'avoue ne pas l'avoir fait exprès : j'étais accoudé au bar un vendredi soir lorsqu'un groupe de jeunes hommes particulièrement plein d'entrain a fait irruption dans la salle et a entamé une conversation juste derrière moi.
First they went through the usual greeting rituals before moving to the inevitable “How was your week?”
Tout d'abord, ils ont procédé aux salutations habituelles avant d'en venir à l'inévitable « Comment s'est passé ta semaine ? »
“Terrible!” replied the first, some kind of London banker. The second guy hadn’t had a much better week. He had been running around all over the place ‘putting out fires’ (office terminology apparently). He had then gone on a ‘team-building’ outing where half his colleagues had left after lunch and those remaining at the end of the day were ready to kill each other.
Pour le second, ça n'avait été guère mieux. Il s'était retrouvé à courir dans tous les sens pour « éteindre des feux » (vocabulaire de bureau apparemment). Il était ensuite sorti pour une séance de « team-building » où la moitié de ses collègues avait filé après le déjeuner et ceux encore présents à la fin de la journée avaient été à deux doigts de s'entretuer.
« Épouvantable ! » a répondu le premier, du genre banquier londonien.
J'avais grand espoir que le troisième et dernier causeur ait passé une semaine tranquille, mais en dépit de son grand sourire, il avait eu la pire de tous. Il avait du travail par-dessus la tête, avait demandé du renfort, et dans le cas où il ne l'obtiendrait pas, était prêt à vider son bureau et à partir pour de bon ! J'avais vraiment de la peine pour ses jeunes créatures pleines de vie et leurs pénibles existences en les écoutant partager expériences et sympathie lors de leur bilan de la semaine. Puis le sujet de conversation a changé, et l'humeur avec. Ils se sont tout-à-coup transformés en sportifs du week-end, et, comme nous tous, se sont mis à parler des prévisions météo et de neige, de l'état des pistes... Ils ont prévu de se voir le lendemain matin tout en planifiant leur parcours, ce qui était bien plus agréable à écouter.
I had high hopes that the third and final talker would have cruised through his week, but despite his big, beaming smile, he had had the worst week of all. He was massively over-worked, had requested reinforcements and, if he didn’t get them, was ready to pack up his desk and walk out for good! I felt really sorry for these lively young creatures and their tough existence as they shared experiences and sympathy in their review of the week. But then the conversation moved on and the mood shifted. They were suddenly transformed into weekend warriors and talked, as we all do, of the weather forecast, the prospects for snow, the condition of the slopes… They made their plans for meeting the next morning and planned their itinerary, this made for much better listening. I have always felt a bit superior to weekenders, being a ski bum, living the dream etc. but I now realise that skiing is as essential for them as it is for those of us who make a (meagre) living from the sport. Shredding the powder, casting their city woes behind them as they whizz down the slopes surrounded by our beautiful mountain scenery, filling their lungs with cold, fresh air and replenishing the oxygen. I cannot think of a better way to recharge your batteries and make life in the city bearable for another week. So you weekend warriors, get out there and ski your hearts out, I look much more forward to eavesdropping in on your Saturday night conversation.
Je me suis toujours senti un peu supérieur aux excursionnistes du week-end, en tant que crevard du ski, vivant mon rêve etc., mais je réalise que skier est aussi essentiel pour eux que pour nous autres qui vivons (tout juste) de ce sport. Fendre la poudreuse, évacuer les tracas de la ville en dévalant les pistes entouré de nos sublimes panoramas de montagne, se remplir les poumons d'air bien frais et refaire le plein d'oxygène. Je ne peux imaginer meilleur moyen de recharger ses batteries et de rendre la vie citadine supportable une semaine de plus. Alors, à vous tous sportifs du week-end : venez skier et vous en donner à cœur joie ; je me réjouis davantage d'épier vos conversations du samedi soir. Chunky, chewy, deliciously rich. I love these cookies. If you prefer to omit decorative drizzle, just add the white chocolate to the batter before baking. These cookies are best eaten on the day they are made (I’ve never had any lying around after anyway) but they can be made ahead and stored in an airtight container. If you like a warm, gooey cookie, simply reheat in a very low temperature oven (50°C) for a few minutes before devouring! Moelleux, délicieusement riches, avec de grosses pépites. Je raffole de ces cookies. Si vous préférez vous passer de la décoration, ajoutez simplement le chocolat blanc à la pâte avant la cuisson. Ces cookies sont meilleurs consommés le jour-même (je n’en ai jamais vu un seul traîner jusqu’au lendemain de toute façon), mais il est possible de les préparer à l’avance et de les stocker dans un récipient hermétique. Si vous aimez les cookies chauds et fondants, faites les simplement réchauffer au four à très basse température (50°C) pendant quelques minutes avant de les dévorer !

Makes 12 large or 24 small
Pour 12 grands ou 24 petits
125g white flour 25g pure cocoa powder ½ tsp bicarbonate of soda A pinch of salt 125g dark chocolate (minimum 64%), chopped 85g butter, at room temperature 175g soft brown sugar (not granulated) 2 eggs (ideally small 43g ones) 1 tsp vanilla paste or extract 350g dark chocolate (minimum 64%), ideally chocolate chip but you could also use chunks from a bar 55g white chocolate, chopped

aire chauffer le four à 180°C. Recouvrir une plaque de cuisson avec de la Silpat ou du papier cuisson. Au bain-marie, faire fondre doucement la première dose de chocolat noir indiquée dans la recette. Mettre de côté. Dans un grand saladier, tamiser la farine, la poudre de cacao, le bicarbonate de soude et le sel ; réserver.

Beat in the eggs, one at a time, then add your vanilla and melted chocolate. Stir in the second quantity of dark chocolate from the recipe. Mix well. Now fold in your flour mixture until well combined.

Depending on the size of your baking tray, place heaped tablespoons of the cookie mixture, being sure not to crowd. One normal size tray should make 10-12 cookies. Bake for 10-12 minutes. Be sure not to overcook! Better to have slightly undercooked cookies to ensure that they stay soft and chewy.

Cool for several minutes on the tray before removing them with a palette knife or metal spatula and cool again on a wire rack. Continue baking the rest of the cookie batter until it's all done. Meanwhile, gently melt the white chocolate until smooth and liquidy. Using a small spoon or a piping bag, drizzle the white chocolate over the tops of the cookies to decorate.

Anne-Catherine & Denis Mercier Understated is the adjective that comes to mind when I think of this couple. She is originally from Bern, he from Vaud. Efficient and hardworking, this couple produces carefully crafted wines of great renown. Beautiful, well-structured Syrah and Cornalin which are great examples of their type. Cornalin is actually originally from the Aosta side of the Alps, but produced in Valais produces a wild, racy red that goes well with our local venison. It’s a difficult grape to grow as it has a tendency to rot on the vines if not cared for, as it has a natural deficiency in Magnesium. Heida is another local wine of renown from this winemaker. Aged for six months in oak barrels, treated with regular “battonage”, a sort of stirring in the barrel with a big stick, the Mercier family produces a rich structured white from this little known grape.
